Wanda Perkins For more than 15 years as a freelance writer, Perkins has enjoyed creatively crafting stories about local, national and international people and topics. She lives in Fargo with her beloved and incredibly intelligent rescued dog, Jake, who also appreciates an encouraging phrase: Good dog! Her book, Blessing After Blessing − Seeing God’s Blessings in All the Seasons of Life, was published in 2006. Dayna Del Val Del Val is the executive director of The Arts Partnership, where she writes a monthly column on the arts for The Forum, manages 2 staff and an active board, and works to support the mission of cultivating the arts in our community through a variety of ways. In other words, she wears 27 hats! She is also a professional actor and writer. She lives in Fargo with her husband and their golden retriever, and she loves when her college-aged son is home on breaks.

Zainah Haider Ever since she was young, Haider remembers her parents always taking pictures. “They have inspired me to love photography. We get pretty competitive when we travel, and we see who can take the best pictures,” she says. Competition or not, Haider says she will always love photography as an art form.

JoAnn Ohma Ohma has always had a passion for words and how they work together. She loves working behind the scenes at Inspired Home, honing and polishing each story into what you read on the page, all while making sure the author’s voice shines through.

ANDREA BAUMGARDNER Baumgardner is a cook, talented eater and aspiring gardener. Lauren Ferragut Ferragut is a geologist residing in Upstate New York. She is currently working for Cornell University as a research assistant at The New York State Agricultural Experiment Station. Ashley F. Johnson Married mother of an active 5-year-old son and a 3-year-old daughter, Johnson also enjoys her career as an inpatient registered nurse in the heart of Oklahoma City. She is passionate about writing, entertaining, cooking with fresh foods and good wine. She adds, “I love traveling with my husband and look forward to exploring the world together as a family.” PHIL STAH Stahl began his lifelong passion for all things creative in South Dakota, where time and long landscapes are plentiful. An NDSU architect graduate, with emphasis in art/ photography, his two-decade practice with Stahl Architects has led him places to observe life, including Europe and the Middle East. He is an adjunct lecturer at NDSU, national speaker for Intern Development, a regular contributor to regional and national home magazines, and has been featured on HGTV and in Dwell. Grace Estes Estes has always found writing compelling. Whether it is as simple as writing a card or writing for a local paper, words have great impact on others. She resides in Grand Forks with her husband and spends her free time cooking and hopes to start gardening at the local co-op this summer. ife in our community has been greeted by spring, and everywhere you look, we witness the ambitious results. Farmers, gardeners and construction companies alike are preparing the earth for upcoming bounties. Local building and construction companies are surpassing all records and are beautifully changing the landscape of the F-M area with tremendous growth. This is an exciting time! The quest for healthier foods

An honest effort, but comfort foods reign supreme. By Bernie Erickson

I

t’s no secret that I have unsophisticated and unhealthy food preferences. I want to enjoy popular and healthy dishes like broiled leeks with a balsamic/ chardonnay reduction topped with crumbled goat cheese and scallions. I just don’t. Where I come from, butter is a spice and gravy is a beverage. And if the hot dish is good, it’s even better with a glop of sour cream and some shredded cheese on top. I called my friend Dahlia for some advice on healthy eating. Dahlia and her husband are the epitome of healthy living. If Malibu Barbie had parents, they would look exactly like Dahlia and Darryl. They think hiking the Andes and riding bicycle marathons in New York City are great ways to spend a vacation. I cannot drive my car 26 miles without stopping for a snack and a nap. My idea of a great vacation is sitting in a lounge chair on a beach with some

