His work is amazing. Famous for his ‘Zumbarons’ and his incredible V8 Cake (featuring no less than 8 layers of yumminess) his creations have become the stuff of legend. In his new book ‘The Zumbo Files’, the man with a tattoo of Willy Wonka on his arm shares his secrets that have rocketed him to fame. Everything is here, from V8 Vanilla Cake, to Zonuts, Zumbarons and even a Fish & Chip Pie. It begs the question to the 34 year old… why share your secrets of success? “I’m happy to have the attitude that the more people making my recipes the better,” Adriano told Ipswich Life. “We all want to be remembered for something. I’d rather give something away in a book and share it, enjoy it...that can only make me stronger. There’s no secrets in being a pastry chef, it’s all about me moving ahead and to make sure I keep evolving.

mbo’s SWEET TOOTH Adriano Zumbo is the name synonymous with imaginative food, and with good reason. “The goal of this book was to tell people that you CAN do what I do. I’ve worked hard on the recipes so they are a step by step guide. With time and planning anything is achievable. “When you try to pack something in over a couple of hours it will go pear shaped. I never get a recipe done in a couple of hours. Often in my bakeries we might do one layer one day, another part of a cake the next day, nothing is ever done by packing it all in and every recipe is different. Some I get quickly others take months. It depends how much pressure you’re under but often I will go back and start all over again, and some recipes take me years to perfect.” Adriano Zumbo grew up in Calabria, 164 km northwest of Dubbo, NSW. His Italian parents owned the local IGA supermarket, where Adriano developed a sweet tooth, and a sense of running a business. He admits that he wasn’t good at school, and after leaving in Year 10, travelled to Sydney where he started a pastry chef apprenticeship in 1997. Today, he owns seven patisseries in Sydney and Melbourne, cementing his reputation as the king of sweets around the country.
“I was pretty focussed on sports as a kid, I thought I was going to be a footy star. Originally I wanted to be a truck driver, as I’d watch all the trucks come into town and I’d talk about trucks, saying I was going to drive one some day. “When I was 14 I started playing around in the bakery in the supermarket and by 15 I got to the point when I was thinking about my future. “It wasn’t till I was well in my apprenticeship I realised I could create things. I used to make a lot of marble cakes at school and I used to love making so many colours then chuck it in a tin and bake it. The students at school and the teachers loved it, which made me feel good. I ended up loving cooking, and each year I love it even more. “People ask me why I have a Willy Wonka tattoo,” Adriano said. “Truth is it was my favourite movie as a kid. I never read the book, I was never focussed at school as I’d read three pages of a book and lose interest, but I used to watch lots of movies. I love the imagination, and a lot of the things from that movie hasn’t been made today. I love the idea of three meals in a chewing gum…I’d love to see that actually happen.
“Everything in food has already been done in some way, some things get recycled, but there isn’t much that hasn’t been done. Everything I create will have a connection to some other cake or dish in the world. It’s easy to see new ideas with instagram and social media.” Some of the desserts in his new book are simply stunning, but Adriano says don’t be put off by how they look….anyone can make them. “If I was standing next to someone in a bookshop looking at this book I’d just say ‘Have a go’. Don’t give up on something. Fight that fear and do it. If it doesn’t work at least you know your destiny, but if you don’t try it you’ll never know.” We couldn’t let the great Zumbo go without asking him what his favourite dessert is at home, and it was the last thing we expected from Australia’s own Willy Wonka. “My favourite dessert at home is custard or ice cream. Seriously…put that in front of me and you’ll get ten out of ten every time!” The Zumbo Files is out now and the Ipswich Life staff still live in hope that Adriano will open a patisserie in South East Queensland. #Yum

One of Australia’s most popular entertainers Wendy Matthews will be joined by The Voice Australia’s Tim McCallum to bring all the fun of Christmas to the Mayor’s Carols by Candlelight on Saturday December 5th. Ipswich Mayor Paul Pisasale said the annual Carols by Candlelight always attracts massive crowds. “Christmas is a wonderful time of year, especially for children and the Mayor’s Carols by Candlelight is about sharing a great time with the family and our terrific community,” Cr Pisasale said. “Together we can celebrate the year, the people we shared it with, our strong community spirit and pride in the city we call home. Cr Pisasale said he was excited to announce Australian icon Wendy Matthews as this year’s star performer. “Wendy Matthews is a soulful artist and with a beautiful voice and repertoire, she will be joined by the Voice’s Tim McCallum. “Our talented local stars will also be performing on the night with the Voices of Ipswich and the Ipswich Gospel Choir. A Fireworks Finale Spectacular will cap off the evening and there will be free children’s rides.
The Mayor’s Carols by Candlelight is a family friendly alcohol free event. Residents living in close proximity to North Ipswich Reserve are reminded to keep pets safely indoors or secure in their yards from 8.30pm for the fireworks. Gates open and rides start at 5pm at North Ipswich

