何謂八角哲學?

這是我的思考模式與靈感來源,一切由此而生,構想自此綻 Restaurant ANDRÉ 創辦人
放… 若八角哲學是創作的平台,那麼我們如何創作?又因何 而創作? 透過展覽,我期望呈現在創作過程裡的純粹,藉由參展藝術 家的雙手與思維,創造出「八角哲學書封」,展現這八種元 素的多元性,引領觀者深入創作者的思維,不需展開書頁, 就能走進書中,「經由各種媒介,將文字轉化為圖像,將創 意帶進人們的生活」。 有趣的是,生、活、美、學恰巧呼應了我們之所以存在與創 作的四個生命階段,進一步形塑「生活的藝術」。 生 - 所生之時、所居之處、所處之境,決定了每一個人的起 跑點與觀看世界的角度。 活 - 我們活著,為了生存而學習一技之長,為了擁有更好的 未來而追逐我們的夢想。 美 - 維持了基本的生命需求後,我們開始滿足感官需求,開 始體會生活中一切美好的存在。
學 - 最後我們學習放手,領悟取捨之道。即使「完美」無法 被清楚定義出來,我們仍舊持續追尋那不真實或不存在的完 美理想,為了構築心靈的烏托邦,我們不斷地創作...... 當我們在欣賞藝術家們從周遭環境汲取靈感所帶來的創作 時,我們會好奇這些靈感的根源,以及藝術家藉由創作所欲 傳遞的訊息。 我的意思是,無論陶藝家、建築師、插畫家,抑或平面設計 師,你會發現他們的創作過程有90%的相似之處,只有在最後 具體的10%轉化為個人所擅長的領域,可能是一幅畫、一張海 報、一道料理,或者一只盤子。 我非常期待藉由展出每一位藝術家的創作過程,連結八角哲 學與藝術家們的創作啟發,並進一步點出八角哲學特展背後 的意義──那即是找出你自己的八角哲學,找到創作的平衡 點,以及能激發創意的完美心法。 而我料理的方式真的重要嗎?或許不然。

If we say OCTAPHILOSOPHY is the platform for us to create, so how and why we create? OCTAPHILOSOPHY™ art exhibition, I hope to project this pure essence in a creative process, through these artists' hands and thoughts by creating an " OCTAPHILOSOPHY book slipcase", to portrait the diversity of these 8 elements, that takes you into the thoughts of every artist, takes you into the book without opening it.. "transform words into visual brings creativity into our lives through different medium." Birth, Craft, Perfection and Quintessence; interestingly defines the 4 stages of why we exist and why we create, where forms "the art of living." Birth - The timing, the environment and the place we were born, it decides what we see and how we see this world. Craft - When we hone our craft, fight to survive, and chase our dream towards a better tomorrow.
Perfection - We no longer worry about hunger, thirst nor the basic needs for living; we start sharpening our senses and start to appreciate the beautiful things in life. Quintessence - We learn to let go, we learn that less is more, we realize the real piece of wonderland has no definition, and as we search for our unrealistic idea of “perfection,”we create… While we appreciate every artist's beautiful creation from Mother Nature, we wonder where does all their inspiration come from and how do they express their message through their craft? What I want to say is, looking closely into a whole process of creation with an extraordinary Potter, Architect, Illustrator, Graphic designer…etc, we start to notice that 90% of the creative process is identically the same; how we collect the information, crack an idea, how to deliver and execute a message, then transform it into a physical artwork. Only the last 10% of the creative process defines the final result, whether it is a painting, a plate, a poster or a dish. I would like to deliver an idea by presenting every artist’s creative process; how they are inspired by OCTAPHILOSOPHY’s 8 elements, and to highlight on“finding your own OCTAPHILOSOPHY”, finding your own balance, your perfect formula of inspiration! Does what I cook really matter? Maybe not.

