T
he way color impacts us can be rather subtle or it can hit us like the proverbial ton of bricks. My daughter and her husband, who have since moved back home to Fargo, had built a new beautiful home in Edmond, Oklahoma. I’ll never forget her phone call/ plea for help. All their walls had been painted a pleasant, unobtrusive shade of “safe.” She was not happy. Something was not quite right. Determined to define what that “something” was, she was committed to finding out. This quizzical situation meant one thing certain — a trip to the local paint store. It was there she made up her mind to bathe the entire great room in a robin’s-egg blue while her husband was away on a business trip. I received her excited phone call upon completion of the project, but it was tainted by the realization that she had picked the wrong color that left a cooler feel than what she had anticipated. It just didn’t “feel” right. After some emotional “regrouping,” a quick trip to the paint store resulted in expert advice and a new green under-toned tint added to her original paint created the color she had hoped for. It was calming, comforting and the space was made tranquil. Moral of the story? Color affects us daily, whether it is a calming shade in a dentist’s office or an invigorating, engaging color for a kindergarten classroom. Color has the power to involve, relax, entice, motivate and to clearly remind us of its importance in our daily lives. Enjoy our Color Issue!

This transitory spot is the perfect place to showcase a sleek console table, a mirror that makes a statement and a bold painting or sculpture. Consider an ornately tiled floor with a vibrant color palette. Utilize this prominent space to add elegant decor details that will help to elevate the overall ambience of your home. home. It’s also the portal you pass through as you enter the sanctuary of your home. By making the entrance feel welcoming, you honor all who enter. Basic must-haves: • An attractive front door • A chair or bench to remove shoes • A surface for setting down keys • Hooks or a closet for jackets and bags • Good lighting • A pleasant color palette
Bold Color Bold color makes your entry vibrant and exciting, which doesn’t mean shocking, but the entry is an ideal place to use intense color. For the front door, consider red, yellow, lime green, indigo or turquoise — especially if the rest of the exterior is neutral. For the color faint-of-heart, consider more subdued shades with a bold feel — opt for glossy black, forest green or wine red. If you can’t paint the front door, add color with an exterior doormat or a hanging basket full of bright flowers. In the foyer, paint the walls with a deeper, brighter or more vibrant shade of a color you’ve used elsewhere in the interior, even if that just means a more intense neutral INSPIRED HOME | 15

Consider your family’s lifestyle Even if your home doesn’t have a dedicated foyer, you can still create a designated space near your front door that is both beautiful and functional. If you use your side or back door more often, your foyer acts as a mudroom. Despite the name, this can be every bit as attractive as a traditional foyer — in fact, borrowing from the most useful features of a mudroom makes any foyer an essential area. For such an important space, function comes before design. If you walk in the front door every day and set down your keys and mail on a kitchen table, you’ll want to add a shelf or small table. If there is consistently a pile of coats and shoes on the floor, then it’s time to consider mudroom essentials like hooks and baskets.

The right lighting Your foyer is the perfect space for a stunning light fixture. Not all entryways have soaring ceilings, but if you do, then a chandelier is a great fit. It doesn’t have to be extravagant, yet it should be more dramatic than your other lighting while staying true to your home’s decor. Heirloom or "Old Garden Roses" are roses that existed before 1867. Hardy, disease-resistant and carefree, it is their wondrous fragrance that's most proclaimed.
T
he sheer beauty, grace and elegance of a rose affects us all and entwines us with symbolic versatility. Sentiment for the rose is quite common and throughout history this flower has occupied a special place in the hearts and minds of people across the globe. The oldest recorded living rose of 1,000 years still grows on a wall of a cathedral in Hildesheim, Germany, and its presence has been recorded since A.D. 815. In 1945, Allied bombers destroyed most of the cathedral, yet the bush, which survived with its roots safe, deep beneath the ruble, flourished once again. Fossil records show the rose plant is one of the most ancient of flowers, most likely originating in Asia more than 5,000 years ago. The cultivation of the rose also began in Asia and, at this point, they spread and grew wild over nearly the entire northern hemisphere. Since then, they have become an integral and intimate part of human civilization.

Several species of rose are indigenous to North America and are credited with shaping our American history. William Penn, who established the colony of Pennsylvania in 1682, imported 18 rose bushes from England in 1699. George Washington planted roses at Mount Vernon and Thomas Jefferson grew them at Monticello. John Adams is credited with planting the first rose at the White House. The formal rose garden that exits still today was established during the presidential term of Woodrow Wilson by First Lady Ellen Louise Axon Wilson. The colorful rose is a sought-after gem today as flower enthusiasts, novice to experienced, seek out new varieties to add stunning beauty to their gardens. Although white, red and pink are the most common colors in the wild, domestic cultivars — as a result of selective breeding — allow for virtually every color of the rainbow. Horticulturists are developing new hues and bi-colors, while bringing improved vigor in the primary tones we’ve come to admire for brilliance in our gardens.

