Hard Boiled Eggs & Veggies


Ingredients 2 eggs 1 cup of baby spinach 1/2 cup cherry tomatoes, sliced 1 slice of Bread (Gluten Free) Extra virgin coconut oil Seasonings: sea salt, black pepper, basil, thyme

Directions Boil eggs: place in water on stove and boil for 8 minutes. In a small pan, heat 1 tsp extra virgin coconut oil. Add cherry tomatoes and mix for 30 seconds. Then add spinach and sautéed until wilted. Season with seat salt, pepper. Thyme, and basil. Toast bread and spread 1/2 tsp Of extra virgin coconut oil. Place all on a plate and ENJOY!


Scrambled Eggs & Cherry Tomatoes


Ingredients 2 eggs 1/2 cup cherry tomatoes, sliced Diced sweet peppers Extra virgin coconut oil Seasonings: sea salt, black pepper, basil, thyme

Directions Break eggs in a bowl and add 1 tbsp soy milk (optional), salt pepper, other seasonings, and diced peppers and whisk until mixed. Heat 1tsp of extra virgin coconut oil in a pan over medium heat. Pour egg mixture and let sit for 2-3 mins before flipping. Cook for 2-3 mins on other side. Remove and sauté tomatoes for 2 mins. Add to plate and ENJOY!


Peach Mango Smoothie

Recipe ~ 1/2 mango, sliced ~ 1/2 peach, sliced ~ 1 cup almond milk ~ 1/2 tsp ginger, diced ~ A few ice cubes (3-4) ~ 1 scoop vanilla protein powder


Maple Pecan Chocolate Smoothie

Recipe ~ 1 cup soy milk ~ 5-6 whole pecans ~ 1/2 frozen banana ~ 1/2 tsp maple syrup ~ chocolate protein powder


Gluten Free French Toast


Ingredients 1 egg 3 slices of cinnamon raisin bread (Gluten free) 1/2 tsp cinnamon 1/3 cup frozen blueberries 1 tsp organic shredded coconut flakes Maple syrup, or syrup of your choice Extra virgin olive oil spray

Directions Scramble one egg with cinnamon in wide bowl (that bread can fit in) Place griddle on stove and spray with extra virgin olive oil (Medium heat) Dip slices in egg mixture, one at a time, then place on pan. Cook 2-3 minutes on each side. Defrost frozen blueberries in microwave for 30-60 minutes. Top slices with warm blueberries and shredded coconut flakes, drizzle syrup on top and ENJOY!
