hristmas in the capital officially begins at the end of the month. And so, in keeping with the spirit of all things festive we’ve an issue full of gift ideas (p40), places to go and things to see. What brings you to Edinburgh? I actually live here but you can also catch me doing Stand-Up at The Pleasance Theatre on 06 November. What’s the highlight of your career so far? My career has gone way better than I ever imagined. This year alone I’ve done gigs in Sweden, Norway, Austria and Australia. I had an amazing Fringe run too. What’s your dream? I always said my dream was to make a living out of comedy, I’m now doing that. If I wished for anything more I’d just be greedy. Who’s your favourite comedian? Louis CK, he educates and entertains at the same time and is consistently brilliant. The best things in life are… Friends and family. I wouldn’t be the person or comedian I am today without them. STATE OF THE ART | 15
STATE OF THE ART Prague Easter by John Bellany words Joshua King
O
n 28 August one of Scotland’s most beloved artists, John Bellany, died in his Italian studio. His family said he passed away with a paint brush in his hand. He was 71. Known for his depictions of haggard fishermen from his home town of Port Seton, Bellany crafted a body of work which has been shown in the great galleries of London and New York. Raised in East Lothian, his early work drew inspiration from the grim reality of the local fishing communities. Years of alcoholism forced a liver transplant in 1988 - an event which revitalised his work. He spent later years working from a studio in Tuscany but always kept a flat overlooking the Forth. One of Bellany’s final contributions was to gift Prague Easter to the National Galleries, a thank you for a recent marquee exhibition of his work. Chief curator Keith Hartley expressed his delight with the piece: “This painting shows the famous Charles Bridge that spans the River Vltava in Prague. One of the bridge’s Baroque sculptures depicts the Crucifixion. The crowds thronging
the bridge look as if they were actual eye-witnesses of the historical event. But, as the title tells us, it is Easter - a reminder that Christ rose from the dead on that day. Bellany, too, was given a new life by his operation.” Before the funeral at St Giles Cathedral, the cortège made one final, fitting stop at Port Seton harbour. Despite his success and global appeal, Bellany’s family knew he had never forgotten his home.

TALKING ABOUT Edinburgh’s Christmas
3D/2D XMAS ART, CRAFT & DESIGN FAIRS EDINBURGH So what’s new? The Christmas markets are here every year… That’s true, but this year the festive fun is expanding to St Andrew Square. It’s going to host the Paradiso Spiegeltent and the Scottish and Children’s markets too. The Spiegeltent… wasn’t that here in August? Right again, but this time the international hit circus show Limbo will be drawing in the crowds. There will also be family friendly shows during the day and a chance to enjoy a dining experience courtesy of the Scottish Café when you book a booth. But what about the Big Wheel? That’s still coming to town but it’s had a bit of a makeover too and been fitted out with 36 cosy weather-proof pods. So things are looking good. Anything else? If you’ve got a head for heights the Star Flyer, a 60 metre free-standing ride in St Andrew Square, is set to give stomach churning, sky-high views over the city. The ice rink is also moving up a level to where the Scottish markets were last year. The European market will be slightly spruced up too but you’ll still find it on the Mound Precinct. And if you want to party into the small hours there’s the Hot Dub Time Machine at Summerhall. So when does it all kick off? The action begins on 22 November when the markets open but Light Night on Sunday 24 November is the official start of Edinburgh’s Christmas. The free event takes place from 2.30pm until 5pm and is expected to attract 18,000 people. For more information visit www.edinburghschristmas.com

