The new Paws in Paradise program invites guests to experience first-class luxury service with their pups in tow. Doggie guests are treated to whiteglove Waldorf service through welcome amenities, signature spa treatments, dining options and an in-house veterinarian. “Since adopting Hays, the resort’s ‘Canine Director’ and puppyin-training as part of the Assistance Dogs of Hawaii Program, we were inspired to a launch a pet-friendly program that speaks to the luxury of the Resort,” says John Tolbert, President and Managing Director of Boca Raton Resort & Club. “Hays also served as an inspiration for the launch of the Resort’s fundraising efforts for service dogs, and we could not be more excited to find additional ways to give back to our community and to all of our canine guests.” In fact, Hays himself will greet his colleagues at check-in, who will
receive a welcome letter, water and food bowls, a luxury dog bed, and access to the dog park at the Bungalows. For events and conferences, the Resort offers a Puppies & Ice Cream Breakout Session, where attendees can interact with service animals. BOCA RATON RESORT & CLUB: HISTORICAL TIMELINE 1926: On Feb. 6, 1926, the Cloister Inn, modeled after a Spanish castle by architect Addison Mizner, opens as the most expensive 100-room hotel of its day at $1.25 million. 1928: The Inn is purchased by Philadelphia utility magnate Clarence Geist and expands to include more guestrooms, the former Cabana Club and a new golf course. 1930: The Cloister Inn reopens after $8 million in renovations as the Boca Raton Club. LOCAL: THE ULTIMATE LUXURY The Resort sources its food—and its fishes—locally, with a long history of farm to table
THE FARM-TO-TABLE movement began in earnest almost 20 years ago, stressing locally grown and sourced produce, herbs, cage-free eggs, cheese, grass-fed beef, lamb and pork, and a focus on natural and organic farming. It’s a trend that has become mainstream, a culmination of social movements emphasizing healthier eating and living. Who can’t recall eating a tasteless, rock-hard tomato? Or a peach with no flavor—no juice dribbling down your chin? Oftentimes, this is produce shipped or flown in before it naturally ripens. This gives consumers year-round access to out-of-season fruits and vegetables, but ones that suffer in comparison to locally sourced products when it comes to nutrients and flavor. Chefs like Alice Waters (Chez Panisse), Peter Hoffman (Savoy) and The Kitchen in Boulder, Colorado, were all pioneers of this locavore movement. It was local restaurateur Dennis Max who brought the California “slow food”
movement to South Florida in 1985 with Café Max, and later to Maxaluna, Boca Raton’s first Tuscan grill, and his farm-to-fork Max’s Harvest in Delray Beach. He believes the movement is here to stay. “We always make local food sourcing a part of our business plan,” he says. “The quality is good, so it just makes sense.” Millennials, especially, he says, have gotten used to the higher quality of locally sourced food products and are willing to pay for it. “If anything, the demand for farm-to-table is getting stronger,” he says. Boca Raton Resort & Club Executive Chef Andrew Roenbeck has firsthand experience. Roenbeck oversees 13 restaurants, 15 chefs and 190 cooks from all over the world—and he is always thinking local. The restaurants include fine-dining at The Blue, on the 27th floor of the Tower with an emphasis on sustainable and organic foods from local farmers and waters, to the oceanfront SeaGrille, the Mediterranean Lucca, Morimoto Sushi Bar, the casual 501 East with its craft beers and burgers, to the only Florida outpost of New York City’s iconic ice-cream parlor, Serendipity, known for its signature frozen hot chocolate. Roenbeck, 54, a graduate of the Culinary Institute of America (CIA), has been with the Resort for

almost three decades. An affable and outgoing New Yorker, he rubs shoulders with all levels of staff and clientele—from the rich and famous who dine at his restaurants to the kitchen staff who create the experience. On a typical day, Roenbeck fields calls from John Tolbert, the Resort’s top executive, pauses to chat with visitors, intervenes to satisfy a client’s request, shakes hands with passersby and seamlessly appears to do it all. His raison d’être as a chef is to capture one-of-akind local products and create a sense of place with his cuisine. “We’re in South Florida,” he says. “We use lighter ingredients, more citrus flavors, fresh herbs, no heavy sauces or stews. Our food needs to represent what we do here.” He lets the product—whether fish captured that day by local fishmonger Eric Finn, or steaks farmed at Jackman Florida Natural Wagyu Beef in Clewiston, Florida—speak for itself. “Sprinkle some sea salt, olive oil, cracked pepper and leave it alone,” Roenbeck says. “It’s the little twists and turns we put into our food that make it special.” Roenbeck seeks out local purveyors and has developed relationships with native producers and farms, including Jodi and Darrin

Swank of Swank Specialty Produce in Loxahatchee, a hydroponic, all-natural farm, for much of his lettuce, tomatoes, microgreens, micro herbs, arugula, watercress and other seasonal vegetables. Although the Resort, owned by the Waldorf Astoria, has its large commercial suppliers, Roenbeck says he is grateful for the free rein he enjoys to seek out local vendors as well. “When guests leave, I want them to remember their food experiences as specific to their stay in Boca Raton,” he says. “The best compliments I hear are unsolicited remarks from guests on their way to the airport. They’ll be talking freely to friends or family in the car, forgetting the driver works for us. “Hearing them rave about their visit and their dining experiences is the best compliment I can get,” he says.
SWANK FARM Roenbeck began working with the Swanks almost 20 years ago, when Jodi Swank would drive down to Boca with her three young kids in a station wagon to deliver that week’s orders of produce directly to the chef. Swank Farm, about an hour’s drive northwest of Boca, was established in 1996 with the idea of growing produce atypical to South Florida. What began with simply lettuce has blossomed into 350 varieties of specialty produce, from fancy lettuces to elegant vegetables and wildflowwers on 20 acres of land in Loxahatchee Groves. “Our relationship, over the past 18 seasons, with local South Florida chefs and restaurants has allowed us to create an amazing line of produce tailored for the cooking community,” says Jodi Swank.