Tickets on sale for annual Christmas Lights Tours Tickets are selling fast, but there are still some available for this year’s annual Ipswich Christmas Lights Tours. The tours will be held on 15, 16 and 17 December from 7pm, departing the Ipswich City Council carpark at 45 Roderick Street, Ipswich. A light supper and rest stop will be provided at the Ipswich Visitor Information Centre in Queens Park, with the tour finishing about 9.45pm. Tickets are $22 for adults, $17 for concessions and $15 for children under 12. Councillor David Pahlke said the tours sold out every year and urged people to book early to avoid disappointment. “We’re once again hosting three tours in
2015 due to the incredible popularity of previous years,” Cr Pahlke said. “The tours will take in some of the best displays from this year’s competition from the comfort of an air-conditioned coach. “Many people traditionally visit the city’s Christmas lights each year and these tours provide people with a way of experiencing the displays in a relaxed community atmosphere.” Bookings for the Ipswich Christmas Lights Tours are essential and can be made at www.discoveripswich.com.au For more information, 3281 0555.

Kate Jones visits Ipswich Kate Jones, often called “the Minister for Everything” (Education, Tourism, Major Events, Small Business and the Commonwealth Games), urges Ipswich business leaders to take advantage of opportunities connected with the the lead-up to the Commonwealth Games in 2018 and the Advance Queensland programme. During a whirlwind visit to Ipswich last week the Minister said that the Queensland Government will invest $1.5 billion that will generate about $2 billion of work over the next two years covering construction and a range of business services. “The Games will be the largest event to be held in the Southern Hemisphere over the next decade,” Ms Jones said. “This will be a game changer for not only the Gold Coast but also the rest of southeast Queensland. “Already, from the Ipswich perspective, eight packages of work have gone to local businesses worth some $17 million – and we still have another 290 packages on the forward procurement plan available to local businesses to bid for. About 85 per cent of work has already gone to local businesses, creating jobs here. I urge everyone to get on the Commonwealth Games website and see what is available. “Ipswich is perfectly placed for teams to come here to do pre-training in the lead-up to the Games.” Minister Jones said the government is focused on diversifying the state’s economy and looking at new ways to support businesses to not only develop the ideas here
but also to turn that into reality, so that jobs stay here in Queensland. “The Advance Queensland package of $108 million delivered as part of the Budget is now starting to get rolled out, and the $40 million Business Investment Fund is now open and this is available for businesses to apply for grants of up to $2.5 million,” the Minister said. “Businesses may apply on the Advance Queensland website.”
Ipswich is a favourite of the Queensland Government, according to Minister Jones. “Because Ipswich has such an active Council we know that if we partner with them then things get done, and the passion that people have for their city. “You’ve had tough times, with the floods and other things; you always rebuild, and it’s one of those places where you always feel welcome, and it’s a community focused on the future.”

HISTORY SNIPPETS Bremer River 1936 Eclipse boat engulfed by water hyacinth on the Bremer River, 1936 Percy ran cargo and pleasure cruises on the Bremer and Brisbane Rivers around Ipswich from the early 1930s until the late 1960s. Another of his boats The Bremer ran aground in the river during the January flood of 1941. During World War II The Bremer was requisitioned by the Navy. He bought the Sredman in 1946 and used it for passenger services until 1955. Water hyacinth was a big problem on the river from the early 1900s. The water hyacinth was particularly bad in the 1930s and would cover the Bremer River from bank to bank.

