An NDSU speech communication graduate, she lives in Fargo with her intelligent rescued dog, Jake.
Dayna Del Val Del Val is the executive director of The Arts Partnership, where she writes a monthly column on the arts for The Forum, manages two staff members and an active board, and works to support the mission of cultivating the arts in our community through a variety of ways. In other words, she wears 27 hats! She is also a professional actor and writer. She lives in Fargo with her husband and their golden retriever, and she loves when her college-aged son is home on breaks. Zainah Haider Ever since she was young, Haider remembers her parents always taking pictures. “They have inspired me to love photography. We get pretty competitive when we travel, and we see who can take the best pictures,” she says. Competition or not, Haider says she will always love photography as an art form.

An NDSU architect graduate, with emphasis in art/photography, his two-decade practice with Stahl Architects has led him places to observe life, including Europe and the Middle East. He is an adjunct lecturer at NDSU, national speaker for Intern Development, a regular contributor to regional and national home magazines, and has been featured on HGTV and in Dwell. Grace Estes Estes has always found writing compelling. Whether it is as simple as writing a card or writing for a local paper, words have great impact on others. She resides in Grand Forks with her husband and spends her free time cooking and hopes to start gardening at the local coop this summer.
Shauna Fellman A small-town girl at heart, Fellman states, “My dream is to raise our kids in the country with days consumed by exploration.” Until then, Fellman lives in West Fargo with her husband, John, their two young boys and baby daughter. When not working as a registered nurse, she enjoys traveling, art, cooking, and being outdoors with her family.

Destination: Disneyland The ups, downs and in-betweens of family vacations.

f anyone on the planet still had a dictionary—and if they could find it and look up “nontraditional family”— there would most likely be our picture staring back. It’s not because we’re a blended family whose “at last” didn’t happen “at first”; it just seems like we never do anything the easy or normal way. This year, we decided it was time to take the quintessential normal American family vacation— Christmas with the grandchildren and their parents at Disneyland in sunny southern California! 14 | JANUARY/FEBRUARY 2017
Because normal families would all get on a plane, arrive at their destination, rent a couple cars and some car seats and strollers and be on their way, we wouldn’t be doing that. We got airline tickets for the kids and their parents, climbed in our giant SUV, tossed in a couple strollers and car seats and took off for California. Normal people would not drive through the Rocky Mountains in the dead of winter, so of course, that is exactly what we decided to do. INSPIREDHOMEMAGAZINE.COM
I often find going any distance with a wallet in my back pocket gets uncomfortable and put it in the seat next to me. Three times on our quest through the mountains, the roads were so slippery and the visibility so poor that I put my wallet in my jacket pocket so they could identify my body when they found our giant SUV at the bottom of some ravine in the spring. The kids got on the plane in Fargo like normal people, changed planes in Denver and had some lunch like normal people, and arrived at John Wayne airport in Orange County at dinnertime. We drove by acres of silver rental SUVs at the airport and walked by rows of rental car seats and strollers in the terminal and met the kids. We then rented another car and one more car seat because there was no way four adults and three children would fit in our SUV, no matter how giant it was. Because luxury hotels have never been all that important to us, we reserved two adjoining rooms for three nights at a “park adjacent” property. Staying “park adjacent” is a great way to remain adjacent to some of your money, and we quickly realized being across the street from the park was actually closer to the action than the resort hotels on-site. The rooms looked as tired as the parents and grandparents occupying them but were clean enough and sensibly priced as far as overpriced theme park hotels go. We grabbed a bite to eat at one of those national 24-hour breakfast places packed full of tired, grouchy kids and their equally tired and grouchy adults and called it a night. For a middle-aged guy whose experience with theme park rides consists of the county fair every July, I love going on rides. I think it has something to do with growing up in INSPIREDHOMEMAGAZINE.COM

