T

he whirlwind of life has brought us to another season of beauty. As winter prepares the Earth for a time of rest, we scurry and hurry about preparing for another holiday season. We wait with great anticipation to see our loved ones gather together. My grown children are scattered coast to coast and waiting to have them all seated, laughing and telling great stories at my dining table is a constant daydream. For children and adults alike, there is great anticipation and positivity in the air. People are kinder, more thoughtful. There is also a different anticipation amidst us. Can you feel it? There is undeniable energy in the air — there is real purpose. It is the sheer determination and relentless drive of more than 200 volunteers from across Minnesota and North Dakota preparing for battle. There are no guns, no artillery, but the fight is real. It’s palpable. For 30,0000 young people living across our nation it is a very real battle for survival. The enemy? Cystic fibrosis. We are celebrating 10 years of the Holiday Homes of Hope tour, boutique and vendor show… and we are grateful. To every kind soul who has ever volunteered or sponsored this event in any way — thank you! Area designers and gracious homeowners — thank you! Sign makers, local artists, crafters, vendors, the media, previous tour neighborhoods, the people of Oxbow — the list goes on and on. Thank you! We appreciate you all… and the good news? We are winning this battle. We have much more ground to cover, but we remain vigilant. We are determined to make life for area babies, children and young adults living with cystic fibrosis, longer and healthier. Hope to see you there, Nov. 9-10. he holidays encompass a myriad of elements that delight our senses — smells, tastes, colors and lights. Seasonal holiday design and dÊcor add a unique charm and warmth to our homes. Year after year, we take pride in dazzling our interiors for family and loved ones, bringing comfort and pleasant familiarity. Holiday styles and colors are ever-changing, so we set out to discover some great insight for Christmas 2019. METALS A combination of one bold and expressive color with metallic elements is an artistic yet stylish choice for a trendy new look. Colors set the mood; and when it comes to celebratory moments, especially in the cold season, something warm and energizing is always a good choice. The metallic trend is becoming warmer and less shiny for Christmas 2019. A Season for Hope

ach and every day, we breathe in and we breathe out. We fill our lungs with oxygen- rich air, powering our bodies and minds with every inspiration. The average human at rest, breathes in and out 16 breaths per minute. This works out to be more than 23,000 breaths per day. Most of us do not think about those breaths, because they come to us naturally and effortlessly. In all fairness, we, as everyday humans, probably take this life-giving exchange of oxygen and carbon dioxide for granted because we don’t have to think about it. This is not the case for the nearly 70,000 people worldwide diagnosed and currently living with cystic fibrosis, a hereditary disease that affects both the lungs and the digestive tract. The cells affected are those that produce sweat, digestive enzymes and mucus. Instead of these fluids being slippery as they are supposed to be, they become thick and obstruct important passageways in the body, especially the lungs and the pancreas. Although this disease is progressive in nature and there is no cure to date, great strides in research and medicine have greatly increased life expectancies of those diagnosed. In 1938, when CF was first discovered, 80 percent of those afflicted didn’t live to see their first birthday. By 1980, the average life span was 10 and, by 1990, it increased to 20. Today, because of the timeliness and effectiveness of screenings, treatments and genetic discoveries, the average person is now living to their midto upper-30s and beyond. Each year in Inspired Home, we meet a family who has been affected by this disease, and we share their story. This issue, we had the great pleasure of getting to know Emma, a vibrant, smiling 8-month-old baby girl, who lives with CF everyday. Emma’s mother, Natalie, is a graduate prepared nurse so she understands what managing this disease involves. She, along with her husband, Jesse, and their two boys are a huge support system for this little girl. She also credits Emma’s amazing medical team. “The cystic fibrosis team and the coordinated treatment center here in Fargo have done a wonderful job at meeting our needs as parents and hers as a patient. Without their continued support from the very beginning, I don’t know what I would have done,” Natalie says. She describes Emma as a pure joy, adding, “Emma is such a happy baby. I always say that God gave her CF, but he also gave her the patience to deal with the therapies.” Unless you are familiar with CF, you wouldn’t realize how much work goes into the daily routine of someone living with the disease. There isn’t enough room on this page to describe every detail of Emma’s day, but it is time consuming. She wakes every morning at 6 a.m. Natalie gets the boys ready for school while Jesse does her treatments. Shortly after, Emma takes her enzymes. (Some people with CF have to take enzymes before they eat or else they cannot properly digest their food, which can lead to serious health issues.) Emma’s nanny then arrives for care giving, while her parents go to work.

