In the distance, through the mist of the fog, there is a train traveling along at a steady pace. The cool crispness of the air seems so familiar as the gift of the Fall season awakens your soul. Stay on track as you let nature guide you forward, develop skills and begin the master plan to utilize and execute the greatest accomplishments of your lifetime. The time is now to surround ourselves with determination and gain endurance in likeness of the locomotive that picks up speed to reach its destination. Follow your own path with the tracks laid out before you, remain steadfast towards your journey. Begin each day with fortitude and righteousness, contemplate only what is at task. Great suffering has been endured from a nation that has carried the world on her shoulders. Strive to achieve the right to preserve freedom in every man, woman and child. Precious thoughts and prayer on extended knee will help us regain our dignity and faith. Stumble not to show ones unsteadiness, but only to show ones vulnerability and likeness in man. This Thanksgiving, in our own greatness, let us truly be the most humble and preserve the memories of loved ones that are so close to our hearts. The chairs that are filled with perhaps empty souls or hearts, allow healing to begin on a grand scale. Let the beacon of light shine bright in our darkest hours. Remember our 16th president, Mr. Lincoln who shared his sentiments to the all who would listen ,they still ring true and give profound meaning to us this present day. We all must take the time to cherish one another and be filled with love in our hearts and gratitude in our souls. Relinquish that which does not serve you and your fellow man. Bestow a sense of greatness and equality among all people, the land is made up of all that we hold so close. Rekindle and rebuild. Let us not judge our countrymen as we are not so quick to judge ourselves. Rest and take in stride the power of humanity. Sacred journeys that are well sought after and with good intention uncover the real mystery of life. Have a wonderful Thanksgiving!

Chef Gaetano Williams. Owner of Tano’s Bistro and Catering in Loveland Ohio is no stranger to the industry. He has been in the food industry for over 33 years. He began his career in the Tampa/St. Petersburg area of Florida. He moved to West Palm Beach. After working as a corporate chef for Buca de Beppa and McCormick and Schmitz’s he opened his own restaurant. He says it is his goal to provide people with a great dining value. “I want people to have fresh food at a fair price. I am not a fine dining establishment but I am not as casual as an American bistro or pub either,” he noted. “My place is a bistro with a taste of the world.” Actually, according to Tano, the catering aspect came first. He said he would cater an event for someone and they would say to him that it was a shame they couldn’t just go somewhere and have that same kind of meal again. So, the bistro idea began. Tano says he knows in a time of poor economics it is impossible to manage a business on the front door. “The catering company feeds the restaurant and vice versa. People like an event I cater and they come to the restaurant. If they like my food, then they might call me for a special event they are having… It’s a good way to build business,” he explained. Tano also caters to some institutions. His company prepares school lunches for a local Montessori school and for a Bible Academy in Mason. “I think it is important to give kids in school a quality lunch. They need good, fresh food. We’ve begun moving in that direction and I am going to do more of it in the future. It’s important to do and we are going to do it,” he stated. It is his social conscience and his drive to help that is catching notice this days. Tano has participated in local charity events such as A Taste of the NFL. He said he wants to continue to give back and to help his community. He and his wife Gina have participated with an organization, continued on pg. 4

Kids Against Hunger, for a number of years. It began

with their association with this charity through their church. The program is fairly simple. Kids Against Hunger is to provide food to hungry children in the USA and to help feed starving children world wide. The organization packages a highly nutritious, vitamin-fortified soy-rice casserole at various locations through the country and helps distribute those meals through-out the world. The casserole costs about $0.22 per serving and is ready to prepare by just adding water. The organization is capable of expanding because satellite offices are all licensed as 501c3 non-profits and taught how to package the foods for distribution. Families, schools and churches can all work together in a truly community spirited way to help eradicate hunger. Chef Tano said he thinks that the organization is successful because it is a simple thing. “Kids Against Hunger doesn’t ask for money. They ask you to just come and pack meals for shipment. It is a very real way to do something important.” Tano said his company does help with financial support in addition to giving time to help pack meals. “We can only do so much. Understanding Self-Hypnosis

BCH, CI Your subconscious mind contains all the information that influences your emotions, your self-esteem, your beliefs, your actions, your immune systems, and your bodies. It is filled with incredible capabilities and phenomenal powers. Hypnosis is the principal method used to effectively work within the subconscious mind. Harnessing and directing the full, positive power contained in the subconscious mind, is what a professional hypnotist helps you to do. The power of your mind over your body is one of the most remarkable aspects of human existence. Modern science is now providing undeniable proof for this phenomenon. An experiment at Stanford University, California, has shown that patients in chronic pain can use hypnosis and self-hypnosis as a mental exercise to reduce their physical suffering. People vulnerable to heart attacks have been shown how to mentally slow down their heart rate, people suffering from stress have been shown how to reduce their blood pressure, women have been taught how to control pain in child birth, and operations have been performed using hypno-anaesthesia. No matter how many supposedly incurable diseases there are, there is always somebody who has been cured of it. You may have heard of the miracle man, Morris Goodman, who crashed his airplane and was told he would be a “vegetable” for the rest of his life. He was told he would never breathe on his own without a respirator, he was told he would never walk again. As he says, the only thing he had was his mind, “but as long as you have your mind you can put things together again” – and this is what he did. As he began to breathe on his own again, the medical team couldn’t work out how he had done it. As he walked out of the hospital, they didn’t understand that either. It didn’t make medical sense, but there is no denying that he healed himself through the power of the suggestions which he gave to himself. And you