those pre-car-safety days and riding around in the open back of a pickup truck. Dad or Grandpa would be driving down a gravel road at 50 miles per hour, hit a bump, and one of us kids would go flying and land somewhere in the mound of whatever was being hauled. It was wonderful. You know what’s especially nice about having three grandchildren under the age of 10? They’re still too young to be mortified by their parents’ and grandparents’ behavior. While the normal grandparents were enjoying a cool beverage in a spot in the shade or quietly dozing off, we were determined to hit every attraction we possibly could. And the kids were more than happy to accompany us on every ride we’d waited 45 years to experience. And experience them we did. We had those spinning tea cups whirling so fast that 7-yearold Gabby turned a really disturbing shade of mint green. Nine-year-old Brian got to ride on the modern-day Star Wars Adventure along with experiencing the decades-old Space Mountain that probably debuted when I was about his age. And the kid totally leading the charge? That would be 3-year-old Chloe. She tried standing on her tippy-toes to pass the height requirement, which didn’t fool anyone, but when she was tall enough, she was at the front of the line for every “big kid” ride. Theme parks do a really nice job bringing families together while separating us from our money. Seemed like lunch cost about the same as a week’s groceries, a princess dress and an up-do for a 6-year-old was about the same price as a prom ensemble for a 17-year-old, and the fantastic family photo with the little girls’ hair standing straight on end and expertly snapped while the gang was plunging down 20 stories in the Tower of Terror seemed about the same price as my senior portrait. And it was worth every penny. After four days of fun in the sun, we dropped the kids and their parents at the airport and began making our way back to the Midwest in our giant SUV. Being normal for once was really fun. I think we’ll try it again some time. Wishing you all the best in 2017, and hoping you take the opportunity to do one thing you’ve wanted to do since you were a kid. INSPIREDHOMEMAGAZINE.COM

Berg will be sharing his experience as a member of the BBQ Boot Camp, an outreach program created to “bridge the gap between food consumer and food producer.” He says, on average, people who purchase and prepare food are three to four generations removed from the farm and often have questions about where their food and ingredients come from. “Our program brings people in with the promise of learning how to grill and BBQ,” he says. Bergeson will share great botanical advice, including how to grow fruit in northern climates and how to mix perennials and annuals for easy, yet incredible, texture, depth and color results. He’ll also present a talk on planting all for all four seasons, and using color combinations that will stun and awe. “My primary focus in my seminars is to let people know how to get lovely results with a minimum of effort. “In the ’60s and ’70s, wallpaper was very popular among baby boomers, but by the ’80s, it became mass marketed and lacked the quality depictive of today’s products,” remarks Stacy Senior, chief marketing director at Thibaut, the oldest continuously operating wallpaper company in the U.S., established in 1886. “Today, inspiration is drawn from fashion trends with modern and hip elements to interest a younger generation.” Much of the dislike of wallpapers of the past stems from negative experiences with removal. ow does one describe home? For Jim and Sandra Roers, home is the place where faith and family join. It’s a place where giving comes from the heart. Built in 1991, their four-bedroom, four-bath Fargo townhome initially had separated rooms. “Sandra wanted an inviting, open home with flexibility to entertain guests,” designer Denise Drake recalls. “We accomplished this by converting an existing breezeway into functional space while designing an open concept.” By repositioning the front door of the home, a new powder room was added with transitional space between the garage and main living area. A butler’s pantry near the kitchen cleverly conceals any cooking mess. It’s complete with high-end appliances, including a washer and dryer and a beautiful rain glass door. Warm cherry cabinetry and colorful glass backsplashes highlighting copper, brown and gold hues were selected to complement the granite kitchen island and hammered copper range hood.

“Denise has a wonderful eye for colors and bringing things together,” Sandra notes. “After we approved a plan, she managed the entire project. We came back and everything was completed.” Convenient to the entry and kitchen, the den is designed with comfort in mind. Jim loves the luxurious espresso leather recliners and the pair of copper mohair swivel chairs that easily melt away the stress of the day. A corner stacked-stone gas fireplace, built-in technology and stereo cabinetry, along with filtered lighting from two sliding glass doors, encourages relaxation. Gold mesh light fixtures were carefully positioned to easily convert this space into a larger dining area capable of seating 24 guests. “There is something peaceful about eating

Each piece represents previous travels to various destinations. Sandra loves the living room with its high ceilings, white stacked-stone fireplace, including cherry shelving and tuck-away leather stools. Square transom windows cast sunset rays upon an elegant wrought iron and maple staircase. Upstairs, the couple’s master bedroom is the essence of tranquility. A king-sized cherry bed displays a peaceful wave pattern, and a small patio overlooks views of the golf course.

