That’s why we’re partnering with Campaign Against Living Miserably (CALM) to say: We are not alone. We're not talking extraterrestrials here, just the fact that there is always someone who's got your back.

hether it’s meeting a mate for a swift mid-week pint, sweatily singing along to your favourite band in a sea of fans, or being hoisted onto a friend’s shoulders at a festival, we at Beavertown believe that life is better experienced together. But sometimes, that’s easier said than done.

We are well aware that despite sharing this planet with 8 billion other humans, life on Earth can feel lonely at times.

In fact, over 52% of UK adults have reported feelings of loneliness at some point or another*. And we want to help.

You’ll be seeing Beavertown and CALM working together to create moments that bring people together and make life feel worth living for you and the people in your orbit.

Feelings of loneliness can feel exacerbated in January once the whirlwind of Christmas dies down. So this year, we teamed up with our charity partner CALM to help crush loneliness in January by running a series of climbing events across the UK.

Yes. Climbing. Climbing gets the blood pumping, opens your eyes to a fresh new challenge and is an excellent way to meet new people.

Beavertown x CALM ran a series of events across the month at London and Lakeland Climbing Centres where punters got involved to meet up with mates and make new ones, culminating in a massive end of Jan gig at HarroWall headlined by indie legends, Mystery Jets.

we created a packet of delicious Cheese & Jalapeno crisps (with a twist) designed to spark meaningful conversations with every tear of the packet.

Printed inside are a series of conversation starters designed by CALM to get you to OPEN UP to your mates. Hence the name. Available at over 200 pubs across the UK throughout May.

CALM’s free helpline and webchat are open 5pm-midnight, 365 days a year for people in crisis0800 58 58 58

Did you know that over half of adults in the UK have pretended to be ‘okay’ to avoid talking about their own mental health? And we get it, it’s not easy. Which is why we teamed up once again with our friends at Campaign Against Living Miserably (CALM) to try and help. And the answer, like the answer to so many things in life, is: Crisps.

WINE

THE 2025 TREND REPORT

SKIN-CONTACT WHITE WINES

(ORANGE WINES)

Orange wines are white wines made using red wine techniques, resulting in complex, tannin-rich flavours. This trend continues to grow as more venues explore how these bold wines pair with food and offer something intriguing for wine lovers.

NATIVE & HERITAGE GRAPE VARIETIES

There’s a surge in demand for wines made from rare or native grape varieties that reflect a region’s heritage. These grapes often create wines with unique flavour profiles, allowing venues to offer a truly distinctive wine experience.

PET-NAT & NATURAL SPARKLING WINES

Petillant-naturel (Pet-Nat) wines, made using an ancient sparkling technique, are trending for their rustic, less fussy nature. With minimal intervention, these lightly sparkling wines offer fresh, fruity flavours and are perfect for casual sipping.

WINE IN ALTERNATIVE FORMATS

Canned wine is no longer a novelty. As consumers embrace the convenience and sustainability of cans, expect more premium, high-quality wine offerings in formats like cans and boxes, making it more accessible for on-the-go customers. Also look out for high quality Bag in Box options with a huge tick in the sustainability box.

MINIMAL INTERVENTION & LOW-SULPHUR WINES

Natural and low-sulphur wines continue to rise in popularity as more drinkers seek wines that are made with minimal additives. These wines are not only cleaner in composition but often have a distinct, terroir-driven character.

LOW-ABV WINES

Similar to the trend in spirits, consumers are looking for lighter, low-alcohol wines that still deliver on flavour. These wines are perfect for venues wanting to cater to guests looking for a more relaxed drinking experience, ideal for daytime or lunch pairings without sacrificing taste.

MEET THE NEW TEAM BEHIND ALL THINGS WINE AT INN EXPRESS

WHY DID YOU CHOOSE INN EXPRESS?

A simple one really, the opportunity here is a great one. To play a significant role in developing the wine portfolio, improving the depth & quality of the range is a real privilege.

The role then comes to life when meeting customers, new and existing, to discuss their business & their wine offering. I provide a consultative approach, helping customers develop a balanced wine list that delivers on margin expectations and offers real quality and value.

HOW WILL INN EXPRESS BE DIFFERENT TO OTHER WINE SUPPLIERS?

Our aim is to become a composite supplier that delivers specialism in the wine category. Many competitors bolt on a wine offer but do so, not fully understanding the category, the needs and requirements of the customer and the end drinker.

Given our many years working directly in the wine trade, we are best placed to deliver a great wine list and provide advice to ultimately help our customers sell better wine at improved margins.

WHAT IS YOUR ONE TOP TIP NOT ENOUGH VENUES USE IN MAXIMISING THEIR WINE SALES?

A simple tip would be when building a wine list, ensure that you have up-selling opportunities throughout your list for your customers to trade up to. An example would be having 2 x Sauvignon Blancs, one at an entry level price point and then an aspirational wine such as a Marlborough Sauvignon, to trade up to. The same would work with Malbec and within the rose category, where wines from Provence are currently in vogue.

Aspirational wines always sell, and they deliver great margins. Cash-in on their popularity.

WHY DID YOU CHOOSE INN EXPRESS?

