An NDSU speech communication graduate, she lives in Fargo with her intelligent rescued dog, Jake.

dayna del Val Del Val is the executive director of The Arts Partnership, where she writes a monthly column on the arts for The Forum, manages two staff members and an active board, and works to support the mission of cultivating the arts in our community through a variety of ways. In other words, she wears 27 hats! She is also a professional actor and writer. She lives in Fargo with her husband and their golden retriever, and she loves when her college-aged son is home on breaks.

Zainah haider Ever since she was young, Haider remembers her parents always taking pictures. “They have inspired me to love photography. We get pretty competitive when we travel, and we see who can take the best pictures,” she says. Competition or not, Haider says she will always love photography as an art form.

ashley F. Johnson Ashley Ferragut Johnson, formally from Oklahoma City, has found her way back into the heartland. Living once again in her beloved Fargo— with husband, and two children, she is a Registered Nurse at Sanford Medical Center and writer. She lives for her family, to travel and taste great food and wine. She views life as an adventure, and can't wait to show her children the world. Phil sTahl Stahl began his lifelong passion for all things creative in South Dakota, where time and long landscapes are plentiful. An NDSU architect graduate, with emphasis in art/photography, his two-decade practice with Stahl Architects has led him places to observe life, including Europe and the Middle East. He is an adjunct lecturer at NDSU, national speaker for Intern Development, a regular contributor to regional and national home magazines, and has been featured on HGTV and in Dwell. yVonne denaUlT Yvonne is a women's portraiture photographer, creator of Pinup on the Plains, and owner of Vivie's Boutique. Empowering women to embrace their beauty is what fuels her passion. She is inspired by high-fashion editorial and "fantastical" fine art photography.

Zach daVis Davis loves capturing stories with his camera. He is a photographer and videographer who specializes in weddings and portraits. He has a weakness for wanderlust, feeling the urge to leave the country whenever possible. He currently curates The Open Window Exchange, a collaborative online travel journal. pring reveals itself to different people in different ways. For me, it was the anticipated first sighting of tiny green shoots boldly announcing their arrival in my garden. We are excited! As spring trumpets itself around us, we again begin to busy ourselves with projects, agendas, and new tasks to complete around our homes. It is also time to rekindle the warm weather relationships of gardening, lake living and family vacations. As the earth warms, area gardeners emerge out of their winter cocoons and begin fostering the welcomed transformations in their backyards. In this issue, Inspired Home explores growth on many levels, from flowers and planning outdoor landscape lighting to designing highly functional outdoor living spaces. We will traverse our healthy obsessions for the short-lived warm days of spring and summer to discover the inspiring reasons why our outdoor spaces are so very important to us Northerners. Every year, a group of dedicated women combine their love of gardening with their desire to empower area women to lead rewarding lives. Inspired Home encourages you all to get out on Thursday, July 13th and attend the 2017 Annual Soroptimist of Fargo Garden Tour. Mark your calendars. You will be glad you did! Contemplating new 'firsts' A sentimental review of life and family BY Bernie erickson

N

ow that I’m almost as close to age 80 as I am to 25, there’s always gratitude for any firsts in life, especially firsts that are a positive experience, like zip-lining in a rain forest or going a whole winter without falling on the ice. (Better than a colonoscopy first.) Exciting firsts are happening. My son is getting married this spring and my daughter this fall. Back in the day, rings were purchased, the date set, an announcement ran in the local paper and planning began. Engagement pictures were taken with a Kodak pocket Instamatic and sent to the drug store for developing. There was a trip or two to Fargo to the 18 | MAY/JUNE 2017

mall stores that had bridal departments, or a selection was made from the wedding section in the J.C. Penney or Sears catalog. Someone’s mom, aunt or grandma had spectacular sewing skills. She could whip up half a dozen bridesmaid dresses in a pastel cotton candy color with big, poufy sleeves, a 12-inch ruffle on the bottom and a giant bow on the backside. Nothing is more flattering than a giant bow on the backside. The men were sent to a suit store to rent their tuxedos in a coordinating cotton candy pastel, a white shirt with ruffles trimmed in matching color, topped off with a butterfly bow tie almost as big as the bow on the bridesmaids’ backsides.