Heirloom Roses Old is new again as heirloom roses are poised for a beautiful comeback. These roses are known as “antique” or “old garden” roses, which include those that existed before 1867. Also in 1867, “La France,” the first hybrid tea rose, was discovered growing in a garden patch and introduced, which marked the start of a new era. After that time, new classes were called “modern roses” or hybrids. The actual heirloom varieties fall into several categories: Albas, Centifolias, Damasks, Gallicas and Moss roses. These antique varieties are as simple to grow as the modern roses we find today and are admired for their exceptional fragrance and large beautiful blooms. Gallica are the oldest roses, grown by the Greeks and Romans and later bred by the Dutch and French. They have a great color range that includes striped blooms that are intensely fragrant. Compact in size, they do sucker profusely and spread by underground runners, so they can fill in an area quickly. Their foliage is dark green and roughly textured.
Moss Rose
Albas date from before 100 A.D. and are richly perfumed and disease resistant. They thrive under difficult conditions, even partial shade. Its tall, slender upright growth habit blooms with blush pink or white, and greygreen foliage define its beauty. Damasks are thousands of years old, brought to Europe from the Middle East by the Crusaders. Some claim the Romans brought them to England, and a third view is that Henry VIII’s physician gave him a Damask rose as a present around 1540. They are very thorny but so fragrant that they are still used for making perfumes. Their blooms are white, pink or red and the bush has an arching habitat of up to 7 feet tall. Centifolia in Latin means “hundred petals” and is commonly referred to as a “cabbage rose” because of the size and shape of its blooms, which range in color from white to deep purple. Plants vary in size from 1 foot to 20 feet. They are very fragrant and winter hardy, but not as disease resistant as others. They thrive best in full sun. growth on the sepals and calyx that smells like pine and is the result of a naturally occurring genetic mutation. The Moss roses are very disease-resistant and tolerant of neglect; some are even repeat bloomers. Lots to love about roses The reasons to love and use rose flowers are as vast as the number of cultivars of roses there are in the world. This perennial plant has a fairly straightforward meaning on the surface — the obvious beauty to the eye of the beholder. However, the more you learn about roses, the more fascinating they become in terms of the depths of the cultural, culinary and medicinal implications. This plant has undoubtedly shaped human history and society in some astounding ways. The next time you admire a rose in your garden, along the roadside or in a nursery, consider the vast number of people throughout the course of civilization who also have paid homage to this exquisite flower.

Versatility of the rose Apart from the physical beauty role of the rose, other valuable uses have been appreciated since the time of Cleopatra. Rose oils are still used in the perfume industry and rose water facials for toning the skin are easy and luxurious. The petals of the rose are edible and rose water is often added to jellies and jams or as flavoring in Indian and Chinese dishes. Roses also grow a berry-shaped fruit called rose hips, which can be colored orange, red, dark purple or even black. Rose Water Rose water has been used as a beauty treatment for ages as a skin freshener, toner and hydrator. The Egyptian beauty, Cleopatra claimed it was her primary beauty secret. To make rose water: Place 1 cup of fresh, organic rose petals in a pan and add enough distilled water to cover the rose petals. Turn the heat on low and place the lid on the pan. You want the water hot, but not simmering. Once the flower petals are almost transparent, strain the liquid into a sterile jar using a fine mesh strainer. Store the rose water in your refrigerator. It will keep four to six weeks. Keep a pretty spray bottle handy for spritzing your face.

Classy Contemporary Lake Home This deck features a multi-width, multicolor design scheme. A challenging design, a lot of forethought and planning went into the design and the build of this particular project. The beauty and livability of this design has propelled it to be presented at award shows and as topics of magazines. The lakeside deck features an expansive Great Plains Pergola, along with two outdoor ceiling fans. This not only provides shade from the searing afternoon sun, but also movement of air in

the evening keeps pesky mosquitoes away. The guest house deck is the standout, which features a vaulted ceiling roof with a dry bar. It was important to the homeowners to make a quality indoor/outdoor type space in this special area of the project. With full overhead protection created by a metal roof, the project hit a home run with the homeowners. The cable rail continued on both parts of the project creates a picture-frame view of the lake.

