ard to believe, but I’ve been sharing observations on life from suburban Fargo with Inspired Home readers for more than five years now. Unlikely as it seems, everything I talk about typically has a significant element or real-life experience associated with it. There really was a crazy cooking class in Mexico with crazy students and too many margaritas. Travel anywhere is virtually always some sitcom gone awry, and my home improvement projects almost always veer off on some unforeseen tangent. I am truly that obsessive about my lawn, and I change room colors if I’m bored. There’s always one underlying and unifying element in my observations: I look for the joy
20 | SEPTEMBER/OCTOBER 2017
and whimsy and even the absurd in virtually every situation. My unbridled imagination then creates an over-the-top potential outcome to whatever I’m encountering that usually ends up being close to how it turns out. Another element I’ve come to realize is the readers of publications like this aren’t necessarily doing so to know what color to paint their bathroom so their friends don’t roll their eyes behind their backs or for guidance on when they’ve crossed the line over too many vinyl letters on their walls, although I’ve made fun of both a number of times. Readers of magazines like this seem to believe that a beautiful and joyful life experience doesn’t just happen; it’s a conscious
effort. A fulfilling life experience most often starts with a harmonious, inspired home. It has been a big year in our family as both my son and daughter are marrying the loves of their lives, and I’ve shared some of my thoughts on that. This issue, I’m sharing the welcome speech I’m giving at my daughter’s wedding dinner. The wedding’s the end of August and will have happened by the time you read this. I’m going to skip past the “welcome, so glad you’re all here” part and jump to the heart of it. It’s not necessarily humorous but speaks to my belief that consciously coordinating a joyful life experience is important. It’s important for you, and it’s important for those you love.

Never regret obsessing over the tiniest details that create an inspired home and inspired life. They are what make your life story yours. Daddy’s Suit Almost everything in my world starts out with a good intention that’s not thoroughly planned through to its ultimate end. You may have noticed I had a costume change from when I walked Valerie down the aisle, assuming you even noticed the guy next to her. Twenty-eight years ago, this wonderful girl came into our lives. Sometimes it takes a long time to figure out who your kids are; that wasn’t the case with Valerie. Within two weeks, we sensed her strong spirit, willful determination and level of character and integrity that would never change. I had no idea whom she would become, but we knew her inner strength would bring good to those around her. It’s no surprise that she has her master’s degree in chemical dependency counseling and works at the most respected addiction treatment facility on the planet. She spends
her time guiding people from despair to hope and the opportunity to live the life they always dreamed. It could not be any other way with Valerie. This baby girl entering our lives was a big deal. I decided to buy a new suit for her baptism. And by “new” suit I probably mean “a” suit as I don’t know if I even owned any suit at the time. Things were a lot different then. There was no fancy car in the garage. There was no garage. There was no jumping on a plane and going somewhere warm in the winter. It was jumping in dad’s pickup with the snowplow and pushing up snow around the base of the singlewide mobile home so the pipes wouldn’t freeze. Buying a suit was kind of a big deal. And though I never told anyone at the time, I decided then and there I was going to wear the suit I bought for Valerie’s baptism again at her wedding. If I was going to splurge, I was going to make it count. Those of you who know me well know the journey from then to today was rather

treacherous. Wherever I moved, my suit came along with me, tucked away in a garment bag, waiting for this day. That was a sweet idea all those years until the day actually grew closer. I had to figure out exactly how this all was going to work. Once again, great intention—not so much on execution. Should I wear it to the rehearsal? That would look ridiculous, because it’s a summer wedding, and the rehearsal was more a khaki and polo kind of event. Should I put it on to surprise her as I walk her down the aisle? That’s just thoughtless, as walking down the aisle is not remotely about the dad. If anyone did notice me, they would simply wonder why I’m the only one not wearing a tux. It then occurred to me I could wear it at the reception this evening to thank you all for joining us. I could relay some well wishes and share my story of “the suit,” and although it fits me, it doesn’t necessarily “fit.” (A really good point, but not my ultimate goal here.) Here comes the thoughtful points and well wishes part, so pay attention: To Adam and Valerie, kids at the head table and guests, you are the author of your life story. I know, because I wrote this chapter in my life story 28 years ago, not really knowing how it would play out but knowing that it would. And it did. Twenty-eight years ago, I couldn’t imagine what this day would look like, but I knew exactly what it would feel like. And it feels exactly that way right now. You are author of your life story. Write it big. Write it grand. Write it any way you want it to be, because ultimately, it’s yours. Now go write it. INSPIREDHOMEMAGAZINE.COM

