The country witnessed a very smooth & successful local, provincial & federal election, thereby creating ground for implementation of newly made constitution and has shown the possibility of having a stable government for next five Years. As the process of Provincial & Federal election is yet to conclude and government is yet to form, all Nepali are anxiously waiting for formation of new government which is expected to speed up the development of the country. Yes, there are some suspicion on the country's financial ability to manage one federal government and seven provincial governments and numerous local governments. However, the keen interest of people always has been to overcome all the obstacles and gear up for economic development of the country. Year 2017 also has witnessed handsome increase in the flow of inbound tourist reaching about a million. This increment in the tourist number has definitely encouraged the tourism entrepreneurs and all the other stake holders. But, there is a need of focus in attracting more quality tourist rather than just counting the numbers we have received. We have heard and seen many free individual tourists & some groups traveling to various destinations of the country in very limited budget. This trend if continues, will definitely not be fruitful to the industry. So, it is a high time for all concerned to prepare policies, add on more tourism products so that we can prolong the stay of quality tourist in the country and generate more revenue. Year 2017 has been another special year for hospitality industry. We have seen many new high quality hotels & resorts being opened, announced and more over many receiving variety of awards. We will be having a special report in next issue. Happy New Year 2018

Christmas Cake Mixing and Baking Goodies Activities Christmas cake mixing at Shangri-la

Sadichha Shrestha, Deepa Shree Niraula, Usha Khadgi and other known figures participated in the annual Christmas cake mixing of Shangri-la Hotel Kathmandu on 26th November in Shambala Garden.

The cake mixture included almonds, raisins, cashew nuts, walnuts, prunes, sponge cake crumbles, apricots, tutti frutti, blackcurrants, dried figs, dried cherries, mixed fruit peel, pistachios, sultanas, raisins and mixed spices. All of these ingredients were combined with a variety of spirits including whisky, brandy, rum, vodka and wine, as well as orange juice and butter.

Cake mixing ceremony heralds Christmas at Soaltee Crowne Plaza

To herald the festive season of Christmas, Soaltee Crowne Plaza, Kathmandu hosted its annual cake mixing ceremony at the hotel on November 26. Soaltee Crowne Plaza invited members of InterNations in Nepal to join the traditional cake mixing event at the hotel. InterNations is a network for expats with local communities worldwide, with a presence in more than 390 cities. As the largest international community for people who live and work abroad, InterNations offers global networking opportunities, local events and expat-relevant information. Ingredients generally include dry fruits like raisins, black currants, prunes, glazed dates, cherries, candid orange, lemon rinds and nuts like cashews, pistachios and almonds. These are mixed with large quantities of liquor, fresh juices and honey. Freshly ground spices are also added and tossed till the fruits and nuts are well coated and stored. Before the arrival of Christmas, these soaked fruits and nuts are mixed with cake batter and baked to a heavenly perfection.

Christmas Cake Mixing-Radisson In order to welcome Christmas, Radisson Hotel Kathmandu organized their annual Christmas cake mixing ceremony on November 17.

The traditional Christmas cake is an important part of Christmas celebrations. And making it is no quick and easy task as preparations begin almost a month in advance for that. The first step towards making the cake is the mixing process, formally called the cake-mixing ceremony. The cake mixture at Radisson included nuts, rum, vodka, caramel, cherry, dry fruits and sponge cake crumbles to name a few. This mixture is generally soaked for a period of one month and the cake will is prepared a week before Christmas. The staff of the hotel actively participated in the mixing ceremony.

Seasons Making & BakingYak and Yeti Christmas is a ritual religiously followed all over the world by Christians and other religions too. Season making and baking prior the Christmas is said to be a harbinger of good tidings and happiness. Imbibing the spirit of this ritual, this year Yak & Yeti also decorated Ginger Bread House and inaugurated a wish tree. The wish tree appeared here to support the underprivileged children wishes. The hotel management asked for the wishes to the Bal-Mandir children. Any guests could take the honor to fulfill the child wish by looking at their wish in the wish tree. Wish tree indirectly served as Santa Clause gifting the children. The ambassadors, delegates' wives, corporate and media personality graced the event. Seasons making & baking commemorates the tradition of making decorated gingerbread houses and cookies cutting which began in Germany about 200 years ago. After the publication of the renowned Brothers’ Grimm fairy tale Hansel and Gretel, German bakers began creating ornamented houses made from gingerbread. These Christmas treats flourished and arrived in the United States, where decorating gingerbread houses became a favorite way of celebrating Christmas for many families.

