Growing up, our family spent summer camping all over the Lower Mainland, and traveling to an Okanagan motel to soak up the sun. Those memories led my own family to spending Summer 2020 camping, including a week in Penticton, visiting places I spent as a child. Now we’re planning another camping season exploring our amazing Province.
This issue, we’re featuring four great staycation ideas for your family, whether you are looking for a day trip, camping for the weekend, or wanting to relax in a luxury resort. There are so many places to go for all interests and all ages. Just look around!

BC BIRD TRAIL

Birding is a hobby that is quickly gaining popularity, but did you know it can also make an excellent family activity? It can be a perfect reason to get the family outside, enjoying and connecting with nature. But birding also provides an opportunity for learning and appreciating the great outdoors, even the wild world right outside your doorstep! If you’re a family looking for some birding fun in 2021, here’s some help with tips and places to go along the BC Bird Trail.
WHY BIRDING IS GREAT FOR FAMILIES
Birdwatching is something that can be done anywhere, which makes it easy to plan for. It can fill as little or as much time as you want; It’s perfect for a short, active part of a busy day or the main activity for a full day adventure. It’s also affordable, as most parks and trails are free to explore (unless you want to make a trip to a sanctuary which may ask for a donation or entrance fee). As a bonus, you don’t need expensive gear to go birding.
Birding is also a great way to be active, even during times where travel is restricted - try sticking to local parks and discover some new areas close to home. The great thing about family birding outings is that they can be as simple as gathering in your own backyard and focusing on what birds you can see or hear.
FOR THE KIDS
Birding offers learning opportunities for kids and fosters a love of nature. Learning the basics of birding encourages responsible practices while being out in nature. As kids start to identify birds by sight and sound, it gives them a huge sense of achievement. It’s exciting to check birds off your list as you spot them in the wild!
Families can participate in events like bird counts throughout the year, either through schools or local birding groups. These activities help youngsters learn why it’s important to engage with nature and participate in Citizen Science projects, like bird counts, to help conservation efforts. Birding is a fun way to get into science, but it also opens up creative interests for kids, like photography or drawing, which can be great lifelong creative outlets.

Planning Ahead When Birding
Here are a few things to keep in mind before setting out on a family birding experience:
If you’re planning a bunch of birding, break it up into smaller chunks throughout the day
Bring snacks!
Have a backup plan (rain or boredom can strike when you least expect it)
Sometimes it won’t end up being about the birds - sometimes kids will just want to enjoy nature or a playground instead. Don’t worry, the birds will still be there next time!

The practice of yoga has been around for thousands of years. Although a new practice to North America, it has exploded in popularity in the last 20 years. As adults who practice yoga, we are aware of the physical, emotional, and psychological health benefits.
As parents who have children growing up in a chaotic and sometimes scary world, it is clear that a regular yoga practice is important for our children too. Yoga and mindfulness will help our kids cope with presentday life stresses. Through physical practice with mindfulness & breathing exercises, our children will learn essential life skills and become aware of their own thoughts and actions.
A regular yoga practice will help build strength and improve flexibility. Breathing techniques will help build confidence and help the child excel in times of stress. The breath will help calm the child and overcome anxiety so they can become a more confident and self-assured individual.
Mindfulness techniques such as meditation will help the child cultivate focus. Mindfulness shines a light on how one feels emotionally and physically. It acts as a tool to help the child react in a thoughtful and composed manner.
We all want to help prepare our children to live the most fulfilling and happiest of lives. We truly believe yoga will help our children focus on what’s important and become confident adults who care for their wellbeing, the wellbeing of others, and of their planet.

YOGA SUPPORTS CHILDREN’S PHYSICAL WELLBEING
The movements practiced in a yoga class (called poses or asanas) are much more than just stretching. Asanas can help increase flexibility, strengthen bones and stimulate the circulatory and immune systems. Along with purposeful breathing, these asanas calm the mind and reduce stress.
Regular yoga practice helps with overall physical and mental health. Performing asanas slowly with mindful control acts as a mental exercise in concentration and meditation.

Yogic breathing increases lung capacity, as well as strengthening and toning the entire respiratory and nervous systems. Deepening the breath brings more oxygen to the body through the bloodstream. Mindfulness helps children develop healthy responses to the chaotic world around them. It also helps them deal with their own emotional responses to the world. The idea is to encourage children to use these techniques whenever they need to find calm, refocus their energy, and concentrate on specific tasks.