have this ability, this power, within each and every one of you, just waiting for you to remove the critical blocks of your subconscious mind and enable it to nurture and grow. There is no doubt that the mind does indeed control the body. This idea has been known since the beginning of civilization and is at the heart of Greek philosophy and Chinese and Far Eastern Medicine. It’s only in the Western world where medical research has somehow viewed mind and body as separate entities rather than treating the whole person in a holistic manner. But the tide has now turned and there is an increasing body of scientific evidence, which proves that the mind controls the body. In a study on the effective use of adjunctive hypnosis with surgical patients, researchers at the Mount Sinai School of medicine in New York found that patients in hypnosis treatment groups had better clinical outcomes than 89% of patients in control groups. Hypnosis is both normal and natural, and while you are in hypnosis you have access to your subconscious mind – that part of your mind which knows just what to do and how to do it, the part which acts automatically and spontaneously. Hypnosis allows contact with the inner mind; it allows communication with deep physiological functions. The above information is known and practiced throughout the world. The question is how do you learn to apply this information to improve your life? One of the easiest yet profound ways to tap into your available subconscious power is through self-hypnosis. Self-hypnosis is understood as the ability to create a hypnotic state with one’s own thoughts. Because hypnosis is a natural state of consciousness everyone has the capability to enter into a state of hypnosis. Learning the known techniques and various methods to achieve levels of hypnosis is one of the many benefits of working with a professional hypnotist. Personally experiencing hypnosis greatly increases your ability to quickly learn and master self-hypnosis. Once understood and practiced this skill can be used for the rest of your life.

Self-hypnosis is a creative process; relaxation and hypnosis are the cornerstones in this creative process. Mental relaxation decreases the background noises of the mind and allows you the ideal state within which to allow your creative mind to surface, thus enabling you to project a greater intensity and give yourself a more beneficial direction of change. Selfhypnosis allows mental thoughts and images to have greater clarity and focus, and it allows feelings such as self-confidence, well-being and harmony to be more easily imagined and experienced. While in hypnosis your mind is very open to visualizations and you have the ability to create a more powerful sensory experience. The more real the experience becomes in the subconscious mind during this state, the more effect it will have on what you wish to achieve. Learning to use creative imagery and involve as many of your senses as possible is critical to the positive outcome of any self-hypnosis technique. As a variety of your senses are utilized, this will allow access to more areas of your brain. Also, a thought without emotion doesn’t have any effect. Emotions stimulate the limbic system and the neurotransmitters, which send messages throughout your entire body. Therefore, it is important to activate your emotions to enhance the process. Fall is in the Air! by Kathy Vaske

Fall in love with life all over again. Look for all the bargains around town that are just waiting for you. In today’s economy, all the businesses large and small, are running specials to entice you to come in and take advantage of their own special brand of customer service. Many of the businesses are featuring guest artists to do something special for you, while you are shopping. Some of the small mom and pop businesses are putting on small entertaining events to help draw you in as customer. This fall is a great time to take advantage of all the special things going on around town, without breaking your piggybank. Invite a few friends for a friends day out and do something special. It will make this Fall season memorable, and lift your spirit. There are festivals to go to, Halloween events to enjoy, Thanksgiving Day gatherings to be held. Think about doing something crafty with the children. They love making things for the holidays and special occasions. Young children still like the attention they get, with a one of a kind costume Mom has made for them with her own hands. Sometimes there are costume contests going on around town, this year again most likely at the Cincinnati Zoo. Isn’t it always the well thought out, hand done costume for a child, that takes the prize?

Get out with friends and do something fun this year for Halloween. There is a special Halloween event going on at Whatever Works Center. The theme for their Halloween party this year, is the very popular Harry Potter movies. They will have a spirit journey to the magic shop planned, and one to meet a passed on loved one - angel - or guide. Dressing as a character in one of the Harry Potter movies is optional. Extending Your Harvest by Dr. Barbara Ut. I love the Fall Season with the changing leaves and cooler temperatures, and yet it is these same temperature drops that challenge me to see how long I can extend my garden harvest into the Winter! After years of trial and error, here are a few ideas I can share: To extend your harvest, you can start with a very simple project – adding a frost cloth or blanket to established greens. Last year, I put a very light frost cloth over leaf lettuce and mustard greens, and harvested them past Christmas. Many greens, such as mustard, chard, collards, and spinach are hardy to below-freezing, while arugula, kale and chicory are even more robust, and have survived to nearly zero degrees in my garden. Onions and chives can also be harvested in Winter, and my established peas and fava beans have survived to about 20 degrees with no protection. As an added bonus, these legumes (peas and beans) nourish the soil with nitrogen for next season’s crop. Root crops, including turnips, parsnips, beets and carrots, can be left in the ground once established, and harvested as needed throughout the Winter. Just mulch them deeply to prevent the ground from hard-freezing. You can use straw for mulch, or in my case, I simply gather tree leaves or garden plants (that are ready to be pulled out) and I use those for mulch. Pumpkin and winter squash leaves work well, and add nutrients to the soil as they decay. Just be careful of using plants that have gone to seed to ensure you do not add unwanted seeds to your garden bed. On the other hand, I have received some wonderful ‘volunteer plants’ in unexpected places from that very mistake! Also be aware that some leaves, such as Oak leaves, are acidic and can change the pH of your soil if they are used in excess. Broccoli, cauliflower, and Brussels sprouts can also be harvested below freezing. To protect them from a heavy frost, a frost cloth works well. As another option, you can make a minicold frame or greenhouse around them. To do so, simply stack rocks or cinder blocks on the ground around the plants, and place an old, unused window on top, allowing the frame to rest on the rocks or blocks. I usually allow just a little air flow on the South side to prevent the plants from baking on sunny days. Remember to put some weight on top of the window, such as a bag of dried beans, to prevent the window from bouncing in the wind and potentially breaking.