TAKAO SOEJIMA, Morimoto ➤ Cooking for Iron Chef Masaharu Morimoto demands exceptional skill and dedication. Luckily, chef Takao Soejima has plenty of both; no wonder he’s been in command of the stylish restaurant since it opened. His culinary education began as a child at his mother’s side, preparing rice and miso soup. He then went to work in sushi restaurants on the East and West Coasts before taking a position at Morimoto in Philadelphia, where he rose to be head sushi chef. His signature dish is the classic miso soup, which Soejima says “was the first thing I learned to make in my cooking class in fourth grade. It is very easy to make, but it’s really hard to make it well.” Words to Cook By: “We don’t take any shortcuts to make good food. It takes time and skill and lots of love, but the result is so obvious that it separates us from that ordinary sushi place down the street.”

The farm also offers locals a chance to sample all of its produce by joining the Swank Sack, a program that allows customers to purchase a “share” of the farm’s production of everything from micro herbs to lettuces and tomatoes—without getting their fingers dirty. “When we started our farm, we were probably the first small specialty grower for local chefs in the community,” says Jodi Swank. “We developed a great relationship with these chefs, including Chef Andy at the Boca Resort.” Swank attributes some of the farm’s success to listening to what the chefs needed. “Every Saturday and Sunday, I send out an email to all of my chefs listing whatever I have available for the week, and they let me know what they’re interested in,” she says. “We love to get the chef’s feedback, what they like, what they want us to grow.” As part of that feedback loop, the Swanks host Swank Table, an annual al fresco dinner series with local and nationally known chefs creating original farm-to-table menus. “We’re happy Chef Andy supports us and other local vendors,” Swank says. “He makes a special effort because of the quantity and volume he needs. JACKMAN CANE AND CATTLE CO. One of only two Waygu cattle ranches in the U.S., the Jackman Cane and Cattle Company, a family-owned ranching company in Clewiston, has been working with Roenbeck and the Boca Raton Resort & Club for the past five years. The Jackman family business, run by Terry, 57, and son Justin Jackman, 38, has been raising
cattle for three generations. In 2002, the Jackmans decided to focus on Japanese Black Wagyu bulls as their herd sires to put on their Angus cows. Wagyu Kobe beef, originating in Kobe, Japan, is meat from Wagyu cattle, prized for its high level of marbling. In 2010, they added Akaushi bulls (red Wagyu). The cattle are raised without hormones or antibiotics and are GMO-free. For the first year of their life, they are grass-fed. When they turn 1, the cattle are shipped to feeding lots in Texas and the Dakotas to feed on the right mixture of grains to maximize the flavor of the beef. “It’s all in the genetics,” says Justin Jackman. “We use good Angus cows with good genes, and crossbreed them with Japanese Black Wagyu sires. We don’t use cattle prods, and feed our cattle an all-vegetarian diet.” “To have a unique family-owned ranch within a short distance of the Resort is a huge asset for us,” says Roenbeck. “The Jackmans are the real deal, an all-American cattle ranch where the cattle are still wrangled on horseback. “There are only two locations in the U.S. that provide this premier American-raised Kobe cattle, and we are lucky to have the Jackman ranch in our backyard,” he adds. At the Resort, Kobe beef is offered as a specialty item and featured on custom menus. JORDAN LERMAN SeaGrille ➤ Jordan Lerman, who came to the Resort via Manhattan and northern Palm Beach, is all about “elevating local and sustainable seafood” at SeaGrille, the Resort’s sleek oceanfront restaurant at the Beach Club. “We get a large portion of our fish from local fishermen right off the dock pulling up alongside the hotel,” he says. Lerman tries to use local farms (the restaurant also serves duck and steaks and other non-seafood dishes), and he also likes to allow the fresh, local ingredients “to speak for themselves.” “Sometimes less is more on a plate. We want to highlight the ingredients, while still trying to elevate the dish to a more creative, more fine-dining modern interpretation. I am trying to show people where food and cuisine can go in South Florida.”

ADAM PILE Lucca ➤ Adam Pile started out at the Resort as a “student-extern” 13 years ago and worked his way up to executive chef of Lucca. (He’s also the executive chef of Bar Luna.) Since he started at Lucca four years ago, he’s watched the restaurant grow—from the number of patrons to the quality of the food. Lately, that means making organic whole-wheat pizza dough and fresh, homemade pasta daily. “We try to keep things simple, let the ingredients speak for themselves, make sure we’re sourcing good quality ingredients,” Pile says. Words to Cook By: “We always try to be as seasonal as possible, that’s kind of our main goal—to make sure we’re appropriate for the seasons. We’re changing; we’re always evolving.”

FINN-ATIC FISH COMPANY After graduating with a business degree from FAU in 2008, Eric Finn, 32, the owner of Finn-atic Fish Company, along with his wife, Lisa, decided the claustrophobia of a cubicle wasn’t for him, and he took to the open seas. With the perfect surname for his business, Finn spends his days on his 25-foot, 300-horsepower Seahawk in the Boca Inlet, cruising up and down the Florida coast spear-fishing for hogfish, cobia, lionfish, grouper, king mackerel, yellow jack and shrimp and lobster during season. Finn is one of the only fishmongers who catches, fillets and sells his own product. He sells