It was a perfect opportunity! After 17 years spent on the road selling and making wine, I finally got the chance to have more responsibility in the buying process which is something I truly enjoy.

The opportunity to shape a portfolio and help on trade premises sell the best quality wines, at the best prices possible was too good to pass up. My mantra is ‘to make a better world of wine’, and that is something I am going to do step by step!

HOW WILL INN EXPRESS BE DIFFERENT TO OTHER WINE SUPPLIERS?

We are in a very lucky position here at IE. We are small enough to be flexible with our wine choices, we have a portfolio that is constantly changing, developing and evolving. If you feel something is missing from our list, tell us and we will go out and find the best one possible at the price that suits, and then with our unrivalled logistics we will deliver, with no minimum order requirements!

We also of course provide beers, softs, spirits, minerals, snacks…. Washing up liquid… everything an on trade premises needs to function, making us a true one stop shop for all you may need, and minimising the amount of suppliers you need to deal with.

WHAT IS YOUR ONE TOP TIP NOT ENOUGH VENUES USE IN MAXIMISING THEIR WINE SALES?

I suppose the answer to this depends quite a lot on the venue, but for many the answer is premiumisation. You can actually sell less wine, but make more money, and give your customers a better experience while doing it. I think too many people see the way to make money by saving on cost, but the best way is to get a better product and charge slightly more for it. Sell less but make more money!

Pinot Noir is an absolute git of a grape. Its very hard to grow, and as such takes constant care and attention. Everyone should have this as their house pinot noir.

What makes it so special is that it is a 100% fruit wine, based on the

BEING CARBON NEUTRAL IS JUST THE BEGINNING

Sustainability in the wine trade doesn’t start and end in the winery. Indeed there are many aspects of the wine trade which are located in the UK such as importer Lanchester Wines and its sister business, Greencroft Bottling, which is a contract wine bottler. Both are based in County Durham.

Their philosophy is that every business has a duty of care to minimise its impact on the environment, but there is, unfortunately, no ‘one size fits all’ solution when it comes to sustainability. Lanchester Wines identified that it’s greatest opportunity to make a change is through minimising reliance on fossil fuels. And, as such, has invested around £10million in renewable heat and energy generation at its sites across the North East of England. Today the business is powered almost completely by renewable wind and solar energy.

• The business’ four wind turbines produce around 5.5million kWh (kilowatt hours) of clean, renewable electricity per year. Around 42% of this electricity is used to run operations onsite with the remaining electricity – enough to power 800 three bedroom homes - feeding into the National Grid for use within the local community

• Installing 2 Megawatts of solar panels on the roof of Greencroft Two which will create around 1.7m kilowatt hours of electricity per year

• A 41 kilowatt solar array on the roof of Lanchester Wines’ office complex produces enough clean electricity to cover day-to-day use.

• Pioneers of world-changing heat pump technology which uses water from disused mines beneath our warehouses in Gateshead.

BEER & CIDER

THE 2025 TREND REPORT

NITRO BEER

Nitrogen-infused beers are expanding beyond stouts, with breweries applying nitro to a variety of styles, from pale ales to sours. The result? A smoother, creamier drinking experience that offers something truly different. Carling Premier anyone?

HYBRID BEER-CIDER CROSSOVERS

Beer-cider hybrids are emerging, blending the hoppy bitterness of beer with the crisp fruitiness of cider. These hybrids offer refreshing alternatives and appeal to both beer and cider drinkers looking for something in between.

SUSTAINABILITY IN BREWING

Eco-friendly brewing practices are becoming essential. Breweries are focusing on water conservation, carbon neutrality, and sustainable packaging. Expect more zero-waste beers and partnerships with sustainable agriculture.

NON-ALCOHOLIC BEER GROWTH

Not exactly a new trend but this category shows no sign of stopping. Non-alcoholic beer options are growing in variety and quality. Craft breweries are investing in creating rich, full-flavoured alcohol-free beers that rival their traditional counterparts. These offerings are ideal for capturing the mindful drinking market.

BARREL AGED BEERS

Barrel-ageing isn't just for whisky anymore. Breweries are more so than ever ageing their beers in whisky, rum, or wine barrels, infusing them with deep, complex flavours. Whether it's a stout with hints of bourbon or a sour aged in Chardonnay barrels, these beers add a premium element to your offerings, ideal for drinkers seeking a richer experience.

CELLAR TECHNICAL SERVICES

Boooorrring... until it isn’t!

In a quest to create the perfect FAQ section, we asked our team, “what is the most asked question when speaking with our customers?” The answer to this came without much thought or hesitation, and despite being pipped into first place by ‘we cant find you’ (one of the downsides of our depot being in rural Warwickshire), there was one clear winner by a country mile.*

I have a problem in my cellar, who do I call? “ “

This question is frequently delivered in a tone of panic and accompanied by gas hissing or (worse) beer flowing onto the cellar floor or (even more catastrophic) no beer coming out the taps. But the answer isn’t always that simple. So, when faced with this query, our team can only answer it effectively once we’ve asked a question.