DISCLOSURE words David Pollock
A
sk anybody with an ear on the mainstream and they’ll tell you that English duo Disclosure are the saviours of British dance music for the new decade. Those of more underground tastes might beg to differ, but there are probably few who’ll confess to a dislike for their infectious sound, which dates all the way back to the late ‘80s birth of house music in Chicago. If proof of just how unifying the sound they make were needed, the fact their debut album Settle went to number one in the UK charts shortly after its release back in June is it. Born in Surrey and raised in leafy Reigate, brothers Guy and Howard Lawrence haven’t exactly had as glamorous
an origin as the style of music they’ve adopted, although they’ve both moved to Croydon in South London in their older years. Not that either of them is that old – Guy is 22 and Lawrence is 19, and they’ve both been in business together as Disclosure for the last three years. Their starting to work together as musicians was almost an accident, with Howard making very simple tracks at home and Guy offering to mix them, having done an entry level music production class at college. They describe what they do as a learning process right from day one up to now, although the pair had a perfect cross section of influences to make them interesting and relevant to the moment. Guy grew up on hip-hop like Gang Starr, Busta Rhymes and A Tribe Called Quest, Howard listened to Motown, ‘70s funk and Kate Bush, and in the middle their tastes met with
MUSIC | 19 the dubstep explosion of a few years back. But the duo have never considered themselves underground, with an acute pop sensibility that this melting pot of sounds helped create. They readily admit that those early productions weren’t up to the standard of their latest sounds, with 2010’s Offline Dexterity and 2011’s double A-side Carnival/I Love… That You Know creating barely a ripple. Yet during this time they built up a bit of under the radar momentum with remixes for artists like Everything Everything, Crystal Fighters, Q-Tip and Emeli Sande, and finally broke to the wider world in 2012 with their remix of Jessie Ware’s Running and their top twenty single Latch. This year they’ve been drawing acclaim as the crossover act of 2013, and such a reputation’s founded as much upon the fact that tracks like F For You and When a Fire Starts to Burn are built on killer hooks and an irresistible feel for the sounds of two decades of dance history as their timely collaborations. Their releases are like a tour through all that’s best in pop in 2013, from AlunaGeorge on White Noise to Eliza Doolittle on You & Me and London Grammar amidst the epic Help Me Lose My Mind, and it’s a sound which Disclosure have rapidly pushed themselves to the forefront of. Disclosure play the ABC, Glasgow, on Wednesday 20 November and the Corn Exchange on Wednesday 05 March 2014.

A
s founder of Carolina Samara Couture Accessories, Carolina has drawn inspration from her Latin American and Arabic roots to create a unique range of head bands and fascinators. She moved to the capital last year and now juggles family life with running her own business. What gives Edinburgh its edge? Its people and the mixture of cultures and ideas. And, of course, the castle right in the middle of town - it reminds you of the city’s history and its everlasting beauty. The city’s downfall? I think the city could benefit from improving some of the outer areas like Leith Walk. A campaign for keeping Edinburgh cleaner wouldn’t hurt either. Which area of Edinburgh best reflects your personality? The Meadows; it feels so peaceful, free and secure. The city’s best kept secret? Casa Angelina; it offers one of the best afternoon teas in town.

s a photography lecturer and cofounder of thephotographerscollective. com, Susan Young has her creative hands full spotting emerging talent and helping inspire them. Here she shares her own design tastes. How would you describe your signature look for your home? It’s a combination of contemporary and retro with plenty of visuals. What has been the most worthwhile interiors investment you’ve made? A ‘60s sideboard; it was an old prop from a photographer friend exchanged for a bottle of Rioja. The interior I’ve been most impressed with is… locally, Cucina restaurant at Hotel Missoni. The best design in Edinburgh is… The Dakota Hotel, especially at night when it feels like it’s looming on your approach into Edinburgh. It reminds me of the monolith in 2001: A Space Odyssey. My top interiors tip is… when choosing fabrics consider the colours in your artwork.

