Hello again fantabulous people and a very happy New Year to all of you! So here we are, already rocking and rolling 2013. “Stepping over the threshold” into the New Year proved to be memorable for me this time round and I was offered a multitude of insights into myself, people and life in general. Despite many people having a particularly tough time throughout much of 2012 there definitely seems to be a vibrant and unanimous sense that this year has much more positivity up its sleeve. Maybe it's the holidays that have offered spirits a sense of renewal or perhaps there truly is a global shift in mind set starting to unfold. Accepting certain realities is something that can often be a lot more challenging than most of us care to admit, but with finding that acceptance and therefore overcoming the challenge we gain vision into a whole new dimension of ourselves and we continue to grow. We are all blessed with enormous capability, endless opportunity and free will… and where there is a will, there is a way. So, let's open the doors, step out into the open and take a big breathe of fresh air. Let's challenge our boundaries and fears. Let's go the extra mile… for ourselves and for others and most importantly, let's develop an unwavering sense of gratitude for ALL that comes our way No matter what happens, look for the positive in it, the lesson or the silver lining and don't do it once – do it every time, all the time! – Here's to a GREAT 2013 in the making! Happy New Year Inspire Readers! A new year signifies the re-invention of self and we find ourselves looking at the year ahead with our hopes pinned on the unknown or the promise of something better. I've chosen not to make any New Year's resolutions this year and instead, I've made one promise to myself. I promised myself that I would be true to who I am. This seemingly simple act requires courage, the ability to walk your path with unwavering resolve and to honour yourself in every way possible. We all deserve to give ourselves our best and I firmly believe that this sets the foundation for what we attract into our world and what we give to this world. 3 Steps to a Permanently Clear Desk
Once upon a time, my desk was cluttered with all the things I was currently working on — not to mention dozens of things I wasn’t working on: notes, post-its, phone numbers, papers to be filed, stacks of stuff to work on later. I was too busy to organize it, and if I ever did get it cleared, it would pile up soon after. It’s a different story today. These days, my desk is always clear, except for the one thing I’m working on, and perhaps a notebook and pen for jotting down notes, ideas or todos as they come up. It’s a liberating feeling … it calms me … it reduces stress and chaos … it definitely makes things easier to find … and it m a k e s me more efficient and productive. How did I make the transformation? Well, it wasn’t an easy journey, and I’ve improved over the years, but the basic steps are outlined below. Here’s the system: 1) First, take everything on your desk and in your drawers, and put them in one big pile. Put it in your “in basket” (if it doesn’t fit, pile it next to your desk or something). From now on,
everything that comes in must go in your in basket, and you process everything as below. 2) Process this pile from the top down. Never re-sort, never skip a single piece of paper, never put a piece of paper back on the pile. Do what needs to be done with that paper, and then move on to the next in the pile. The options: trash it, delegate it, file it, do it, or put it on a list to do later. In that order of preference. Do it if it takes 2 minutes or less to complete. If it takes more, and you can’t trash, delegate or file it, then put it on a list of to-dos (more on your to-do list in another post). 3) Repeat at least once daily to keep desk clear. The end of the day is best, but I tend to process and tidy up as I go through the day. Once you’ve processed your pile, your desk is clear. You’ve trashed or filed or somehow put everything where it belongs (not on top of your desk or stashed in a drawer). Keep it that way. You must follow the system above: put everything in your inbox, then take action on each piece of paper in the inbox with one of the steps listed.
If an item is on your to-do list, you can keep the paper associated with it in an “Action” folder. But you must regularly (daily or weekly) go through this folder to ensure that everything is purged. It’s that simple. Have a phone number on a post-it? Don’t leave it on top of your desk. File it in your rolodex or contacts program. Have something you need to work on later? Don’t keep the papers on top of your desk. Put it on your to-do list, and file the papers in your Action folder. File or trash or delegate everything else. Leaving stuff on top of your desk is procrastination (and as a procrastinator, I should know). If you put it off until later, things will be sure to pile up on your desk. Deal with them immediately, make a decision, take action. What I’ve described is a good habit to learn, but it takes time to learn it. You’ll slip. Just remind yourself, and then do it. Soon it’ll be a habit you have a hard time breaking. And trust me, once you’re used to your desk being clear, you won’t want to break this habit. - Leo Babauta

Ever experience that? Well you are not alone. We live in a world in which our heroes are reality TV stars, fashion icons and who we read about in magazines. By all means I am not saying that you can't be inspired by someone or something. I am inspired by many people in my life as well as apects such as nature and the books I read. But I always make it my own and try not to be a direct copy of what I see. There's no fun in that as it is just a waste of time.
