Paying Cash Doesn’t Make It Smart Dear Dave,

Did Dad Do Her Wrong? Dear Dave

What is your opinion on paying cash for a “tiny house”?

My father loaned my husband and I money 20 years ago to help us start a business. The business eventually failed, and it

Wes

forced us into bankruptcy. After this, we never seemed to get

Dear Wes,

around to paying him back. He died earlier this year, and when

This may be a really un-hip or un-cool thing to say, but I wouldn’t buy a tiny house at all. Paying cash for something like that might make the mover smarter, but that still doesn’t mean it’s a smart choice. Now, don’t take what I’m saying the wrong way. I don’t have a problem with people who build tiny houses or buy them. My problem with these things is that there’s no track record on them. There’s also a pretty good chance they’re going to be just a fad. Another problem is that you’d have a really small market when it comes time to sell your tiny house. In other words, they probably won’t go up in value like a traditional home. They may actually lose value over the years. There’s a thing in economics called the supply-demand curve, and from what I’ve seen tiny houses also have a tiny demand and pretty narrow market appeal. Their appeal seems to be mostly for early adopters and people who think they’ll never be able to afford a house. That means they’re not going to have broad appeal when you get ready to sell them, either. And that creates a problem. I could be wrong, though. I mean, if enough people buy tiny houses and they become a real part of our culture, then maybe they’ll do okay. But right now it’s an unproven product line and an unproven concept. So I wouldn’t buy a tiny house. Honestly, I wouldn’t even buy one at half of its current value because I’d be afraid it would drop to a fourth of its value. There’s just no

we got together with my brother and sister for the reading of the will, we realized he had deducted the amount of the loan from my inheritance. Everything was equal between us before that. I think that’s wrong. What’s your opinion? Karen

Dear Karen, I’m really sorry about your dad. I’m also sorry this was never taken care of or discussed while he was still alive. There are a lot of emotions at play, so I don’t want to beat you up too much. But legally, he didn’t have to leave you anything in his estate. The stuff we’re talking about, money included, was his to do with as he saw fit. It was a little odd that he didn’t address this with you beforehand, but there are lots of instances where kids get nothing from an estate or not as much as others. It’s not uncommon. In my mind, and, from the sound of it, his too, he left you an equal share minus what you still owed. He loaned you the money, and he had the right to set terms on that. I understand your frustration. You feel like he took something away that was yours. My point is it was never yours; it was his. I know it still hurts though. This is one of the reasons I advise never borrowing money from, or loaning it to, relatives. The best

proven record at this point of these things going up in value.

` Tips Resume

How to Describe a Front Desk Job

One of the hardest parts of crafting a resume is describing the jobs you have held. Describing what you do every day may not seem difficult, but condensing the essence of the position into a couple of bullet points can be a real challenge. This task can seem even more daunting if your current position includes manning the front desk. Employers may be dismissive of receptionist jobs, especially if the worker is seeking a higher position. How you describe that front desk work on your resume can make the difference between being called for an interview and simply being discarded out of hand. One thing that many employers fail to realize is that the job of the receptionist and front desk person has changed a great deal in recent years. While the job may still include answering the telephone and signing for packages, there is also a strong security component inherent in the position. Focusing on that aspect of the job can give it the weight and gravity needed to make it through the resume screening process. Focusing your resume on how the front desk position is used to ensure the security of the building is a smart move, especially if you have received special training about security threats. When you craft your resume, think back to the mandatory training courses you have had to take in the course of your employment. Include any security and building defense training on the resume, and focus on how your job is an invaluable part of keeping the building secure. Beyond the security aspects inherent in a front desk job, there are also a number of skills that transfer well to other parts of the office. Chances are your front desk job entailed at least some computer work, and listing the software packages you used can also bring your resume to the top of the stack. Be sure to include not only mainstream products like Microsoft Word and Excel, but also specialty products your company used. You never know when a company will be looking for an expert in a particular type of software, and including it on your resume can be a wise move.

