Street of Light
What’s all this about then? Prepare to be seriously impressed with this mighty looking architectural installation. Made up of more than 60,000 lights, the illuminated archways will stretch along the Royal Mile, from City Chambers to the Tron Kirk, as part of this year’s Christmas celebrations. Wow, sounds great. I assume there’s a price tag on this attraction? No, not at all. There’ll be two free daily light shows synchronised to music from Edinburgh choirs from 30 November, book tickets to ensure access. Is this part of Edinburgh’s Christmas festival? Exactly. Building on last year’s success, events are expanding into other parts of the city and the Virgin Money Street of Light is the festival’s biggest new addition. It’s expected to draw in crowds of up to 250,000 people when it officially launches on St Andrew’s Day. What else is going on for Christmas then? Well, Britain’s Got Talent finalist, Susan Boyle, will do Edinburgh the honour of switching on the Christmas lights at Light Night on
22 November. The Big Wheel, Star Flyer and expanded Santa Land (affordable family attractions included) are back. The double decker Carousel will now be in St Andrew Square alongside the Paradiso Spiegeltent. I love the Spiegeltent. What’s on? T
he daughter in question in the name of this young-butold-beyond-their-years trio is Elena Tonra, an Irish-Italian singer songwriter from North London who originally started out on her own. She grew up on traditional Irish music through her family, and adored Jeff Buckley’s Grace in her elder years; it’s no surprise, then, that her style is tender, fragile and emotionally bare.
The band’s expansive sound is completed by Swiss guitarist Igor Haefili and French drummer Remi Aguilella. Tonra and Haefili met while studying at the Institute of Contemporary Music Performance in London together, and formed the band themselves initially. He has said in the past how impressed he was by her ability to perform in the pubs and bars of London, where audiences don’t give a singer
music | 19 much time or attention before returning to their conversations. The pair are also a couple, which they appear to have managed to keep impressively free from the business of being in a band. Tonra’s lyrics are considered, and often speak directly of emotional heartbreak and bad romance; whether or not they’re inspired by the couple’s relationship, Haefili recognises that they’re part of the art the band creates. “I don’t want Elena to stop saying things in her songs that are personal,” he told the Scotsman. “You can get therapy from that, but in any case, songwriters need to be expansive and they need to be unafraid.” In 2011 Daughter released their first two EPs, the first of which was recorded in Haefili’s London bedsit. Demonstrating how they’d already captured a bit of attention, the second was released on the Communion label, which was co-founded by Ben Lovett of Mumford & Sons; the group have since supported the hugely successful Ben Howard, who is another alumnus of Communion. Early the following year the trio were signed by the well-respected independent 4AD, whose past and current catalogue includes artists like Bon Iver, The National and Tindersticks, and by the end of 2012 they had released their debut single Smother and appeared on the David Letterman Show in the US, a big deal for a group without an album yet. Said album would follow in the spring of 2013, a well received collection of 10 songs with single word titles, which made the top 20 in the UK. Named If You Leave, the record is a fragile delight. It combines Tonra’s wispy but clear sighted vocal – she claims influence from the Cocteau Twins and Sigur Ros more than those folk songs she used to hear – and the ghostly, minimal soundtrack of the band’s male members. It’s a style which is repeated to dramatic effect on Doing the Right Thing, the recently released first single from January’s forthcoming second album How to Disappear. he nights are drawing in and cosy jackets have been dug out of the wardrobe but I still had to check it wasn’t April Fools’ Day when someone told me there was a mini Western village in deepest darkest Morningside. But sure enough, tucked down Springvalley Gardens you’ll find a small underpass. Walk through it and you’ll be transported through space and time to a Wild West town; more reminiscent of a theme park or movie set than the bizarre marketing ploy of a furniture company. The scene began life as showroom for a, now defunct, firm named The Great American Indoors. The street, which hides workshops and storage units behind a saloon, cantina, jail, stables and livery, is now home to a car garage, a joinery company and various other businesses. Stranger still, if you had to guess where in Edinburgh to find a secret nuclear bunker, Barnton is about as unlikely as any other affluent suburb but again, sure enough, it’s there. Built as a command post in the event of a Soviet attack during the Cold War and safe haven for the Royals when in residence at Holyrood; its existence remained fully secret until 1963 when it was exposed by the ‘Spies for Peace’ movement. The structure has passed hands a few times from failed development bids but is now in the process of restoration and set to open in 2019 as an education centre to help a new generation understand what life was like under constant threat of nuclear annihilation. Head south towards the Pentlands and, amidst another affluent suburb, you’ll find an unexpected hamlet that looks a bit more Middle Earth than middle class. Swanston Village began life as far back as 1214, established by a farmer by the name of Svienn who thusly named it Sveinn’ston (later shortened to Swanston).

