EDITOR’S LETTER Historically speaking, the first immigrants to come to the mountains on WNC were English, Scottish, and Irish, a fairly homogeneous group. Although we are a place with more diversity today, there is no part of WNC more diverse than our food scene.

Where a year ago, there were forty international restaurants, there are now more than fifty — and that is just within the downtown Asheville area!

Surrounding cities and counties are also experiencing a boom in restaurants of the more exotic variety.

With choices ranging from tacos to curry, you can get a taste of the world while enjoying your local craft beer and a view of the mountains. Enjoy authentic Greek food from recipes that have been passed down for generations at S&W Artisanal (page 8). Visit a quaint little Biergarten in Woodfin (page 12).

And if you’d rather cook your own, Chef Meherwan Irani’s new venture, Spicewalla, wants to provide you with the best possible spices for that authentic flavor (page 18).

While my taste buds are getting excited for all that great food, honestly my tongue is already getting twisted thinking about pronouncing all of those dish names. I am truly the worst with pronounciation of foreign words. But at least I count myself in good company with Stu Helm, who shares with us his Top 10 Hard to Pronounce Dishes to Order in Asheville (page 22) . If all else fails, just point at the menu. It always works for me. Dig in Ya’ll!

A Heaping Plate of Paradosi (Tradition) At Asheville’s new Greek eatery S&W Artisanal, Executive Chef Alex Baxevanis serves up family recipes stretching back generations

CARING FOR A NEWBORN IS DIFFICULT ENOUGH. But caring for a new baby while nurturing a new business? Yet Alex Baxevanis’ parents did it: they opened their first restaurant—a seafood eatery—a mere three months before his arrival.

“I literally grew up in the restaurant business; that was my babysitter,” he says. “I was in the kitchen throwing flour and water everywhere, making a mess.”

Baxevanis’ Greek father was responsible for all things food, while his mother, an NC native, ran the front of the house.

Around nine or ten, his dad let him begin washing dishes, busing tables, and even frying up fish in the deep fryer (don’t worry, he was tall enough to reach it and not get hurt). And by 13, Baxevanis knew without a doubt he wanted to go to culinary school and become a chef; he ended up enrolling when he was only 17.

All the while, from toddler to teen, he got a hands-on culinary education at home too — shelling green beans on the front porch with his maternal grandmother and rolling dolmades, or stuffed grape leaves, with his yiayia, Fotini.

Learning From Family While he loves Southern cooking, you’ll usually find Baxevanis enjoying it with his own special Greek twist—think collard greens finished with splashes of lemon juice, olive oil, and hot sauce and cornbread flecked with kalamata olives and feta cheese. He says he’s always had a soft spot for traditional Greek dishes, especially those made by his loved ones.

As a kid, his whole family would come together as often as possible around food—20 cousins might show up, making for a fun soccer game in the front yard to pass the time before the meal was ready.

“My aunt would make food that was really good, but sometimes it could be a little too greasy for me,” he shares. “When my grandmother made it, it was always perfect.”

That’s why, after following through with his childhood declaration and learning from the pros at Johnson & Wales in Charleston, he decided there was another expert he needed to study under before his training could be complete. Upon graduation, he enrolled in the school of Fotini for two years.

He worked side by side with her in the kitchen every day, mastering the family masterpieces—some her own, some her mother’s, some her mother’s mother’s — scrawled in tattered recipe books, of which he’s now the proud owner.

After returning to the states, Baxevanis got right to work, and over the span of eight years he opened eight of his own restaurants, stretching from Alabama to South Carolina. While the menus all had a Greek influence, they weren’t Greek restaurants per se: he followed in his parents’ footsteps and opened seafood establishments, and he even had a pizzeria. Then, a few years ago, he left the kitchen for an office and began working for a food distribution company.

He wanted to be cooking the Greek food he knew and loved, but just couldn’t find the right scene and didn’t see much demand at the time.

Just Like Grandma Used to Make That all changed when, last fall, the owners of S&W Artisanal Eatery reached out about their new concept. He jumped at the chance to join the project as executive chef and get back in the kitchen.

