uma mistura saborosa da cozinha portuguesa com a alimentação indígena e o tempero de origem africana. A culinária cearense é baseada, fundamentalmente, na pesca, na pecuária e em algumas culturas agrícolas. Da pesca originam-se a lagosta, as inúmeras variedades de peixes, o camarão, o caranguejo, originando pratos como a peixada, o camarão ensopado, ao alho e óleo, o caranguejo cozido, as patinhas à milanesa e o casquinho de caranguejo, dentre outros.

Da produção agrícola destacam-se a macaxeira, a batata doce, o coco e o milho, responsáveis pelos bolos, cuscuz, mungunzá, canjica, pamonha e pé de moleque. O feijão e o arroz oferecem um dos pratos típicos mais apreciados da região: o baião de dois, com manteiga e queijo de coalho. Da cana de açúcar, produzida no estado, é extraído o caldo, a popular rapadura e a cachaça, bebida que tem no próprio Ceará, um dos maiores produtores do Brasil. A carne seca, herança do ciclo do couro, é aproveitada no preparo da paçoca (carne misturada com farinha de mandioca), que acompanha o baião de dois. A panelada, a buchada, o sarrabulho (sarapatel), são ainda exemplos de pratos salgados, consumidos no estado.

Das frutas tropicais (caju, mamão, coco, manga, goiaba, maracujá, cajá, dentre outras), são elaborados doces, sucos e sorvetes. No caso do caju, destaca-se ainda um dos seus principais subprodutos, a cajuína, uma bebida fermentada, de gosto doce e suave. A culinária cearense é famosa em todo o Brasil, pela qualidade dos pratos feitos à base de frutos do mar. A cozinha não se restringe, porém, às comidas regionais. Os mais variados restaurantes oferecem pratos de outras regiões brasileiras e de outros países.

Ceará Cuisine The local cuisine is a tasty combination of Portuguese cuisine and indigenous food seasoned with African ingredients. Ceará cuisine is based mostly on seafood, animal farming and some other farming products. From the sea, lobsters, numerous species of fish, shrimp, and crab are combined in dishes such as the fish stew, shrimp stew, deep-fried garlic-flavored shrimp, crab stew, breaded crab clamps, and so on.

Agricultural production provides the yam, sweet potatoes, coconuts and corn which are the main ingredients of the most diverse cakes and muffins. Rice and beans come together in order to compose one of the region’s most appreciated typical dishes: baião-de-dois, which is actually a local version of the risotto and is served with butter and locally-produced cheese. The sugar cane produced in the state is used to make juice and rapadura, which consists of a very hard and sweet biscuit-like dessert. Ceará is also a major producer of Cachaça, highly alcoholic spirits made from sugar cane. Dry meat, heritage from the leather cycle, is used to make paçoca, mixture of ground dry beef and manioc flour which accompanies baião-de-dois. Panelada, buchada, sarrabulho, and sarapatel are some other examples of dishes which can be eaten in the state. Tropical fruit such as papaya, cashew, coconut, mango, guava, passion fruit, and the small yellow ones known as cajá an elaborate array of jams, juices, and ice creams is produced. The cashew stands out in particular for the production of cajuína, which is a sweet mildly flavored fermented beverage. Ceará’s cuisine is famous nationwide for the quality of its seafoodbased dishes. Our gastronomy, however, is not restricted to regional dishes. The most diverse restaurants offer dishes from other Brazilian dishes as well as foreign dishes.

Pratos Típicos - Buchada

Categoria:Carnes | Tempo de Preparo: 1h30min | Rendimento: 9 porções

Ingredientes: 300g de fígado, 200g de tripa, 200g de bofe, 150g de coração, 150g da carne que envolve o coração do carneiro e também do bucho, os pés do animal, linha e agulha.

Para o tempero: 2 tomates picados, 1 pimentão verde, 1 cebola média, também picada, coentro a gosto, 4 pimentas de cheiro, cominho, sal, coloral a gosto, 1/2 xícara de vinagre e 1 cabeça de alho.

Modo de preparo: Primeiro, misture os miúdos.

Acrescente tomate, pimentão, cebola, coentro, sal e colorau. Os outros temperos são batidos no liquidificador. O resultado é um molho cremoso que deve ser misturado aos miúdos. Depois, é só deixar descansar.

