Welcome
Oh my, what a busy autumn we’ve had! Looking after and preparing our animals for the colder days ahead is a big job in itself, but on top of that, there’s been loads of other stuff going on at Jimmy’s Farm & Wildlife Park. We had a TV camera crew on site again filming for Autumn at Jimmy’s Farm, an amazing enclosure built for our first ever primates – two groups of Barbary macaques – and all the latest arrivals checking in, including a giant anteater, two rare breed Suffolk Punches and 6,000 turkeys. I get exhausted just thinking about it! With shorter and colder days to fill, it’s very tempting to switch to hibernation mode, make a duvet day extend into a whole season, reach for the biscuit tin and hunker down while waiting for winter to blow over. But if ever there was a good time to be outside – this is it.

Ok, it might be difficult to plan ahead with Britain’s notoriously unpredictable weather, there’s a distinct nip in the air, and you might need a brolly to hand at all times just in case. However, being alfresco and connecting with nature this season will be crucial for our mental and physical wellbeing for the challenging months ahead. With so much uncertainty still in the chilling air over coronavirus restrictions, we all need an outlet that’s guaranteed to get us through the winter months. So, layer up, take a hat, pack a hot flask and head for the great outdoors – a world of wintry wonder awaits! I wish you and your families all the best for the festive season, and health and happiness for 2021.

Shopping From winter planting to rewilding to garden art, The Potting Shed at Jimmy’s Farm & Wildlife Park is a ‘go-to-must’ for green-fingered enthusiasts.
The Potting Shed offers quality plants, garden furniture and much more while supporting other small businesses by sourcing from local craftsmen and traders. It is run by plant lover, Keith Bodsworth, a qualified Royal Horticultural Society (RHS) gardener and strong advocate for the conservation and preservation of British wildlife. The Potting Shed has an ethos of rewilding gardens and upcycling and recycling items wherever possible. Handmade, locally produced bird tables and bird boxes are available all year round and there are wildlife items aplenty – from bug houses to the perfect plants for your garden. Garden art and metal sculptures are found dotted all around the centre – there’s a plethora of concrete sculptures and ornaments to suit all tastes. If you prefer some classic animal magic, take a little piece of the farm and wildlife park home with you in the form of either a proud peacock or a beautifully welded item by the inhouse sculptor, Shaun. All commissions are welcome and there are pieces for all budgets. One-off, hand-crafted furniture for both inside and out is available every day. Each item is made locally,

Big boost for our rare breeds BIAZA announces new group chaired by Jimmy’s Farm & Wildlife Park’s General Manager, Stevie Sheppard, to support domestic and heritage breeds.
D
omestic and heritage breeds deserve the full support and expertise of Britain and Ireland’s incredible zoos. That’s why the British and Irish Association of Zoos and Aquariums (BIAZA) is excited to be launching a brand-new group dedicated to supporting work around domestic stock and heritage breeds. The group, chaired by Stevie Sheppard, General Manager at Jimmy’s Farm & Wildlife Park, will bring together some of our community’s top experts in this field, and promises to get as many zoos as possible talking about rare domestic breeds.
Strengthening links
The forum will discuss subjects such as developments in husbandry and care, priority breeds and studbook collaboration. It will identify priority areas for research around the care and conservation of these mammals and birds, ultimately working to ensure that the stock held by the zoo community receives optimal care and is well managed at population level. of rare breeds forward. I have a passion to look after our rare domestic breeds for our future generations and I can’t wait to share that with zoos across Britain and Ireland.” The Domestic Focus Group will work alongside existing expert groups which focus on the more exotic species cared for by zoos and aquariums, such as elephants and apes. Nicky Needham, Acting Director at BIAZA, comments: “In working as a community to tackle the rapid decline in global biodiversity, it is important not to overlook our rare domestic breeds, and the contributions they make to our national farming heritage, and also to habitat management and conservation. “We hope that this group will be able to strengthen links and work with other organisations, such as the Rare Breeds Survival Trust, to identify priority breeds and other areas we can collaborate together on.” It is hoped the group will be a source of positive conservation action after a worrying year for zoos, that has seen many struggle to keep up their amazing conservation work in the challenge of the coronavirus pandemic.