Be what you are. This is the first step toward becoming better than you are. ~Julius Charles Hare Women envy models in magazines, but don't say it out loud. The truth is that these magazines give girls a false sense of their own real beauty. They don't realize all the lighting, angles, and image touch ups that go into making those images. If they were to walk by one of the models in real life they probably wouldn't recognize them in person. The beauty of being ourselves is that it's an exciting journey. It's when we surprise ourselves with what we can actually do instead of what we thought was our calling in life. I have discovered this in my journey of writing and inspirational talks. It's been immensely satisfying to be able to write content that inspires readers. I have learned that if you are the best version of yourself, life gets so much sweeter. Doing what one loves brings much happiness. I once read that “outside show is a poor substitute for inner worth.” I love it. It's a message I convey in most of my Inspirational talks because we tend to judge from the outside and by doing that, we de-value who we are. It's a scary and despicable habit as we allow ourselves to criticise ourselves where we should be the better person and learn to love ourselves unconditionally, no matter what. When doing my talks I stress the point that it's more important to feel proud of ourselves regardless of how we look. The real beauty lies within our inner strength.
Here are 3 ways to accepting the first rate version of yourself Embrace who you are. On a daily basis we criticize our own ways, we do not love our bodies, our curves or the way we look in the mirror. The first step to loving yourself is acceptance. Accept that
you are uniquely beautiful; no one else can be you or look like you. Instead of negatively bashing yourself, be kind to yourself and embrace all of you. In the end you will only have yourself to depend on, why not start by accepting that you are a beautiful being? Don't waste time or compare yourself to others Comparison is without a doubt the thief of inner joy. It's very sad that a beautiful and talented person cannot acknowledge his or her worth because she is constantly comparing herself to others. Next time you want to compare yourself to others, make a list and write down your strengths on paper, realise that you have your own unique strengths that make you the wonderful person you are. If you crave the success of others, keep in mind that your time will come, and enjoy your journey to becoming the amazing person you were meant be. It takes courage to grow up and become who you really are You were born an original. The challenge in life is merely living your own story. We think that being copy-cats and acting like the people we see on TV makes us better but considering our original story belongs to no one else but us, and cannot be lived by anyone else, it's our gift! As John Mason so cleverly said, “You were born an original, don't die a copy.” You will find that people will want to live your dream, steal it away from you and make as if it were their life's journey. My advice is that you ignore them; they do not deserve your attention. Right now ... focus on your own life and decide to be proud, confident and happy with your journey. In conclusion I want to ask that you take time to fall in love with the things that make your heart smile and leave you in a state of elation. You are beautiful because you matter to the world. If we learn to programme our minds to appreciate that one single thought, we will respect ourselves more as women in this day and age and not allow people to make us feel unworthy. So in honour you all, I challenge you this week to step away from the fashion magazines and remind yourself of what is wonderful about you, which has nothing to do with your “outside show.”Show the world what real beauty looks like from the inside out. You don’t need to be a monk to nd solitude, nor do you need to be a hermit to enjoy it. “I never found the companion that was so companionable as solitude. We are for the most part more lonely when we go abroad among men than when we stay in our chambers.” ~Henry David Thoreau You don’t need to be a monk to find solitude, nor do you need to be a hermit to enjoy it. Solitude is a lost art in these days of ultra-connectedness, and while I don’t bemoan the beauty of this global community, I do think there’s a need to step back from it on a regular basis. Some of my favorite activities include sitting in front of the ocean, still, contemplating … walking, alone with my thoughts … disconnecting and just writing … finding quiet with a good novel … taking a solitary bath. Don’t get me wrong: I love being with loved ones, and walking with a friend or watching the sunset with my wife or reading a book with my child are also among my absolute favorite things in the world. But solitude, in these days as much as ever, is an absolute necessity. The Benefits of Solitude The best art is created in solitude, for good reason: it’s only when we are alone that we can reach into ourselves and find truth, beauty, soul. Some of the most famous philosophers took daily walks, and it was on these walks that they found their deepest thoughts. My best writing, and in fact the best of anything I’ve done, was created in solitude. Just a few of the benefits I’ve found from solitude: • time for thought • in being alone, we get to know ourselves • we face our demons, and deal with them • space to create • space to unwind, and find peace • time to reflect on what we’ve done, and learn from it • isolation from the influences of other helps us to find our own voice • quiet helps us to appreciate the smaller things There are many more benefits, but that’s to get you started. The real benefits of solitude cannot be expressed through words, but must be found in doing. How to Find Solitude You start by disconnecting.