his daily catch to Chef Andy and the Boca Resort as well as to other wholesalers and locally at the Delray GreenMarket. His work is labor-intensive. He and two assistants catch each fish individually with a snare. Even lobsters are individually caught by hand. “That lobster we handcaught in the morning is on your plate that night for dinner,” says Finn. Usually, Finn is on the water by 6 a.m., and by early afternoon is ready to sell his catch. “Around 2 or 3 in the afternoon my phone starts to ring,” says Roenbeck. “It’s Eric calling with his catch of the day. I say, ‘Whattaya got, captain? Let’s make a deal.’” Prices vary depending on the day and the catch. The two begin bartering over that day’s haul and come to an agreement they both can live with. “We sell a superior product because of our short turnaround time,” Finn says. “Many imported fish products are two or three weeks old, compared to ours, which are fresh each day.” It’s extra work, but the personal touch and the immediacy of the catch have enabled him to develop personal relationships with Chef Andy and other chefs in the area. “I text all my chefs that day to let them know what I have,” Finn says. “They know my product is fresh out of the water that morning.” He reminisces about the meal Chef Andy prepared for him and his family at the Resort’s SeaGrille restaurant with that day’s catch of grouper and cobia. “Chef Andy prepared a dinner for us from the fish I caught earlier that day,” Finn remembers. “He served us a perfectly cooked piece of black grouper seasoned to perfection. “Chef Andy and his team are incredible chefs that love to use fresh, local produce literally from their own backyard,” he adds. MR. GREENS PRODUCE In addition to Swank Farms, the Boca Resort relies on Miami-based Mr. Greens Produce for much of its farm-to-table produce, including basil, mirepoix, cilantro, bull’s blood and red amaranth. Founded in 2003, Mr. Greens Produce buys directly from local farms, including Pero Family Farms in Delray Beach and Whitworth and Pontano Farms in Boynton Beach. In 2011, businessman Peter Politis purchased the company, and grew it from a 3,000-square-foot warehouse with six employees to one almost three times as big, with 180 employees, 52 refrigerated trucks and 16 refrigerated vans.
JAMES PRUITT 501 East Bar & Grill ➤ James Pruitt has worked with celebrity chef Todd English and helmed some of Boca’s most popular restaurants, including the farm-to-table pioneer, Farmer’s Table. He is an avid fisherman and scuba diver with a passion for fresh seafood. He describes 501 as a “contemporary American bistro” with a menu that changes seasonally, serving everything from steak to burgers to caught-that-morning fish and a rotisserie chicken that patrons rave over. Compared to several other fine dining restaurants at the Resort, 501 is a little more casual, with an atmosphere that regularly attracts many of the club members. Pruitt likes to keep things accessible. “I like to keep things simple and to layer big bold flavors,” he says. “I like to highlight the freshness of the ingredients.”

“As people are becoming increasingly interested about where their food comes from and how it was grown, Mr. Greens is becoming a popular alternative for getting high-quality fresh produce from trusted farms,” its website states. Politis credits many of the high-end hotels and resorts, such as the Boca Raton Resort & Club, for his rapid growth. “These establishments have creative chefs that use specialty produce and are constantly changing their menus to highlight seasonal items,” he said in an industry newspaper in 2013. “We are willing to seek out those hard-to-find items, and the chefs are taking note of that, and our name is getting out there through word of mouth. “We can offer very specialized products that not many others carry, and as a result we are getting more creative high-end chefs that are looking for new and unusual items,” Politis said. Altrui (the drone), along with partner Bob Harvey of BeeMade Honey in Jupiter, Florida, cultivate more than 400 beehives and produce more than 10,000 pounds of all-natural, raw, unfiltered local honey each year for the Boca Raton Resort & Club. Not only does the Resort put a jar of local honey in each room, it uses BeeMade honey in its tea, granola and baked goods. Roenbeck had Altrui design and custom-build 7-foot honeycombs, which he uses as an educational and recreational tool during corporate meetings. It’s all part of Roenbeck’s philosophy of capturing and highlighting one-of-a-kind local products and creating a sense of place with his cuisine. “Chef Andy is all about education and [being] an advocate for the bees,” says Altrui. “The first time he sampled our honey, he was amazed by the taste. It makes sense that a chef would want to help save the bees—without bees there would be no fruits and veggies.” Each January, 65 truckloads of Altrui’s bees are put on a transport to California where they pollinate the almonds and cherries. In May they are shipped to Maine to pollinate blueberries and then off to Massachusetts and New Jersey for the cranberry crops.
“The taste is in the bloom,” emphasizes Altrui. “It’s good to know where your honey comes from. We make sure our bees are in areas where there is good foraging—next to preserves, good water sources and vegetation, wildflowers and no GMOaltered plants or pesticides. CHRISTIE TENAUD the blue ➤ Although her restaurant career began at age 18 as a hostess at an Orlando pizzeria, it didn’t take long for Christie Tenaud to realize her real passion was for the crazy, exhilarating bustle of a professional kitchen. In time, she caught the eye of James Beard award-winning chef Melissa Kelly, who promoted her up the ladder to chef de cuisine of Kelly’s Arizona eatery, Primo. After a stint at New York’s Essex House, Tenaud arrived at the Resort in November 2013. Her vision of her New American restaurant on the 27th floor of the Resort is limited only by her imagination. “That’s what I like most about my role within this restaurant: We can do whatever we want,” Tenaud says. That comes out in homemade pasta dyed pink with beet juice or scallops crudo, reinvented shrimp étouffée influenced by her love of Louisiana, Asian-inspired mussels or oysters cooked five different ways. The blue is a New American restaurant, and I borrow flavors from different styles of food, whether they be Southern, Miami Cuban or New England.”

WATER SPORTS Morgan Baer of Costa del Este Watersports does not call his classes “lessons.” He prefers to call them “experiences.” “You’re coming here to get something out of your time,” he says. “It’s memorable and personal.” From surfing to flyboarding, Costa del Este offers a variety of lessons that allow guests to learn from some of the best in the business. From non-motorized water sports like paddleboards and sailing to motorized sports like WaveRunners and banana boats, Baer and his team are ready to get wet and wild with guests.

Baer says the best time to surf is September to January, because the cold fronts and storms bring in waves. He also maintains that any guest who knows how to swim can learn to surf. “You might not become a professional surfer, but you’re going to have fun and get a video and some great photos,” Baer says. Guests and members can rent surfboards by the hour or pay for a surf lesson. Baer says the lessons give guests and members a great opportunity to meet and bond with the water sports staff. “Surfing is obviously what all of my guys want to do all day,” Baer says. “It really gets them in their element, and it also creates something for the guest.”