Emma’s caregiver is, as Natalie described, a huge blessing. It is safer for Emma to be at home than risk being exposed to all the germs and illness that come with daycare. In the evening before bed, Natalie administers two more nebulizer treatments and chest compressions. (Emma is too little for the physiotherapy vests, so instead, they do tapping on 12 different areas of Emma’s little body for about a minute and a half in each location. Emma wakes around 2 a.m. for more enzymes and a bottle, and the whole process repeats itself the following morning. While the process seems intense, Natalie describes their daily routine as simply “the new normal” for their family. She values the quiet, alone moments they spend one on one with Emma during her therapies. Because of the advances in medical science, Emma will get to start a new medication next year that will hopefully help prevent major infections that often lead to permanent lung damage. Natalie plans on instilling in her daughter the importance of maintaining her treatments every day so that she can manage her symptoms daily as she grows and becomes more independent. “We will do whatever we can for Emma, for all our children,” Natalie says. She acknowledges there will be some rough days ahead, no doubt, but Emma is strong and she is a fighter. Natalie and Jesse will give their children the very best, because in Natalie’s words, they deserve it.

is’ the season — the season for loving, giving and celebrating. Nothing is more comforting this time of year than the warm glow of a fire, as its pops and crackles. Frank Sinatra softly singing “O Holy Night” wafting throughout the rooms of our snow-covered homes is a recognized thing of comfort. We all realize that it takes effort to decorate our homes for the holidays, but there is also something soothing in it … so peaceful. For the anticipated holiday season, red-bowed chairs, the soft glow of candles and the smell of freshly cut pine offers a universal reassuring comfort to us all. On Nov. 9-10, beautiful area neighborhood INSPIREDHOMEMAGAZINE.COM

homes will again be adorned in finery as area designers and homeowners work together to ready the “reveals” for the Holiday Homes of Hope tour. In its 10th year, Inspired Home Magazine is honored to sponsor the tour, boutique and vendor show. HHOH is the brainchild of Carlotta Schwartz and Lisa Backlund; both have children living with cystic fibrosis. In 2010, they and a few close friends in their neighborhood chose to open their own homes dressed in holiday décor. All proceeds from ticket and craft sales went to the Cystic Fibrosis Association of North Dakota. A decade later, this event has become an inspiring opportunity to financially

assist the families whose lives are affected by this disease. This year, more than 200 local volunteers will again take the lead in this special event for a worthwhile cause. Seven local homeowners in Oxbow are opening their hearts and doors so the public may view their professionally staged holiday homes. Talented designers have altruistically put forth their time and money to aid in the success of the CF tour. We reached out to homeowners who participated last year — their reactions were of grace and appreciation. Andrew and Michelle Atchison’s home was decorated by Eco Chic last year, and this INSPIRED HOME | 23

is how they described their experience: “Our home was in great hands with volunteers that took care of every detail. The best part was participating in something much greater — providing support for area families affected by cystic fibrosis.” Their home, decorated in warm neutrals, conveyed rustic charm. Long-stemmed candelabras added depth and sophistication to the holiday table. The Atchisons are not alone in their feeling of joy contributing to the tour. Michael and Linda Lee Sands also participated last season. They had been major fans of the HHOH tour for years. “It was an 24 | NOVEMBER/DECEMBER 2019

honor to work with the Holiday Homes of Hope team and with Sarah at Holland’s. She epitomized the concept of a hygge home for us and was so much fun to work with. At the pre-show gathering, a mother shared her heart-rending journey of what having a child with CF looks like. It made me feel humbled and even more honored to be a small part of raising funds for this important cause.” Participant Gina Sandgren’s home was designed by designingwomen2 and offered a lively Grinch backdrop. Fun framed prints and vibrant colors enveloped the home with whimsical charm. Sandgren was grateful to

