All our wines are hand-harvested and produced in South Africa. We work with farmers who use sustainable practices.
Our grapes are sourced from Stellenbosch and the wider Coastal Region in South Africa, a region with a rich wineproducing history. Our winemakers are some of the best in the country, working hard to bring fresh expressions of lowintervention wine to life.
Sustainability is at our core, which is why we use old vines and champion sustainable methods – both on the farm and in the cellar. Not only does this make for great wine, it’s better for the environment too.

BEING CARBON NEUTRAL IS JUST THE BEGINNING
Sustainability in the wine trade doesn’t start and end in the winery. Indeed there are many aspects of the wine trade which are located in the UK such as importer Lanchester Wines and its sister business, Greencroft Bottling, which is a contract wine bottler. Both are based in County Durham.
Their philosophy is that every business has a duty of care to minimise its impact on the environment, but there is, unfortunately, no ‘one size fits all’ solution when it comes to sustainability. Lanchester Wines identified that it’s greatest opportunity to make a change is through minimising reliance on fossil fuels. And, as such, has invested around £10million in renewable heat and energy generation at its sites across the North East of England. Today the business is powered almost completely by renewable wind and solar energy.
• The business’ four wind turbines produce around 5.5million kWh (kilowatt hours) of clean, renewable electricity per year. Around 42% of this electricity is used to run operations onsite with the remaining electricity – enough to power 800 three bedroom homes - feeding into the National Grid for use within the local community
• Installing 2 Megawatts of solar panels on the roof of Greencroft Two which will create around 1.7m kilowatt hours of electricity per year
• A 41 kilowatt solar array on the roof of Lanchester Wines’ office complex produces enough clean electricity to cover day-to-day use.

Introducing Jonathan and Alexander Neil, the spirited brothers behind Roland’s and Domino Club, who’ve turned their pandemic pause into a pioneering distillery venture. These Yorkshire natives, continuing the legacy of their publican parents, ventured into spirit production amid unprecedented times, launching Wolfe Bros from a small back room in Leeds.
In 2019, alongside their colleague Niall McGloin, they acquired a 30-litre still, initially set aside as they managed their thriving bars. Yet, as the lockdown shuttered their venues, the still was unpacked, and their journey into gin distillation began. “We aimed to craft spirits that not only we would enjoy but also resonate with our patrons once we reopened,” Jonathan shares.
The outcome? An award-winning London Dry Gin, distilled in 20-litre batches, infused with a meticulously selected blend of eight botanicals. This gin, alongside their four exquisite flavored variants, took the market by storm, securing accolades just three weeks postlaunch.
But it’s their commitment to sustainability that truly sets Wolfe Bros apart. Embracing a zero-waste philosophy, they produce a remarkable lemoncello, crafted entirely from the residual byproducts of their gin production and repurposed lemon husks from their bars. Who’s actually making the cider? Is it just Big Cider putting a label on it for a Brewer or Big Cheese – easily done but you know where the margin’s already gone
Fermenting from apple concentrate or whole juice? Evaporating moisture from juice to make ‘conc’ not only wastes massive energy but totally denatures the apple. By fermenting whole juice the pure nature of the apple and its fragile
tannins remain to give those complex layers of fragrant flavour. “Wow, it really tastes of apples!” No kidding.
Juice content? Government regs state the min apple juice content only needs to be as low as 35% - setting the bar so low you can taste the rubbish, and sugar. Super-premium ciders are more re-assuringly like 70-100% juice – a wholly different product.
How much more jiggery-pokery is there? Pure fermented juice needs no additives, we just give it to you straight.