attractive young thing bringing me cool, refreshing beverages and salty snacks on a regular basis, dozing off in the sun and waking up just in time for an early-bird buffet. “For starters, stop eating foods with all those preservatives,” she said. I’m pretty sure I read somewhere that there’s a direct correlation between eating lots of food preservatives and not needing as much wrinkle cream. “If the nutrition label has more than four ingredients, you could just as well be dining on some high-school chemistry experiment.” Food has nutrition labels? “You need to shop at healthy food stores like ‘Whole Paycheck’ or ‘Trapper Tom’s’ if you want to eat better.” It certainly couldn’t hurt to try something new—like vegetables or a main dish that didn’t have canned condensed soup as a binding and flavoring agent. The next day I picked up Dahlia and headed over to “Trapper Tom’s” food emporium. We grabbed a shopping bag that looked like it was made of goat hair and began making our way to the vegetable aisle. Dahlia and I were staring at a display of about 400 different varieties of beans when a woman wearing a green goat-hair apron wandered up. In a breathy, fake exotic accent, she asked if she might be of assistance in our selection of legumes. She didn’t say “legumes” like a normal person. She said “legumes” like “lagoon” with an “m” at the end. “No, thank you,” I replied. “The potential health benefit of eating a meal of ‘lagooms’ is not worth the risk. Could you direct us to the frozen foods please?” She looked at me like I had just stepped out of a spaceship. “Sir, at ‘Trapper Tom’s,’ we believe fresh is best, and we strive to provide farm-totable foods with the least amount of human intervention.” So we grabbed a couple of $3 organic green apples and a $14 bunch of carrots and went on our way. “Trapper Tom’s” does not have a butcher shop, but it does have a dizzying array of cheeses and brown eggs to provide dietary protein. Growing up, we mostly ate cheese that came in a foil-wrapped loaf. We were pleased the giant food company took the guesswork out of selecting cheeses with a delightful blend that melted beautifully and created the best macaroni and cheese and grilled cheese sandwiches ever. I asked Dahlia if we could stop on the way home to buy some. She rolled her eyes and dragged me to where they were serving cheese samples. “Here, try this one. You’ll love it,” she said. It was one of those firm, white cheeses that had clumps of blue fur on it. I told her I preferred my penicillin in pill form, thank you. “Okay, here’s an interesting merlotinfused cheddar.” Some of my best friends are merlot infused! I knew it would be good. I’ll admit it was pretty tasty, so I picked up a $22 block of it, gluten-free French bread and a pound of free-range, salt-free butter. We went through the checkout line, loaded the goat-hair bag and proceeded to bring Dahlia home. “You need any help with that?” asked Dahlia as I pulled up to her front door. “Dahlia, it’s one small bag of groceries. I think I can handle it,” I replied. “No, I mean preparing the food when you get home.” I shot her an evil stare over my dollarstore reader glasses and expressed gratitude for her assistance. The taste of a merlot-infused cheddar grilled cheese with gluten-free French bread and free-range butter pales in comparison to processed cheese food, Wonder bread and Mazola margarine. I don’t even know what free-range butter is. When Dahlia called later that evening and asked how I enjoyed my dinner, I told her it was all I hoped it would be. I didn’t tell her I tossed it out, grabbed a $2 carrot to munch on while I walked to the corner café to enjoy a blue-plate hot-beef special with gravy and instant mashed potatoes served atop processed white bread—with apple pie smothered in imitation whipped cream for dessert. Maybe I’ll start eating healthier tomorrow.

A

s you drive north on Elm Street in Fargo, your eyes gravitate toward the home adorned in red. With large, red flowerpots, inviting wicker furniture and a spacious porch, Barb Rawlings’ home draws you in. As you continue on the cobblestone path, your mind begins to relax, breathing in the sweet smells of summer, and for a moment, you forget where you are. Born and raised in Traverse City, Michigan, in a family of eight children, Rawlings was brought up to believe in hard work. Everyone was taught to lend a helping hand, especially in her father’s garden. During the fall and summer months, Rawlings helped her father by picking potatoes and cherries, earning money to buy school clothes. “It was a busy time growing up, but I liked it,” says Rawlings. When she married and moved into her current home on Elm Street, gardening seemed like the natural thing to do. “It started out slow, with a few flower beds

here and there, but gradually, it kept growing each year,” says Rawlings. Today, her garden is a colorful feast for the eyes. An opulent trellis stands at the center and is surrounded by a vibrant array of flowers, bushes and trees. Rawlings, a member of the Fargo Garden Society, has gained popular attention in recent years. The Soroptimist International Fargo Garden Tour has featured her home not once, but twice—a rare and rewarding accomplishment. Being a part of the local community is important to this gardener. Meeting others who are passionate about gardening and learning from them keeps her fervor going. With a desire so strong, it’s not surprising that Rawlings’ children have grown green thumbs and have carried on the tradition of gardening. When spring rolls around, Rawlings and her daughter Beth, a master gardener, head out for a day dedicated to plant shopping. With an empty station wagon, they travel to various cities in North Dakota and do no return until the wagon is full. Once home, they empty their goods, trade seeds with one another and wait patiently until the ground is ready to be fertilized. Tending to gardens requires time, gentleness and diligence. During the spring and summer months, you can find Rawlings outside tending to her beloved plants and watering them by hand, never taking shortcuts. established in Minneapolis, Minnesota, by then owner Marshall Lloyd, who had previously owned and farmed land in Grafton, North Dakota. Recruited by an economic development committee, he eventually transferred his baby buggy and wicker furniture factory to Menominee, Michigan, a city looking for new prosperity and growth as a result of timber and logging industry decline. Lloyd pursued the opportunity, relocated and expanded his growing wicker business, where it continues creating superior products today. Fast-forward nearly 80 years: The company purchased by Dudley and Don Flanders in 1983, respecting the Lloyd heritage, changed the name to Lloyd Flanders. The company takes pride in using the patented Lloyd Loom weaving technique that the business has used since 1917. By weaving strands of cellulose into the wicker, it creates a durable, long-lasting weave that can withstand harsh weather and wear. When traveling, the Klockes are always seeking inspiring and unique artwork that speaks to their love of culture and life. While vacationing in Palm Springs, Terri discovered an art gallery owned by Russian-born artist Elena Bulatova where she found an abstract piece that she loved. She texted Roger a photo of the painting, and he was drawn to it immediately. “We had been looking for an abstract piece for nearly five years. Nothing was quite what we wanted. I saw her painting and knew it was exactly what we had been waiting for,” he said. And with that first procurement, the Klockes became Elena Bulatova art enthusiasts. Bulatova was born in the small city of Alexandrov, outside of Moscow. Growing up in Russia, there was natural inclusion of the arts in education. Bulatova took classes in ballet, chess, music and Russian INSPIREDHOMEMAGAZINE.COM