oth artists in their own rights, independent interior designer Monica Hart and design principal Mike Dawson of Craftwell Architecture + Construction collaborated on a lake remodel project that perfectly exhibits each professional’s artistry and ability. Residential architects are often associated with new builds, but when it comes to remodels, Dawson says it’s one of his firm’s favorite types of projects. “I love dirty, messy remodels and the opportunity to transform 36 | JULY/AUGUST 2021
one thing into something else,” he says. The young family who hired each expert to remodel and style their newly purchased lakeside house had never lived on a lake before. “Most of all, they wanted a home that provided a great experience on the lake, a place to make memories with their children,” Dawson recalls. Through his experience both at Craftwell and in his personal life, he’s developed a level of expertise that allows him the confidence
when needing to make quick decisions. Dawson and his wife purchased a 100-year-old Craftsman home in Fargo that they gutted and transformed five years ago. “I love the challenge of being given some restraints and having to work within those,” Dawson says. “It really requires you to be creative.” When asked to take on this lake home remodel with its outdated, impractical layout, Dawson was essentially given free reign. “They told us, ‘We want this done right; INSPIREDHOMEMAGAZINE.COM

“The experience from the front door was the big change,” says design principal Mike Dawson. He and his team reconfigured the main level in a way that opened up the design to bring your eye straight to the lake upon entering the home.
“I wanted to incorporate some of nature’s colors that were prominent through their beautiful windows,” says interior designer Monica Hart. With deep blues as a theme, Hart utilized both floral and geometric patterns in the textiles to give this warm space even more life.
The selection of upholstery is very important to Hart. “A big factor was the amount of sun coming in through the windows,” she says. “We chose commercial fabrics that will be more resistant to fading. Fabrics were chosen that could handle wet clothing and easily clean up nicely.”

The cozy living room is a sum of all the décor and furnishing components that Hart carefully chose. All are of the highest quality, but the faux fur throw pillows and fun, yet traditional-feeling upholstery patterns give the space an unpretentious, relaxed feel.

do whatever you want,’” Dawson says. “It was such a rare opportunity.” Dawson and his team reconstructed the entire home layout and designed an entirely new kitchen and dining room, including cabinets, the table and paint colors, plus a new deck area outside. “It was the full package essentially,” Dawson says. “It was one of the most fun projects we’ve been involved in for a while.” After providing a beautiful new canvas, Dawson handed off the baton to Monica Hart for interior styling of lighting, furniture, art and textiles. Hart says that even when given that freedom to play, she stays steadfast in her commitment to the client. “It is important to me that every project I do is a reflection of my client, not me,” Hart says. “It was important to incorporate details that were personal to them and have meaning. They will be entertaining family and friends, so it was also a priority that the home feel inviting to all who walk through the door.” Hart says the family didn’t have strong opinions about color, so she suggested INSPIREDHOMEMAGAZINE.COM
Hart utilizes a small, family-owned furniture “This was one of the most fun projects we’ve been manufacturer in the U.S. to create unique and custom involved in for a while,” Dawson says. He and his furniture for her own line. “We needed a large team worked on a full design package for the family ottoman, which is difficult to find,” Hart says. “This one — interior modeling, finishing the layout and deck is 42 by 42 inches with open storage on the bottom. I design, plus the really fun job of choosing flooring, chose a Crypton upholstery so it can be spilled on, sat tile, countertops, wood beams and even paint colors. on with bathing suits and be tough as nails.”

variations of blue as the primary accent color in homage to the lake and sky so prominent through the home’s beautiful windows. The tones, patterns and textile choices are one of the most noticeable aspects of Hart’s work on this home. With experience designing for lake homes, Hart also knew to be realistic in the selections she provided the homeowners to choose from. “People live at lake homes differently than they do their regular homes,” she explains. “There may be wet swimsuits sitting on chairs 40 | JULY/AUGUST 2021
when someone comes in for a quick lunch break. There may be sandy feet being put up on an ottoman.” So, fabrics were chosen that could handle wet clothing and clean up easily. “We wanted the furniture to be beautiful, but more importantly, livable.” They chose stain-resistant, durable and easily cleanable fabric. Another factor she considered was the amount of sun coming in through the windows, especially in the sunroom. So, she chose commercial-grade fabrics that are more resistant to fading.
While the young family’s lifestyle considerations provided Hart with challenges, Dawson says his biggest challenge was keeping up with the aggressive schedule, working continuously through the winter to complete the project before the beginning of the next lake season. With an alreadytight schedule, Dawson knew to prepare for some unknowns. For instance, during demolition, they discovered a lot of rot in the walls, particularly the entire lakeside wall. “Our superintendent Travis Pender was on INSPIREDHOMEMAGAZINE.COM