Take every means of connecting with others, and sever them. Disconnect from email, from Facebook and Twitter and MySpace, from forums and social media, from instant messaging and Skype, from news websites and blogs. Turn off your mobile device and phones. Turn off the computer … unless you’re going to use the computer to create, in which case, shut off the Internet, close your browser, and shut down every other program used to connect with others. The next steps depend on which of two strategies you use: 1. Holing yourself up. This can be done in your office, by shutting the door and/or using headphones and the calming music of your choice. If possible, let coworkers know you can’t be disturbed during a certain block of your day. Or it can be done at home, by finding a quiet space, shutting the door if you can, or using headphones. The key is to find a way to shut out the outside world, including co-workers or those who live with you. 2. Getting away. My favorite way to find solitude, actually. Get out the door, and enjoy the outdoors. Take a walk, find a park or a beach or a mountain, find a quiet coffee shop, find a shady spot to rest. People watch, or nature watch. Other tips: • Try taking a quiet, relaxing bath from time to time. • Curl up with a good novel. • If you’re married with kids, ask your spouse to give you some time off to be alone, and then return the favor. Make it a regular swap. • Take a walk every day. • Get into work earlier, and work in quiet. • Have a nice cup of tea. • Try a regular time each day when you’re disconnected. • Consider limiting the stream. No time for solitude? Try these tips. Try sitting still, and focusing on your breath as it comes in and goes out. As your mind wanders to thoughts of the past and future, make a patient note of that, then gently return to your breathing. “I live in that solitude which is painful in youth, but delicious in the years of maturity.” ~Albert Einstein Post written by Leo Babauta.

I registered online, not knowing what I was in for.” And what a surprise she got. “Ooooh ...it is nice, but at first I was afraid because all the ladies looked so sexy and fit and there I was ... fattest in the group. But the trainer made me feel so welcome. Exercising turned out to be fun, interesting and not boring at all. We play games, do hikes. It's so unlike doing the same boring exercises in gym over and over. And the group members feel like family.” At the time Sophie saw an ominous '131' when she mounted the scale. She was suffering from high blood pressure and had knee trouble. She had been fat all her life and worried about it, but the problem was that those around her regarded her weight as normal. “My parents and the community saw a fat child as a wealthy and healthy child. My grandparents and parents were all fat. My dad said it was in the genes. I thought that was it.” “One day my ten year old son said 'Mommy let's race!' When I tried, he laughed and said I was too fat. The following Sunday, I broke my ankle and two years later it was still giving me trouble. My son said it was because I was too fat. Then I also started having trouble with high blood pressure.” When Sophie passed the ladies exercising in the park, she remembered reading about Adventure Boot Camp in the George Herald. She laughs. “I thought it was a boot camp for ladies who had run away from home who now had to train in the park!” She nevertheless called the number in the advertisement and spoke to Rico Groenewald, who owns the franchise. That was the turning point in her life. “He sounded so

One of the greatest attributes of January is the enthusiasm and ebullience that 'a new start' brings. The irrepressible desire to achieve and succeed is electrifying. It fills boardrooms, classrooms and cafés with passionate visions and lifealtering resolutions. But however resolute we may be, the general trend is to 'settle back into reality' – around about the 25th of January when the bills come rolling in again. Let's make 2013 different. Not because we just think it, but because we're going to pursue our passion! This means that we want to look out for 'physical evidence' of our dreams becoming reality; milestones along the journey to our personal successes. The manifestation of abundance is essential if we are to be committed to thinking and acting differently. Milestones are a way to track, journal and remain accountable to the dreams in our heart.
Here are four pillars to manifest abundance in your life: • Consciously decide to focus your thoughts on abundance rather than of lack of money If you keep thinking that you don't have enough, you'll start believing that you'll never have enough. This is a vicious and denigrating mindset that will withhold the flow of abundance into your life. Abundance will only have a channel through which to flow if you open that channel, and it begins with your thoughts. • Be happy now, without the money If you aren't happy with what you have, then your happiness depends on what you have. If you want to see abundance manifest in your life then you need to be content in being happy regardless of what you have. If you're not happy with little, chances are you won't be happy with a lot.