STYLE
Darren Donaldson photo Susie Lowe
B
elfast born Darren has worked in fashion retail since school. “I think the pull of the industry was down to the people; in fashion everyone is just so different and interesting,” he explains. Darren worked at Cruise Clothing before joining the team at Harvey Nichols eight years ago, where he’s now the senior menswear manager. When he’s not working or raising money for charity, he’s a self confessed fitness fanatic doing cycling, walking and yoga. I’d describe my style as… classic with a fun twist. I like tailored, well cut clothes but like to add personality with interesting details like print and colour. My favourite place to shop in Edinburgh is… Harvey Nichols, the atmosphere and brand edits are the best in the city. My favourite recent find was… a set of vintage gold and mother of pearl cufflinks and matching tie pin. The tie pin is quite small but people never fail to comment on it. If money was no object I’d buy… The Lautner House from Tom Ford’s film A Single Man, a snip at $1.495 million.

rom celebrating the first anniversary of the UK’s only Waldorf Astoria Hotel to The Pompadour by Galvin and Galvin Brasserie de Luxe being listed in the 2014 Good Food Guide, it has been a busy year for Dale MacPhee, general manager at The Caledonian hotel. Hailing from a small seaside town called Port Hood in Nova Scotia, Canada, Dale took over at the five star hotel in January 2013 but travel still remains a part of her job. Here she reminisces about her own personal holidays. Your favourite childhood holiday memory? Going to Disney when I was 13. It was magical. What sounds remind you of travelling? Birds and the ocean. Have you ever had a holiday romance? No, but I did get married on a beach in summer 11 years ago. Have you ever had a holiday from hell? Luckily I haven’t. But I once missed a flight to Istanbul. I was so tired and didn’t hear my name being called for boarding… That was a bit of a nightmare. What advice would you give someone about appreciating travel? Enjoy every single moment of every single trip.

FOOD
Frederic Berkmiller photo Susie Lowe
I
f there’s one thing the French know how to do well, it’s food, of which Frederic Berkmiller, aka Fred, chef patron of the acclaimed L’Escargot Bleu and L’Escargot Blanc, is a fine example. He creates modern twists on classic French dishes using the best of Scotland’s larder. Your signature dish at the restaurant? Hand cut horse meat steak tartare prepared at your table or Rosé Veal Blanquette. Where have you always wanted to try for food in Edinburgh? I would like to try Castle Terrace and 21212. I’ve heard lots of good things about Paul Kitching and his eccentricities with food. What are you most likely to eat at home? We eat lots of soup or cazuela (South American Pot Au Feu). It’s healthy and the recipes are endless. The chef you most admire? Pierre Koffmann, a gentleman who has promoted the excellent standards of classic French cuisine in the UK and has trained so many well known chefs today. If you could invite five famous people, living or dead, to a dinner party who would they be? BB King, Morgan Freeman, Stevie Ray Vaughan, Ray Charles and Eric Burdon - I’d love to hear about their lives.

arlier this year childhood sweethearts Sean and Emma set themselves a fundraising target of £3,000 for Maggie’s Cancer Caring Centres. Through tandem skydives, cycling and running they’re well on track to smashing their target, here they talk to i-on about living life to the full. Sean on Emma “I first met Emma as a teenager growing up in Galashiels. I thought she was hot, good fun and very thoughtful. We started going out in 2002 and have both grown together and achieved so much over the years. “I think we support each other well in all aspects of life because we are best mates and share everything. The biggest challenge we’ve faced together was in 2010 when I lost my Dad and sister in the space of six months. Emma and I realised how short life was so decided to do some fundraising challenges to mark our 30th birthdays next year. After visiting Maggie’s Cancer Centre in Edinburgh we decided it was a great cause to support. “We maintain an optimistic outlook on life and enjoy spending quality and memorable times together when we fundraise. Emma has really impressed me with her determination throughout all our fundraising.” Emma on Sean “My first memory of Sean was as a 13-year-old, wolf whistling over the street at me. We became great friends before going out together when we were 18 and got married in 2010. I instantly fell in love with Sean. He’s a cheeky chap and great fun to be around. We’ve shared some highs and lows together which have really changed our perspective on life. “Turning 30 seemed like a great reason to take on some new challenges and raise money for Maggie’s. We’ve both had friends and family suffer from cancer and were really impressed by the work Maggie’s does. “The fundraising events have pushed us both mentally and physically but Sean’s energy and positivity has really helped drive us throughout.” To support the couple’s fundraising visit www.seanandemmas30th.co.uk