offer her home last year. “A philosophy I try to live by is ‘for those with much, much is expected,’ so if opening our home to benefit the local cystic fibrosis chapter was something we could do, that is easy. What’s hard is living with CF.” Homeowner Sue Dale answered the HHOH call for help with yes! “Having our home on the HHOH tour was incredibly rewarding. It was wonderful to work with Pam and Melissa of Infinity Designs. Our whole Tessa Terrace neighborhood embraced the cause and mission of the Cystic Fibrosis Association of North Dakota.” Dale’s neighbor, Jade Rosenfeldt, also graciously gave an immediate answer of yes. “Our experience was incredibly rewarding. We enjoyed having a small part in such a wonderful fundraiser for such a great organization.” There is always grateful excitement when the very first tour home is secured. Brenda and Corey Elmer were the first to agree and were true champions in rallying their neighborhood to join ranks — that will never be forgotten. As Brenda put it, “to be able to have our home transfigured into a winter wonderland, help an amazing cause and invite the community in was one of our key highlights of our year.” The splendor of another holiday season will glimmer and shine, but for some area families with babies, children or young adults living with CF, the true sparkle comes from hope. midst all the chaos of the holiday season — from lengthy shopping lists to family visits and holiday parties — it seems impossible to do anything but the usual commitments. Yet every year, homeowners from the Fargo-Moorhead area make room in their busy schedules to participate in Holiday Homes of Hope, an annual fundraiser for the Cystic Fibrosis Association of North Dakota. In 2018, Kristin and Matt Nelsen were two of the gracious homeowners who welcomed visitors into their home for this worthy cause. Located in the Tessa Terrace subdivision of South Moorhead, the Nelsen family was a rather new addition to the neighborhood. Yet when they were asked to join in the Holiday Homes of Hope tour, they were more than happy to be a part of the event. For Kristin Nelsen, participating in the Cystic Fibrosis Association of North Dakota event was important: It embodied her family’s tradition of giving back to our community during the holiday season.

The classic brick fireplace is decked out in Christmas spirit thanks to the hard work of Monica Hart of Monica Hart Interior Design. Hart, a local interior designer, shared her time and talents to create this festive theme for the 2018 Holiday Homes of Hope Tour.

“We want Christmas and the holidays to be about more than just presents. There’s a meaning behind Christmas: It’s about Jesus and his birth, and a celebration of our faith. And our faith teaches us to give back to others,” Nelsen said, “so every Christmas season we do just that.” And while the Nelsen family partakes in all the classic Christmas traditions — like baking together, dressing up the house with sentimental Christmas decor and unwrapping Santa presents in their pajamas — they have also made a point to include the spirit of giving in their holiday traditions. “Our kids need to learn and participate in the true meaning of Christmas,” Nelsen INSPIREDHOMEMAGAZINE.COM

some new traditions, like making lefse with them, but we wanted to instill the tradition of giving early on.” The interior designer tasked with decking out the Nelsen house, Monica Hart of Monica Hart Interior Design, had a similar outlook

on the holiday season. “It’s very, very important for me to give back to my community,” Hart said. “Christmas is my absolute favorite time of year and I love any opportunity to give back to the community.” And because Hart had worked INSPIRED HOME | 47


on the Nelsen family home before, decorating their home for the holidays was a breeze. “I already knew all of the pieces I had integrated into their home the last time, so adding a bit of Christmas flair to the house was really fun and easy.” Hart spent a lot of time planning for the Holiday Homes of Hope tour, working through the week before the event to make sure the Nelsen house looked pristine. After Hart worked her magic on the

Nelsen home, the house was stunning, integrating Christmas ornaments passed down through the generations with new pieces to create a holiday motif unique to the Nelsen family. “Monica did an incredible job,” Nelsen said. “She and her crew managed to represent the things we value about Christmas time, like slowing down to spend time together and create memories, in the decorations she used.”

With Hart’s innate gift for interior design and donating time, coupled with the Nelsens’ willingness to share their home, the Fargo-Moorhead community was also able to give back by attending the tour. Area babies, children and young adults living with cystic fibrosis will breathe a bit easier. A perfect cycle of giving — one the Nelsen Family and Monica Hart were happy to help complete.

