Our aim is to become a composite supplier that delivers specialism in the wine category. Many competitors bolt on a wine offer but do so, not fully understanding the category, the needs and requirements of the customer and the end drinker.
Given our many years working directly in the wine trade, we are best placed to deliver a great wine list and provide advice to ultimately help our customers sell better wine at improved margins.
WHAT IS YOUR ONE TOP TIP NOT ENOUGH VENUES USE IN MAXIMISING THEIR WINE SALES?
A simple tip would be when building a wine list, ensure that you have up-selling opportunities throughout your list for your customers to trade up to. An example would be having 2 x Sauvignon Blancs, one at an entry level price point and then an aspirational wine such as a Marlborough Sauvignon, to trade up to. The same would work with Malbec and within the rose category, where wines from Provence are currently in vogue.
Aspirational wines always sell, and they deliver great margins. Cash-in on their popularity.

I suppose the answer to this depends quite a lot on the venue, but for many the answer is premiumisation. You can actually sell less wine, but make more money, and give your customers a better experience while doing it. I think too many people see the way to make money by saving on cost, but the best way is to get a better product and charge slightly more for it. Sell less but make more money!

Sustainability in the wine trade doesn’t start and end in the winery. Indeed there are many aspects of the wine trade which are located in the UK such as importer Lanchester Wines and its sister business, Greencroft Bottling, which is a contract wine bottler. Both are based in County Durham.
Their philosophy is that every business has a duty of care to minimise its impact on the environment, but there is, unfortunately, no ‘one size fits all’ solution when it comes to sustainability. Lanchester Wines identified that it’s greatest opportunity to make a change is through minimising reliance on fossil fuels. And, as such, has invested around £10million in renewable heat and energy generation at its sites across the North East of England. Today the business is powered almost completely by renewable wind and solar energy.
• The business’ four wind turbines produce around 5.5million kWh (kilowatt hours) of clean, renewable electricity per year. Around 42% of this electricity is used to run operations onsite with the remaining electricity – enough to power 800 three bedroom homes - feeding into the National Grid for use within the local community

In a quest to create the perfect FAQ section, we asked our team, “what is the most asked question when speaking with our customers?” The answer to this came without much thought or hesitation, and despite being pipped into first place by ‘we cant find you’ (one of the downsides of our depot being in rural Warwickshire), there was one clear winner by a country mile.*
I have a problem in my cellar, who do I call? “ “
This question is frequently delivered in a tone of panic and accompanied by gas hissing or (worse) beer flowing onto the cellar floor or (even more catastrophic) no beer coming out the taps. But the answer isn’t always that simple. So, when faced with this query, our team can only answer it effectively once we’ve asked a question.
“Who is your lead/domain brewer? “
This is usually followed by a pause and ponder from the caller, swiftly followed by, “What the
hell does that mean?” So in this article, we try to explain in more detail and offer some guidance you can share with your team when you need some assistance when that time comes.
For all cellar and drinks dispense problems, the brand owner of the products provides first-line technical services support. However, in most cases, one brewer/supplier/producer will cover all of your cellar equipment if they occupy a majority share of your draught lines. This is known as the ‘lead or domain brewer’

OK, how do i find out who mine is?
The ’lead brewer’ is known as a brewer that occupies the majority of the taps at your venue. They are responsible for servicing and
maintaining the remote beer cooler in the cellar, pythons, the primary gas-reducing valve, their branded fonts and underbar secondary cooling.
A brand owner who is not a lead brewer is only responsible for their font, underbar secondary cooling, backboard equipment in the cellar and secondary gas-reducing valves.
SO WHO ARE YOU GOING TO CALL?

•If all beers are fobbing/not pouring and your remote cooler is not working correctly, you should contact your lead brewer.
•If you have one product down and everything else is pouring correctly, at the correct temperature, you should contact the brand owner of the product
•If you have issues with a cask handpull/beer engine for a permanent cask ale installation, you should contact the brand owner of the product.
•If you have a gas leak that isn’t isolated to a particular keg/container, contact your lead brewer.
•If you have issues with a handpull/keg line for an independent rotating keg or cask ale, you should contact the installers of this equipment.