“Who is your lead/domain brewer? “

This is usually followed by a pause and ponder from the caller, swiftly followed by, “What the

hell does that mean?” So in this article, we try to explain in more detail and offer some guidance you can share with your team when you need some assistance when that time comes.

For all cellar and drinks dispense problems, the brand owner of the products provides first-line technical services support. However, in most cases, one brewer/supplier/producer will cover all of your cellar equipment if they occupy a majority share of your draught lines. This is known as the ‘lead or domain brewer’

SO, WHO IS YOUR LEAD / DOMAIN BREWER?

when this happens. Whoever this is, they will be the number you call when any cellar issues arise.

OK, how do i find out who mine is?

The ’lead brewer’ is known as a brewer that occupies the majority of the taps at your venue. They are responsible for servicing and

maintaining the remote beer cooler in the cellar, pythons, the primary gas-reducing valve, their branded fonts and underbar secondary cooling.

A brand owner who is not a lead brewer is only responsible for their font, underbar secondary cooling, backboard equipment in the cellar and secondary gas-reducing valves.

SO WHO ARE YOU GOING TO CALL?

you’re singing ghostbusters right?

•If all beers are fobbing/not pouring and your remote cooler is not working correctly, you should contact your lead brewer.

•If you have one product down and everything else is pouring correctly, at the correct temperature, you should contact the brand owner of the product

•If you have issues with a cask handpull/beer engine for a permanent cask ale installation, you should contact the brand owner of the product.

•If you have a gas leak that isn’t isolated to a particular keg/container, contact your lead brewer.

•If you have issues with a handpull/keg line for an independent rotating keg or cask ale, you should contact the installers of this equipment.

CASK IS KING: WIPER AND TRUE PAY TRIBUTE TO BRITISH BEER HERITAGE

A MATURING BREWERY

AN ENDLESS LOVE

Wiper and True have always been keen on cask beer. Drinking it. Making it. Serving it. Talking about it. Obsessing over it. Returning to a recipe to tinker with it, improve it, and make it again. Cask is an enduring, endless love affair - so much so that the team even brews a limited edition cask-only beer once a year, called Endless Love.

Founded in 2012 by a trio of friends turned amateur cider makers turned homebrewers turned nomadic brewers, Wiper and True have today outgrown their small-scale roots and operate out of a 28,000 square foot production facility in central Bristol. Described by founder Michael Wiper as the brewery’s ‘10th birthday present to itself’, this facility represents the highest level of brewing excellence; a laboratory and a playground in which the highly trained team combine a craft brewery’s obsession with flavour and innovation with the industrial brewers’ focus on consistency.

CASK BEER PRODUCTION AT WIPER AND TRUE

Today, cask beer has grown from a rare treat made very occasionally for special events and collaborations to a regular part of the weekly brew schedule. Casks brewed and packaged at this world-class production facility represent around 9% of Wiper and True’s total output annually. Although limited edition seasonal releases like Endless Love are brew team favourites to make, there are two cask beers which really get publicans picking up the phone to order. Cask Kaleidoscope is a supremely smooth adaptation of Wiper and True’s flagship 4.2% pale ale, refined for the perfect cask serve, whilst cask Milk Shake lowers the ABV of the team’s signature 5.6% milk stout to a more sessionable, cask-appropriate 4.8%.

KALEIDOSCOPE: THE ULTIMATE CASK PALE ALE

Kaleidoscope is inspired by the magical world of American pale ales; one of the early and major influences in the evolution of Wiper and True’s style. Brewed with Citra, Simcoe and Mosaic, it’s hard to put into words exactly what makes the cask edition of Wiper and True’s flagship beer so enjoyable; perhaps it’s

the residual sugar released from the final fermentation in cask; perhaps it’s the unparalleled smoothness of the finished serve. Whatever it is, we think Kaleidoscope is a near-perfect pint, and customers are always delighted to see it on the pumps.

MILK SHAKE: A WINTER WARMER THAT GRABS ATTENTION ON THE BAR

Bristol was once renowned for its milk stouts; the water profile of the city perfectly suited the chemistry required to make the smoothest, most satisfying beers. Within the craft beer movement, Wiper and True were early adopters of the style, and have now been brewing their signature stout Milk Shake for almost a decade. Their cask recipe for this luxurious beer is rich, satisfying, and ridiculously smooth. Its toasty, dark roasted malt flavours provide great depth of flavour, keeping the drinker sipping, whilst the sweetness provided by lactose rounds out the beer perfectly. A touch of vanilla is the real cherry on the cake.

Cask Milk Shake and Kaleidoscope are available for £110.99 per cask, directly from Inn Express.

We forged Firebrand in 2012 in a converted milking parlour on the untamed edge of Bodmin Moor, North Cornwall. The idea was born from our passion for beer made from all-natural ingredients, Cornish spring water, and American hops.We brew beer that we love to drink and pride ourselves on our craft.

Founded in 2009 by Evin O’Riordain, The Kernel Brewery has been a pioneering force in the London craft beer scene. This esteemed brewery is celebrated for its artisanal approach, often revitalizing forgotten beer styles with a contemporary twist, and has become synonymous with quality and innovation in the UK’s bustling beer market.