In a quest to create the perfect FAQ section, we asked our team, “what is the most asked question when speaking with our customers?” The answer to this came without much thought or hesitation, and despite being pipped into first place by ‘we cant find you’ (one of the downsides of our depot being in rural Warwickshire), there was one clear winner by a country mile.*

This question is frequently delivered in a tone of panic and accompanied by gas hissing or (worse) beer flowing onto the cellar floor or (even more catastrophic) no beer coming out the taps. But the answer isn’t always that simple. So, when faced with this query, our team can only answer it effectively once we’ve asked a question.
“Who is your lead/domain brewer? “
This is usually followed by a pause and ponder from the caller, swiftly followed by, “What the
hell does that mean?” So in this article, we try to explain in more detail and offer some guidance you can share with your team when you need some assistance when that time comes.
For all cellar and drinks dispense problems, the brand owner of the products provides first-line technical services support. However, in most cases, one brewer/supplier/producer will cover all of your cellar equipment if they occupy a majority share of your draught lines. This is known as the ‘lead or domain brewer’

OK, how do i find out who mine is?
The ’lead brewer’ is known as a brewer that occupies the majority of the taps at your venue. They are responsible for servicing and
maintaining the remote beer cooler in the cellar, pythons, the primary gas-reducing valve, their branded fonts and underbar secondary cooling.
A brand owner who is not a lead brewer is only responsible for their font, underbar secondary cooling, backboard equipment in the cellar and secondary gas-reducing valves.
SO WHO ARE YOU GOING TO CALL?

•If all beers are fobbing/not pouring and your remote cooler is not working correctly, you should contact your lead brewer.
•If you have one product down and everything else is pouring correctly, at the correct temperature, you should contact the brand owner of the product
•If you have issues with a cask handpull/beer engine for a permanent cask ale installation, you should contact the brand owner of the product.
•If you have a gas leak that isn’t isolated to a particular keg/container, contact your lead brewer.
•If you have issues with a handpull/keg line for an independent rotating keg or cask ale, you should contact the installers of this equipment.

Wiper and True spent years thinking about alcohol-free beer before brewing their first batch. Based in Bristol, the family-run business set the highest standards of quality for every single beer they release, and alcohol-free is no exception.
Enticing aromas and flavours; perfect levels of haze; consistency between batches; eye-catching branding; every aspect needed to be just right.
Y YEARS IN THE MAKING
Achieving these exacting standards was no mean feat. Led by their highly trained Master Brewer Marvin, who trained at the prestigious Doemens Institute in Germany, Wiper and True's brew team sampled hundreds of alcohol-free beers, spanning the full range of techniques that can be used to create alcohol-free products. T y pically, these methods include diluting down a higher percentage beer using water, or using a yeast that can only digest certain sugars, therefore producing little to no alcohol content.
It's a matter of personal taste, but during their research panels and blind taste tests, the Wiper and True team ty pically found that alcohol-free beers brewed using these two approaches scored lower when put through their own quality control tests. After all, some of the nuance in a beer is likely to be lost when it is quite literally watered down, or brewed without the quality ingredients that would be carefully selected for an alcoholic recipe.
THE DE-ALCOHOLISER: THE TRUEST EXPRESSION OF FLAVOUR
There was only one option that lined up with Wiper and True's strict QC criteria and vision for their beers: the fantastically named 'dealcoholiser' machine. Brewing alcohol-free beer with this bit of kit means that Wiper and True's brewers can confidently create the truest expression of a proper, full-flavoured craft beer - without compromise on technique or ingredients.
The brew team design and brew recipes using the high quality ingredients you'd expect from an alcoholic Wiper and True beer, allowing the yeast to ferment the sugars from the malt as normal.
At this point the Bristol team have brewed a premium, craft beer with its usual alcohol content. The beer is then gently processed through a 60-hour long period of de - alcoholisation, which involves using reverse osmosis to slowly remove the alcohol. The beer is pushed at high pressure through a very fine membrane; a sympathetic process without heat treatment, which preserves the full spectrum of the beers' carefully produced flavour profiles while removing almost all alcohol - only 0.5% ABV remains.
Creating an alcohol-free beer in this way also allows the Wiper and True team to maintain consistency between batches, hitting their stringent quality control measures time and time again. Wiper and True are the first brewery of their size in the UK to use this innovative, market-leading technology, and are thrilled with the quality of beer it enables them to produce, marking their commitment to Beautiful Beer for everyone