“I am really excited to work with Stevie and our experts to give our domestic breeds a bright future in BIAZA zoos,” adds Nicky. Jimmy’s Farm & Wildlife Park is home to 80 species and breeds, with conservation work at the core of its mission. We are proud to be a member of the Rare Breeds Survival Trust (RBST), whose mission is to ensure the country does not lose the diversity of its native breeds, and Jimmy has a pivotal role as the organisation’s president. From cheeky monkeys to beautiful Suffolk Punches to a giant anteater, get those wellies on, wrap up and embrace The Good Life with all the latest additions and arrivals at Jimmy’s Farm & Wildlife Park!

fter a super-busy autumn with a film crew on site, awesome new building projects and a wave of new arrivals checking in, we can’t wait to see you for a winter of fun, adventure and wild activities. We’re very excited to unveil our amazing new enclosure, which has been built for our first ever primates! Jimmy’s Farm & Wildlife Park is now home to two groups of 10 Barbary macaques, the only species of monkey without a tail.

“One of the groups includes a male which was badly treated and two abandoned females rescued by AAP in the Netherlands, which works hard to give primates and other exotic mammals a better future,” explains General Manager Stevie Sheppard. “The other group includes two males and five females, which have come from Alicante in Spain – one had been smuggled out of Morocco.” The Barbary macaque is the only species of its kind found outside Asia and the only primate species found north of the Sahara in Africa. They are found in Morocco and Algeria, and Gibraltar also has an introduced population. Part of the European Endangered Species Programme (EEP), we hope the two groups will get to know each other well and create some beautiful, best-of-breed babies! You can horse around with our two new, gorgeous, rare breed Suffolk Punch horses, fillies Annabel and Annie, who have joined our everexpanding family and are settling in very well to their new home.
Traditionally, the Suffolk Punch was bred to work the clay soil of East Anglia, but it’s a versatile breed and still used in farming. “They are stunning animals and love their carrots,” says Stevie. “They’re very big and measure about 17 to 18 hands, and one has a blond mane which makes her so pretty! “They were given to us by their owner from Cambridge, as he’s not been very well, and we hope to breed them in the new year. They are a rare breed, so it’s really important that we continue to breed them.” Our new giant anteater, Basil, has joined us from Longleat Safari & Adventure Park in Wiltshire as part of the EEP and is making his home next to our cute capybaras and characterful camels. He’s a one-year-old and has a grassed area, woodland and his own marsh to roam around. Giant anteaters are among the most threatened mammals in Central America, where their grassland habitats are threatened by human activities. We’ve built a brand-new aviary for our comical kookaburras, Karl

The giant anteater is the largest of all four anteater species, reaching up to eight feet long from the tip of its snout to the end of its tail. Anteaters have no teeth, but their long tongues can lap up 35,000 ants and termites to swallow whole each day! Now that’s thirsty work!

Stevie [General Manager] had seen some previous big builds we had done; building a huge adventure playground for goats as a team build and creating some tall climbing frames for squirrel monkeys very much like this one. He wanted to bring that kind of design into the new macaque enclosure and we were very happy to oblige!

What has the work involved? Our section of the project was focused on creating a climbing structure in the large paddock enclosure. From the brief, we knew that there were two groups, one made up of individuals who would be rescue animals, so were likely to have physical restrictions and possibly behavioural issues depending on where they came from. That is the reason for the giant fire hose hammock, which is easily accessible and a comfortable seat for geriatric individuals, as well as providing opportunities for physical therapy throughout as they move around.

Conversely, the second group would be a breeding group, so likely to be made up of fit and healthy individuals, and in the future youngsters that we wanted to ensure had lots of opportunities for play and developing physically and mentally, so lots of chunky roping to swing and climb on, and wobbly bridges to develop their balance and coordination. With the site being quite exposed, the other design focus was providing shelter from the elements, so built-in windbreaks in different orientations so that even when the wind and rain is bad, they still have plenty of outside options. Rather than leaving the backs of these as wasted space, we built climbing handholds into each one to further enhance the climbing opportunities for the youngsters. The public want to see these amazing animals in action, so making sure the design allows the animals to feel happy and comfortable, while showing off their incredible abilities is a big part of what we do. This includes creating places for the animals to hide themselves away if they want to, which might seem counterintuitive, but actually when the animals know they can disappear any time they like, they are more likely to choose to be out in full view.