dance. She says, “I attended art school for seven years, but my focus was on playing violin. I also wanted to be a politician and to work for the government.” She attended the School of Public Administration at Moscow State University—the most prestigious educational institution in Russia—where she played in the Chamber Orchestra. Bulatova studied in France, learning to speak the language in just a few short months. Following graduation, she expanded upon her already impressive educational resume. She was offered a job within the Ministry of Finance while she completed her dissertation on the Sovereign Wealth Fund. It was not long before Bulatova was offered the Fox Fellowship, a highly coveted and esteemed graduate exchange program, at Yale University, which brought her to the United States. Though she admits she didn’t plan on becoming an artist, the transition from music to art was effortless. She eventually made her way to Palm Springs and has since opened two art galleries, Elena Bulatova Studio & Gallery INSPIREDHOMEMAGAZINE.COM

Her paintings evoke a sense of energy and calm simultaneously. Her brushstrokes suggest movement and vitality. You will often find streaks of silver and gold metallic paint, adding depth and contrast to her already intricate pieces. Bulatova is not only passionate about her art but those her art speaks to. It’s important to her that people feel a connection to artwork by evoking a sense of happiness and optimism. Bulatova says, “In many paintings, I use a lot of primary colors. I know what kind of response reds can draw—passion, excitement, power and growth. I think there is part of me in each painting.”

The Klockes understand this connection, as Roger describes how he and his wife were first drawn to Bulatova’s art. He laughs as he recalls how the art was delivered to their home. “The doorbell rang. We had been expecting our art, but here was Elena on our front doorstep delivering it to us personally,” he says. “She’s incredibly kind and very easy to talk to.” Bulatova often paints on a large scale, and she lives her life in a similar fashion. She adds, “For me, the artistic experience is about finding your own parameters. hat began with Rod and Amy VanSurksum’s wish list of ideas, magazine photos and Rod’s pencil drawings evolved into a stunning 9,221-square-foot architectural beauty. The tranquil lot on the Mississippi River boasts prime views, calm shores and a wonderful place for the family’s favorite water activities. With this serene rural location, the homeowners wanted to maximize river views while incorporating their preferred French country-cottage style. “We chose a private location on a calm section of the river,” recalls Amy. “It’s a great place for our active family and cherished canines to enjoy boating, fishing and jet skiing.” The couple initially met with Hansen Tomlinson Fine Homes in Sartell, Minnesota, and next with architect Anthony Stoll of bhh Partners, Planners / Architects in Perham, Minnesota, and Breckenridge, Colorado. This dynamic team worked diligently, from the demolishing of their existing home until all exterior and interior details were completed to perfection. “Resting on the banks of the Mississippi River, both the site and architecture celebrate notions of social and private. Rod’s expansive six-car garage gives ample storage for vehicles and water equipment. “Offsetting the garage spaces gained extensive river views,” notes Stoll. “Their location offered us an opportunity to utilize both the roadside and riverside for focal points and outdoor activities. We created a horizontal floorplan with upper and lower access by utilizing two stairways that frame the main living space. Additionally, the home’s exterior architecture blends beautifully with the wooded setting.” Just inside the entry, a formal dining room features a custom table created from antique pine timbers. Design Thoughts…

Early on in the design process, the VanSurksums noted the importance of maintaining

a connection to the exterior. They came to the design table with a wealth of information and ideas. Unique features of their home include the balcony, kitchen workspaces and upper-level ceilings and loft area. The open balcony to the living room ties in with the sitting and kitchen areas. An interesting design of the small office and pantry between the kitchen and riverside mudroom provides for everyday access to a screen porch adjacent to the pool. The upper level incorporates vaulted and unique ceiling spaces in the bedrooms and kids’ loft area.

heir backgrounds are as different as night and day. How their paths crossed and came together nearly 20 years ago is miraculous. With similar artistic passions and dreams of making a difference in the world,