Alike every year, Hotel Yak & Yeti is organizing Christmas Eve dinner and Christmas Day Brunch on 24th December and 25th December respectively.

Cake mixing- Hotel Mulberry

Hotel Mulberry too organized Christmas Cake Mixing this year. The eigth floor of Mulberry was filled with who's who including the Miss Nepal 2010 Sadichha Shrestha and Miss Nepal 2011 Malina Joshi. The beauty queens along with the Chefs prepared the mixture which included various dried fruits which soaked in varieties of liquors and was preserved for baking for Christmas.

South Asian Travel Awards (SATA) 2017 Nepal's Hotel Annapurna, Jagatpur Lodge, Shangri-La Hotel, Shangri-La Village Resort, Barahi Jungle Hotel, Dahlia Boutique Hotel, Hotel Mulberry and Hotel Visit Nepal grabbed awards in different categories. The prestigious South Asian Travel Awards (SATA) has announced the winners of 2017 in a historic and eventful Gala held at Equator Village, located in the southernmost Addu City of Maldives. On a night of glamours and celebration, the host country, Maldives received awards for Leading Honeymoon, Leading Diving and Leading Beach Award. While India bagged Leading Heritage, Leading MICE Destinations, and Sri Lanka surprised the delegates

Why Zinfandel Lovers Should Head To Croatia?

Zinfandel is misunderstood on many levels. It’s way more than a boxed wine downed by college kids and book clubs. There’s the blush we all know, and then a peppery, full-bodied red that we dare to say-yes, we dare-could compete with any shiraz out there. It’s also considered an all-American wine, and even has its own holiday: Every year on November 15, zinthusiasts around the U.S. raise a toast to “America’s Heritage Grape”with one minor problem. Zinfandel isn’t actually American. The second-most popular red in the country comes from a black-skinned grape that was brought from Austria to a Flushing, New York nursery back in the 1820s. It was considered low quality, and was turned into liquid in tenement basements. The wine made its way west to California a few decades later, where it was swigged by river-panning forty-niners during the Gold Rush and used to add darker color to wines like Burgundy and Chianti. Eventually, as zinfandel began appearing unblended, its popularity grew, but the mystery remained: No one knew where this grape came from, and early efforts to find its birthplace proved frustratingly difficult. In the late 1970s and early ‘80s, many experts thought zinfandel was primitivo, the grape found in southern Italy and Sicily; a few years later, they said it was plavac mali, the primary red grape grown along the Dalmatian coast (more on that later). But with advances

in DNA testing in the 1990s, Dr. Carole Meredith-who, at the time, worked as a grapevine geneticist at the University of California, and has been dubbed “one of the world’s pre-eminent grapevine sleuths”-made it her mission to unlock zinfandel’s origin story once and for all. “People considered it ‘California’s own variety’ because it was not known anywhere else, but it was clear from its leaf shape that it was a European grape,” Meredith tells Condé Nast Traveler. “But from where? And what was it

called? If it were from France, Italy, or one of the other mainstream western European wine regions, someone would have recognized it as theirs long ago.” Following the earlier lead, which showed Croatian’s plavac mali as a relative, Meredith worked with Croatian professors Edi Maletic and Ivan Pejic to find the grape in its first form. It took years of trawling the coastline, of painstaking work collecting stems and leaves, examining every detail. Finally, in 2001, Maletic and Pejic stumbled

years later, Maletic estimates there are about 250 acres of crljenak kaštelanski (about a half-million vines) and at least a dozen producers on the market. It’s a fraction of Croatia’s total 51,000 acres, to be sure, but it’s a remarkable rebound from near extinction.