JIMMY CONNORS Tennis Legend Few personalities in the annals of tennis have been as big and bold as Jimmy Connors. Known for his competitiveness and bawdy behavior as much as his game-changing flat backhand, he held the world No. 1 ranking for 160 weeks straight from 1974 to 1977, setting a record at the time. He won eight majors and still holds three “open era” men’s singles records for titles won (109), matches won (1,256) and matches played (1,535). Over the years, his rivalries have become the stuff of legend. During his prime, Connors went head to head with contemporaries such as Brian Gottfried, Phil Dent, Harold Solomon, Raul Ramirez and Dick Stockton, as well as older players like Arthur Ashe and Ilie Nâstase. Even as he aged, he didn’t shy away from young guns such as Bjorn Borg, Ivan Lendl and, in particular, the equally hotheaded John McEnroe, with whom he sparred 34 times between 1977 and 1991. Connors had one of the
most impressive comebacks of all-time when, in 1991, he reached the U.S. Open semifinals at the age of 39. Like McEnroe, Connors has done tennis commentating and analysis in his later years, and the two even commentated side by side at Wimbledon for three years, sparking heated debate. In 2013, Connors published The Outsider, his autobiography, which won for “Best Autobiography/Biography” at the British Sports Book Awards. Connors, who lives in South Florida, is now the resident tennis professional at the Resort, in partnership with Boca Tennis Academy, and members and guests have the chance to rub elbows with the Grand Slam champ during The Jimmy Connors Experience. This package, available for a half day or a full day, may include tennis, golf, speaking engagements or even a dinner with the pro. Connors spoke to World Tennis magazine in 2015 when he first came to the Resort and had introduced the Legends of Boca Experience, a fourday package featuring one-on-one time with the pro: “I now am a part of a new family of people in Boca. … It’s a great new change with a brand that can really take tennis to a whole new level. I really want people to come to Boca and to learn to play with us; you’re in the best surroundings, the best place to hone your skills and take your game to a higher level. The Legends of Boca is such an exciting experience, and you get to meet a lot of interesting, great people.”

With boutiques in the Hamptons, Palm Beach and Puerto Rico, jewelry designer Michelle Farmer has talent to spare. But she doesn’t hog the spotlight. Her business, Michelle Farmer Collaborate, features her designs alongside jewelry, apparel and home décor by a variety of emerging brands. The common denominators of these products are quality craftsmanship and a fashion-forward approach. Farmer, who divides her time between Palm Beach and the Hamptons, has the Michelle Farmer Collaborate at the Resort, in the lobby, offering resort wear and fine jewelry. The designer says she knew her concept would be right at home at the Resort after meeting with President John Tolbert and touring the grounds. “We fell in love with his vision, the architecture and the hotel’s exceptional customer service,” she says. “The majority of our stores have a light and airy vibe with a twist of Old World charm.” Her penchant for exceeding clients’ expecta-
tions dovetails with the Resort’s approach. “We are all about creating an exceptional experience for our customers and helping them take home a special memory from their trip,” she says. “We found that the professionalism of the hotel’s staff, the gorgeous architecture and the location made it an easy choice for us to open a store with the Boca Resort. We treat every person that walks through our doors like they are a guest in our home, and go out of our way to accommodate clientele in any way possible.” Just as the Resort offers a uniquely curated experience for members and guests, so, too, does Farmer carefully select her merchandise. “We pride ourselves on having a beautiful curation of unique designers from across the globe along with my own designs. [We] also love to support local designers wherever we open our stores,” she says. “In most cases, the collections we have cannot be found in any other stores or they are one-of-akind. We find that this creates a fresh and exciting shopping experience.” She adds that the boutique also provides custom jewelry design and plans on hosting several special events, like trunk shows, during season. Farmer had been designing her own jewelry for five years before launching her self-named collection in 2001. Her second collection, unveiled in 2003, made a splash in Palm Beach, New York, St. Barth’s and East Hampton. After opening a boutique in East Hampton in 2006, she launched Michelle Farmer Collaborate. Her style merges contemporary design with a vintage vibe and a bohemian sensibility, featuring precious and semiprecious stones and baroque pearls.

KELLIE STENZEL Golf instructor, PGA professional Golf runs in the family for Kellie Stenzel: Her grandfather was a PGA professional, and her father played on the PGA Tour. So it should come as no surprise that Stenzel, after playing professionally for five years, is now considered one of the best golf instructors in the business. Her accolades include being named one of the Top 100 Teachers in the nation by Golf magazine every year since 2009 as well as a Top 50 teacher by Golf For Women magazine and one of the top teachers in New York by Golf Digest. Today, she’s the lead instructor at the Resort’s Kellie Stenzel Golf Academy. She says the partnership is a perfect fit. “My brand and the Resort both have quality and full service as top priorities,” she says. “My instructional team and I look to provide each and every person who visits us with a quality, fun, comfortable atmosphere where they receive whatever they desire to improve
their games. From private lessons and clinics to golf schools and junior events, we look to give each and every golfer a better game, which always makes it more fun.” Stenzel says she tries to provide a memorable, multifaceted experience that is about more than solely athletics: “A unique and multilayered experience is a part of both the Resort and our academy.” For example, at the junior camp, children not only improve their golf handicaps but also enjoy meeting guest instructors, spending time at the gym, visiting the beach for bunker practice, participating in contests and more. “We pride ourselves on being family-oriented, and the instruction and the programs the Resort offers shows this commitment,” she says. “I was playing with my family recently, and our son, Matthew, had his first birdie on a par 4 at the Resort. This experience, like many others at the Resort, creates memories, and that is what it is all about.” Originally from Geneva, New York, Stenzel played four years of Division I women’s golf while attending Furman University in Greenville, South Carolina. As a senior, her team came in second nationwide at the NCAA finals. She then traveled the world as a pro on the Futures Tour, the European Tour, the Asian Tour, the South African Tour and the Australian Tour. The Palm Beach Gardens resident is also the author of three books, The Women’s Guide to Golf: A Handbook for Beginners, The Women’s Guide to Consistent Golf and The Women’s Guide to Lower Scores.

