Vital was initially going to be focused on the 45 & over crowd but through feedback we have discovered that Pulse was preferred by most of the people who read both magazines. We are therefore going to refocus its’ editorial to encompass a much older audience and change its’ frequency to quarterly. The next Vital out will be April! Castle is a magazine for everyone who takes pride in their “castle” whether its a one bedroom apartment or a gated mansion. One thing about working on a monthly publication is that time flies... I can’t believe I just finished producing issue number four and I am selling into MARCH!!! I am looking forward to Spring though, I admit I am not much of a winter person. My outdoor hobbies do not include snow or cold. The focus for next month’s PULSE will be “Think Spring,” that was such a treat to think about! If you are a business person who needs to get your Spring message out to your customers and potential customers, March will launch the season for PULSE. Some of the things my mind turns to is selling my house in Palatine Bridge so that Matt and I can become 100% residents of the Oneida County community. We are spending an average of 6 days a week here so our home is starting to feel like a house and home is how we feel when we roll off of exit 31! I would really appreciate it if any of my FaceBook friends who might have FaceBook friends downstate New York, Connecticut, Massachusetts or New Jersey go on to my page and share my ‘house for sale’ page with them and ask them to share with their friends. The economy isn’t conducive to sellers right now but that’s what I am, and that’s what I need to do so share, share, share... please! I recently joined the Merchants Association of Clinton and am loving getting involved with the events. The Sweetheart Stroll is next up on the Clinton “things to do” list for February. See the ads in this issue. You could win a package worth over $1200! Imagine your sweetie pie’s face if you hand that gift over on Valentine’s Day! Winners will be called on the 14th so someone will get to do just that! Matt and I are also getting involved with UMAF (Utica Music and Arts Festival) this year. I have 34 years of marketing, sales and community service experience to add to the already aggressive group of gogetters! With a strong attitude of keeping focused, getting an

early jump on this year’s event and keeping on track the UMAF promises to be a great boost to the Utica area this fall. The economic impact of bringing as many people into the community as we are trying to do could feasibly mean upwards of a $200,000 kicker to the local economy. I think that’s worth taking seriously, don’t you? The fest will take place on September 13-14-15 and PULSE is proud to announce it is the official publication of this event! I was immediately impressed with the number of musicians, vocalists, and artisans this area has to offer. Just today, Matt and I went to the KAC Chili Days event in Clinton. What a fantastic idea. Local artisans donate pottery to the fund raiser and as a patron, you get to pick a piece of pottery and a wonderful chili lunch comes with it... Clever, creative and so much fun! So many groups are trying to bring new life to this wonderful area of upstate New York. It is truly a pleasure to be a part of all of it! Probably by now it has become apparent that my passion is to keep local business people in business... Shop local!!! I can’t say it enough, the best way for us to combat a lagging local economy is to reinvest in it. Every dollar we spend inside our community makes a huge contribution to our community’s economy. It’s a true statistic that only about 16% of your dollar stays in the community when you spend it at a big box store. Step back, think about your purchases... can you support a local Mom and Pop store? Let’s all band together and help our area thrive and prosper.... Shop local!!! Working on the February issue made me think a lot about matters of the heart... not just my favorite Valentine kind of heart either. February is Heart Month... Make sure you are taking care of yours. 5 thoughtful gifts that don’t require much thought On the heels of the holiday giving season, most gift-givers realize how difficult it can be finding the “perfect” gift for a recipient. That gift may be even more difficult to find when the intention is to convey love and affection. But Valentine’s Day givers can look to a number of gifts that are very thoughtful but needn’t take more than a little forethought. • Gift card: You may be thinking a gift card doesn’t sound that thoughtful. However, when paired with a listing of gift items, it’s easy to illustrate the thought that went into the gift. It may make sense to simply purchase one of those interesting items, but this way you’re giving the recipient the choice of what he or she

really wants to select. • Something engraved or monogrammed: A simple scarf turns into something more special when it includes monogrammed initials or a special saying. The same can be said for anything from a picture frame to candle holders. Taking the time to have something monogrammed or engraved