Their walk-in closet contains a convenient washer and dryer, an island for storage and generous storage space. “One of the unique designs we implemented in the master bath was customizing countertop heights to accommodate Jim and Sandra,” Drake explains. “We also continued the color hues with a pebble metallic wallpaper and gorgeous glass and marble
tile accents.” A lower level includes an open bedroom, family room, powder room and a fourth bedroom behind paned French doors. Recently elected a North Dakota senator, Jim loves hunting, raising cows and grain, and running the Roers companies. He often enjoys evening crop check drives. Sandra is passionate about community philanthropy work, especially Churches United for the

Homeless and the Jeremiah Project. On carefree days, the couple would likely be found sitting together on their front porch at their ranch taking in magnificent views of western North Dakota. They cherish their five children and 13 grandchildren. With goals to grow their business for the benefit of family,

inter at the lake may not always be the initial thought in our minds when we contemplate “getting away.� We perhaps visualize warm, sunny weather and summertime outdoor activities at the lake, yet a winter retreat in the northland can easily be described as the most peaceful and serene imaginable. The still and quiet insulated by the pure white, snow-laden landscape is breathtakingly beautiful and soothing to the soul. Inspired Home recently spoke with David Reid, president of Radiant Homes, for his thoughts on a guesthouse project recently completed on Pelican Lake. INSPIREDHOMEMAGAZINE.COM

IH: Describe this project in terms of the homeowner’s needs and expectations he had in mind when he came to you with interest in creating a guesthouse. DR: The owner wanted a space where his children, grandchildren and future generations could gather and cohabit to enjoy time at the lake and celebrate holidays together. The architect, Chris Hawley, did a great job interpreting the owner’s vision in the design and aesthetics of the home. It is a very family-friendly space, which includes five bedrooms, each with its own bathroom. Two living rooms, one on the main floor and one in the basement, create separate spaces for families relaxing or entertaining guests. Included is a flex space that could be used for a game room or extra sleeping space. The basement bathroom, which became commonly referred to as the locker room, features two separate shower stalls and three separate vanities to service guests. The main floor showcases a unique open kitchen, dining and living space. INSPIREDHOMEMAGAZINE.COM

IH: In terms of design, what did you appreciate the most about this project? DR: I loved working out and executing all of the unique architectural details alongside the functional details that the owner desired. The site planning for this home presented a unique challenge right away, as the site was not naturally conducive to a walkout basement. Large boulders were used to build retaining walls, which allowed for the walkout basement on the front (lakeside) of the
home. It was exciting to blend contemporary elements like the cable railing with more traditional cottage-style finishes such as the wood walls and ceilings. These details along with others such as a barrel-vaulted wood ceiling and the sunroom with a deck over living space required not only skilled and dedicated craftsmen but also diligent oversight in their execution. The wood floors on the main floor are very unique—sheets of plywood beveled on the edges, installed with exposed fasteners and finished in place.