Wiper and True have always been keen on cask beer. Drinking it. Making it. Serving it. Talking about it. Obsessing over it. Returning to a recipe to tinker with it, improve it, and make it again. Cask is an enduring, endless love affair - so much so that the team even brews a limited edition cask-only beer once a year, called Endless Love.
Founded in 2012 by a trio of friends turned amateur cider makers turned homebrewers turned nomadic brewers, Wiper and True have today outgrown their small-scale roots and operate out of a 28,000 square foot production facility in central Bristol. Described by founder Michael Wiper as the brewery’s ‘10th birthday present to itself’, this facility represents the highest level of brewing excellence; a laboratory and a playground in which the highly trained team combine a craft brewery’s obsession with flavour and innovation with the industrial brewers’ focus on consistency.
CASK BEER PRODUCTION AT WIPER AND TRUE
Today, cask beer has grown from a rare treat made very occasionally for special events and collaborations to a regular part of the weekly brew schedule. Casks brewed and packaged at this world-class production facility represent around 9% of Wiper and True’s total output annually. Although limited edition seasonal releases like Endless Love are brew team favourites to make, there are two cask beers which really get publicans picking up the phone to order. Cask Kaleidoscope is a supremely smooth adaptation of Wiper and True’s flagship 4.2% pale ale, refined for the perfect cask serve, whilst cask Milk Shake lowers the ABV of the team’s signature 5.6% milk stout to a more sessionable, cask-appropriate 4.8%.

The cask conditioning process
HORIZONTAL EXTRACTION/STILLAGE
1. STILLAGE - Position on stillage. If beer sits longer than 24 hours, gently roll cask and reposition before venting
2. CLEAN the shive and the keystone with warm water
3. VENT cask with hard peg, slowly release gas and remove peg
4. TAP cask with a clean, closed tap
5. CONDITION - Leave the shive hole empty for 24 hours. Insert soft peg, ideally replace every 12 hours (min. 24 hours) until conditioned
6. SAMPLE - Pour off some beer, check for Clarity, Aroma and Taste
7. SEAL THE CASK with hard peg until ready to go on sale
8. CONNECT the line (check hop filter in place) add soft peg for sale
9. CHECK quality at the handpull - Clarity, Aroma and Taste - and serve Morning & Close
AT CLOSE Close the cask taps/add a hard peg to the shive, putting the cask to bed.
MORNING Open the cask tap, replace hard peg with soft peg. Pull through at the handpull, test for Clarity, Aroma and Taste
VERTICAL EXTRACTION/STILLAGE
1. ROLL - Gently roll the cask into final position. If the beer sits for more than 24 hours, gently roll cask and reposition before venting
2. CLEAN and dry the keystone with warm water
3. TAP the cask (clean closed tap)
4. CONDITION - Leave the vent on the tap open fully for min. 48 hours
5. CLOSE THE VENT until ready to go on sale
6. CONNECT cask to line (hop filter in place) using rod or float

What is modern cask and how does it fit in the changing landscape of beer?

It seems like every news article you read tells us cask is in decline, that it is an outdated serving style that nobody wants to drink anymore and that the pubs that serve it are going the same way. Perhaps this is true if you’re looking at a spreadsheet in the boardroom of one of the world’s largest breweries, but from where I’m sitting I’m pleased to say nothing could be further from the truth. Small producers, such as ourselves, have seen demand for cask skyrocket in recent years.
The aforementioned global breweries have incredibly long and complex supply chains, designed to distribute enormous volumes of lager efficiently, but poorly suited to getting cask beer from the brewer to the drinker quickly. With a typical cask shelf life being little more than a month or two, that’s an issue for beer quality.
So the logistics behind national brands haven’t helped things, but the rest of the industry hasn’t helped itself either. Whilst cask is rightly celebrated for its heritage, branding that has consistently leant hard into tradition means it stops being a fun & exciting option and it starts to get a reputation for being boring beer with little innovation.
With the growth in the take home market, today’s drinker is increasingly looking for experiences when they come out for a beer.
The rise of brewery taprooms and activity led bars has, in part, been because their offering can’t be replicated more cheaply at home. What better serving style for this latest wave of drinkers then, than something that is next to impossible to recreate outside of the pub? Cask beer is exclusively available in hospitality venues and good cask outlets are something that interested drinkers will go out of their way to seek out.
With a focus on providing a great drinking experience, smaller breweries like ourselves have begun to produce cask that marries the appealing clarity and nuanced flavours of traditional styles with learnings from kegged craft beer. We’ve opted to use bright, engaging and inclusive branding to create excitement at the bar whilst a variety of styles, ranging from the traditional to the modern, help attract new drinkers. Using non-animal-based fining agents to clarify the beer not only means our beers are vegan, but also means we’re able to dramatically improve shelf stability. Coupled with quick and efficient distribution from the likes of Inn Express, we have been able to get more of our own fresh beer than ever into quality pubs.
Cask beer has had a rough few years, but it is rapidly gaining popularity with younger drinkers or those new to beer. Its fusty image is beginning to change with forward thinking breweries giving drinkers new options to celebrate a traditional serving style. For the latest wave of drinkers, cask is cool again.