e’ve all heard the adage “fighting like cats and dogs.” For as long as I can remember, I’ve heard that saying, but I’ve never really lived through it. At one point, my family included two cats and a dog, and they got along swimmingly. They adored each other. For many families of pet owners, however, this is not the case. Nearly half of all pet-owning families have both a cat and a dog. Some get along, and some, well, fight like cats and dogs. So what gives? Of course, dogs and cats are two entirely different species. Canis familiaris (dog) has forever been revered as man’s (or woman’s) best friend and is known for an inherent desire to please their human counterparts. Felis catus (cat) has often been cast as aloof and cynical, not seeming to mind whether you like them or not. This is not to say that these evolutionary differences cannot be overcome! INSPIREDHOMEMAGAZINE.COM
Canis familiaris (dog) has forever been revered as man’s (or woman’s) best friend and is known for an inherent desire to please their human counterparts. Felis catus (cat) has often been cast as aloof and cynical, not seeming to mind whether you like them or not.
To gain more insight into why our animals do or do not get along (and what to do if they don’t), we reached out once again to our friend Dr. Amy Anderson of West Fargo Animal Hospital, veterinarian and friend to all things furry. Dr. Anderson explains that most dogs are often curious in nature and eager to meet new faces and sniff the other one out. She explains, “I think dogs tend to be more social and outgoing, seeking friendship and companionship from other animals and humans. Most dogs will approach another animal willingly and exuberantly and sometimes more cautiously. They will often show clear signs that they are interested in play, such as tail-wagging, barking and hopping around in silliness.” Cats, however, take a more cautious approach and often see the new pet as an invader of its space. She adds that cats may arch their backs, raise their hair and do things like hiss with the intentions of scaring off any unfamiliar visitors while they skeptically scope any new “friends” from afar. Let’s throw our pets the proverbial bone and be respectful of each pet’s space until they are ready to properly introduce themselves. While playful banter, chasing and light, playful nipping can be common and healthy interactions between two pets, watch for signs of more confrontational interactions that suggest that the animals are truly not getting along. Dr. Anderson adds, “Usually, escalating bad behavior involves bites that break the skin, the inability to redirect a pet during a ‘tiff ’ or increasing frequency of incidents or level of aggression.” If your animals are not getting along, Dr. Anderson recommends reaching out to a professional trainer to “increase the harmony” of the relationship between the two. recommends limiting the time the pets spend together and get to the root of the problem. “You may also want to assess if food, treats or toys are involved, as these three are often the cause of fights between pets. If that is the case, you may need to eliminate these for a period of time or permanently when the offenders are socializing,” she says. The most important thing when it comes to introducing new pets to each other is to go slowly. Dr. Anderson says it’s critical to give each pet their own space and never force them to interact with one another. Pay close attention to their body language. Prairie Roots Food Co-op Building healthy communities with locally sourced food
The produce section bursts with fresh, vibrant colors featuring organic vegetables that look as though they were just plucked from the ground moments ago.

n the corner of NP Avenue and University sits a handsome brick building originally constructed in the 1950s. Over the years, it has housed a vulcanizing business, a tire company and a print shop. Totally remodeled with vibrant and open aesthetics, it is now home to Prairie Roots Food Co-op, a fullservice grocery store providing locally grown organic food produced by its members. Beyond groceries, a bulk section offers 98 options, including flours, beans, nuts, local coffees, baking chocolates and trail mixes. A deli features a salad bar/hot bar with daily lunch specials, including vegan and glutenfree options for takeout or dining on-site. Envisioned in 2010, the co-op was developed by a group of community members with a INSPIREDHOMEMAGAZINE.COM
goal to make healthy, local food accessible to the F-M area. This July, that dream became a reality. Jodi Regan, the marketing coordinator at Prairie Roots, elaborates on the new co-op as an indispensable resource to Fargo. The new grocery “will provide new jobs for community members and support area farmers” while providing access to organic food year-round, cycling money back into the local economy. Although Prairie Roots is not the first co-op to come to Fargo, Regan is confident in its success. With astounding support from more than 1,700 area owners, committed board members and a dedicated staff, Prairie Roots has woven itself into the community fabric. “Fargo bands together over ideas that benefit