“When I was approached with this position, it hit home, because I got to bring my heart and soul onto a plate,” Baxevanis explains.

Eighty percent of the recipes he’s cooking now are from his grandmother, great-grandmother, and generations beyond, many of which he prepared alongside Fotini in Greece.

“Here, I come in and I smell the smells that I smelled there,” he shares. “It’s the memories of working in the kitchen with my grandmother, her singing her songs. I’ll turn on Greek music and then I’ll get in my zone. Everything just starts to flow from my heart.”

He talks much of heart, saying it’s the first, most important ingredient of every meal, a maxim he learned from his NC family as well.

“This is a way to show both of my cultures and to be able to show off and showcase that Greece is not just the four items that most people think of,” he says. “They think gyro sandwiches, spanakopita, moussaka, and pastistio, and they think that’s it.”

More Than Moussaka That doesn’t mean you can’t find these dishes at S&W; in fact, moussaka is a bestseller. But, Baxevanis stresses, Greek cuisine has lots more to share.

“It’s very seasonal, very fresh,” he says. In the summer, that means mostly seafood and vegetable dishes, while winter options are heartier and heavier with beef and lamb.

To that end, beginning this April, S&W’s upstairs dining space is getting a menu makeover and a new name reflective of those changes: The Mez, a nod to its mezzanine location and its offering of mezedes, or small plates. The menu will change seasonally, with some staples sticking around all year, and serve up super- traditional offerings.

After you’ve tried his moussaka and the other dishes you’ve heard of, Baxevanis recommends ordering outside the box, 10

standouts like his cold octopus, Greek sausage with hints of orange and leek, and whole grilled fish—a Greek branzino with classic flavors of olive oil, lemon juice, and oregano.

Downstairs, a café features a different menu, one focused on salads and sandwiches including gyro and souvlaki, skewers of pork, chicken, or beef ready to be placed in a pita with onions, tomatoes, and tzatziki. There’s also a bar, The Times at S&W, which serves cocktails alongside a late-night menu of selections from the café.

“It’s quite a large operation we have here,” Baxevanis says, sharing that there’s a full bakery, too. His wife, Athena, is at its helm.

Aside from pita, which the eatery sells too much of to make on-site, the bakery creates all the other breads on the menus in-house, along with a variety of pastries. The star ingredient in its sweets? Goat butter made especially for S&W by Farm to Home Milk, a distributor that sources from nearby dairies. It gives sticky desserts like orange pie the traditional flavor and taste profile, Baxevanis notes.

But while the café and The Mez menus are about as classic as they come, Baxevanis’ wife breaks with tradition from time to time in the dessert department. “Her baklava truffle,” he boasts, “you can’t get that anywhere else.”

All in all, his goal, and the goal of S&W’s owners—including relatives of famed architect Douglas Ellington, who designed the building in 1929—is simple: filotimo, a Greek term that translates roughly to hospitality. “In Greece, you never go anywhere and find a stranger, and you’re always going to be offered food.”

Baxevanis wants customers to be able to experience a little bit of that in Asheville, and to feel the warmth of his yiayia’s kitchen.

German Flavors Just a Short Drive Away

by TIFFANY NARRON photos by TIFFANY WELSH WHEN VENTURING OUT TO EXPLORE ONE OF THE MANY CULINARY WONDERS IN WESTERN NORTH CAROLINA’S VAST EDIBLE LANDSCAPE, one might not imagine themselves driving too far past the string of consignment and car repair shops lining Weaverville Road. Just as you’re considering turning around, you’ll find a picturesque Lincoln Log structure brought to life with American and German flags flapping in the wind above a Biergarten, dotted with colorful umbrellas awaiting sunny afternoons and merry beer drinkers. A gentle lull of accordion-laden music drifts through the air as you pass by a row of colorful gnomes. You have arrived at The Bavarian Restaurant and Biergarten. A wooden sign atop a metal arbor entrance, reading ‘Herzlich Wilkommen,’ in thick yellow hand-painted letters, shares a German ‘Welcome’ as you head toward the cabin door.

varia, you’ll find a golden plaque stating that this magical little structure of days past is in fact now part of the National Register of Historic Places. That may not come as a surprise if you’re local and familiar with the rich history of not only this gem of an antique cabin you stand before, but also the 19 others dotting the acreage behind it. In fact, these beautifully aged Appalachian log cabins have adorned this land since 1929, finding their way into the spotlight with the filming of several scenes from Thunder Road, the 1958 black and white crime thriller based on the glory days of moonshine running in the south.

