St. David’s celebrates its LC Students

On Thursday, 8th of September, past pupils returned to St. David’s Holy Faith Secondary School in Greystones to celebrate their recent LC results. All students were invited to the ceremony to celebrate, with their teachers and peers, those who received an A grade on a higher level paper. Special recognition was given to the best result in each class: Adam Judge (6.7), Paul Clark (6.14) and Daniel Broghan (6.26). The ceremony concluded with the Paul Ellis Memorial trophy awarded to Adam Judge for achieving 595 points. Overall 51% of St. David’s students achieved over 450 points (3 X national average) and 24% achieved over 500 points (2.5 X national average).

Wicklow Brewery’s ‘HopKnut Pale Ale’ takes top award in London After coveting a gold medal for its ‘Hopknut’ Pale Ale and bronze medal for its Wicklow Weiss at the annual IBC (International Beer Challenge), they attended an Awards Ceremony in London on Monday 5th September. All gold beer medal winners were present and overall trophy winners were announced. The IBC has been in operation for over twenty years, acknowledging the skill of the brewer and is an internationally recognised symbol of quality frequently displayed on bottle labels. Breweries from all over the globe enter to be tasted by renowned internationally industry judges who judge beers on appearance, aroma, taste and finish. Wicklow Brewery were thrilled to take the top trophy for the ‘Best Ale under 5% ‘ at this internationally judged event. This is a great achievement for a small family Brewery in Redcross, Co. at Wicklow Mountains National Park Saturday 8th October Wicklow is home to a large population of wild deer. They are particularly impressive in autumn when they ‘rut’. National Park staff shall have telescopes set up on the Spinc walking trail between 11am and 4pm. Anyone walking on this route is welcome to stop by, view the deer through the telescopes and discuss the deer and their ecology with our staff. Where: The Spinc walking trail (white arrows), Glendalough. Participants are advised to visit to the Information Office (Upper Lake, Glendalough) to get directions to the telescopes before setting out.

For Halloween Kia Ora Mini Farm will again be transformed to a Spooky Farm with decorations galore. Practicalities: The Spinc trail takes 3 hours. All are welcome, although the hike may be too long for young children. Please note, that participants will not be escorted on the hike. Hiking boots and rain gear are recommended. Bring binoculars if you have them. All dogs must be kept on leads. This event is free of charge, but please be aware that the Upper Lake car park has a €4 charge.

Haunted Forest Walk Marlay Park, Sunday 30th Oct

The woods in Marlay Park are going to get pretty weird this Halloween as Samhain comes back to haunt them for the 10th year in a row on Sunday October 30th 2016. Even the best Ghostbusters have not been able to stop our ghouls and goblins coming back to haunt the woods each year!!! If you can’t beat the ghouls and goblins join them and dress your worst for the scariest Samhain ever. The event will feature a spook filled walk with Halloween Spirits, Chills, Freaks and Frights. For one petrifying night only, the woods will be alive with freaky fog, ghastly spiders, all seeing eyeballs, and menacing witches and wizards. For maximum scare factor lighting, sound effects and smoke will all add to the “atmosfear” on the haunted woods walk, which will be open until 8.30pm. We want to see you in your Halloween costumes but remember it is an outdoor event so warm clothing is recommended. The walk is approx. 1.7km long on a path suitable for buggies and wheelchairs.

IMPORTANT INFORMATION The Haunted Woods will be open between 3.30pm and 8.30pm. Entry is FREE but by WRISTBAND ONLY. Wristbands can be collected at the dlr Co Co Markets in Marlay Park on Saturday October 22nd and Saturday October 29th from 8am each day. Wristbands will be available while stocks last on a strictly first come first served basis, limited to six per family. Half of the available supply will be distributed each Saturday. Age – 6 to Old Age Number of Players – Any Amount What you need: • Large basin/ bucket or bowl of water • Apples • Towels

How to play: • Attach strings to the stalks of the apples and hang them off the door frame, washing line or tree. If you can’t find apples with stalks attached. Then you can use an alternative such as donuts – which are a good option for younger players. • The aim is to be the first person to eat all of your apple or donuts without using your hands. Prizes can be given not only to the person who finishes first but who also manages to get the first bite.

