2 small apples, peeled, cored, and cut into 1/4-inch slices Preheat oven to 425 degrees. In a large bowl, whisk eggs, milk, vanilla, and salt. Beat well, by hand or in a blender, until thick and foamy. Add flour and beat well to combine. Stir in the apple slices.

Place a 9-inch cake pan (not a springform pan) in the hot oven for several minutes. Remove and place butter in pan, swirling to melt it and to coat bottom of pan. Scrape pancake batter into pan and sprinkle with cinnamon-sugar mixture. Bake for 20 minutes, until puffy and browning on the edges. Reduce heat to 375 degrees and cook for an additional 10 minutes, until nicely browned. Sprinkle pancake with powdered sugar and serve with lemon wedges (to squeeze over the pancake) or with cubes of cheddar cheese. Best eaten right away.

She currently teaches applied arts, digital design, and traditional drawing and art history at Quinsigamond Community College. Paul fournier The late Paul Fournier was a native Mainer with a long career in the Maine woods, starting out as a registered Maine Guide and bush pilot. For twenty years he was the public information officer for the Maine Department of Inland Fisheries and Wildlife. He also produced a weekly television program, Maine Fish and Wildlife, for the Maine Public Broadcasting Network. For decades, Kendall Morse was a multitalented entertainment force. Born and raised in Machias, the grandnephew of a renowned local storyteller, Kendall began telling stories professionally in the early 1970s. He eventually hosted a show on Maine Public Television called In the Kitchen, wrote a book by the same name and released a popular album called Seagulls and Summer People. Kendall was also a successful folksinger. Three times he was voted Folksinger of the Year by the Maine Country Music Association, was inducted into the Maine Country Music Hall of Fame in 1995, and was nominated for a Grammy in 2009 for his role in the double CD, Singing through the Hard Times, a tribute to Utah Phillips. The Contest