What makes Taylor’s beer so special?
• Our UNIQUE WATER SOURCE, the Knowle Spring. A natural artesian well, it provides a constant supply of pure Pennine spring water, unique to Taylor’s.
• GOLDEN PROMISE BARLEY, a highquality barley more associated with malt whisky. It produces a very low yield, but gives our beers that little point of difference, that Taylor’s taste.
• We use a HOP BACK. This hop back contains more whole leaf hops and rather than boiling in them, the wort is allowed a gentle steep (like tea water/tea leaves) in this way picking up more delicate flavours that would have been lost in the copper.
• Our UNIQUE YEAST STRAIN. The yeast has specific qualities that allow the flavours and aromas of our hops to come through, resulting in a well-balanced beer with a ‘polished clarity’ that is clean and crisp with a quenching finish. In terms of timing, fermentation usually takes 6-7 days with a further 3-4 days of conditioning; so about 10 days in all.
• Our VIGOROUS SECONDARY FERMENTATION. We do not filter or centrifuge yeast out as it is delivered to cask but let it all flow into the cask and even give it a bit of sugar to kick it on. Due to this, we always request that our beers are given a minimum 48 hours, ideally a week, conditioning time in the cellar.
• We use only WHOLE LEAF HOPS (no pellets). We are one of the last brewers in Britain to exclusively use whole-leaf hops – like using fresh herbs in cooking.
• QUALITY. One must visit our brewery to see our commitment to quality, but it is evident in everything we do.
From our British Retail Consortium (BRC) A-grade accreditation to the ‘light saber’ which we use to individually inspect each cask before it is filled to the temperaturecontrolled lorries we use to ensure our beer is delivered further afield in perfect condition.
The cask conditioning process
HORIZONTAL EXTRACTION/STILLAGE
1. STILLAGE - Position on stillage. If beer sits longer than 24 hours, gently roll cask and reposition before venting
2. CLEAN the shive and the keystone with warm water
3. VENT cask with hard peg, slowly release gas and remove peg
4. TAP cask with a clean, closed tap
5. CONDITION - Leave the shive hole empty for 24 hours. Insert soft peg, ideally replace every 12 hours (min. 24 hours) until conditioned
6. SAMPLE - Pour off some beer, check for Clarity, Aroma and Taste
7. SEAL THE CASK with hard peg until ready to go on sale
8. CONNECT the line (check hop filter in place) add soft peg for sale
9. CHECK quality at the handpull - Clarity, Aroma and Taste - and serve Morning & Close AT CLOSE Close the cask taps/add a hard peg to the shive, putting the cask to bed.
MORNING Open the cask tap, replace hard peg with soft peg. Pull through at the handpull, test for Clarity, Aroma and Taste
VERTICAL EXTRACTION/STILLAGE
1. ROLL - Gently roll the cask into final position.
If the beer sits for more than 24 hours, gently roll cask and reposition before venting
2. CLEAN and dry the keystone with warm water
3. TAP the cask (clean closed tap)
4. CONDITION - Leave the vent on the tap open fully for min. 48 hours
5. CLOSE THE VENT until ready to go on sale
6. CONNECT cask to line (hop filter in place) using rod or float
7. CHECK quality at the handpull - Clarity, Aroma and Taste - and serve Morning & Close

Everything started on Diddly Squat Farm with Jeremy’s spring barley. He put blood, sweat and well, no tears, but a lot of swear words into growing it, and didn’t want to sell it for a pittance or use it as cattle feed. He was introduced to Rick and Emma Keene from the Cotswold Brew Co who suggested using it to brew a beer. That’s when our game-changing lager was born.
The idea was simple: only the best spring barley from brilliant British farms would make the grade for our great tasting, premium British lager. That’s because farming isn’t just “how” Hawkstone is made, it’s “why” it’s made.
It’s a celebration of the hard work of farmers across the UK. We take their barley, wheat, apples & botanicals and turn them into the world’s best beer, cider and spirits.