Edinburgh’s rich past has always meant that scratching the surface revealed untold secrets and obscured history. Dean Newton takes a look at some of the fun, bizarre and interesting hidden gems dotted around the city.

What’s most remarkable about the village though is the thatched cottages built around the 1700s which were also a holiday home to the family of Robert Louis Stevenson. It’s rumoured that the classic novel, Treasure Island, was written in the shade of one of the trees during summer holidays here in the 1870s. Void of electricity until 1949, by which time the buildings were mostly derelict, the City Council began a restoration project, complete with the original thatching reeds, to return the village to its former glory and house council tenants. Pop into the New Town and, while strolling Scotland Street, you’ll find yourself stood on top of an 1800s rail tunnel. On the site of Waverley Station once stood Canal Street Station and in the 1840s a rail line ran from there down to Leith. The tunnels for this route are still in existence, the entrances visible at Scotland Street and Rodney Street. The passage had a steep one in 27 incline and required a system of cable haulage

to assist the carriages on their way up, the descent required a pair of assistants operating powerful handbrakes. The route was abandoned in 1868 and then, bizarrely, in 1887 the tunnel was converted for mushroom growing. During the Second World War, an emergency control centre and air raid shelter were constructed providing safety for up to 3,000 people. Finally, you’ll need some serious security clearance to see this last one, more likely you’ll have to take my word for it, but on the grounds of Edinburgh Airport’s runways lies an ancient standing stone called the Cat Stane. The engraved rock is thought to date back to the Bronze Age with writings added in the fifth or sixth century. The Latin inscription has been interpreted to read ‘In This Tomb Lies Vetta Daughter Of Victricus’, further excavation found that it marks a burial site with numerous stone-lined graves. You could always book a flight to Luton and take some binoculars.

An immense singer/song writer with incredible musical moral strength and an abundance of emotion, life hardship and experience to reflect on. What advice would you give someone looking to book a band for an event? Book early and give the act as much information as possible about your event. If the band is to be the centre piece of your show, reflect this in the time and communication you have with them. What songs always get the party started? Most bands craft their set to reflect the diverse range of clients, so song choice favourites often change. When we play to a young audience or a festival crowd, its old-school B sides. For a themed party or alternative wedding, it’s often more classics.
Are certain songs better suited to different times of the night? A general rule is start off slow and build up. You can play with song choice and tempo a little more if you get the audience on side or if they’re up for a party. Then it’s a case of lifting and dropping the energy, as the band and audience start to feed off each other. A popular track for most people at any time of the night is Papa Was a Rolling Stone.
TOP TIPS… FOR BOOKING A BAND Book early, bands only have 52 weekends a year. Information is power so give the band as much detail as possible before the event. Take advice about how the show and music should come together. DJs are a good idea after the band and also provide an opportunity for song requests.

You’re off work, where have you always wanted to try? Gardener’s Cottage is top of the list, I’ve also heard amazing things about a pop up called Streat Hawker inside the Polwarth Tavern. What’s your favourite Edinburgh venue? I love to order lots of small dishes so that I can try as many things as possible, The Basement is great for that. They have a cracking tequila selection too.
TOP TIPS… FOR PARTY PLANNING If you’ve got a group of over six, plan early. For the best atmosphere; pick a Friday. Do your research and make sure the venue suits the whole group. Keep your venue updated with any changes or delays so they don’t give your table away. If you plan to move from place to place; send everyone an itinerary in case you lose anyone.
You’re planning a team party, what would you look for in a venue? I’d opt for somewhere with a fun atmosphere and great staff. Good service can make or break your experience. I’d also look for menus that offer a bit of something for everyone, although it’s always hard to please the whole group. What other elements would you focus your attention on? Remember to have a look at the drinks list too, some venues will let you pre-order wine/cocktails for arrival, it helps you budget for the night and means less time waiting on that first, well deserved drink.