As I sit down to talk with Bavarian Dining’s Co-Owner Janis MacGregor, she confirms, “Yes, a scene from the movie was filmed in one of the log cabins.” She reaches for a framed picture from the classic, yet stops mid-arm’s reach remembering that someone had taken it not long ago. “Unfortunately, peo-

THE B AVA R I A N R ESTA UR AN T ple sometimes decide to leave with some of the memorabilia from time to time,” she shakes her head. “We have customers that will give us things and replace items too.” She goes on to confirm that the cabin was in fact added to the National Register of Historic Places due to its age and placement in the classic southern film. We’ve also been told that this was the first place Colonel Sanders ever cooked. And if you keep going toward Weaverville, there’s a sign for Sander Court, where he apparently set up his first diner.”

While the days of moonshine running and the Colonel’s motel/southern eatery are no more, the history of another time and another country are felt simultaneously in every nook and cranny. “We were built in 1929 so this is all the original stuff. Sometimes the sunlight comes right through the walls,” MacGregor laughs.

You might be wondering how a woman with the last name MacGregor finds her hands in schnitzel batter, welcoming visitors into this unsuspecting restaurant off the beaten path in the cozy little town of Woodfin. She stumbled into the German eatery one day to meet with Dieter “Doc” Homburg, the original founder of Bavarian Dining & Biergarten in 2007.

A quick Google search turns up memories of Doc, a happy-go-lucky German man, playing a street organ as guests sip from their frothy boots of traditional Bavarian beers, awaiting their meals by the fireplace. After several years crafting recipes, smoking bratwursts, and entertaining guests, Homburg was ready to retire. MacGregor found him at just the right time, offering to take over his unique eatery, passing on his carefully crafted recipes to the next round of chefs in the small one-chef kitchen of his design.

Now five years since taking the reigns, MacGregor sits staring up at the stein-laden ceiling, smiling and sharing memories passed on to her from German customers. “I’ve learned everything I know about the food and Germany through the customers,” MacGregor shares. “It’s such a treat for the serv-

ers here to work with everyone that comes in. When you ask how the food is, you’ve got to learn how to pull yourself away.

They’re going to give you a ten minute dissertation as to why this is the best red cabbage they’ve ever had,” she laughs. “I remember a group of Germans that didn’t speak the best English. The table next to them overheard and spoke in German and they interacted for a long time. Come to find out, two of them had lived on the same street in Munich in different years. People that are excited about being here, they’ll talk to the other tables, and find all sorts of things.”

A destination location, MacGregor calls it, meaning it’s a restaurant most people are traveling to visit, not simply one they're screeching tires beside as they search Highway 25 for a place to have dinner. The small wooden bar, which MacGregor and her silent business partner built after taking over, boasts all German taps, which the waiter will happily allow you to taste-test in tiny steins. Not to worry beer connoisseurs, once you’ve found your flavor, you have your choice of a pint or a full liter, served generously in a large glass boot. If you search the location on Instagram, you’ll find happy boot holders patiently awaiting their bratwursts and schnitzels next to the fireplace, gazing out over a dining room filled with treasures — from traditional lederhosen to mounted antlers, a sea of steins and sweet paintings of far away countrysides. And the wait is certainly worth your patience as nearly everything in this little taste of southern Germany is made in house — from the bratwursts to the mustard and sauces for the main entrees like the gingersnap gravy to the dressings. MacGregor says the prep time for the menu items is hefty as the processes can be tedious. Like traditional German menus, the Bavarian’s is very meaty, boasting a wide variety of hormone-free meats and several locally sourced, including bison from Dr. King’s Farms and wild game from various WNC vendors.