Fermenting from apple concentrate or whole juice? Evaporating moisture from juice to make ‘conc’ not only wastes massive energy but totally denatures the apple. By fermenting whole juice the pure nature of the apple and its fragile
tannins remain to give those complex layers of fragrant flavour. “Wow, it really tastes of apples!” No kidding.
Juice content? Government regs state the min apple juice content only needs to be as low as 35% - setting the bar so low you can taste the rubbish, and sugar. Super-premium ciders are more re-assuringly like 70-100% juice – a wholly different product.
How much more jiggery-pokery is there? Pure fermented juice needs no additives, we just give it to you straight.

Mulled cider is a fantastic thing, it’s so quick, simple and easy to make and it brings colour, character, flavour and atmosphere to your offering. Simply the smell of the warm delicious liquid is as evocative as an open fire when your customers seek comfort from the cold weather
There are many ways to make mulled cider and it’s a great opportunity for kitchen and bar staff to get creative, express themselves and create a signature recipe for your venue. You can also make a fantastic mulled cider using a high quality mulling syrup that is added to warm cider, rather than a more traditional process of heating cider with spices.
With an RRP of around £4.50 for a half pint serve of standard mulled cider, and more for an upgraded version with a shot of spirit, it’s clear to see there’s ample margin to be made with this seasonal serve.
Here’s our recipe…
INGREDIENTS
• 1.5 litres of a premium cider such as Sandford Orchards’ Devon Red or Devon Mist
• 2 cinnamon sticks
• Zest of 1 orange
• A clove studded apple
• 1 Tbsp Allspice
• 2 star anise
• 75g brown sugar
• 400ml apple juice
• A glug or two of Calvados
• For the garnish: a few slices of fresh orange or apple and some ground cinnamon
METHOD
• Place all the ingredients in a large pan and heat gently for 30 minutes
• Be careful not to cook the cider for too long because that will cause it to lose its fruity flavour and zip
• Never heat past the serving temperature and be as gentle as possible during the cooking process (simmer don’t boil)
• Serve with an orange or apple slice garnish and a sprinkling of cinnamon on the rim of the glass

A quick guide to Japan’s ancient craft, waiting for the UK to fully discover its depth
Sake is becoming increasingly important in the UK premium drinks market, particularly within the on-trade sector, which includes highquality bars, hotels, and restaurants. The rising interest in sake is driven by its versatility, unique flavour profiles, and the growing popularity of Japanese cuisine across the UK. Sake appeals to premium venues looking to offer a distinctive, sophisticated beverage that stands out from traditional wines, spirits, and beers
Legends regarding the genesis of sake are varied, with some suggesting that rice brewing began in China. Others, that it was the rise of wet rice cultivation in 3rd Century Japan (the Yayoi Era) that gave rise to moulds, which subsequently paved the way for fermentation. However; what is known is that around 300BC ‘kuchikamino sake’ (chewed sake) was made by people chewing rice and spitting it into collective containers. Not particularly appetising I’m sure you’ll agree, but it had to start somewhere.
The enzymes from the saliva saccharified the starch and the repulsive concoction was then fermented. Happily, ‘koji-kin’ (the mould Aspergillus oryzae) was subsequently discovered and its enzymes effected the conversion of starch to sugar in an altogether far more appealing manner. Rice inoculated with koji-kin becomes ‘kome-koji’ (malt rice); the only difference between this process and the conversion of barley to malted barley is that with barley the necessary enzymes are naturally already present.
Further improvements came between 800AD and 1200AD (the Heian Era); notably the three step addition – a starter mash known as ‘moto’ (root) or ‘shubo’ (mother of sake) was used and brewers finally managed to isolate koji-kin for the first time giving them greater control and consistency.
Jumping forward a few hundred years saw a need to increase production dramatically during the Second World War. This was effected by the addition of pure alcohol and glucose to the mash resulting in a threefold increase. Today, much sake is still made this way in most small breweries throughout Japan.