Weddings were held at the bride’s church at 2, 4 or 7 p.m. The women of the congregation had organized workers to prepare, serve and clean up after the reception in the church basement. The lunch consisted of buns with ground ham, olive and mayo spread and cinnamon swirl bread with Cheez Whiz and sliced olives. Olives must have seemed exotic in those days. Salads were served with combinations of the following: Cool Whip, fruit cocktail, mini marshmallows, coconut, chopped walnuts and Jell-O. Mints made of Crisco and powdered sugar dyed to match the cotton candy colored dresses were served alongside a bowl of mixed nuts. INSPIREDHOMEMAGAZINE.COM


Both of my kids are getting married in barns— actual, refurbished livestock barns, one in Washington state, the other in Minnesota lakes country. There’s a whole generation of kids who think that’s the place to get married these days. Who knew?

Beverages were a fruit punch served by someone’s favorite crazy aunt and scalding hot black coffee the color of weak tea with the richness of boiled water. Some local guy took pictures. A friend with a new video camera was everywhere, and the cost of the event didn’t put any younger siblings’ college education at risk. And that was that. Fast-forward 30 years. My kids are barely two years apart, have markedly different personalities and yet have done a lot of things in life in tandem. The fact they’re getting married less than six months apart isn’t all that surprising. Both are done with college and settled into their careers, so I’m uncharacteristically keeping my mouth shut and watching all this unfold. Now, the wedding process begins with an engagement photo shoot by a professional photographer—three costume changes, three venues, perhaps a cherished family pet included with a minimum of 300 images to select from. More images are taken on the wedding day. I’ve only seen a few episodes of that bridal show “Don’t Frown on the Gown,” but that’s enough. after dress. I’ve seen a picture of my daughter’s dress, and I was pleasantly surprised; it’s movie star beautiful. Some things don’t change. Men still silently march off and rent tuxes in a style predetermined by the bride, or they purchase big-boy suits, also bride approved. Any man old enough to get married needs to have a big-boy funeral suit in his closet. I’ve been instructed navy suit for one wedding, rented tux for the other. No, I would not like a tux vest color change between the ceremony and reception, but don’t let that stop the other guys. After reviewing several potential meal combinations, I can report with certainty that buns with grayish ground meat spread and Cool Whip salads are not in vogue. Wild Alaska silver salmon, Australian lobster tail, Pacific ahi, coconut prawns with steak and kalbi chicken are just a few options available at the event center. I cannot imagine how one of those Lutheran church ladies would have responded had she been requested to bring two dozen Pacific ahi to the Erickson wedding Saturday evening. The start of summer brings so many firsts—young graduates starting careers in new cities and families like ours gaining new sons and daughters. There are old dads shedding a tear or two, reflecting on fond memories and joyfully anticipating more firsts as new lives unfold. All my best to Brandon and Katy and Adam and Valerie. If you think things are good now, just wait. It gets even better!

When considering outdoor lighting, there are a few tips that can help cast your home in the best light possible. First, determine the outcome you are looking for. Is your goal to illuminate pathways and patios to prevent slips or falls or to light up your backyard space for weekend entertaining? rowing up in North Dakota, I spent a lot of time with my siblings and cousins at my grandparents’ farm. We explored fields, river and wood. We meandered through barns full of giant tractors and combines, making us feel Lilliputian. One of my favorite smells still today is Grandfather’s workshop—a mix of oil, wood and old metal. Crawling up into the attic above to view old photos of family born and passed was an intriguing way to spend a summer afternoon. After exploring, we would run to the farmhouse, where Grandma would offer us homemade lefse and old-fashioned doughnuts. I never lived a day that I didn’t appreciate my family, but it wasn’t until I grew older that I began to understand my heritage more deeply and to value the faces in those old photos. This past summer, I was fortunate to embark upon a triplegeneration trip to Norway with my three siblings, grandparents, parents, husband and brother-in-law. We met family, shared stories and ate our way through the beautiful country where our family originated. Today, only 28 original Stave Churches remain in Norway. The Gøl Stave church in Oslo circa 1212 reflects the beauty and inspired influence of dragons and pagoda-style architecture the Vikings experienced during their Asian raids.

This pastoral scene is common throughout the Norwegian countryside. Sod roofs boast life with plants of strawberries, elderflower, grass, and herbs. The rustic charm of the traditional Norwegian ‘skigard’ fence incorporates slanting rails of split spruce between upright poles.