With holiday phrases evident throughout the house, it was impossible to leave the Nelsen home without absorbing a big dose of holiday cheer.

emember that movie about 100 years ago where Dustin Hoffman graduated from college and a family friend pulled him aside and said: “Ben, I’ve got one word for you — plastics!” Well, when it comes to the friends and colleague holiday party hostess gift exchange, I’ve got one word for you— consumables! That’s right. Items to eat. Or drink. Or that can be thrown out when no one’s looking. Unlike the Puerto Vallarta shot glasses you gave your best friends that they try to dig out before you come over. Of course, at the top of any list of year-round hostess gifts

is a bottle of wine. We have a group of friends who have been celebrating everything imaginable for ages, and I swear there are three or four bottles of wine that have entered and left our house at least three times. There’s one in a really dark glass bottle with a label that seems to be written in French. Because it appears to be something hoitytoity, we’re reluctant to open it for a Friday evening happy hour for just the two of us. Having no idea what’s in there, we’re reluctant to share it with friends in case it’s awful. Once I was tempted to

put “Happy 2017!” on the label with a silver Sharpie when I passed it along for a New Year’s party, but I was ever hopeful it just may appear on our buffet table as a hostess gift one more time. The only reason I have a kitchen is because it came with the house. I’m a poor cook, hate the mess and would much rather sit at the counter enjoying a hostess gift glass of wine, chatting with a cook who knows what he or she is doing. I know nothing about appliances other than our high-quality gas range in Fargo has all kinds of different sized burners and settings for controlled cooking. Our poorquality gas range in California has two temperatures — room temperature and arc welder. That range boiled an Italian carafe of espresso dry and melted the Bakelite handle before I realized what was happening. The microwave? The one here has fancy settings and timers. The one there has two — off and nuclear meltdown. This year, I was going to ramp it up a notch and make not one but two different consumables to bring to the holiday party circuit: homemade limoncello made from our lemon tree in California and fudge made in our Fargo microwave (the only kitchen appliance we own I can confidently operate). Limoncello is a snap. Sand the color off 10 dozen lemons, soak the lemon sawdust in grain alcohol for 10 weeks, filter it through coffee filters and mix with equal parts simple syrup. It yields a tangy, lemony taste sensation that will make grandma giggle all through dinner. Firmly believing “nothing in moderation” and those who think “less is more” have never had quite enough “more,” I thought it would be fun to make two types of fudge. Sea salt seems to be the big deal these days. I grew up only knowing table salt that sold for 99 cents for a 12-ounce blue cardboard canister. The kitchen boutiques sell sea salt in various colors and textures, varying from fine grain to class 5 gravel at $14 for a 4-ounce plastic sleeve. No wonder everyone’s excited; it’s the caviar of condiments. One fudge recipe is the traditional semi-sweet chocolate chip and sweetened condensed milk (not to be confused with evaporated milk, trust me) and chopped walnuts, sprinkled with white class 5 French sea salt flakes on top. The other would be a white chocolate

and almond recipe with pink class 5 sea salt chunks on top. Some of you recognize this recipe as almond bark. Rather than pour the hot mixture in a thin layer and break into bark-like pieces, I planned to pour it thick like fudge, cool it and run it through my band saw. The limoncello turned out perfectly. However, the bottles proved to be problematic. A 12-ounce clear glass bottle costs $5 at the arts-and-crafts store. Not bad, if you need one or two. I needed 24. Ever the frugal shopper, I discovered that 12-ounce bottles of generic ketchup cost 69 cents at the local scratch-and-dent grocery store. I put the low-quality ketchup in an empty 2-liter soft drink bottle, soaked the labels off the ketchup bottles and hoped no one would be the wiser. Screw caps are now totally acceptable on wine, but I thought the ketchup cap looked kind of downmarket, so I ended up tracking down corks to fit. The dark fudge turned out perfectly, as it always does. Fun fact: When band saw blades slow down, they get hot, smoke and smell terrible when you’re sawing sugar and almonds rather than wood. Live and learn. We had a wonderful holiday season with family, friends and colleagues and my hostess gift of consumables appeared to be a hit. At least no one threw it out before we left. We also had an interesting bottle of wine that appeared to be from France show up unannounced on our buffet table at one of our cocktail parties. Imagine that. t is hard to believe I am saying this already, but tis’ the season for another special edition of Inspired Home Holiday Pets. While we have touched on this subject in the past, it is important to emphasize that the holidays can be stressful not just for humans, but for the furry counterparts that live in the home as well. While it is easy to be distracted by baking cookies, wrapping presents and being jolly all day long, pausing for a moment to make sure your home is petproof for the holidays can prevent unnecessary injury or additional stress this time of year. We spoke with Dr. Amy Anderson, veterinarian at the West Fargo Animal Hospital for some helpful hints on what we can be done to better help our family pets get through the holidays. Preemptive planning can help reduce the amount of 64 | NOVEMBER/DECEMBER 2019