VISIT BAVARIANDINING.COM When asked which of the dishes was most tedious to make, MacGregor points to the Schweinshaxn, a roasted ham hock and popular Bavarian dish, which requires a 24 hour order notice for proper preparation. Served with munchner onion beer sauce, spaetzle (German homemade noodles) or knodel (potato dumplings), MacGregor says many people will come in wishing they had known to call ahead for this dish specifically. The menu boasts quite a selection, including a vegetable strudel for those with a less carnivorous appetite. Oma’s (Granny’s) Beef Rolladen is a favorite, another tedious dish to prep, featuring rolled beef with onion, carrot, celery and bacon. The sauerbraten, a roasted beef, is marinated in wine, vinegar and spices for days and served in a tangy, housemade gingersnap gravy. The sides range from traditional German potato salad to sauerkraut, red cabbage, spaetzle, and more. I highly recommend a half-liter of the Oktoberfest, which will arrive with a warm loaf of bread and savory herbed butter as you sway to the gentle lull of organs and flutes, taking in the sights, smells and sounds of Germany from the heart of Woodfin. Lasst euch nicht lumpen, hoch mit dem Humpen! (Don’t be a slouch, raise your glass!)

My grandmother Nanny had a fondness for sweet, fried Chinese foods. Meals out together typically meant dining somewhere with fortune cookies and Chinese zodiac characters printed on the placemats. Without fail, she’d order sweet and sour pork. Considerably less sweet, but equally delicious, here’s my take on Nanny’s beloved dish.

2 tablespoons extra-virgin olive oil 5 pounds boneless pork shoulder, trimmed of excess fat 1 medium onion, diced 2 bell peppers (any color), diced 3 garlic cloves, minced 2/3 cup Apple Cider Vinegar (page 88) 1 half-pint (1 cup) Hot Pepper Jelly 2 tablespoons Worcestershire sauce 1 cup Ketchup (page 110) ¼ cup soy sauce 1 teaspoon sea salt Freshly ground black pepper 1 pineapple, peeled, cored, and cubed Hot Pepper Vinegar, to serve (page 125) Rice, to serve (optional) 1. Heat the olive oil in a large Dutch oven or heavy pan over medium-high heat. Add the pork and brown on all sides, about 10 minutes.

Transfer the pork to a large plate or platter, leaving several tablespoons of oil in the pan.

2. Add the onion and bell peppers to the pan.

Sauté for 10 minutes, until they start to brown a little around the edges. Add the garlic and sauté for a couple more minutes.

3. Mix the vinegar, jelly, Worcestershire sauce, ketchup, soy sauce, salt, and several grinds of pepper in a medium bowl. Add the mixture to the pan and simmer for 5 minutes. Add the pork, tossing to coat it evenly in the sauce.

4. Transfer to a slow cooker and cook on low for 8 hours.

5. Remove the pork to a cutting board and set it aside to cool slightly.

6. Transfer the remaining liquid and vegetables to a medium saucepan. Warm over medium heat and reduce by about half, until it is a thick sauce like a gravy.

7. Pull the pork into pieces with a fork, and then toss it with the sauce and the pineapple.

8. Serve over rice, if desired, with hot pepper vinegar on the side.

Riverside Drive is Getting Spicy

by TIFFANY NARRON photos by TIFFANY WELSH ONE EARLY SPRING AFTERNOON I sit tucked away in a booth at the newly-redesigned downtown Indian street food eatery Chai Pani. Across from me sits the easy-going yet highly revered three-time James Beard Award nominated chef and founder Meherwan Irani. He’s sharing memories of how he met his wife (and restaurant co-founder) Molly while waiting tables on summer break at her parents’ Myrtle Beach restaurant as he studied to obtain his master’s degree. It was in that bustling southern town that a lack of worthy dining options pushed him to begin experimenting in the kitchen, calling his mom for advice on how she made the dishes he loved when he was small. “I’d call her up and say, ‘Hey, I’m trying to make this thing I’ve seen you make a million times but it’s not even close.’ She’d say, ‘Yeah because you didn’t do this, this and this.’” As the gregarious southern chef sets out on his sixth business venture, Spicewalla, he’s bringing it all back to those 18

little details that make all the difference in the success or failure of any meal: the spices.