enjamin Moore has once again rolled out the red carpet for its color of the year. From a plethora of warm new hues from the 2017 palette, they have chosen “Shadow,” a deep violet shade that lives up to its namesake. Benjamin Moore describes the 2017 color of the year as “enigmatic,” a well-deserved adjective for this mysterious yet completely functional color. Hannah Yeo, color and design expert at Benjamin Moore, spoke with pride and excitement describing this year’s hottest hue, “Shadow 2117-30 is an amazing color in that it can have a violet cast in some light, act as almost a deep neutral in other lighting, all while capturing a sense of mystery, beauty and allure. It’s a master of ambiance, instantly creating mood.” Yeo explains that the development of this striking hue came after a full year of research. Darker tones were trending in places like museums, retail, art and fashion. More notable to Benjamin Moore color experts was the prevalence of the use of violet in varying aspects. or many places in the country, February is a month of thawing with warming temperatures and hints that spring is around the corner. Those of us up north, however, know the days are still short and the weather is still frigid. Cabin fever has likely set in, and we yearn for the weather that we can walk and play in — and so do our pets. We spoke to our good friend, Dr. Amy Anderson at West Fargo Animal Hospital, who shared important tips to help our four-legged family members remain healthy through frigid weather. Her first bit of advice: If you’re too cold to take a walk around the block, don’t make your pet do it! There are some days when it is simply safer to skip outdoor activities. If it’s too cold for you, it’s too cold for them. For days a bit more tolerable in temperature, clothe your pet appropriately. We throw on sweaters, jackets and boots to keep out the cold; similar products designed for animals can help do the same for them. Dr. Anderson says pet-friendly outerwear is especially helpful for those with shorter or thinner coats. “A sweater or coat helps to keep them warm, but don’t forget to take it off once inside,” she says. “Their skin needs to ‘breathe;’ not allowing that could lead to skin infections. Booties help to prevent paws from freezing when outside. Many dogs don’t like the booties, but if they will keep them on, they really help prevent cold paws!” A great bit of advice Dr. Anderson gave us last winter season was to start getting your pet acclimated to the winter booties by placing them on their paws in warmer weather. Put them on frequently and let them wear them around the house, so by the time polar temperatures arrive your dog is already accustomed to wearing them. Another great tip that will help keep your pet insulated is to make sure your dog (or cat) is properly groomed. Dr. Anderson warns that coats that are matted, dirty and not well maintained do a poor job of protecting our pet in the winter months. Lastly, it is important that if your pet is outside part of the time and tolerates cold weather well (like some breeds do), make sure they have access to water, food and shelter so they can get out of the wind if they need to. If you see an animal left outside without access to these things, if their coat is in

poor condition, or if, for any reason, you are concerned for their wellbeing, please contact your local authorities or animal welfare officer and they can pay the pet a wellness visit to make sure they aren’t in danger. It’s also important to be aware of the signs and symptoms of frostbite or hypothermia in your pet or any other animals you might come across on blustery wintry walks. Dr. Anderson cautions, “Signs of frostbite include cold extremities, discolored extremities (white, extremely red or black), hard/scabby skin on tips of ears, tail or paw pads, and pain in these areas. Signs of hypothermia include a very low body temperature (97 degrees Fahrenheit), lethargy and shivering or shaking.” Should your pet suffer from any of these symptoms, contact your local veterinarian immediately.” Let’s heed Dr. Anderson’s great advice — dress yourself and your pets accordingly this season and take winter by storm!

The rich, sensual aromas of a slow-cooked dinner fill your senses as you open the door. It’s time to pop the cork of that silky merlot and get settled in front of the fire with a steaming bowl of slowly braised beef stew.
I
t’s dark, and it’s cold. The workday is over, but it feels so much later. Pulling into the driveway, the glow of lights from the house is so inviting. Kitchen windows are fogged with steam; your stomach growls, fending off the cold with anticipation of a hot meal. The rich, sensual aromas of a slow-cooked dinner fill your senses as you open the door. It’s time to pop the cork of that silky merlot and get settled in front of the fire with a steaming bowl of slowly braised beef stew. The kitchen is the soul of a house. It is a sensory sanctuary, if you will. It nourishes us through smell, taste and touch—no TV, just the music of bubbling pots, sizzling pans and the rhythmic sound of chopping. The kitchen is the gathering place as it always has been, going back to the days when everything was cooked over an open fire. There is a sense of security in sitting around the kitchen table talking, eating or just hanging out over a coffee.
Each country and nationality has their version of slow-braised dishes. We have beef stew, chicken and dumplings, chili, country captain and short ribs. The beauty of these slow-braised dishes is they allow you to use lesser-known and less expensive cuts—brisket, rump, shoulder and shank. These cuts are full of flavor when it is extracted slowly through braising. Take our basic beef stew concept with a few ingredient modifications plus a healthy dose of red wine, and voila! You have the French version beef Bourguignon. Swap out the wine for a good dark beer and you now have the Belgian beef carbonnade, and so it goes. There are other classics, such as the French cassoulet, which incorporates pork, lamb, sausage and beans; Italy’s osso bucco Milanese, featuring the shank of veal; and Morocco’s curried lamb with apricots and almonds.
These types of dishes are generous in both texture and complexity of flavors. One of my favorites is a Mexican-style pork stew with butternut squash, poblano peppers and cumin. This dish has layers of flavor and is both spicy and sweet. The secret to making any of these heavy, meaty dishes brighter is the addition of the zest of lemon, lime or oranges. For this pork stew, I use both orange and lime for a zesty burst of freshness.