Enquanto isso, trate o bucho. Corte-o. O acabamento é requintado e demorado. Exige habilidades manuais e até um jeitinho de estilista para dar forma ao bolinho. A linha deve ter duas voltas para ficar resistente e cor clara para não chamar atenção. Para costurar cada bolinha não demora muito. O próximo passo é encher os saquinhos. O resultado é uma delícia re-

cheada e suculenta. Não esqueça de costurar bem as bordas. O rendimento é de nove buchadas. Agora, a buchada é levada ao fogo. Coloque os temperos na panela, as buchadas e, o grande segredo, os pés do carneiro, que soltam a gordura, que dá um gostinho especial à buchada. Por último, acrescente 1,5 litro de água. Tampe a panela e deixe cozinhar. Cerca de uma hora e meia depois, está pronta a buchada. Antes de degustar, é bom não esquecer de tirar a linha.

Brasil é um país rico em manifestações culturais.

Das regiões brasileiras surgem os mais diferentes aspectos que juntos formam o mosaico da Cultura Nacional. O Ceará, por sua vez, contribui de forma significativa para elevar a Cultura Nacional. Daqui surgem os mais relevantes humoristas do nosso país, a exemplo do nosso Chico Anysio, Renato Aragão e Tom Cavalcante.

Esta casta de grandes nomes, todavia, tem como inspiração, nomes como Quintino Cunha, Paula Ney, Leonardo Mota, Manezim do Bispo, Padre Quinderé, Dr. Gouveia, dentre outros expoentes da lendária cultura popular cearense. Daí surgiu a ideia na Assembleia Legislativa de se criar datas para comemorar este senso de humor.

Criou-se o FHC, o FESTIVAL DE HUMOR CEARENSE, que acontece no mês de agosto, em Iguatu. A criação do FHC tem por objetivo integrar os humoristas cearenses, estimulando sua criação, divulgando o seu trabalho e, sobretudo, reconhecendo sua contribuição para o crescimento e difusão sócio-cultural do nosso Estado.

Dessa forma o Ceará precisava de uma data significativa que simbolizasse o ápice do humor, e por que não homenagear o divulgador do humor cearense? Então, foi escolhido o Dia 12 de Abril, dia do nascimento de Chico Anysio, nosso maior humorista, como o “Dia do Humorista Cearense”.

Ceará Comedy. Brazil is a rich country

in terms of cultural manifestations. In every region, the most different aspects appear and together they make up the national cultural mosaic. Ceará does not fail to significantly contribute to the development of a national culture. It is the birthplace of some of the most relevant comedians in our country such as Chico Anysio, Renato Aragão and Tom Cavalcante. This constellation of great names, however, has found inspiration in names such as Quintino Cunha, Paula Ney, Leonardo Mota, Manezim do Bispo, Padre Quinderé, and Dr. Gouveia among other exponents of the legendary popular culture of Ceará. As a result, the city council has come up with the idea of creating special days to celebrate this sense of humor. The FESTIVAL DE HUMOR CEARENSE – FHC (Ceará Comedy Festival) is an event scheduled to take place in August in the city of Iguatu. The creation of the FHC aims at integrating comedians from Ceará and stimulating their creativity by advertizing their work and, first and foremost, by recognizing their contribution to socio-cultural development in our state. It was clear that Ceará lacked a significant celebration day which would symbolize the exuberance of the local sense of humor. Why shouldn’t we pay a tribute to the epitome of ceará comedy, the great Chico Anysio? Our most talented comedian’s birthday was chosen as “Ceará Comedians’ Day” (12 April).

Pontos Turísticos Ponte dos Ingleses (Ponte Metálica): Construída em 1920, a Ponte dos Ingleses desempenhou importante papel como ponto de embarque e desembarque de passageiros e mercadorias, até meado da década de 40. Natural Attractions: Estação Ecotu­rística Parque das Andréas (Parque das Andréas Ecotouristic Station): people who visit Pacatuba never fail to fall in love with Parque das Andréas, or simply the waterfall “Bica das Andréas”, which is considered by many to be the main touristic asset in the region. It is an area of environmental preservation and ecological patrimony which preserves one of the most beautiful ecosystems in the Fortaleza Metropolitan Area.

Ecological trekking: the city offers several options of routes but the most important one is the Trilha Ecológica Serra da

Aratanha (Aratanha Hill Ecological Trek). It combines exquisitely beautiful landscapes such as the spring of Rio Cocó with a cultural-historic route. The site is visited by groups from all over the country and is run by the Associação de Condutores de Trilhas da Serra da Aratanha de Pacatuba (ACOTSAP) – Association of trekking guides of the Aratanha Hill, which was created in 2007 and develops projects in ecotourism.