The kitchen and dining have seating enough for 18 people to be eating at one time. This dual-function bar-height table and bench-style dining table was designed by Dawson and custom-made by Northern Star Customs.
Hart gave the dining space her magic touch with blue fabric upholstery on the bench and a soft beige-colored geometric pattern for the chairs.
Dawson says he was most pleased with the kitchen relocation in the new design. “We moved the kitchen to the other side of the house,” says Dawson. Doing so positioned the kitchen, and main gathering space, to have the lakeside view that was missing in its previous location.

The guest bedroom is anything but ordinary. Hart mixed and matched greens and blues in varying textures and patterns for the bedding and pillows. “All of these timeless colors reflect nature and will look updated for years to come,” says Hart.

the job site every day,” Dawson says. “He was the ‘hands to the head,’ so to speak. He and I were in constant communication for six months on this project.” Because of Pender’s experience and knowledge, Dawson says they were able to make many of the structural decisions on the spot, as the scope of the project increased as they discovered things. Dawson says his team’s main focus in the design was the livability of the main living area. “The experience from the front door was a big change,” he says. Now, upon entering the home, you immediately see through the home to the lake. The kitchen itself was moved from one end of the house to the other. Dawson created an additional bedroom by converting two oversized bedrooms into three bedrooms with a shared bathroom. And the attic was converted into a hangout space and overflow bunk area for guests. A fun detail was exposing the trusses in this lower ceiling space and wrapping them in trim. Being both a designer and an owner of a heavily remodeled home gave Dawson

valuable perspective. “The homeowners had never been in this process before,” he says. “And there’s a certain level of anxiousness that comes with any build or remodel — so, as a designer, it’s important to have confidence that the things you’re suggesting are the right thing to do.” Hart was delighted to have clients who had complete faith in her abilities. “Working with the family was an absolute joy,” she says. “They trusted in us and the process and were

so appreciative. Designing for a wonderful family like them means even more to us. It makes us want to go that extra mile to make sure the outcome is just perfect for them.” That relationship is something that Dawson says can become just as important as the project itself. “Doing residential and certain commercial work, with all the things that can come up, can be very emotional for clients,” he says. “And one of the cool things I get to do is guide people through that experience.”

“L
ess junk, more journey” was the mantra that DW2 designers Linda Birmingham and Kris Carlson heard from one of their most unique clients earlier this spring. The couple had, in recent years, become empty nesters and became intrigued with the idea of traveling, living and working full-time in an RV. They purchased their family’s first RV 11 years ago in 2010. “We enjoy the freedom of traveling to different places, camping and seeing new sights,” they explain of their favorite pastime. “We felt it would be best to do this while we were younger, while we are healthy and able to do more activities.” In talking to RVers of retirement age, the couple repeatedly heard how many wished they’d started the RV life sooner. When their only child began her own journey after high school, the couple started making serious plans and taking the big steps to realize their dream. One of the more important steps was downsizing. “At first was difficult, but then we found it liberating,” they explain. “It has actually become easier now to let go of stuff. It’s a freeing feeling.” The couple got to work reducing. They gave their daughter their furniture, rented a storage unit for the things they wanted to keep, such as photos and important keepsakes, and donated the rest. Then they checked the final box: They sold their house. “Home” officially became their RV.
The living room area with a pop-up TV and fireplace has abundant room for lounging. Two of the sofas fold out into queen-sized beds. DW2 rearranged the décor in this space and added two white throw pillows to reflect the ample sunlight.
The couple purchased a 41-foot 2021 Grand Design Momentum 376THS fifth-wheel “toy hauler” with full-body paint as their new home. With pop-outs and a garage of sorts for their motorcycle and bikes, the camper is spacious when it comes to RV living

The pop-out dining area, full-sized appliances and high ceilings — even by normal residential home standards — make this kitchen feel roomy. The RV maximizes storage space in every nook and cranny so the countertops can be left free of clutter and used as workspaces. The homeowners describe their new home as an earthquake on wheels, so DW2 had to consider how décor would “ride.” Using products to ensure nothing would get damaged while on the road, many of the items can stay on display even during transit.
In choosing their RV, they did a lot of research to find which one would meet their needs. They wanted a garage compartment for their bikes, motorcycle and golf cart. And living space big enough and comfortable enough to accommodate them both working from home. They also knew they wanted the décor and styling to reflect the function of the RV. 48 | JULY/AUGUST 2021