“I realized after talking with other chefs and distributors that spices are stuck in the same place coffee was 20 years ago,” Meherwan shares as I pluck a grilled block of paneer from the Desi salad in front of me. “Like most people’s idea of coffee was Folgers and the orange handle brew pot with the coffee sitting there all day, many people’s idea of spices is a big thing of garlic powder or something from Sam’s Club just sitting there for a couple of years getting stale, not having any flavor.”

He and his team at Spicewalla hope to change that.

“We’re on a spice mission,” he shares wholeheartedly. One lap around their Riverside Drive headquarters, nestled in-between Cheap Joe’s Art Stuff and Ginger’s Revenge, confirms.

gan walks through the distribution process, staring out over a sea of large paper sacks filled with coriander, cumin, black pepper, cardamom and more--both traditional Indian spices and others from Europe, North Africa and the Middle East.

The spices arrive from two separate distributors, one focused in traditional Indian and the other in non-Indian spices. Their team unloads all of them into the main storage area where they live until they’re taken into a small production room. Grogan walks over to a large machine, which he identifies as a hammer mill, pointing to tiny levers or hammers that come out and hit the spice as they pour it in. “We process coriander, cumin, cinnamon, garam masala and a handful of other items with this machine,” he says. “We’re literally roasting and grinding to order. Smell how fresh this is,” he opens the lid to a freshly ground blend of spices.

With three people on staff and this venture being outside the realm of the Chai Pani Restaurant Group’s five other offerings--Indian street food both in Asheville and Decatur, GA, a hipster swank little cocktail bar off Wall Street, a BBQ venture alongside Chef Elliot Moss, and Indo-Persian cuisine of Botiwalla in Atlanta, GA — the Spicewalla team has opened their new manufacturing arm quietly. Over the past six months, they’ve worked with one large North Carolina based distributor, Southern Foods, to test out their new systems and rearrange their team as needed. While working to open the space and solidify those import/export processes to provide fresher, better quality spices, they’ve also been working with local chefs and restaurateurs to offer custom small batch blends.

Grogan’s eyes light up as he waves his hand over a sea of jars in their apothecary, where they’ve kept a small sample of each spice after it comes in. As one of the original members of the Chai Pani kitchen crew over eight years ago, he says this

is one of the most fun parts of his new shift in roles. “Chefs will send me a little packet of one of their spice blends and I’ll reverse engineer it and get back to them with something, then we’ll workshop it and get it to where they want it.”

Have no fear at-home chefs, the new small-batch spice ambassadors are also offering a retail line of 12 differently themed packs with a variety of blends, like Meherwan’s personal steak rub, his mother’s daal recipe and of course Chai Pani’s garam masala. In fact it was in part through garam masala that this idea was born. After Meherwan finished eating one of renowned local chef Katie Button’s dishes, he looked at her and asked if she cooked the lamb with the popular Indian spice, and she nodded that she in fact did. He asked where she sourced it, and she told him that they buy it from someone of course, and he replied, “Oh no no no no, you don’t buy garam masala, you make it.” He then showed her how he makes it, which sparked another aha moment.

“I realized ‘Oh wow, there’s a major education component to this.’ One of the things that makes this very unique to distributors on the commercial side is that we’re actually treating it like these are our restaurants. So, buying whole and bulk as fresh as possible and then processing in really small amounts so that when you buy it, you know it’s really fresh, probably done in small batches with care and that someone was really thinking about it. It’s not Folgers coffee. That’s how we want someone to feel when they buy a jar of Spicewalla. We want them to open it up and say, ‘Wow, this is so fresh. This must have been done just last week’ and that will be because it was.”