A Day in Lumbini

y long cherished desire to visit Lumbini and to see the exact birth spot of Lord Buddha was finally fulfilled during Tihar holidays. Along with my visit, I did also intend to write an extended article about the current situation of Lumbini and the people around there. A motorbike riding from Pokhara via Palpa and Butwal was a wonderful experience. A recently blacktopped, straight road from Butwal to Bhairawa was enough to give a feeling of satisfaction. The quality of road from Bhairawa to the main gate of Lumbini was also excellent.

Going back into the history, Lumbini was left in oblivion for centuries. Muslim invaders who ruled over India for several years were not kind enough to other religions. Different Muslim invaders went on rampage and destroyed several Hindu temples and Buddhist monasteries across the length

and breadth of India. Several broken idols of Hindu gods & goddesses and Lord Buddha are the testimony to the fact that Muslim invaders were extremely intolerant and ruthless against other religions. Had Indian Emperor Ashoka not visited Lumbini and erected a stone pillar with inscription, commemorating the birth of Gautam Buddha in Lumbini in 248 BC, it would be extremely difficult for the archeologists to determine the exact birthplace of Lord Buddha. Xuanzang, a Chinese monk, who visited Lumbini in 637 BC, had written extensively about his visit to India. He had even translated several Buddhist scriptures into the Chinese language. Fortunately, those scriptures are still survived in China. Alois Fuhrer, a German archaeologist, had rediscovered Lumbini in 1895. He is credited to have discovered Ashoka pillar and a temple at the location. A

number of excavations were carried out and in the course of time, many Buddhist structures were rediscovered. Today, the entire area of Mayadevi temple has been rediscovered along with the exact birth marker stone of Lord Buddha in 1996. A pond has also been restored where it is believed that Mayadevi and her newly born baby had a bath. In the meantime, it was of course a big day when Lumbini was granted World Heritage status by UNESCO in 1997. This scribe noticed that many visitors looked skeptic when they saw an exact birthmark stone of Lord Buddha. How this is possible to be so sure about an exact spot where Lord Buddha was born centuries ago. Their curiosity seems right because Lumbini was virtually left in oblivion for centuries, then how it is possible to locate an exact spot of birth of Lord Buddha. This was really a tough task before the archeologists as well. However, a careful study, with the help of modern

At present Lumbini Development Trust (LDT), which is an autonomous and nonprofit making organization, is taking care of development and supervising activities. The Lumbini development activities are being carried out according to Lumbini Master Plan, which was initiated by the United Nations and Prof. Kenzo Tange in 1978. However, even after 39 years, development activities are going on at the snail pace. It is not known that how much more time it will take to complete Lumbini Master Plan. However, the inside area of the Lumbini is magnificent, serene and aesthetically beautiful. The visitors should take off their shoes and shocks before entering the garden where Ashoka pillar, Mayadevi temple and the birthplace of Lord Buddha are preserved with great care. Many Buddhist devotees sit before the Ashoka pillar and pray while others stand beside the Ashoka pillar and get a photograph to preserve the memory for lifetime.

technology, finally the archeologists became successful to locate an exact spot where Lord Buddha was born. During excavations, the archeologists discovered an older timber structure beneath the walls of recent brick walls, which was built during the Ashoka era. Radiocarbon dating of wooden postholes and stimulated luminescence dating of elements in the soil confirms regular human activity at a particular spot for a long period. That means this very spot was regularly worshiped by the devotees of Lord Buddha. Based on such evidences, archeologists have confirmed the same spot as the exact birthmark of Lord Buddha.

