A FEW WORDS...

he festive season is upon us once again. Inevitably, as we get towards the end of the year, we start to reflect on the past 12 months and look forward to the new year. We have had another busy and exciting year at our depot in rural Warwickshire. Notable milestones have been our recent accreditation as a Living Wage employer, highlighting our constant commitment to our team. Plus, with our trading area now covering central London, we welcomed the opening of our new warehouse space, a much-needed office extension, and expansions of both our fleet and team in all departments across the business, putting us in an even greater position to head into 2024 with a renewed sense of optimism. Whilst our team is crucial to all our achievements as a business, there is continued focus on developing our website and customer ordering portal to make the process easier and more insightful; please keep up to date with new features, as there is much more to come in 2024. As usual, we have seen a raft of interesting and exciting new product developments from our supply partners and a few more left-field ideas that are set to come to market. All of this with one eye on how the broader economy is performing and how increasing interest rates are affecting the confidence of our industry as a whole. However, one thing that never ceases to amaze me is how resilient and resourceful the hospitality industry is. We see many great businesses constantly developing their offering and investing in new sites to put their customers first, keeping things fresh and exciting while giving excellent value. n the summer of 2018, three of us, just past our twenties, craved fun without the hangovers. We searched for alternatives to reduce our alcohol intake. Shandy crossed our minds, but we weren't sure if it suited us. Despite doubts, we gave it a shot. Our shandies were no ordinary mix. We combined craft beers with premium sodas, creating incredible flavours. Ignoring advice from friends and family, we left our jobs, set up a makeshift bar, and toured with our unique shandies. Shandy Shack was born! Traveling with the Shack, we hosted parties and discovered people loved our shandies. We decided to brew our own from scratch, a journey filled with learning and some questionable test brews. We crafted irresistibly drinkable shandies, even making challenging ales taste great. We began bottling and canning our creations, selling them to consumers and shops. Today, our shandies bring smiles across the UK, available online, in bars, cafés, supermarkets, and local stores. We're excited to keep filling your fridges with delicious shandies and share a taste of the British countryside with every sip!

ouise founded L.A Brewery to create delightful non-alcoholic drinks that are both healthy and ecofriendly. Her fermentation journey began in the Scottish Hebrides, a change from her London upbringing. Born and raised there by her mother, she returned to discover kombucha, blending teas with flowers. Mull, her summer paradise, supplied ingredients like wild raspberries, gorse flowers, bog myrtle, and lavender. Visits to her mother in Somerset yielded elderflower and wild hops, leading to limited edition kombucha sold to local restaurants. This led to founding L.A Brewery in 2017. Despite substantial growth, Louise maintains her garden-inspired, gentle fermentation approach to crafting non-alcoholic drinks. The brand is B Corp certified, with a Suffolk micro-brewery powered by biodigester energy. Packaging is recyclable, and ingredients are ethically sourced. Fine artisan teas from Tea Fields support communities in India and China, reflecting their commitment to sustainability.

our Seas is a London dry gin with a classic profile. It offers a fresh lemon and juniper aroma, complemented by smoky citrus notes. The taste is a blend of citrus tang and sea buckthorn sweetness, layered with floral and earthy undertones. The finish is smooth and warming, with a hint of saltiness from sugar kelp, reflecting its coastal influence. Named after the four seas surrounding Britain, 'Four Seas' is crafted to London Dry standards, supporting the RNLI to save lives at sea around our shores. Salcombe Gin draws inspiration from Salcombe's coastal energy and shipbuilding heritage. The protection of oceans is a core value for the team. They are committed to reducing their carbon footprint and supporting ocean rewilding and carbon sequestration initiatives. 1% of every bottle sold goes to the Marine Conservation Society, contributing to the preservation and regeneration of vital ocean ecosystems.

