She has since been joined by Jacintha Cullen and Sally Ann Dooley and the girls work closely with clients both individually and in groups helping them with their nutrition needs and weight management.
They run Free Wellness Evaluations with clients to identify their needs using a special scales which measures internal readings such as Body Fat, Muscle Mass and Metabolic Age. The clients also complete a questionnaire and from the results of the evaluation, the girls will recommend a personalised programme based on

She turned her interest to jazz, blues and folk music and released her first album in 1958. In the ‘60s, she became identified as the voice of the civil rights and wrote songs about the movement. She died in France on April 21, 2003.

I first went to shoreline about a 1 ½ years ago not to join, just to use the pool as I had a problem with movement in my shoulders and hips. The first person to take the Thursday Aqua aerobics class was Graham, I remember his lovely Abba music it was so good I went home and told my husband that he would love it also. He came the next week and we met some lovely people who told us about all the other classes that would be of benefit to us. We then decided to join the gym and now my husband goes 7 days a week, he finds it so good. The management and staff are excellent at explaining the different moves and at using the gym equipment so you don’t injure yourself. The reason I tell you all this is my husband is over 80 years old and I am 76 years, I must say the joy of movement is wonderful as I was getting quite stiff in my joint’s but not anymore. Method:
Heat oven to fan 170°C/gas 5 and place bun cases in tray. Add all the ingredients for the cake into a mixing bowl and beat for at least 2 minutes with an electric hand-whisk until smooth and fluffy. Divide the mixture between the cases so they are twothirds filled, then bake for 12-15 minutes until risen. Leave to cool on a
wire rack. For the icing, microwave the chocolate on high for 1 minute. Cream the butter and sugar together, then mix in the melted chocolate. Spread on the icing on the cakes or if you want to make the icing look like a nest, then using a small star nozzle pipe the icing in swirls and then place the mini eggs on top.

Wicklow will become one of Ireland’s musical centres this May Weekend, when Bray plays host to the 15th edition of it’s enduring and successful international jazz festival.

n annual highlight on the county’s cultural calendar, Bray Jazz will attract the stars of jazz to the seaside town, as the popular its festival continues to live up to try’s reputation as one of the coun biggest leading jazz festivals, and the ch year in jazz weekend taking place ea the Greater Dublin Area. 30

Bray jazz quartet, who will play an opening night show at Mermaid on Friday, 2nd May. Cantuária’s a major figure in New York music circles, and his visit to Bray is quite a coup for the event. The Brazilian born player comes with a big reputation, and is probably best known to World Music audiences for his collaborations with many of the greats, including Talking Heads David Byrne, Laurie Anderson and Brian Eno, amongst others. Bray Jazz has developed a reputation through the years for mining that very rich seam of contemporary jazz from Scandanavia, and in 2014 the festival will again return to Europe’s far north – on this occasion to present one of the hottest young properties in European jazz, Norwegian saxophonist Marius Neset.
Vinicius Cantuária This year’s programme will be no exception, as leading name players travel from New York, Brazil, Norway to headline an event that will showcase jazz players from no less than 18 different countries. Alongside a top level programme of great shows taking place each evening at Mermaid Arts Centre, this year’s Bray Jazz will also present early evening concerts in Bray Town Hall, late night shows at The Harbour Bar and The Martello, and a free to the public afternoon matinee, and afternoon jazz workshop, over the three days of the holiday weekend. Bray jazz International music will again be to the fore at this year’s festival’s early evening recitals, a mainstay of the Bray Jazz Festival programme since the event was first started back in the millennium year. The recital concerts take place in the upstairs council chambers at Bray Town Hall, and will feature performances by the West African seven-piece Manden Express (Fri 2nd), by celebrated traditional folk ensemble This is How We Fly (Sat 3rd), and by Indian classical music brother and sister Joyeeta and Debiyoti Sanyal (Sun 4th). Free to the public shows have always been a corner-stone of Bray Jazz Festival’s programme, and this year the free access to great music
Dave Douglas Described recently as the greatest saxophonist to emerge from that part of the world since the legendary Jan Garbarek, Neset’s star is truly in the ascendency, and his Bray show is a rare treat for fans of Scandanavian jazz. Floyd Mayweather v’s Marcos Maidana Co-feature: Luis Collazo v’s Amir Khan Saturday May 3 2014, MGM Grand, Las Vegas WBA welterweight champion Marcos Maidana (35-3, 31 KO’s) isn’t being given much of a chance to defeat Floyd Mayweather Jr. (45-0, 26 KO’s) in their May 3rd fight in Las Vegas, Nevada, but this is the way that Maidana likes it. He says he likes it when fans doubt him, and when he’s being brought in to a fight where he’s expected to lose, as he is with the one against Mayweather at the MGM Grand. Maidana was definitely the underdog for his fight against Adrien Broner recently, but he wasn’t nearly the underdog in that fight that he is now. Leading up to the Broner fight, there were still a lot of boxing fans who saw it as a winnable fight for Maidana. With the Mayweather-Maidana fight, no one is giving Maidana a chance to win. He’s a puncher’s chance, but not a good one. If Maidana has better hand speed, then he’d be seen as someone with a decent chance to get the win against May-
Floyd Mayweather weather, but he doesn’t have speed. Another thing that is going against Maidana is that Mayweather recently beat Saul Alvarez last September, and
he’s someone that can do pretty much everything that Maidana can do but a lot better. Alvarez is a skilled fighter with huge power, and Mayweather made him look bad. Maidana doesn’t have Canelo’s size, power, speed or boxing ability, and that’s going to make it very difficult for him to get a knockout win over Mayweather. There’s no other way for Maidana to beat Mayweather then to knock him out. He’s not going to be able to outbox him or grind out a decision. Maidana literally has to knock Mayweather out to get the victory.