Built before 800AD, a closer look at the Øseberg Viking long boat reveals Norse artisan carvings in complex intertwining patterns of serpants, horses, wolves and birds.

Norwegian studies of the ship revealed 2 female skeletons clad in wool and silk suggesting high status—possibly a queen and handmaiden. Thirty-two brightly colored shields were mounted on either side—an intimidating sight to see on the horizon.

The first few days we spent in Oslo, founded by King Harald III in 1040. It is a city steeped in history and rich heritage. We explored Frogner Park and marveled at artist Gustav Vigeland’s 212 sculpted granite and bronze bodies all depicting the human condition. We stood in awe as we viewed the famous and elaborately carved Oseberg longboat at the Viking Ship Museum in Oslo. Unearthed by a Norwegian farmer in 1903, the Viking vessel dates back to A.D. 834. The remains of two women found in the ship were clad in silk and wool, suggesting their high status, a Viking queen and her maiden. I garnered in earnest every aspect of my Viking heritage I could absorb. Learning the history of Norway was important to me as was experiencing its cuisine. Food sheds light on the country’s heart, and so we ate. After filling our bellies with Norwegian salmon, scallops and monkfish in Oslo, it was time to meet our Norwegian family. Asbjørn, my grandfather’s cousin, became our fearless leader and guided us through one leg of our journey. Upon arriving in Øyer, a farming and logging region, our relatives greeted us, offering warm smiles, hugs, nervous elation and strong black coffee and open-faced sandwiches of cheese, tomato and red pepper. Our arrival in Flåm overlooking the steep valley sides of the fjord where I said to myself, “So, this is Norway”—so much beauty—wildflowers, fjords and midnight sun. Three generations of hungry American-Norwegians enjoying a festive traditional Viking meal complete with reindeer, cockles, and of course øl or beer. One of the most scenic ways to travel throughout Norway is the Flåmsbana. One of the steepest gradients of all European railways, it meanders through steep granite mountains. One of our goals was to swim in as many fjørds as possible. Here, is my brother Gabriel fulfilling his dream. The crystal clear water was a chilly 50 degrees!

A ferry ride from Flåm to Balestrand allowed us to explore the Sognefjørd, carved from glaciers and deposited sediment. To be flanked by towering mountainsides in the narrow ocean inlet was breathtaking! The Briksdalen glacier- a beautiful contrast to its turquoise waters, (rock flour) due to rock sediments ground together over time. The suspendered sediments refract sunlight producing the milky blue-green glacial water. Looking out upon the fjørd in Balestrand where the Monkfish and cockles, part of our 5 course meal at the Kviknes Hotel, had been caught earlier that day.

came from a neighboring farm. Scrambled eggs with tomatoes, flat bread and a plate of assorted summer melons accompanied our meal. Then came the rømmegrøt. I grew up eating rømmegrøt, but this was deliciously different. Norwegians use sour cream with a high fat content, creating a tangy, creamy flavor. Served with raisins, sugar and cinnamon in delicate floral china bowls, it was a treat. As we finished our meal, the sight of Norwegian lace hanging delicately from the window overlooking the Lågen River is a memory I will never forget, the same view my great-great-grandfather and his family had appreciated. Our picturesque train trip north to Flåm renders words useless. We wound our way through mountains that ended dramatically in the beauty of the steep valley sides of the Nærøyfjord. There we experienced our most traditional Viking meal at Aegir Brewery, architecturally inspired by historic Viking lodges. We dined on mussels, cockles, smoked reindeer with blueberries, pork shank with mashed potatoes and gravy and a Norwegian favorite, øl, or beer. Later, we christened ourselves by jumping into the clear, freezing water of the fjord. Onlookers stared at us with open jaws, as if we were crazy. I cannot speak to our time in Norway without the mention of a favorite meal— the traditional Norwegian breakfast. Laks og eggerøre, or smoked salmon and eggs, is a classic. We enjoyed cheeses such as Jarlsberg, brunøst/gjtøst, cheeses specked with spices and for the adventurous, gammeløst, made •Decorative Concrete Patios, Pool Decks, Sidewalks and Driveways of soured milk. The open market in Bergen, abundant with fresh seafood of all varieties. We meandered through vendors tasting cod, smoked and fresh fish, Norwegian cheeses, fruits, vegetables, and if you were lucky…cloudberries. A stunning view from our hike down Briksdalbreen Glacier. An overwhelming mix of wildflowers, gushing rivers, waterfalls, and high-walled mountains.