A KarmaVibes event at the Resort
MARY ANN MORGAN-FRIED Registered Yoga Teacher Yoga is about more than a downward-dog here, a namaste there. For certified instructor Mary Ann Morgan-Fried, the 5,000-year-old practice was her physical and spiritual savior. She discovered yoga in the late 1990s on the recommendation of a doctor. At the time, as a marketing executive for major health and fitness companies, she worked in a high-stress corporate environment, frequently turning in 80-hour workweeks. When the anxiety became overwhelming, her M.D. offered two options: antidepressants or yoga. A week later, she attended her first yoga class and quickly became committed to the practice. “I felt a lot of emotional release that I didn’t realize I had stored up,” she recalls. “It changes the mind, it changes the body; it helps us to be more aware of how we live every day.” In 2010, Morgan-Fried began yoga teacher training as a way to spread her passion to others, earning 500 accredited training hours, and she’s been officially teaching for the past seven years. When Resort President John Tolbert started KarmaVibes, a series of special on-site yoga events, in 2017, Morgan-Fried proved to be a valuable hire. Her time-honored and careful yoga flows and positive outlook have resonated with guests and members from 8 to 80. “Yoga is such a science,” she says. “If you don’t 76

understand what you’re teaching—the energy body, the breathing—then you’ll never receive the benefits the practice brings. It has to be a smart flow.” Taking advantage of the Resort’s picturesque milieu and South Florida’s ideal weather, one-hour KarmaVibes classes take place under a giant tree on the Croquet Lawn, allowing participants to breathe in nature with every inhale. A live DJ provides the intoxicating soundtrack to the movements, which Morgan-Fried supplements with New Age wisdom. The $25 class fee benefits Boca Raton nonprofits in areas such as education, youth development and the military. “It is a program that is teaching people about living more mindfully,” she says. “Sometimes in the stresses of everyday life, we lose ourselves, and KarmaVibes … teaches people to live more mindful and conscious of the choices they make in their everyday lives.” There may be no better model for yoga’s transformative powers than Morgan-Fried herself, who survived drug and alcohol abuse, and a 12-step program, in her formative years. Now she’s a full-time yoga professional and an ambassador for best-selling fitness brand Lululemon, which is another way she spreads yoga’s nondenominational gospel. She’s 52 but says she feels younger than 30. “When we start living our spiritual life, everything around us will take care of itself,” she says. “That’s the karma.” “My intention as a teacher is to uncover and discover what’s important for you so that you can apply that in your life and your relationships,” she adds. “Once you start working on that inner journey, you start to manifest and create what you really have in your heart, and you start to have the support around you. Things just happen. It’s effortless.”
GINA BRADLEY Founder, Paddle Diva Gina Bradley knows she’s in Florida when, while gently treading the crystalline waters of the Atlantic Ocean on a paddleboard, she catches a manatee in her sightline. “I, coming from the Northeast, don’t have those giant, gentle creatures that swim around us,” she says. “I love that our boards are completely benign to them, and they seem to huddle around us, which just gives me great pleasure, and allows me to show people the sea life that we have to work so hard to protect. What I try to bring the clients when they’re with me, is to take in the natural environment and appreciate it, because it’s such a valuable resource that we all have and can share.” Seeing Florida’s wildlife in its natural habitat—which can extend to bobbing sea turtles, bright-green iguanas and native birds—is just one perk exclusive to the winter season of her business, Paddle Diva. Bradley, a longtime enthusiast of standup paddleboarding, started the business in the Hamptons in 2008, and she brought it to the Boca Raton Resort & Club last year on the recommendation of Michelle Farmer, whose stylish brand has a presence at the Resort.
“She made an introduction to John [Tolbert], and within a one-hour lunch, John and I were ready to take over the planet,” Bradley recalls. “He immediately figured out that I’m not the average standup paddleboard shop.” Bradley’s mission is one of ease and inclusion. Her classes are a breeze even for guests who have never stepped foot on a board. She teaches paddleboard protocol in 15 minutes’ time, with continuous guidance throughout an hourlong session. “We always tell our clients, ‘if you can walk, you can paddleboard. You just need the willingness to try.’” Bradley originally marketed her business to women, assuming correctly that if she targeted ladies, men would follow. Today, Paddle Diva’s client base is about 60 percent women, and at the Resort, it’s especially popular among bachelorette parties. “It’s such a team-bonding experience,” she says. “It allows for true laughter. We always take pictures and AirDrop them to our clients on the spot. It’s a really amazing way to show what you did on vacation.” Standup paddleboarding has the added benefit of being a sound workout, one that eschews heavy lifting in favor of the fresh sea air. “You want to feel it in your arms and upper back, but really you should be feeling it in your core, and all those teeny muscles that connect your torso to your hips to your shoulders to your arms. “The other muscle that gets worked a lot—and it’s sort of a joke—is the brain. What happens is, people gently push outside their comfort zone, and they feel so great about themselves afterwards. We’ve had little girls skipping off the boards, saying, ‘now I can do anything!’”

JIMMY BANNOS Chef, Heaven on Seven Longtime Chicago restaurant Heaven on Seven promotes itself as “your neighborhood Cajun restaurant in the Loop … if you can find us!” This is a reference to the restaurant’s unorthodox location, high up in a nondescript office building. Even in the age of Waze and Google Maps, new customers are liable to drive right past it. “I tell people, we’re right next door to the Staples, but come to the seventh floor!” says Jimmy Bannos, its good-natured chef for nearly four decades. When diners do discover this New Orleans-style speakeasy, they usually return—sometimes for multiple visits a week, starting their meals with Bannos’ beer-battered “Boo Boo” Fries or Cajun cheese curds, moving on to his creative spin on Southern classics like po’boys, Mardi Gras jambalaya and chicken-fried rib-eye, and finishing with chocolate peanut butter pie and blueberry bayou blasters. This March, guests and members of the Boca Raton Resort & Club will get to experience Bannos’ Big Easy-in-the-Windy City cuisine, as he visits for one of the Resort’s “Corks and Conversations” events. Part of the Resort’s Artistsin-Residence program, the event pairs Bannos with a celebrated winemaker for a five-course, progressive dinner experience. “I’m longtime friends with Kevin [food and beverage director at the Resort],” Bannos says. “He asked if I wanted to do this event. The Resort is beautiful, and the people who work there couldn’t be nicer.” A third-generation restaurateur, 78