From skiing at Whistler to visiting the CN Tower in Toronto and taking in Niagara Falls, Canada has a lot to offer tourists. But dominating landscapes are synonymous with Canada so here Karen Robertson Cree of Barrhead Travel unveils three lesser known experiences that should be on your wish list of things to do when you’re there.
Rail through the Rockies For a leisurely break, breathtaking scenery and the chance to travel through areas not accessible by foot, car or motor coach, the Rocky Mountaineer ticks all the boxes. Get up close with polar bears Seeing polar bears roaming free in their natural habitat isn’t your average trip. In fact it’s probably one of those experiences you’d class as a once in a lifetime opportunity. But each year in the autumn along the west shore of Canada’s Hudson Bay polar bears gather near the small northern seaport of Churchill, Manitoba, waiting for the bay to freeze over to begin their hunt for seals. This trip is only doable if you’re holidaying from mid October to mid November but, on the up side, you are guaranteed to see the animals from the Tundra Buggies, sometimes up to 40 bears on any given day. Exciting and educational, the Enthusiast Programmes are designed not only to see the magnificent ‘Lord of the Artic’ but also to acknowledge the history and culture of the region. On the trip you’ll also have the chance to see red foxes, Arctic hare, caribou, gyrfalcons, snowy owls and ptarmigan. Some people fly to Winnipeg, the nearest airport, from Toronto which is the perfect destination for a city break and offers a great outdoors/ city holiday combination.

Experience a ranch holiday Whether you’re a complete novice or a seasoned horse rider, checking in as a guest at a working ranch like the luxury Siwash Lake Guest Ranch is an adventure holiday with a difference. Surrounded by 80,000 acres of pristine British Columbia wilderness, the impressive eco-friendly setting caters for upscale family holidays and romantic, adult getaways. It offers horseback riding for a maximum of 32 guests and throughout your stay you will be treated to your own horse, with extra care taken in giving you a mount that matches your abilities and personality. The season begins mid May until the end of September and throughout your stay (there is a minimum stay policy of three nights), you’ll receive a one-on-one with the ranch owners and hosts, learning the lay of the land and natural western horsemanship. Wilderness trips will be on the agenda too. After this orientation process you can ride as much or as little as you like for the rest of your stay. Other guided activities include fly-fishing, skeet shooting, wilderness survival and hiking, with a spa for downtime moments. Tried & Tested Supercar Driving Experience words Stu Todd
T
here’s always someone that falls into that hard to buy for category. I thought I was one of them. But after getting my hands on a Gift Experience Scotland voucher for a supercar driving experience I have to admit I was impressed. It was a chance for me to get behind the wheel of a car I’d only ever dreamed of driving. It didn’t take me long to book the experience and before I knew it I was at Ingliston race track, filling out insurance forms, listening to important security briefings and choosing my vehicle. There was also a chance to add extras like an on board camera which captures both the track in front of the car and the driver - a fantastic keepsake to commemorate the day. Choosing the car was the difficult part. There was such a great selection ranging from a Nissan GT-R to a Lamborghini Gallardo and Ferrari 360, as well as a guest car in the form of £250,000 Ferrari 458. I opted for the Lambo and the Audi R8. As
a confident but not accomplished driver, I don’t mind telling you that I was slightly nervous at having a Lamborghini at my finger tips and getting my head around paddle shifting instead of a gear box and no clutch was confusing. However, the instructors were top notch and the controls so intuitive, I was soon speeding around corners, breaking late then speeding out of the corners again. This feeling was enhanced even further when I stepped in to another of my dream vehicles - the Audi R8. My experience closed with what is called a hot lap, where I was taken on a two lap joy ride by a ‘Stig’ in the choice of either a Caterham 7 or an Ariel Atom, cars with the equivalent power of a World Rally Car (300bhp+). A real ride to remember. Supercar driving experiences from Gift Experience Scotland start from £89 and can be booked on Tel: 0845 257 4375 or at www.giftexperiencescotland.com