We all have our favorite slow-cooked dinner, whether it be in a heavy Dutch oven or a modern, stylish slow cooker. Each have their purpose, and both yield what the season calls for—a rich, flavorful dinner with very little fuss. Both styles of cooker require work on the front end and pure pleasure on the back end. The difference between the two is that the Dutch oven needs you to be around whereas the new slow cookers not only brown the meat before braising but know when to shut
down and hold the dinner until you are ready. The beauty of the new electric slow cookers is that you can set them up to cook all night and the next day put them in your car and head to your ice house. Most SUVs and cars these days have the capability to plug in a cooker, or if you have a generator, you are all set for a nice, hot lunch while on the ice. It doesn’t get much better than that—well, catching a few fish helps.

Method: Cut pork into 2-inch cubes. Blister the poblano peppers on all sides under the broiler. While hot, place in a bowl and cover with film wrap. When cool enough to handle, peel off the skin, split and remove seeds. Cut into thick strips.

Peel onions and cut into 1-inch pieces. Cut the red peppers in half; remove the seeds and cut into 1-inch squares. Thinly slice the garlic. Peel and split the squash. Remove the seeds and cut into 2-inch cubes. Heat the oil in a Dutch oven with a lid or in a slow cooker. Without crowding, brown the pork chunks on all sides. Remove and hold on the side. Add the onions, red peppers and garlic. Sauté briefly to add some color to the onions. Add the pork back in and mix. Add the cumin; mix well. Add the paprika; mix well. Add the chicken stock; stir. Add the red pepper flakes, black pepper, kosher salt, Mexican oregano and orange juice. If using a Dutch oven, cover and put in a preheated 350-degree oven and cook for 2 hours or until pork is fork tender. If using a slow cooker, cover and cook on medium heat for 4 hours or until pork is fork tender. Just prior to serving, add the lime zest and chopped cilantro.

y family and I had a big year in 2016. After 12 years of being “Craig and Lo,” my nowhusband and I were married in Fargo, which included many hours in the kitchen baking more than 200 Norwegian kringle as wedding favors for our guests. A few weeks later, we hopped a plane with my entire family— including my grandparents—destination

Norway to meet our relatives and the origin of my favorite kringle recipe. As we shared our life stories with our Norwegian relatives, many conversations were centered upon food and family. Upon returning home, I was inspired to bake traditional Norwegian recipes from a cookbook we received as a wedding gift:
“Scandinavian Baking” by Trine Hahnemann. It is filled with treasured recipes that I grew up with along with those that I’ve never heard of. And yes, I have decided to bake my way through the entire book! My first journey into my new cookbook was Sønderjydske rye bread. We devoured so much hearty rye bread in Norway that it

only made sense to make this first. It was simple, delicious and dense. I still continue to use my sourdough starter so I can bake this traditional bread anytime. Our friends recently opened a winery in the Finger Lakes of New York. For their opening night, I made medaljer, or medals, as a congratulations gift. Medaljer are a sandwich-style cookie with a lovely, subtle lemon flavor. They are filled with whipped cream, and tucked inconspicuously in the center of the cream filling is apple compote,

