The 2014 Wicklow 200 & Wicklow 100
The Wicklow 200 is a non-competitive cycle ride that takes place on one day every June. It covers 200 kilometres around the roads of beautiful County Wicklow and attracts over 2000 cyclists from many different countries.
The shorter Wicklow Challenge takes place on the same day, and shares most of its route with the Wicklow 200. Taking part in the “Wicklow 200” or the shorter “Wicklow 100” is taking part in one of the best cycling challenges in Ireland. This very popular event which is on it’s 33rd year, incorporates some of the most difficult mountains in Co. Wicklow to cycle up and at the same time covers some of the most breathtaking scenic roads in the whole of Ireland. Over 2,500 cyclists from all walks of life took part in 2013 and they thoroughly enjoyed it. Most of those said that they

€240,000 transformation sees Wicklow Gaol become premier multi-sensory tourism hub One of Wicklow’s most iconic tourist attractions has undergone a tremendous €240,000 transformation, which sees the ancient prison become one of the country’s most high tech virtual reality historic attractions.
The project funded by Fáilte Ireland and Wicklow Enterprise Park is designed to engage the senses and bring to life two of the most turbulent centuries of Irish history. Holographic projections of cruel prison guards, lifelike mannequins of major historic figures and state of the art audiovisual systems recreate the sounds of the defiant cries of the 1798 rebels, the famine era the War of Independence and Civil War. The replica two-deck transportation ship now features holographic interaction with the ship’s Captain as visitors climb aboard the torturous 200-day journey to Van Diemens land. Iconic historic figures including Robert Erskine Childers (father of President Childers) Wicklow United Irishman Billy Byrne, the tragic female transportee Eliza Davis, Fr. Eoin McPhee the first
ever prisoner listed in the Gaol (arrested for saying a Rock Mass) and many other unforgettable characters have entire cells dedicated to telling their story, with imposing life-size figures and captivating audio-visual interpretation. The Red Coats ominously occupy the main floor of the prison and Governor Edward Storey is brought to life via holographic audio visual projections. Wexford-based multimedia company MMID will have the entire project completed and open to visitors from the 20th of May (this week). Designed to engage all the senses, visitors will step back in time as they journey through the original prison cells and experience a new era of life in Gaol as they move through the building. Descend into the dungeon and see the torture methods; climb aboard the replica transportation ship for an agonizing jour-
ney to Van Diemens Land; wander through the cells and meet the notorious protagonists of the 1798 rebellion and experience the overcrowding of the famine era, ascend into the Irish War of Independence and Civil War when Wicklow Gaol finally closed its doors as a prison for good. But not all of the prisoners left! Learn why Wicklow Gaol is world-renowned as Ireland’s most haunted building… The new experience also includes audio handsets in four languages, interactive points for children and a genealogy room where Irish and overseas visitors can research their ancestry. ardening should be fun, but there is no such thing as totally labour free gardening. Growing plants necessarily involves some work but this can be reduced to a minimum if the right approach is taken. Plants want to live but too many people fuss over them unnecessarily. Not only do they make extra work for themselves but they also harm their plants in the process and even kill them with kindness.

Avoid Having a Large Area of Lawn Contrary to popular opinion, maintaining a lawn in good condition is expensive, both in time and materials. In small gardens, a lawn can often be replaced with advantage by a hard surfaced area. This may be a wooden deck or patio made of brick, stone or slabs. A hard surface is expensive initially compared with a lawn but needs little maintenance and can be used throughout the year.
Deciding what you want Gardens are also for living in and the ideal garden should not only be beautiful but tailor-made to suit the needs of all those who use it. So before you rush out to spend money on masses of pretty plants and hard landscaping (building) materials, or even before you call in a professional designer, if using one, you must first decide what you really want from your garden and what practical as well as aesthetic functions it has to perform.
Keep on Top of Weeds Weeds are the greatest obstacle to hassle free gardening. Getting on top of weeds and preventing them from seeding, rapidly lowers the weed seed population in the soil. This is a major step towards reducing time spent on routine maintenance chores. Before planting make sure that perennial weeds are completely eliminated. This can be done manually or by spraying with a herbicide.
Garden Design Basics A well-planned garden will bring only ease and pleasure, like a well-planned house or beautifully tailored clothes. A good design will create a sense of harmony, linking people to nature, linking the house, garage, sheds and other buildings to the landscape and the plants to the soil. Garden design is not simply a matter of choosing plants and arranging them on your site. Making a garden is a process, beginning with the soil and the seasons and involving everything from construction to