OCTAPHILOSOPHY™ 特展的視線從八角構築出的屏網開 展,八位不同領域的創作人各聚一角,透過文字的線索轉化出 自我對於命題的再詮釋,切入的手法獨到精妙,各異奇趣,思 考的脈絡與靈光最終在這一來一回的辯證過程中,凝成更豐富 的視野,行走於其中,線性的鋼索綿延開展成內聚的牆,視線 同時穿透與遮蔽,讓原本清晰的空間界定產生質變,光線穿越 編織性的柵網,與原有建築相依存,引導人們走入江振誠的哲 學思考,「從生活中百般提煉出的語彙思考出發,凝結觀點, 與多樣性的創作方式進行開展性的鏈結」。

thinking," he said. "These images seem contradictory to each other, but in all creative processes, we are able to identify inspirations developed from a concentric circle to a perfect shape." This exhibition is a site for idea transformation and dialogue. The network extends from eight corners with eight artists from various disciplines. Based on the texts, they reinterpret each subject in their own ways. Each comes with a unique and fascinating perspective. As our thoughts go back and forth, these contexts and elements enrich our perspectives. As we walk in between, linear threads stretches and form inner walls. We see foregrounds and backgrounds at the same time. This arrangement shifts our understanding in space. Light penetrates through the cables and scatters in the space, inviting people to step into AndrĂŠ's philosophical thoughts. "We start with words refined from life and condense our thoughts, to expand connections through diverse creative methods."

Restaurant ANDRÉ主廚江振誠為2016年最新發表的書 籍OCTAPHILOSOPHY™所進行的世界巡迴計畫,八角 哲學並不單是一本料理書,更是一種看待事物的創作思 考方式與理念。台灣作為巡迴的首站,特邀八位身處不 同領域的優異創作人共同參與計畫,將八角哲學之八個 思考向度、透過自身的創作詮釋,將其「初衷」、「本 質」、「過程」經由展覽做出新的轉化呈現,並透過建 築、陶藝、工業、平面、花藝、插畫、版印、視覺不同 層次的凝視角度,強調於人文精神及藝術創作的涵義中 對話,在空間與視覺經驗的鋪陳引導下,誘發觀者重新 組構思考八角哲學。

ANDRÉ chef André Chiang in 2016. This publication is not only a model that applies to cooking, but also a thread in creative thinking. Debuted in Taiwan, this project invites eight interdisciplinary creative artists to involve. They interpret eight different aspects in OCTAPHILOSOPHY with their own media, including architecture, ceramics, industrial, graphic, floriculture, illustration, printing and visual, to present "origin", "essence", and "process" in new ways. Guided by spatial and visual experiences, humanity and artworks interconnect and inspire viewers to reconfigure OCTAPHILOSOPHY.

柔軟、酥脆、堅硬、組織、絲滑、濃厚、彈牙……,多重質感交疊猶如交響樂曲結合了節奏、音 量、靜默……。質感是美味的感官體驗。
Soft, crusty, hard, porous, slimy, dense, elastic… layers of texture composed as a symphony, with the complexity of rhythm, loudness, silence… A delicious sensory experience.
質感可謂一致性、多樣性和可能性的綜合體。質感的終極變化,是由脆變軟、由凍化 暖,由口至鼻、由嘗至嗅。人們有時需用大量文字才能表達自己的一個想法,然而有 時單用一首歌便可訴盡一切。如果我將一次令人難以忘懷的用餐經驗稱為一次「旅 程」,那麼這大概是旅程開始的第一道菜。靜靜地啜飲一口手中的咖啡,把生活周遭 電掣風馳發生過的都一飲而下。 It is a result of merging consistency, diversity and possibility. The ultimate transition of textures: from crispy to soft, frozen to warm, palette to nose, taste to aroma… There are times that we need many words to tell a story, or sometimes we have one song to tell many different ones. If a dining experience can be considered “a journey”, then this will be the dish that begins your journey, similar to having a coffee in the morning where everything happens rapidly around you, but you choose to take it all with a sip, quietly.