“We hadn’t fully decorated the RV yet and knew we wanted some help to get that homey feeling,” the homeowners reminisce. “From experience, we knew that placement of pictures and decorations can really make or break the look.” That’s when design duo Kris Carlson and Linda Birmingham were called in. “We were so intrigued with their story,” Carlson says. “Committing to such a small living space is perhaps more than many could do. We were also very intrigued with the challenge of making that type of space feel like a home. Their fifth wheel is also such a classy design, it’s inspiring for other small spaces.” The designers asked the couple questions typical of any client interview. Which things were must-stays, and which were optional? Were their designated spaces for any of their items? But they also had some unusual questions. The couple described their new home as “an earthquake on wheels.” Birmingham and Carlson had to make sure belongings stayed in place in the RV while traveling and what products to use to ensure nothing was damaged. There were other considerations, too. “It isn’t your typical home since there is limited wall space,” the couple says. “But we could tell Kris and Linda were very knowledgeable, and we knew we were in very capable hands.” By request of the couple, Birmingham and Carlson utilized most of the couple’s existing decorations. They kept their bedroom theirs by not putting family pictures in their private space; instead keeping them in the main living areas. “We grouped things of like colors in order to create soothing vignettes in the entry, kitchen, living room, bedroom and bathroom,” Birmingham says. “We also only brought in only one bunch of greens with a white vase and two white pillows. The white in both of those areas brightened those spaces.” With everything just how they wanted it, the couple was ready. “DW2 just knew how to put everything together to make our RV feel homey and a place we want to be in and call home, which was our biggest goal,” the couple says. Their No. 1 tip for anyone thinking of full-time RV living: “Set a date of when you are going to do it because if you don’t, that day will never come.” INSPIREDHOMEMAGAZINE.COM

A
thousand times I’ve heard “bring half the clothes and twice the money when you’re going on a trip,” and this time I decided that might be a good idea. Typically, on a single trip I’m prepared to attend the Academy Awards, a scuba diving excursion, a home-improvement project, cosmetic surgery and a kindergarten graduation. But bring along a pair of navy shorts or a white button-down oxford? Not likely. Well, not this time. First stop, the local bank to pick up some Federal Express Travelers Checks because I recall a cranky old cop-show TV star said I should never leave home without them. Well, easier said than done. at every local branch of my bank looked at me like I was asking for fries to go with that. Turns out most of the world doesn’t know what they are any more. It didn’t matter. I have a couple of credit cards with limits that could cover the cost of a nice used car. I’ll bring along 10 onedollar bills for tip money and be fine. This year, we weren’t going on a normal summer-time road trip. We were going to check a big item off our bucket list of things we must do while we still can. We made reservations at a resort that has bungalows built over the water. And not just any bungalow on any beach — we’re staying in a bungalow at a beach in Tahiti. Unlike most women I know, it seems
men over a certain age don’t give a second thought to what they wear to the beach. We need well-made, well-fitting, high- quality, age-appropriate beach wear. That last part is especially important. If anyone on the beach is inclined to take a second look at either one of us, I want it to be for the right reason. After all, muscle shirts do require a certain quantity of actual muscles, and surfer jams really only look good on surfer dudes. The sun set on our dude days a long time ago. Of all the seats on our 290-passenger 787 Dreamliner, leaving Los Angeles at midnight for an 8-hour trans-Pacific flight to French Polynesia, she ended up in a seat behind me. She’s that woman on every plane. With a voice so resonant, she probably could have been an opera diva, but instead she was an excited traveler telling the stranger in the seat next to her and everyone within earshot all about her elderly mother being looked after by her ungrateful sister. And her daughter just graduating high school. And her husband she finally convinced to take this awesome vacation. And how no one seemed to know what Federal Express Travelers checks are any more, but she brought plenty of cash just in case. And how she splurged and reserved the huton-stilts for two nights, even though two nights in the hut on stilts cost more than two month’s rent money in her college- days apartment. And even though she didn’t really use her college degree in animal husbandry, she was still glad she went to college back in the ’80s and wished she’d paid closer attention in her French class because now it would probably come in handy in French Polynesia. I knew the woman next to her had to be a stranger because a friend or family member would have known at least a detail or two, and maybe even taken part in the conversation rather than nodding vaguely and staring off in the distance. No matter, with my noise-canceling headphones, an orthopedic neck brace from our last in-flight catalog and a glass of wine from our chipper flight attendant, I was off to sleep until Tahiti. The next thing I knew, it was 5 a.m. and we were coming in for a landing. We lost three hours from the West Coast and a total of five hours from the Central Time Zone. I was ready for bed at 8 p.m. and wide awake at 3 a.m. for pretty much our entire visit. (The sun had also set on our “shutting-the-place-down” days long ago.) It turns out our hut-on-stilts was anything but that. Solidly built on 20-inch concrete piers that probably went in the ocean floor to the bedrock in the center of the Earth, central air powerful enough to make ice cubes on the living room floor, and a master bath featuring a claw-foot tub and a ceramic waterfall shower large enough to host a kid’s birthday party, it was far and away the most luxurious hotel suite we’ve ever enjoyed. a deck-dock down at water level to swim in 6 feet deep water and watch colorful salt-water tropical fish was a nice touch. The Island of Moorea (where we stayed) was surrounded by a barrier reef that insulates the island from ocean waves. The lagoon circling the island was a crystal clear, perfectly still, seemingly heated pool all the time, except for the ripple of a snorkeler or paddle board rider going by (or the buzz of the two of us on a jet ski). And the household water supply was expertly incorporated out of sight into the