Instead, we designed the structures to be wide and lower, with feeders built into the design on the lower levels of all the major structures, which is important to keep them moving around – again great for visitors, but also important for any social species as, while they often like to hang out together, they also need the chance to get away from each other, too, like any family group.
The windbreaks also help with this, providing visual barriers from other monkeys and the public. How do you feel now it’s all done? It was awesome to be involved in this project. Being given the opportunity to design and build the climbing structures for these rescued primates is an honour. It really is an amazing feeling to receive a blank canvas to create something especially for an animal species, and the brief for this project was a great challenge. We love the
How long did it take to build? The full enclosure was due to be done in six weeks, but for our section of the build, we created the design in just a few days, and then three of us had just five days to finish this mammoth task. How has the enclosure been constructed to consider the Barbary macaques’ specific needs? In the wild, Barbary macaques can be much more terrestrial, or ground based, than other primate species. As their diet changes so drastically through the year, they only tend to be really arboreal [tree dwelling] during the winter months when ground foraging opportunities disappear

process of going through the design stage, and then watching it grow and develop over the building days. We cannot wait to see the macaques enjoying their new home! What are the aims of your Patreon project? In 2010, we were looking for ways to improve the lives of exotic animals through enrichment. Enrichment entails items like feeding devices or enclosure furniture, that promotes their mental and physical wellbeing. In the animal world, however, time and resources are always limited, so we needed a different way to develop our ideas, and so our team building workshops were born. Corporate groups join us to build enrichment items for the animals, paying for the materials needed to complete the job, and as a reward get to watch the animals respond to their efforts. In 2014 we became self-employed to really develop this concept further, not only focusing on improving the welfare of animals, but in how we could truly enhance the human teams in the process. Lockdown has stifled our efforts, but necessity is the mother of invention, leading us to a subscription service where our patrons fund us to build and develop new enrichment for different animals each month – allowing even more people the amazing feeling of directly improving animal welfare. The Patreon platform has been a real release for creativity. Guided by the animals’ natural behaviour, in the last three months we’ve renovated an enclosure for rescued ex-pet monkeys, developed a suspended feeder for the incredibly agile kinkajous, designed a timed feeding device triggered by melting ice cubes for nocturnal species like the rare and elusive Owston’s civet, and just last month created a new feeder for wild equids like zebra, as well as domestic horses.