In 2018, Damm breathed new life into the brand, resurrecting the rich Rosa Blanca tradition. The beer is crafted using traditional lager ingredients such as barley malt, maize, rice, and hops. It offers a harmonious, creamy profile with subtle hints of lightly roasted cereals. During the maturation phase, Rosa Blanca receives a special touch with the addition of Citra hops. John, meet everyone, everyone, meet john! After decades in the Industry John Cryer is the head of beer quality for Budweiser Brewing Group. So it’s safe to say he knows a thing or two about cellar management. He gave us his top tips for getting the best from every keg and cask you sell.

Chill out

Manage your stock & deliveries to allow new stock a minimum of 48 hours to reach Cellar temperature. When you’re ready to serve the beer make sure you are serving them at the right temperature. Cask beers should be between 10-13ºC Keg products should between 3-5ºC. Check your remote cooler is topped up with water & is forming a good ice bank, clear dirt & dust from the air vents.

nucleation baby!

Consumers will pay more for their beer in a branded glass. Branded glasses also have functional features to improve the quality of the beer e.g. nucleation on a lager glass.

renovation’s what you need

Bubbles clinging to the inside of a glass or head collapsing quickly are signs of a dirty glass. We recommend Proton Prototype glass wash detergent, & Proton Quash for removing lipstick. Follow daily & weekly cleaning procedures on your glass washing equipment. In addition to the above use Proton Renovate (or similar product) every 2-3 months to remove invisible films from the inside of the glass.

IGNORE THE BBD!

Well, not entirely. But many venues think that ordering a product with a long date means that they can keep it on longer. This isn’t true. Once you break that seal & connect the beer, from a quality perspective it has 5-7 days shelf life for a kegged product & 3 days for a cask.

8 days a week

Whilst the Beatles may have sang it right it’s not right for beer lines! Dirty beer lines are a common cause of fobbing beer (waste) & poor flavour. Use a brewery recommended line cleaner every 7 days. Also, when you have just cleaned the lines the beer should be at its best quality. So, if you clean your lines on a Sunday, how well will that beer taste by Saturday?

go with the flow maaaan Check the speed of your beer flow. Too fast & your beer will fob, too slow & you will struggle to generate enough head. Many beer fonts allow manual adjustment of the speed of flow to find the right level.

THE ORIGIN STORY... Meet founder Pete Brown of Forest Road Brewing Co. Here is how it all began....

Early 2012 DENVER TO LONDON

Pete sells his car, puts his shit in boxes and ﬂies to London to ﬁnd work brewing. There, Pete writes to more breweries and this time with more success. He helps set-up London Fields Brewery.

Summer 2012 PUMPKIN PORTER WIN

2009 ONCE UPON A TIME... Pete brews his ﬁrst home brew in his one bed apartment in Queens, Long Island, NY.

Pete knew he wanted to work at The Kernel or Camden Town breweries. So he set about to win their hearts (or better, a job!) with an offer of a home brewed batch of Pumpkin Porter from his garden in Dalston. It didn't win him a job at The Kernel BUT he did score a trial shift with Camden Town. They offer him a job, and this is where he meets James Garstang who was Head Brewer. At Camden Pete learns a lot, completes two brewing diplomas, and enrols in a BSc in Biochemistry.

2010 T H E D E N V E R DAY S P T.1 Wanting to make the step from ameteur to pro brewer, Pete decides to move to Denver, a Mecca of brewing. Before moving to Denver he writes to a load of breweries looking to hang out a day a week and learn in exchange for the offer of cleaning toilets but – alas! – none of them take him up.... But he continues to brew at home whilst working at Irish Bar Katie Mullins (where Larry the manager’s a prick!).

Spring 2015 2011 T H E D E N V E R DAY S P T. 2 Whilst ﬁlling out an application for a bar manager role at Wynkoop Craft Brewpub he meets one of the brewers who lets him hang out and do menial labour one day a week! He’s in. Independent since 2002 64

FOREST ROAD, E8

Pete leaves Camden Town and starts working as a consultant at Siren Craft Brew in Reading. Around a similar time he ﬁnds a room available at a house on Forest Road in Hackney. The house is inhabited by four pals who all went to school together: Pippo, Joss, Marcus and Freddie. Competition for the room was tough – but as Pete showed up with a case of beer and a promise to help them to brew at home – the token American from Boston is welcomed into the crew.