THE BEST OF SUMMER SALADS

Summer is in full swing which means non-stop, fun, picnics and casual entertaining. Salad is a staple at my house. And all my peeps know that they will always love my healthy and lively concoctions. For me salads were my foray into eating well. Creating fun and fabulous salads is a bit of an obsession that initially lead to Nourished! Here are a few of my all time faves that will make any salad sing.
CARROT GINGER DRESSING
This is a rendition of GP’s GOOP dressing. Steeped in antioxidants and healthy fats, I love this as a dip, salad dressing and a marinade.
INGREDIENTS:
2 Carrots
1 Shallot
2 thumbs Ginger
2 tbsp Sweet miso paste
1/4 cup Rice vinegar
2 tbsp Honey
DIRECTIONS:
2 tbsp Sesame oil
1/3 cup Avocado oil
1/3 cup Olive oil
1/4 cup Water
Salt and pepper
Puree all in blender until smooth. Keep in glass jar for up to a week.
SERIOUSLY AMAZING SESAME DRESSING
The first time I tasted this I pretty much drank it. I was with my best friend and we both were a freak for it. I begged and begged and begged the Whistler chef for the recipe. My relentlessness worked. I adjusted some key components, worked my magic and nourished it up. You’ll be a freak for it too. Use as salad dressing, dips, marinades for chicken, fish and tofu. Healthy fats, calcium and some serious amount of flavour. This recipe makes a lot and it keeps well in fridge for up to 10 days (if you don’t eat it by then!).
INGREDIENTS:
2 cups Sesame seeds
1/2 cup Bragg's liquid soy
1 cup Rice vinegar
1/4 cup Water
1/2 cup Avocado oil/flax oil/ olive oil or a mix of all
DIRECTIONS:
8 tsp Mirin
2 tsp Maple syrup
1/4 cup Sesame oil
Put all ingredients in blender and blend. Makes a lot. Keep in fridge for up to 10 days. Use as dip, marinate for fish, veggies, tofu and chicken.
LEMON VINAIGRETTE
This is a deviation on my favourite balsamic vinaigrette. I love the lemon for summer to lighten up the load and add some extra lemon zest to life. It also doubles as an outstanding white fish marinade. Yum.
INGREDIENTS:
1/4 cups Champagne vinegar
2 tbsp Maple syrup
1 tbsp Fresh lemon juice
Salt and pepper to taste
DIRECTIONS:
1/2 cup Olive oil OR
1/4 cup olive oil & 1/4 cup avocado oil
1/2 tsp Organic dijon mustard
1. Place the vinegar, agave nectar, lemon juice, and mustard in a blender and pulse to combine. With the motor running, slowly add the oil in a steady stream and continue blending until the mixture is creamy.
2. Use immediately or refrigerate in an airtight glass container for a week.
CREAMY PARSLEY DRESSING
Parsley is the easiest green to grow. You don’t need to do much. Mine has been neglected for over a year. It never dies. The plant went dormant in winter and early spring up came beautiful bushels of green leafs. Not just garnish, parsley has some pretty potent nutrients—Vitamin C, B, K, Beta Carotene, Antioxidants, Folic Acid—to name a few.
So with the excess of parsley growing in containers on my patio, this creamy, zesty salad dressing, dip, fish topping is my latest addiction. And so heart healthy too.
INGREDIENTS:
2 cloves Garlic 1 cup parsley
1 tbsp Dijon
1 tsp Maple syrup
1/4 cup Apple cider vinegar
DIRECTIONS:
1/3 cup Walnut, avocado, or pumpkin seed oil or a mix of all
1/3 cups Olive oil
Salt and pepper
1. Combine all ingredients in blender, mix until smooth, creamy and beautifully green.
2. Makes about a cup. Keep in glass container in fridge for up to a week.