“I asked if I could have a go and he whacked me around the head with a truncheon.” Tell us all about Jamie and Jimmy’s New Year’s Feast on Channel 4. What can viewers look forward to? Right now, we need to grab every opportunity we get to have a good time with our loved ones, whether that’s in person or on a video screen. And for me, good food has gotta be at the heart of that. The start of a new year has got to be one of the best reasons to have a knees-up, and you can expect everything you’d usually get from me and Jimmy – epic recipes, tips, tricks, laughs, drinks and a bit of good old banter. We might even throw a game or two in the mix. Watch this space! Wherever you’ll be and whatever you’re doing, we’re here to help you get in the party mood. You and Jimmy have a lifelong friendship that goes back to your school days – can you remember when you first met and did you hit it off from the outset? We met on my first day of nursery, so I would have been about three years old at the time. Jimmy was dressed as a policeman, going round and round on his tricycle. I asked if I could have a go and he whacked me around the head with a truncheon. I’ve loved him ever since. I couldn’t ask for a better friend, he’s always there when I need him – in good times and bad – and he always puts a smile on my face. He’s one of the funniest, cleverest people I know. There’s not much I don’t know about him; I’ve even seen him naked (several times)! What’s held your friendship together all this time – are you two peas in a pod or are you the ‘ying’ to his ‘yang’? Jimmy and me are both quite strange if I’m honest. It’s almost like together we’ve got this invisible pressure valve. We can both be quite intense, study hard, be technical and remember detail, really geeking out and getting interested in stuff, but if we do it for too long we have to release the pressure valve and we become a couple of complete jokers!
Luckily, we understand each other so we know when those moments are coming – and hopefully they’re in private! How old were you when you first became interested in food and cooking – was there an awakening moment? I grew up in a pub, so I started cooking at a young age and helped my dad in the pub kitchen, cooking everything from beautiful fish dishes to roast dinners. I wouldn’t say there was one special moment, but I do remember doing a roast chicken when I was about 10 and being praised for it. I wasn’t very good at school, so to finally find something that I was praised for felt really good. I didn’t think then that I would become a chef, but I certainly knew I enjoyed cooking. What were your first aspirations as a child for a career, and did those hold fast or chop and change along the way? I’ve always loved woodwork, so I thought at one point I might become a carpenter. I still enjoy whittling wooden sticks. When you look back at your hugely successful career as a TV chef and restaurateur, did you ever imagine life would turn out like this? What’s been the secret to your success? If I think back to the days of The Naked Chef, I was just a keen, excited young lad who loved cooking and was happy to be able to share that. I honestly had no idea what it was going to be like, so when it all kicked off it was really quite overwhelming. Who’d have thought within a few months of the show going out I’d be asked to cook at No 10 for Tony Blair? Or that I’d hear Zoe Ball on the radio saying that she'd cooked Fatboy Slim my seared tuna for dinner? It was mad. As for a secret, I’d say it’s important to surround yourself with the best people, to go with your gut instinct, and don’t be scared to take risks – I haven’t always got it right and I’m the first to admit that, but I’ve learnt a lot along the way.

What is your go-to comfort dish, your desert island ‘must-have’ ingredient and your ultimate showstopper? If I’m not feeling my best, something spicy and warming will usually do the trick – I reckon a simple spaghetti arrabbiata with just the right amount of chilli, crunchy breadcrumbs and Parmesan. There are two loyal contenders for my must-have ingredient – lemon and chilli. Both mighty, both game-changing, they each have the power to transform a dish. And if you want to use them together, well, that’s a whole other story. And my mum’s retro seven-layer trifle at Christmas is hard to beat for a show-stopping pud. Have your children inherited your love of cooking, and do they ever rustle up something for you and Jools? Buddy is my little helper in the kitchen. He loves it. I’m not sure he wants to be a chef, but he definitely loves cooking. All the kids are pretty good, to be honest, and happy to help out with little jobs in the kitchen. You’re incredibly passionate about your work and have led some very high-profile campaigns to tackle nutrition issues and childhood obesity. Do you feel optimistic about the nation’s future health? Tackling childhood obesity is my major focus. Yes, it’s a big challenge, but there are some really exciting ideas developing about how to make our whole environment healthier. Plus, we’ve already made some positive steps, such as the ban on junk food ads across the whole TfL network. There’s obviously a lot going on right now, but if we keep the end goal in sight and keep chipping away at it, hopefully, we’ll make some real and measurable progress. If there is one thing that you’d like to be remembered for, above all others, what would that be? I hope people will remember me as someone who made a positive difference to a lot of people’s lives through food – or at least tried to. www.jimmysfarm.com