Looking ahead, you can use this same, simple idea to get an early start on next Spring’s crops. If you want to ensure even more protection and warmer temperatures, dig down into the ground to a depth of the rocks/ blocks, and line your hole with them. This will allow you to sow seeds next Spring several weeks earlier than usual. Place the glass on top after planting. Related, I am trying a new project this year – I have gathered old bottles, and am planning to make a small greenhouse from recycled materials. Wish me luck! There are also many plants that you can sow now for an early Spring harvest. As one example, let your cilantro become coriander (let flower and turn to seed) – collect some coriander seed for Winter cooking, and scatter leftover seed around the garden for plenty of cilantro early next Spring. Finally, remember to save seeds from your favorite plants to sow next year or give as gifts. With the Holidays just around the corner, why not give the gift of your favorite flowers, foods or herbs? I hope this information helps you extend your garden harvest as long as possible! Baker Chiropractic Testimonial with the Locke Family

My husband and I are both 25 years old with a 6 month old son. I had severe lower back pain and sciatic nerve problems that seemed to never go away. While I was pregnant, my back got worse. I did not seek chiropractic care during this time, but when my son was 8 weeks old, I couldn’t take the pain anymore. Dr. Baker’s office was recommended to me by family and coworkers. I decided I would try their office because I knew I didn’t want any pain medicine at this young of an age. Dr. Baker sat down with my husband, son, and me taking the time to explain the problems going on with my back. During the consultation, I was given different papers talking about chiropractic care and what they can do. At this point in time, my son had been on an antibiotic for his ear infection for about 5 days (with little to no help for his fussiness/pain). I noticed on the papers I was handed that babies can be adjusted for ear infections… so I asked about that as well. Dr. Baker explained about the adjustments he could do for our little man and how it’s never good to get on the “cycle of antibiotics”. That night was Zeke’s first adjustment. The next day, he stopped tugging at his ears. About a week later (after seeing what Doc can do), my husband was treated for his stiffness/soreness in his back and neck. About a month into my treatment, I went to my family doctor for an ear infection. This wasn’t just any normal ear infection for me. I let it go and didn’t tell anyone about it until the whole side of my face hurt to physically touch. My family doctor told me the ear canal was bright red and I had a ton of fluid in my ears, and then gave me a prescription for an antibiotic. At this point in time, I was still a bit skeptical about Doc being able to help with ear infections (sorry Dr. Baker!), so I decided this would be the test. If he could help me get rid of this horrible pain/infection, I wouldn’t doubt him anymore. I got adjusted right after my appointment with my family doctor. My ear/face still hurt that night, so I decided that if it still hurt the next day, I would go get the antibiotic filled and start taking it. But I didn’t have to. The next morning, I woke up and the pain was almost completely gone! I was amazed! The morning after, the pain was gone. I did not have to take any

antibiotics. That’s when there was no doubt in my mind that Zeke not getting ear infections wasn’t just coincidence. It was all about his chiropractic care! Now, we are on maintenance care and feeling great. I don’t have the pain I used to have, my husband’s stiffness went away, and my son hasn’t had an ear infection since (and sleeps better after being adjusted—great for us!). I can’t imagine where we would be right now without the Baker Chiropractic staff. I’m sure Zeke would have had at least one set of tubes in his ears (multiple surgeries during his 6 months of life) and we would have been sore, in pain and sleep deprived at 25. We’re so glad we came and got treated when we did. Thank you so much Baker staff!

Balance is integral to all things Divine, including all things Divinely-inspired. Further, natural balance is self-correcting - it is always either actually achieved or in the default process of being restored. And so, it is our solemn manifestation, prayer, and intention that all of these potentials (and more) can and will become secondnature to those of us who choose to participate, and who also wish it to be so. The baby my friend carried was indeed a boy. I became his god-mother and when he was four years and nine months old, I became a caregiver during his mother and father’s break-up. Though I never had children of my own., my partner gifted me with the joy of sharing her life and the life of her son., a few months later. It seems life is always surprising its participants. In the beginning, my partner and I did not tell our son much about our relationship. Our view was that we would do so on a need to know basis. That day came when he was six and in school. He had friends who had two moms. There were times when our son’s unusual family made him uncomfortable and other times he was delighted with all the extra attention an extra parent brings into things. I have been thinking back recently, because my son just turned 17 last week. He is tall and handsome, wildly talented and wickedly smart. I thought back to his sixth birthday at Johnny Rockets when my brother came. We ate big boy cheese burgers and had shakes and the servers sang to us. We went home and had chocolate cake with lemon icing and M&Ms and mint chocolate chip ice cream, all by special request. He declared it the best birthday cake and ice cream ever and it was. I thought back to the birthday party that made his other mother and I legends at the elementary school. For his tenth birthday, we invited 11 boys over for a spend the night. The mothers all dropped off their sons with their sleeping bags and shook their heads at us wondering when we had lost our sanity. When dawn arrived the word spread. There had been a squirt gun and easy cheese fight “to the death” followed by much hosing down and showers, one upstairs and one downstairs. Those in line for washing the easy cheese out of their hair, stripped to their undershorts on the front porch and the stinky easy cheese drenched clothes were sent to the laundry. Those waiting did what all little boys do—they mooned passing cars. We were the coolest moms and the bar for cool parties had been set very high. The other moms were no longer worried about our sanity; they wanted to know how to top our party