The Kernel Brewery’s Table Beer is a prime example of their ethos, offering an effortlessly drinkable option that has become a fixture on pub and bar menus. With an alcohol content that typically ranges between 2.5% and 3.2% ABV, this light yet flavourful beer is perfect for patrons seeking a sessionable drink that doesn’t compromise on taste. Each batch varies in its hop profile, presenting nuances of citrus and tropical fruits, and maintaining a fresh appeal with each new offering.

This dynamic approach to brewing not only keeps the line-up interesting but also positions the Table Beer as a versatile choice for a wide range of dining experiences. For pubs and bars, featuring The Kernel Table Beer means offering a product that aligns with the modern drinker’s desire for quality and sessionability, ensuring it holds a valued place in today’s competitive market.

What is modern cask and how does it fit in the changing landscape of beer?

Attic’s Oli Hurlow on why this most traditional serving style is perfectly suited to the modern world.

It seems like every news article you read tells us cask is in decline, that it is an outdated serving style that nobody wants to drink anymore and that the pubs that serve it are going the same way. Perhaps this is true if you’re looking at a spreadsheet in the boardroom of one of the world’s largest breweries, but from where I’m sitting I’m pleased to say nothing could be further from the truth. Small producers, such as ourselves, have seen demand for cask skyrocket in recent years.

The aforementioned global breweries have incredibly long and complex supply chains, designed to distribute enormous volumes of lager efficiently, but poorly suited to getting cask beer from the brewer to the drinker quickly. With a typical cask shelf life being little more than a month or two, that’s an issue for beer quality.

So the logistics behind national brands haven’t helped things, but the rest of the industry hasn’t helped itself either. Whilst cask is rightly celebrated for its heritage, branding that has consistently leant hard into tradition means it stops being a fun & exciting option and it starts to get a reputation for being boring beer with little innovation.

With the growth in the take home market, today’s drinker is increasingly looking for experiences when they come out for a beer.

The rise of brewery taprooms and activity led bars has, in part, been because their offering can’t be replicated more cheaply at home. What better serving style for this latest wave of drinkers then, than something that is next to impossible to recreate outside of the pub? Cask beer is exclusively available in hospitality venues and good cask outlets are something that interested drinkers will go out of their way to seek out.

With a focus on providing a great drinking experience, smaller breweries like ourselves have begun to produce cask that marries the appealing clarity and nuanced flavours of traditional styles with learnings from kegged craft beer. We’ve opted to use bright, engaging and inclusive branding to create excitement at the bar whilst a variety of styles, ranging from the traditional to the modern, help attract new drinkers. Using non-animal-based fining agents to clarify the beer not only means our beers are vegan, but also means we’re able to dramatically improve shelf stability. Coupled with quick and efficient distribution from the likes of Inn Express, we have been able to get more of our own fresh beer than ever into quality pubs.

Cask beer has had a rough few years, but it is rapidly gaining popularity with younger drinkers or those new to beer. Its fusty image is beginning to change with forward thinking breweries giving drinkers new options to celebrate a traditional serving style. For the latest wave of drinkers, cask is cool again.

Hello, my name is Jacob Liddle, The Jiddler, and this is my Tipple! I launched Jiddler's Tipple in October 2019 with the aim of creating inclusive, delicious and eco-friendly beer. I've homebrewed for many years and have always had a passion for good food and drink - as well as sharing it with others! Last February I managed to leave my "day job" and go full time "beer baron" and since then, Jiddler's Tipple has become a stand out local brew. Here's what you need to know...

An eminent golden ray of sunshine, this malt forward offering brings a soft, honey aroma and a robust malt backbone, balanced with a gentle bitterness from the traditional noble hops and a delicate uplifting waft of citrus from the new world addition

Paradiso radiates citrus fruit from the moment you pour it, to the second you finish that last sip with a satisfied sigh and the bright, sharp twist of bitterness on the end makes you want to dive back in for one more sip

A delight for the senses, this beer delivers on all levels Rosy floral aromas are immediate as you pour, with a light and limey citrus bite on the palate and a balanced but obvious bitterness to finish

A classic hop-fest that fuses tropical flavours to recreate the intensity of a double IPA The fantastic blend of US hops combine to give pineapple, citrus, pine and stone fruit aromas underpinned by a pine and herby flavour – topped off with an unapologetic slap of mango – to make this the ultimate summer thirst quencher

Forget the notion this is a beer style that has had its day Instead, think of it as honeycomb covered in chocolate, because that’s exactly what it tastes like: rich, unctuous and an absolutely decadent treat of a beer

PURCHASING WITH provenance.

When you drink a world beer, you want to be transported to its true home— the streets of Munich, the beaches of Mexico, the bustle of a Spanish Tapas bar or the rolling hills of Tuscany. It’s those memories of sun-soaked holidays, with a cold, premium lager in hand, that continue to drive the growth of this category. The nostalgia, the authenticity, and the sense of adventure are all part of the appeal.

Given the growth in the world beer category It’s no surprise, then, that the world beer category is awash with new brands constantly vying for a share of the action.

In today’s beer market, provenance is more than just a buzzword; it’s a mark of quality and craft, a way for customers to connect with the beer in their glass. This connection is something they’re willing to pay extra for, especially when the story behind the beer is rich with history, culture, and tradition.