• Be truly grateful for everything you have now Being happy and staying happy is sustained with gratitude. Develop an attitude of gratitude, taking every blessing in your life as a treasure and not a trinket. • Give the best of yourself to others It has been said that we should do for others as we would have them do for us ie If you want receive the best, then you need to be willing to give your best. As you begin to give of your best, just because you want to and not out of obligation, you will naturally find yourself to be a person of gratitude, happy and focussed on abundance! I wish you every great opportunity and blessing for 2013. I know that you are capable of amazing things, remember these four points and you'll be sure to accomplish your dreams – and more!

cheers Every year as December rolls around, the festive spirit suddenly comes alive within each and every one of us as we plan our end of year holidays and wait –impatiently- for the smell of wood burning, long evenings out under the South African sky, good company, plenty of laughs and more often than not some great wines to accompany those festive occasions. This year, we headed up to a magnificently soul refreshing place called Fisherhaven and during our stay there we decided to have some fun with wine tasting. There are so many wine farms in the surrounding areas and we didn't get anywhere near discovering all of them, but we did discover a couple of little gems which became regular features of the remainder of our evenings under the stars. There is a fantastically quant little village in Hermanus called “Hemel-en-Aarde” which has gorgeous décor shops, picture perfect restaurants and last but not least fantastic wine cellars. Our first stop was at “The Wine Village” where we were warmly greeted by smiling faces, a bar full of people enjoying the free wine tastings and a stunning wine cellar. I am not much of a white wine drinker myself so I proceeded to get stuck into the red wine tastings… they had some lovely wines on offer (at great prices too) but ironically enough the one that held my attention the most was in fact their house wine called “Are we having fun yet” which is a red blend. Not only was it the most reasonably priced wine I tasted but in all honesty… GREAT tasting! Needless to say we purchased two bottles and headed back for plenty more over the remainder of the holiday as it was a clear hit with everyone else back home. In the cellar you will find everything from wines, glassware, barrel furniture, cheese, olives and much more. It really was a super find! Next we headed off to the “Hermanuspietersfontein Wine Cellar” - a mouthful and proudly so as they boast the longest wine farm name in South Africa. Even more interesting than their name was their history

and all the stories attached to each and every wine. They are also the only wine producers in South Africa which have solely Afrikaans wine names. “Hermanus Pieters” was a Dutch teacher in the early 1800s who would often be remunerated in sheep (which explains the sheep motif in their logo). After his passing and in his h o n o u r, t h e y n a m e d t h e v i l l a g e “Hermanuspietersfontein”. In 1902 the postmaster shortened the town's name to “Hermanus”. Approximately 150 years later Hermanuspietersfontein revived the full name by making it the name of their cellar and brand name. Every single wine has a story attached to the name which made the afternoon of wine tasting a most entertaining, not to mention educational, one. The atmosphere in the cellar is upmarket and bubbly with a hum of conversation. The staff was friendly and very well informed on the wines which made you feel right at home. One of the wines I found most interesting is their brand called “Bloos” which is actually advertised as a rosè / blush but is in fact a RED wine! It looks like a rosè but definitely doesn't have the same taste. A delicious blend of Cabernet Sauvignon, Merlot, Cabernet Franc, Malbec & Petit Verdot, it was a huge success with everyone on our holiday and sparked an amazing amount of interest as well as conversation because of its blush-like colour, disguising its true identity as a red wine. In addition to their wines, they produce their own recyclable branded packaging which really makes the purchasing of wines as gifts hasslefree and adds that extra bit of “authenticity” to the whole purchase and experience. All in all, our visit to the Hemel-en-Aarde Village was a huge success and was great fun. Every single person who joined in our festivities enjoyed ALL the wines we purchased from both of these lovely cellars and I would definitely recommend a visit down that way. We have so much to do right on our doorsteps. After discovering many fantastic new places this past festive season, we have made it one of our New Year resolutions to take a road trip (albeit a small one) at least once every month. So I look forward to reporting back on more interesting discoveries in our upcoming issues of Inspire. Until then…