and how to stop us in the future. Our son just hugged us and said it was the best day ever and it was, smelly easy cheese and all. I remembered his 12th birthday, an understated affair because we had just arrived back from Disney World which we had promised would happen before he was 12. We made it by three weeks. I remember sitting on the blacktop in front of the Magic Kingdom and Sleeping Beauty’s Palace watching fire works. Our very tired but thrilled not so little boy was snapping digital pictures. At the end of the show, he threw himself onto his mom’s lap, grabbed my hand and said, “This is the best day ever.” And it was. I recalled his 16th birthday just last year. He was so grown up. He had asked if we could rent a room and allow him to invite all his musician friends to come and play music with him for four hours. We did it. We rented the party room in a restaurant that had a stage and sound system upstairs. We ordered food and had a free virgin bar for the youth., manned by a real bartender. There were 11 people—five folks his age and his music friends aged 35-58 there plus mom and mom and two grandmothers. We sang and played music until midnight. His friends all thought having a musician dad and being in a band with his mom was so cool. They thought his uncle who also played music and wrote rant poetry was awesome. He spent the night in a plush hotel with his moms and one friend. The next evening he hugged us both and told us it was everything he had hoped it would be and we were the coolest. Just last week, he turned 17. My son, who has always been very social but not too close to many people, suddenly has a circle of friends. They range in age from 25 to 17. We asked him what he wanted to do. We told him he was 17 and he didn’t have to “party” with his parents anymore. He thought about a quiet family dinner and then going out with his friends. He thought about inviting us all to meet and go “Dutch” at a restaurant. He finally decided he wanted me to cook and he wanted to invite everyone to our house. We did. His 85 year old grandmother was there and everyone else too. His wide-ranging circle of friends and family is a study in the kind of person his mom and I had hoped he would be. There are young and old women and men of many races and backgrounds. When he got

home from school the next afternoon before he left for work, he said that it was the best birthday ever, and it was. I spend a lot of time looking at sustainability. I write about how food nurtures the body and the spirit; how it sustains us. I spend a lot of time with this subject at home too. So when my son’s friend wanders in the door and my son says, “You know my mommom. And, remember the one in the glasses, that’s Cynthia mom, you know the soup mom,” something magical has just occurred. When his friends fight over the last sweet potato fry and tell him he is so lucky that we cook foods like the ones at his birthday party, my heart soars. My son, the musician, poet, artist and chef, is exactly what I would want if I had borne him myself. He understands family and acceptance and tolerance. He understands that food and sharing it with people in one’s home is about love and family and that it matters. I wouldn’t trade a single birthday. They have all been the best ever, but in this day and age when the world can be such a scary place and when everyone is so jaded, having a worldly, long-haired, eye-brow pierced teenage boy tell a 48 year-old battle worn hippy like me that I am cool, well that is truly the best day ever. And to my partner, being able to share all of those best ever days with him and with you has ever been the greatest of gifts. I can’t wait until next year. After all, he will be 18. It will have to be something truly amazing… hmmmm…..Thank goodness we have a year to think about it.

Everything’s All Right with Meditation

by Mary Claybon When life feels overwhelming, unclear, chaotic, nerve racking, the best thing you can do is sit in a quiet place, rest your eyes, and meditate.

Some people keep their eyes partly open so that they do not get sleepy and also to symbolize groundedness. However you can close your eyes.

Anyone can meditate. Meditation is practiced in all religions, and therefore is not just of Buddhist or Eastern spirituality. It is used as a spiritual practice, but also is very good for the body and the mind. Meditation can help lower your blood pressure, reduce stress and anxiety, strengthen your immune system, and give you an overall feeling of peace of mind.

The hands stay comfortably on your knees or one hand sits in the other hand down in front of you.

When I practice any form of meditation it slows my thinking, allows me to focus, and somehow just makes everything all right. There are many ways to quiet the mind, and you have to find the way that works for you. Here are some of the types of meditation I have practiced. Zen Meditation- In this form of meditation one sits on a zafu (meditation pillow) that is on top of a zabuton (square pillow pad) so that your spine can stay in alignment while sitting on the floor. You can either sit cross-legged or with your knees bent on each side of you, kneeling but with the pillow supporting you. I love this type of meditation. There is nothing to do but breathe and count your breaths. No thinking –the goal is to empty your mind.