Mirusia has come a long way since studying opera at the Queensland Conservatorium, Griffith University who, at the age of 21, became the youngest ever winner of the prestigious Dame Joan Sutherland Opera Award. 2016 sees Mirusia returning to home shores, including Ipswich on Thursday May 26 to present a two hour classical-crossover program with the backing of her Chamber Orchestra which includes a strings section, harp, percussion, double bass, grand piano and choral singers. Her repertoire features songs from her Award Winning Albums, including Ave Maria, Romanza, Memory, Wishing You Were Somehow Here Again, All I Ask Of You, and her
own compositions. Her new album This Time Tomorrow will be released in early 2016, containing classical and musical songs. GRACE KNIGHT IN CONCERT Grace Knight is one of the most enduring talents in Australian music and needs no introduction. Her thirty five year career is filled with Aria nominations and chart topping recordings in each of the past three decades and her voice is heard daily on Australian radio. She blew audiences away throughout the eighties as lead singer of internationally successful band Eurogliders. She captivated fans with her “Manic Ballerina” stage persona and Eurogliders took the charts by storm. As a solo artist she transformed herself from Pop Princess to Queen of Cool and lit up the screen in ABC TV’s award winning mini-series, Come In Spinner. A string of successful solo albums followed. Never one to slow down and rest on her laurels, Grace released her critically acclaimed autobiography, Pink Suit for a Blue Day in 2010. Grace will take to the Ipswich Civic Centre stage on Saturday April 9 in a show not to be missed. EMMA PASK IN CONCERT WITH THE IPSWICH CITY BIG BAND Much-loved Sydney Jazz vocalist Emma Pask is set to appear at the Ipswich Civic Centre on Saturday May 14 supported by the talented Ipswich City Big Band. With her new album Cosita Divina Emma has ventured away from the swinging jazz classics to take you on a colourful musical journey accompanied by a jam packed horn section, gleeful percussion, and some tender string moments highlighted on a Beatles classic. Emma’s background extends from being discovered as a 16 year old by legendary jazzman James Morrison, to having just celebrated 20 years of musical collaborations with Morrison. She has performed all over the world, from Queen Elizabeth Hall in London with the BBC Concert Orchestra, to China with the Shanghai Symphony Orchestra. Australian audiences will recall Emma’s star turn on the 2013 season of The Voice Australia where she was part of Ricky Martin’s team. Life Education celebrates record Children who have been at school in Ipswich over the last few years, are likely to know all about the Life Education program. Ipswich MP Jennifer Howard attended Churchill State School recently to celebrate Life Education delivering vital health education to a record number of students in the Ipswich area. Thanks to Government support, over the past twelve months the charity has empowered more than 11,000 Ipswich children with knowledge and skills to help them make safer, healthier choices. “Life Education aims to see a generation of healthy young Australians living to their full potential,” said Life Education Queensland Marketing and Media Manager Amanda Brown. “Our partnership with Queensland Health has enabled Life Education to reach more schools in the Ipswich area. In the past 12 months, we have delivered our health education program to more than 11,000 students across Ipswich’s state, Catholic and independent schools, and early learning centres. “The injection of funds through Queensland Health, along with some new fundraising initiatives, is helping to make sure that our service is around for many more years to come. “We applaud the commitment of the leadership, teachers and parents at Churchill State School to promote healthy living. We also commend the students for embracing the program wholeheartedly.” Ms Howard showed her support for Life Education and viewed one of the lessons being delivered to a Year 2 class. Ms Howard enjoyed the Harold’s Heroes module of the program, run by specialist educator Brad Scarrabelotti, in the popular Life Education mobile learning centre featuring its mascot Healthy Harold the giraffe. Harold’s Heroes teaches children about: • Recognising safe and unsafe behaviours • The effects of second hand smoke on the body • The safe use and storage of medicines • Emergency procedures such as how to call 000 • Healthy food choices
Jana holds on Jana Dore took the honours at the inaugural World Toilet Day challenge ‘How long can you hold on?’ held recently in North Ipswich. The fitness fundraiser, with a toilet twist, was held at Alan Cumming Park. Jana, ironically an employee of Seqwater, held a leg-burning 90 degree wall-sit position against a toilet cut-out for 13 minutes and 40 seconds, outlasting all other entrants. “The first few minutes were tough but I broke through the pain threshold and it seemed to get easier,” she said. “I was keeping a close eye on my competition however the music and audience were welcome distractions. “I’m a big supporter of WaterAid Australia and the work they do in bringing clean water and sanitation to the world’s poorest countries. “The challenge was a fun way to raise awareness about the 2.3 billion people worldwide who don’t have a safe toilet.” Queensland Urban Utilities spokesperson, Michelle Cull, said we’re lucky to live in a country with a quality sewerage network. “A good sewerage network is one of the main things separating the first-world from the developing world and is the cornerstone of public health,” she said. Jana took home a $200 Bunnings voucher and the coveted golden toilet trophy. “It’ll take pride of place in my study, next to the ten pin bowling trophy that’s in dire need of a dust!” Jana said.