Here he shares trade secrets and offers up tips for festive tipple success. You’re off work, where do you like to go out? Panda & Sons is a huge favourite; great atmosphere and bartenders. If you could go to any bar in the world where would it be? I can’t wait to visit Dead Rabbit in New York, I’ve heard amazing things about their drinks, music and vibe. What’s the ultimate festive cocktail? I love a Crusta – mentioned in the first cocktail book I ever read (Jerry Thomas’ Bartender’s Guide). At The Blackbird we have a twist on this classic, which uses redcurrants to add a lovely sharp finish to an already zesty drink. I also love a Negroni made with a good Blanco tequila - due to the drink’s depth it really brings out the flavour and spicy notes of the tequila.

TOP TIPS… FOR DIY COCKTAILS Have fun and be inventive, experimenting is a great way to find out what you like. To get the sweetness correct in cocktails; make a simple sugar syrup (with sugar and hot water). Sugar doesn’t mix well with alcohol but if you dissolve it into a syrup it blends easily. Keep it festive with ingredients like clementines and cranberries. They both work well in a ‘smash’ style drink. Use ice, and lots of it. Larger ice blocks are more effective in keeping drinks cold without affecting the dilution.
Your drinks menu for the perfect Christmas Day? Being an Aussie we’d start off with a few crisp lagers. I’m a massive fan of bourbon and mint juleps, smashes and old fashioneds – all of which are easy to make at home. To end the day I’d have some Rye Manhattans, super spicy with a sweet finish.

And when she’s not doing that, she’s working as a freelance consultant helping food businesses tell their story. Where have you always wanted to try for food in Edinburgh? Salt Café in Morningside. I like that the name is an acronym of ‘Seasonal and Local Thinking’, sounds like the perfect neighbourhood eaterie. You’re off work, what are you most likely to eat at home? Something I can cook slowly like pork belly and haricot beans with mustard and spiced apple sauce, a recipe from Terroirs in London. Where’s your favourite place to party in style? The Olde Bell in Hurley, it’s about 40 minutes from London and one of the oldest inns in the world. The interiors have been designed by Ilse Crawford so it’s very chic but understated, the food is amazing and the dining room is pretty much selfsufficient thanks to a beautiful kitchen garden.
For a smaller festive bash, where would you choose to dine out in style in Edinburgh? I think Stockbridge is buzzing at the moment; Smith & Gertrude have a brilliant wine list and serve plates of cheese and charcuterie. Bon Vivant is great for cocktails too.
TOP TIPS… FOR THROWING A DINNER PARTY Don’t stress, it’s about having fun so take a deep breath, pour a G & T and enjoy yourself in the kitchen. Plan ahead and cook something like a three bird roast for the wow factor. Add all the trimmings, most of which can be prepped in advance, and the whole thing should go pretty smoothly. Bring out the sherry. A deep rich dark sherry such as Oloroso is great at Christmas.

TILL BRITZE Till is a freelance photographer from just outside Frankfurt. He visited Edinburgh on the way back from Australia and, overwhelmed by its beauty, moved here in 2010. He’s never looked back. He now follows his passion and shoots everything from food and drink to events and fashion. What attracted you to this line of work? I always wanted to do something creative, but not being able to draw or paint properly I never actively pursued it. After I went to live in Australia I bought my first DSLR and came home with 8000 photographs. After that I knew it was more than just a hobby. Candid or posed, what’s your preference when it comes to photography? In my case – candid all the way. I love the very natural and “real” feelings and expressions you get from people. What advice would you give someone looking for a photographer? Make sure you hire the right photographer for the job. If you hire someone who is fantastic at shooting portraits, don’t assume they have the same level of skill on still life or product photography for example. Do a bit of research and see if they have shot assignments similar to the one you would like to get covered, and if not, see if their style would suit your project. Any other top tips? Have a rough idea of what you would like from the photos. It is my job to do most of the creative thinking, but without clear guidelines there will be confusion. Visual examples are always useful so you’re on the same page.

TOP TIPS… TO CAPTURE THE BEST PHOTOS Identify the feel of the event - look through your lens for a few seconds and analyse the scene, you’ll often be rewarded with a natural and relaxed photo. Use natural light where possible, but a properly directed flash can make all the difference. Never take a photo from a low angle, people look unnatural and shooting from below is unflattering Avoid glare or unwanted backlighting and always take your time.