The visitors can tour the area and see fabulous monasteries built by different countries. Among many beautiful monasteries, the monastery built by Germany is outstanding. A large pond right before the monastery is simply awesome. At the same time, the visitors can hire a battery-powered riksha, or they can take their own vehicles to have sightseeing. However, to my dismay this scribe saw several luxury buses, jeeps, vans and motorbikes parked inside the Lumbini premises. The emission of carbon from those vehicles will definitely take a toll on the historical monuments of Lumbini. It is beyond my understanding that why the concerned authority of LDT has allowed carbon belching vehicles inside the Lumbini area. Not only this, occasionally even large kitchens are set beside the monasteries where several dishes are cooked and served the guests. I personally witnessed all this going on there. To make things go bad to worse the government has also allowed several industries in the vicinity of Lumbini which regularly pollute the area. Unfortunately, some beggars irritate visitors by repeatedly asking for money. Most beggars stand

at the main entrance of the monastery and ask money from visitors. The LDT has yet not started a wellmanaged tour of Lumbini area. They should have a battery-powered van or bus, which should take the visitors and pilgrims for a Lumbini tour. It would be much better if a guide is accompanied the visitors and describing about the historical monuments of Lumbini. Very recently, this scribe met Kularaj Baral, managing director of Miracle Institute, Pokhara, who has just returned from Canada visit. “It was my official trip to Canada where I was staying in Vancouver. One fine morning I went to visit Stanley Park, where we were asked to get into a large, horsepulling chariot. I was surprised to get a wonderful chariot ride ---this was what I least expected in a city like Vancouver. About that time I remembered if a horse drawn chariot is possible in Vancouver then why not in Lumbini� he asked. I agree with Mr.Baral. It would be better if LDT immediately stops all kinds of vehicles inside the Lumbini premises and introduce horse-pulling chariots and battery-powered micro vans instead.


The visitors will have choice between a horse-pulling chariot and a batterypowered van to move around Lumbini. This facility is also necessary to stop any damaging effects of pollutions caused by vehicles. Although inside area of Lumbini is being developed according to the Master Plan, the surrounding area of Lumbini faces poverty, scarcity and acute unemployment. The Ministry of Culture, Tourism and Civil Aviation has

decided to work on a 10-year Master Plan to develop Lumbini as a pilgrimage hub and increasing the length of tourists stay. However, the plan does seem ok only in the paper. In reality, the local people of Lumbini live in poverty and their needs and demands are neither met nor heard by the government. Hotel entrepreneurs also don’t look happy in Lumbini. Due to lack of infrastructure and effective tour packages, most tourists hardly spend a day in Lumbini. When asked to a tour

On the last leg of the tour, the visitors are brought to Lumbini and Kapilbastu, where they don’t stay more than one day. The ministry of tourism is aware of this situation but does not act responsibly. I think our government is afraid of making India angry. What to speak about our government---I felt so low when India put a trade embargo against Nepal, but our political leaders in power could not speak a word against Indian bully ”.

The government must also think how the living standard of the local people who live around Lumbini can be uplifted. The local people’s participation in development activities and creating more job opportunities are utmost necessary. Without improving the living standard of the local people of Lumbini, a real development of Lumbini will never be possible. Gautam Buddha International Airport The story of Gautam Buddha Airport is no different from the development of Lumbini. The construction work of Gautam Buddha airport should have been completed in 2017; but it is still far from completion. At different developmental stage, corruptions have drastically slowed down the steady development of the project. A severe dispute over payments and illegal appointment of subcontractor had halted the work for a long time. Now it is said that the airport will come into operation until 2019. Hotel entrepreneurs and the entire people of the region believe that the operation of Gautam Buddha International Airport will change the face of Lumbini. However, all major projects in Nepal whether it is hydropower projects, Melamchi water supply, Pokhara International Airport and so on and so forth have been infected with corruption virus. In a situation like this many people are quite skeptic about the completion of Gautam

hile traveling I fill my time with reading a wide variety of books, magazines and newspapers. I’ve become startled by the number of articles and commentaries on the lack of politeness and etiquette that seems to be becoming part of our every-day lives. Think about it. What becomes acceptable in society then becomes the norm.

so I encounter many different people. Nowadays it seems people are trying to beat you into the parking lots, the parking spaces, in the mall doors, so they can get there ahead of you. Not only do they not hold the door open for a person coming in behind them, you never hear a ‘thank you,’ or a ‘have a nice day’ from a customer. Life has just gotten so fast paced, there seems to be no room for manners anymore.”Can you relate? I think we all can.