For example, if your household includes boisterous children, then forget the promise of a perfect lawn for now. Instead, design around the children and their needs, but start planting up the boundaries and the walls of the house with all your favourite things, so that by the time the children have flown, a wonderfully mature framework of beautiful trees, shrubs and climbers will already be in place.
Light and Shade You should be able to jot down at a glance
where the light shines at different times of day, where the winds play hardest and where the rain lingers longest. (That area might need special draining.) All these things have a bearing on which plants you can grow well and what parts of the garden are best suited for sitting out at various hours. Now you can start filling in the details of what you consider essential features.
Work with Nature If a plant dies or fails to thrive, it is often because it is not suitable for that area. Plant the right plant in the right place. Providing shelter from strong wind is a major aid towards hassle free gardening. If the garden is exposed, most plants will fail to thrive until suitable shelter is established. Plants such as Escallonia macrantha, Griselina litoralis, hebe spp and elaeagnus are good shelter plants. Don’t plant wind susceptible plants, such as Japanese maples and rhododendrons, in an exposed situation. Give preference to wind resistant species such as heathers, hebe, cistus, olearia and sorbus. As gardens become smaller and apartment living more popular, many people are growing plants in containers to decorate patios and balconies. Three of the most useful kinds of container are: Window boxes, hanging baskets, large planters. The style and material used in their construction should fit in with the proposed environment. Wood, reconstituted stone and terracotta are suitable for older houses but good quality plastic, fibreglass and concrete may be more suitable for modern homes.

Preparation for Planting Window Boxes Window boxes made from softwood must be treated with a plant safe wood preservative before planting. The box should be fixed in place on the sill before filling and planting. Secure fixing is especially important for boxes on upstairs windows. Boxes must be at least 20cm deep and 20cm wide to prevent plants from drying out too quickly. Cover drainage holes with small stones, crocks or fine mesh to prevent blockage. If weight is not a problem add a 2cm layer of gravel as an aid to rapid drainage and partially fill with compost.
Hanging Baskets A hanging basket can weigh over 20kg when planted so it is important to ensure that the supporting hook or bracket is secure. To facilitate filling the traditional wire basket with compost, the round bottom should be supported in a bucket or large pot. A 2 cm layer of moist sphagnum peat should be used to cover the interior of the basket. A liner, placed in the open basket before filling with compost, is essential to reduce watering. Pre-formed liners are available for standard-sized baskets in a range of material including plastic, coconut fibre and bitumen paper. Waterproof liners greatly reduce the need for watering especially in summer. A small saucer
can be placed at the bottom of the container to serve as a small water-holding reservoir. Compost is added to the basket during the planting operation.
Climbing Plants
Climbing plants are an essential feature of every garden and they can be used to transform a wall, trellis or fence. Alternatively, you can grow climbing plants through other plants, especially shrub varieties that flower early in the season. A climbing plant can add that extra colour later in the year. As well as growing climbing plants simply for the flowers, berries or autumn colour, you can use them to disguise an unsightly oil tank, to screen dustbins or to conceal some other unattractive feature.

baskets and leave them in a sheltered spot before hanging fully outside. If your baskets are looking withered after the winter soak them in overnight before planting.