unexpected holiday tension for both you and your pets. Anticipating obstacles you may need to hurdle will help you achieve a smoother transition into one of the busiest times of the year. For many families, Christmas trees are abundant this time of year. Perhaps you have one upstairs in the living area, and a second one down in the family room. Unless you have your eye on that tree 24/7, there is a good chance you may have a pet that enjoys batting around the ornaments or scaling that tannenbaum from trunk to tree topper. Dr. Anderson says that a live Christmas tree can be a very enticing plaything for most cats. The smell and texture of a fresh pine alone are enough to tempt the most disciplined of felines. “Use inexpensive, unbreakable ornaments. Do not use tinsel or other thin garland-like material to decorate the tree — cats can ingest INSPIREDHOMEMAGAZINE.COM


these materials and develop severe intestinal obstructions that are often only treated with surgery.” She also suggests leaving the bottom third of the tree undecorated to remove the temptation of “low-hanging fruit.” Whether your tree is artificial or live, make sure that the tree is well anchored so it doesn’t tip over, or try using a smaller tree that can be placed on a table and out of reach. While dogs tend to be better at ignoring the tree, Dr. Anderson recommends using a gate or a small fence to detract from any temptation. In either scenario, it’s important to supervise your pets around potentially harmful decorations. She also says be wary of kitsch holiday pet stocking stuffers like green and red rawhide candy canes. This is one of the most popular offenders. “The white, bleached rawhide that is often found in cheap Christmas toys can be very difficult to digest and, if large chunks are ingested, could even cause a bowel obstruction. Also, I would stay away from the bones with pretty red and green dyes. Dogs with food allergies are often allergic to dyes, so these bones could be a problem for that reason.” Instead, she suggests, give your pet the treat he or she loves best. It’s okay to stick to the oldies but goodies to assure that your pet doesn’t have an adverse reaction to a new treat this holiday season. Whether you have a cat, a dog or both, take a long “paws” and think about what you can do to protect your pet this holiday season. By doing so, you will ensure your future will be merry and bright.