they embarked upon an international project, resulting in the most challenging and rewarding career experience of their lives. Tracy Wallach grew up in a safe neighborhood in Scottsdale, Arizona. A pilot, business owner and former musician with a successful rock band, Wallach opened Classic Glass, Ltd., and has served churches and institutions for more than 20 years with design, fabrication, restoration, preservation and custom framing services. Drive-by shootings were a reality for Ramon Morin Jr. growing up in the ghettos of the north side of Houston. He recalls individuals falling victim to a senseless shooting while walking to the grocery store. His best friend died in his arms. After high school, he married and moved to Fargo. Persistence landed him a job as an apprentice at Classic Glass, Ltd. After working closely with Wallach for 15 years, Morin opened Studio Renaissance in 2013 and formed a unique partnership with Classic Glass, Ltd. Morin says his focus is on residential and retail work and teaching classes to pass on his art. “Tracy works on securing commercial work, and I contract his commercial and religious work nationally,” he adds. “We have a great working relationship that has spanned over 18 years.” Following an excellent referral by another large project in 2013, Wallach secured a contract to create customized stained-glass windows for the Adoration Chapel in St. John’s Cathedral in Boise, Idaho. They collaborated with a talented father and son from England who utilize Munich-style painting depictive of true artisans from a century ago. “The window scenes chosen for this project were inspired by the last week of Christ’s life,” Wallach explains. “All the intricate flesh pieces of the stained glass were completed in England.” They were carefully packed and shipped to Fargo with jovial English jokes tucked within the packing materials. Wallach performed lead design and line work and glass selection while Morin placed his artisan signature upon each window, carefully cutting and manufacturing INSPIREDHOMEMAGAZINE.COM

them to completion. The windows were again packed, crated and transported to Idaho. Wallach and a highly skilled crew traveled to Idaho for the installation. “Looking back, this project was refreshing to work on,” Wallach explains. “The people were a treat to work with, and since they desired the best quality work, budget was not a hindrance.” “Working with the church allowed us to fall in love with the process and our art as a whole,” Morin recalls. “They approved the facial details and overall design work and never micromanaged us as artists. Instead, they allowed the creation to flow through us.” Morin explains the complexities of creating stained-glass windows in simplistic fashion, although the artistry and craftsmanship behind each work of art far exceeds his description. All projects start with a concept. A style of art is chosen, whether contemporary, traditional or Munich. Design work

follows. Then a color palette is labeled on the design. Finally, the manufacturing stage of the project can proceed by cutting the glass, building with lead, soldering, mudding and adding rebar and installation. “Over the years, Tracy has mentored me and allowed me to grow and nurture my artistic gifts,” Morin adds. “I feel grateful to have had the opportunity to work with him and to collaborate on this international project. God has truly blessed me with this artistic gift. To be entrusted with the responsibility of representing the faith of a church for generations to come through this beautiful artistry is an honor beyond words.” INSPIREDHOMEMAGAZINE.COM

daily three cups of coffee aren’t cutting it anymore. I realized what I was missing: movement during my workday. I began to do some online research and was concerned, though not surprised, with what I learned. As we all know, a sedentary lifestyle rapidly increases the risk of things like heart disease and diabetes. It can also increase the risk for cancer, obesity, hypertension and elevated cholesterol. What I didn’t know was that being physically active and working out regularly does little to offset the damage done during deskbound office hours. Those who are in good physical shape outside of work are still placed at higher risk because of long periods of inactivity during the day. Kelly Costello, an occupational therapist for RehabCare, is familiar with the risks of inactivity. “Seated jobs often require repetitive movements. For example, typing may lead to carpal tunnel, poor posture, neck and back pain; therefore, you need to change tasks often and change positions frequently,” she says. There are a few things you can do during the day to burn a few calories, keep your blood circulating and give your behind a break. • Keep your office cooler. This prompts your body to create its own heat, burning more calories during the day. • Increase your fluids. By doing this, you allow your body to perform at its optimum level of efficiency, which helps to promote healing, stimulate metabolism and promote good circulation. INSPIREDHOMEMAGAZINE.COM


If there is work you can do standing up, such as reviewing a report, do it! Stand up while eating lunch or while taking a 10-minute client phone call. This, too, gives your body a much-needed break from the office chair.

• Get up at least once an hour. Squeezing your glutes and holding for 10 seconds every hour on the hour builds strength in your gluteus that can support your spine, which leads to better blood flow and proper posture. Things like calf raises or chair dips also help burn calories and tone muscle groups that are otherwise stagnant in a seated position. • If there is work you can do standing up, such as reviewing a report, do it! Costello also recommends checking with your employer about ergonomic chairs or adjustable computer desks that can be raised or lowered so you can work while standing. She explains, “Often employers offer ergonomic assessments and desk setup. Many employers are required to provide these accommodations.” It is important to remember that these tips are by no means a substitute to actual exercise, so please continue your regular workout routine before or after hours. In the meantime, before you flip this page, stand up and move a little. Your body will thank you.