WORK, WORK, WORK

Now with several solid years of brewing exerience under his belt, Pete starts brewing in the Forest Road garden on a trusty home brew kit. Forest Road Brewing is born... After the third batch the recipe was becoming a success, and was named WORK IPA. He took it to the Prince Arthur pub next door and it’s a hit with the locals. He starts thinking that it might be time for him to start doing his own thing!!

Summer 2015 Autumn 2015

Luckily, they ﬁnd a quirky old tea factory and the Forest Road team signs a lease. Unfortunately they soon discover that the ﬂoors aren't strong enough, there's not enough power, or gas, or water... a whole new set of challenges abound.

2021 FIX UP LOOK SHARP

HOPPING TO BELGIUM Pete starts looking into how he can brew WORK on a larger scale but to set up his own plant he needed money… So instead he settles for brewing it on someone else's equipment. After scouring the UK he meets the Leroy family in Boezinge, Belgium via email. So Pete took 75 kg of American hops on the Eurostar and brews the ﬁrst big batch of WORK. With his sidekick Cassie (the dog) he set about taking it round London pubs and almost sells out of the 6000L brew. He brews two more batches that year.

Choosing to take on most of the installation work themselves, another 9 months passes getting the kit up And running.

Sept’ 2021 CRANKING BEER The ﬁrst beer brewed on the newly installed kit was a 10% Barley Wine called Tim. Now – they are in business ‘cranking beer’, and the rest is history!

BREWERY EMERALD CITY MAY 2020 ESTABLISHED

James Garstang finds the original Russian River (Santa Rosa, California) 6000 Litre brew kit on an auction site. Pete guesses owner Vinnie Cilurzo’s email address and ends up flying out to see it. They make a formal offer and figure out the logistics of shipping it over to the UK, how much they need to raise to do it. Pete writes to everyone in his address book to ask for investment and manages to raise $175,000 in a day by a 5pm deadline!

At Forest Road. we are inspired by the US Craft beer scene. We observed that each US State, each sub-region, has developed a beer style unique to that area. These regional styles champion local ingredients and are fiercely supported by local people. As such these styles are woven into culture and often win a disproportionate volume of sales vs national brands in their home states and beyond. This got us thinking. 70% of all beer consumed in the UK is Lager, and yet, are there any that are actually British? There are plenty of British breweries who make lager - but tend to produce them from the traditional blueprint - cold-fermenting lager yeast, pilsner style malts & Nobel hops from Germany or the Czech Republic, and a long maturation process. We wanted to see if we could take British raw materials and carefully blend and tweak them to mimic the sensory characteristics of European raw materials. And guess what? We could. First we took British Lager Malt from the rich grain-fields of East Anglia. British Lager malt has more green-cereal character than European pilsner malts which tend to exhibit bready, biscuity notes. British lager malt is also kilned at higher temperatures vs Pilsner malt leading to less sulphur character (ie less vegetal, eggy notes) in the finished lager. Next, we carefully blended the Kentish hop varieties Challenger, Admiral and Goldings in order to mimic the leafy, resinous hop character of Nobel Hops (ie Saaz, Tettnang etc). We balanced the addition of these hops on both the ‘hot-side’ and ‘cold-side’ of the brew to extract both bitterness and aromatics. As with all our beers, POSH Lager is unfiltered, to allow the full range of aromatics and body to be percieved in the final lager. We do however, centrifuge (spin at high speed) the beer at the end of the process to remove haze and ensure that every drop is crystal clear and bright. The result is a barely-blonde lager with a full thick head. A gentle aroma of citrus and leafy hop which is cut with mild grainy, cereal notes. On the palate the sweeping sensation of tight, prickling carbonation instantly refreshes the entire mouth as crisp bitterness and mild cereal wash over the tongue. Bitterness lingers for a short time before the palate resets, ready for the next refreshing sip.