concrete pier-and-beam construction. My concern about the bungalow flooding due to rising seas or plumbing problems was completely erased. And, before we knew it, six days in paradise had come to an end and we were boarding the 787 Dreamliner back to the U.S. And there she was. Boarding the plane a few moments after us, Island print mumu flowing behind her, fresh flowers in her hair, bags upon bags of souvenirs and a bleary-eyed, slightly sunburnt husband stumbling along behind. I braced myself for hours of nonstop chatter about their adventure. But nothing, just the occasional flight attendant announcement and clatter of overhead bins closing. I thought they must have been seated in the rear of the aircraft. I discretely peeked over my shoulder to see what was what. There, two rows behind us, both had dozed off, gently snoring for what I pretty much assumed would be the entire flight back to Los Angeles. Here’s wishing you a summer full of bucket-list adventures and snoozing on a beach somewhere!

rowsing the stalls at the farmers markets, I am always taken with the array of the bright, fresh colors of the produce. Even the potatoes seem to have a happy hue about them. And the size of the items — lush, plump tomatoes, zucchini that you would never find in a grocery store and melons of all sizes, along with irregular-shaped strawberries that just burst with flavor in your mouth. After a season of white, followed by a season of angst, is it really here? Summer truly is alive and, taking all spring had to offer, we’re ready for the next level. Gardens are busting out. The perennials have miraculously survived the harshness yet again, and the butterflies and bees are back as well as all the migrating songbirds. And with the pandemic seemingly under control, people are on the move. Families and friends are uniting again after a long year apart — and where better than in the backyard around the barbecue. There is a lightness to the moment, everything feels
bright and fresh, and the air is sweet. Time to break out those beautiful fresh veggies and make some exciting, tasty food. The great thing about fresh fruits and vegetables is they pair well with each other, along with a variety of meats, fish and seafood. Either can be warm or one of them warm and the other marinated and chilled. A simple example would be a hamburger. Grilled meat served warm, paired with crisp lettuce, sliced raw tomato and onion. We could kick that up a bit by topping the meat with smoked cheese, peppery arugula, grilled onions and a spicy tomato relish. Now, with the vast array of produce at the grocery store and farmers markets, pairings are endless. Grilled peaches with grilled chicken, watercress, a basil vinaigrette and shaved pecorino cheese. Or what we are having for dinner tonight —chicken breasts marinated with garlic in a lemon-rosemary vinaigrette and grilled alongside some radicchio and Belgium endive. Top that with
lemon segments and lemon zest — bright, bitter, warm and herbaceous. Classic salad combinations we are familiar with are being retooled by creative chefs. Chicken Caesar, tuna Nicoise, cobb and hot smoked salmon. Salads are not just lettuces anymore; the base might be protein-packed quinoa, Israeli couscous, bulgar wheat or chickpeas. Try marinated green beans or a variety of grilled vegetables: eggplant, zucchini, peppers, mushrooms or sweet potatoes. My all-time summer favorite has to be tomatoes. Garden-fresh, straight from the vine, still warm from the sun. Technically a fruit, tomatoes have obvious partners such as onions, eggplant, pasta, garlic and basil. I am going to share one of my favorite tomato salads that has a twist. This can be served as a lunch salad with the addition of cooked Israeli couscous or as a bed for pan-cooked walleye.