Your pet and allergies What you need to know for the summer season

ummer is upon us. The sun is warm, the grass is green, and the pollen and dust allergens are, well, everywhere. For many of us, summer means not only opening windows but also that pack of Zyrtec that’s been stashed away all winter. But itchy eyes, hives and runny noses don’t discriminate based on species. Humans are not the only ones affected by seasonal allergies. Animals can also suffer similar symptoms requiring the same medical treatment we undergo to get through a day tissue and itch free. Our boxer Rupert was a big allergy sufferer, sneezing and scratching almost every time we went out. We saw the vet after he began to develop hives, and he was prescribed a seasonal antihistamine. This prompted me to wonder how many other pets were suffering with seasonal allergies. To learn more about this topic, I spoke with Dr. Amy Anderson of West Fargo Animal Hospital. She explains, “Allergies are quite common in this

region. Usually, dogs are the most common species affected, but cats can have allergies, too. The most common signs are chewing and licking at the feet, scratching the belly, red skin or eyes, and ear infections. The scratching, licking and chewing may be especially noticeable once a pet comes inside after having spent some time outside playing.” There are several things you can do to alleviate your pet’s itchy season. Make sure a veterinarian has seen your pet so he or she can help identify what your pet may be allergic to. For example, if the doctor has identified that grass is a known trigger, at times, it may be best to avoid outdoor play. Take your walks on the sidewalk instead of a grassy area or take your dog to an indoor doggy day care to get in some extra playtime. It is also important to wipe your pet’s paws after being outside to remove pollen or allergens that may exacerbate symptoms. If the allergies are bad enough, medication can also be an option. Pets can take something seasonally or year-round if need be. Anderson continues, “Antihistamines are commonly used to alleviate itching and redness. Just like in people, different antihistamines work better for different pets. It is also important to note that the dose for pets is different than in people, so it is important to ask your veterinarian for the proper dose for your pet.” It should also be noted that it is rare for seasonal allergies to turn into something more severe. However, large and numerous hives, facial swelling and redness are more serious symptoms that need to be addressed right away. “This type of reaction is typically the result of interaction with insects or spiders, ingestion of a substance the pet is allergic to, or exposure to some other item that a pet is sensitive to,” says Anderson. “Dogs that are prone to allergies, however, are more prone to having severe allergic reactions from other stimulants.” If left untreated, severe symptoms can quickly escalate to respiratory distress or worse. Pay attention to your pet’s habits and symptoms, and always call your local vet before embarking on any type of medical regimen for your pet. Have a happy, hive-free summer!

O

n a recent early-morning run, I noticed this beautiful bird as the rising sun caught his brilliant white presence. He swooped down over me to perch confidently in a nearby tree. I stopped running and slowly approached him to get a better look. It was then that I noticed Fargo resident Jan Melby in her front yard. She began to tell me the story of their adopted “Willy” the white robin and his family. The robin family has nested in her family’s backyard for two years. The mother robin has normal coloring. Some of their young exhibit normal coloring while others have white patches on their feathers. Science lesson: Willy is not an albino, which is a total absence of all color, evident by his piercing black eyes. He displays paleness leucism, a genetic mutation that prevents melanin from depositing normally on feathers, producing the evenly paled color. herbanoo Aziz has led a colorful life, and her cooking and art reflect all that color. Born in India, she came to Washington, D.C., in 1973 with her three sons to begin work for the World Bank as assistant personnel officer for the East Africa region and as personnel officer for staff overseeing every country on the African continent.

In 1996, Aziz moved to Fargo to be near her son and his family. In semi-retirement, she went to work for the USDA as a rural economic specialist, which led her to work with then Senator Byron Dorgan on a similar program suited to North Dakota communities. In the midst of all this very serious work, however, Aziz was refining another, more creative culinary side. She says, “When I was in Washington, D.C., we would have potlucks in our offices. I cooked Indian food because that’s all I knew at the time. People loved it. Then I started doing demos. There was a place called Kitchen Bazaar in D.C., and from there I started to book parties—invite me to your home and I will teach people to cook Indian cuisine.” She continued cooking demos in Fargo, using her cooking talents to raise funds to purchase materials for an educational program she needed to help teach people English. As her cooking classes continued, she received requests to create a cookbook.

In India, Aziz did not cook with recipes because she grew up cooking without them. That is when luck stepped in. “Andrea Halgrimson was at an event I was doing, and she said I had been mentioned in the Washington Post. She offered to be my editor. She taught me how to write a recipe; it had to be an exact amount and exact time, how you itemize the ingredients and the way you cook them. That’s how I published my first book in 2001,” Aziz recalls. Aziz was surprised by how much interest there was in Indian food, and her book sold incredibly well. In fact, she has just come out with her third edition of Sherbanoo’s Indian Cuisine—Tantalizing Tastes of the Indian Subcontinent. The new edition has beautiful color photos, nutritional information and wonderful recipes that combine her Indian roots and her American life. In her cookbook, right next to Gulab Jaam (milk balls in syrup) and vegetable samosas is what Aziz simply refers to as “the best apple crisp.” Growing up, apples

Aziz rediscovered a love for painting once she came to America. She notes, “I was very fond of art as a child, but in India, we didn’t have art programs. When I finished high school, my father was ill, so we didn’t have extra cash for me to take special classes. We had a neighbor who was an artist who saw my work and was very interested in teaching me. I learned how to do some oil painting on silk for my sister’s trousseau. Then I went out to work and earn a living.” Aziz was teaching a cooking class at Dave and Carol Zielinski’s home when she noticed Dave’s art and commented on it; he invited her to join the Red River Watercolor Society. Her friend Donna Chalimonczyk encouraged her to enter a juried show. Her work was not selected, but it was a fabulous boost to her ego. She has been active in the painting community ever since. For Aziz, cooking and painting are all part of what keeps her going. She says, “One thing I think is very important is that rather than talking about aging, we should talk about maturing and reinventing ourselves. We don’t realize that we are always doing that—from youth to graduating from high school and college. Those steps are set up for us. Nobody does that for us when we get older. It’s very important to feel hopeful and keep reinventing oneself.”