物外的品牌核心理念,是探尋器物與人的鏈結,並且以樸素的質地來展現其中的美。 我們相信質地和肌理代表了時間留下的痕跡,記錄著物件所經歷的過程;經過了不同 的手、承載著迥異的用途、火烤、風吹、日曬,最終呈現出一幅豐富的圖像,像是一 本書。 因此,我們選擇以銅為素材,有著堅固恆定的特質,同時又能夠累積出獨特的手澤與 紋理。人們觸碰感受,用指尖閱讀;感知的經驗是私密的,或許美妙、也許驚訝,每 個人都會有不同的解讀和想像,編織著屬於自己的故事。
ystudio aims to explore bonds between objects and humans, and displays beauty in pure texture. Time leaves its traces on materials and textures, and records each and every process. Each object goes through tests by fire, wind and sun, for various purposes. The end vessel presents a rich image, almost like a book. We choose copper as material. It's durable, stable and preserving unique textures. People touch, feel and read through fingertips. This private experience may be beautiful or surprising, open for various interpretations and imaginations. With this object, we build up our own stories.

白上加白,究竟是戴著純粹面具的矯飾還是過於造作的純粹。 「純粹」意味著預留思考空間,一個得以讓某項訊息打開的空間、讓氣味得以散發的 空間,和得以讓人填充自身情感的空間。現代人過於倚賴調味,從洋芋片到新鮮的胡 蘿蔔條都會以醬汁、沾醬、風味粉等加以調味。「是不是可以有一道菜不要加任何調 味呢?我希望我們的菜單中總有一道菜不需調味、不經烹煮,甚至是不耗電能的。」 只保留最原始、純粹的滋味。 White on White, is this purely pretentious or pretentiously pure? Purity means leaving room to think, a space for a message to unfold, a space for the aroma to open and a space to fill in your emotion… Nowadays people rely heavily on seasoning: sauce, dressing, puree, powder, dips… we season everything from potato chips to even a stick of carrot. “Can we have at least 1 dish a day without seasoning? 簡 學義 Hsueh-Yi Chien
建築家 Architect 竹間聯合建築師事務所主持人 Principal of Chien Architects & Associates 年少拜李德習畫,也習得自線條開拓空間、從物象之本質與結構性探索創作之思理。 大學由物理系轉至建築系,從此以建築究竟存在與自然之道,做為實踐生命意義之志 業,作品純粹丶風格簡約丶構成明晰丶富含詩意與人文質感。 In his formative years, Hsueh-Yi Chien studied drawing under Read Lee, during which time he learned to explore and extend space with simple lines, and to search for artistic expression through understanding the "essence" and structure of matters. Chien majored in Physics in college before transferring to Architecture. For him, his architecture practice was the sublimation and realization of his life-long probing of the Tao of existence and nature. Chien's works are known for their clarity, pure and poetic expression, as well as tactile and sensory qualities.

"Simplicity and Complexity" — The vast and seemingly infinite universe all came from a singularity, an original point, at the beginning of time. Our cosmos originated from that one singular moment before the Big Bang out of nothingness. It is so simple and yet so mysterious. The dance of Nature is so elegant, complex, and so concise. Nothing less and nothing more. It precisely renders the Creator’s mind. Maximum amount of possibilities is derived from a minimal element. The purest being leads to the infinity of the universe. Geometry is a code from God. The design of the book cover is based on the geometry of the book. It is deconstructed into three layers, with twenty triangles in eight materials (with six in one material and two each for the remaining seven materials), ten large trapezoids and ten small trapezoids (with three in one material and one each for the remaining seven materials). 蒙貝利耶,一個在我廚藝生涯中佔據最長時間的地方。那裏是我的廚藝啟蒙根源,磨 礪了我的料理技藝、帶領我感受南法人的熱情,並學習對大自然謙卑。近十年的光陰 使我深切融入南法文化,真誠、隨和、與自然共處。我經常思考如何以最適度而不過 於造作的方式呈現我的藝術創作,當我們從大自然中汲取創作靈感時,是否充分表達 了大地之母的訊息,而不過度刻畫。那段在南法蒙貝利耶的時光中,提升了我對環境 的敏感度,也給予我更豐富的情感,生活中的點點滴滴皆是靈感的來源。 Montpellier. The place that I spent most of my career. I learnt the craft, the generosity, learnt to be humble in front of nature… Nearly 10 years of my life I delved into the culture of the “South” where there’s no competition, no conflict, only “how to work together with nature?” “How to deliver an art piece in its best condition without over-working, over-interpreting the nature?” Just like every inspiration we draw from Mother Nature; are we creating something on behalf of nature? Or are we over-interpreting it? The place that influenced me the most has taught me to be sensitive, be emotional, and appreciate the art of living.