Just a short distance from Hermanus lies the charming little community of Fisherhaven – so aptly named as it is indeed a true haven for anyone that enjoys tranquility and beauty. It was here, some years ago, that businessman Rohan Hoare decided to design and build his home – choosing Fisherhaven as it is one of the few coastal residential areas that faces north/north west with large plots available. There are at present about 250 permanent residents. The area has panoramic views of the Koegelberg Mountains, the Franschhoek Mountains as well as the Klein River Mountains. Rohan has been living in Fisherhaven for the past five years and it took him three years to build his self designed home. The house which covers 330 sq. metres stands on one of the higher plots in the area and incorporates various levels which flow comfortably from one level to the next creating spacious entertainment areas all of which boast magnificent views. From the first level one overlooks a solar-heated swimming pool on the one side with a cozy braai area nearby, both of which blend in with the natural surrounding fynbos which is frequently visited by small buck and home to many tortoises. The sound of trickling water falling gently into a Koi pond also on this level brings a feeling of serenity whilst star- gazing on summer evenings. Just a step or two away, is a cozy fire place built by Rohan and indoor sitting area which during the winter months heats both downstairs and upstairs. On the upper level is the main lounge opening out on to a sun room which overlooks the beautiful lagoon with the ocean in the distance. Vistas of grape vines and olive trees nestling on the mountain slopes can be seen through the windows. A cozy TV area situated on yet another level looks down on to the main lounge. The spacious main bedroom is upstairs with its own bath and shower and is situated away from any noise and allows complete privacy from

the rest of the house. The other two bedrooms and separate bathroom are on the lower level. Two lovely arches lead into a well designed kitchen and open plan dining room, with the pantry and scullery adjoining the kitchen – an asset that most home owners overlook but which is a true blessing especially when entertaining guests. A double garage at the front of the house leads through to Rohan's office which overlooks the pool area. When asked which was his favourite area for relaxing, his answer was simply “ I don't have a favourite as I designed the house so that there would be a comfortable and inviting feel throughout.” With a keen eye for detail as well as an appreciation for works by various artists, Rohan has tastefully decorated the interior of his home and has without doubt designed and created his very own “haven” where beauty, peace and tranquility can be appreciated to the full.

Decorating small spaces might seem like a challenge to some, but Andrew has demonstrated that this is indeed possible. Despite juggling a demanding job and a full social life, Andrew found the time to renovate his personal space and created a sanctuary that he calls home, which is visually appealing and welcoming to his guests. While green has become synonymous with the promotion of environmental causes, Andrew has embraced the green palette as a springboard to new creative heights. The transformation of his 60m2 apartment into a functional and classically modern home will inspire those with similar sized living spaces to get cracking on creative space saving projects for the home. Located in the leafy southern suburbs of Cape Town, this feature home is really something to m a r v e l a t . A c c o r d i n g t o A n d r e w, t h e transformation from a basic apartment to what he now calls home was a fusion between modern functionality, vintage retro and clever spacesaving ideas. As his home is perfect example of what a BIG difference a little creativity and inspiration can make to small living areas, let's take a closer look at what inspired Andrew. Every inch of the 60m2 apartment was given a personal touch through clever creativity. It is evident that Andrew had loads of fun transforming his apartment into the crisp, fresh and inspiring sanctuary it is now. The end result warrants a breathtaking pause as you step into the apartment. Greeted by a wall adorned with oversized metal letters rescued from a waste dump, one is given a sense of Andrew's playfully creative nature. The letters were originally part of the signage for Behouse. Andrew omitted the B and E and was left with a larger- than- life focus piece for his living area. After a good clean, and some tender loving strokes, the letters were renewed with vintage vigour and make a striking statement.

The seating for the living area was personalised and given a new lease on life with contrasting upholstery and bright scatter cushions. My jaw dropping moment was the discovery of a lampshade in the living area created by the ever resourceful owner using simple matt cardboard, a punch and rings. To feed his love of cooking and entertaining his wide circle of friends, Andrew created an open plan area by fusing the kitchen and the living room. A key feature of this modern man's kitchen is the deliberately exposed geyser, which adds an industrial touch to a space filled with functional contemporary appliances. The passage leading to the bedrooms is home to a repurposed coffee table. Turned on its side, it now serves a dual purpose as a compact library housing his favourite paperbacks and a stand. Dramatic and classic come to mind as you enter Andrew's bedroom. The wall facing the bed is adorned with framed black and white prints of screen sirens Audrey Hepburn and Sophia Loren among others, evoking the passion and simplicity of yesteryear and one is easily mesmerised. An equal treat is the second bedroom boasting heavenly finishes, which guests would be forgiven for mistaking for a 5-star hotel room with omnipresent personal touches. In keeping with the functional modern character of this compact home, the bathroom exudes a certain confidence that belies its actual size achieved through the clever use of space. Andrew's creation has left me inspired and green with envy as I continue my own personal quest to transform my modest living space into an illusory purple palace.