New research from The Sleep Council has confirmed what many bedheads have long suspected – that a great night’s sleep is an effective weapon against coughs and colds. The research, which looked into sleep and the immune system, found that those who sleep better, and longer, have a stronger immune reaction, suggesting that sleep can banish bugs as well as making you feel healthier. "A longer night's sleep - around seven to eight hours for most adults - seems to guard against common winter nasties such as coughs and colds, while scrimping on
sleep appears to make you more likely to succumb to the sniffles,” says Lisa Artis, of The Sleep Council. The Sleep Council research appears to be backed up by scientists in the US conducting experiments on the impact of sleep on commonplace illnesses who found that burning the candle at both ends increases the chances of coming down with coughs, colds and upset stomachs - especially among students and young adults. Lisa explained; "The study, by boffins at Bradley Hospital, Rhode Island, showed that bouts of illness declined when pupils had a longer night's sleep. Sleeping for longer also guarded against school absences because of illness, especially among boys.”

Meanwhile German researchers are also championing the restorative powers of sleep suggesting that the release of certain hormones during sleep may also boost the immune system. This is all useful information for a nation where a third of us are afflicted with a bad cold between two and three times a year and sales of cold and flu remedies run into hundreds of millions. But while clearly a good night’s sleep is desirable for cold and flu sufferers, a thumping headache and bunged up nose aren’t exactly conducive to a restful night. Old wives tales such as sipping on a warm drink and counting sheep do work but it needs to be the right drink and the right way of counting (stay with us). Milky drinks are a good option as, although milk only contains trace amounts of the sleep inspiring chemical tryptophan, there is most likely a psychological link to this remedy, going back to infancy, with an association to milk’s nourishing and growth powers.
While warm drinks containing alcohol may be more appealing than a glass of the white stuff, research has shown that if you take a nightcap you’re more likely to wake up during the night and not feel as rested the next day. And for those whose sheep counting goes into double digits and beyond, you’re doing it wrong. The trick is to stick to counting the same two or three sheep, jumping over the same pen, rather than going up into the hundreds as it is the regular rhythm of repetition that lulls the brain to sleep. The Sleep Council also suggests keeping your bedroom is at a comfortable temperature. That sounds like common sense but as winter peaks so does our central heating dial and with experts claiming a temperature around 18°C is best for sleeping, a full five notches lower than the 23°C national average. Who would have thought turning down the heat could save you from the cold? Toasty.

ST ANTON, AUSTRIA One of the oldest and finest resorts in the Alps, St Anton lies deep in the Arlberg region, which is one of Europe’s snowiest spots. The ski season officially starts on 04 December and the conditions are fantastic right from the get go. St Anton’s extensive network of pistes (340km) and 97 lifts, makes it ideally suited to advanced and intermediate skiers. The lively resort, considered the spiritual home of après ski, is bursting with stylish hotels, restaurants and chalets with something to suit all tastes and budgets. CERVINIA, ITALY Open from the end of October, Cervinia is blessed with plenty of high altitude snow sure skiing on the Matterhorn, which has slopes up to 3,480m. There are also links over the Swiss boarder to the Klein Matterhorn glacier of Zermatt at the even higher altitude of 3,820m. With a village height of 2,050m, Cervinia is one of the highest ski resorts in the Alps and one of the first purpose built resorts, constructed during Mussolini’s era. Its wide runs and laid back atmosphere makes it an ideal choice for mellow skiers. VAL THORENS, FRANCE As the highest altitude resort in Europe, Val Thorens is a safe bet for early snow with good conditions almost guaranteed from mid-November right through until early May. Ideal for those wishing to take to the slopes on more than one occasion this season. From 21 November the lifts at Val Thorens are set to open allowing access to the Péclet glacier and two peaks in Les Trois Vallées that are above 3,000m. The skiing is suited to all standards and there are plenty of great restaurants including the two Michelin starred Jean Sulpice restaurant right on the edge of the piste.

SAAS FEE, SWITZERLAND ‘The Pearl of the Alps’ as it is also known kicks off its ski season in early November with high altitude skiing on the Mittelallalin glacier at almost 3,500m. This charming, car free resort is often overlooked for glitzy neighbour Zermatt. With views of the stunning Matterhorn, it’s surrounded by no fewer than thirteen 4,000m peaks. It is one of the few resorts where ordinary piste skiers have the opportunity to ski in a high-mountain glacial environment. TIGNES, FRANCE With its high altitude base at 2,100m, Tignes is one of the most dependable snow sure destinations in France and often the first resort to open for the season, usually in late September. It benefits from excellent early season conditions for those wishing to ski L’Espace Killy before Val d’Isère kicks off. The resort also offers access to the Grande Motte glacier which at 3,455m, has year round snow. Whilst not as trendy as Val d’Isère, Tignes has something to offer skiers of all abilities and there’s plenty to keep non skiers entertained. Fraser Allan, executive chef of The Pompadour by Galvin and Galvin Brasserie de Luxe, explains why. “Game is very versatile and can be cooked in a variety of ways. For example last Christmas we had a lovely dish on the menu showcasing venison (pictured) that included three different methods of cooking: confit belly, roast loin and slow-cooked shoulder. We served this with cranberries, pommes mousseline, parsnips and the braising juices. It was a wonderful way to use the whole animal and showcase the versatility of the beast.”