Bannos dates his passion for Louisiana cooking to his discovery of Paul Prudhomme’s Louisiana Kitchen cookbook in 1984. Inspired by Prudhomme’s recipes, he started to integrate NOLA-style cuisine into what was then known as the New Garland Coffee Shop, the diner he co-founded with his brother George. “People were really receptive,” Bannos recalls. “I had my first Mardi Gras party, and I came up with eight to 10 different specials. Afterwards, people came back asking for the Mardi Gras menu. I said, ‘come in two days. We’ll have everything.’ That’s how it started. The diner menu I was doing shrunk. “The next thing you know, we’re doing southern food. I never looked back. It just started building momentum, and the rest is history. … It quadrupled our business. It changed my family’s lives.” Bannos’ conception of New Orleans cuisine is broad and accommodating, borrowing from soul food, Cajun cooking and Creole styles. Though he dislikes the term “fusion,” he integrates Jamaican ingredients, and he’s also begun catering to a Viet-

namese population with dishes he describes as “Southeast Asia meets Southwest Louisiana.” While his menu, and the restaurant’s aesthetics, have evolved in the nearly four decades he’s been in business, some things never change: His restaurant is still cash-only, a policy he implemented so he could keep prices low by eliminating creditcard fees. The Bannos name will continuing thriving in Chicago’s dining scene: His rock-star son Jimmy Jr. is the James Beard Award winner behind the Purple Pig, a Mediterranean restaurant. “He’s relentless,” Bannos says. “I was much like that at a young age. He’s like me—I have 1,500 cookbooks, constantly trying to find new things. He’s doing the same thing.” v

REEL FLORIDA It’s true that it might take a lifetime to catch a monster fish, even for the most experienced angler. But it’s also possible to hook a trophy (or your dinner) on your first outing—and within minutes after leaving the dock. Such easy access to worldclass fishing, diving and snorkeling makes South Florida unusual, if not unique, in the United States. “You can wake up and say, ‘Hey, let’s go fishing today,’ pick up the phone and you’re out there fishing within a mile or 2 miles from shore,” says Cory Burlew, who co-owns, with his wife Lesa, Goddess Charters, and is captain of Grim’s Revenge. “I’ve been doing this for 30-some years, and I still get excited every day. I still see things I’ve never seen before.” Burlew recalls a charter with a family who presented him with a challenging wish list. “They said they wanted to see porpoises and turtles. 100

I said, ‘Anything else?’ and they said, ‘Sailfish!’ “We go out to the inlet and we see porpoises, then I spot a loggerhead [turtle],” Burlew says. “Then, I kid you not, the line on the first rod starts going out and sure enough it’s a sailfish!” After about a 35-minute fight, they brought in a 7-foot sailfish weighing about 6065 pounds. The Gulf Stream, flowing from the Gulf of Mexico to the Atlantic Ocean, comes closest to our shores, bringing spectacular fish migrations with it, including sailfish, mahi-mahi and wahoo, among many others. Reefs running parallel to shore provide habitat for hundreds of other species of marine life, attracting big deep-water fish that swim in for a meal. Area charters cater not only to experienced anglers, but also to beginners and families. “There’s no better way to ensure the future of fishing than to teach a child how to fish,” says Mike Busse, captain and owner of Reel Dusky Fishing Charters, on his website. Charter captains are happy to tailor their clients’ experiences by offering fishing, of course, as well as cruising, snorkeling and other activities. Fishing charters can be at night or day, and include deep-sea, reef and bottom fishing. These captains love their work and want to share their passion, so don’t hesitate to ask lots of questions. DIVE IN! In addition to the proximity from shore to prime fishing grounds, South Florida offers a variety of diving and snorkeling experiences—from reefs to wrecks to right-off-the-beach. You’ll also find a tremendous diversity in marine life—from bright tropical fish to the Volkswagen-sized goliath grouper, as well as eels, turtles, an occasional manta ray or whale shark, and a host of invertebrates and crustaceans including the delicious Florida lobster. The Southeast Florida Reef Tract, comprised of three linear reefs parallel to the beach, contribute to this biodiversity. Extending from Miami-Dade County to Palm Beach County, it’s one of the longest continuous reef structures in the Western Atlantic. Popular diving spots have nicknames often based on reef characteristics, like The Chimney, with a hole in the top big enough for two divers to swim through; English Muffin, named for the nooks and crannies that are home to soft corals and shrimp; and Finks Grouper Hole “Shark Dive,” named for its inhabitants, and the occasional large squid. “In Boca we’re so lucky,” says Tony Coulter, captain of the dive boat Diversity and co-owner of SunStar Aquatic Services. “These destinations are literally minutes away. I can put someone on a reef 5 minutes after we leave the inlet.”

Prevailing currents run along the shoreline, providing ideal conditions for divers to be dropped off at a given point to drift along with the current next to a reef and be picked up when they’re ready. In addition to our reefs, divers also enjoy a multitude of wrecks in the area. Two popular ones near Boca are the United Caribbean and the Sea Emperor, which can be explored in a single dive. When water is clear, snorkelers can also view these wrecks from the surface, Coulter says. The Sea Emperor was a 171-foot hopper barge that was intentionally sunk after being donated to Palm Beach County by a dredging company as part of its fine for destroying reef habitat. Loaded with concrete drainage culverts, the Sea Emperor flipped over when it was sunk, scattering the culverts, which created even more habitat for sea life. The wreck site is often called Aqua Zoo because it’s home to a wide variety of inhabitants—including goliath groupers, moray eels, southern stingrays, nurse sharks and many other fish. A trail of rock and coral lead from the Sea Emperor to the United

