The Coral Leisure Half Marathon & 10km Run

The Coral Leisure Half Marathon &10km will take place on March 22nd 2015 starting from the fantastic venue of Wicklow’s Historic Gaol. This is the 5th year of this popular, scenic and atmospheric race. In 2013 we introduced a flatter half marathon which was very well received. We look forward to welcoming over 1,500 participants to the race in 2015.

The unique Finish area in the Courtyard of Wicklow’s Historic Gaol and the scenic Coastal course has been a big hit with runners and walkers from all over the country. Finishers will receive a bespoke Medal, a shower afterwards in the local Coral Leisure centre and refreshments in Wicklow Gaol. The race will also provide a quality Training top and a timing chip to record your walking or running time. There is a dedicated walking section which starts earlier for the Half Marathon to ensure everyone enjoys the atmospheric Finish area in the Courtyard of Wicklow’s Historic Gaol. There is no car with the engine running or helicopter to whisk you away to freedom - the Guards along the route will ensure this! Walk or run the Half Marathon or 10km to your freedom. Wicklow Mountains Challenge Finished a few 5km races and keen to challenge yourself to do a 10km? We have the perfect race for you! Sign up for the Wicklow Mountains 10km and prove to yourself you can do it while also raising much needed funds for people living with EB.

Unlike road races, you will run through the wild terrain of the Wicklow Mountains so it’s that little bit more challenging. A tough route for the 10km option. A short gentle climb leads to a harder climb to the summit of Trooperstown Mountain. The effort will be rewarded with a beautiful vista of the Wicklow Mountains. A steep descent bring you down into Trooperstown Forest and across the Avonmore River from where the

next, but easier, climb starts. This climb brings us onto Paddock Hill before picking up the Wicklow Way and finishing at Brockagh Forest. Celebrate National Tree Week with a guided walk of the trees in Powerscourt Gardens with our Head Gardener Michael Byrne. The trees on the estate have been planted over the past two centuries and there are hundreds of varieties for you to discover. While many of these trees are a familiar sight to us, when they were first planted they were mostly new plants, collected from the Americas and all over the world. Chain Reaction Cycles Emerald Enduro - 2015. Enduro World Series Round 2 On the weekend of the 23rd and 24th of May 2015 Ireland will host the second round of the Enduro World Series mountain bike race. The world’s top riders will line out in the Wicklow mountains for two days of racing over technical terrain in a rally style format with testing special stages. Enduro mountain bike racing is a back to basics format, it is about riding your mountain bike fast on technical trails and reflects what the vast majority of non-professional mountain bikers love about the sport. As such it has grown very quickly with the 2014 Enduro World Series selling out in a matter of hours. The format has also attracted lots of current and former elite level racers from other disciplines with some races last year boasting seven World Champions on the start line. The event takes place over three days, with practice on Friday 22nd and Saturday 23rd, with

the race itself on Sunday 24th of May. Enduro is virtually unique among top level world racing events in that regular riders can sign up to race alongside the world’s best on the same tracks. Racing takes place in a rally style format with timed (generally downhill) stages and non-timed transitions between these stages. The Irish round of the World Series will see riders take to the trails, a mixture of the world’s best and amateur riders. Some 70 international journalists, photographers and film crews will descend on the race for the duration to document the goings on.

Add the chicken and stir-fry for 2 mins more. • 200g trimmed broccoli florets (about 6), halved • 1 chicken breast (approx 180g), diced • 15g ginger, cut into shreds • 2 garlic cloves, cut into shreds • 1 red onion, sliced • 1 roasted red pepper, from a jar, cut into cubes • 2 tsp olive oil • 1 tsp mild chilli powder

4. Drain the broccoli, reserving the water. Tip the broccoli into the wok with the soy, honey, red pepper and 4 tbsp of broccoli water then cook until heated through. 5. Meanwhile, cook the rice following the pack instructions and serve with the stir-fry.

1. Heat oven to 220C/200C fan/ gas 7. Tip the potatoes into a large shallow roasting tin and toss with 1 tsp olive oil and some seasoning. 2. Roast for 20mins until just starting to colour, then scatter over the lardons and return to the oven for 10 mins to crisp up.

Season, then return to the oven and cook for 20mins more until the salmon is just cooked through. 4. Meanwhile, cook the peas in boiling water for 2mins and drain. 5. When the fish is cooked, lift it to a serving dish. Stir the peas and spring onions through the potatoes, drizzle with a splash of vinegar. Stir through the mint and season to taste. Spoon around the salmon and serve.

Thus we coined the phrase “Traditional Celtic Cuisine.” Ireland has an enviable reputation for good wholesome dishes, many of which offer some of the finest quality foods. Between Paul and Sylvia they have 50 years experience in this business and have worked in France, Germany and New York. They also ran the mystic Celt restaurant in Dingle, Co. Kerry.