To quote Charles Dickens, “It was the best of times …” and then comes winter. Tucked inside the weather talk are two of the best times, Thanksgiving and Christmas. November is the gateway to the holiday season with the first big family get-together, Thanksgiving. The only other country to share this holiday in name is Canada, which started celebrating Thanksgiving 43 years before America. This first Thanksgiving was not celebrated with turkey but with salted beef in the Eastern Arctic. Shortly afterwards it became a celebration, much like the American one, of the bounty of the autumn harvest. The true essence behind Thanksgiving is the celebration of the harvest and dates back before the Pilgrims docked at Plymouth Rock. The Greeks had “Thesmophria,” Southwestern Native Americans the “Corn Dance,” and ancient Romans had “Cerelia,” a festival celebrating Ceres the goddess of agriculture. The turkey, indigenous to the Americas, became the centerpiece of the dinner table laden with all the vegetables we are familiar with — squash, pumpkin, turnips, sweet potatoes, a mélange of hearty root vegetables. The Thanksgiving Day meal is familiar and comforting, like an old friend coming to visit. Immigrants embraced the celebration as they were connected to the Earth and agriculture. They married the flavors and dishes of their homeland into their Thanksgiving feast. I have a strong culinary affiliation and passion for the invigorating flavors of Italian cooking. Italians are passionate about food. Shop an outdoor farmers market with an Italian and there is a lot of touching, squeezing and smelling of the produce. Then comes the haggling — it is pure theater. So, with no offense to the Pilgrims and their rather starchy ways, let’s put a little zest into this year’s celebration with a taste of Italy. Everyone likes charcuterie and cheeses, so this holiday lay out a platter of sliced soppresseta, salami, prosciutto, assorted cheeses and pickled vegetables. Garnish it with some olives and slices of good bread. This will keep the family happy while you put the finishing touches to the dinner. Italians love to eat in courses where we just put everything on the table and get after it. A butternut squash soup or a light ricotta ravioli would be a nice start, followed by a shaved Brussels sprout salad with baby kale, dried cranberries, apples, toasted bread and apple cider, a nice, elegant lead-in for the main event. The star of show is always the turkey. I enjoy side dishes, but it is all about the turkey. For those looking for a different take, I suggest making rosemary lemon butter to slide under the skin. As the turkey roasts, the butter will melt into the breast keeping it moist and flavored. For the bird cavity, rub with salt, pepper and paprika, and toss in whole garlic cloves, cut lemons, onions and rosemary. The butter under the skin seasons the top, and cavity seasonings add flavor from inside out. For more flavor, add white wine, orange juice, garlic and butter to the roasting pan — this will be the basting sauce. Dressing can be a sensitive issue for some. My wife has been making her grandmother’s recipe for years. It is good, and I doubt she will ever change it, but as they say, “A change is as good as a rest.” In lieu of white bread, Ciabatta bread brings new textures with its tough outer crust and airy small holes on the inside. This makes it perfect for taking on board all the flavors while still retaining it chewiness. Start with Italian sausage, sweet or spicy (or maybe half and half ) without casings and cook until brown with sautéed onion, celery, carrots, chicken stock, fresh herbs and olive oil. Put it all together and bake until nicely browned. Top with freshly chopped parsley. Bellissimo! Bring on the whipped roasted butternut squash, creamy and sweet with a hint of maple syrup, topped with some crunchy toasted chestnuts. Include fresh green beans, roasted potatoes, and how about a simple corn pudding? Fresh corn kernels, eggs, flour and seasonings make for a light pudding of fresh local corn. A sassy cranberry relish with fresh cranberries, dried cranberries, orange juice and crunchy walnuts round out the dinner. For the final twist, an Italian pumpkin pie can share the table with pecan and chocolate silk pies. Crushed amaretto cookies and liqueur bring a whole new flavor profile to the traditional pumpkin pie. Fresh pumpkin has texture, so to avoid a revolution, make your traditional pumpkin pie, too. ITALIAN PUMPKIN PIE Yields one 9-inch pie using a false bottom straight-sided tart pan. (Always read through a recipe before starting) FOR THE PIE CRUST: INGREDIENTS: 1¼ cups all-purpose flour 3 Tbs. sugar ¼ tsp. salt 4 ounces cold unsalted butter, cut into cubes 1 egg yolk 2 Tbs. heavy cream METHOD: Preheat oven to 425°F. Put the bowl and knife blade of a food processor in the freezer while you assemble the ingredients. Add flour, sugar and salt to the bowl of the food processor, pulse to blend. Add the butter cubes and pulse until incorporated into a coarse mixture, do not over blend. Add egg yolk and cream, pulse a few times until dough comes together adding extra cream if necessary. Shape into a disk and, on a lightly floured surface, roll into a 12-inch disk. Line tart pan with dough, double over extra dough making the sides slightly thicker. Refrigerate.

I usually plan my baking days on a Saturday or Sunday, leisurely — usually in the morning after a cup of coffee or two or three.

hristmas is a special time of year when I do a lot of my favorite baking. On the weekends, I leave my house cool with the knowledge that I will be baking to warm the home and the bellies of my friends and family. This comes in the form of breads, cookies, cakes and tarts. I usually plan my baking days on a Saturday or Sunday, leisurely — usually in the morning after a cup of coffee or two or three. I measure out my ingredients casually, with all the time in the world. Some things have changed since last Christmas. On July 20, a hot summery day, my beautiful little baby girl arrived into my world. Baking suddenly became as extinct as the expiration date on the packaged butter sitting in my fridge. It wasn’t until summer waned, the air cooled and the leaves changed that I found my way back into the kitchen — just in time for this holiday season. I knew I wanted to make something beautiful, yeasted and impressive. Star Bread!

This bread is as beautiful as the snowflake it resembles — a showstopper, but rather simple to make. I set out on a Saturday morning to make this bread once I finally got our baby girl to nap! After the dough doubled, it was time to shape the loaf. I realized I was out of parchment paper. My first thought was that I am not about to run out to the store to buy parchment paper because I had just coaxed little babe Carlson to nap. Turns out foil works just as well, although significantly less aesthetic. Themost“complicated”partofthisimpressivelooking bread is the twisting or shaping, which a first grader could do. The dough is very soft and requires only one rise, which results in a nice light dough layered with cinnamon, sugar and, of course, I add cardamom. The spice and floral taste of cardamom ends up in everything I bake — I love it. Once you make the dough, divide it into quarters and roll each quarter out into a 10-