ringing a brand new concept and vibe to The Shore is Leith Chop House, the newest addition to The Compass Group portfolio which includes Sygn, Monteiths and the WestRoom. Located on Constitution Street, the steakhouse and cocktail bar blends contemporary cool perfectly but it’s the high quality British bred beef which is butchered and dry-aged in house, then cooked over a custom made charcoal grill that’s the real talking point. My first visit (yes, I have since returned) was on a busy Saturday night with a large group of friends in tow and the atmosphere was buzzing. We began in the bar area of the restaurant and were met with a glorious vision of glass, steel, ceramics and simple wood. Perusing the specially curated
cocktail menu I settled on the Rose Blues, £8; a heady mix of blueberry shrub and Wild Rose Vermouth that was so out of the ordinary and beautiful, it was hard not to be knockout impressed. I’d never tried something even close to that flavour combination before, it was truly exceptional. We were then guided to the beautifully lit, slightly setback, private dining area, a.k.a The Captain’s Table where our server for the evening talked us through the extensive menu and speciality sharing cuts which change daily. To start, I chose the scrumptious Ale Glazed Ribs with fennel, apple and cucumber slaw, £6.50, and they really were as delicious as they sound. I then roped my, immediate-tothe-left, dining partner into sharing the Chateaubriand with

peppercorn sauce, £65. It was hard not to order every side available (they all sounded delicious) but we finally settled on a sensible collection of beef dripping chips, field mushrooms, onion rings and cabbage and bacon, for good measure. The steak itself was one of the softest, most delicate pieces of steak I’ve ever eaten. Picture perfect and cooked to perfection, you could almost taste the charcoal from the grill. In fact, every dish on the table looked divine. We had a non-red-meat eater in our group and she chose an equally visually stunning seafood kebab, £14. I asked her how it was to which she smiled, cheeks filled and nodded her head profusely which says it all. To finish I managed to find room for the chocolate fudge cake, £5.50, which was served with salted caramel ice cream and peanut brittle - heaven on a plate and although small, the perfect size after such an extensive eating experience. Leith Chop House is a gem; a special occasion destination but at the same time an accessible Sunday lunch treat. It offers seriously good food, wine and cocktails. was born in the year of the ox which apparently means I’m stubborn. I’d disagree. In fact, when it was suggested I ditch my long list of chores and errands for a lazy Sunday lunch, I was only too happy to oblige. Having opened in 2014, The Ox sadly suffered a fire just before it was due to celebrate its first birthday. I arrived at the packed out gastropub and sat next to the floor-to-ceiling windows overlooking a buzzy Broughton Street. ‘Baptism of fire’ and ‘Phoenix from the ashes’ clichés aside, my first impression was that these guys were now well and truly back in business. I kicked things off with West Coast oysters, served fresh from the sea on a bed of crushed ice, £10. They slipped down a treat with a squeeze of lemon and a sidekick of sharp shallot vinegar. My dinner guest opted for wood pigeon, £5. Plenty of flavour and just a wink of pink, it was accompanied by pickled kohlrabi, apple and spiced walnuts to add extra warmth and depth of flavour.
On to the mains, I thought it only fitting I tried the ox cheek, £12.50. ‘When in Rome…’ and all that. Cutting through the well-blackened exterior revealed ripples of tender meat and oozing, melting fat. Across the table, my fellow diner tucked into roast haunch of venison with cauliflower, clapshot and an upliftingly fruity bramble sauce, £13. Dessert for my foodie friend was a warm chocolate brownie, offset with a sweet strawberry compote, £4.50. For me though, there’s nothing quite as satisfying as smashing my way through a crème brûlée and The Ox’s version, £4.50, hit the bullseye on both the texture and flavour front. Having rated all three courses top notch, I’ll be insisting on returning to The Ox. Perhaps that’s my stubborn tendencies coming out after all.

The difference between a good and a great TV show can often come down to the soundtrack and scoring the right music to a scene is an art form in itself. Whether it’s an emotive piece of music or something so subtle you barely notice it; here’s five shows that got the balance just right.