Traveling north by ferry from Flåm to Balestrand, we explored the Sognefjørd, where we had another short swim in the clear 40-degree glacial waters. To warm up, we dined on crayfish and monkfish fresh from the fjord, served with parsnips, pickled cucumber, fennel and barley. Other family members enjoyed loin of veal nestled with cabbage, potatoes and cardamom. We looked out at the water where our food came from, shared family stories and enjoyed the surreal feeling that we were actually experiencing this. In a way, visiting Norway was similar to those years at the farm, exploring every nook and cranny with a sense of nostalgia and wonder. Our wonder came full circle meeting the relatives of the faces in those old photos in Grandpa’s workshop.

Surrounded by the country’s deepest and longest fjørd, Bergen, a World Heritage site, was a trading empire from the 14 –16th centuries. Fires plagued the vulnerable wooden buildings over the centuries, but reconstruction has traditionally preserved the iconic image of Bergen.

“Hot Tips” for Summer Safety and your Pet

ummer is here, and while you’re outside taking long walks and enjoying family barbecues on warm days, be mindful of your furry family members. We reached out to Dr. Amy Anderson at West Fargo Animal Hospital to review summertime safety tips for our furry friends. It’s no secret that a long walk in the wilderness usually ends with thoroughly checking ourselves for ticks. We need to be checking our pets, too. “Use your hands and thread them through the fur so that you can feel the skin. Ticks are most commonly found in areas where the hair is thinner, even on thick-coated breeds. Check their entire face, ears and around eyes, between the toes, under the tail near the anus and in the armpits and groin,” says Dr. Anderson. If you do find one of those blood-sucking nuisances, don’t panic.

Grab the tick nearest your pet’s skin and pull up and away. Dr. Anderson says it’s important not to leave any of the tick’s mouthparts behind, because prolonged inflammation or infection can result. If reading about the creepy crawlers makes you cringe, purchase a tickremoving tool to ease your angst. During hotter days of summer, be mindful of the outdoor temperature. Just like their human counterparts, pets can succumb to overheating. Keeping your pets hydrated and cool is paramount. Dr. Anderson warns that a pet that seems confused or wobbly or has red, dry and sticky gums may be in trouble. Certain breeds are more susceptible to temperature-related illness. “Black dogs tend to absorb heat more quickly and are at the highest risk; however, any dog could be

susceptible to heat stroke,” says Dr. Anderson. “Also, brachycephalic dogs, such as bulldogs or pugs, are at a higher risk because they do not pant as efficiently as other dogs.” Dr. Anderson also encourages properly groomed pets for the summer months. Some dogs’ thick coats are meant to insulate and keep them cool; however, pets that have matted, dirty coats are unable to release body heat. Lastly, what would summer be without redcheckered tablecloths, endless side dishes and a charcoal grill full of steaks and hotdogs? While sipping your cold beverage and reaching for your second shish kebab, take inventory of what is where, including your pet. Dogs do not discriminate when it comes to food, and what seems like a harmless taste test can lead to more serious complications. Dr. Anderson INSPIREDHOMEMAGAZINE.COM

adds, “The most common problem we see with barbecues are pets licking the grease tray under the grill. Dogs seem to have a sixth sense for finding this amazing tray of wonder, and often pancreatitis—or at the least, severe vomiting and diarrhea—is the result.” She also advises families to use caution when barbecuing with skewers. Pets can easily attempt to eat the sharp wooden dowel, leading to perforated or punctured bowels. It’s also possible for your pet to ingest charcoal remnants, which can retain heat. The grill itself may cause burns if a tail wags too close. An overlooked danger is food that has been sitting in the sun too long. You wouldn’t eat egg salad that had been sitting in 90-degree heat for two hours, and neither should your pet. Food left in the “danger zone” too long can grow harmful bacteria, Dr. Amy Anderson causing food poisoning to you and yours. Keep desserts away from Rufus, too. Chocolate and dairy can upset your pet’s stomach. This leads us to Dr. Anderson’s last summer safety tip. Those scoops of soft serve sold at your favorite local ice cream parlor may look delicious to your pet, but Dr. Anderson advises keeping the sweet treats away from your dog. “Many dogs are lactose intolerant, and this may lead to gastrointestinal upset, like vomiting or diarrhea,” she says. “A great cool treat for the summer is to freeze some dog treats and toys in a large bowl of water and then release the block of ice on the ground outside and let them work on it to release the treats.” Enjoy the summer sun, throw another burger on the grill, and remember that a hydrated dog is a happy dog! ocated in River’s Bend, a graceful white home with a welcoming porch is the essence of classic beauty and functionality. Designed and built by homeowners Nick and Kirsten Waverek, it is refreshing with clean lines, simplicity and elegance. Completed in 2016, the six-bedroom, three-and-a-halfbath home boasts 4,968 square feet of living space. White LP SmartSide siding and square architectural columns offset a black entry door and inviting front porch with two rocking chairs. “We set out to create something not typical to Fargo,” Nick admits. “The design ideas were easy, but finding the right location was challenging. Ultimately, we chose our Classic in white, the home’s exterior features it’s unique room-in-the-attic design, with interesting roof lines and architecture and a welcoming porch with paired columns and an 8-foot black entry door.