A core range is something that has constantly been requested of us from day one, but because of space, staffing, and tank limitations, we’ve been unable to fulfil. We’re now at a comfortable enough position where we feel we can produce a consistent range of beers that match the quality of our Augment range, but that we’re able to brew again and again. Please let us introduce you to our new core range. Presenting Rosebud, Little Petal and Floret.

Our flagship core beer - the style we’re most well known for, and what we do best. Rosebud is an IPA in the New England style - the most popular variant of the style in the world. We’ve hopped this beer with Citra, Galaxy, Mosaic and Simcoe to create a certified tropical punchbowl of flavour. Strong enough to retain all that incredible mouthfeel, but sessionable enough to smash pints of.

Whilst we’re very much a brewery that produces modern, hop-forward beer, sometimes you have to look back to the old school and honour the breweries without whom we wouldn’t be here today. Little Petal takes a detour from our usual output down the Pacific highway for a deliciously moreish West Coast Pale - clean and crisp resinous bitterness takes the lead here, with a classic hop lineup of Cascade and Simcoe.

Sometimes you just want a beer that is mega sessionable. Our Core pale ale is delicious, hazy juicebomb of a beer, balanced with enough bitterness to keep drinkers coming back for more. A baby version of our incredibly popular Spur IPA - Floret is positively bursting at the seams with peach, mango, and pineapple notes, backed up with pithy orange peel from its Citra, Simcoe and Azacca hop bill.

They only release 1 Limited Edition per year, and it is restricted to 1 or 2 barrels. It is always a collaboration with a local brand that shares the same values, it is usually experimental and has a charitable element. The scarcity of the bottles and the excitement generated by these collaborations has seen a cult following built around this once yearly event with both previous releases selling out in record time. Their third Limited Edition is a collaboration with Birmingham coffee roasters Quarter Horse. Burning Barn has taken Quarter Horse's signature “Roan” coffee and blended it with a special combination of Burning Barn aged rums. This liquid was then finished in a recently disgorged VSOP Brandy barrel. The charitable element this year will see 10% of the profits go to Voices of Children who provide psychological support to Ukrainian children affected by the ongoing conflict. Bristol Dry Gin is an award-winning micro distillery, based in the heart of Bristol. We produce quality, small batch spirits, using a British-made wheat spirit and the finest quality botanicals. Beautifully balanced botanicals including juniper, citrus, and angelica root, give this gin a classic dry profile, making it a perfect match for classic tonic water or vermouth. Our distillery runs on a mix of energy from renewable sources and a 6.8kw solar panel system installed on our distillery roof. Over the last three years, 20 trees have been planted on our behalf to offset our carbon emissions. We encourage our customers to recycle by offering collection of empty bottles from as many bars and restaurants as possible for reuse. We also recycle all our waste ethanol in house and use it to distil the spirits in our range. OUR ARTWORK We have always had a keen interest in art, especially St Ives 1950’s artists such as Peter Lanyon and Terry Frost. At the very start of our project we had a meeting with our marketing agency and met Stu Perry, their designer who would be working on our project who is also an extremely talented artist. He took inspiration from our interests, walked around our vineyard and had the perfect idea to get hold of some aerial plans of the land. Stu used these to create original oil paintings for us, the artwork on our labels are taken from these original paintings. We believe our labels are iconic and we feel each one suits the wine it was assigned to.

The first thing to remember about orange wine is that it is not made of oranges. The second is that it’s not really orange. Helpful huh? Orange wine is a type of white wine made by leaving the grape skins and seeds in contact with the juice, creating a deep orange-hued finished product. In other words, it’s like making red wine with white grapes. When making white wine, you typically remove the skin from the grapes before fermenting; with red wine, you leave the skin on. Orange wine mixes up this process by using white grapes but leaving on the skins. The result is a far richer and more full-bodied drink than regular white wine. This is also how it gets its colour, which is much deeper than a white wine ranging from pale amber to deep orange. Most orange wines taste like a bolder, more savoury version of wines from the same white grape. Generally speaking, orange wines display mild flavours of stone fruit like peaches, tea flavours like strong oolong and an impression of honey without actually being sweet.

