Wicklow ‘The Garden of Ireland’, is renowned worldwide for its scenic beauty, offering a variety of walking challenges – from woodlands and rolling hills to wild craggy mountain climbs. The county lies just south of Dublin on the East Coast of Ireland. It is home to the largest area of unbroken high raised ground in Ireland, covering almost the same area as that of Mont Blanc, approximately 50 km long by 40 km wide. The Festival will be based in the Brockagh Resource Centre with many of the walks taking us through Wicklow Mountains National Park. The Centre is situated in the heart of the Wicklow Mountains, on the road between the village of Laragh and Glendalough. All walks are led by experienced walking leaders who will enhance your day with information on local history flora and fauna. The weekend offers a selection of walking choices which you can mix, match, or just choose one:

• Climb Leinster’s highest peak, Lugnaquilla (925m). • A night walk on Friday the 27th promising to be a unique and adventurous experience. • A selection of day walks from challenging, moderate and easy on Saturday and Sunday. • A moderate walk on Monday the 30th to celebrate the completion of a great weekend.

Roast Leg Of Lamb with Garlic & Rosemary

Slow Cooker Beef Stew (recipe for 6lt slow cooker)

Ingredients: • 1 leg of lamb, approximately 1.6 kg • 5 cloves of garlic, peeled and crushed • 2 tablesp. rapeseed or olive oil • 2 good sprigs of fresh rosemary, finely chopped • Salt and freshly ground black pepper • 250ml water • 60ml dry white wine • 4 tablesp. honey • 2 tablesp. Dijon style mustard • 1 tablesp. redcurrant jelly

Method: • Take the leg of lamb out of the fridge 1 hour in advance of cooking. • Preheat the oven to Gas mark 4, 180°C (350°F). • Mix the garlic with the oil and rosemary. Use your hands to coat the lamb all over with the mixture, massaging it in well. Season. • Place the lamb on a rack in a roasting tin. Pour the water and the wine into the tin and roast for your calculated cooking time. • Medium: 25 minutes per 500g plus 25 minutes Well done: 30 minutes per 500g plus 30 minutes. • Mix the honey and mustard. Ten minutes before the end of cooking time brush the mixture all over the lamb. • When the lamb is cooked remove it from the oven, wrap the lamb in tinfoil and allow to rest for 10 minutes. • Meanwhile, place the roasting tin over a medium heat and add 150 ml of boiling water and the redcurrant jelly. Stir well with a small whisk or spoon to release any rich sediment. Taste and season. Strain the sauce into a jug. • Carve the lamb into slices. Serve with the sauce, roast potatoes and a salad of chopped cherry tomatoes, sliced red onion and basil.

Des Doyle Butchers Bacon And Cabbage Ingredients: • 1½kg loin of bacon • 1 carrot • 2 celery sticks • 2 leeks • 1 teasp. peppercorns • 1kg cabbage, finely sliced • 1 tablesp. butter Topping

Ingredients: • 2 tbsp olive oil • 2lbs stew meat, cut into 1-inch cubes • Salt and freshly ground black pepper, to taste • 1lb baby potatoes, quartered • 4 carrots, cut diagonally into 1/2-inch-thick slices • 1 onion, diced • 3 cloves garlic, minced • 3 cups beef stock • 2 tbsp tomato paste • 1 tbsp Worcestershire sauce • 1 tsp dried thyme • tsp dried rosemary • 1 tsp smoked paprika • 2 bay leaves • 1/4 cup all-purpose flour • 2 tbsp chopped fresh parsley leaves.

• 1 tablesp. mustard • 1 tablesp. oven-dried breadcrumbs • ½ tablesp. brown sugar • Knob of butter Method: To Cook: 1. Place the joint in a large saucepan. 2. Add chopped vegetables and peppercorns. Cover with cold water. Bring to the boil, then simmer gently for approximately 20 minutes per ½ kg. Set oven to Gas Mark 6, 200ºC (400ºF). 3. Remove the joint from the saucepan. Reserve liquid. Remove the rind and score the fat. Place the joint on a roasting dish. 4. Spread with mustard and breadcrumbs, sugar and a knob of butter. 5. Place in the oven for 15-20 minutes. To Cook the Cabbage: 1. Place the cabbage in a saucepan and barely cover with some of the reserved cooking liquid. Bring to the boil. 2. Reduce to a simmer and cook for 2-3 minutes. Drain well and toss in butter. Season to taste. 3. Slice the bacon and serve on the bed of cabbage, and of course floury potatoes.

Method: 1. Heat olive oil in a large skillet over medium heat. 2. Season beef with salt and pepper, to taste. Add beef to the skillet and cook until evenly browned, about 2-3 minutes. 3. Place beef, potatoes, carrots, onion and garlic into the slow cooker. Stir in beef stock, tomato paste, Worcestershire, thyme, rosemary, paprika and bay leaves until well combined; season with salt and pepper, to taste. 4. Cover and cook on low heat for 7-8 hours or high heat for 3-4 hours. 5. In a small bowl, whisk together flour and 1/2 cup stew stock. Stir the flour mixture into the slow cooker. Cover and cook on high heat for an additional 30 minutes, or until thickened. 6. Serve immediately, garnished with parsley, if desired.

Tyres Tyres are your carâ&#x20AC;&#x2122;s first and only point of contact with the road surface, so the importance of regular upkeep and maintenance cannot be over stressed. Knowing when to replace your tyres is imperative but understanding the impact of incorrect wheel alignment and inflation and the benefit of tyre rotation will go a long way towards extending the life of your tyres.

When should a car owner consider replacing their tyres? The legal limit for tyre tread in Ireland is 1.6mm. Every tyre has small rubber indicators inside the tread grooves, to indicate the 1.60mm limit. Once your tread is worn level with the symbol, it is time to replace them. A trained tyre technician will be able to check your tyre for ageing signs, sidewall damage or any other common fault.

What is wheel alignment and why is it so important? Wheel alignment (also called tracking) is a suspension adjustment, which sets the angle of wheels to the manufacturers recommended spec-

ifications. The main benefits of the wheel alignment are: Extended tyre life, improved fuel economy, better and safer handling of the car. It is a wear and tear item, so checking it twice a year is recommended. Usually, the check is free, and the charge applies only if the wheel alignment is off.

What is tyre rotation and when should a car owner consider having it carried out? Tyre rotation is moving the tyres from the front to the rear, or the other way

around. With the front axle drive cars, tyres on the front are wearing faster than the rear ones. It is recommended to move them to the rear once the tyres are halfway worn or 12 months after getting them fitted â&#x20AC;&#x201C; whichever comes first. This will extend the tyre life. The same procedure is recommended for rear wheel drive cars. The only difference here is that the rear tyres are wearing faster than the front.

How should a driver react if they experience a blowout while driving?

If a sudden tyre collapse occurs, the first thing is to stay calm, if possible. A tyre blowout will impact the way the car handles and might lead to a loss of stability. Best practice is to try to regain control of the car and slowly pull over to a safe spot. It is recommended to avoid slamming the brakes or swerving the car off the road. After all, it is only 25% of rubber contact that is lost, so keep two hands on the wheel and gradually reduce the speed.