½ red onion, thinly sliced Sea salt and fresh ground black pepper to taste INSTRUCTIONS: Preheat oven to 325 degrees. Cut the lemons in half lengthwise and then slice thinly, remove seeds. Bring a small saucepan of water to a boil and blanch the lemon slices for two minutes. Drain well and put in a bowl with 1 tablespoon olive oil, ½ tablespoon salt, the sugar and sage leaves. Gently toss well and spread on a sheet pan lined with parchment paper. Place in oven for approximately 20 minutes until dried out a little. Remove and set aside to cool. In a bowl, combine remaining olive oil and all the other ingredients. Season with sea salt and fresh pepper. Add lemon slices and mix gently. GRILLED CHICKEN THIGHS WITH ROASTED FENNEL, RED PEPPERS, RED ONIONS & ORANGE THYME VINAIGRETTE This is another favorite salad and chicken meal of mine that combines some unique, bright flavors.
INSTRUCTIONS: Trim excess skin and fat off the chicken thighs, season with salt and pepper and toss with a little vegetable oil. Trim the fennel bulbs of the tough outer layers and cut into wedges; season with salt and
pepper and toss with some vegetable oil. Spread fennel on a sheet pan. Seed the red peppers and cut lengthwise into medium slices. Peel and cut the red onion into wedges. Toss peppers and onions together with some vegetable oil and add to the fennel. Roast the vegetables in a 350-degree oven until tender. Make a vinaigrette dressing with the olive oil, lemon juice and thyme leaves and season with salt and pepper. Toss roasted vegetables with the vinaigrette. Grill chicken thighs gently over medium heat, crisping the skin without burning. While the chicken is cooking, zest two of the oranges, reserving zest. Peel all four of the oranges and cut out segments. Gently fold the orange segments into the fennel mixture. Spread the vegetable mixture over four plates. Top each plate with two chicken thighs. Sprinkle with reserved zest and garnish with parsley leaves.

Veggies for the Pantry Every summer since July 2016, a small band of warriors have united their positive energies to bring fresh, locally grown produce to the hungry. Master Gardeners of Cass/Clay counties sponsor the “Veggies” program and have facilitated this ongoing event to connect fresh produce with those seeking nutritious food for themselves and their families. The locally raised produce is FREE for the taking. From the last Monday in July to the first killing frost of the fall season, they work tirelessly to collect fresh surplus vegetables from area gardeners, then distribute the bounties of their labor to the Dorothy Day House in Moorhead and the Emergency Food Pantry in Fargo in late July. AREA GARDNERS — We need your help! Please donate your garden surplus at any of our drop-off collection sites in West Fargo, Fargo, Moorhead and at Sheyenne Gardens in Harwood. All sites are open to the public, easy to access and staffed every Monday 6:30pm -7:30pm beginning July 26th. Last year, 7 tons of delicious fresh vegetables were collected and distributed. This summer enjoy sweet crisp apples, zucchini, asparagus, juicy watermelons and much, much more! Thank you area gardeners who help reap the bounty for others to enjoy.

This underrated veggie deserves a place on everyone's table. It has a fresh, aromatic anise flavor, and it can be eaten raw, sautéed, roasted, or added to soups and sauces. Fennel is a member of the carrot family, though it's not a root vegetable. The base of the long stalks forms a thick, crisp bulb that grows above ground. Above the bulb, at the tip of the stalks, it has light, feathery leaves that resemble dill. When it goes to seed, fennel also produces small yellow flowers among the leaves. Every part of it is edible, from the bulb to the flowers, and it can be eaten raw or cooked. Though the stalks and leaves are edible, fennel recipes most often call for the bulb. When raw, it has a crisp texture similar to celery and a fresh licorice flavor. It caramelizes as it cooks, taking on a sweeter flavor and a tender, melt-in-your mouth texture. It’s low in calories, but high in nutrients like dietary fiber, potassium and vitamin C. How to cook fennel Fennel’s character changes depending on how you cut it. With this vegetable, how you cut it and how you cook it go hand in hand. If you crave fennel, shave the bulb removing any tough core pieces. Marinate it in lemon juice, olive oil and salt. This crisp, thinly sliced fennel is delicious on its own or in a larger salad. Dress it up with herbs, nuts and shaved Parmesan cheese or toss it with greens and a simple vinaigrette. Shaving fennel is also great if you want to sauté it. The thin slices will melt and brown in the pan, taking on a delicious caramelized flavor. To roast fennel, slice it in ½-inch wedges. White wine sangria is light, refreshing and an ideal drink for a hot summer day. It’s easy to make and requires only a few, easy ingredients. Sangria has many amazing variations but, basically, you’ll need a good-quality white wine, fruit, a bubbly component such as lemon soda, club soda or prosecco, and an optional liqueur, like brandy. Strongly associated with Spain, sangria dates back to Roman times when drinking wine with herbs and fruits was considered safer than consuming water. Today, this simple, no-hassle drink is most welcome with savory and spicy appetizers such as shrimp, small tapas or charcuterie boards. Enjoy!