experience number: 2 If you know a bit about me, you would know that cooking has always been a passion of mine. Even as a child, as I was preparing something as simple as a peanut butter sandwich, I would pretend that I was on a cooking show and I would take the viewers through the “intricate” steps of how to make a sandwich. And now I am all grown up and yes I still pretend every now and then! I love cooking because it always brings back the feeling of family, community and the excuse to enjoy good soul food. I've always wanted to cook in a restaurant, and came pretty close a few years back but suffered from extreme performance anxiety. So as a self-proclaimed foodie I enlisted a few people to make the next item on my bucket list a reality. First on the recruitment list was Zaida our “restaurant donor”. The Cape Malay Food Market is her brainchild and everything about the place feels like home, including the owner! She has the most open and welcoming smile and makes delicious lemonade from scratch! Then we have the uber cool Chef Abe, a culinary wizard, husband and father. He makes everything look way too easy and I found myself jotting down a dozen tips to help my inner chef in the kitchen. Nawaal, a beautiful soul friend of mine agreed to be my paparazzi for the day and finally established what my good side is....anything from the top works and saves me from the dreaded double chin look. Spice came on board with their awesome range of easy to use curry pastes, poppadums, spiced rice and more. Not being a stranger to the Spice brand, I was eager to incorporate their products in my menu! Deciding on what to cook was not an easy feat but I finally decided on a three course meal consisting of a chickpea and brinjal starter, a Morrocan chicken wrap (served cold), butter chicken served with rice and for dessert, lavender crème brulee – my all time favourite treat! Now ladies, I was super excited to get started in the kitchen and arrived early, purple shopping bags in hand, filled to the brim with fresh ingredients! My level
experience
of excitement was at 110% and deep down I was praying for an accident free day. You see, I might love cooking but I can be such a klutz in the kitchen. I was envisioning scorched eyelashes, chilli paste in my eyes or burns on the ďŹ ngers and arms....believe me all these incidents are past experiences from along my cooking journey. The bulk of the morning was spent on preparing the ingredients and ďŹ nally the cooking started. We had a few hiccups like missing ingredients; my lavender infused cream boiling over and discovering that we were missing a blowtorch! The latter being the most important tool because in all fairness to my other courses, dessert was just my ultimate happiness. I decided to be neighbourly and knocked on Andiamo's kitchen door and the chef was kind enough to relinquish his torch to me. Happiness was restored. All in all, the day worked out perfectly. The plating of the food was an added bonus but....yes there is a BUT. I don't think I will ever go into the restaurant trade anytime soon. It's hard work, especially when you do all the work in high heels! I ended up ticking two items on my bucket list this time around. One was to cook in a restaurant and the other was to learn how to make a crème brulee. What's next? Something with adrenalin....loads of it!

Summer Baltic Curry Ingredients 1 chicken, about 1.5kg 1 tsp salt 4cm piece of fresh ginger Bay leaf 5 tbsp good quality mango chutney 50g ready-to-eat dried apricots, ďŹ nely chopped 2 tbsp Spice and All things nice Balti curry paste 2 tsp Worcestershire sauce 200ml low fat mayonnaise 200ml Greek yoghurt 50g Spice and all things nice Roasted aked almonds A small bunch of fresh coriander, chopped green salad and Spice and All things nice basmati rice, to serve (Serves 6) Method: 1. Put the chicken, breast-side up, in a large pan along with the salt, the bay leaf and half of the ginger and ďŹ ll with cold water until only the top of the breast is exposed. Cover with a lid and bring to a simmer. Cook gently for about one and a half hours until the juices run clear. Take out of the pan and set aside to cool. Remove the meat in bite-sized pieces while lukewarm. Finely chop the rest of the ginger. 2. Put the mango chutney and apricots into a large bowl. Put the Balti curry paste into a frying pan with a dash of olive oil and heat until fragrant (don't burn) , then add the chopped ginger and stir both into the bowl, followed by the Worcestershire sauce, then the mayonnaise and yoghurt. Season to taste. 3. Once the chicken is cold, fold it through the dressing and refrigerate for at least a couple of hours before folding through most of the coriander and serving topped with the almonds, with a green salad and Spice and All things nice basmati rice.