Ingredients 4 large free-range eggs / 175g plain flour 175ml whole milk / 4 large portobello mushrooms olive oil / 2 onions / 4 sprigs of rosemary 250ml smooth porter red wine vinegar / 2 cloves of garlic
Ingredients 1.2kg potatoes / 2 parsnips / 2 leeks / olive oil ½ a bunch of sage (10g) / 3 higher-welfare Cumberland sausages 1 x 1.5kg free-range whole chicken / 1 pear 85g watercress
Crispy garlic, porter & onion gravy spiked with rosemary Total time: 1 hour 15 minutes
Roast potato, parsnip, leek & sage traybake, pear & watercress Total time: 1 hour 45 minutes
Method Preheat the oven to 180ºC. Scrub the potatoes and finely slice, then wash, trim and finely slice the parsnips and leeks.
Method Preheat the oven to 200ºC. Whisk the eggs, 150g of flour, a pinch of sea salt, the milk and 2 tablespoons of water into a smooth batter, then put aside. Peel the mushrooms, saving the peelings. Place the mushrooms cap side down in a large non-stick roasting tray, drizzle with 1 tablespoon of olive oil and season with salt and black pepper. Roast for 30 minutes. Meanwhile, for the gravy, peel the onions and finely slice with the mushroom peelings, then place in a pan on a medium-low heat with 2 tablespoons of oil. Strip in half the rosemary and cook for 15 minutes, or until dark and gnarly, stirring occasionally. Add the porter and 2 tablespoons of red wine vinegar and let it reduce by half, then stir in the remaining flour. Gradually add 700ml of water, stirring regularly, then simmer to the consistency of your liking and season to perfection. Peel and finely slice the garlic, pick the remaining rosemary, then drizzle and rub it all with a little oil. Remove the tray from the oven and put the mushrooms on a plate for a moment. Working quickly but carefully, pour the batter into the tray, sit the mushrooms towards the centre, then sprinkle over the oiled garlic and rosemary. Return to the oven for 25 minutes, or until puffed up and golden. Serve with the gravy. www.jimmysfarm.com

Place it all in a 30cm x 40cm roasting tray, and toss with 2 tablespoons of olive oil, a pinch of sea salt and black pepper and the sage leaves (reserving the stalks and a few leaves for later). Squeeze the sausagemeat out of the skins and scrunch together. Pull up the chicken skin at the tip of the breasts and use a spatula to gently separate the skin down the breast meat, then poke half the sausagemeat into each side, smoothing it out as you go. Secure the skin with a cocktail stick. Rub the chicken all over with a pinch of salt and pepper and 1 tablespoon of oil. Stuff the sage stalks into the chicken cavity. Place the chicken directly on the bars of the oven with the tray of veg underneath, and roast for 1 hour 20 minutes, or until everything is golden and cooked through. With 10 minutes to go, sprinkle the reserved sage leaves over the tray of veg, so they crisp up nicely. Very finely slice or coarsely grate the pear and toss with the watercress. Sit the chicken on the veg and serve everything together at the table.

fter the huge success of Spring at Jimmy’s Farm during lockdown, our farm and wildlife park returned to TV screens across the country this autumn. A film crew from Red Sky with Parky Productions filmed our animals and team for the Channel 4 series, Autumn at Jimmy’s Farm, as we prepared our family for the cold months ahead. Jimmy’s Farm isn’t just home to pigs and sheep - there’s also beautiful woodland and a wildlife park full of exotic animals. With 80 breeds and species to look after, including 23 rare breeds, there’s always a big list of work to do.

Highlights included our new litter of rare breed Middle White pigs, discovering our endangered lowland tapir, Tip-Tap, is pregnant, and moving our resident kookaburras, Karl and Susan, to their fantastic new enclosure. We also made plans for a sanctuary for our very own 'Bambi', orphan Fern, and other rescued wildlife. Amusement was provided by the amorous actions of our pigs and sheep, our mischievous meerkats, and Jimmy getting to grips with our rare breed turkeys. There were also some incredibly sad moments, such as when we had to say goodbye to our wonderful wallabies, Wendy, who had an abscess, and our poorly, much-loved albino, Jenson. But life never stops at Jimmy’s Farm & Wildlife Park. We welcomed our latest arrivals, including two stunning Suffolk Punches and our awesome giant anteater, Basil, and we undertook our biggest building project yet – a stunning enclosure for our new Barbary macaques. "It may have been a hectic autumn, but it’s one I’ll never forget," concluded Jimmy. "We’ve had some downs, but they’ve been far outweighed by the highs – like all our new arrivals, passing our zoo inspection and achieving more than I ever thought possible back in spring. We catch up with you during what have been the strangest of times – how was the initial lockdown for you? I always try to look for the positive and, for us, it was quality family time. I usually spend upwards of eight months overseas and, for the first time in my working life, I had almost six solid months with my wife and children. We grew a vegetable patch, we nurtured our garden, we went for wild walks, we camped in the garden and we made the most of the most extraordinary of times. Looking back at your childhood, what are your overriding memories of wildlife, nature and being outdoors? Have you always possessed an adventurer’s spirit? My father is a Canadian and my sisters and I spent long summers in Canada www.jimmysfarm.com