To me, macarons were one of the things best left to the pros, like pho or sushi — until I made them.
F
or years I have avoided making macarons, the Holy Grail of French confections. They have a reputation for being finicky and temperamental. Many recipes include words like “if,” “but,” “only,” and “never.” They are words both intimidating and uncommon in recipes. To me, macarons were one of the things best left to the pros, like pho and sushi—until I made them. French macarons, pronounced “mah-kerohns,” are delicate, airy cookies made of egg whites, ground almonds and powdered sugar. A recipe with only three ingredients leaves lots of room for error. To me, it is sort of like making the perfect fried egg. It is only an egg and a hot pan, but a lot can go wrong quickly. My approach to making macarons was simple. My modus operandi was don’t think, just do. I watched one video online, read three recipes and just went for it. I think that is the key. Do not let the macarons intimidate you. You can do it! I made several batches with slightly different techniques, and this is what I learned. If you can whip two egg whites into stiff peaks, you can make macrons. Grind your own blanched almonds with a food processor, or buy almond flour. I used Bob’s Red Mill from the store. It is very fine and yields a smoother texture, and from my experience—truthfully—they turn out better this way. Add the almond flour all at once! I found no difference from adding the almond flour in thirds or all at once. Of the recipes I read, there are a specific number of folds to make while adding the almond flour to egg whites, anywhere from 37 to 90. This meant nothing to me. I folded the almond flour into the egg whites until it was very well combined and yielded a texture that slowly settled back into itself after folding—kind of gooey. After the first few folds, I was terrified. The mixture looked as if it would never combine, but keep the faith—it will! Just keep folding. After you’ve reached the correct consistency, it is time to pipe them out. I used a 1.5-inch cookie cutter to trace circles on parchment INSPIREDHOMEMAGAZINE.COM
paper. Remember to flip it over before piping. The most important factor in my macrons baking experience was the piping technique and amount of batter used. Use a round tip, and pipe from the center of the circle out— not in a circular pattern—using only about 1 tablespoon. Be sure to tap the sheet pan on the counter
to release any extra air bubbles, which seems counter intuitive because you’ve worked so hard to create those air bubbles, but just trust me on this. Do this a few times, like you would when making a cake. Another good trick is to let the piped macarons sit for half an hour or better yet, a full hour. This helps them dry out and form

Traditional recipes require you to fold in the flour mixture a specific number of times. Just make as many folds as you need to until the mixture is a grainy, gooey mixture. It will begin to settle back into itself.
a skin. If you get this far, you’ve done it! All there is to do now is bake. After cooling, fill your macarons with buttercream of whatever flavor you like. I chose a rosewater buttercream. Jam is also a classic filling for the macaron.
Macarons INGREDIENTS:
1 cup powdered sugar ¾ cup almond flour 2 egg whites, room temperature ¼ cup granulated sugar Food coloring (optional, but use gel if you do!)
As you pipe the macaron mixture it should spread slightly. You may see the point at which you released the piping bag or some imperfection on your macaron. Don't worry! It should bake out smooth and the beautiful "foot", the frilly edge along the base, will appear.
Easy Rose Buttercream
If you are using food coloring, be sure to use gel which is thicker. Add the gel during the soft peak stage. This will ensure the color is thoroughly blended by the time you reach stiff peaks.

Beat the butter on a medium speed for 30 seconds with a paddle attachment, until smooth. Slowly add in the powdered sugar in two installments. Alternate with the heavy cream. Once fully mixed, add in the vanilla extract, rose water, and salt. Beat on low until the ingredients are fully incorporated, and the desired consistency is reached.

METHOD: Beat egg whites to stiff peaks. If you are using gel food coloring, add after reaching soft peaks. Add the granulated sugar after the first few minutes. Meanwhile, sift powdered sugar and almond flour together into large bowl. When your egg whites have reached stiff peaks, add almond flour and powdered sugar all at once to egg whites. Fold in gently until well combined and the mixture is thick and gooey and settles back into itself. Using a piping bag, pipe out macaron batter onto cookie sheet lined with parchment and pre-marked circles. Bake for 15 to 18 minutes at 300 degrees. Enjoy!