For venues, there’s a huge opportunity here. By strategically positioning world beers on your menu and emphasizing their authentic origins, you can offer something far more engaging than the usual macro brands.

Tap into the heritage of these brews, and you’ll not only elevate your drinks list but also give customers a reason to explore beyond the familiar, paying a premium for the experience. Here are our best selling options that will drive extra rate of sale and profit.

Our best selling alternatives to the biggest macro world beers, made exactly where you and your customers would expect.

CIDERS Classic How Real Is Your Cider?

Cider – probably the most misunderstood drink in the world?

The world of craft drink takes many guises – from pure artisans to the inevitable bandwagon jockeys. It’s all about the marketing, but for you free-thinking drinks buyers you want to know the real story to give the best possible customer experience – right? It’s nothing without the margin of course, and you want to be sure of the value you’re selling, so for any self-respecting buyer it’s always worth taking a look behind the label.

TASTE COTSWOLDS

With craft beer we all know our favourites and what makes us go for them –mostly it’s independent pioneers who stand up for their values of ingredients and flavour – no shortcuts, no smoke and mirrors. And we know their value, and so do customers. We can soon sniff out a fake with Cornish beer and Continental lagers brewed in Burton. Who’s taking who for a ride?

It’s a Wonderful World

No more so is this true than in the Wonderful World of Cider, where every trick in the book is played out to buy you over, literally in all too many cases... But there are a few simple checks to make or ask about when it comes to knowing if you’re getting proper value and the real thing...

Who’s actually making the cider? Is it just Big Cider putting a label on it for a Brewer or Big Cheese – easily done but you know where the margin’s already gone

Fermenting from apple concentrate or whole juice? Evaporating moisture from juice to make ‘conc’ not only wastes massive energy but totally denatures the apple. By fermenting whole juice the pure nature of the apple and its fragile

tannins remain to give those complex layers of fragrant flavour. “Wow, it really tastes of apples!” No kidding.

Juice content? Government regs state the min apple juice content only needs to be as low as 35% - setting the bar so low you can taste the rubbish, and sugar. Super-premium ciders are more re-assuringly like 70-100% juice – a wholly different product.

How much more jiggery-pokery is there? Pure fermented juice needs no additives, we just give it to you straight.

Knowing the real story helps you to sell more and make more money…

Cider for us is all about the pure unadulterated flavour of the apple -bittersweet tannin bombs that give the greatest drink on earth when they’re given the time and environment to express themselves. Our passion sustains this sentiment and our purpose to give the customer something better, something more pure and for a broader public to feel the flavours and appreciate the power of these apples. Customer demand is increasing as borne out in the latest CGA data for 2023 – the volume

THE SANDFORD ORCHARDS WAY

Mulled cider is a fantastic thing, it’s so quick, simple and easy to make and it brings colour, character, flavour and atmosphere to your offering. Simply the smell of the warm delicious liquid is as evocative as an open fire when your customers seek comfort from the cold weather

There are many ways to make mulled cider and it’s a great opportunity for kitchen and bar staff to get creative, express themselves and create a signature recipe for your venue. You can also make a fantastic mulled cider using a high quality mulling syrup that is added to warm cider, rather than a more traditional process of heating cider with spices.

With an RRP of around £4.50 for a half pint serve of standard mulled cider, and more for an upgraded version with a shot of spirit, it’s clear to see there’s ample margin to be made with this seasonal serve.

Here’s our recipe…

INGREDIENTS

• 1.5 litres of a premium cider such as Sandford Orchards’ Devon Red or Devon Mist

• 2 cinnamon sticks

• Zest of 1 orange

• A clove studded apple

• 1 Tbsp Allspice

• 2 star anise

• 75g brown sugar

• 400ml apple juice

• A glug or two of Calvados

• For the garnish: a few slices of fresh orange or apple and some ground cinnamon

METHOD

• Place all the ingredients in a large pan and heat gently for 30 minutes

• Be careful not to cook the cider for too long because that will cause it to lose its fruity flavour and zip

• Never heat past the serving temperature and be as gentle as possible during the cooking process (simmer don’t boil)

• Serve with an orange or apple slice garnish and a sprinkling of cinnamon on the rim of the glass

SOFT DRINKS

THE 2025 TREND REPORT

PREMIUM LOW-CALORIE SODAS

Consumers are still loving low-sugar drinks, but now they’re seeking options that taste indulgent. Premium low-calorie sodas are using natural sweeteners like stevia and monk fruit to deliver big, bold flavours without the guilt.

SPARKLING TEA & KOMBUCHA

Often thought of as the same thing, sparkling tea drinks and Kombucha are gaining ground as a lighter, more refreshing alternative to soft drinks. From matcha to herbal tea blends, craft sparkling teas are not only lower in sugar but offer a unique flavour profile that feels grown-up and elegant. Kombucha, with its natural fermentation process, adds a tangy twist and a gut-friendly boost, appealing to health-conscious consumers who want a functional drink without sacrificing flavour. Both sparkling teas and kombucha bring a sophisticated, wellness-driven option to your drinks menu.