inch round. I used my spring-form pan as a size for reference because I couldn’t find my ruler. When you roll out the rounds, they do not need to be perfect. Spread the circle of dough with the filling of your choice and then perfect your circle with a pizza cutter or paring knife. You can be very creative with the filling for the bread. I think it is most beautiful with raspberry or currant jam, which yields beautiful red and luscious layers. To achieve the twisted shape, cut your dough layers into 16 equal portions starting with quarters. Take any two pieces and twist them apart or away from each other 3 or 4 times, then pinch the ends together. Continue to do this for the remaining slices. You’ll end up with an 8-pointed star. The recipes calls for brushing the dough with an egg wash. Honestly, I hate wasting a whole egg for this purpose and I always use just a milk wash instead. I find it works just as well or better!

The light floral notes blended with traditional baking spices and the toasted nature of this wine make it a perfect choice for Thanksgiving. hen the air gets crisp, my mind starts planning holiday parties! I love to cook, entertain, and most of all, drink wine. For me, it’s important to have wine on hand that can go with a variety of things since you never know who or when family and friends might stop by.

G.D. Vajra Langhe Rosso Imported from Italy, with bright notes of cherry and plum, this red blend is incredibly balanced. Made of mostly Nebbiolo, Barbera and Dolcetto grapes, it may sound like a powerhouse, but it comes off more delicate and soft. If you like Pinot Noir, this is a fun change of pace. This wine is light enough to work with turkey or ham, but don’t be afraid to set this bottle next to a plated prime rib!

1 This dough is very soft and forms easily into a ball shape. It requires only one rise, which makes it a quick treat to make.

2 If you can't find a warm place to let your dough rise, turn your oven on to 170 degrees. Once it reaches that temp, turn it off and use that as your warm space.

3 Knock down the dough several times to let the air out; this prevents the dough from over-rising. With only one rise, you don't have to knead all of it!

4 I like to make indentations to make equal quarters. I find when I just cut into a ball of dough, it can warp, making the other pieces unequal in size.

6 I use a 3- or 4-inch ramekin as a tool to find the center of the star. I also use a pizza cutter to finetune the circles I've rolled out because they always end up wonky!

Before rolling, make sure to flour your rolling pin. Roll each ball into a thin 10-inch circle. The top layer does not have filling on it so only 3 of the 4 circles will require it.

7 The 16 wedges you cut do not have to be perfect. I think it adds to the beauty of the snowflake if there is a bit of irregularity, just like nature.

This holiday season surprise your family and friends with this festive and delicious bread. You’ll be a “star”! INGREDIENTS: DOUGH: 2 tspns. instant or active dry yeast 3 Tbs. granulated sugar 3 ⁄4 cup whole milk 1 ⁄4 cup unsalted butter, softened, room temperature 1 large egg 2 1⁄3 cups all-purpose flour leveled, plus more as needed 1 tsp. salt FILLINGS: (see special section) EGG WASH: 1 large egg beaten with 1 Tbs. milk 2 Tbs. confectioners’ sugar METHOD: DOUGH: Place the yeast and sugar in the bowl of a stand mixer fitted with a dough hook or paddle. (Or, a regular large mixing bowl.) Heat milk on the stove or in the microwave until warm, about 110°F. Pour warm milk on top of yeast/sugar. Whisk gently to combine, then loosely cover with a clean kitchen towel and let sit 5 -10 minutes. Mixture will become frothy. Add the butter, egg, flour and salt. Beat on low speed for 3 minutes. Dough will be soft. Using lightly floured hands, form it into a ball. If the dough is too sticky to handle, add 1 to 3 more tablespoons of flour, but you want a very soft dough. Place the dough in a greased bowl and cover with plastic wrap. Place in a slightly warm environment to rise until doubled in size, around 60 - 90 minutes. My suggestion? Preheat oven to 150°F, then turn the oven off. Place the covered bowl inside and shut the oven door. Line a large baking sheet with parchment paper. Prepare filling. (See options below.) into 4 equal pieces. With floured rolling pin, roll each out into a thin 10-inch circle. Place the bottom circle on prepared baking sheet. Use your hands to form the edges back into a round shape, if needed. Top with filling, then layer the remaining circles and filling on top. The top layer does not have filling on it, so only 3 of the 4 circles will be topped with filling. Use a knife or pizza cutter to cut scraps around the edges so you have an even circle. Place a 3-inch round object or bowl in the center and make an indent/star center. Using a pizza cutter, cut 16 even strips from outer edge to indented circle. Using both hands, grab two strips and twist them away from each other twice, then press the two ends together to make a point. Your star bread will have 8 points. Cover with plastic wrap or foil. Rest for 20 minutes. PREHEAT AND BAKE: Using a pastry brush, lightly brush the star bread with egg wash. Bake for 25-30 minutes or until golden brown on top. If top or points browns too quickly, loosely tent the star with foil. Remove from the oven and cool for 5 minutes. Dust confectioners’ sugar on top and enjoy warm.