It all begins with a wish child, of course.
Recently, Make-A-Wish® Canada granted Bella’s wish for a playhouse. When her blindfold was removed and she saw her new backyard play structure for the first time, it was a moment of pure joy for a child that has spent more than 800 days in the hospital in her seven short years. Bella is in need of a bowel transplant, and her gastrointestinal condition comes with myriad other health issues that has sent her to the hospital, time and time again. But at her core, she is just like so many other seven-year-old little girls. She enjoys spending time with her brother and parents, playing dress up and imagining her life as a princess. Her wish to have her very own playground came from the heart and mind of an active and spirited child who is not defined by her critical illness.
The wish journey begins when a child’s medical care team
makes a referral to Make-A-Wish; this is the first step down the road to a granted wish. Make-A-Wish employs a number of wish-granting staff (how cool is that job title?), and the wish granter will often assign a volunteer to a wish family. Volunteers are at the heart of so much of what Make-AWish does; helping at fundraising events, assisting with community awareness campaigns, and getting to know wish kids to help them understand the process, and sparking the imagination of the child as they begin to think about their most heartfelt wish.
Once a child has decided on their wish, the real behind-thescenes work begins. In wishes like Bella’s, a builder must be found, the project must be budgeted for, and a timeline created. This is a good time to mention a key player in each and every granted wish: the donor.
Make-A-Wish relies solely on the generosity of individuals, community groups, businesses, and partnerships to fund all of it’s work. The foundation receives no government funding. Without donations, wishes do not get granted. During the 2020 year and the COVID pandemic, Make-AWish was hit hard with a 30 percent decline in revenues. The world shut down at the same time, of course, meaning many travel-related wishes have been put on hold until it is safe to send wish kids out into the world again. When that day comes, Make-A-Wish will have a huge backlog of wishes to grant, once again highlighting the critical importance of donors to help the foundation meet its mission.
In the meantime, Make-A-Wish is still granting wishes. Many children have decided to wish for something they don’t have to wait for, like Bella and her playhouse, or Shailyne’s wish for Apple computer products, or Gabriel, who made a wish for a mountain bike. Home gyms have been popular in the last year, too, or bedroom redecorations, and music production equipment. There is no shortage of creativity in the hearts of wish kids, and Make-A-Wish is thrilled to be able to continue granting wishes during the pandemic. The COVID-19 situation has added layers of complexity to young lives already made more difficult through critical illness, and to be able to grant wishes in this time is a wonderful privilege.
Finally, let’s go back to Bella’s wish, and that moment in time when all the pieces come together to make a wish come true. Rather than just saying ‘here’s your wish’, Make-AWish staff and volunteers often work with families on ‘wish reveals’, to make the moment as experiential, special and memorable as possible.
Bella’s mom, Kyla, described what that reveal felt like to her.
“As a mom, to see Bella’s wish come true is everything that is amazing,” said Kyla. “To see her have her wish come true and enjoy that…is everything. I am so thankful for everyone involved. I would say that has just been everything to me and my family. I hope that for other wish families, their wishes can come true, just like this.”
Bella planted the seeds of her wish many months before it came true, and the work to turn her vision into a reality began on that day. There were many like Bella before, and there will be many yet to come. For each unique wish granted, Make-A-Wish and its team of dedicated staff, its volunteers, its partners, donors and supporters put in time, thought, energy and ultimately, belief, that critically ill children are deserving of being transported from a place of uncertainty and fear to a place of joy and happy memories.

It’s more important than ever for youth to spend meaningful time outside, and Fresh Roots’ summer programming is teaching fundamental skills in the sunshine.
After over a year of stress and being cooped up indoors, it’s time for a breath of fresh air—literally. Now, what’s essential for kids is getting outside and building community.
Fresh Roots is a Vancouver-based nonprofit committed to good food for all. That means growing, harvesting, cooking and eating in a sustainable, community-minded way. Like the veggies we grow and harvest, our mission starts at the roots: we give youth the tools they need to grow and share healthy food for themselves, their families, and the community.
SOYL: sustainable opportunities for youth leadership
Fresh Roots’ 6-week SOYL (Sustainable Opportunities for Youth Leadership) summer program gives secondary students the opportunity to learn about the food system while empowering them with hands-on farming and pre-employment experience. Our SOYL youth crew are involved in every step of the process from seed to sale—from harvesting the food to providing customer service at local farmer’s markets, they contribute to their community in a meaningful way, and have a ton of fun doing it.

The SOYL program is unique in that youth crew members can choose to return the following year and mentor new participants. Fresh Roots youth mentors provide guidance and support while expanding their own abilities to adapt, problem-solve and become empathetic, effective leaders. SOYL programs take place on schoolyard farms in Vancouver, Coquitlam and Delta.
“I started in SOYL in 2016. It felt like a space where I could really have fun and be comfortable, and practise a lot of leadership skills that I wasn’t learning in school. Two summers later I applied to facilitate, and what brought me back was the idea that I could create that same environment for other youth. Summer Camps
Camp Fresh Roots’ day camps are the perfect opportunity for your child to learn about where their food comes from through fun-filled hands-on learning in a safe creative environment. Available in weeklong (Monday to Friday) midi (partial week) and mini (for the littlest participants) options, our summer camps teach kids from ages 4-11 lots of skills useful both on and off the farm. They’ll explore how plants grow, see what’s living under the soil, create a meal and snacks with fresh fruits and veggies and more.

This is a great way to use veggies from the garden that slugs nibbled on a little too much (or the ones you forgot in your fridge). It lets kids explore veggies in a fun way with no pressure to eat them, which can lower the chances of them saying "Ew, what's that?" at dinner time.
What you need:
• Veggies - look for interesting shapes and textures!
• Knife and cutting board
• Tempera paint
• Paint brush or roller (optional)
• Paper
How to do it:
Cut root and stem veggies so there is a flat edge. Try different ways of cutting them to get different shapes!
Dry the cut surface or the leaf surface if they are damp. This holds the paint better.
Use a paint brush or roller to apply a small amount of pain to the veggie, or you can just dip the veggie into paint. Stamp away!