Caribbean, which has a more tragic history. Originally named the Golden Venture, the 147-foot cargo ship was used by smugglers attempting to bring 286 Chinese migrants to the United States in 1993 when it ran aground on Rockaway Beach in Queens, New York. Ten people drowned as they tried to escape the stranded ship. Later sold and renamed, the United Caribbean was used as a legitimate cargo vessel and later sold to Palm Beach County for use in its artificial reef program. Another wreck that can be viewed by snorkelers when water is clear is the Ancient Mariner. Commissioned in 1934 as the Coast Guard cutter Nemises, this ship chased German submarines, escorted U.S. convoys and rescued survivors from torpedoed tankers during World War II. Decommissioned in 1964, Nemises’ glory days were over. Sold and converted into a floating restaurant, the ship changed hands many times and sank, was re-floated, renamed the Ancient Mariner and re-opened only to close after about 100 patrons contracted hepatitis. Ultimately, the South Florida Divers Club of Hollywood bought the vessel and donated it to Broward County’s artificial reef program. Today, the wreck is covered with sea life and home to even more organisms than it was when a visit to the Ancient Mariner might mean a trip to the hospital. Getting up close and personal with local sea creatures doesn’t require a boat ride, though. With a snorkel and some fins, you can swim or even wade from shore to the man-made reef at Boca Raton’s Red Reef Park, 1400 State Road A1A. About 100 yards offshore from the town of Lauderdale-bythe-Sea, snorkelers and divers can see hard corals that are 3 to 4 feet tall, and explore reef “potholes” with lots of juvenile fish and an artificial “Shipwreck Trail” including a replica of an 1800s shipwreck (see force-e.com/go-diving/shore-dive-sites/lauderdaleby-the-sea-shore-dive for more details and directions). WALK ON THE WILD SIDE “There are no other Everglades in the world,” wrote Marjory Stoneman Douglas in The Everglades: River of Grass, published in 1947, the same year Everglades National Park was established. Comprised of 1.5 million acres throughout Miami-Dade, Collier and Monroe counties, the park is part of the largest subtropical wilderness in the U.S., a network of wetlands and forests that supports a diversity of plant and animal species found nowhere else. These include more than a dozen federally listed endangered species including Florida panther, American crocodile, West Indian manatee and turtles including the Atlantic Ridley, leatherback, green and hawksbill. Not only is it protected as a national park, but the Everglades has been recognized as an International Biosphere Reserve and World Heritage Site, among other designations. The Everglades’ beauty is subtle: “where earth, water and sky blend in low green landscape; where mere inches of elevation produce distinct changes in vegetation; and where a great wealth of birds and other wildlife find refuge,” according to the park’s website. Unlike other national parks that were so designated because of their spectacular geologic features—mountains, geysers, canyons, etc.—the Everglades’ designation was based on the rich diversity of species that it supports. Because the park is so vast— and roads from its three main entrances do not connect—it’s best to plan ahead to choose activities and areas that interest you most. Consider the following ideas: From the Shark Valley entrance and visitor center (about an hour and a half from Boca Raton on Highway 41, also known as Southwest Eighth Street or the Tamiami Trail, 25 miles west of the Florida Turnpike), you can take a guided tram tour along the 15-mile loop road to see alligators, wading birds and other wildlife, with a stop at an observation tower for a 360-degree view. Entering the park from Homestead to the south (about an hour and a half from Boca; take the Turnpike south to U.S. 1, turn right onto Palm Drive and follow the signs), you can take interpretative walks along the Anhinga Trail, which is a boardwalk along Taylor Slough, or the Gumbo Limbo Trail, a paved path through a hardwood hammock. Continue in your car along the main park road to Flamingo, which is mainland Florida’s southernmost point. Then rent a canoe or kayak to glide silently into the mangroves past snoozing
alligators or out onto Florida Bay where the solitude is interrupted only by your paddle strokes or the periodic flap of a fish’s fin. Cross the state to the Gulf Coast entrance near Everglades City (about a two-hour drive from Boca Raton) to take a guided boat tour through the vast mangrove estuary of the Ten Thousand Islands (and stop for stone crab claws in Everglades City on your return!). Visitor centers also offer information, bicycle rentals and sales of bug spray, snacks and beverages. Ranger-led activities will get you even closer to nature and help you better interpret the Everglades’ wonders. If you want to go off-trail and you don’t mind getting your feet wet, consider a slough slog guided by a park ranger to discover the fascinating world within a cypress dome. For something really different, tour the historic Nike missile site, a relic of the Cold War constructed after the Cuban Missile Crisis and abandoned in 1979. You don’t need a guide to see great blue heron, snowy egrets, ibis, pelicans and other birds in the park—some 350 species are found here. But a ranger can lead you to those spots favored by certain birds at certain times of the year. Although much has changed since then, much remains the same. Just as Douglas wrote more than a century ago, “the miracle of light pours over the green and brown expanse of saw grass and of water, shining and slow-moving below, the grass and water that is the meaning and the central fact of the Everglades of Florida. had for nature and also on Hawaiian elements of water, plants and flowers,” says Yvonne Biegel, director of public relations and marketing. “There’s water elements flowing throughout the resort, so it’s similar to the Hawaiian land division of Ahupua’a, a self-sustainable parcel from mountain to ocean.” Grand Wailea’s most impressive water feature is its Wailea Canyon Activity Pool, a 2,000-foot-long, 770,000-gallon structure of nine individual pools connected by a river. This allows guests to experience the excitement of whitewater rapids and gentle currents without leaving the pool area itself. Other features within the activity pool include six waterfalls, a Tarzan rope swing, three Jacuzzis, a swim-up grotto bar and the world’s first water elevator—a surreal way to travel that needs to be experienced to be believed. Ten years after its 2008 approval, at an estimated cost of $200 million, the brand’s first new hotel in California has opened to the public, and it conjures the very sort of Hollywood royalty that will populate its rooms each awards season. The hotel’s location is as plum as it gets. It sits at the intersection of Wilshire and Santa Monica bou110

levards, overlooking L.A.’s Golden Triangle district, which includes the legendary Rodeo Drive. Once inside, the Waldorf doesn’t hide its wow factor, with the lobby’s gold-accented marble floors, custom-designed chandelier and artful symmetry encapsulating the vintage Art Deco style that continues across the sprawling property. According to Managing Director Peter Bowling, the design from famed architect Pierre-Yves Rochon “establishes a casual yet chic atmosphere, with an air of elegance befitting its world-class visitors. and the grandeur of its landscape is celebrated across the property’s spacious, light and airy environment.” Materials used include Portuguese limestone, antique bronze, Calacatta marble, Crema Marfil marble, Noir Saint Laurent marble, Lalique crystal finishes and more. The hotel boasts 170 rooms— including 51 suites—and its guest activities stretch to its sun-dappled apex, where rooftop yoga is offered on weekends. This is also where visitors can take a dip in the rooftop pool, and where diners can enjoy lobster burgers and pretzel-dusted calamari at the Rooftop by JG, which one critic has called “L.A.’s coolest new rooftop bar.” The JG stands for Jean-George Vongerichten, the acclaimed chef who designed all three of the hotel’s culinary concepts, including its signature fine-dining destination,
Jean-George Beverly Hills. It’s where you’ll find everything from caviar to hot dogs. His cuisine changes seasonally based on what he can source locally, but signature dishes—like avocado pizza and tuna tartare—remain year-round staples. Guests can also partake in Los Angeles’ only La Prairie Day Spa, featuring products from the famed Swiss beauty brand, and a 24-hour fitness center with top-of-the-line workout equipment and technology. That tech-savviness extends to the guest rooms, where iPads allow users to adjust lighting, drapes and entertainment at the touch of a screen. “Another small but important touch is the Dyson Supersonic hairdryer offered for use in each guestroom,” says Bowling. “This is a revolutionary hairdryer, and we are the first hotel in Southern California to offer it for guest use. It seems like such a simple touch, but can make all the difference to our guests.” Combine all of this with True Waldorf Service— the bespoke details tailored to each individual guest, from pre-arrival through departure—and it’s easy to see why Forbes recently declared that, “as luxury entities go, [the Waldorf Astoria Beverly Hills is] a game changer.”