CN Flower西恩花藝設計總監暨創辦人 Founder and Design Director of CNFlower 以杭州富春山居花藝作品聞名,作品見於杭州安縵法雲、W Hotel Taipei等國際知名 酒店,在國際舞台上展現東方與自然之美。他的靈感多汲取自環境裡的觀察,花藝風 格極具自然性,清新而優雅。 Alfie Lin is well-knowned for his floral design works created especially for Fuchun Resort Hangzhou. His creations are found at top international hotels including the Amanfayun Hangzhou, W Hotel Taipei. His works show the aesthetic feeling of nature on the international stage. Most of his creative inspiration stems from observations of the environment around him. Which resulting in distinctively natural floral design styles that are simplistic, refreshing, and imbued with elegance.

Blossom, pollination, fruition, seeding It's natural lifecycle, and also path to ideal. When a seed lands on soil, its future is unpredictable. It may sprout or fall into dormancy. OCTAPHILOSOPHY, in our eyes, is a nascent seed. It's robust and strong to create flavors. Within this unique fruit, the essence remains.

在英文中,Sal-vation(救贖)、sal-lary(薪資)、sal-ad(沙拉)的字首都跟鹽一樣。鹽不僅是生 命的必要元素,也被用來保存食物、還曾經作為交易的貨幣、也用於趨吉避凶、讓食物變更美味。 鹽是海洋,是文明,是必不可缺的生命要素。
Sal-vation, sal-ary, sal-ad. Salt is not only the key to life, it also preserves, has been used as a currency, keeps the daemons away and makes food taste delicious. Salt is sea; civilized and essential.
如果有一樣東西能將索然無味轉變成多彩多姿,那便是「鹽」了。我一直在思考是不 是能找出一種味道或調味,能超越語言、文化與種族藩籬,並且讓來自各種飲食文化 的人都能理解與接受。於是我開始研究「鹽味的深度」,非指使用不同類型的鹽入 菜,而是垂直性的表現「鹽味」的特色。如何以火腿、鯷魚、醬油、魚露、海水和腌 菜等等不同深度的鹽味來調味一個食材,以創造出單一食材多向度的味覺體驗。鹽, 使我更深入地洞悉食材的原始樣貌。 If there’s one thing that turns food from black & white to colour, it will be salt; I was thinking whether there is a flavor or a seasoning that everyone understands, regardless of whether they are European or Asian. The flavor that could cross boundaries, language, culture and tradition. I started to research the “depth of saltiness”. It is not about using different types of salt, but to understand it vertically. How can we season the same produce with different depths of saltiness similar to ham, anchovy, soy sauce, fish sauce, sea water and pickles, to bring a completely different dimension to the same produce. Salt allows me to look at an object in depth, a deeper perspective.

陶藝家 Ceramist 國立台南藝術大學材質創作與設計系/專任講師 Lecturer of Material Arts & Design, Tainan National University of the Arts 聯合國教科文組織國際陶藝學會會員(IAC)。作品曾獲得世界四大陶藝雙年展之一,台 灣國際陶藝雙年展首獎,和日本美濃國際陶藝三年展、韓國世界陶藝雙年展大獎。在 創作上以形式多變物件的平面裝置風格,關注深究於人的圖像記憶、物件擬仿的偽物 形式和身體本能對圖像的閱讀想像…等相關議題。 An IAC member under UNESCO, Chu's works are often awarded, including Taiwan Ceramics Biennale, International Ceramics Festival Mino in Japan, and International Ceramic Biennale in Korea. He utilizes diverse forms and plane installations to focus on graphic memory embedded in human beings, objects in simulated formats, and intuitive readings and imaginations toward images.