ZERO-WASTE SOFT DRINKS

As sustainability becomes a priority, brands are introducing zero-waste or fully recyclable packaging for soft drinks. For bars, stocking these eco-conscious options can signal a commitment to environmental responsibility.

FUNCTIONAL HEALTH BEVERAGES

Health-conscious consumers are turning to drinks that serve more than just refreshment. Expect an increase in beverages packed with adaptogens, probiotics, or ingredients like CBD and nootropics that support wellness.

BOTANICAL INFUSIONS

Soft drinks are taking a page from the cocktail world, incorporating sophisticated botanicals like lavender, rose, and elderflower into their formulas. These delicate flavours appeal to those looking for more refined, natural-tasting options.

EXOTIC FRUIT SODAS

The demand for unique and bold flavours is pushing exotic fruits like yuzu, dragon fruit, lychee, and passionfruit into the spotlight. These flavours are being incorporated into craft sodas and sparkling waters, offering consumers a refreshing break from the usual citrus and berry options, and bringing a tropical flair to non-alcoholic offerings.

SAKE

A quick guide to Japan’s ancient craft, waiting for the UK to fully discover its depth

Sake is becoming increasingly important in the UK premium drinks market, particularly within the on-trade sector, which includes highquality bars, hotels, and restaurants. The rising interest in sake is driven by its versatility, unique flavour profiles, and the growing popularity of Japanese cuisine across the UK. Sake appeals to premium venues looking to offer a distinctive, sophisticated beverage that stands out from traditional wines, spirits, and beers

Legends regarding the genesis of sake are varied, with some suggesting that rice brewing began in China. Others, that it was the rise of wet rice cultivation in 3rd Century Japan (the Yayoi Era) that gave rise to moulds, which subsequently paved the way for fermentation. However; what is known is that around 300BC ‘kuchikamino sake’ (chewed sake) was made by people chewing rice and spitting it into collective containers. Not particularly appetising I’m sure you’ll agree, but it had to start somewhere.

The enzymes from the saliva saccharified the starch and the repulsive concoction was then fermented. Happily, ‘koji-kin’ (the mould Aspergillus oryzae) was subsequently discovered and its enzymes effected the conversion of starch to sugar in an altogether far more appealing manner. Rice inoculated with koji-kin becomes ‘kome-koji’ (malt rice); the only difference between this process and the conversion of barley to malted barley is that with barley the necessary enzymes are naturally already present.

Further improvements came between 800AD and 1200AD (the Heian Era); notably the three step addition – a starter mash known as ‘moto’ (root) or ‘shubo’ (mother of sake) was used and brewers finally managed to isolate koji-kin for the first time giving them greater control and consistency.

Jumping forward a few hundred years saw a need to increase production dramatically during the Second World War. This was effected by the addition of pure alcohol and glucose to the mash resulting in a threefold increase. Today, much sake is still made this way in most small breweries throughout Japan.

Spirits & liqueurs

SO, WHAT IS SAKE?

Firstly; sake is not a rice wine, as this would imply the fermentation of fruit sugars. It is really a sort of strong Japanese rice beer with an alcohol by volume as high as 20%. Having concluded that it is not a wine it is, however, immediately noticeable that the complexity and range of aromas, flavours, fragrances, characters and styles found in sake are more reminiscent of wine than beer. Sake literally translated is “alcoholic beverage” which has been taken in the West to mean a Japanese alcoholic beverage fermented from rice. ‘Nihon-shu’ is the word in Japanese that distinguishes it from other beverages and is the real word for what we know as Sake. However, to add to the confusion, filtered or clear sake is correctly known as ‘Seishu’ whilst cloudy sake is known as ‘Nigori-shu’. But in the West, it will forever be known as Sake.

Japanese Law defines ‘shu’ or sake as, “made from rice, rice koji and water using fermentation and filtration processes”.

HOW IS IT MADE?

Traditionally, sake is produced in the winter, with premium varieties made exclusively between December and March. While advancements in brewing technology now allow sake production year-round, the highest-quality sakes are still crafted in the coldest months. The type of rice used plays a vital role in determining the final product’s

quality. Superior rice strains, such as Yamadanishiki, Nihon-baré, and Miyama-nishki, are preferred for making premium sake.

Water quality is another crucial element in sake production. The brewing capitals of Japan, Kobe and Kyoto, emerged due to the mineral composition of their water. Ideal water contains high levels of potassium, magnesium, and phosphoric acid, with low iron content. Water differences result in distinct sake styles: Hyogo’s hard water produces full-bodied, complex sakes, while Kyoto’s softer water yields lighter, more delicate brews. These regional differences often lead to sakes being described as “male” or “female” based on their strength and softness.

Sake production also involves the use of approximately 60 special strains of highstarch rice. The degree of rice milling is critical, as it removes proteins, fats, and minerals, leaving only the starch heart. More thorough milling results in a cleaner, finer product with fewer congeners. After milling, the rice is soaked—a process precisely timed to ensure ideal hydration—and then steamed until it is firm on the outside and soft in the middle. This texture is crucial for koji production and fermentation.