Teriyaki Beef

Ingredients: (Serves 4)

Cajun Salmon, Tomato Coconut Sauce

• 4 4oz fillets of salmon (get from Fishman on the quay) • 1 tsp of Cajun seasoning • 1 cup of tomato relish • 1 cup of coconut milk

Method:

1. Before starting heat oven to 180c. Season salmon with Cajun seasoning and roast for 12 mins. Mix relish and coconut together, bring to boil and serve with salmon. For vegetables add in 4 cherry tomatoes with salmon for the last 5 mins. 2. Serve with citrus and herb infused Cous Cous. 3. 4oz Cous Cous, zest and juice of 1 lime, 1 tbsp chopped mint, chervil and basil (herbs can be your choice) 1 tsp fresh grated ginger, half teaspoon of turmeric and salt and pepper to taste. 1 pint of boiling veg stock (pint of water with 1 stock cube) 4. Put all except stock into metal dish, pour boiling stock over and cover tightly with cling film. Aſter 5 mins fluff with a fork, taste, season and serve. Chef’s Tip: When Cous Cous is cold, grate in 1 carrot, 2oz of raisins, 2oz of nuts (choice is yours, I use hazelnuts), and 150ml of your favourite yoghurt for a lovely sauce. You could also use the tomato coconut sauce instead of yoghurt and flake some cooked salmon in the salad.

Ingredients: (serves 4) 16 button mushrooms 4 oz cream cheese 2 fine chopped clove of garlic 1 teaspoon fresh marigold

Method:

1. Mix cheese and garlic together. Remove stalk from mushroom and fill each one with cheese mixture. Bake in 160c oven for 12 minu tes or deepfry in our gluten free batter @ 175 for 3 mins Chef’s Tip: You can also add smoked salmon, feta or any kind of nut to this mixture. Gluten Batter: 10oz gluten free flour, 4oz of corn flour, 6 fl oz of sparkling water, 1 teaspoon of tumeric, half teaspoon paprika and half a teaspoon of fresh black pepper. Seasalt and 2 egg yolks optional

Baked Chicken with Pasta

Ingredients:(serves 4) • • • • • • • • • • • •

4 4oz Chicken Breast Half a ball of fresh Mozzarella 1 Tbsp of capers or diced Gherkins 4 fresh Basil Leaves Zest of 1 Lemon 2 oz grated Parmesan 2 Tin of Tomatoes (400 gr) 2 tsp Tomato Paste 2 clove of garlic Half a small onion (small dice) 1 tbsp of fresh basil Wholemeal Bow Tie Pasta (or your favourite, but try to keep Wholemeal)

• Serve with some Green Beans and Almonds (beans will take 4 mins so you can cook with pasta to save water and almonds will toast in oven with chicken 2/3 mins)

Method:

1. Cut Chicken criss cross, without going completely through the meat (your butcher will do this for you). Place all the stuffing items into middle of Chicken and fold neatly over (you can use toothpicks to help keep it closed) Place in a casserole dish and place in a pre-heated 200c oven for 8 mins. Pour the Tomato sauce over and bake at 175c for 20 mins. 2. To make the sauce,cook the onions and garlic on a low heat in some rapeseed oil. Cook for approx 15 mins (you should be able to smell these upstairs), add in the tomatoes and rinse cans out with water (you add this water as well) Add the Tomato paste and bring to the boil, Simmer until water has evaporated and add in Basil. You made need to season with a little sugar, salt and fresh black pepper. 3. Cook the pasta according to the packet and make sure you have plenty of water so the pasta can move around. Do not add oil to the water. Chef’s Tip: Roasted peppers and chorizo also go well in the stuffing. You speed up water to boil by adding salt as it conducts heat. You can also cling wrap the top of your pot and it will reach boiling point very quickly (make sure no cling film is near cooker)

1 lb of beef cut into strips 1 tbsp teriyaki sauce 1 tbsp apple cider vinegar Juice and zest of 1 lime 1 tsp turmeric 1 tsp grated ginger (best grated from frozen) 1 med onion sliced 2 clove garlic sliced 1 red pepper sliced 1 yellow pepper sliced 1 small broccoli (blanched) use stem as well as florets More teriyaki sauce 6 oz uncooked brown rice (cook according to packet instructions)

Method:

1. Marinate beef in first 5 ingredients and make sure it’s coated well. If it’s cheap beef marinate for at least 24 hours, 48 if you can. If it’s an expensive cut marinate for an hour. 2. Heat your pan until hot and add a tbsp of Wicklow rapeseed oil. 3. Cook the beef in 2 batches (if you add too much the temperature of your pan will drop) and using a slotted spoon remove beef into clean bowl. Add in 1 cup of water and let bubble to deglaze your pan. How Much Wine do you need? Champagne / Sparkling

A standard sized bottle of champagne or sparkling wine will serve 8 glasses. For a champagne reception, you should ideally allow 2-3 glasses per person. So for 100 guests, you will need 100 x 2 = 200 glasses or 36 bottles.