Vipassana Meditation – This is also called insight meditation. This is done sitting and walking. Again you focus on the breath and then whatever else is around you becomes the focus of your meditation. Staying still in the sitting posture or walking very very slowly as if in the slowest motion-one foot in front of the other, heel toe, touch. You experience the body moving very slowly and methodically focusing on the sensation of the leg and then the foot touching the ground, Mindful Meditation- This is my favorite because it can be done anywhere and anytime. The idea is to focus totally on the task at hand. If you are washing the dishes you experience every bit of that experience. You are fully mindful of yourself washing the dishes. If you are eating an orange, you focus on the entire experience of peeling the orange, and then chewing the orange, savoring the juice and noticing the sensation as you swallow. In this meditation you are fully focused on whatever you are doing. Some people chant, sing, pray, use prayer beads to repeat words

or prayers in a way that is spiritually fulfilling and quieting to the body and mind. Whatever kind of meditation you choose, practice daily, and soon you will find that everything just feels better. Using methods of deduction, we were able to find the closet door would open on its own due to a loose jamb and vibrations. With the new knowledge the family has, they have all slept well and the home has been calmer, and it was all due to our combined style of investigating we were able to accomplish this goal. Cover Up, You’re Exposed! by Wes Duren Are your gardens bare, exposed to the harsh elements, vulnerable to degradation during fall and winter? Don’t allow your gardens to be caught naked and defenseless this season, cover them up with green manure to optimize your gardening success next year. What is green manure? Despite the unusual name, it refers to the planting of cover crops such as winter rye, clover, hairy vetch and winter pea, all offering a wide range of benefits to both soil and the plants grown in your gardens. Most cover crops are purchased as seed, and sown into vegetable beds largely during the fall, but also in early spring. While most gardeners are ready for a well deserved breather after a season of arduous gardening, the payback for planting green manure far outweighs the effort required to do so. The ritual of planting cover crops was crucial for early Roman agriculture, where the Roman Empire developed a more sustainable crop production system to support its ever growing population of citizens. Sowing cover crops in your vegetable beds will enrich your gardening experience by: lessening your need for fertilizer, minimizing weeds, aerating the soil, warding off pest insects and disease, controlling soil erosion and reducing nutrient leaching in your gardens, ultimately saving you time and money! You need not have a green thumb to work with cover crops, but simply the desire to maximize your food production and promote healthier, more balanced gardens. The most beneficial cover crops are those which have the natural ability to capture nitrogen from the atmosphere in a process known as nitrogen fixation. These nitrogen fixing plants are classified as legumes (like soybeans), and have the ability to hold nitrogen in root nodules, which act as slow release organic fertilizer for your fruits, vegetables, herbs and even landscape plants! Legume cover crops are team players, and have a mutually advantageous relationship with soil bacteria known as Rhizobia. These bacteria creates nodules on legume roots that act as holding tanks for air borne nitrogen, and in return, the bacteria survives off of the simple carbohydrates produced as a waste product exuded through the roots. Once your cover crop dies, either by natural means (winter weather) or through mechanical action, such as by shallow tilling, the root nodules release their stored nitrogen, making it available to your cultivated crops. This virtually free source of nitrogen is slow release, so your crops will have the ability to use it over several months, reducing your need for nitrogen fertilizer. Other cover crops work by creating a network of roots that construct

a sort of net, helping to hold your soil in place, preventing soil loss and nutrient leaching that would typically occur on bare soils. Yet other green manure crops deeply penetrate the soil with large root systems, and act as a siphon to pump nutrients from deep within the soil, transporting them to the soil surface where more shallow rooted fruits and vegetables can take advantage of those hard-to-reach nutrients and minerals. Simultaneously, these deep rooted cover crops aerate the soil by creating channels that improve air movement and drainage. Cover crops are also considered companion plants, because many are known to attract beneficial insects and soil microbes to your gardens, where they will stand guard against rivaling pest insects and disease. Lastly, cover crops act as a living mulch to shade out weeds, reducing the chance for weed invaders that may otherwise compete with your valuable crops for moisture and nutrients. The number one way to get your garden soils primed for an over seeding of cover crops is by evenly covering your entire garden bed with a couple inches of well decomposed organic debris. Finished compost is similar in consistency to soil, only much more biologically active, and richer in minerals and nutrients. The benefits of spreading compost are as vast as the cover crop that follows. Not only will compost help to expedite cover crop seed germination, but also sustain the crop once it has established. As important, quality compost often contains the beneficial Rhizobia bacteria required for nitrogen fixation, since your soils may not harbor this organism otherwise. Topdressing your beds with compost is a routine that builds soil quality and plant health, however, if you decide to forgo this step, simply scratch and loosen the upper crust of your garden bed with a hard rake, broadcast your seed on bare soil, rake them in, and then lightly tamp the soil with your feet or the back of your rake to make sure that your seed makes contact with the soil. This step will improve germination, and keep your cover crop seed out-of-sight-and-mind from birds and other seed eaters. You can sow cover crops on empty garden soil by completely blanketing the beds with seed, or you can sow them amid edible crops, a technique better known as intercropping. This practice works best if one of the crops is shallow rooted and the other deep rooted, or if one crop grows tall while the other stays shorter to prevent competition. There are two ways this can be accomplished. The first method is completed by seeding your cover crop 3-4 weeks prior to your edible crop, and then removing small patches of cover crop to provide enough space for your edibles to establish. Or, undersow your cover crop once your edible plants have established for a month. Green manure will offer your edible crops and gardens all the above benefits,