Yellow Potatoes (Similar to Potato Salad) INGREDIENTS: 1 pound potatoes (about 4 medium) cup cooking oil ¼ teaspoon black mustard seeds ¼ teaspoon fenugreek seeds 1 hot green chili pepper (more to taste) chopped 1 clove garlic finely sliced 1 medium onion finely sliced 1 teaspoon ground turmeric 2 tablespoons lime or lemon juice ½ cup water Crushed walnuts and raisins for garnish Boil the potatoes. Let them cool. Peel and dice into ½ inch cubes. Set aside. Heat oil in a medium saucepan. Throw in the mustard and fenugreek seeds. As they sputter, throw in green chili peppers, garlic and onion. Fry on medium for about 3 minutes. Add salt, ground turmeric and potatoes and mix for 2 minutes. Add lime juice, water, cover and cook on low for 5 minutes. Potatoes will be mushy and bright yellow. Garnish with walnuts and raisins. Serve with puri, deep-fried unleavened bread and dosai, fermented crepes, (Chapter 6) or as part of an outdoor meal as potato salad.

lakes. Let the cool breezes of the water’s edge capture your imagination to help create a stylish lakeside event. The most important step in creating a truly memorable party is to keep it simple. Begin with a theme that ties the invitations, menu, music, lighting and tablescape together. Color is a key ingredient. Try natural hues such as green and white, fresh and full of life. Add beautiful details—white sand, white pebbles, white peonies and crisp white linens, dewy fresh limes, fresh mint leaves, green foliage, honeydew and green hydrangeas. Categorize the planning stage into easy-to-follow steps. Invitation: This is the foundation of your party. Choose something with a bit of class and a touch of whimsy, because this is the first place your guests are enticed to fall in love with the date on their social calendar. Menu selection: I recently served an easy and delicious hors d’oeuvres menu of smoked salmon with chive cream and gourmet flatbread, white bean dip with rosemary olive oil, baked Colby-pepper jack cheese sip served with sweet potato chips, brown sugar fruit dip with strawberries, pineapple and honeydew. Read your recipes a few times if trying new ones, and make sure they are not too complicated. I love a signature cocktail that carries your theme, such as mojitos with green mint leaves in pretty glass pitchers to serve to the guests as they arrive. Presentation: Make a list of your menu items in a hostess diary; include a shopping list and serving dishes next to each item. Make the food look attractive by using vintage bowls and crisp white dishes, and bring back classic sterling silver punch bowls as ice buckets for wine and other beverages. Gather white peonies from your garden and place in clear glass vases to add elegance to your tablescape and theme. Beautiful bar: Build a beautiful bar that reflects the feel of the event. Dress your table in a white linen tablecloth that gracefully grazes the ground. Arrange green hydrangeas in large vases, scatter white pillar candles in glass hurricanes and incorporate votive candles for a magical effect. Candles with strong scents— cinnamon, cedar, basil and thyme—will naturally repel insects at your event.

Music: A noteworthy and relaxed mood makes a first impression and should complement the atmosphere. Music sets the tone. Create playlists according to the theme of your cocktail party so guests feel the ambiance as they arrive. Pitcher of Mojitos Serves 10 INGREDIENTS: 10 limes, fresh pulp and juice 3/4 cup white sugar 30 leaves fresh mint, or to taste 1 cup white rum 1 liter club soda

White Bean Dip with Rosemary Olive Oil Rosemary oil adds rich flavor and color to this earthy dip. If you are short on time, top instead with kosher salt and olive oil. Prep and cook time: 20 minutes Yield: 2 cups (serving size 1 tablespoon) INGREDIENTS: ¼ cup olive oil, divided 2 cloves garlic, peeled and minced (add more as you like) 2 cans (15 ounces each) white beans (great northern, cannellini or white kidney beans) drained and rinsed 2 tablespoons fresh lemon juice 2 teaspoons kosher salt (add less or as you like it) 3 sprigs fresh rosemary, rinsed DIRECTIONS: In a 10-inch frying pan over medium heat, stir half the olive oil and the 2 gloves garlic until fragrant, being careful not to brown garlic, about 1 minute. Pour the oil and garlic into food processor. Wipe out the pan and set aside. Add white beans, lemon juice, and small amount of the salt to the food processor and whirl until smooth. Pour into a serving bowl. Return the frying pan to medium heat and add the remaining 2 tablespoons olive oil and the rosemary sprigs. Warm the rosemary in the olive oil until fragrant, about 3 minutes, stirring occasionally so the rosemary doesn’t burn. Remove from heat and let cool 10 minutes. Set the rosemary aside and drizzle the olive oil over the bean dip. Mince 1 tablespoon of the rosemary leaves and sprinkle over the dip.