Down the hallway, the kitchen is visually and masterfully designed to entertain and function flawlessly with the dining and living room. White subway tile, cabinetry and quartz countertops offset polished nickel hardware, stainless steel appliances and shaded pendants above a grand 9-foot island. chairs coordinate with the living room sofa. Carrara tiles frame a gas fireplace with a crisp white mantel and built-ins. Abundant natural lighting lends warmth to neutral furnishings and white oak flooring, while pillows, artwork and a chenille/jute rug add color and texture. “We like things classic but minimal with clean lines and a spacious design,” explains Kirsten. “Having a place and purpose for everything keeps rooms organized and clutter-free.” The Wavereks chose a navy textured headboard for their peaceful, light, bright master bedroom. Their master closet defines an everything-in-its-place resolve, as does the master bath, which skillfully combines rectangular shapes in mirrors, flooring, lighting and a free-standing bath tub. Above the entire main level and tandem four-stall garage is an expansive second story built within high-pitched roof trusses. The room-in-attic design enhances exterior perspective while incorporating interesting lines and character to interior upper rooms. Six-month-old Louisa’s sweet bedroom features a soft-as-puppy-ears rug and a dove gray chair for cuddling. Two-year-old Soren loves lake time, so framed sailboat prints and a nautical-themed bedroom are perfect. A neutral canvas teepee, cherished teddy and a red mid-century table for favorite bedtime stories keep treasures close. “We appreciate white space and use it like a blank canvas to incorporate flexible details,” Nick adds. “Fifty years from now, we hope that others will enjoy our design decisions and easily make it their own.” Cozy and inviting, the lower level features a bar area with navy cabinetry. Quartz countertops coordinate with metal pendants Tranquil and peaceful, Louisa’s nursery is as soft and sweet as her cherished stuffed elephant and puppy-soft accent rug. Two colorful sailboats, a child’s stool for storybooks, and a striped shower curtain create a whimsically-designed kid’s bath.

A guest bedroom, living room, bathroom, fitness room, utility room and additional storage complete the downstairs. “Our home came together with help from incredible family and friends as well as a tremendous crew of contractors and craftsmen,” Kirsten notes. “Stepping into the role of a client while building our own home, I found myself at a crossroads, making decisions and being open to options Nick presented. It gives me a sense of pride, but it was also a learning, communicating and compromising process as a couple.” For nearly a decade, Kirsten has designed, built and remodeled homes. As the co-founder and designer of Studio West Homes with business partner Elliot Steinbrink, a general contractor and construction manager, they combine their architectural background and expertise in crafting custom homes with uncompromised quality.

Near the home’s entrance, the mudroom has wonderful tuck-away cabinetry to keep necessary items out of sight. White oak flooring throughout the main floor is virtually maintenance free.

Nick, who is part of CoSchedule, a software startup company, says that he has gained a new respect for the work Kirsten accomplishes every day. “Her integrity and passion shows in every client’s home and also in the friendships we’ve gained,” he says. When not focused on business, the couple enjoys relaxation time at the lake, exploring Fargo with their children and working together on home projects. Simplified, traditional and highly organized, the Wavereks’ home suits their blank-canvas, easy-style preference.

Touches of green provided by plants in the Waverek home add charm and interesting color. The bright and white freshness of the home creates a beautiful backdrop for the soft greens of mother nature.