SO, WHAT IS SAKE?
Firstly; sake is not a rice wine, as this would imply the fermentation of fruit sugars. It is really a sort of strong Japanese rice beer with an alcohol by volume as high as 20%. Having concluded that it is not a wine it is, however, immediately noticeable that the complexity and range of aromas, flavours, fragrances, characters and styles found in sake are more reminiscent of wine than beer. Sake literally translated is “alcoholic beverage” which has been taken in the West to mean a Japanese alcoholic beverage fermented from rice. ‘Nihon-shu’ is the word in Japanese that distinguishes it from other beverages and is the real word for what we know as Sake. However, to add to the confusion, filtered or clear sake is correctly known as ‘Seishu’ whilst cloudy sake is known as ‘Nigori-shu’. But in the West, it will forever be known as Sake.
Japanese Law defines ‘shu’ or sake as, “made from rice, rice koji and water using fermentation and filtration processes”.
HOW IS IT MADE?
Traditionally, sake is produced in the winter, with premium varieties made exclusively between December and March. While advancements in brewing technology now allow sake production year-round, the highest-quality sakes are still crafted in the coldest months. The type of rice used plays a vital role in determining the final product’s
quality. Superior rice strains, such as Yamadanishiki, Nihon-baré, and Miyama-nishki, are preferred for making premium sake.
Water quality is another crucial element in sake production. The brewing capitals of Japan, Kobe and Kyoto, emerged due to the mineral composition of their water. Ideal water contains high levels of potassium, magnesium, and phosphoric acid, with low iron content. Water differences result in distinct sake styles: Hyogo’s hard water produces full-bodied, complex sakes, while Kyoto’s softer water yields lighter, more delicate brews. These regional differences often lead to sakes being described as “male” or “female” based on their strength and softness.
Sake production also involves the use of approximately 60 special strains of highstarch rice. The degree of rice milling is critical, as it removes proteins, fats, and minerals, leaving only the starch heart. More thorough milling results in a cleaner, finer product with fewer congeners. After milling, the rice is soaked—a process precisely timed to ensure ideal hydration—and then steamed until it is firm on the outside and soft in the middle. This texture is crucial for koji production and fermentation.
Koji production takes place in a hot, humid room called the kojimuro. The rice is sprinkled with koji mould (Aspergillus oryzae) and left to cultivate. Over 12 hours, the rice mass is regularly massaged to ensure even exposure to the mould. After 48 hours, the rice is ready, with the mould having penetrated the rice kernel, preparing it for the next stage.
The prepared koji is combined with steamed rice, water, and yeast (kobo) in a small tank. The strain of yeast used significantly influences the resulting sake’s flavour, with some giving floral notes, like pear, and others
imparting earthier, mushroom-like aromas. This mixture ferments for up to two weeks, creating a yeast-rich, highly concentrated starter called ‘moto’ or ‘shubo.’ This starter, with an alcohol by volume (ABV) of about 11%, aids in the next stage of fermentation.
More koji, rice, and water are added over four days in three stages, producing the final mash, or ‘moromi.’ This process, known as multiple parallel fermentation, involves both saccharification and fermentation occurring simultaneously, which is unique to sake production.
SAKE THE FOUR CATEGORIES
JUNMAI
Junmai is Japanese for “pure rice” and is an important term as it separates pure rice sake from the non-pure version, also known as honjozo (more on that next). The junmai rice is polished to 70%, and brewed using only water, yeast and koji. It is said to have a rich full body with an intense, slightly acidic flavour.
GINJO & JUNMAI GINJO
Ginjo consists of rice milled to 60%, water, koji, yeast and added distilled alcohol. It’s usually made in smaller batches to control the fermentation process better. Usually quite fragrant, it has a light, fruity and complex flavour. Junmai ginjo is simply a pure rice sake made with a brewing process involving low-temperature fermentation. No distilled alcohol has been added.
ARE THEY ALL THE SAME?
The vast majority of sake produced today is still non-premium Futsushu, (regular ‘table Sake’) or Sanzoshu. This is the main dividing line that runs through the premium sake category - you either have distilled alcohol added or you don’t. Sake produced without the addition of brewers alcohol is labelled Junmai - translated in English as ‘pure rice’ - and usually found in the name of all sake brewed in this way. You may also see the term Junmai-shu used, which simply means Junmai sake.
There are so many types of sake and most have an alcohol content of 15%–16% on average. To keep things simple, we’ll stick with four main classifications:
HONJOZO
Honjozo also uses rice that has been polished to 70%. The difference: it also contains a small amount of distilled brewer’s alcohol, which is added to smoothen out the flavour and aroma. Honjozo sakes are often drier, lower in acidity and less cloying and fragrant than pure sake.
DAIGINJO & JUNMAI DAIGINJO
Daiginjo is a premium version of ginjo sake – “dai” stands for great, or big – that’s made with rice polished all the way down to at least 50% and has added distilled alcohol. It also requires precise brewing methods. Light, fruity and fragrant, daiginjo sakes are often relatively pricey. Considered the highest grade of sake, junmai daiginjo, on the other hand, is daiginjo sake that hasn’t been brewed with distilled alcohol. It is also brewed slowly and at low and precise temperatures.

WHAT TO SMOKE?

A lighter style cocktail like a Martini may only need a gesture from a smoked olive to have an effect, whilst other drinks like a Penicillin or Bloody Mary can probably hold up to having the entire drink marinate in an applewood smoke-filled box for twenty or thirty seconds.

Introducing Jonathan and Alexander Neil, the spirited brothers behind Roland’s and Domino Club, who’ve turned their pandemic pause into a pioneering distillery venture. These Yorkshire natives, continuing the legacy of their publican parents, ventured into spirit production amid unprecedented times, launching Wolfe Bros from a small back room in Leeds.
In 2019, alongside their colleague Niall McGloin, they acquired a 30-litre still, initially set aside as they managed their thriving bars.