DIRECTIONS: Muddle lime juice, sugar and mint leaves together in pitcher until leaves are well broken down and sugar dissolved. Add rum and lots of ice topped with club soda. Garnish with fresh mint and limes.

Brown Sugar Fruit Dip Brown sugar brings sweet goodness to the fruit dip. Pair it with any seasonal fruit. We prefer strawberries, pineapple and grapes. Yield: Makes about 3½ cups Prep: 10 minutes Chill: 4 hours INGREDIENTS: ½ cup firmly packed brown sugar 1 8-ounce package cream cheese, softened 1 cup sour cream 1 teaspoon vanilla extract 1/3 cup coffee liqueur (optional); we used Kahlua 1 cup frozen whipped topping, thawed Brown sugar to garnish Assorted fruit DIRECTIONS: Beat brown sugar and cream cheese at medium speed with an electric mixer until smooth. Add sour cream, vanilla, and if desired, coffee liqueur, beating until blended and smooth; fold in whipped topping. Cover and chill 4 hours. Garnish, if desired. Serve with assorted fruit.

nspired Home asked wine expert Chelsey Malstrom of Seven Sisters Spirits, Detroit Lakes, Minnesota, about wines for summer entertaining. Here are a few great beverage tips! “Choosing wines for any summer event can be overwhelming,” says Malstrom. “Just keep it simple! I recommend having a red, white and one sweet or seasonal option.” Chelsey’s personal favorites: Grooner: An Austrian white wine. A cross between a sauvignon blanc and pinot grigio, this wine is wonderfully crisp, bright white and perfect for entertaining.

The 100 percent Grüner Veltliner is Austria’s number one grape varietal, which hints of apple and citrus fruit. It pairs well with food, and it is great on its own. Chateau Ste Michelle Indian Wells Cabernet Sauvignon: This Washington cabernet sauvignon is one of my favorites year-round, but especially in the summer. Red wines from Washington and Oregon typically are a little lighter bodied but incredibly bold. This wine is very fruit-driven with concentrated blackberry and black cherry flavors. It is food friendly and perfect for grilling!

Lift your spirits Colby-Pepper Jack Cheese Dip Prepare up to a day ahead; cover and chill in an airtight container, and bake just before serving. Prep: 15 minutes Bake: 30 minutes Makes 10 servings INGREDIENTS: 1 8-ounce package cream cheese, softened 2/3 cup sour cream 1/3 cup mayonnaise 1 tablespoon finely chopped canned chipotle pepper in adobo sauce 2 teaspoons chili powder 2 cups chopped cooked chicken 2 cups (8 ounces) shredded Colby-jack cheese blend 1 4-ounce can chopped green chilies 4 green onions, finely chopped 2 jalapeño peppers, seeded and minced ¼ cup chopped fresh cilantro Fresh cilantro sprig to garnish Tortilla and sweet potato chips DIRECTIONS: Preheat oven to 350 degrees. Stir together first 5 ingredients in a large bowl until smooth. Stir in chicken and next 5 ingredients until blended. Spoon cheese mixture into a lightly greased 8-inch square baking dish. Bake at 350 degrees for 30 minutes or until bubbly. Spoon into a serving bowl. Garnish, if desired. Serve with tortilla and sweet potato chips.

P

astry chef Nichole Hensen and bars, pronounced with a long, Northern “sss”, are two things that do not seem to go together. Napoleons, croissants, lovely lemon tarts—yes, definitely. A recipe with Rice Krispies as the central ingredient—I wouldn’t have believed it until recently. When I stopped by Hensen’s home kitchen to talk simple desserts, she had her first published recipe on the counter. Her high school effort, “Best Bars Ever,” was published in the 1990 Glenburn Trinity Lutheran Cookbook. With a sheepish smile, she added, “It’s a little retro.” Glenburn is the little town outside of Minot, North Dakota, where Hensen grew up on a farm. Although surrounded by fresh food, large gardens and a grandmother who worked as

a restaurant baker, she doesn’t recall any overt interest in cooking and baking as a child. Later, while finishing her business degree at the University of North Dakota in Grand Forks, she found herself working in a deli and immediately took to it. “The atmosphere and the enthusiasm from customers” was energizing and fun, she says. The necessary organization and hard work of a kitchen felt like home to this farm girl. Post-college, she studied pastry at the Culinary Institute of America’s Greystone campus in northern California and returned to Fargo open Nichole’s Fine Pastry. Those of us who have been eating Hensen’s pastry for the past 12 years may be initially surprised by a recipe that uses only a saucepan and takes less than 20 minutes to prepare. However, Hensen advises that “good food doesn’t have to be complicated.” “Flavor counts,” she says. “So does

But otherwise, why stress over it?” Although called “scotcheroos” for the butterscotch chips added to the chocolate frosting in the original, Hensen upped the ante with an elegant chocolate ganache. Chocolate ganache, a workhorse in the pastry kitchen, is chocolate and cream, warmed and whisked together to make anything from a glaze to a cake filling or frosting, depending on the ratio of chocolate to cream and the temperature at which it is mixed together. So make a homemade treat that a pastry chef will serve. As Hensen says, “You can take the girl out of the farm,” but the farm stays with this girl. For occasions requiring something more complicated, Nichole’s Fine Pastry is always a sensible plan.