INTRODUCING Designs by Mirabelle
Founded by the daughter of a Parisian silversmith, Veronique Henry, Mirabelle jewellery is handmade with fair trade materials and with a great dollop of love and soul. Veronique fuses Asian influences with British design to create wonderfully feminine pieces and believes in the power of jewellery to uplift the spirits, weaving ancient talismans and crystal stones into her pieces. The collection uses materials such as 22k gold plated metals, brass, semi precious stones and shells and bridges the gap between high street and high end, ranging from ÂŁ10 to ÂŁ300. ON THE BRIGHT SIDE Life and business coaching explained
I
magine you had a clear and reliable roadmap that would help you to progress confidently to achieve what you want in your personal life, career or business. At some stage in our lives we all have personal goals and motivations we may want to achieve. It could be a career change or implementing a business idea, resolving relationship issues or a big move to another city or country, or perhaps learning to deal positively with transitions such as parenthood, break-ups and separation. Most commonly, the obstacles that can stop us from achieving these goals are a limited belief that we can actually make change happen or confusion about how to put things in place to make that change. Coaching can successfully be applied to all situations where a solution, change and action are needed.

ON THE BRIGHT SIDE | 81 The Knowledge House Coaching in Stockbridge offers sessions performed by experienced coach Malene Goth that focus on making the process of creating change easy and motivating. This includes business coaching to improve performance, efficiency or reduce stress at work. Malene holds a Masters in Psychology from Denmark and applies coaching techniques based on positive psychology. She believes that many people spend their life working on their weaknesses and, in doing so, deny their true motivations and strengths. This can result in being in the wrong job, location or relationship. Her clients complete a strength assessment that reveals personal strengths and will help focus on unrealised strengths to achieve more fulfilment and efficiently guide clients to reach their goals.
Life and Business Coaching sessions offer: £45 for 60 minute session (usually £60). To book a free introduction session, email Malene@theknowledgehousecoaching.com, or Tel: 07794607197.For more information, visit www.theknowledgehousecoaching.com

It’s designed to speed up recovery from injury, correct chronic injuries and maximise the potential for effective training... with no gimmicks needed. Chronic injury and poor recovery comes from imbalances in strength and flexibility and alteration to normal movement. These are learned behaviours ingrained in the subconscious that we develop over time and they can’t be trained out with traditional exercises. Normal movement needs to be relearned and the aim of F.I.X.T. is to reteach the normal movement, and builds the strength and suppleness required for everyday movement and effective exercise training. BEING MUM | 85
“I
found out I was pregnant in June 2010 and had terrible morning sickness until I was 20 weeks. When it stopped suddenly, I felt fantastic. I had no complications; however Blair was lying in a breech position so I had an elective C-section for medical reasons. “We struggled to both agree on a name, but as soon as we discovered Blair in a baby name book, we knew it was the perfect choice. I took six months off after having Blair, however when you run your own business it is very difficult to have a complete break. To help get back in shape I joined a group called Buggy Bootcamp. They run outdoor fitness sessions all over Edinburgh and are a great way to keep fit without needing childcare. “I now work part time - I feel it’s important to have a work/ mummy balance - and my son attends nursery two mornings per week. We also have a wonderful part time nanny. Being a parent means everything to me. Watching Blair develop is incredible and he makes me laugh every day. “My advice to new Mums is to trust your instincts and don’t be afraid to ask for help. Get your baby into a solid routine too. I contacted a company called Baby Matters who advised me on how to establish Blair into a routine from day one. He was a great sleeper and a very contented baby thanks to their advice.”
Now Enrolling Toots Play café is fan tastic and we love to lunch at Swanston Golf club. We also regularly walk throug h the Hermitage of Bra id or go to Cramond, it’s a fantastic place to go with Blair on his scoote r. If I’m buying a pressie for a new born it would be an outfit from the Little White Company or a lovely framed name picture from The Little Felt Fac tory. The one piece of equ ipment I can’t recommend enough is my Mini City Jogger. You can fold it with one hand. The website you’ll alw ays find me on is Sparklearts.co.uk. It’s our business website and offers performing arts classes for childre n to enhance learning thr ough a fun mix of music, dance and dra ma.
Greenhill Montessori Nursery has created an enriched environment that encourages exciting discoveries for the children. A Montessori environment is a miniature community where children follow rules as those established within a community. The children develop a strong sense of respect for self, others and the environment, which builds a strong academic foundation for a lifetime of learning. Discoveries happen through exploration. We use materials attractive to their senses under a nurturing setting. And Spanish is part of our daily routine. 3 Greenhill Park, Morningside Edinburgh. EH10 4DW