How would a venue utilise this product?

Offer One Shot as a drink enhancer for any drink. So on their menu they could offer something like ‘Make your drink a CBD drink with One Shot, just (insert price). This means any customer has the option to add CBD to any drink. Another nice option would also be to offer it to the no-alcohol crowd so that they can actually add something with a little ‘edginess’ to their drink, something that lifts their mood and calms them, which is why many use alcohol, without worrying about drink driving.

What sort of perfect serves do you suggest?

I would recommend they perhaps add a CBD cocktail or two to their menu. A CBD espresso martini is a match made in heaven but a CBD Bloody Mary would be fabulous as the ultimate pick me up. The delicate taste can marry up to citrussy products really well and a non-alcoholic cocktail selection would hit the target. £

How much can you charge for a shot?

We see anything from 50p all the way up to £3.50 for high end establishments. I’d say somewhere around £1 to £1.20 is the average and this gives a huge incremental margin gain on every drink. Around 80p to £1 of pure profit.

What are your top tips for getting momentum? TELL. YOUR. CUSTOMERS! Do not be shy about telling people they can have a legal cannabis product. When people are offered it at point of sale, what I call the ‘Go large’ tactic, we see a 50% uptake in One Shot. But sit it on a shelf and say nothing….guess what happens? Revel in the intrigue and interest. People respond really well to it.

Tonic! We find both companies very engaging, supportive and fun to work with. What do you think Navas has bought to the Dirty Bones offering?

What were your reasons for deciding to switch your mixer range from a nationally recognised brand? We’ve always tried to do things a little differently. The food is New York comfort, but every so slightly twisted, and you won’t find our cocktails on other menus. We wanted to use a mixer that supports these values, to offer quality but support a smaller supplier and offer our guests something interesting. Why Navas? I think the fact that it’s a UK product, with credible sustainability aims piqued our interest. To be honest, the quality of the mixers was what made us choose Navas. I liked the lack of gimmicks, and the grown up flavour profile. We use a lot of Ginger Ale in one of our cocktails, and this mixer in particular was great. A really complex flavour profile with just the right level of carbonation. Were you happy with the support that was offered from both Navas and Inn Express around making the switch? Moving across to Inn Express has been as refreshing as a Navas

Yes- whilst a G&T isn’t a huge seller for us, we use the range in our cocktails, and guest do notice the difference. The drinks are packaged well, and people do ask about the range. It’s fun to work with smaller suppliers, and stay away from the mass market brands that are everywhere. I chatted with a guest recently as I saw him taking a photo of the label and they were interested in the fact they are looking to be B Corp accredited. Do you have any recommendations for those whomight be looking to make more sustainable purchasing decisions? Restaurants are by their nature about excess, a lot of our top shelf spirits are imported so we need to always look at how to minimise that impact. I’d say

go for it- it’s something to talk about, get the team (especially younger team members) engaged with and guests do notice the difference. It only makes sense when the product is superior to the rest of the market, and in this case it really is a step up!

Finally, What other sustainability adaptations would you recommend to other hospitality operators? We try to look at every part of the business when it comes to sustainability. Simple things like consolidating our supply chain with our partner Collectiv have reduced our carbon footprint as goods from our supply chain travel less and we have fewer deliveries. We work with First Mile with our refuse which means that there is zero waste to landfill. The beef from our patties comes from small, family farms and encourages provenance and sustainable practices, as well as giving a fair price to the farmers. A recent project was removing bottled water from our sites, we now serve refillable glass bottles which has saved plastic from team drinks, and glass bottles from guests. All of these steps are simple and can be done by all sizes of business. #Expertise #Selection