Prairie Roots’ location was chosen specifically to diminish “food deserts” in Fargo. The location is easily accessible by bus, making choices available “to a neighborhood that hasn’t had access to much food.” The co-op prides itself on healthy food. Regan says Prairie Roots will promote a “holistic approach to life by helping people take care of themselves with good food.” The co-op also offers workshops from “mocktails” to “cheese 101” to empower people to live healthier lifestyles. Regan is excited for seasonal food arriving. Summer berries will transition into an assortment of apples, perfect for delectable pies, crisps and dumplings. New pumpkin varieties accompanied by a vast array of squash, including species unavailable at other grocery stores, will be stocked. Unlike farmers markets that are not operable in the winter, Prairie Roots will offer healthy, local food year-round. “Where else can you find organic, grass-fed beef and fresh eggs in December?” Regan asks. esign and create two unique gourmet kitchens side by side in the same home by opening a wall and utilizing garage space, and what do you get? A gastronomic heaven. This story all begins with the homeowner, a self-described foodie, who had always enjoyed cooking elaborate gourmet meals for his wife and friends. Over time, as he honed his culinary skills, he found himself in need of more space and better equipment to prepare and execute his elaborate meals. “The homeowner’s passion and talent to cook had expanded the amount of time spent in his kitchen. Hopeful, he brought his dilemma and dream kitchen list to Jenny Rausch, designer and president of Karr Bick Kitchens and Baths in St. Louis, Missouri. The homeowner’s dreams of a double kitchen, reminiscent of a French farmhouse, included a large assortment of cooking essentials and high-end appliances, including multiple ranges, a built-in rotisserie oven, a set of French door wall ovens and multiple islands, for starters. Dressed in Dura Supreme white cabinets with a St. Augustine door style, there is only one pop of color—a Provence blue La Cornue range set into an 8.5-by-4foot reclaimed chestnut-topped island. The hard working "dirty" space is inspirational in its good looks. The hutch adjacent to the Blue Star double French door wall ovens, original to the home, was refurbished for a grand debut. The end grain butcher-block kitchen island is beautiful as it is functional.

fter experiencing lake life for three summers, renting and staying with family, the Majkrzak family fell in love with time spent with family, the water and the relaxed way of life they gained living near a lake. As Scott and Krista Majkrzak looked ahead to retiring one day, a place near the lake where family and friends want to gather seemed the ideal spot to build. They chose a flat lot where they could watch daughter Taylor and son Ryder fishing, swimming and playing on a quiet street on Detroit Lake. “We enjoy all the amenities on this lake, like being able to fill up the gas tank and the variety of restaurants that we can get to right from our boat,” Krista shares. Initial planning began on-site with architect Jan Mevold, Mevold Studios. “I met with Scott and Krista and talked about the overall lifestyle of their family integration with the lake home,” Mevold recalls. “We did a few space-planning sketches in Scott’s parents’ lake home next door and walked away with a good feeling of the concept sketch.” Pictured are Krista Majkrzak with her daughter Taylor and son Ryder, along with cherished canine family members Stella, Captain and Vegas.

Christa Skauge at Floor to Ceiling was instrumental in appreciating both a modern yet industrial style while still focusing on a cabin feel. “Christa understood this and creatively went a bit daring with my suggestions,” Krista adds. DesigningWomen2 also brought focused expertise to the interior design. Avid dog lovers, the Majkrzaks include three additional family members in their home. Cherished canines Vegas, a shepherd mix; Stella, a Chihuahua; and Captain, a newly rescued husky mix, all enjoy their free-to-roam, carefree lake space. With both children playing on traveling basketball teams in the spring, fall and winter, the family’s schedule is bustling with practices and weekend tournaments. “Summer is a wonderful season to unwind together at the lake,” Krista concludes. “We enjoy the feeling of actually losing track of time because we don’t have to be somewhere. ack in the days when our parents and grandparents cooked meals in their kitchens, not much thought was given to the unattractive, boxy hoods above the stove, except that they almost magically sucked up cooking fumes, sending them out into the great unknown. romas wafting through the kitchen on a cold day often reveal the comforting fragrance of warm spices. Spices such as cloves, coriander, cinnamon, cardamom, allspice and ginger play starring roles in delightful dishes both sweet and savory, and according to science, they are beneficial to our health. During the spice trades five centuries ago, they were a symbol of wealth and status. Nations sailed vast oceans between Africa, Asia and Europe in search of them, and merchants became wealthy trading spices valued equally to that of gold and silver for great profit. Fortunately for us today, spices