Roasted Cauliflower with Tahini Sauce recipe and photo by TIFFANY WELSH

1 Head of Cauliflower 4-6 Tbsp Olive Oil Salt & Pepper Garlic Powder ¼ C Roasted Hazelnuts, chopped 1 ½ Tbsp Roasted Sesame Seeds ¼ C Roasted & Unsalted Sunflower Seeds 1 clove Garlic, minced ½ tsp Cumin ½ tsp Paprika Zest and Juice of 1 Lemon ½ C Tahini 3-4 Tbsp Water Preheat oven to 425 degrees. Line baking sheet with foil.

Wash cauliflower and remove leaves.

Cut into ½” thick steaks. Drizzle both sides of each piece with olive oil and sprinkle with salt, pepper and garlic powder. Bake for 25 minutes or until browned on edges. While the cauliflower is baking, prepare the sauce.

Mix together nuts and seeds, garlic, spices and lemon zest in a medium bowl. In a second smaller bowl, combine lemon juice and tahini. Stir together, tahini will get stiffer as it mixes. Stir in the water 1 Tbsp at a time until the tahini becomes sauce-like. Pour wet mixture into dry and mix together.

Pour over cauliflower or serve as a dip on the side.

Sigh. I'm dumb. I admit that. I'm dumb and ugly. The "Ugly American," as they say in Europe... and Asia... and pretty much any part of the world that's not part of the USA. One of the things that makes me a stereotypical Ugly American is the sad fact that I only speak one language, and it is American.

Or 'Merican, as it is more properly pronounced. Being a food writer and avid eater, however, I run into a lot of foreign dishes with foreign language names, but despite my refined palate, my tongue is quite colloquial. Meaning: I am very bad at pronouncing foreign words. Half the dang time I can't say the names of the stuff I wanna eat at the restaurants right there in the good ol' United States of Asheville, WNC, Appalachia, USA. I struggle with my French. And my Italian. And Korean.

Aaaand Himalayan. But that doesn't stop me from tryin', y'all!

Or from eating the heck out of everything I see, whether I can say it or not! That in mind...

Here are ten really great international dishes to be found in Asheville, that I highly recommend, even though I can barely say the actual names...

Disclaimer: I am not making fun of the beautiful words, languages, cultures, or cuisine listed below. I’m making fun of myself for being an idiot.

1) Bulgogi Bibimbap @ Korean House

— aka “Stonebowl with marinated slices of beef ribeye.”

Bulgogi Bibimbap. Bulgogi Bibimbap. Bulgogi Bibimbap.

I can practice those two words out loud or in my head over and over, and get them right a thousand times in a row, but as soon as I attempt to speak them to another human being... Bugolgi Bambabop ... blugogi bombampib... Lucky for me, you, and everyone else, the servers and the kitchen staff at Korean House never bat an eye at those feeble attempts, and should I become exhausted by the effort, they will graciously allow me to simply say, “stone bowl with beef, please.”

No, I am not even ever going to attempt to pronounce the word “saucisson” in a public setting. Never mind that “vin,” is sorta pronounced “van,” only not really, because the “N” is almost silent, and is kind of an abrupt, nasally... never mind. “I’ll have the sausage ‘n wine, please.”

3) Thali @ Chai Pani — aka “A traditional meal featur-

ing a selection of regional dishes that highlight India’s culinary diversity.” The letters “TH” in “thali” are kinda sorta pronounced somewhere in-between “T” and “TH.” Or... somewhere in-between madness and insanity, if you’re like me, and have a hard time coping with the in-between things in life. Then add the words Saag Paneer to the mix, and chaipani it’s a trip down the rabbit hole for me... How many of those “aaaaa’s” in saag do I pronounce? Where does the emphasis on paneer go?!? Help me.

4) Gua Bao @ Ginger Dim Sum

— aka “Chinese pancake sandwich with slowly cooked pork belly, fresh cucumber, scallion and cilantro.” I know that the second word is pronounced “bow.” Not bow as in, the archer drew back his bow, but bow as in the actor took a bow.