Politeness (civility, courtesy, respect) is defined as behaving in a socially acceptable way with proper manners and etiquette. As an example, standing up to greet a guest as they enter a room or keeping your elbows off the dinner table while eating.

Let’s now switch tracks. Have you ever observed poor or unacceptable behavior/ etiquette during a business meeting? I can honestly say I have. Many don’t realize that their professional etiquette at a business meeting is being evaluated by all in attendance. Business meetings are one arena in which poor etiquette can have long tern negative effects on ones’ future success. When one improves their business meeting etiquette, one automatically improves their professional image and behaviors in all other areas of their lives.

One story about people behavior, that I came across, really got me thinking about today’s cultural thinking towards etiquette.A woman working retail during a holiday season shared the following:“I work in part-time retail,

In “The Essentials of Business Etiquette” by Barbara Pachter, there are recommendations on how to improve one’s business etiquette to build relationships with customers, clients, peers, co-workers and colleagues. In the business world, it is these people that can influence your success or failure. Rules to apply when it comes to business meeting etiquette: • Circulate among the other participants before the meeting begins. When the opportunity becomes available, introduce yourself to others. If there are new faces attending the meeting, assist making introductions, starting with the highest-ranking person in the room. • Choose your words wisely. When speaking, commenting, sharing information, say what you need to say in as few words as necessary. Avoid covering unnecessary information and idle chatter. Don’t repeat yourself.

• Extend a hand in greeting. In doing so you make yourself approachable. If you are the host of the meeting, or the senior person attending, you should extend your hand first (regardless of gender). • Know the dress code and present yourself accordingly. Be sure that clothing chosen falls within meeting/company guidelines. • When being introduced, always stand. Standing helps establish your presence to either and individual or a group. Standing prevents others from ignoring you. • Do your homework. Come prepared. Know what the premise of the meeting is and what your part in the meeting will be. Be informed will help you ask or answers questions. • Be punctual. Don’t run late. Show respect for the host and other people’s time.

• Sit professionally. Adjust your chair setting (if the chair adjusts) so that you are at an equal height with everyone else at the table. Avoid crossing legs

because it can be distracting or even too sexy for a professional setting. • Make your comments meaningful. Provide a meaningful/beneficial comment at the beginning of the meeting so people know you are there. Speak at the proper volume level, with good articulation, pitch, voice inflection and speed of wording. • Know the unwritten speaking rules. It is not professional or polite to interrupt others while they are

speaking, however, you might have to interrupt at some point in order to be heard or to contribute. Know the unwritten speaking rules/policies prior to attending to the meeting. • What about eating? Unless it is a breakfast, lunch or dinner meeting, avoid bring food to the table. Opening food/snack wrappers can create disruptive noises. Food can also give off smells. Stay to coffee, tea, softdrinks and water (and remember not to chew your ice).


• Ask relevant questions. If you have questions, ask them at the appropriate

time (don’t store them up until the end of the meeting, unless this is requested by the meeting host) and finally, if you are the host of the meeting-

• Have a structured agenda to follow. Begin on time, end on time, stay on point (distribute an agenda and meeting focus points). If you digress, steer back to the right direction. End by reviewing main points, set goals and measurements for next meeting. Follow-up.

Method • Blanch the spinach in a large pan of boiling water for a minute then drain and refresh it. After that, blend it in a food processor. • Place the chicken breast in a sauce pan together with the tarragon sprig, lemon rind, some water, seasoning as per taste. • Then simmer the chicken for 20 minutes. • After that chop the chicken and process it to a smooth paste in a food processor. Dissolve the gelatin to the chicken paste. • Now layer the chicken and spinach paste and beetroot in the setting tray and leave it for about 15 minutes to chill and set. • Serve the terrine garnished as shown in the picture.