rowing up in North Glasgow in a post-war pre-fab, Paul Hineman always had his heart set on an older property with real character. “I had lived in a flat in Dennistoun in the east end of Glasgow for five years and was on the lookout for something bigger with a garden; although I had almost given up looking when this property came on the market. I fell in love with the house the moment I entered the hallway, but a few weeks later we were ripping out the floors – they were completely rotten.” The traditional Victorian villa underwent a huge refurbishment with Paul, the man behind online video-on-demand platform
KITCHEN The kitchen was more of a blank sheet of paper. It had to be free-standing to make sense of the original scale of the kitchen, and this is the excellent Varde range from Ikea. The cooker needed to be rangestyle, and as I was on a tight budget, this Delonghi was a superb deal. FIREPLACE This is the original mahogany fireplace in the downstairs lounge. I remember when the floors were ripped out; this fine old (and irreplaceable) item was hanging in mid air above a ten foot drop into the cellar. It’s used constantly in the winter months (and the odd summer month too). Opening up the fireplaces and using the real fires just makes the house come alive.

DRAWING ROOM Original oak parquet floor, original lincrusta, bold wallpaper from B&Q. ARMOUR The suit of armour is called Sir Notalot. I bought him from a couple in the Borders who were making them by hand and selling them to Americans.
TV Tapas and 5 Minute Network, keen to restore the house to its traditional glory. “First thing was to eradicate all rot, and that meant a hefty bill for new flooring on the ground floor. I counted 11 skips full of rotting timber. We also rewired, replumbed, installed new heating, re-plastered and fitted a new kitchen and two bathrooms. I’m a bit of a traditionalist, so the principal rooms are still fairly typical in a Victorian sense, only lighter I suppose.” Bringing his own style into the property, which he shares with partner Scott and Wee Dug the Jack Russell, Paul hunted for unique furniture pieces and statement décor styles from
a variety of sources - although his original inspiration came from the house itself and the Victorian style. “There’s an eclectic mix of furniture and decoration, some antique and some repro. I’m always on the lookout for interesting items. I scour markets, including Glasgow’s famous Barras, eBay and little curiosity shops. “The layout is almost the same as it would have been; three public rooms, lounge, dining and drawing room, three bedrooms, kitchen, additional bathroom (there was originally only one on the first floor) and various other smaller rooms. I designed the new spaces myself using a neat little software
92 | PROPERTY AND INTERIORS package and then project managed the actual work. If there is a theme, I suppose it’s an echo of the house’s past – its heritage. If the original owner came back tomorrow, he’d recognise not just the spaces, but the function of each space. I think the Victorian’s really knew how to live.” Paul’s favourite room of the house is the drawing room. “It really blew me away when I first set eyes on it. It’s massive, very masculine, and has breathtaking unbroken views across the city. I’ve kept it fairly neutral, picking out the lincrusta ceiling and frieze in grey and the cornice in white, and making a feature of the fireplace wall with black and grey wallpaper.” It’s taken a lot of hard work and time to get the house up to scratch but Paul insists the re-furb is far from over. “With a house like this, there’s a bit of Forth Bridge syndrome. Just when you think you’ve finished, it’s back to square one for a lick of paint.”
HALLWAY An amazing stone staircase with original mahogany banister, filled with bits and bobs from all over, including my rather noisy grandfather clock – a bargain reproduction from a little antiques market on Byres Road (sadly gone). TAXIDERMY I like to think of my taxidermy collection as having been rescued. They are all ancient and full of character but I’m aware they’re not to everyone’s taste. I got them all from eBay – and yes – they all have names. TYPEWRITER This old gem came from an auction house in Biggar. I bought it on impulse, like most of the things I own.