Nichole’s Retro Scotcheroos Serves: Makes a 13-by-9-inch pan, enough for 15–20 bars INGREDIENTS: ½ tablespoon butter for the pan 1 cup granulated sugar 1 cup Karo syrup (12 ounces by weight) 1 cup peanut butter 2 tablespoons butter 1 teaspoon vanilla 6 cups Rice Krispies 1 cup heavy cream 1 ounce granulated sugar 1 ounce butter 8 ounces bittersweet chocolate, finely chopped, or use chocolate chips DIRECTIONS: In a medium saucepan, heat the sugar and Karo syrup to a simmer or until the sugar is dissolved. Do not boil. Add the peanut butter, butter, and vanilla to the pan and mix until well blended and smooth, maintaining medium heat. Measure the Rice Krispies into a large mixing bowl. Pour the peanut butter syrup mixture over the cereal and fold in until uniformly mixed. Pour into a buttered 13-by-9-inch pan and press into an even layer. Let cool. To make the ganache: Scald the cream and add the sugar and butter. Pour the hot cream over the chopped chocolate and whisk until completely smooth. Let it cool and thicken to your desired frosting consistency. A stainless steel prep bowl will cool the ganache quickly. Frost the bars, and let the bars cool to set. Cut and bring to a party! These will definitely last a few days when wrapped and left at room temperature.

According to recorded history, nearly every civilization has used flowers in the form of food, including the Incas, Aztecs, Hindus, early Romans and Asian cultures. Tangled pea vines and roses are depicted on Bronze Age artifacts. Carnations are used to make Chartreuse, an old classic French liqueur. Leonardo da Vinci himself penned his own rosewater recipe. Flowers and their seeds were just as important during the spice trade as spices like cardamom, cinnamon and mace. Floral Ice Cubes INGREDIENTS: Edible flowers, such as orchids, violets, nasturtiums, pansies and snapdragons, that have never been treated with chemicals. Water. For crystal-clear ice, use distilled water that has been boiled and then cooled. This will eliminate impurities and air bubbles, which make cloudy ice. DIRECTIONS: To suspend flowers in the cubes, work in layers: Fill an ice tray (large cubes will last longer) a quarter of the way with water. Add flowers, facing down, and freeze. Add more water to fill halfway, and freeze. Fill to the top, and freeze again.

very late winter into early spring, I resolve to become a “real” gardener. I determine that we will get ahead of the weeds; we will remove the terrible rocks that are piled on top of clearly failing weeddeterring paper that is laid over another pile of terrible rocks. We will create a tranquil oasis that is our backyard, and it will be glorious. That’s late winter into early spring. Then one day, every mid-spring, I wake up, and the weeds have completely taken over the yard, the rocks appear more firmly embedded into the worthless paper, and I give up in despair before I ever really begin. My grandparents had a glorious yard. It was mostly gardens—flower and vegetable. One wild-flower garden wended its way into a wonderful jungle of tomato plants and cornrows that moved into sky-reaching sunflowers and more. There were little paths that ebbed and flowed with the gardens, flat rocks to skip over and wooden boardwalks to run down. The flagpole stood at attention in front of the hobby barn, and pretty geraniums surrounded the miniature Dutch windmill. Birds and bees buzzed and darted in and around the whole yard, making it feel like a wonderland, and the earthy, floral smells were abundant. But do you know what else I distinctly remember about being out in that garden? My grandparents were both always there, too. These gardens didn’t magically tend

themselves. Taking care of them and making sure they were watered, weeded and cared for was a full-time job. Well, I already have a full-time job, and nothing in the job description mentions gardening. And there’s the issue of desire. Many summer mornings, I wake early and could choose to spend a little time in my backyard, but if I am in the middle of a good book, there’s no way I will pick weeds over reading. As I dig deeper into the pages, the weeds dig deeper into the soil. Last summer, our backyard played host to two big events—our son’s graduation party and a house concert. We put up chairs and tables, moved some pots of flowers into pretty arrangements, and hoped no one would notice the less-than-stellar flowerbeds. One of the kindest things anyone has ever said to me was, “I sat in your yard last night, and it was so beautifully manicured. It was a perfect setting for a wonderful event.” You could have knocked me over. Where I saw the sad little bunch of wildflowers struggling to grow and the somewhat outof-control hostas, he saw a welcoming place where good music, food and conversation happened. Maybe I’m a better gardener than I give myself credit for. I will always long for a beautiful yard and gardens, but it’s really the people who are there that matter, and they are firmly planted and being well tended.