Method • Blanch the spinach, drain it and blend in a food processor. • Place pieces of basa fish in a pan and sauté it with chives, onion, garlic, bay leaf, black pepper, salt & dry white wine. Simmer the fish for 8-10 minutes. • Then cool it and blend it in a food processor. • Dissolve the gelatin to the fish paste. Now layer the smoked salmon, spinach, fish paste into three layers and leave it about 10-12 minutes to chill and set. • Meanwhile, mix the egg white, double cream, lemon juice and chives in a bowl to make the sauce. • Bake the grated parmesan in a ring shape as a cracker. • Serve the timbales with lemon cheese sauce and parmesan cracker on top. • Give final touch with alderwood flavored smoke on the dish using a smoking gun.

Method • First of all, for the potato fondant, peel the potato and seal it with rosemary. • Then put the potato with apple juice in the oven along for 45 minutes. • After that make spinach puree and carrot coulis. • Grill the fish fillet, prawn and salami. Moderate drinking can lower risk of heart attack, says study

Drinking in moderation helps protect heart, with study finding it lowers risk of many conditions compared with not drinking

M

oderate drinking can lower the risk of several heart conditions, according to a study that will further fuel the debate about the health implications of alcohol consumption.

The study of 1.93 million people in the UK aged over 30 found that drinking in moderation - defined as consuming no more than 14 units of alcohol a week for women and 21 units for men - had a protective effect on the heart compared with not drinking. Previous studies have suggested that alcohol has a positive effect on the levels of good cholesterol in the blood and proteins associated with blood clotting. The research, published in the British Medical Journal, found that moderate drinkers were less likely than nondrinkers to turn up at their doctor with angina, heart attack, heart failure, ischaemic stroke, circulation problems caused by a build-up of fat in the arteries and aortic aneurysm than non-drinkers.

Healthy Living The authors of the study, from the University of Cambridge and University College London, welcomed the findings but cautioned: “While we found that moderate drinkers were less likely to initially present with several cardiovascular diseases than nondrinkers, it could be argued that it would be unwise to encourage individuals to take up drinking as a means of lowering their risk. “This is because there are arguably safer and more effective ways of reducing cardiovascular risk, such as increasing physical activity and smoking cessation, which do not incur increased risks of alcohol-related harm such as alcohol dependence, liver disease and cancer.” Moderate alcohol consumption has long been associated with a lower risk of heart disease compared with abstinence or heavy drinking but the authors described their study as the most comprehensive to date on the relationship. Non-drinkers were separated from former and occasional drinkers. With previous studies, concerns have been raised that people who have stopped drinking due to illness could have skewed results among non-drinkers.

An independent review of evidence, which formed the basis for last year’s change in the official advice on alcohol consumption, lowering the recommended limit for men from 21 units to 14, making it the same as the guideline for women, found that the benefits of drinking for heart health only apply for women aged 55 and over and

the greatest benefit is seen when they limit their intake to about five units a week, equivalent to about two standard glasses of wine. The new study found that heavy drinking resulted in an increased risk of a range of heart diseases compared with moderate drinking, but carried a lower risk of heart attack and angina. The authors cautioned that this did not mean they were less likely to experience a heart attack in future, just that they were less likely to present these conditions at first diagnosis, compared with moderate drinkers. Also, as the study is observational, no firm conclusions can be drawn about cause and effect. One unit of alcohol is about equal to half a pint of ordinary strength beer, lager

or cider (3.6% alcoh ol by volume) or a small pub measure (25ml) of spirits. There are one and a half units of alcohol in a small glass (125ml) of ordinary strength wine (12% alcohol by volume). Dr James Nicholls, the director of research and policy development at Alcohol Research UK, said that given the increased risk of other health conditions from drinking, moderate alcohol consumption within existing guidelines was unlikely to curtail or lengthen life expectancy overall. “While the findings provide convincing evidence for protective effects, the authors sensibly point out that this doesn’t mean it would be wise to take up drinking in order to lengthen one’s life - not least because any protective effects tend to be cancelled out by even occasional bouts of heavier drinking,” he said. “There are better ways to strengthen the heart such as exercise and good diet. All things being equal - and given the increased risk of suffering other health conditions linked to any amount of alcohol consumption - if you drink within the existing guidelines it is unlikely that alcohol will either lengthen or shorten your life.” Source: www.theguardian.com