as members of the family and often as small children (when small children are not yet present). Especially during the dating stage, providing an adorable gift for his or her pet may be seen as a heartfelt gesture. Be sure to pick up a little something for the pet parent as well, though. • Hobby gifts: Recognizing the interests of a loved one is a clear sign that you’re in tune with what he or she enjoys to do. If you have an avid reader on your hands, a new e-reader or some e-books may be ideal. Sports fans could appreciate tickets to the next home game of their favorite team. Someone who dabbles in culinary creations may delight over a gift basket full of top-of-the-line cooking utensils. • A spending spree:

delectable desserts set hearts a-flutter Valentine’s Day is synonymous with candlelight dinners, romantic movies and delicious desserts. Although chocolate is often standard fare for the day of love, many other treats, including petit fours, can win the heart of a special person. Although people often believe the term petit four refers to a particular recipe for a dessert, it actually denotes a variety of small desserts. Petit fours are bite-sized pastries generally eaten at the end of a meal or at tea time. The name is comprised of French terms meaning “small oven,” which generally means the desserts are cooked at a low temperature in an oven. Petit fours may be “secs,” meaning “dry” desserts, including biscuits and puff pastries. Most are “glaces,” or “iced” desserts, such as tiny cakes. These are often the desserts people associate with the name “petit fours.” Cake-type petit fours are traditionally made from an almond flavored sponge cake or an almond genoise. Other types of cake, such as pound cake, can be used, but the consistency must be firm enough to handle cutting and filling. The options in fillings and coatings is as endless as the imagination. Some prefer to coat them in

fondant, a sugary dough that hardens upon standing and produces a firm, flat surface for decorating. Others like their petit fours covered in chocolate or another candy material. These desserts are available from many bakeries and retailers. For those who want to treat a Valentine to homemade petit fours, one trick is to bake the batter in mini loaf pans and then cut in half, or use small cupcake tins to achieve the desired, bite-sized shape. Or bake the batter in a sheet pan and then use cookie cutters to make small shapes. Jams, fruit preserves, frosting, icing, almond paste, and any other fillings can be used in between the layers. Fondant can be purchased from party and craft stores or specially ordered from cake decorating retailers. An easy fondant can be made from a confectioners’ sugar and marshmallow recipe.

People often use the symbol “X” to represent a kiss at the end of a love note or card but don’t understand how this letter came to be associated with the meaning of a kiss. It is believed the custom dates back to when the majority of the public was illiterate. The X or a “cross” was used as one would use their signature today, to mark a person’s word to abide by a contract or agreement from a Christian perspective. The X was often then kissed as a further symbol of honesty. Eventually, the X itself came to represent a kiss and no longer just a signature. Why the letter “O” came to represent a hug is not as widely understood. Some say that it is because an O is a shape of hugging arms. Others say it is what Jewish immigrants would use as their own signature, similar to the X, so they were not mistaken for Christians.

was a holy priest who served in Rome, Italy. Some historians surmise that he was jailed for defiance during the reign of Claudius II, sentenced to death, and became a religious martyr. Pope Gelasius marked February14 as a celebration in honor of his martyrdom in 496 AD. Today, the Catholic church recognizes at least three different martyred saints named Valentine or Valentius. So how did St. Valentine’s Day transform from a religious holiday into one far more secular? During the third century in Rome, Claudius II decided that single men served better as soldiers if they were single and had no attachments at home in the way of a wife and family. Thusly, he outlawed marriage. St. Valentine didn’t agree with the views and reportedly performed marriages for young lovers in secret. It is this which may have propelled Valentine’s Day to be more about love than religious obligation. Another legend says that Valentine himself authored the first Valentine card. It has been rumored he fell in love with a woman -- the jailer’s daughter -- while in prison and sent her a letter. He signed it, “from your Valentine.” No matter the origins of the holiday, today St. Valentine’s Day has become a day where love is celebrated. Lovers send each other cards and tokens of their affections.