are relatively inexpensive, allowing us a vast array of culinary options that positively impact our health. Health Benefits Spices have a lovely warming effect on our bodies and naturally aid in functions from healthy digestion to improved circulation. Black pepper, the most expensive spice during the spice trades, has antiseptic and antioxidant properties. Cardamom, a member of the ginger family, is a natural expectorant and aids in opening respiratory passages. The warming cayenne, rich in vitamin C,

boiling water for a flavorful and effective after-dinner sipper. Mix together a teaspoon each of cumin, coriander and sea salt and keep near your stove or dinner table for a healthy way to give food a pop of flavor. Substitute ground cardamom for nutmeg in pies and cookies for a spicy, floral note. Cook rice or other grains with star anise, cinnamon and cardamom pods to add surprising flavor. Root vegetables love warm spices. Roast carrots with cumin and ginger or beets with cumin and coriander. Add a pinch of cinnamon and coriander to a tomato sauce for a Venetian spin. Make a paste of 2 teaspoons ground cumin, 1 tablespoon extra-virgin olive oil and a pinch of sea salt. Rub on chicken or fish before roasting to create an exotic flavor. Mull cider or wine by simmering with star anise and cinnamon sticks. Add 1/2 teaspoon ground ginger, cumin or coriander to a vinaigrette for a unique flavor spin.

My favorite suggestion: Try chai! Chai, a spiced and fragrant milky tea drink in India and east Africa, is an easy and delicious way of enjoying warm spices. The intensely fragrant and dominant flavor in chai is cardamom combined with cinnamon, ginger and black pepper. Other desirable flavor options are fennel seed (mild licorice), whole cloves (strong and musky), coriander seeds (sweet citrus note) or star anise (dark strong licorice).
Spice Tips Best sources for spices: Many health food stores, co-ops and gourmet groceries have bulk sections for spices and teas. 2 cinnamon sticks 1 1-inch piece fresh ginger, sliced 2 cups whole milk 4 bags black tea (such as Darjeeling) 8 teaspoons sugar or more, to taste Directions Place the cardamom, cloves and peppercorns in a resealable plastic bag and crush with a heavy skillet. Place the crushed spices in a medium saucepan along with the cinnamon sticks, ginger, milk and 2 cups water. Bring to a boil. Remove from heat; add the tea bags, cover, and let steep for 10 minutes. Kitchens, Past and Present The heart of our homes — an evolution. BY Granville Wood
I
gave up my summer at fine arts camp to work at a more modest camp where my “true love” at the time was a counselor. It proved to be a transformative time in my life, though I didn’t realize it then. I told a few fibs about my age and was hired as the riding instructor only to have the program cut halfway through the summer. I took the only option presented to me and began to work in the camp kitchen. And what a kitchen! The dining hall was built in the 1920s, and it sat across a dusty country lane from the camp
proper. Three sides of the building were paned glass windows with hard wood floors and towering ceilings. The kitchen shared the same windows and natural light. Everything in the kitchen from the stoves to the pots and pans were original and in pristine condition. Used only two months a year, it was meticulously maintained by a French chef. It was a jewel. Hardwood maple tables, wide enough for two to work across from each other, were scrubbed and oiled daily. They were virtually brand new and irreplaceable—unlike myself.

The girl and I broke up. But I had found a new love—the kitchen. Kitchens of yesteryear were the complete antithesis of everything we equate to our present-day kitchens. They were closed off and far away from the rest of the house. The kitchen was little more than a hearth, an open fire of wood and later coal that heated pots and spits. The household staff along with various forms of livestock called that side of the manor their home. It was distanced to keep the lords and ladies away from the stench

Technology has transformed the modern day kitchen with smart refrigerators that tell you what items you need to buy to ordering your groceries. Aga, a stove that has been built in England since 1929 and still manufactured today, is a workhorse kitchen appliance. A heat storage range, its cast iron frame absorbs heat from a low-intensity burn source.

I love this time of year. We get to slow down before the busy holiday season. I look forward to drinking wines that I’ve been avoiding in the heat of the summer—hearty reds, heavier whites. This time of year is perfect for wine travel, because most wineries are just finishing up grape harvest. It is a great time to fall in love with a new vintage! Here are my picks for fall sippers. WillaKenzie Giséle Pinot Noir This 100 percent pinot noir from the Willamette Valley is a true treat! It is ruby in color with light blackberry and cherry aromas and bright raspberries and figs on the palate. If you are a person who likes to plan ahead, this wine will be great for Thanksgiving. Emile Beyer Pinot Blanc This wine is produced by 14th-generation winemakers in the Alsace wine region of France. The vineyard is full of chalky sandstone and clay, making this pinot blanc exceptionally balanced. Lemon, stone fruit and pear all complement the beautiful acidity of this white wine.