3. Stake any plants that will need a support during the
summer months. Now is a good time to create tripods or any other supporting constructions for your peas, runner beans and sweet pea.
4. Prune and remove dead foliage. Make a note of when your bulbs have finished flowering and remember their foliage cannot be removed for at least 6 weeks.
5. Keep roses healthy. Now that the leaves of roses have emerged you can begin to spray them once every 14 days to ward off blackspot and greenfly.
6. May is a good time to sow summer crops like sweet
peppers, aubergines, salads and tomatoes. Your plants will need to be looked after for water and cover with fleece if there is frost forecast. Do not feed these until they start to produce flowers. You want the roots to be well developed before you feed for flowers. Regularly water crops in pots and growing bags, daily if needed in warm weather and continue to check them for signs of pests.
7. Feeding time. Strawberries should be starting to show signs of flowering. This is the perfect time to start feeding them a high potash feed such as sulphate of potash or tomato feed.
8. Fight weeds. Hoe around vegetable beds as young
weeds emerge. It’s far easier to do this now than when weeds establish roots.
9. Don’t forget to treat your lawn for moss and weeds
and also give it a feed. Evergreen complete does all this for you. Make sure the blade of the lawn mower is high so the lawn isn’t being cut too tight.
10. Declare war on slugs - the best way to get rid of slugs is to use pet-friendly slug pellets or organic slug defence gel. You can also protect your plants by sticking copper tape around your pots and raised beds. The copper tape burns their belly so they won’t cross over it.

Barbeque Chicken Summer (Serves 4-6) Drumsticks: (Serves 4) Beefburgers: Ingredients 8 Chicken Drumsticks
Marinade 1& ½ Tbsp Tomato Ketchup 1 Tbsp Soy Sauce 1 Tbsp Vinegar 1 Tbsp Honey 1 ½ Tbsp Brown Sugar 1 Tsp Wholegrain Mustard 1 Tsp Dijon Mustard 1 Orange (juice & zest)
Method: 1. Mix all the marinade ingredients together in a large bowl and season well with pepper. 2. Place all the chicken drumsticks into the bowl and stir around until all the drumsticks are coated in the sauce. 3. Cover the bowl with cling film and put it on the bottom shelf of the fridge to marinade for at least a couple of hours. 4. Light the barbeque and when it’s hot, place the chicken pieces on it. 5. Make sure the chicken cooks evenly on all sides by turning it regularly. This may take at least 25 minutes. 6. Before serving, check that the chicken is properly cooked by removing it from the heat and cutting into the thickest part of it with a clean knife to make sure that it is piping hot all the way through, there is no pink meat remaining and the juices run clear.
BE SAFE: All meat and poultry needs to be kept properly chilled until just before it is cooked. Keep raw meat and poultry in thr fridge or use a cool bag if you are taking it away from home!
8. Rub the clove of garlic over the ‘inside’ of the bun to give it a garlic flavour. Drizzle with a little olive oil. Place a slice of tomato on the garlic side of the bun and season with pepper. 9. Before serving, making sure that the burgers are cooked thoroughly, by cutting into them with a clean knife and checking that they are piping hot all the way through, there is no pink meat and the juices run clear. 10. When cooked, serve the burgers immediately in the prepared buns and garnish with lettuce, mild onion, red peppers and a small dollop of low-fat mayonnaise or tomato sauce.