Koji production takes place in a hot, humid room called the kojimuro. The rice is sprinkled with koji mould (Aspergillus oryzae) and left to cultivate. Over 12 hours, the rice mass is regularly massaged to ensure even exposure to the mould. After 48 hours, the rice is ready, with the mould having penetrated the rice kernel, preparing it for the next stage.

The prepared koji is combined with steamed rice, water, and yeast (kobo) in a small tank. The strain of yeast used significantly influences the resulting sake’s flavour, with some giving floral notes, like pear, and others

imparting earthier, mushroom-like aromas. This mixture ferments for up to two weeks, creating a yeast-rich, highly concentrated starter called ‘moto’ or ‘shubo.’ This starter, with an alcohol by volume (ABV) of about 11%, aids in the next stage of fermentation.

More koji, rice, and water are added over four days in three stages, producing the final mash, or ‘moromi.’ This process, known as multiple parallel fermentation, involves both saccharification and fermentation occurring simultaneously, which is unique to sake production.

SAKE THE FOUR CATEGORIES

JUNMAI

Junmai is Japanese for “pure rice” and is an important term as it separates pure rice sake from the non-pure version, also known as honjozo (more on that next). The junmai rice is polished to 70%, and brewed using only water, yeast and koji. It is said to have a rich full body with an intense, slightly acidic flavour.

GINJO & JUNMAI GINJO

Ginjo consists of rice milled to 60%, water, koji, yeast and added distilled alcohol. It’s usually made in smaller batches to control the fermentation process better. Usually quite fragrant, it has a light, fruity and complex flavour. Junmai ginjo is simply a pure rice sake made with a brewing process involving low-temperature fermentation. No distilled alcohol has been added.

ARE THEY ALL THE SAME?

The vast majority of sake produced today is still non-premium Futsushu, (regular ‘table Sake’) or Sanzoshu. This is the main dividing line that runs through the premium sake category - you either have distilled alcohol added or you don’t. Sake produced without the addition of brewers alcohol is labelled Junmai - translated in English as ‘pure rice’ - and usually found in the name of all sake brewed in this way. You may also see the term Junmai-shu used, which simply means Junmai sake.

There are so many types of sake and most have an alcohol content of 15%–16% on average. To keep things simple, we’ll stick with four main classifications:

HONJOZO

Honjozo also uses rice that has been polished to 70%. The difference: it also contains a small amount of distilled brewer’s alcohol, which is added to smoothen out the flavour and aroma. Honjozo sakes are often drier, lower in acidity and less cloying and fragrant than pure sake.

DAIGINJO & JUNMAI DAIGINJO

Daiginjo is a premium version of ginjo sake – “dai” stands for great, or big – that’s made with rice polished all the way down to at least 50% and has added distilled alcohol. It also requires precise brewing methods. Light, fruity and fragrant, daiginjo sakes are often relatively pricey. Considered the highest grade of sake, junmai daiginjo, on the other hand, is daiginjo sake that hasn’t been brewed with distilled alcohol. It is also brewed slowly and at low and precise temperatures.

SMOKING COCKTAILS

Explore the exciting art of smoking cocktails to add an aromatic edge and take your drinks to the next level

Evoking the primal and the profound, the art of smoking cocktails offers a multisensory experience, wrapping drinkers in aromas of wood and spices.

When used effectively, smoking can strike a balance between adding creative flair to cocktails and heightening their flavours.   Uncover the misty realm of smoked cocktails and explore some of the techniques, equipment, and best practices for creating smoked cocktails that will wow your guests.

HOW DOES IT WORK?

With a myriad of options at your disposal, the art of smoking cocktails is a canvas for your creativity and a platform to showcase your unique style as a bartender. Understand the different components of smoking cocktails and use them effectively in your drink creation.

• Wood and Plant Choices: From hickory to cherry wood, rosemary to cinnamon, what you choose to smoke hugely influences the final aroma. Carefully consider what flavours complement the profile of your drink.

• Equipment Options: Depending on how you want to smoke your ingredients, you have a handful of options.

1. Smoking Guns: Handheld vacuum that holds wood chips. These chips are then lit on fire with a lighter or blow torch, with the vacuum pulling the ensuing smoke through a hose and out of the end nozzle.

2. A blowtorch and a heavy-duty surface (always adhering to health and safety).

• Smoking Method: There are two main ways you can incorporate the smoke into your final drinks.

1. The Cloche Method - A 10/10 show-stopper: This method involves encasing a drink under a glass dome filled with smoke, imparting aroma to the cocktail and captivating the drinker with a visual spectacle.

1. Smoke-Infused Spirits: Presmoking spirits to permeate them with a lasting smoky essence. This offers consistency of smoky flavours and extra depth of flavour.

WHAT TO SMOKE?

Once you have your equipment and drink set up, decide what element of your drink to smoke—the liquid itself, the serving vessel, or the garnish—and how much smoke to inject into it.

These decisions can make or break your drink.

A lighter style cocktail like a Martini may only need a gesture from a smoked olive to have an effect, whilst other drinks like a Penicillin or Bloody Mary can probably hold up to having the entire drink marinate in an applewood smoke-filled box for twenty or thirty seconds.