It is customary to go out for dinner and send flowers. Chocolates and roses seem to go hand-in-hand with Valentine’s Day events. Although certain customs have become commonplace, some customs of Valentine’s Day have fallen by the wayside. One such custom is the “drawing of names” that took place in the 18th century. Names of men and women (equal numbers of each) were placed into two different containers. A lottery of sorts took place where one man’s name was drawn and matched with a woman’s name. The people called were called “Valentines,” and the pairing was considered a good omen of these couples marrying later on. Another lost custom was of a man wearing a paper heart with the person he loved’s name written on it. The heart was pinned to his sleeve, which gave way to the expression, “wearing one’s heart on one’s sleeve.” A woman could do the same type of thing by wearing a charm known as a lovebadge near her heart. Where now we send out mass-produced Valentine’s Day cards, original Valentine’s were handmade and personalized letters. Within them individuals could write their exact sentiments to a loved one. On February 14th, people nipped by the love bug partake in many customs to show their love. How will you show that special someone you care this year?

CHOCOLATE Valentine’s Day and chocolate have been linked for some time now, but there really hasn’t been any definitive explanation for just why the delicious confection and the day of love seem to go hand in hand.

The average American eats 11 pounds of chocolate every year, a significant percentage of which is enjoyed around Valentine’s Day. The reason people are known to enjoy and crave chocolate may be connected to its chemical components. Chocolate has been known to affect mood in many ways. It contains 380 known chemicals, triggering a host of responses in the brain. Chocolate can

trigger the production of opioids, which are chemicals, such as those found in opium, that produce a feeling of well-being (euphoria). Eating chocolate then may make a person feel better, which is why chocolate is often a turn-to comfort snack. Chocolate also may work like THC, the chemical components in marijuana, extending the feeling of being “high” or well-being. Chocolate can also increase blood pressure and blood-sugar levels, attributing to feelings of alertness. The caffeine in chocolate also acts as a stimulant. However, the reason chocolate may be snatched up come Valentine’s Day is that chocolate appears to contain phenylalanine, the same chemical that is produced by the brain when people fall in love. Doctors think that eating chocolate creates a temporary “love high.”

Got Stress? Seek wholeness too It is no secret to any of us that health care is undergoing a major shift. Patterns of care that once worked no longer seem to, and actually may even no longer be sustainable. This is not a surprise. The same way individuals, families and communities change, so must the systems that provide for them. As a former primary health care provider practicing in the trenches of every day health and illness, yesterday’s cause of ill health was heavily concentrated in infectious disease. Even today, in less well developed areas of the world, measles, chicken pox and haemophilus influenza type B (Hib) meningitis still kill children with cruelty each year. pressure, high cholesterol and diabetes. In 2011, heart disease will cost $444 billion to the health care system in the United States. When are we going to stand up and take notice that the #1 killer in our country is due to the lifestyle choices we are making? Emerging research continues

to show how lifestyle can impact not only cardiovascular disease but almost all chronic diseases including Type 2 Diabetes, obesity, hormone imbalances, GI disturbances and autoimmune diseases and other inflammatory conditions. The National Cholesterol Education Program states, “Lifestyle changes are the most cost-­effective means to reduce the risks of CVD.” A Mediterranean style food plan may be beneficial to all of these diseases and has a tremendous amount of research showing the benefits in reducing CVD and reducing risk factors. This food plan is based on whole foods and eliminates the use of artificial and processed foods. It includes fruits, vegetables, whole grains, nuts/seeds, plant and animal based proteins and healthy fats. It also focuses on low-­glycemic food choices as well as eating smaller, more frequent meals. Further research is now also suggesting that a full plant-­based food plan is greatly beneficial as well. The American Journal of Cardiology reported in 2009 that a plant-­based diet leads to lower triglycerides, lower blood sugar, decreased weight, decreased BMI, better glucose and insulin control, as well as reduced risks for a cardiac event.