Recipe for Fresh Roots Pollinator Salad
4-6 servings
Ingredients:
• 6 c mixed fresh fruit (berries, peaches, etc.), cut in bite sized pieces
• 2 Tbsp honey
• 1 tbsp lime juice
• 1 Tbsp fruit juice (or water)
Directions:
1. Mix honey and lime juice, and add a little extra fruit juice or water to make the sauce pourable.
2. Pour sauce over fruit.
3. Let stand in the fridge and toss again before serving. Thank the bees for pollinating all the fruit and making the honey before you eat!

GOAT RIVER FARMS LTD
Region: Kootenay Rockies and Columbia Basin
Owners/farmers: Dale and Wendy McNamar
Location: Creston
Find them at: Creston Valley Farmers’ Market, Nelson Farmer’s Market
They sell meat (certified Angus beef, heritage pork, turkey, chicken, lamb and rabbit) and natural unpasteurized honey.
What makes them special? Kootenay Natural Meats raises animals ethically and humanely, with care and customized diets to offer superior meat in both flavour and nutritional content. They also have 30 bee hives, which they extract honey from each fall, and sell in its pure, delicious, unpasteurized form. Of note, this honey was used to make the recent BC Farmers’ Market Honey Blonde Ale, a collaboration beer created by Persephone Brewing Company, and the BC Association of Farmers’ Markets.

TWIN ISLAND CIDER
Region: Vancouver Island and Gulf Islands

They make heirloom cider and perry (alcoholic drink made from the fermented juice of apples and pears).
What makes them special? Harvesting from over thirty heritage (various century old) orchards and backyards on Pender, Saturna & Mayne Islands, they are a community-centred cidery dedicated to making traditional cider and perry fermented only with native yeasts present on fruit skins, mills and presses, and in the air. This produces cider which truly conveys the terroir of the Gulf Islands with a natural residual sweetness without the need for back-sweetening with added sugar.

WOODGRAIN FARM
Region: Northern BC
Owners/farmers: Jonathan Knight and Jolene Swain
Location: Hazelton
Find them at: Hazelton Farmers’ Market, Bulkley Valley Farmers Market.
They grow vegetables and grains, and raise lamb.
What makes them special? They grow heirloom varieties of various grains, and vegetables. Their organic flours are freshly ground on their 12” granite stone mill, fashioned from Kispiox Valley birch. An advantage of quarried granite mill stones (as opposed to manufactured composite stones common in most modern ‘stone mills’), is that the outer bran peels off the grain in large flakes instead of being shredded by the gritty surface of composite stones, making the bran flakes gentler on the digestive system, and are easy to sift out if you desire a lighter flour.

SPAPIUM “LITTLE PRAIRIE” FARM
Region: Cariboo Chilcotin Coast
Owners/farmers: Paula Cranmer-Underhill, Brian Cranmer-Underhill (and daughters Brianna and Danielle)
Location: Lytton

They grow vegetables, make jams and preserves, and do traditional cedar weaving. They also offer cultural and farm tours.
What makes them special? Working in the footsteps of their ancestors to revive agriculture and grow tourism for the Nlaka’pamux territory. Spapium “Little Prairie” Farm is located on lands left by Paula’s Grandfather, Raymond Thom; it is a healing destination on the land, growing good food in a way that is gentle on the Earth for sustainability of the land and water resources.

PARADISE VALLEY PRODUCE
Region: Sunshine Coast

Location: Paradise Valley, just outside of Powell River

They grow certified organic vegetables.
What makes them special? Paradise Valley Produce is focused on sustainable farm practices and regenerative farming, and owners Rachael and Dane are invested in being stewards of the land. Interesting to note that their farm land was once a successful goat dairy operation run by the Lambert Family in the 1900s.

If you are looking for something a little more leisurely than our hiking trails, try biking the local farm country. Discover the Agassiz Circle Farm Tour, a self-guided agricultural tour through Agassiz’s prime farmland offers a wonderful bike ride along generally quiet country road. This tour is available rain or shine and can be done by car if you experience our beautiful BC rain. Once in the car, take a short drive and discover the local history of the area. Explore the Agassiz Harrison Museum or pop over the Kilby Historic site, a great historic attraction complete with farm animals, a museum, store, and restaurant.
Finally, if you are a mystery lover, the Harrison Hot Springs area is also known as the home of the legendary Sasquatch that has been spotted in numerous locations around the region. While carvings and statues of the elusive creature are easy to find throughout the Village, finding the real deal is more of a challenge.