of the coal fire and a variety of other rather unpleasant odors. It began the introduction of the closed chimney and cast iron stove that brought the kitchen out of the Middle Ages. One good thing that evolved from those kitchens, and still very popular today in wellappointed houses throughout England, is the cast iron Aga cookstove. A fantastic stove, it also warmed the home by heating water for the radiators. Considered the Rolls-Royce of cookers, the Aga originated in 1922 and to this day is manufactured in Coalbrookdale, England. Originally fueled by wood or coal, the present ones have options. These handsome and expensive stoves made the kitchen not just for cooking but a gathering place for showing off. The kitchen was beginning to move out of being a purely functional gloom space on its way to being the center of the home. After World War II, casual dining nooks found their way into the kitchen. This was the new generation of kitchens that I refer to as the “life is good, Leave It to Beaver” era. This would evolve into our present-day modern, open kitchen with cooking islands, elaborate tile work and an array of high-tech, functional and attractive cooking equipment. They are beautiful, made for creating and entertaining and occupied by both men and women. It seems like we have hit the pinnacle of kitchen design. But maybe not. What does the future kitchen look like? We have refrigerators we talk to, so will we engage every appliance by voice commands? Will we be able to cook from our mobile phone while attending a spin class? More questions than answers, but for me, give me maple worktables, open flames and the sounds of food dancing in a hot pan.

rowing up, meals were either Sicilian or Norwegian. My dad’s family roots led to Sicily, and my mom’s heritage is a direct line to Norway. It made sense to have manicotti, cacciatore and lots of artichokes, but mom’s chicken curry casserole always seemed to confuse me. Over the past few months, I have been cooking my way through Magnus Nilsson’s “The Nordic Cookbook.” Things began to make sense the day I discovered pork tenderloin with bananas and curry.

It has also garnered a reputation for being bland, which I’m finding to be wildly inaccurate. Scandinavian food is known for its cured meats, pickled everything, fresh fish, mussels and meat enjoyed year-round. It has also garnered a reputation for being bland, which I’m finding to be wildly inaccurate. The mild taste of Scandinavian food is mixed with the identity of Midwestern food, which does tend to be humble in flavor. After the Industrial Revolution, there was a greater availability of foods due to expanded trade routes. Warm spices like cardamom, curry, cinnamon, nutmeg and pepper found their way into Scandinavian recipes and are iconic flavor profiles, especially in desserts. Hundreds of years prior, historical accounts reveal Vikings in long boats had traveled east as far as central Asia, bringing back and utilizing these aromatic spices. “Recipes like this one and other sweet and salty meat and fruit combinations, like Chili Creamed Chicken and Banana Casserole, started to become really popular in the 1970s,” Nilsson writes. “Looking through cookery books, magazines, and the Internet, you will find some very serious and elaborate recipes where the curry powder is made, spice by spice, which resembles something actually cooked in India. Truth be told though, I think that most Danes use the yellow turmericcardamom-and-ginger-heavy-stuff you buy in the supermarket.” This dish is incredibly easy to make. It will be on the table in 30 minutes. In fact, I don’t have any tips to add. I do encourage buying white pepper, which is classic to any Scandinavian dish. These pepper berries are picked when ripe and then sundried, unlike black pepper. Their skin is removed before drying, which yields a milder, floral note. Stick to Muntok white if you can find it, but any type at your local market will do nicely.

1. When frying any meat, be sure it comes to room temperature, then pat dry with a paper towel. This will ensure beautiful browning.
2. Be gentle when flipping the bananas. I use an offset spatula. Turn when the edges start to brown, just like pancakes.
3. Curry powder is a blend of South Asian spices including coriander, turmeric, cardamom, ginger, nutmeg, cumin, mustard seed and cloves. You can have fun making your own blends too!

tablespoon curry powder (I do a heavy tablespoon, closer to 1½ or 2)
Preheat oven to 480 degrees.

Melt butter in pan. Season meat with salt and pepper and fry until brown. transfer to roasting dish. add another generous amount of butter to the pan and fry bananas on both sides until golden. Place them on top of the pork. add the cream to the frying pan and stir the bottom of the pan to deglaze it; then add curry powder. Season the cream to taste. Pour over the meat and bananas. Bake until the pork is cooked but still pink in the center, approximately 30 minutes. Serve with your favorite rice or noodles.