Red & White Wine

Rita Byrne, our Principal, originally from Blackrock Co. Dublin, has been living in Greystones for 25 years. She is married to David and they have two children Louise and David. She opened her first Montessori in her home 18 years ago with six children and now operates four schools, in Greystones, catering for children from 6 months to 13 years. Rita is a St. Nicholas Montessori Teacher with many qualifications in childcare, psychology, medical area, etc. She loves her job and this shows in the high standards, happy children and motivated staff in her care. Rita understands that yes it is more challenging, expensive and time consuming to run four schools but much more beneficial and natural

for the children to spend time in small home like facilities rather than in large crèches. Rita also finds time to be the leader of the Greystones Chernobyl Project Group as she feels that it is very important for all the community to reach out to children around the world whose lives are very challenging and different from ours. “When we all help a little we can make a big difference!!” All our staff are fully trained and Garda Vetted and believe strongly in creating a homely, yet educational environment which nourishes the individuality and talents of all the children who attend our facilities. Avondale Forest Park lies mainly on the west bank of the Avonmore River on 505 acres of land which provide an endless variety of walks with scenery including the towering impressiveness of the massed conifers on the banks of the river. The park has six way-marked walks and trails: • River Walk • Cairn Walk • Exotic Tree Trail • Pine Tree Trail • Centenary Trail • Slí na Slainte (Path to Health) Avondale also has a lovely wooden playground area with swings, slide and climbing frames. You will also find many of our common woodland animals here including red squirrel, badger, hedgehog, stoat, fox, rabbit and hare. AVOCA VALLEY WALK - MEETINGS TO WOODENBRIDGE

An easy walk along this beautiful valley floor, following the flow of the Avoca River. The route follows a footpath alongside the road. With plenty of refreshments opportunities along the way and time for a stop in the beautiful Avoca Village, not to be missed. This is a linear walk and can be started at either end. Grade: Easy, the route is not marked but follows the main road. Distance: 7km

Highest point: 50m

Estimated time: 1-1.5 hrs

Suitable for: Everyone

Terrain underfoot: Footpath.

Notes: This route follows a busy public road, please keep children safe

SPRING BREAK

FOREST WALK TROOPER STOWN THE SUGARLOAF TRAIL Trooperstown Forest is home to the Glen of Imaal Mountain Rescue Teams base (which is easily seen from the road) and the Wicklow Mountains National Park Headquarters. Drive in along the road which will bring you to a car park beside the river, your walk starts here. Cross over the bridge and take the forest road leading to the left, this then branches as you take the route to the right and uphill. A tough climb will bring you to the top of the forest with amazing views over the Wicklow Mountains and into Glendalough Valley. Descent along the wide road to the start point. You can do this walk in either direction. Distance: 2.5km

Suitable for: families etc, steep uphill sections

The Great Sugar Loaf Mountain dominates the skyline as you drive south from Dublin into Wicklow. This unique mountains stands apart from the rest of the upland and is instantly recognisable by its conical shape. The route starts in a car park on Red Lane under a concrete arch. The obvious track leads you up onto a shoulder where the track turns right with loose rock underfoot. A steep climb brings you to the summit. Return the same route. Grade: Easy

Notes: Not suitable for pushchairs. Dogs must be kept on leads at all times. Upper section is steep and needs care especially when descending.

GLENDALOUGH MINER S ROAD WALK (PURPLE ROUTE)

This easy ramble starts in the Upper car park and brings you along the shoreline of the lake. As you get deeper into the valley the rugged mountains loom high above. Here you can explore the old mining works. Don’t forget to keep an eye for Saint Kevins Bed on the other side of the lake. Grade: Easy, the route is marked with purple arrows Distance: 5km Estimated time: 1hr 10mins Terrain underfoot: Forest road and track

One of the highlights of walking in Wicklow. This linear walk takes you from Greystones to Bray along the stunning coastal path. The path is well maintained and you can return by light rail (DART) to the start point. Grade: Moderate, the route is marked with Red arrows Distance: 7 km Terrain underfoot: Footpath

Boxing Gennady Golovkin v Martin Murray, Feb 21st The middleweight Martin Murray, who has twice come up on the wrong side of skewed judging decisions in world title fights, will now get the spotlight the 32-year-old merits when he faces Gennady Golovkin, the most feared poundfor-pound puncher in the sport. Murray with a record of 29-1-1 – will return to Monte Carlo to face Golovkin, from Kazakhstan, on February 21 next year for a spit and sawdust power struggle back in the glitz of the coastal resort within Monaco. Murray’s name will really be up in lights if he can pull of the improbable against the freakishly strong puncher Golovkin. Murray drew with Felix Sturm for the WBA middleweight title in 2011 and lost a tight decision to Sergio Martinez for the WBC strap in Argentina in 2013. It is a case of third time lucky against the unbeaten WBA middleweight champion Golovkin, record 31-0, with 28 knockouts. Golovkin will go in search of his record 19th straight stoppage against Murray.