鹽,在人生活中,為不可或缺的材料;在陶瓷裡,是原料,更是一種古老的釉藥。我 企圖在土、火、鹽、釉、器的相互關係裡開啟許多個對話框。所以,在土與鹽之間, 火讓兩者相互有了痕跡;而鹽,也讓火與釉之間,產生了共熔關係;而釉,更是鹽與 器之間最有力的證據。 在此次的創作上,主要的想法就是為「八角」蓋一座窯(鹽燒窯);以書本即是作品、書 封亦為雕塑窯體且引伸為容器的概念,來呈現書與書封的必然性如同容器承裝食材的 密切關係。
Salt is an essential ingredient in our life. It's also a material and ancient glaze in ceramics. I aim to create many dialogue bubbles among clay, fire, salt, glaze and vessel. Between soil and salt, fire leaves its marks. Salt also connects fire and glaze. Glaze is the powerful proof between salt and vessel. This creative work builds a kiln for OCTAPHILOSOPHY. The book is our object, and cover as kiln and vessel. The necessity between book and its cover works like the intimate relationship as vessel carries food.

Practitioners of the art of cultivation deserve to be celebrated. Artisans carry history on their shoulders by passionately dedicating their lives to the craft of taking a simple ingredient and turning it into gold.
記得有一次碰巧在街上,一位自產自售的農夫讓我見到了有生以來看過品質最好的蔬 菜。當時那位農夫問我:「你打算如何料理這菜呢?」他沒等我的回答就說:「我種 的菜,只能用炭火烤,再簡單地加些鹽來調味。」我著實感受到他對自己培植出的心 血,不但引以為傲還有滿滿的愛。從農夫手中接過菜的那一刻,我了解他的意念不該 被破壞或轉換。經過了那次巧遇,這位街上農夫讓我心中的自傲褪去殆盡,教我真誠 傾聽來自大自然的信息,並對每一位為自己所為奉獻心力的人肅然起敬。 One day I came across an artisan farmer who sold the best vegetable I had ever seen, he asked me “How will you prepare my vegetables? My vegetables can only be simply charcoal grilled with a pinch of salt”, he said even before I replied. I saw so much pride and love between him and his vegetables that I felt there should be nothing added from me, and to simply deliver this snap shot that I saw in front of me… The artisan farmer taught me to drop my ego, sincerely listen to the voice of nature, pay homage to the person who cultivates every single produce with the deepest respect.

324版畫工作室負責人 Owner of 324 Print Studio 抱持著「藝術應是源自生活之中,不應該只存在殿堂裡,不應該是稀有或少量。」的 理念創立 324 版畫工作房,期許自己像座搭架於大眾與藝術文化之間的橋樑。傳介藝 術的面向跨越藝術創作、版畫教學與策劃展演,期望以多元形式傳遞藝術感動。2015 年,受台北故宮博物院委託創作「夢遊園」版畫作品,其作品由台北故宮永久典藏。 We believe art is daily occurrence. It should not exist only within the walls of a cathedral, nor should it be a rarity. With this idea we established 324 print studio, and aspire to be the bridge that connects the public with art. We spread art in different ways such as art-creating, print-teaching and exhibition-planning. It is our hope that through our multi-dimensional expressions of art, more hearts will be touched and more souls will be nourished. In 2015, National Palace Museum entrusted me with the task of creating a print work, which is called ‘A Dream of Wondering in a Garden ‘. This work are now permanent collection of NPM.

He was visual director for handmade bicycle brand Sense 30 in Taiwan, and owned another brand FEVER. He has extensive experiences in visual design and branding. He has been nominated for Best Album Packaging in Golden Melody Awards three times in a row. His unique styles transform music into visual forms, so you can see rhythms in his design.