You can add apples in when one gets taken out. • Once the game is set up all you need to do is give players a chance to try catch an apple using only their teeth. • Hands should be kept behind the players back. Younger players could perhaps be allowed to use one hand to guide the apples but not to actually place the apple in their mouth (for instance they can stop the apple floating away but cannot pick it up to bite). Alternatively, you could use a shallower basin for this Halloween game to make it more manageable for the younger kids. • It is a good idea to have some towels nearby to dry faces (and possibly hair) after each player’s turn at this Halloween game.

Snap Apple …

Ingredients:

cakes Cupcakes: • 200g Soft Butter • 175g Golden Caster Sugar • 250g Self Raising Flour • 1 tsp Baking Powder • ¼ tsp Salt • 3 Large Eggs, at room temperature • ½ tsp Vanilla Extract • 100ml Milk, at room temperature

To Decorate: • 300g Icing Sugar, sifted • 2-3tbsp Milk • Green Food Colouring Paste • 36 Mini Marshmellows, 12 snipped in half (for the eyes) • Tube of Black Piping icing or gel

Age – 8 to 12 years Method: Number of Players – Any Amount • Heat oven to 180C/160C fan/gas 4 and line a

Next, make a widthways cut about 3cm from the top of the cake, about 1cm deep. Slice a 5mm piece off the surface of the cake to meet this

Method: • Break the Madeira cake and cookies into the bowl of a food processor, pour in the melted milk chocolate and whizz to combine. • Tip the mixture into a bowl, then use your hands to roll into about 10 walnut-sized balls. Chill for 2hrs until really firm. • Push a skewer into each ball, then carefully spoon the white chocolate over the cake balls to completely cover. • Stand the cake pops in the pumpkin, then press a Smartie onto the surface while wet. Chill again until the chocolate has set. Before serving, using the icing pens, add a pupil to each Smartie and wiggly red veins to the eyeballs.

Instructions: • Paint your chosen colour mask around the eyes. On the side of one cheek add a small flick pointing to the mid-cheek. • Draw three dark green turtle bumps on the forehead on top of your chosen mask. Add dark green semi-circles at the bottom of the mask on the cheeks and nose. • Outline the mask and the green shapes in black. Add black lines at the sides of the nose and at the top of the nose underneath the eyebrow line. • With a thin brush, paint white highlights on the dark green paint on the forehead. Do the same above and below the eyes on the mask.

Zombie … What you will need: • Classic Face Paint White • Classic Face Paint Light Grey • Classic Face Paint Black • Classic Face Paint Bright Red • Face Painting Brushes • Face Painting Sponges

Instructions: • Using a sponge, cover the face in white paint. Then, mix some white with a touch of black and dab the grey on the head, chin and cheek. • Mix some more grey and paint darker circles around the eyes. Then add some definition to the grey patch on the right cheek. • Use a brush to paint a large black not so perfect triangle on the left cheek, then add an arrow shape on the left temple and three lines on the right cheek. • Then take some red paint and the corner of a sponge to blend a bit of ‘blood’ round the edge of the mouth. Finish by painting a red ‘cut’ through the lines on the right cheek and a bit of dripping ‘blood’ on the temple.

Beef Curry with Butternut Squash (serves 6)

Chicken & Vegetable Casserole (serves 4)

Individual Lamb Pies with Wild Mushrooms (serves 4)

Ingredients: • 1kg rib or shoulder beef, cut in cubes • 2 tablesp. olive oil • 1 large onion, chopped • 4 cloves garlic, chopped • 2 red chillies, deseeded and chopped • 4cm piece of ginger, finely grated • Seeds from 6 cardamom pods • 2 x 5cm cinnamon sticks • 1½ tbsp. ground cumin • 1½ tbsp. ground coriander • 400g tin of chopped tomatoes • 200mls stock or water • 1 butternut squash, peeled and cut into 2-3cm cubes • A little salt and freshly ground black pepper

To Serve: • 100ml Greek-style natural yoghurt • Zest and juice of 1 lemon • Chopped fresh coriander

Method: 1. Preheat the oven to Gas Mark 4, 180°C (350°F). 2. Heat a tablespoon of oil in a flame-proof casserole dish and brown the meat in batches. Add a

little more oil as necessary. As the meat browns remove it to a bowl. 3. When all the meat has been browned add a little more oil to casserole dish. Add the onions and cook for a couple of minutes. Stir in the garlic, chillies, ginger, cardamom seeds, cinnamon, cumin and coriander and continue to cook until the onions just begin to brown. Add in the squash and stir to coat with the spices. 4. Return the meat and its accumulated juices to the casserole. Add the tomatoes, stock or water and a little salt and pepper. Stir to mix and bring to a simmer. Cover and place in the oven for 1½ hours or until the meat is tender. 5. Just before serving stir the lemon juice into the casserole. Sprinkle all but a handful of the coriander on top of the casserole. Put the yoghurt in a small bowl and mix in the lemon zest and remaining coriander. Serve with the casserole along with rice or mashed potatoes