ICONIC EDINBURGH George Square
words David Hicks ∙ photos Susie Lowe
G
eorge Square is a leafy and bustling place at the heart of the University of Edinburgh’s campus. It was planned in 1766 by architect James Brown and, at the time, represented the most ambitious new development yet attempted in the city. It was the first development outside the old city walls and, as a precursor to the New Town, offered an exclusive setting for Edinburgh’s professional classes. Sir Walter Scott’s father, a prominent lawyer, was one of the first to have a house built there. Some of the original Georgian housing still exists and has very distinctive ‘cherrycock’ pointing, a line of small stones in the mortar joints between the blocks. Also look out for the plaques marking the homes of famous residents, including the authors Sir Walter Scott, Sir Arthur Conan Doyle and the athlete Eric Liddell. In 1914 the University of Edinburgh bought its first property in the square and gradually increased its ownership until
the 1940s when it owned the entire place. Then in 1949 a controversial programme of major development was planned, involving the demolition of much of the square. Despite a huge public outcry the development started, but the destruction proved to be a turning point in focusing public attention on the plight of Edinburgh’s historic buildings. The western side of the square was saved and the remnants of many demolished houses were later used to repair buildings in the Georgian New Town. Ironically, many of the new university buildings are themselves now protected. The David Hume Tower built in 1963 is a category A listed building, regarded as one of the key examples of Scottish Modernist architecture. It is amongst the very few buildings of the 1960s designed by Sir Robert Matthew, one of the most important British architects of the 20th century. George Square has changed dramatically since its beginnings as an exclusive enclave. Today it represents not only the city’s success as a place of learning, but also a reminder of how close Edinburgh came to losing its unique character. David Hicks is communications manager at Edinburgh World Heritage, a charity devoted to conserving and promoting the city’s World Heritage Site. For more information visit www.ewht.org.uk

DINNER @ HANAM’S
WHAT: A Middle Eastern culinary institution just off the High Street WOULD SUIT: Diners looking for authentic cuisine in a relaxed setting PRICE RANGE: starters from £3.75, mains from £8.95. It’s BYOB with free corkage words Sarah Johnston ∙ photos Susie Lowe

hen a city restaurant is full of diners on a cold and rainy night - on a Monday and just before pay day - you know it’s somewhere worth experiencing. Hanam’s, an authentic Kurdish and Middle Eastern restaurant located on Johnston Terrace, a stone’s throw away from Edinburgh Caste is one of those places. Rich red walls with hanging tapestries, intricate lanterns and dark wooden tables and chairs create a cosy Middle Eastern atmosphere and a welcoming antidote to the winter weather outside. The menu here is packed with traditional and eclectic starter dishes and sharing mezzes such as hummus served with hot naan, £4.75, and spicy Lebanese sausage sautéed in tomato and chilli, £6.50, followed by mouth-watering mains. After some help from our knowledgeable waiter, we opted for the Mushakal starter, £9.95 for two, a sharing mezze of the
restaurant’s most popular starters. Crispy fritters made with naan dough and known as Kulicha were flavoursome and complemented the homemade cucumber garlic and yoghurt dip. The Kubba – patties of mixed vegetables rolled in crushed rice – were delicious and delicately flavoured, as were the exotic marinated vine leaves stuffed with aromatic rice. Falafels and Bayengaan, slow roasted baby aubergines stuffed with rice and traditional spices, were also devoured. The sizeable mezze was delicious and we devoured the entire platter… including the restaurant’s acclaimed super soft and deceptively light naan bread made from just flour and water. This starter would easily satisfy lunchtime appetites or a light evening bite. For our mains, I opted for the Kurdish-style chicken biryani, £12.25, whilst my dining companion settled on the house speciality, the Shish Gosht kebab, £15. My delicious