HISTORICAL AND CULTURAL ATTRACTIONS: Portal do Turismo – Ar­te­sanato e Infor­ mações Turísticas: strategically located at the entrance to Pacatuba, on highway CE060, the Portal do Turismo aims at providing assistance not only to visitors, but to all those who pass by towards Serra da Aratanha and Maciço de Baturité. Besides operating as a tourist information center, the Portal is a way to boost local handicrafts through the exhibition and commercialization of the artisans’ works.

HISTORICAL BUILDINGS: Pacatuba, in addition to its luxurious natural landscape, was the second municipality in the state to completely set free its slaves and it still keeps its great colonial manors built in the 19th century. Such buildings are extant symbols of a time when coffee farms dominated Brazilian economy. The city does not possess yet any building protected by the national artistic and historic patrimony but it does possess great houses built between the end of the 18th century and the beginning of the 19th century.

ADVENTURE AND TURISM: Sky diving and paragliding: Ceará is not all about beaches.

The natural beauties of Pacatuba Hill come to the rescue of some wonderful contact with nature and adventure through the practice of sky diving and paragliding in the Monguba district, which is one of the most adequate places for such sports.

APOENA ECOPARK: The Apoena Ecopark is provided with a green area of over 70.000 square meters at the foot of the Pacatuba Hill. In addition to the trekking routes among typical vegetation crisscrossed by creeks and rivers, the park is equipped with facilities such as amphitheater, restaurant, shower rooms, water park, little farm, rock hut, airplaneshaped movie theater, labyrinth, and so on. It is open on Sundays from 9am to 5pm.

ATRATIVOS CULTURAIS E HISTÓRICOS Portal do Turismo – Artesanato e Informações Turísticas: Localizado estrategicamente na entrada da cidade de Pacatuba, às margens da Rodovia CE-060, o Portal de Turismo tem o objetivo de atender, não só aos visitantes do município, mas todos aqueles que passam em direção a Serra da Aratanha e ao Maciço de Baturité.

Além dessa perspectiva de funcionar como Centro de Informações Turísticas, o Portal é uma forma de incentivo ao artesanato local, com a exposição do trabalho dos artesãos e sua comercialização.

Prédios Históricos Pacatuba, além de possuir rica paisagem natural, foi o segundo município do Estado do Ceará a libertar totalmente seus escravos e mantém preservados os casarões coloniais do século XIX, símbolos vivos do período em que a cultura do café dominou a economia brasileira. A cidade ainda não possui bens tombados pelo Instituto do Patrimônio Histórico e Artístico Nacional, porém possui casarões que foram construídos entre o final do século XVIII e início do século XIX. AVENTURA E TURISMO Prática de Vôo Livre – Parapente: Quem pensa que só de praia vive o Ceará está enganado. As belezas naturais da Serra de Pacatuba resgatam um maravilhoso contato com a natureza e também com a aventura, através da prática de vôo livre - parapente, realizada no distrito de Monguba, um dos lugares mais propícios para tal esporte.

APOENA ECOPARK O Apoena Ecopark dispõe de uma área de mais de 70.000m2 de muito verde, ao pé da Serra de Pacatuba. Além das trilhas em meio a uma vegetação serrana, cortadas por riachos, conta com uma grande estrutura, que dispõe de espaços como anfiteatro, restaurante, vestiários, mini parque aquático, fazendinha, casa de pedra, avião cinema, labirinto, arvorismo, entre outros. Pedra Furada, uma das maiores atrações da Vila de Jericoacoara, é uma rocha com, aproximadamente, cinco metros de altura, com um grande buraco esculpido pela ação da natureza. No mês de julho é possível assistir ao sol se pondo “dentro” do buraco da pedra. Fica a 30 minutos de caminhada, a partir da Praia de Jericoacoara (seguindo à direita), proporcionando um grande espetáculo. O caminho pela praia deve ser feito sempre com a maré baixa, pois durante a maré cheia, é preciso escalar as dunas. No caminho, mergulhe na Praia Malhada e faça amizade com os nativos que encontrar por ali, eles podem lhe mostrar outras formações rochosas interessantes na área, como as grutas e as pedras do Jacaré e da Tartaruga.