Ingredients: • 600g diced shoulder or leg of lamb, welltrimmed • 200g wild mushrooms • 1 good sized shallot • 2 tablespoons olive oil • 250 ml crème fraîche • 2 tablespoons chopped parsley • salt and pepper • 1 packet of ready rolled puff pastry • 1 egg

Method: 1. Pre-heat the oven to 180°C, (gas mark 4). 2. Clean the mushrooms by brushing or rubbing them with a cloth (do not wash them). Slice them into small pieces. Peel and chop the shallot and set aside. 3. Add 1 tablespoon of oil to the frying pan. When hot add the lamb and brown on a high heat. 4. Remove the meat, add another tablespoon of olive

oil to the pan and add the mushrooms and shallot. Reduce the heat to medium and cook for 5 minutes. 5. Take off the heat, add the crème fraîche, meat, and parsley. Season to taste. 6. Share the mixture between 4 small individual oven dishes. 7. Cut 4 pieces from the puff pastry, big enough to cover the dishes. Wet the edges and place the pastry on top. Press down on the edges and trim any excess. Brush the pastry with a little beaten egg and make a small hole in the centre with the tip of a knife. 8. Cook in the oven for 15 minutes until golden. 9. Serve hot with mash potato and seasonal vegetables.

Method: 1. In a large saucepan or casserole dish, heat the oil and butter. Add the chicken and cook gently for 5 minutes. Lightly season with some salt & pepper 2. Add the carrots, leek, celery, garlic and onion and cook for a further 3 minutes or until vegetables are slightly tender. 3. Sprinkle in the flour to coat, then add the chicken stock, milk and thyme

and stir until the mixture starts to thicken and all flour lumps are gone. 4. Lower the heat to bring to a gentle simmer, stir in the wholegrain mustard. Cover with a lid and leave to simmer for 20-25 minutes or until chicken and vegetables are cooked through. 5. Keep an eye on your casserole during cooking time, giving it a stir every now & then to prevent your casserole sticking to the pan/dish. 6. Garnish with parsley 7. Serve hot with mash potato or rice.

Tip: If you have any

leftover this can be placed in the freezer for another day or the next day simply place in a pie dish or individual pies dishes, cover with pastry and serve as a pie, again with mash potato or chunky chips.

The 41st Ryder Cup 2016 Unibet World Grand Prix Darts Citywest Hotel, October 2nd – 8th 2016 The tournament, famous for the double-start format, will be held from October 2-8 at the Citywest Hotel in Dublin, featuring 32 players competing live on Sky Sports.

The field will include reigning World Grand Prix champion Robert Thornton, who won the title for the first time by defeating two-time winner Michael van Gerwen in a thrilling final last year.

The Ryder Cup is played in even-numbered years between 12-member teams from the United States and Europe. It consists of five match-play sessions played over three days.

11-time champion Phil Taylor, two-time winner James Wade and reigning World Champion Gary Anderson are also set to be amongst the competitors, with the world’s top 16 joined by 14 qualifiers from the Pro-Tour Order of Merit.

Each of the first two days includes one four-match session of four-balls and one four-match session of foursomes. The final day is reserved for 12 singles matches.

The Unibet World Grand Prix will kick off with the first round being split across two nights on Sunday October 2nd and Monday October 3rd, before the second round is held on Tuesday October 4th and Wednesday October 5th. The quarter-finals are held in one bumper session on Thursday October 6th, with the semi-finals on Friday October 7th and the final on Saturday October 8th. As is tradition, writing sessions for the album saw Biffy Clyro – Simon Neil (vocals/guitar) and the Johnston brothers James (bass) and Ben (drums) working in the intimate environment of their practice room. They then headed to Los Angeles for recording sessions with producer Rich Costey (Muse, My Chemical Romance, Sigur Ros). Such themes are also apparent in the album’s visceral first single ‘Wolves of Winter’ which captures Biffy Clyro’s famous blend of angular riffs, pummelling rhythms and strident hooks. Says Neil: “’Wolves of Winter’ is about us being wolves on a patch and if you come onto that patch, we’ll tear you limb-from-limb.”