which is a delicious and unique flavor combination. My favorite endeavor so far is the walnut macaroon layer cake. There is something so satisfying as taking your fork to the crunch of the macaroon and the soft, creamy coffee filling. It is an impressive-looking cake, and as author Hahnemann says, “It’s just about the easiest cake I know.” She’s right. I have made it four times in the past month! The cake consists of three macaroon cake layers, each encompassing a “wake you up” coffee cream. To make the cakes, you whip six egg whites until stiff, adding sugar a little at a time. Gently folded into the macaroon are ground walnuts, which yield an ethereal, sweet, earthy flavor. Walnuts contain a lot of fat, so I have learned to be gentle when folding them in. The heavy fat can easily deflate the beautiful air pockets in the whipped egg whites. The recipe requires a springform pan so the macaroon cake can be turned out easily. Unless you happen to have three springform pans, you must bake one layer at a time. Fill the pan with 1/3 cup of the batter and bake for 35 minutes. Then repeat for the other two layers. I initially thought this might be a hassle, but it really is not. Keep the batter in the fridge while baking the remaining layers. If you do not own springform pans, you can trace out a 9-inch circle on parchment paper, pipe the batter in concentric circles and bake. The cream filling is incredibly easy. You simply whip heavy cream and add 1 tablespoon instant coffee and a smidge of brown sugar. The result is a gorgeous, delightfully fragrant, sand-colored cream. Once that is completed, you layer, fill and spread, leaving the ganache for the top layer. You can make this cake in advance because the macaroon cakes will stay fresh about three days in an airtight container. I also discovered that this cake this travels beautifully. We traveled by car seven hours to Washington, D.C., for Thanksgiving, and the cake held up better than the pumpkin pie! As I continue to bake recipes both familiar and new from my new cookbook, I hope to begin new family traditions and continue with the old. Food is central to our family. There are memories and history behind the meals we cook. When my relatives in Norway visit the United States, I look forward to sharing more stories and recipes. Perhaps I’ll even serve them a piece of walnut macaroon cake. INSPIREDHOMEMAGAZINE.COM

Coffee Cream 1¼ cups heavy cream 3–4 tablespoons brown sugar 1 tablespoon instant coffee

Walnut Macaroon Layer Cake
METHOD: Preheat the oven to 325°F. Line the bases of three 9-inch-diameter springform tins with parchment paper and butter them lightly, or line and butter one tin and reuse it to make the other two cakes.
Put all the ingredients for the coffee cream into a bowl and beat with an electric mixer until stiff. Take a big round serving dish and place the base layer (usually the least attractive layer) of cake on it. Spread half the cream evenly over; then place the middle layer on top and repeat. Place the most attractive cake on top.

Blend the nuts in a food processor with half the sugar until the nuts are finely chopped. Whisk the egg whites until stiff; then add the remaining sugar little by little. Fold in the nut mixture. Pour into the prepared tins and bake for

hen I turned 30, my mom started a fabulous family birthday tradition. My son was six that year, and he and my mom conspired to put it together. I got a three-ring binder full of plastic sleeves to create a cookbook of favorite recipes—yes, I turned 30 before the Internet was the recipe behemoth it is today! The front says Dayna’s Recipes, and my son drew a big pizza ringed by carrots and apples. The back is a drawing of a pink birthday cake on a pedestal with candles. On it, Quinn wrote Happy Birthday #E0 (that’s the best backwards 3 I can come up on a keyboard!) The whole binder was empty except for the first page, which says: This is 30 years of back allowance—ok, $10 a year isn’t great, but it’s better than what you got!

And then she told me that it was going to be our new birthday tradition. Today I am many years past 30, and so my check is many dollars past $300.

And now there are grandchildren in the mix who get $5 for every year of their life from Grandma on their birthdays. We started doing it with our son when he turned 19, except that year, we bought him $190 in gift cards because he was having a hard time making friends at college, and I thought if he could invite people to coffee or fast food or pizza, it might make it easier. It did. I didn’t realize this until I started doing it for my own son, but I think the giver actually has more fun with this than the receiver. Sure, I love thinking about what I’m going to buy with my birthday money. It’s pretty likely that a J. Crew box arrives at our house 1-2 weeks after my birthday. But the year we gave our son his gift cards, I had so much fun picking them out, finding what stores were in his new town and packing an envelop with all those little plastic cards. His phone call that night was full of joy and surprise, and that was a real treat for my husband and me. And you know what, he got some good friends out of the deal, too. Maybe $10 a year isn’t doable for you to do with your kids; so do $5 or $1. It’s not about the amount as much as it’s about the idea of it.