in the cottage that had been hand-built by my late grandfather. I loved those long summers – eight weeks of camping, canoeing, swimming, fishing and exploring. It’s when I fell in love with the wilderness. After university, you became a reservist in the Royal Navy before a short stint as a picture editor. What then made you apply for the TV reality documentary Castaway 20 years ago? I was looking for adventure. I nearly joined the Royal Navy but decided I wanted to travel on land as well as sea. The opportunity to live for a year on a remote Scottish island seemed a perfect way to escape. Reality television didn’t yet exist, and it seemed like an ambitious and exciting opportunity to become a real-life Robinson Crusoe.
What did you learnt most about yourself during that year spent on a remote island? How to cope with boredom and how to work with people with differing opinions. It taught me to be liberal and openminded or not blinded by assumptions and stereotype. It’s why I still get frustrated by narrow-mindedness and presumption. Give people a chance before you pass judgement. You’ve made numerous TV documentaries, written nine best-selling books and travelled extensively. Which single project are you most proud of? I am just about to publish my 10th book (15th if you include my children’s books) – that’s nearly a million published words, all from the boy who failed English. Spell checking can only get you so far. I love writing and am very proud of the books I’ve published.

Climbing Mount Everest, rowing across the Atlantic, racing across Antartica to the South Pole, and trekking across Middle Eastern deserts. Which was the most challenging? Rowing the Atlantic was still one of the toughest. It was scary, arduous, and dangerous. It took us 49 days to cross nearly 3,000 miles of ocean. Everest was quite scary too. There are so many variables that, no matter how hard you plan, you can never really account for, nor control, nature. Is there anything you haven’t done yet that is on your bucket list? I’d love to circumnavigate the world. On foot, by bicycle or sailing – I don’t really mind, but I’d love to have circled the globe on my own steam. www.jimmysfarm.com

Do you find time to relax and how is the perfect day spent with your family? I love being with my family, which includes the dogs and the guinea pigs. We love walking and hiking and exploring. I also love travelling with my family. We have been lucky enough to travel to all sorts of wonderful places over the years. No doubt you’re passing on your love of wildlife, nature and adventure to your children. What is the single most important lesson you’d like them to learn about the world? To be curious and open-minded. I want them to make up their own minds and have their own opinions, and I see my role as the person to
give them the opportunities to make those judgments based on experience, fact and learning. As United Nations Patron of Wilderness, what what would you like your legacy to be? It sounds cliched but I’d like to make a difference. I’d like to inspire and empower people to respect nature and the wilderness, and to care about future generations. Massive challenges for the world lie ahead, not least climate change. What are your hopes for 2021? I think you’ll need to ask me again next year. Who knows what will happen?...

Top activities to do at home
It can be hard for our non-hibernating wildlife to find enough food to survive the winter, especially for our garden birds.
3 Keep feeders topped up and clean with high calorie seeds and nuts – and don’t forget the water too. Keep an eye out and learn the different species that visit your garden including blue tits, great tits, dunnocks, blackbirds, starlings and, of course, a winter robin.

Visit a park or look around the garden and gather different fallen leaves. Make leaf print rubbings with wax crayons.

Dot some spring bulbs around the garden – these early flowers are often the first meal for pollinating insects waking up hungry from hibernation.

Gather twigs together and bind them with string or twine into stars or snowflakes for a festive or wintry decoration. Gather pinecones and other natural materials and turn them into a family of creatures.

Don’t be too tidy in the garden during autumn and winter – dead stems and garden leaves provide the perfect cosy hideaway for bugs, caterpillars and other insects. A pile of dead logs in a corner of the garden can be a palace for minibeasts who can take shelter until the weather begins to warm again.