DUBLIN BAY PRAWNS & SMOKED SALMON COCKTAIL

out of lemon make sure you roll it firmly on a hard surface first as this will break the segments before using.
SEAFOOD PAELLA (Serves Four) INGREDIENTS:
2 slices of smoked salmon, cut into thin strips 1 kg of fresh Dublin Bay prawns 1 tsp. of Tabasco 1 tsp. of Worchester sauce 1 tbsp. of horseradish 1 tsp. of Brandy 2 tbsp. of tomato ketchup 2 heads of baby gem lettuce, washed and roughly sliced 2 tbsp. of paprika 2 gherkins, finely diced 1 lemon, cut into wedges 5 tbsp. mayonnaise
METHOD:
Bring a large pot of salted water to the boil and cook the Dublin Bay prawns and juice of ½ lemon for 2-3 mins. Strain and leave to one side to cool before peeling them. Put the mayonnaise in a bowl and stir in the ketchup, Worchester, Tabasco, horseradish, and brandy, seasoning to taste To serve: In a cocktail glass put a tsp. of sauce in the base then the lettuce, smoked salmon and Dublin Bay prawns. Spoon the cocktail sauce over the top and garnish with the diced gherkins, a pinch of paprika and a wedge of lemon.
INGREDIENTS:
300g of mussels 200g of fresh hake, cut into cubes 200g of fresh salmon, cut into cubes 100g of smoked cod, cut into cubes 8 tiger prawns 4 scallops, sliced in half (Optional) 50ml olive oil 125g gluten-free chorizo sausage, diced 2 peppers mixed, deseeded and diced 4 cloves of garlic, diced 1 onion, diced 6 cherry tomatoes 100g of frozen peas 1tsp. of fresh chopped dill Juice of 1 lemon Salt and pepper 250g of long grain rice
450ml of chicken or fish stock 1 tbsp. of turmeric or 1tsp. of saffron strands
METHOD:
Place a large pan on a high heat and, when hot, add in the chorizo for 2-3 mins to release the sausage oil and then add the onion , garlic, peppers and half the olive oil. Cook for a further 2-3 mins before mixing in the rice, turmeric, mussels and prawns. Pop open the cherry tomatoes by squeezing gently so some of the juices run into the dish. Add half the stock and leave to simmer until it has reduced so you have half the liquid left. Then add the remaining fish, apart from the scallops. Add the dill, lemon juice, peas and the rest of the stock and leave to simmer until all the liquid is nearly reduced. Just before you remove from the heat, place the scallops around the top, pushing them in to just cover them. Leave in for 2-3 mins before serving. Add salt and pepper to serve
FRESH LEMON SCENTED COD WITH A RHUBARB COMPOTE (Serves Four)
INGREDIENTS:
175g of fresh cod (per serving) 3 sticks of rhubarb, peeled and cut into rough chunks Juice of ½ lemon 3 tsp. olive oil
1 tbsp. of honey A few sprigs of fresh dill Salt and pepper 50g of gluten-free flour 1 small bunch of cherry tomatoes on the vine
METHOD:
Put the flour on a plate and
season with a pinch of salt and pepper, grate the zest of ½ lemon into the flour (simply using the smallest size on your grater, grate the lemon skin). Roll the pieces of cod into the flour and coat fully, making sure to tap off any excess flour. Put a pan on a medium heat and add 2 tbsp. of olive oil. When the pan is hot add the cod, skin side down and cook for 3-4 mins to get the skin to a nice brown crisp. Turn the fish, add in the cherry tomatoes and cook for a further 4-5 mins. Remove from the heat, leave to rest in the pan while you finish the rest of the dish. Put on another pan or small pot on a high heat and add the rhubarb, honey, lemon juice and 3 tbsp. of water. When the rhubarb is soft remove from pan and serve on the side of the plate. Garnish with the cherry tomatoes, fresh lemon and dill.
