Typical Canarian sauce with garlic, red pepper, paprika, cumin, oil, vinegar and salt. Nice with potatoes and meat or fish. Try “picón” (very spicy). You’ll love it!
Quesillo: Dessert made with eggs, milk, condensed milk, sugar, lemon and cinnamon. You can add palm honey or fresh cream.
Frangollo: Typical Canarian dessert with cornflour, eggs, milk, sugar, raisins, almonds and lemons. The frangollo is served cold. It`s very nutritious.

Garbanzas: Conejo en salmorejo:
It is the Canary Islands name for flour made from roasted grains, usually wheat or corn. It can be added to soups, stews, desserts, ice cream, sauces, etc.
Chickpeas casserole with meat, “chorizo” (highly seasoned pork sausage) and a typical “sofrito” (lightly fried tomatoes, onion, garlic, etc).
Rabbit marinated with spices, cooked in spicy sauce. It is usually served with “papas arrugadas” and local wine.
Rancho de judías o garbanzas: Papas arrugadas: The most famous dish from the Canaries. Small potatoes cleaned and cooked with the skin in water with plenty of cooking sea salt. They are usually served with mojo verde or rojo.
This dish is made with potatoes, meat and noddles, cooked slowly in a special “sofrito” base (lightly fried onion, garlic, tomato and pepper). Very tasty and nutritious.
Pollo frito al estilo de Adeje: Chicken Adeje’s style: diced and marinated with “mojo rojo” and some secret ingredients, then it is deep-fried and served with salad, chips or “papas arrugadas”.
Puchero Canario: Casserole with vegetables, meat and chickpeas. Healthy dish ideal for cold days. You can have it with “gofio” and mix it with the soup of the stew.
Escaldón: Ancient dish with gofio, meat, oil, garlic and salt. Delicious and nutritional, ideal in cold days with a glass of good wine.
Vieja guisada: Vieja is a local fish. It is boiled in salted water and usually served with “papas arrugadas”, oil and vinegar and of course some pepper!
Costillas de cochino con papas y piñas:
Chicharrones: Pork scratchings, fried in their own fat, garlic and salt. Sometimes gofio is also added.
Desalted pork ribs with white potatoes and tender corncobs in coriander sauce. Delicious!
Cazuela de pescado:
Carne de Cabra: Pieces of goat meat cooked with wine and aromatic herbs. It is usually served with boiled potatoes or chips.
Casserole made with fried fish, potatoes cooked with a special “sofrito” (ligthly fried onion, parsley, garlic, paprika, oil, water and salt). Best with “escaldón de gofio” (gofio stew) and “mojo verde”. Yummy!!!