小時候總會在肚子餓時,聽到鍋鏟聲,聞到菜肉香,透過老窗戶舊紗窗,就知道老媽 正在張羅美味的一餐。 將兒時印象轉化成物件,利用不同時期的老窗框與早期的霧面花玻璃結合,隱約瞧見 了裡面的老紗窗,破了個不大不小的洞,也迫不及待的想要品嚐裡面的美味,環繞在 周圍的鐵窗花,也會隨著時間慢慢銹化,提醒著我們,就算時間一直催促著我們往前 走,心裡還是永遠記著,那心中的一道美味,總是值得等待,也值得回味。
When we were young, wok sounds in the kitchen and delicious smells through old window remind us a great dinner was not far away. I transform childhood memory into objects. Through old window frames and frosted glass, you can almost see a hole on the old screen. We are eager to taste those flavors on the other side. Surrounding iron decorations, although rust out over time, remind us that while time forces us to move ahead, flavors in our memory are always worthy to wait and remember.

「你兒時最喜歡吃的甜點是甚麼?」某次用餐席間友人突如其來的閒聊話題竟使我語 塞了。身為一個鹹食主義者,我不大愛吃甜食,但我卻花了好幾個月的時間去尋找那 個天外飛來一筆的答案 -「是生蛋糕麵糊!」我童年的甜點記憶就停留在這粉粉、黏 黏、一塊塊毫無花俏裝飾的甜點之上。對我來說,做蛋糕的過程總是洋溢著幸福並充 滿歡笑,也使家人和朋友間的關係更為親密。你問我小時候最喜歡吃的真的是「生蛋 糕麵糊」嗎?或許它只是童年美好記憶的代名詞吧。 "What's your childhood memory of sweets?" I couldn't think of anything when someone asked me at the table all of a sudden. I am a "savoury person", therefore I hardly appreciate sweet desserts, finding a 'sweets' of my childhood took me a few months to figure out... "the raw cake batter!" I said. Floury, sticky and lumpy, nothing fancy but full of childhood memories, and the "cake making moment" has always been filled with happiness, laughter and relationships... Do I really like raw cake batter? Or is it simply just a sweet reminder of my memorable moments.

視覺藝術家 Visual Artist 吉日工作室藝術總監 Art Director of Studio Auspicious 視覺藝術家鄒駿昇 PAGE TSOU,英國皇家藝術學院畢業,向來觀察世界隱晦流動的 一面,創作時常將畫面空間安排物件與物件的特殊關係,並以數字符號訴說未言的註 解,不僅吸引觀者注意畫面細節,並留下無限想像空間。 Page Tsou is a Taiwanese visual artist graduated from Royal College of Art, London UK. He is always interested in the invisible interwoven relationships of the people and objects, about how it intertwined with each other. Hidden agendas, power games and potential conflicts are the normalities of the world. Through drawing and continuing exploring the ideologies, he has many unfinished stories to be told.

In medieval times, people believed geese grew from trees as fruits and hanged upside down. In the slower past, we were never worried about food safety. We coexisted with nature in a balanced and harmonious way. When we were kids, weekend dinners were always our favorite moments. It's the most relaxing time after a week of busy work. My mom always picked a piece of meat for me. I ate this goose from tree with a dip of soy sauce.

平面設計師 Graphic Designer 永真急制workshop負責人 Proprietor of Aaron Nieh Workshop 聶永真,平面設計師,臺灣首位瑞士國際平面設計聯盟( AGI)會員。他熟練而從容 地以符號與素材駕馭畫面,開拓了另一種觀看平面視覺與理解的角度,讓華語流行音 樂、書籍出版和藝文展演,因此而有了新的想像與樣貌。 Aaron Nieh (aka Yung-Chen Nieh), the graphic designer who is also the first Taiwan AGI member since 2012. He has crafted a new perspective for the audience to watch and understand graphic design with his gracefully owning control over all imagery, symbols and materials, he has brought novel imagination and shaped a new landscape in the Mandarin Pop Music industry, as well as in the world of publishing and performing arts.