Try mixing several cover crop varieties into a single bed area, as they all work together synergistically to improve soil and crop health. An alternative to cover crops is the practice of mulching, and many choices are available such as pine straw, wood chips, and pine bark, all promoting plant and soil protection through the harshest months of the year. Don’t allow your gardens to be caught in the nude this fall, clothe them lovingly with beneficial cover crops, and your gardens will thank you with more abundant harvests, reduced work and less cost. Nutmeg

A Holiday Tradition

Sugar and spice with a little nutmeg makes everything nice! Nutmeg is one of the traditional spices used in holiday dishes, but are we aware of the benefits of this wonderful spice? Nutmeg derives from the seed of the nutmeg tree, it is a tropical fruit that is the source of two different spices, nutmeg and mace. Mace covers the oval shaped seed which is the nutmeg. Nutmeg is usually sold whole or ground, it is not a nut, so food allergies can exist but are usually rare. This spice can be good for providing relief for people who suffer from joint inflammation, toothaches and digestive problems. Nutmeg is good for indigestion, flatulence, vomiting, diarrhea, etc. Just a pinch or two of ground nutmeg in a cup of peppermint tea can be helpful. Nutmeg is a powerful spice, therefore it should be consumed with caution. It is best if pregnant women or women who are nursing avoid using nutmeg.

The therapeutic effect of nutmeg stimulates the cardiovascular system, and can help lower blood pressure. It is used for promoting concentration, aids in relieving common cold symptoms and can help remove toxins in the liver. Oil of nutmeg is widely used for many purposes, aromatherapy with this oil is a good remedy for anxiety as well as depression, it is comforting and soothing to the body. It is a good choice for a massage oil because it reduces swelling of the joints and can reduce pain from arthritis. This interesting spice can be added to many of your culinary delights, often it is the secret spice that perks up your favorite dish. Many people use it for their desserts, but actually it can be used with cheese or egg dishes, it is fun to experiment with an occasional dash of nutmeg to bring out the flavors of typical recipes to give them an extra flair. N utmeg Apple Crisp INGREDIENTS: • 5 cups thinly sliced apples • 2 tablespoons lemon juice • 1/4 cup water • 1/2 cup all-purpose flour • 1/2 cup rolled oats • 1 cup packed brown sugar • 3/4 teaspoon ground nutmeg • 1 pinch salt • 1/2 cup butter, softened • 1 cup coarsely chopped walnuts DIRECTIONS: Preheat oven to 350 degrees F (175 degrees C). Toss apples with lemon juice and water in a shallow 2 quart baking dish. In a large bowl, combine flour, oats, sugar, nutmeg, and salt. Mix to blend thoroughly. Cut in the butter or margarine until mixture resembles coarse crumbs. Mix in walnuts. Crumble over apples to cover completely.

Baked Stuffed Pumpkin INGREDIENTS: • 2 pound pumpkin, washed • 2 apples, cored, quartered • 1/2 cup pineapple chunks • 1/2 cup broken walnuts • 1 teaspoon ground cinnamon • 1/2 teaspoon ground nutmeg • 1/4 teaspoon ground cloves DIRECTIONS: Cut the top off the pumpkin and remove the seeds. Place cut side down in a baking pan and bake at 350 degrees F for about 40 minutes or until soft. With a metal spoon, scrape out the cooked pumpkin, leaving a 1/8 to 1/4 inch thick shell. Process the apples in a food processor until chunky. Add pineapple, walnuts, cinnamon, nutmeg, and cloves to the pumpkin and process until just mixed. Spoon into the pumpkin shell. Cover with the top. Bake in 400-degree F oven for 45 minutes or until the filling is hot.

Bake for 40 to 45 minutes until top is lightly browned. Serve warm or at room temperature.

OWith rganic Hot Chocolate Nutmeg This recipe is so easy you can make it with your kids! INGREDIENTS: • 1 Cup of organic dark or semi-sweet chocolate chips • 4 Cups of Organic soy milk or rice milk • 1 tsp. vanilla extract • 1/2 tsp. cinnamon • Grated nutmeg for garnish DIRECTIONS: Melt chocolate. Heat milk on medium low. Add chocolate to warm milk and whisk. Add vanilla and cinnamon. Top with grated nutmeg and serve!