That first word, though? Yeah.

No. I have no clue how to say that. “Goo-ah?” “Gwah?” I’m not even trying until I get a proper lesson in pronunciation. redgingerdimsumtapas For now, I know I’m an idiot, but “pork belly sandwich” gets me exactly what I need.

5) Murgh Shahi Korma @ Kathmandu Cafe

— aka “Tender boneless chicken cooked with coriander in a deliciously sweet coconut cream sauce made with cashews and raisins.” The only word I’m 100 percent sure about pronouncing here is “korma.” Because it’s pronounced “korma.”

“Shahi” I’m about 99% confident in, except for where to put the emphasis. Is it “sha-HEE,” or “SHAH-hee?” Oh wait... is it “Shah-HIGH?!?’ Oh my god... I’m losing confidence!

And then there’s “Murgh.” First let me just try... “Murrrrrrghhszzhhgh...” I somehow think I’m missing it by a little bit. Is it “merge,” or “merg,” or maybe it’s “merszch,” or even just “mur?” I dunno. Zero confidence in my ability to say this word out loud, so I will point at it on the menu, and say “chicken korma, please,” and it will show up at the table, and taste great. That I feel confident about!

6) Kik Alicha W’at @ Addissae — aka “Yellow

split peas simmered in a mild sauce of onion, herbs, and spices served with Injera.”

I know how I want to pronounce these words. I want to pronounce them like one long word, and I want to do it in a thick WNC accent. Like this: Kickalitchawat. To use it addissae in a sentence: “I’ll try some of that kickalitchawat stew, y’all. Sure do ‘ppreciatecha!”

7) Tzatziki, Melitzanosalata, Loukoumadakia Garides etc. @ S&W Artisanal Eatery

This is real Greek food, made by real Greek people, and they use real Greek words to describe it. When the people who work at S&W say these words, they sound like the most beautiful words ever spoken. When I say them, it sounds bad. Just, really very wrong and bad.

“Loh-oo-koh-oo-mad-akigh-ah???” I tend to approach Greek the same swartisanaleatery way I was taught to read the Hawaiian language out-loud: I say every single letter, and pronounce it exactly the way it looks like it should sound... and add a question mark to the end. Both Greek and Hawaiian are lovely languages. When spoken by anyone but me.

8) Crujiente de Chocolate y Kikos @ Cúrate

— aka “Dark chocolate custard, sea salt, candied corn nuts, rosemary, orange sorbet.” Yes, I could have picked any of several items from the menu at Cúrate — or even the name of the restaurant itself — for this list, as I am unable to pronounce about half the words written, spoken, or alluded to inside this lovely Spanish tapas bar. I picked the crujiente de chocolate y kikos from the menu because a) yum and b) I didn’t make it halfway through the first word before I gave up and pointed at the menu.

9) Tagliatelle Bolognese @ Cucina 24 — Now,

I did eventually figure out how to say both of these words in a passable fashion, but spelling them is a whole different story. I cannot spell the word bolognese to save my life, and have depended heavily on spell check to see me through the tough times. The first word I think I know from a movie or TV show, or something. Some character named Vincent Tagliatelle? No? Dunno. I do know that the second word is pronounced "bowl-on-aise." More or less.

10) Falafel, Shawarma, Fattoush, Tabouleh et al @ Baba Nahm — I actually do

know how to pronounce all of these words pretty much the right way, with an American accent of course, because I spent a lot of my teens and twenties eating great middle-eastern street food in Boston! Nom nom!

It's wonderful stuff! If you're babanahm struggling to pronounce these things, here's a guide: fuh lah ful, shworma, feh toosh, teh boo lee.

See? Saying foreign words can be fun and easy! Especially when you admit that you totally SUCK at pronouncing stuff, and just do like I do: smile, point, and perform to the best of your severely limited abilities. Each dish or food item listed above is absolutely worth struggling to pronounce, so I recommend you do so!