Jericoacoara ou simplesmente Jeri, localizada a aproximadamente 300km de Fortaleza, é um santuário ecológico. Em 1984 tornou-se Área de Proteção Ambiental (APA), conservando praticamente intocada sua beleza natural. Gigantescas dunas móveis, coqueirais, lagoas de águas cristalinas, manguezais, cavernas, praias de enseada e de oceano, misturam aspectos do sertão e da costa litorânea nessa antiga aldeia de pescadores. A partir de 2002, Jericoacoara virou Parque Nacional.

Um lugar especial: A energia elétrica se restringe a uma rede subterrânea que alimenta toda a Vila. Não há postes nas ruas, somente a luz da lua e das residências e estabelecimentos comerciais, tornando, assim, o céu ainda mais belo. O contato com a natureza é extremamente intenso e faz você esquecer o resto do mundo. Tudo é muito simples e amplo, dando uma sensação de liberdade indescritível.

Jericoacoara. The Pedra Furada (the pierced rock), one of the major attractions in the Jericoacoara Village, is a rock approximately 5 meters tall with a big hole in the middle carved up by the hands of nature.

In July it is possible to watch the sun set through the hole in the rock. It is a thirtyminute walk from the Jericoacoara Beach to the right and it provides visitors with a great spectacle. The stroll along the beach must be done at low ebb. When the tide is high one needs to climb up the dunes. On the way, go for a swim in the Praia Molhada and make friends with the local people you happen to find along the way. They might just show you other interesting rock formations in the area such as the Poço da Princesa caves and the Jacaré and Tartaruga rocks.

Jericoacoara, or simply Jeri, approximately 300 km away from Fortaleza, is an ecological sanctuary. In 1984, it became an area of environmental protection and since then it has kept its natural beauty virtually untouched. Gigantic moving dunes, groves of coconut trees, crystal-clear water lakes, swamps, caves, harbors and the immense Atlantic Ocean mix aspects of country and beach life in this old fishing village. In 2002, Jericoacoara became a national park.

A Special Place: electrical power is restricted to an underground network which feeds the whole village. There are no poles holding wires or lamps on the streets.

Light is provided by the moon and the houses and shops, which makes the sky even more beautiful. Contact with nature is extremely intense and makes you forget about the world. Everything is simpler and larger and the feeling of freedom is amazing.

Windsurf: without any natural obstacles to lessen their strength, the winds hit Jericoacoara directily and that makes this fishing village a most wanted destination in Brazil for the practice of sports which depend on the wind. Jericoacoara is one of the best places in Brazil for strong winds. Fortaleza is already known for its strong trade winds which come from the African continent, but Jericoacoara really stands out. The main reason is the degree of inclination of its coast and its geographic location, which allows the wind to blow parallel to the beach and hitting Jericoacoara directly without losing strength and without coming across any natural obstacles on land. The waves in Jericoacoara are rarely taller than 2 meters, but combined with the strong wind they function as catapults. A real spectacle for windsurfers.

It is possible to practice windsurfing in any spot of the Jericoacoara beach, as far as the Guriú River to the east which marks the end of the preservation area, 10 km away from Jericoacoara. Guriú provides one with some sensationally fast windsurfing due to the meeting point of river and ocean waters.

Windsurf: Sem nenhum obstáculo natural para diminuir sua força, os ventos atingem Jericoacoara em cheio, tornando a vila de pescadores um dos lugares mais procurados do Brasil para a prática de esportes que dependem de ar em movimento.

Jericoacoara é um dos melhores lugares no Brasil para ter ventos fortes. Fortaleza já é conhecida por ser um lugar de ventos fortes, pois recebe os alísios - trade winds - que sopram do continente africano, mas Jericoacoara realmente se destaca.

A principal razão é a inclinação da sua costa e sua localização geográfica, que permite aos ventos passarem paralelos à praia, atingindo, em cheio, Jericoacoara, sem diminuir suas forças e não encontram os obstáculos naturais do continente nos demais trechos do litoral. As ondas de Jericoacoara raramente passam dos 2 metros, mas combinadas com o vento forte funcionam como uma catapulta.

Um verdadeiro show para quem pratica windsurf. É possível praticar windsurf em qualquer ponto da praia de Jeri, até o braço do Rio (Barra) Guriú, para o lado oeste, que marca o limite da APA, a cerca de 10km de Jericoacoara. Guriú proporciona um velejo sensacional, porque existe o encontro das águas do rio com o mar, aumentando a velocidade do velejo.