Method: 1. Cook the onion and garlic in a frying pan with some oil until soft (approx 2 minutes on a medium heat). 2. Put the mixture in a large bowl and leave it for a short while to cool 3. Add the mince, sage and egg. Mix well and season with pepper. 4. Shape the mixture into thick burgers (put some flour on your hands to prevent the meat from sticking to them). Put the burgers in on a covered plate or in a sealable container. 5. Keep the burgers in the fridge until you are ready to cook them. 6. Cook the burgers on the barbeque. Turn them regularly and make sure they are cooked all the way through. This may take at least 25minutes. If you prefer, cook the burgers in a hot frying pan for 10-12minutes on each side. 7. While the burgers are cooking, toast the burger buns on the barbeque or in a toaster.
Cullen’s 6 golden rules for a safe BBQ: 1. Keep raw meats completely separate from cooked meats and food that is ready to eat. Remember to use separate utensils, plates and chopping boards for raw and cooked meat. Never put cooked food on a dish that has been used for raw meat. Also, if you like to marinate your meat, never use any marinade you have used on raw meat to coat ready-to-eat foods including cooked vegetables or cooked meat. 2. Always thoroughly wash your hands after handling raw meat. If you don’t, you may pass harmful bacteria from raw meat, poultry and their juices to cooked food, and this can lead to food poisoning, something your guests won’t thank you for. 3. Leave frozen food to thaw out fully on the bottom shelf of your fridge before you cook it. Keep raw meats and poultry chilled in the fridge or in a cool bag until just before cooking. 4. Light the barbeque well before you want to start cooking on it. Make sure it’s very hot and that the flames have died down before you start to cook. 5. Chicken, pork and any meat that is minced or skewered (such as burgers, sausages and kebabs) can contain bacteria throughout, so they must be cooked all the way through. You can eat steaks or joints of meat ‘rare’ because any harmful bacteria will only be on the outside and not in the middle. 6. Just because the meat turns crisp and brown on the outside don’t assume it’s properly cooked inside. Check it’s piping hot all the way through with no pink meat left, and that the juices run clear. Remember to turn food regularly and move it around the barbeque to make sure it is cooked evenly.

Citrus Cured Salmon Ingredients: (serves 4)

12 oz of salmon, thinly sliced 1 lime & 1 lemon

Method:
2lb Crabmeat 1lb Mashed potato 1 tsp Lemon juice Salt & Pepper 1 Tbsp Chopped parsley 1 Onion (finely chopped and sautéed) 1 Tbsp of oats Flour, Beaten Egg & Breadcrumbs
1. Ask your fish monger if he would slice your Salmon very thinly 2. Juice both your lemon and lime 3. Simply arrange your salmon slices on your serving plate. To finish, carefully pour the juice over your salmon. 4. Cover and refrigerate for at least 1 hour

In a large nonstick skillet, heat a knob of butter over medium-high heat. Add crab cakes and cook 3-4 minutes on each side or until golden brown.

Method: 1. In a clean bowl, mix the cheese and garlic together. 2. Remove stalks from the mushrooms and fill each one with cheese mixture. 3. Bake in a pre-heated oven on 160c for 12 minutes or deepfry in our gluten free batter (see below)at 175 for 3 minutes.

Strike your Irons Purer by Donal Gleeson, PGA Professional, Old Conna Golf Club. The key to being a good iron striker is getting your club in position to strike down on the back of the ball. While the Tour Pros always take a divot when hitting their irons most amateurs struggle to do so, and when they do it is taken before the ball causing a duffed shot. This is generally because the angle of attack is too shallow. There are a number of common issues that cause this shallow angle of attack.
1. “Low and Slow” This is the most common misconception I have come across in the game. Don’t push your club out away from you at the start of the swing. Visualize the golf swing as a circle. As you take the club away allow your wrists to hinge gently. This will allow you to pick the club head up off the ground sooner in the swing. Your weight should stay nice and centered and your hips will not need to rotate as much which will allow you to turn through the ball much better. To practice this movement place a head cover behind the ball opposite the outside of your right foot
as shown in the photograph. You should be able to hit balls quite comfortably without touching the cover in your backswing or follow through.
2. Swing Plane Another common cause of poor iron shots is a swing plane that is too flat. I find most amateurs swing their irons behind themselves almost like a baseball bat. from there they tend to reroute the club several times before they hit the ball leading to several different swing faults. To make sure your swing plane is correct try practicing your backswing standing directly in front of a wall. You should be able to complete your back swing movement without the club touching the wall as shown in the photograph.
3. Rotate through the ball
Avoid trying to hit at the ball during your swing. Instead swing through allowing the ball to simply get in the way of the movement. To help you do this start your down swing by rotating your right shoulder (for a right handed player) under your chin. This movement will allow you to rotate better through the ball and hit it with your body and not just your hands.
4. Don’t fear divots. All good iron players take divots so don’t be afraid to take them yourself. You do not need to take massive sods but at least “brush” the roots of the grass after impacting the ball. If you manage to do this you will be hitting down on the back of the golf ball and generating a cleaner purer strike.