Thai-style Fish Cakes Ingredients: 600g hake or white fish 300g smoked snoek 1 sliced lemon 6 peppercorns 125 ml cooked diced potatoes 1 medium sized onion very finely chopped 125 ml grated carrot 15 ml fresh ginger grated 300 ml dried breadcrumbs 50g fresh coriander chopped 15 ml Spice and all things nice Thai Red Curry Paste 125 ml mayonnaise 1 large egg lightly beaten 15 ml dijon mustard 15 ml sunflower oil 15 ml butter Method 1. Place hake in a saucepan and cover with water. Add lemon slices and peppercorns, bring to boil. Simmer until fish is cooked about 5 minutes then remove fish with a slatted spoon and cool. Flake the smoked snoek removing skin and bones. 2. Add the cooked potatoes, onion, carrots and ginger with a quarter of the breadcrumbs and the coriander. Flake cooked hake and add to the mixture. 3. In a bowl mix Spice and all things nice Thai Red Curry Paste, mayonnaise, egg and mustard together. Stir gently into fish mixture. Divide into 10 to 12 cakes. Spread remaining breadcrumbs onto plate and press cake into the crumbs. 4. Refrigerate for1 hour. Heat half the butter & half the oil on medium heat. Once pan is heated, fry for 3 minutes on each side until golden brown. Drain cakes on paper towels. Serve with lemon wedges, sweet chilli dip, a green watercress salad and crispy baguettes.
Vegetable Breyani Ingredients 250g Spice and all things nice Breyani Rice 1 cup mixed vegetable (cauliflower, carrot, french beans) 150g green peas 1 finely sliced onion
1 finely sliced green chillies Salt to taste 1/2 teaspoon black pepper 2 tomatoes 1/4 cup yoghurt 2 tablespoons olive oil 3 tablespoons dry fruits (cashew nuts, raisins) Method 1. Cook the Spice and all things nice Breyani Rice as instructed on pack. Chop all the vegetables into small pieces and blanch in oil until cooked through or you can boil if you prefer. 2. Put 1 tablespoon olive oil into a pan and add green chilli, black pepper and stir for about half a minute. Add onions and sauté them for a minute or until they start to brown. Add finely chopped tomatoes and fry until they are properly cooked. Stir in the yoghurt. Add all the cooked vegetables. 3. Finally add the cooked rice into pan and stir all ingredients together. Put vegetable breyani into a serving dish. Garnish with dried fruits and nuts and green coriander leaves. Serve the chutney and Spice and all things nice Poppadums. Declaring New Year resolutions and setting goals has been fashionable since time immemorial, however the most memorable part of resolutions is that they are broken – it's just a matter of how long it takes. Why set yourself up for failure? Is it because it wasn't really that important to you anyway? Do you lack in the discipline department? Were your goals totally misaligned to begin with? In a world where the celebrity is exalted, it has become commonplace to emulate the behaviour, dress sense and other quirks of those we admire. It may be argued that these aspirations have contributed somewhat to global moral decay, a confused sense of
identity and has perhaps even fuelled economic crises such as the credit crunch, as individuals live outside of their means in pursuit of an ideal world which perpetuates the common misconception that one's value is determined by rank on the pyramid of social success. In actuality, a more contented existence is available to us when we tap into our radiant selves - when we are true to our selves. People who are true to themselves exude a certain confidence that radiates from a sense of inner peace. They embrace challenges as opportunities to learn and grow and as a result. Being true to yourself is not restricted to certain areas of your life; the benefit can be reaped in business and in your personal relationships. Relationships are rewarded with fulfillment when both partners are comfortable and true to themselves and place less expectation on the other to fill their inner voids. inspired healing through art journals heal in the most loving and gentle way
Art means so many different things to different people, to one it can be found in a sea scene done in water colour, to another person it could be an oil painting of fruit, to another it could be a sculpture made from recycled materials, to another it is in furniture and décor, to another it is in photographs and to yet another it is in nature – get the picture? (excuse the pun) We are all creative on a daily basis, in the things we do eg taking photographs, cooking, baking, sewing, using our voices to sing or to comfort. We are artists every time we create even a report for a meeting. The report becomes an artwork in that it has been created by the mind and the heart. Energy is used in the research, in the writing of the report and putting in the finer details such as a clip art picture or two, or even a graph. We are visual beings with five senses which are used every single moment of every day, even when we are resting. Our senses help us to