Nerf fight takes top prize at IFFY An animated production about a Nerf fight and a group of friends who have to problem solve to stay alive has taken top prize at this year’s annual Ipswich Film Festival for Youth (IFFY). The winners were announced at a red carpet awards ceremony and screening at Limelight Cinemas Ipswich on Friday night, celebrating the theme ‘Hero’. The short film (pictured right) by Karalee high school student Stanley Shaw was recorded in one day with the support of family, friends and neighbours. It will now be screened at Limelight Cinemas Ipswich before an upcoming Hollywood blockbuster. New tastes at Tap’d When it comes to craft beers brewers are getting more and more creative with their beery creations. Brewers are trying to set themselves apart from the rest by experimenting with new and exciting beer styles. My friends at Tap’d feature some examples of these creations and I’m here today to take you through those beers. First up is a collaboration between Croft Brewing Co. and Newstead Brewing Co., both Queensland brewers, called Requiem for a Dream. This is a 6.4% dark sour ale. Croft and Newstead kettle soured and oatmeal porter to create the ultimate escape of acidic coffee, chocolate and a citrus tang at the finish. Using Vic Secret and Ella hops this dark sour has a fruity/ spicy bent that will leave you desperate for another hit. Next is Sharkinator from Lost Coast Brewing, located in California. This beer is a 4.8% White India Pale Ale meaning it is an India Pale Ale made with wheat. A crisp beer made with two-row malted barley, unmalted wheat, a secret blend of Humboldt herbs, crystal clear mountain water and ale yeast. It has been dry hopped with Cascade, Crystal, Chinook and Citra hops. This beer is very sessionable with citrus aromas and a hoppy flavour. Finally there’s Beer Geek Rage Quit from BrewCult in Melbourne. This beer is a 5.5% India Pale Lager, in other words a lager
with IPA like hopping. Beer Geek Rage Quit is a beer designed to create a love-hate affiliation amongst the hardcore beer geeks - most beer geeks drink ale, this is a lager. It’s got Pride of Ringwood hops in it - same as Carlton Draught. It’s also got heaps of US and Kiwi hops in there too, which leads to aromas of citrus, pine, lemon, grapefruit and tangelo, with similar flavours and strawberry following through. All three of these beers are pouring right now at Tap’d but you must hurry, they only have one keg of each and they’ll be gone before you know it! Cheers, Tim

Jungle Glam Ball raises funds for Mater Foundation It was the night of nights at the 9th annual Greater Springfield Ball, in support of the Mater Foundation. Mater shared the heartfelt story of Amanda Vea Vea, her battle with cancer and the support that Mater has been able to provide her and her family. The live auction had everyone on their seats as prizes were highly sought after. The 10-night holiday at Dusit Thani Maldives had everyone dreaming of a getaway and raised a massive $27,000. Guests were asked to dig deep for charity – and they certainly did, achieving well over $80,000, double that of previous years.

C-17 lands in Antarctica A C-17A from No 36 Squadron at RAAF Amberley has made a maiden flight from Hobart to Wilkins Airfield in Antarctica, landing on the icy runway to complete a joint operation with the Australian Antarctic Division (AAD). Wilkins is about 70 kilometres from Casey Station, Australia’s largest base in Antarctica. Commander Air Mobility Group, Air Commodore Richard Lennon said the C-17 carried about 20 tonnes of cargo and people, to enable the C-17 to fly the 3,500 kilometre route to Wilkins and return unrefuelled. Using military assets to deliver equipment and supplies is an important first for the Antarctic Division, according to Director Dr Nick Gales, who said the cargo on board the flight would normally have been transported by sea onboard the Aurora Australis icebreaker. On arrival at Wilkins, a team of AAD and RAAF personnel unloaded the cargo, which included a new Hagglund dual-cab vehicle used for transport across the snow and ice covered terrain, along with two quad bikes. Pallet loads of building materials also brought onboard will be used for construction works at Casey Station. Logistics support using RAAF C-17 airlifters is regarded as an important option, with carriage by sea often problematic, and it opens up other possibilities such as medical evacuation from Antarctica. Previously, the need to make the flight from Hobart to Wilkins and return unrefuelled has been a hurdle for other RAAF airlift aircraft. As part of ongoing training for RAAF personnel, a simulated aeromedical evacuation from Wilkins enabled the crew and an onboard medical evacuation team to practise a core operational task under challenging conditions. With the eighth C-17A Globemaster delivered recently to 36 Squadron the RAAF not only has worldwide reach, with the C-17’s long range and speed performance, but also the assets to support a number of operations globally – including support for RAAF operations in the Middle East and humanitarian assistance tasks.