The higher the copper content, the deeper the red or pink hue. The less copper used, the softer and more delicate the shade becomes. Its popularity soared in the late 1920s when Cartier released its famous Trinity Band, a ring made from three interlocked bands of rose, white and yellow gold. tepping into Dalbol Flowers, I was welcomed by a honeyed atmosphere, as though the store had been removed from the wintered brown earth and placed delicately in a meadow. Green peeked from every corner and crevice, filling up tables, shelves, floor space and anything left over. Florists diligently worked on arrangements behind the register, delicately arranging stems of flowers in vases with peaceful, dedicated concentration. Two small tables at the front of the store were covered in binders and books full of floral The classic rose gold metallic vase, made edgier with the tarnished appearance, bursts with soft whites, deep magenta, and emerald greens. A closer look reveals snow-white hydrangeas, oriental lilies, seeded eucalyptus and oregonia with delicate lavender wax flowers, providing texture

Built upon a foundation of greenery, this arrangement begins with the body and texture of oregonia and seeded eucalyptus with stems that elegantly bend out of the vase, free flowing.

A florist at Dalbol Flowers, Karsnia believes in the power of plants. Requests change from day to day, allowing her an opportunity to expand her creativity with each new arrangement. This floral designer’s go-to flowers are white hydrangeas, a versatile choice that complements any bouquet with volume and simplicity. Her next choice is bupleurum, clusters of delicate yellow flowers contrasted against bright green foliage, followed by hypericum berries, delicious little spheres that add texture to an arrangement. She shared these three varieties with me to enjoy together with sunny daffodils, colorful gerbera daisies, blooming garden roses and peach double-bloom tulips. Each floral addition to the table brightened her mood as she toyed with the stems, laying them in a free and natural grouping instinctively. The verve the flowers emitted was palpable, elevating the mood of the space instantly. Karsnia encourages people to play with flowers and use their personal tastes in color and texture preferences to create beautiful floral pieces. Whether it’s a vase of red roses on the middle of the dining room table or a stalk of hydrangea in a water glass atop the nightstand, flowers exude a sense of serenity, liveliness and therapeutic healing. By giving flowers, you are showing intentional care and consideration for another person. When receiving flowers, you feel these emotions through the vivacity of each stem, leaf and petal.

Spring Inspirations Delectable edibles from Mother Earth BY chef granville WOOd

T

romping through the woods in my wellies, the sodden earth releases the wonderful smell of spring—the smell of wet, rich soil, a subtle sweet smell, akin to manure, but not offensive. It is the smell of things to come as the sun warms the dirt, releasing its potential for rebirth. Spring is like finding the child within us. I enjoy the mire, the wet messiness of it all. It holds the amazing secrets the earth reveals after a harsh, cold winter, like the tender sprouts poking through the once frozen soil. As the ground releases its icy grip on perennials, the cycle of rebirth starts all over again. The sap is flowing, and it is time to tap the trees to make my favorite liquid gold, maple syrup.

Sheep are lambing, and everywhere there is a riot of color and an abundance of virile energy. For the farmer, in the words of Bob Fosse, “It’s show time!” Noreen Thomas of Doubting Thomas Farms is a devoted organic farmer and a gatekeeper of ancient knowledge. She possesses a passion for her craft and for sharing it with others. Perched on the banks of the Buffalo River north of Moorhead, this working farm has been in Lee Thomas’ family for more than 100 years. But it wasn’t until the tenacious Noreen convinced Lee to convert 1,200 acres to organic that it received the name Doubting Thomas. Neighbors were doubtful it could be done, but Noreen proved them wrong.

Wine Wisdom Rosé season is upon us! This is truly my favorite time of year. Fresh, vibrant, pink wines make there way to our store- perfect for patios, decks, picnics, and pontoons. I start the rosé selection process up to 6 months before the wine is scheduled to arrive to make sure we have the best selection around. This year I am proud to offer over 70 rosé wines store wide! Rosé wines range from bone dry to slightly sweet.