Filling Options: Cinnamon Cardamom Sugar: Spread 1 Tablespoon softened unsalted butter onto each of the 3 circles. Mix 1⁄4 cup granulated sugar, ½ teaspoon cinnamon and ½ teaspoon cardamom. Sprinkle evenly over butter on each circle. Your Favorite Jam: Spread 1 Tablespoon of jam onto each of the 3 circles. Chai Spice: Spread 1 Tablespoon of softened unsalted butter onto each of the 3 circles. Mix 3 Tablespoons granulated sugar with 1⁄4 teaspoon each ground cinnamon, ground ginger, ground cardamom, and ground allspice. Sprinkle evenly over butter on each circle. Butter + Cinnamon Sugar + Walnuts + Dates: Spread 1 Tablespoon softened unsalted butter onto the 3 circles. Mix 3 Tablespoons packed brown or granulated sugar with 1⁄4 teaspoon ground cinnamon, and 2 Tablespoons each finely chopped walnuts and pitted dates. Sprinkle evenly over butter on each circle. Cinnamon Sugar + Orange Zest + Fresh or Dried Cranberries: Spread 1 Tablespoon of very soft unsalted butter onto each of the 3 circles. Mix 3 Tablespoons packed brown or granulated sugar with 1⁄4 teaspoon ground cinnamon, 2 teaspoons orange zest and 3 Tablespoons fresh or dried cranberries.

The perfect cup of tea

y mom taught in the Catholic school system for a number of years and, for many Decembers, she, a group of her teacher friends and I attended the Presentation Sisters’ Christmas Tea. It was an annual event we all looked forward to because of the beautiful tea settings; the elegant men dressed in tuxedos, serving cup after cup of hot tea into our fine bone china teacups; the delicate sandwiches and scones; the music; the conversations; and hearing about the actual reason behind the tea in the first place — to raise money for the Sisters’ emergency assistance fund. In 2004, as we were leaving the tea, my mom got a phone call that my grandma had fallen in her nursing home room. Grandma was

nearing 92 years old and, while her mental state was impeccable, her physical state was not. We met her at the emergency room, and I’ll never forget how she looked at me from that bed; it told me she knew she was nearing the end. Grandma died about 10 days after that phone call, and we were all simultaneously sad that she wouldn’t be with us for Christmas and delighted to imagine what kind of first Christmas she would be having in Heaven. Grandma had had a number of elegant teacups and saucers as well as silver teapots and other dishes associated with an afternoon tea. Sometime in the spring after Grandma died, my mom and I decided to donate the majority of those beautiful things to the

Presentation Sisters because we wanted them to get used and be enjoyed by others. Many of these were objects I had grown up gazing at in wonder through the glass doors of her china hutch, but I knew I didn’t have room for them in my current life, so it made sense to pass them along. The Sisters accepted Grandma’s teapots, flowered cups and saucers and dishes with great appreciation, oohing and aahhing along with us as we unpacked them at the Convent. As the next Christmas season approached, I started thinking about the Christmas tea. I put out a small ask to the Universe that I see something of Grandma’s when we got there. used and loved in this new way, like I had always loved them. As we walked through the room, past other tables to find our assigned seats, I found myself searching for the purple violet teacup and saucer, the silver teapot, the three-tiered cake stand, but I didn’t see anything I recognized. And then I was seated and looked down, and directly in front of me was one of Grandma’s most beautiful teacups sets. The delicately painted floral pattern was as beautiful as I remembered it from all my years of looking at it at her house. That little teacup made me happy and sad: Grandma might not be physically here anymore, but her love of beautiful things lived on, and I got to enjoy them in this very special way.