MAX STEVEN Grossman is a celebrated digital photographer. But he’s also, in a more unorthodox sense, a librarian. Each photograph in his signature series, Bookscapes, is a collage of related books—extravagant coffee-table tomes, biographies, critical compendiums, art-history surveys—that do not exist outside the artist’s imagination. As art professor Natalia Brizuela wrote in a 2017 essay about Grossman’s work, “Books in every image have never quite been placed in that way except in the virtual space of his computer. … When looked at from a close distance, you can see that each book spine has a distinct image quality, revealing their different provenance.” In one of his Film Bookscapes, for instance, a novelization of Quentin Tarantino’s “Inglourious Basterds” rests above a study of Federico Fellini, which lies atop a guide to Kabuki theatre. On the invented shelf of one of his Art Bookscapes, it’s a short movement of the eye from Koons to de Kooning, from Johns to Rothko, from Duchamp to Richter. Grossman started experimenting with this concept in 2006 in his
native Colombia, and he fully developed it in 2010, applying an acrylic sheen that allows each spine to pop off the surface. He’s completed more than 200 such digital collages, far eclipsing all of his other photography series. Grossman is represented by the Boca Resort’s own Sponder Gallery, and his works can be seen outside the entrance to Lucca, on a wall between Serendipity and Morimoto, in the gallery space near the lobby, and in the hall near the FedEX Member’s Lounge. He discussed his work with Mizner’s Dream. What is your process for putting together a Bookscape? Basically, it’s going to commercial libraries or bookstores, even friends’ houses, and taking photos of books, as many as possible. I create my own private bank of books, and then I sit down on my computer and create these libraries by theme. Each book that you’re going to see is going to be a specific theme—music, film, art, fashion, architecture. Are these themes passions of yours? Not necessarily. Most of them are, and I do have to have a little bit of knowledge about the subject I’m doing, because I want to make it relevant, and remind the viewer of something timeless. What do you look for aesthetically when you’re curating the “shelves”? In music, I like to put John Lennon, Mick Jagger—the very iconic representatives of each theme—in most of the compositions. My first choice would be the content, and the second would definitely be color.

Do you enjoy it when the spectator’s eye is tricked into believing this is a real bookshelf? I love it! Most of the time I have to put a sign up, or be there and say, “Please do not touch,” because that’s the first instinct—people want to grab it, and they leave their fingerprints on the acrylic. But it’s nice; it’s part of the photography. It’s about what is reality and what is not? Yes, the paradox of your work is that it’s so vividly real, but at the same time it’s the stuff of dreams. For a film and music lover like me, these are dream collections.
Exactly. But today with technology, you don’t have to have all these books. If you have a tablet or your phone, you just type in the book you see, it will take you to that movie or that book, and it will get you that information. You’re almost, in a way, advertising these books. That’s true. It’s good, because it makes people curious, and some books there remind you of your youth, and some you have read, and some you want to read. It’s so accessible. It happens also with the movies; you see a particular director you haven’t heard of before, and now you’re interested, and want to see more about him. That’s the positive side of it. There’s so much information in your photographs. I would imagine with most pieces of art, people just look at them for a few seconds and move on.

With yours, people could get lost in them and read every spine. That’s the beauty of it, and that’s where the title comes from. It is a landscape—it is a space where you can look for more than three seconds, which is the concentration span nowadays. You can stay there and let yourself wander in this landscape of books. Physical books are becoming less necessary in most people’s lives. Does your work have a subtext about immortalizing these texts? It does. If you look at the reality of what’s happening with neighborhood bookstores, they’re closing. When I used to go to New York, almost every neighborhood had a bookstore, and a beautiful one. And every year that I go back, you see more banks and more Starbucks, and less of them. I’ve heard kids today no longer need to take a bag with books to school; they just take an iPad, and they have all their books digitally. So I know it’s practical and you cannot go against technology, but … you don’t want books to ever disappear; they’ve been here for about 600 years. But they are disappearing, as is photography itself. We’re entering a new age of digital imaging, so it’s not that we’re going to lose it completely; there are some people who still like the darkroom and they like the smell of a developed photograph. But technology is changing so fast, and it makes things so instantaneous, that you think twice before buying a camera that has film. As humans do, we create something, and it slowly disappears. Sometimes it comes back again, and sometimes it doesn’t. Could the same approach of the Bookscapes work for records, DVDs and other media people collect? I do it exclusive to books. Some people have asked if I could make old records, and so on, but I relate more to books than to records. I could use a record cover in a Bookscape; I could mix them. It’s not forbidden. But I think there’s something about books, all this hidden information, that I appreciate more than records or DVDs. Books have lasted. They’ve made an imprint on our society. Even the spines of a book can have character, whereas all record spines look the same. Exactly. They will be thin, and more acrylic looking. It’s different. I think each book has got personality. Are you a collector of anything yourself? I like buying art, but I’m not at a collector stage. I try to give away things, not collect things. v

THIS YEAR is lucky number 13 for the popular and elegant Boca Raton Concours d’Elegance, a weekend aimed at luxury car enthusiasts that is always held at the Boca Resort, and always has a top-ranked headliner at its gala dinner. The Boca Raton Concours d’Elegance fully benefits the Boys & Girls Clubs of Broward County—and the 12,300 at-risk youth it serves—and is directed by its founders Rita & Rick Case of The Rick Case Automotive Group. The honorary chair is Mike Jackson. “The entire Concours team is comprised of a group of more than 300 volunteers who donate their
time to the planning and execution of the event,” says Brian Quail, president/CEO of the Boys & Girls Clubs of Broward County.