Help your local park, neighbourhood or beach and go on a litter pick. With the plants dying back, it can be easier to spot some of that pesky litter lying around. Take a sturdy bag, gloves and grabber-stick – avoid dog poo bags, sharp objects, anything dirty or dangerous – and recycle what you can. ‘There is never a more important time to get outside’ Dr Bella Smith, Suffolk NHS doctor and founder of The Digital GP, discusses the physical and mental health benefits of being outdoors this winter.
W
ith winter upon us, days are getting shorter and the mornings darker. For some of us, this time of year can be comforting but for others, we can feel our mood drops due to the lack of sunlight. Despite the shorter days, there is never a more important time to get outside with nature either alone or with our family. I love to be outside in the winter months. Walking with nature allows gentle, calm ‘me-time’, a time to think and reflect on life. Taking slow deep breaths of clean, fresh country air is so good for our physical and mental health. It can help slow our heart rate, lower our blood pressure, reduce stress levels, increase the oxygen to our muscles and brain and it helps to lift my mood. Going for a walk outside with family is an opportunity for quality time to talk and play away from screens and social media. There is a stillness in nature that alerts our senses to noises that we might ignore in our busy days in work or at school. Just stopping and listening to the rustling of leaves or feeling the wind through your hair; alerting our senses to the smells and brightness of the colours that this time of year brings. It can give us the opportunity to be grateful for being alive and witnessing the beautiful changes of seasons. Just stopping like this is so beneficial for our mental health and giving us the ability to replenish our resilience and ability to cope with what lies ahead. The more daylight we see in the winter months, the more this will help to

maintain our vitamin D levels and will also help improve our quality of sleep. Vitamin D is important for our bone health and for maintaining immunity to fight off viruses such as flu and colds during the winter months. There is growing evidence that vitamin D may boost immunity and may be beneficial in both preventing and recovering from Covid-19. We absorb 90 per cent of our recommended vitamin D through our skin from sunlight, and 10 per cent from foods. During the winter months, the amount of daylight we see is markedly reduced and that means it is harder to absorb as much vitamin D as we need, especially if we are working long hours indoors, if we wear more clothing or if we have darker skin. The recommended amount of vitamin D to take regularly as a supplement through the autumn and winter months is 400 IU (10mcg) daily and you can buy these over the counter. If you are worried about your vitamin D levels, you can have a blood test that will measure the exact amount in your blood and, if it is very low, you may need stronger vitamin D
medication prescribed by your doctor. Foods that contain higher levels of vitamin D are oily fish like mackerel, cod liver oil and egg yolks. Some cereals are fortified with vitamin D. If you eat a healthy diet, studies show that you should be able to get the right amount of other vitamins from food alone. However, if this is not possible, some people benefit from taking a multivitamin with vitamin C and zinc during the winter months to help maintain their immunity. Sleep is crucial for maintaining good health, but unfortunately is often the first thing to go out of the window when we are stressed, unwell or in pain. Try to make sleep a priority and aim to have between six to eight hours of quality sleep per night. The more daylight and exercise you can have during the day in the winter, the better quality your sleep should be at night. There are great ways of tracking your sleep now to see how well you are sleeping. When did turkeys first appear on Christmas tables in the UK and where does the tradition come from? Turkeys arrived in the UK in 1534, and it was actually Henry VIII who really put turkey on the map for Christmas. At that time, turkey was seen as something of an exotic delicacy, but the appeal for Henry was that it was not only large enough to make an extravagant display on the table, but it was tastier and less stringy than that other exotic favourite of the royals, the peacock. As turkeys were expensive to rear, they became the preferred meat of the rich, whilst the working class would typically eat goose at Christmas. How many turkeys do we consume as a nation each year and how many are produced by KellyBronze? We consume 15 million turkeys per year of which 6 million are bought fresh at Christmas. KellyBronze make up just 35,000 of this 6 million. The slow growing breed and dry plucking/ ageing make it a very special and luxurious meat.