Mas Donís Rosat 2016 This Spanish Rosat is a blend of 4 different varietals, Grenache, Carignen, Syrah, and Merlot. Hints of smashed strawberries and white pepper on the nose. Mas Donís Rosat is clean and crisp on the palate with a bone dry finish. The Rose Garden Rosé 2016 From the Cape of South Africa this rosé is also a blend, although it does not specify, I believe it’s a Cabernet, Merlot, Shiraz blend. The Rose Garden is very fruity on the nose, strawberry and watermelon. Those flavors follow through to the palate, bursting with juicy freshness.

Lion's Mane mushroom Under strict organic methodology, this farm produces rolled oats, barley, oat berries, wheat and heritage corn, some of which is shipped to Japan and some to Organic Valley. Noreen also grows sacred corn for the White Earth Chippewa. In a spiritual ritual, the Chippewa call on the seeds to “wake up, grow strong and tall.” This spirituality and connection to the earth are evident in much of what Noreen produces. Doubting Thomas is more than just a farm; it is also a sanctuary for people living in hospice care and assisted living to get out and enjoy nature. With the assistance of interns, the aptly named Garden-Able project comes to life in late June, allowing people to pick vegetables and flowers. Local Boy Scouts built raised beds, allowing those in wheelchairs to come face to face with nature. Aromas of mint, basil and myriad blooming flowers fill the warm country air for a pure sensory awakening. With degrees in food nutrition and microbiology, Noreen fostered “strange ideas,” according to associates in Bismarck, which led her on the road to organics and a curiosity for the production of mushrooms. cremini mushrooms Lion’s Mane. This exotic variety tastes mildly like shrimp. It is grown on a mixture of wood chips, grain spawn and bran. Predominate in Asian culture, it is believed to have strong medicinal properties and a positive effect on cognition. Cremini, chanterelles, morels and lobster mushrooms round out her mushroom production. Back across the Red River and south of Fargo, another soulful lady is in tune with nature. Mara Solberg and her husband, Warren, raise organic, free-range chickens and sheep. I visited their farm recently during lambing season. Filled with 24 head of sheep, an extraordinarily large goat, a horse, some geese and several bouncing lambs, the backyard was a sight to see. As Mara threw out hay, the precocious lambs fought their way under the larger animals to get their share. Like Noreen, Mara treats all her animals humanely and feeds them natural foods. You can meet these two lovely ladies at the Red River Market Saturdays all summer in downtown Fargo. I like tromping through the woods in spring, foraging for good things to eat like ramps and fiddleheads, and then I like cooking them. A favorite dish is a bowl of wild mushrooms and herbs in mushroom broth, shabu-shabu style with paper-thin slices of well-marbled steak. Another preferred dish is roasted leeks with goat cheese and hazelnuts.

Roasted Leeks, Goat Cheese and hazeLnuts Nothing says spring like fresh ramps, the elusive wild onion. Some think they are baby leeks, but they are actually a member of the onion family. Young leeks make for a satisfying substitute. This is a two-phase cooking procedure, and we utilize the whole leek. We blanch and roast the tender white part while we use the tough green part for a sauce. SERvES TWO

INGREDIENTS 2 fresh young leeks of a small diameter. Look for bright green tops with little browning. 1 large shallot, peeled and coarsely chopped 2 garlic cloves, peeled and coarsely chopped Juice of 1 lemon ¼ cup dry white wine 1 cup vegetable stock 1 pint heavy cream Kosher salt and white pepper to taste

Olive oil for brushing ½ cup goat cheese ¼ cup sliced or chopped hazelnuts ½ teaspoon fresh parsley leaves, washed, no stems ½ teaspoon red pepper flakes METHOD Cut leeks where the green meets the white. Do not trim away the root end. Reserve the green tops.

Bring a pot (large enough to hold the white part of the leek) of salted water to a boil. Drop the green parts in the boiling water to just set the color. Remove and shock in ice water. Do not cook.

Blanch the white parts until barely tender; remove and cool. When cool, split in half lengthwise and drain cut side down on paper towels. In a saucepan, gently sautĂŠ the shallot and garlic until tender. Add lemon juice and white wine; bring to boil and reduce by half. Add stock and heavy cream. Lower heat to simmer. Coarsely chop green parts of leek and add to cream. Reduce by a third. Season with salt and white pepper. Brush tops and bottoms of leeks with olive oil. Take the two pieces of one leek and place next to each other on a baking tray. Do the same with the other leek. Season with salt and top with crumbled goat cheese and hazelnuts. Bake in pre-heated 350-degree oven for 20 minutes.
