Recipe: Oven-baked chickpeas

Ingredients:

2 cans of chickpeas, oil olive for roasting, salt and pepper, ½ teaspoon ground cinnamon, ¼ teaspoon cardamom or cloves, 1 teaspoon ground coriander, 1 ½ teaspoon ground turmeric, ½ teaspoon ground ginger, 2 teaspoons smoked paprika, 2 tablespoons ground cumin, 3 teaspoons red pepper flakes/crushed red pepper, and a dash of sugar (optional)

Directions:

1. Preheat oven to 350 °F.

2. Open your cans of chickpeas and drain the liquid and rinse in a colander. Dry with a paper towel before setting aside into a large mixing bowl.

3. Mix all of the spices in a separate bowl and set aside.

4. In your large mixing bowl with chickpeas, add a bit of olive oil and slowly stir and incorporate your spices until all of your chickpeas are coated.

5. Spread out your chickpeas onto a baking sheet and place in your oven at 350°F for 1 hour or until chewy/ crunchy. Check your chickpeas 3 times within the hour and use a metal spatula to move them around to ensure even baking. Once done, let them cool, then serve or store.