EXPERT TOP TIPS

To get the most out of smoking, the best bartenders will follow best practices to ensure a quality smoke infusion. Consider these tips to offer guests the finest smoked cocktails at your venue.

• Cold Smoking: Exposing the cocktail to smoke without heat retains the drink’s temperature while infusing flavour.

• Glassware Considerations: Widebrimmed glasses make the smoke aroma more pronounced, enhancing the drinker’s experience.

• Safety: Ensure adequate ventilation when smoking and always carefully handle flammable materials. Take care to be aware of any toxicity that could be released from some ingredients by heating or smoking.

FINAL TIP: the longer a drink is exposed to smoke, the deeper the infusion. It’s a delicate balance to strike, but one that can elevate your cocktail game. Be mindful to avoid overpowering the drink with smoke.

Finding their bars closed over lockdown and with a lot of time on their hands, the dream to create their own “cracking Yorkshire Gin” was born. It soon became the barman’s choice for the perfect cocktail, this is London dry gin done proper

Introducing Jonathan and Alexander Neil, the spirited brothers behind Roland’s and Domino Club, who’ve turned their pandemic pause into a pioneering distillery venture. These Yorkshire natives, continuing the legacy of their publican parents, ventured into spirit production amid unprecedented times, launching Wolfe Bros from a small back room in Leeds.

In 2019, alongside their colleague Niall McGloin, they acquired a 30-litre still, initially set aside as they managed their thriving bars. Yet, as the lockdown shuttered their venues, the still was unpacked, and their journey into gin distillation began. “We aimed to craft spirits that not only we would enjoy but also resonate with our patrons once we reopened,” Jonathan shares.

The outcome? An award-winning London Dry Gin, distilled in 20-litre batches, infused with a meticulously selected blend of eight botanicals. This gin, alongside their four exquisite flavored variants, took the market by storm, securing accolades just three weeks postlaunch.

But it’s their commitment to sustainability that truly sets Wolfe Bros apart. Embracing a zero-waste philosophy, they produce a remarkable lemoncello, crafted entirely from the residual byproducts of their gin production and repurposed lemon husks from their bars. This initiative not only underscores their dedication to environmental stewardship but also

enhances their boutique spirit lineup, offering a unique, eco-friendly choice for discerning customers.

Now based in a larger facility on Dolly Lane, Wolfe Bros continues to innovate, catering to bespoke requests and driving forward with sustainable practices. Their zero-waste lemoncello exemplifies their approach: blending tradition with modern sustainability to create spirits that are as good for the planet as they are for the palate.

FAT WASHING

Elevate your drinks with expert advise from industry experts.

As the boundaries of traditional mixology continue to be pushed, bartenders worldwide are turning to unconventional techniques to redefine their cocktail experiences. Fat washing is an exciting technique gaining popularity in cocktail bars. It introduces rich, savoury undertones to drinks.

Fat-washing alcohol allows bartenders to break convention and explore new taste profiles and blends to craft sensational drinks.

Explore the rich, velvety world of fat washing in mixed drinks to discover which flavours work well together and the best techniques for success.

WHAT IS FAT WASHING

Fat washing in mixology incorporates fats and oils from fruits, poultry or dairy products into spirits to infuse them with new flavour. These fats can be from things like:

• Butter

• Peanut butter

• Bacon

• Duck fat

• Olive oil

• Coconut oil

Once the infusion is complete, the spirit is chilled, solidifying the fats, which are removed, leaving their unique flavours behind.

KEY TIPS

The process of fat washing is pretty timeintensive, but the reward for your patience is a unique, decadent liquid that can turn your drinks into genuine show-stoppers. It’s a great technique to master, and along with these other bartending skills, it can take your serves up a few notches. Make sure you grab the below kit to start your journey.

• Quality Fats: Whether it’s bacon fat for a smoky whisk(e)y, coconut oil for a tropical rum, or butter for a velvety bourbon, the choice of fat is crucial.

• Sealable Containers: These are necessary to combine fats and spirits during the infusion process.

• Fine Strainers & Cheesecloth: Essential for removing solidified fats and ensuring a clear, clean spirit. No one wants lumps in their drink.

HAVE SOME FUN

As they combines culinary elements, fatwashed drinks are perfect options to serve as digestifs and aperitifs on either side of a meal. There are so many fantastic ways to play around with fat washing, and it’s a technique that encourages experimentation.

To get inspired, try some of these popular applications that are making waves in the industry:

• Bacon-infused Bourbon: Ideal for Old Fashioneds or Manhattans, infuse American whiskey or Bourbon with bacon fat to add a savoury twist to classic recipes.

• Butter-infused Rum: The creamy butter fat is perfect for elevating tropical drinks or can simply be sipped on its own.

• Sesame-washed Gin: Introduce nutty undertones that pair beautifully in East Asian-inspired cocktails by washing your spirits with sesame oil.

Fat washing is more than just a fad; it’s a testament to the ever-evolving artistry of mixology. While the technique demands precision and patience, the resulting flavours —rich, layered, and captivating — are worth the effort.

In the hands of the adventurous mixologist, fat washing is not just a process but an opportunity to bring many previously unexplored flavour profiles into the bar and create engaging new guest experiences.
