Broke Student’s Noodles
As a student I avoided stocking fancy groceries due to expenses and just time constraints. I kind of was in a mood for asian food one day but didn’t have any fancy sauces or ingredients lying around. So i resorted to this quick and easy recipe to satisfy my craving!

Ingredients
(Serves 1)
• 1/4 packet Soba noodles / 1 pack regular ramen noodles • 1/2 chicken breast (replace with 1/3 pack of Tofu for veggie option) • 1 stem spring onion • 1/2 onion • Suggested veggies: broccoli, carrot, spinach
Sauce Ingredients
• 1 Tbsp. soy sauce • 2 Tbsp. peanut butter (chunky peanut butter works wonders) • 1 Tbsp. chili garlic sauce • 1/2 Tbsp. sesame oil • 1 Tbsp. honey / sugar • 1 Tbsp. water

1. Take a saucepan and bring two cups of water and a pinch of salt to a boil. Once the water is boiling, add your noodles and cook for 6-10 minutes. Drain under cold water and set aside.
2. Combine sauce ingredients as mentioned above and stir until well combined.
3. Add oil to a pan. Saute thinly sliced onions and the whites of spring onions. Add your cubed chicken / sliced chicken breast and cook til it begins to brown. Season as necessary with salt, pepper, chili flakes, and garlic powder. Put it into a separate bowl and set aside.
4. In the same pan, add a small amount of sesame oil and heat at medium. Add in your sauce and cook until it thickens. Once the sauce thickens, add noodles, proteins, and veggies to the pan and cook for about two minutes on low.
5. Turn off the heat and serve in a bowl. Top it with your favorite toppings (mine are coriander, green spring onions, peanuts, chili flakes, and fried garlic).