Comme un chef is a 2012 French comedy film, directed by Daniel Cohen and starring Jean Reno and Michaël Youn. The film had its International premiere at the 62nd Berlin International Film Festival in 2012. Jacky Bonnot (Michaël Youn) is a young Frenchman living with his pregnant girlfriend (Raphaëlle Agogué). After being fired from a restaurant, he becomes worried about the birth of his child and decides to get any job he can despite his passion for haute cuisine. After accepting a job as a painter, he makes friends with the establishment’s cooks and helps them improve their menu. These improvements eventually reach the ears of Alexandre Lagarde (Jean Reno), who is also in a precarious situation: as the renowned chef of the Cargo Lagarde restaurant, he has to improve his entire menu. If he cannot achieve this, the place will lose a star from its rating and Stanislas Matter (Julien Boisselier) will convert it into a molecular kitchen, with Alexandre and all the cooks losing their jobs. Jacky initially rejects the offer to work with Alexandre, because the position is an unpaid internship, but after hesitation, he accepts. Caramel Millefeuille For the pastry 250 gms Flour, plus extra for dusting 225 gms Cold butter Method ● Put the flour and a pinch of salt in the food processor. Turn it on and steadily pour in 150ml of water. When the dough comes together, cover it in cling film and chill for 20 mins. ● Lightly flour your surface and roll the dough into a 25cm circle. Put the butter in between two pieces of baking parchment and soften it by tapping it with a rolling pin. Cut the butter in half and repeat the process until the butter is pliable but still cold. Reshape to the size roughly of a postcard. ● Put the butter in the centre of the pastry and fold over the right and left sides of the circle, overlapping in the middle. Press the dough with your rolling pin to make it longer and then lightly mark into thirds. Fold the bottom third up to cover the middle third and the top third down. Seal the dough gently by pressing down on the edges with your rolling pin. Give the dough a quarter turn. ● Roll the dough out to a long rectangle (roughly 18 x 38cm), keeping the edges square and the sides straight. Mark the dough into thirds again, fold the bottom third up and the top third down. Seal the edges and give the dough a quarter turn. Repeat one more time, cover and chill for 20 mins. ● Repeat step four twice more, chilling each time. Chill for one hour before using.

For Caramel Millefeuille Ingredients 400 gms Puff Pastry 30 gms Icing Sugar 500 ml Milk 2 tsp Vanilla Essence 100 g Caster Sugar 3 Eggs 50 g Plain Flour 300 ml Double Cream 200 gms Caster Sugar 50 gms Lightly Salted Butter 200 ml Double Cream Method ● Preheat the oven to 200°C. ● Cut the pastry into 18 equal sized rectangles and place on a lined baking sheet. Cover with a second sheet of baking paper and place a baking sheet on top. Transfer to the oven and bake for 15 to 20 minutes. Remove the top baking sheet and parchment, dust the pastry with icing sugar and then caramelise under the grill for 3 to 4 minutes. Set aside. ● Place the milk, vanilla essence in a pan and bring the milk to the boil. ● Place the eggs and the sugar and whisk together. Mix in the flour and then add the hot vanilla infused milk. Stir together and then return to the pan and bring back to the boil. Cook for 3 minutes, stirring constantly. Pour it into a flat dish and cover with cling film, pressing the cling film on to the surface of the mixture to prevent a skin forming. Chill in the fridge for 1 hour. ● Once chilled, whisk it until smooth. Whisk the double cream until thick and then fold into the mixture. Transfer to a piping bag and set aside. ● For caramel sauce, place the sugar in a frying pan and melt, without stirring, to form a caramel. Mix in the butter and the cream and then allow to cool. ● Pipe the cream mixture onto the pastry rectangles and then layer them on top of each other so that you have six double layers of pastry and cream. Top each one with a final piece of pastry and serve with the salted butter caramel sauce