Is turkey just for Christmas or are we missing a trick – why does chicken take the crown all year round? About 50 per cent of turkey produced in the UK is eaten all year round and is available fresh in all local supermarkets. It is lower in fat and higher in protein than chicken, making it the healthier choice; the problem is that it tends to be more expensive than chicken. However, turkey mince is experiencing a huge growth at the moment because people are realising that the dark meat from turkey can do all that beef or lamb mince can do at a much lower price point – and half the fat. Turkey breast steaks are also fantastic and cooking them using veal recipes is hugely popular in mainland Europe – I highly recommend. How do you rear your prize turkeys and what makes them so special? It’s a chain of events to produce the perfect KellyBronze – they are matured to over twice the age of a standard industry turkey, doubling the farming costs but quadrupling the flavour. The birds are then plucked by hand – a method of preparation dating back to medieval times. This enables them to be dry hung, tenderising the meat and intensifying the taste. A KellyBronze turkey is six months-old at Christmas whereas the average turkey is twelve weeks. Maturity has the biggest impact on flavour.

How many varieties do you breed and what’s your most unusual turkey? There are about fifty different breeds of turkey. Our most unusual one is probably what we call ‘the tiny’ because it is the same size as a chicken. Is frozen just as good as fresh? The quality that goes into the freezer is the quality that comes out. Unfortunately, frozen food will always be deemed to be cheap and cannot be sold at fresh prices. Therefore, frozen turkey producers have to cut the cost as much as they possibly can, which will often mean compromising on quality. What’s the secret to a great tasting turkey and what are your top tips for making the best roast turkey? Buy a turkey with lots of fat covering – this is how you can tell it’s a mature bird. If it’s dry-plucked and hung, this will confirm it. If you do buy a younger/cheaper turkey, you will need to baste it and use foil to keep as moist as possible. A mature bird has intramuscular fat and does not need any artificial help. I also recommend investing in a meat thermometer to avoid cremating the turkey on the big day! www.jimmysfarm.com

Your turkeys are eaten by royalty, prime ministers, top chefs and celebrities, and you have won numerous awards – what is your proudest moment? Probably winning the Ultimate BBC Good Food Award in 1997. It was a long time ago but, as a small family business, it meant the world. Also, producing the first ever turkey to be awarded three Gold Stars in the Great Taste Awards was a huge achievement.

Preheat the oven to 180 degrees. Lay the cooked turkey skin flat in a baking tray and cook in the oven for approximately 10 minutes or until crispy. Grab a wrap and spread the mayonnaise and cranberry sauce in the centre. Add the Brussels sprouts, turkey, stuffing and, once crisped, the delicious turkey crackling. Fold over one side of the wrap, followed by the bottom and finally roll over until the filling is fully enclosed. Slice in half and enjoy!

s the seasons change over from golden autumn light to winter crispness, our bodies turn to craving warming, seasonally-coloured produce, from vibrant deep orange butternut squash and quirky shaped pumpkins, to golden beets and the dark green of Cavolo Nero and Savoy cabbage. Butternut is one of my favourites. If you haven’t tried buffalo mozzarella or burrata alongside roasted beetroot and butternut squash, you’re missing out, as the combined sweetness of the roasted veg goes so well with the creamy cheese, especially if you sprinkle some crunchy Maldon style sea salt on top. Soups hit the spot as do trays of roasted squash, served piping hot with a generous dollop of home-made hummus and creamy avocado as a simple supper.

Butternut squash is loaded with vitamin A – a single cup provides four times as much than most people need in a day.

Ingredients 1.25kg butternut squash Sprigs of thyme, for roasting Olive oil, for drizzling 200g onions, chopped 2 cloves garlic, crushed 75g butter 1.25l chicken or vegetable stock 100g Parmesan, finely grated 100ml double cream (optional) Sea salt and black pepper Method Preheat the oven to 180°C, gas mark 4. Put the squash on a baking tray, drizzle with olive oil, top with sprigs of thyme and roast for 25 minutes or until golden. Meanwhile, soften the onions and garlic in the butter. Add the stock and roasted squash. Cook until soft, then blend until smooth.

Stir in the Parmesan and season to taste. Finish with a swirl of double cream if extra calories are needed.

• Heat it up – add a fire pit, chiminea or patio heaters and some cosy faux fur throws to turn your deck into an appealing place to sit in winter, but keep it safe.