The Sweet Poison by Paul F. Fulk,

D.C., F.A.S.A. More than thirty years ago, a chemist searching for a chemical which would cure ulcers accidently discovered the chemical combination we call aspartame. Also known as nutrasweet or equal. So what was to become a drug for the stomach, became an additive in our foods to act as a sweetener. Nutrasweet is used in larger quantities than drugs are today. Once listed as a chemical in the Pentagon’s inventory of prospective bio-chemical-warfare and weapons. Aspartame is a volatile combination of chemicals, the most lethal being methanol or wood grain alcohol. The Random House Dictionary defines methanol, also known as methyl alcohol, as a “colorless, poisonous liquid used chiefly as a solvent, fuel etc.” Methanol is what is called a cumulative poison. In other words it accumulates as a toxic substance that our body never eliminates, instead it builds up over time, wreaking havoc with our nervous system and causes many other symptoms such as: hyperactivity, loss of taste, gastrointestinal disorders, fibromyalgia, ringing in the ears, slurred speech, severe depression, insominia, arrhythmias, dizziness, muscle spasms, mood swings, PNS, seizures, tachycardia, blindness and fatigue in addition to many endocrine and metabolic disorders. Aspartame breaks down into methanol after just one short hour in your body. If the food substance that you consumed had been heated prior to your consumption like coffee or tea that had been sweetened with aspartame, one half of the aspartame is broken down into lethal methanol in only 10 minutes. In addition to methanol, aspartame contains two amino acids that occur naturally in the body. By consuming aspartame the 21 amino acids which are major in keeping the body functioning normally, become out of balance. The so called “naturally occurring substances” cause changes in your brain chemistry. But the experts say that Nutrasweet is safe for human consumption. Who are the experts? More than likely, the experts are from the Monsanto Corporation, the owners of Nutrasweet. All the research that has been

done has been done by Monsanto. It is obvious they are going to say that Nutrasweet is safe. The safety factors that have been considered have been done on Nutrasweet that is outside of the body without the reactions of what the body does to convert Aspartame to methanol. Not a true test but it is enough to satisfy the FDA. The experiments were done on the dry, stable form of aspartame. A few facts to note. A Dr. Ralph Walton, one time chief of psychiatry at New York’s Jamestown Hospital and Chautaqua County mental health commissioner, reported that he and two colleagues had to discontinue a study of the effects of aspartame on individuals with mood disorders after 20 days. “The reactions among patients with a history of depression were so severe”. They could not ethically continue the research. Dr. Walton further stated that, “there will undoubtedly be a great deal of pressure from the aspartame industry, which will point to the hundreds of studies attesting to their product‘s safety. It is important to bear in mind, however, that virtually all of these studies were funded by the industry. Whereas, essentially all independently funded studies identify one of more problems such as neuropsychiatric disorders contributing to the incidence of certain cancers, and because of it’s impact on the hypothalamic “appestat” plays a significant role in the world-wide epidemic of obesity and type 2 diabetes. It should be banned” so stated. Fact two: In 1984, the Center for Disease Control revealed their findings in a study involving 231 people experiencing side effects from aspartame use. A variety of common reproducible symptoms were reported, including headaches, insomnia, depression, diarrhea, nausea, vomiting, dizziness even blindness. Yet more than three decades later, there still hasn’t been a single study of side effects from aspartame use in the general population, in other words this involves people just like you. What are we waiting for? According to the late Dr. M. Adrian Gross, an FDA toxicologist, at least one study conducted by G.D.Searle, the creator of Nutrasweet, has established beyond a reasonable doubt that aspartame is capable of inducing brain tumors in experimental animals. Remember what has been said about humans being more sensitive than animals such as mice and rats. In the early 1970’s, before aspartame was introduced to the marketplace, the FDA decided that the maximum

Marching into Winter amount any individual could consume would be 34 mg/kg. More studies and conclusions concerning aspartame safety have been based on this figure, which has never been adjusted to accommodate the increasing number of products containing nutrasweet. On the average, you can figure that each soft drink with Nutrasweet contains about 200mg of aspartame. A considerable amount more than was allowed by the FDA in the 1970’s. Take note that the lowest lethal dose of methanol is 100mg. The majority of people who are using drinks with aspartame in them are doing so to get rid of calories and to lose weight. The big disappointment is that it will make you gain weight. Yes, you are avoiding the calories, but you are poisoning the liver and kidneys. Kidneys play a major role in the regulation of water weight. Remember water weights eight pounds per gallon. If you are retaining water because of the damage done to the kidneys, It is not accomplishing what you set out to do. You only have your body to take care of for these short few years. by Charley Sky Our summertime memories are receding, being filed away for pleasant recollection at some point in our future. As we move into the Thanksgiving and holiday season we watch as the last vestiges of summer depart. The leaves give us a grand show as they begin to fall, looking much like fireworks exploding on tree covered hillsides. Framing it as such drags a little bit of summer into my thinking. Ha ha, the tricks I pull on myself to deal with the cold weather. The color of the evening sky seems to change, resembling swirls of Neapolitan ice cream. And the days for sitting outside to enjoy the evening air become little more than a pleasant memory. As my regular readers know, I give in hard to summers passing... which means I whine about it! As I sit here pondering this, I recall that it was the seventeenth of November last year when I finally gave in to summers passing. I can imagine some of you laughing at this. Now I am focusing on all of the positive aspects of winter, a little trick I pull on myself this time of year. The wonderful evenings ahead, filled with holiday merriment, the board games, movie watching, and other things we do to keep ourselves occupied during the long hours of darkness. Then there are the holiday parties, the Christmas lights, sled riding, and the joy of seeing the expressions on children’s faces, as they count down the days that move like molasses in the Arctic circle toward Christmas. Now it seems as though, in these few short lines, that I have convinced myself that the passing of summer is ok, in fact that it holds a great deal of promise and wonder. My wish for you, dear reader, is that you have a superb winter. A winter filled with fun, excitement, wonder and warm memories. I hope that each of you find much to be thankful for this Thanksgiving season. Enjoy your wonderful friends and family, and drink deeply the miracle of being alive. Building Relationships by Cindy Huff & Terri Noftsger We’ve become much more aware of relationships in the last few months at home – relationships that are developing and changing – between various members of our animal family. These changes range from a budding relationship between our Basset Obi and our house cat Diana to a radically altered relationship between our two barn cats Simba and Sophia. We also had a wonderful opportunity to observer human/ dog relationships up close at a recent AKC dog show. We’d like to share some observations and insights that we have gained. We often have clients that talk to us about how their dogs and cats do NOT get along with each other. It’s very interesting to talk with both the dogs and cats in that situation, and see the real difference in viewpoint between the two camps. Cats on the whole seem to be very disdainful of dogs, and see them as less intelligent, immature beings. Sometimes they will extend themselves to bemused tolerance. Dogs who live with cats seem to have one of two viewpoints about them; either they see the cats as something to chase, or they are genuinely confused by them and don’t know quite how to treat them. Cats simply don’t respond to butt-in-the-air, tail wagging invitations to play, nor do they seem to enjoy being slobbered on in affection. Cats don’t understand why dogs don’t understand hissing and a big tail mean “BACK OFF!”. It’s very clear that dogs and cats have different behaviors and body language, so communication becomes very confusing. In watching Obi and Diana, I have noticed that each seems to have learned how to make the other understand them by adopting some of the other’s behaviors. For example, Obi will layout in the sun in the yard. Diana will come out, walk up to him, and bump him, rubbing against him. Obi will lean into her gently. What Obi has learned is to be still and quiet, and to moderate the force of his lean so as to not overwhelm Diana. Diana has learned that Obi likes the gentle contact. They have progressed to