and delicately spiced biryani was the ideal comfort food with fragrant rice, strips of chicken breast, sultanas, curried potato cubes and mixed nuts vying for attention. The gosht kebab Iranian style was something else. The delicately spiced finely minced lamb kebabs were wonderfully tender have been cooked over a charcoal barbecue. Served with special rice, a whole naan and a side portion of shillah sauce, it was a huge meal for one. Yet, my fellow diner polished off the entire plate, testament to the moreish flavours and cooking technique. After such hearty dishes, we could only manage to share a dessert so we opted for the exotic Persian saffron and cardamom ice cream, £4. Using Middle Eastern saffron filaments, the luxurious tasting ice cream provided the perfect end to a perfect Middle Eastern culinary experience. LUNCH @ STACK
What: Authentic Cantonese cooking in a relaxed atmosphere Would suit: Families and friends getting together to eat, talk and laugh Price range: Dim sum from £3, larger noodle and rice dishes from £8
words Henry le May ∙ photo Susie Lowe
I
first heard of dim sum a long time ago, watching the John Woo classic Hard Boiled, there was a scene that, for some reason, resonated with me, the part where the protagonist explains that he could leave Hong Kong but alas he wouldn’t be able to get his hands on dim sum. This culinary decision leads to his imminent demise. So is it worth dying in a hail of bullets for? Luckily, today it’s not a life and death decision. You will, however, have to venture slightly off the beaten track to Dalmeny Street. On the Saturday we popped in for lunch, the restaurant was full of families and groups of friends tucked around tables overflowing with towers of bamboo steamers that give the restaurant its name. The bustling atmosphere and raucous conversations of other diners are all part of the dim sum experience; this is food to be shared. We started off with Sui Mai king prawn and pork dumplings wrapped in a translucent organic egg noodle, £3.40, which were succulent and delicately flavoured. Pot sticker Cantonese
style followed, £3.70, and proved to be very similar to gyoza dumplings; the crispy fried base of the dumpling provided a great contrast to the moist filling. As our stack piled higher we enjoyed crispy flash fried squid cake dipping sauce, £3.70, wafer crispy soya skin rolls, £3.70, marinated king prawn Cheung fun, £3.50, and chicken claw in black pepper, £3.40 – this is not for the faint hearted but is traditional and delicious if a little gelatinous. Finishing off with lotus leaf wrapped rice dish, £5.20, with cured meats was suitably substantial. Chinese food can often have a bad reputation for being westernised and full of unnecessary additives: Stack is the antithesis. Here, all the dumplings are made fresh daily and the quality and attention to detail in the kitchen really set this restaurant apart. Stack Dim Sum Bar, 42 Dalmeny St, EH6 8RG, Tel: 0131 553 7330.

A Nobel Legacy Scotland’s capital now boasts the newest member of the Nobel Prize club, Professor Peter Higgs. Higgs, a professor at the University of Edinburgh, won the Nobel prize in physics for his work on the Higgs boson theory. To celebrate, here are five Nobel nuggets revealing what the professor has got himself into: Winners take home a diploma, a gold medal and a cool $1.1 million. All they have to do is have an idea which changes the world. Prizes are awarded for physics, chemistry, medicine, literature and peace. There is a similar but unofficial prize in the field of economics. Alfred Nobel, the inventor of dynamite, set up his awards in 1864 after a newspaper accidentally ran his obituary, entitled The Merchant Of Death Is Dead. Alfred wanted a more positive legacy so chose to celebrate groundbreaking ideas. Nobel actually did die in 1896 - he had a stroke on 10 December and now the prizes are officially awarded on that day. Winners are invited to attend the Nobel banquet in Stockholm for music, dinner, dancing and an incredibly strict dress code.