associate memories and emotions to all that we touch, see, hear, smell and taste. If one of our senses does not work, the remaining four will be enhanced to compensate for the loss of the fifth. Of all the senses, sight is a powerful sense in that it allows us to experience colour in our everyday life. Colour surrounds us in nature, in our homes, offices and in what we wear. It plays an important role in how we feel on a daily basis. If you look out the window and you see a cloudy day with grey skies making everything grey, you are a little less enthusiastic to greet the day and may even feel like climbing back into bed. Should you, however, look out that window on a beautiful sunny day when everything is bathed in a yellow glow; the blue sky and the colours of the trees and flowers really bright, you would feel energized and enthusiastic about your day. Colour can reveal a lot about an individual; how he/she is feeling, where he/she is in life at this present time and what challenge or obstacle he/she is facing and offer the remedy to help the person through this. By using colour intentionally in art, an individual can be healed by seeing the work every day as the colours and the art are absorbed subconsciously and the healing message begins to radiate through the spirit, mind and then the body. Journaling is another form of healing as, when being creative you are tapping into the right side of your brain and letting your five senses take over in the journaling process. Writing about your emotions, what you heard, felt, tasted, saw and smelled helps you to identify fully with the present and to heal and let go of any pain and fear
that may be holding you back. I have always loved creating art on silk. Silk is such a delicate medium and as a cloth, silk is used for protection of semi-precious gems, crystals , jewelry and for clothing. Through painting on silk I discovered its healing properties when I covered journals with the hand painted silk. The journals take on a healing aspect and truly help the person journaling to experience their emotions and healing on a deeper level and allowing the healing to work faster. I intuit the colours and design that is to be used by connecting to the individual's energy field through his/her name and birth date. In order to do this I connect to my guides, one of whom is Miriam, Moses' sister who brings a specific healing and caring aspect to the artwork. The guides assist me to see the colours and design, which I transfer onto the silk. Once this has been done, I cover the journal which is when the true meaning of what I have painted is revealed to me. The journal has now been transformed from a plain journal into a healing journal. Only then can I sit and write the insights to the journal for the individual to read so that he/she has a better understanding of the meaning of the colours and how this assists him/her in working through his/her challenges and healing. I believe that these journals heal in the most loving and gentle way as they have been created in the most loving and gentle way by me and my guides. By healing ourselves we become the best that we can be and I know that the gift to create these journals has been given to me to assist in this healing process. bloopers There are a number of fundamental things to remember when you take a step under the spotlight. During my time as a TV reporter, it was way too often that I sat across from the camera, interviewing someone who I just knew, was on a devastating road to self-destruction. The blunders, the waffling, and the one-word answers don't even touch the tip of the iceberg of the damage that every word is leaving. Not all publicity is good publicity. There are a number of fundamental things to remember when you take a step under the spotlight. Firstly, know what you're getting into. If you are asked to do an interview, make sure you know who is interviewing you, what their style is, what topics they will be asking you about, and how much time you'll have. This will lay the groundwork for your agenda, because you only accept an interview if you have your own agenda of course. So, once you've done your homework, and
you know what to expect and what audience you'll be talking to, you can go about constructing the key messages you'd like to get across. They should be concise, coherent and brief (not more than a sentence). You will generally only have 3 messages in an interview. Now, you have to tell it to sell it. The secret is to be an honest, informative, descriptive and open storyteller. Your story should have a beginning, middle and end. Be sure on where each of these is as you will need them to get to the point if you become side tracked. Remember, always put your main points first, and then elaborate to create colour around the message. Delivering your messages is all about talking smart. Know how to bridge from a difficult question to slipping one of your key messages in, by adding bridges such as “Let me
add…” or “Another thing to remember is…” When answering the reporter, talk in soundbites - 20second phrases that capture the essence of what you are trying to say, used to summarize information and entice the viewer. Your aim is to create neat and clean sound bites that are clear, without waffling. While mastering the art of the killer interview takes more time and practice, if you follow these simple rules, your first media appearance won't appear in the Blooper Roll.