a point where I will sometimes see them laying close together in the yard. Diana does not have the same type of relationship with our other Basset Lukas. Lukas tries to do “dog” behavior with Diana to greet her (aka “sniff butt”), and he does it with the same force and persistence that he would with another dog. Diana simply walks away, leaving Lukas standing there looking very puzzled. Poor guy, he has not learned by watching her what will work and what won’t. Recently our barn cat Simba was attached and mauled very badly, probably by a young coyote. When Simba returned home from the vet, he had a huge hole in his shoulder which requires daily treatment. In addition, he suffered some neurological damage that effects how well he can use one of his legs. Simba and his sister Sophia have been together all of their young lives. Now Simba is in the house, and will most likely become a house cat. It has been heartrending to hear Simba call when he sees Sophia. Sophia is bravely trying to take care of the barn alone, but her normal confidence has been shaken badly. What I have begun to observe is Obi coming up to the door to the screened in porch when Simba is out there, and just simply laying down. Simba initially hissed at him, but has started actually sitting in front of the door when he is there. When Lukas comes up and starts barking, he backs off. Once again Obi seems able to communicate with a cat, and is slowly teaching Simba that he will not harm him. What does this have to do with the human/animal relationship? Humans and dogs, for example, also have different behaviors and postures. Sometimes it is easy for us to misinterpret the behavior of our dog or cat, and put a “label” to it that maybe isn’t correct. For example, we talked to someone at a dog show with a little dog. This person thought her dog was “terrified” of being in new places. In reality, based on what the dog told us, the dog was actually

very sensitive to human and animal energy fields. Being at a dog show with people and dogs of varying backgrounds, emotional intensity, and energy was very hard for her. The human was seeing her little dog shake and hide her head, and labeling it based on her interpretation. In this case, we did some work with flower essences and putting an energetic “bubble” around the dog, and she relaxed quite well. What we’d like to leave our readers with is a homework assignment. If you live with a dog or cat, begin by observing how they interrelate with other animals (including humans). Don’t label or interpret, just observe. Begin to try to understand how they behave in certain situations, and think about how you might learn to respond differently so that you can communicate better. For those with dogs who like to play, get down on the floor, stick your rear end up in the air, and lower your shoulders, extending out your arms. See what happens – our dogs absolutely understand that this means “PLAY TIME”. If you have a cat, sit and be very still and see if your cat approaches you more quickly for attention. Have fun!

Yes, it’s time for that makeover, Libra! You are all pretty – and now you are going to be even prettier! And more loving, and more gracious. October begins with some excellent potential for higher learning, getting the message out, and in our current society that means on the internet, as well as institutional processes. As with other signs, the learning is accompanied by a sense of follow through, staying the course, and coming up with possibility of a certification. Not an overnight job. A significant amount of time in these 2 months will be spent learning about, engaging in, or managing close relationships. That’s a wide-open territory, but if you pay attention to what you are saying/doing, you will learn much about the fine art of diplomacy. Home matters and parent figures take the stage here…Some of you may be juggling issues that revolve around being a parent or a partner…..or being a parent to your own parent!! Well, of course, the holidays are at hand, and Cancer does like to put their whole effort into decorating for the sake of pleasing the loved ones…and especially when it comes to remembering Christmases long past! Time to get those decorations out of the basement, and enjoy the camaraderie of putting it all together, with sugar and spice! Some of you just might get very involved, romantically speaking. When it’s hot, it’s hot! The new moon in early November will attest to that! For early Cancers, the appearance of Pluto is making you think long and hard about your relationship…..but especially coming from the place of ..”what do I need in a relationship, and what do I bring to a relationship?” You may need to think more seriously if you are relating as a parent or as a partner!
