Central Mexico A Cultural Kaleidoscope

Mexico City, an impressive megalopolis with more than twenty million inhabitants, encloses in its soul the fascinating history of one of the greatest American civilizations: the Aztecs. Its unique Plaza de la Constitución, where an enormous baroque Cathedral in Latin America and where the monumental Government Palace was the Center of the ancient Aztec city of Tenochtitlán, and its esplanade, also called the "Zócalo," recalls the foundation of an unfinished work of those times. Upon the arrival of Cortés, and after numerous battles and heavy human losses, the Aztec temples erected cathedrals and residences.

Today, Mexico City is representative of both cultures and their fusion; its streets show the best of the Spanish colonial style, and its museums exhibit rich art collections of Amerindian cultures. Mexico City is the largest city in North America, whose dimensions and population size make it comparable only to cities like Tokyo, Japan, or Moscow in Russia. It is one of the largest cities in the world.

Among the first skyscrapers in the capital, it is worth noting the La Nacional Building (1932), the Anahuac Tower (1945), the El Moro Building (1946), the Miguel E Abed Tower (1952), and the Latin American Tower (1956).

Around the middle of the 20th century, a construction style developed in the capital called the Pedregal Style, which sought the integration of functional architecture with the forms of the volcanic nature of the Pedregal de San Ángel neighborhood. The greatest exponent of this style was Luis Barragán, whose house studio was declared a World Heritage Site in 2004.

Mexico City is, after London, the city in the world with the most significant number of museums per capita, where the rich pre-Columbian heritage of Mexico preserved. Cold Side Dish

Ingredients for six servings:

Chicken cut into pieces

1 cooked beef tongue

3 pork feet

1 apricot lettuce

4 large apples

4 seedless oranges

4 limes

2 Bananas

6 Guavas

2 medium jicamas

2 large beets

1 Jar of olives

1 Cup of shelled peanuts

1 large avocado

1 liter of olive oil.

1 liter of apple cider vinegar

Salt Pepper

Preparation:

For the vinaigrette, mix olive oil, apple cider vinegar, salt, and pepper.

Cook and slice the beef tongue, then add it to the vinaigrette. Cook and halve the pig's feet, and add them too.

Slice apples, oranges, limes, and guavas without peeling. Peel and slice plantains, jicamas, and beets. Add all the ingredients to the vinaigrette and let them marinate for at least an hour.

Serve the dish by placing finely chopped lettuce on a plate, then add the pickled meats, fruits, and vegetables. Finally, garnish with olives, peanuts, and avocado slices.

1. For the filling, heat the butter and fry the onion until transparent; add the garlic and cook for 1 more minute. Add the meat with 1 tablespoon of salt and pepper; Cook for 10 minutes. Add the tomato, 1/4 teaspoon cinnamon, nutmeg, cumin, cloves, apple, pear, peach, banana, almonds and raisins, mix and cook for 5 more minutes; Fill the chiles and set aside

The Chile en Nogada, traditional and well-known dish of Puebla, is a culinary delight based on poblano peppers

Ingredients:

2 tablespoons lard

2 Tablespoons finely chopped onion

2 Teaspoons chopped garlic

600 grams of ground beef

1 Tablespoon salt

1/2 teaspoon ground black pepper

7 Tomatoes seeded and cut into small cubes

1/4 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon cumin powder

1 pinch of clove powder

1 Apple, diced

1 Pear, diced

2 Peaches, diced

1/2 Banana diced and fried

1/4 cup shelled and chopped almonds

1/4 cup raisins

8 Roasted, peeled and seeded poblano peppers

1 packet of cream cheese at room temperature (190 g)

50 grams of goat cheese

2 Cups clean walnut

4 Tablespoons sugar

500 Milliliters of sour cream

1 1/2 Cups milk

1/4 teaspoon ground cinnamon

1/2 Teaspoon salt

1 pomegranate to decorate

1/4 cup disinfected and finely chopped parsley leaves

2. For the nogada, blend the cream cheese with goat cheese, walnut, sugar, cream, milk, 1/4 teaspoon cinnamon and 1/2 teaspoon salt.

3. Serve the chiles bathing with the nogada, decorate with the pomegranate and parsley. Offers.