32

AUGUST 26, 2016

Once you have your basic resume format in place, it is important to tailor the document to each job you apply for. Each job opening will have a different focus and a different set of qualifications. Including a list of the qualifications you hold will improve the chances that your resume makes it through any automated screening process the company has in place. Including the keywords used in the job ad also increases your odds of being called for an interview. It is easy to edit your resume in a flash, so there is no reason to sell yourself short. Whether you are applying for another front desk position or something more, how you present yourself can make all the VOL. 21 ISSUE 1054 difference in the world.

“Take This and

JOBShove IT” S

is a Country Song...

ometimes it’s an easy choice to leave a company. However, one of the most important choices that you can make in your career is to leave your current employer in the right way. Like any other relationship, there are faults and virtues with every company. At the end of a relationship, people tend to focus on the faults. BREAKING UP IS HARD TO DO When you leave a company, it is like breaking up with a boyfriend or girlfriend. Regardless of how you do it, there will still be emotions. The longer the relationship, the deeper the feelings. Keep this in mind during the separation. People express their emotions in different ways so be prepared to respond with compassion. IT’S A SMALL WORLD I’ve learned first hand not to burn bridges. In fact, I was hired by my former boss within two years of leaving the company. He had moved onto a bigger job with another company and thought of me when a position came open in his department. Since we already had a great relationship, the interview process was both short and painless. Also, the job was a significant step up for me both professionally and financially.

AUGUST 26, 2016

TO DO OR NOT TO DO? Here are a few do’s and don’ts that may help make the transition a little easier for everyone. DO write and give a simple resignation letter to your immediate boss and, perhaps, your Human Resources Director, if appropriate. By putting a few key items in writing, it memorializes your intention to leave the company. It also gives you a chance to pre-play the discussion with your boss. The letter should include the following: your last day on the job, open items that you need to complete prior to leaving, and any work that you will need to pass off to someone else. DON’T say anything negative about the company or anyone working for the company. While this is a good policy to employ at all times, it is even more critical when you are leaving. Disgruntled employees may seek you out during this time to air their negative feelings about the company or people working for the company. Resist the temptation to entertain these conversations. It is likely that your comments will be shared with others. DO give as much advance notice as possible to allow for a smooth transition. Typically, this is two to four weeks. Use your best judgment to decide how long you will need to give keeping in mind VOL. 21 ISSUE 1054

what’s best for the company. Be aware that is also possible that the company will ask you to leave immediately, especially if you’re going to work for a competitor. This is nothing personal and should not be considered an insult. DO work hard until you leave. It’s perfectly natural to get “shorttimer’s disease” as you have already mentally moved onto the new position. Whether discussing movies, books, or relationships; people generally remember the beginning and end more than the middle. DON’T take anything that is not yours. Whether it’s a stapler, a book that belongs to the company, copy paper, or paper clips; leave them behind. While you’re at it, tidy up a bit. DO make yourself available for your replacement. If the company hires your replacement before you leave, offer to train them. Even after you have departed, it’s a good idea to leave a phone number where you can be reach with times that it is acceptable to call. DON’T abuse e-mail, the telephone, or the internet during your last days. Be sure to keep your communication as professional as you have during your tenure. There’s no reason that you still can’t be friends when it’s over. If you are careful to maintain a good reputation with the company, their suppliers, their customers, and employees; it will pay off considerably. It may not happen right away, but your paths will cross again. Jane Anderson is a Certified Career and Executive Coach based in Brisbane Australia. Cook Up a

New Career

People are becoming more aware of the role of nutrition in overall health, thanks to health education initiatives that begin even before children start elementary school. From preschool to retirement communities, people want food that is as nutritious as it is delicious. Crafting appetizing dishes, creating balanced menus, and informing the public about food can be rewarding to the palate and the wallet. Consider the following options for a rewarding career in the culinary arts.

Cook:

Chef/ Head Cook:

Professional kitchens often use multiple cooks; at the finest restaurants, there can be a strict hierarchy dictating who can prepare which foods. You can work your way up without a culinary degree, but with one, you’ll have the skills to prepare anything the kitchen serves, especially in the growing number of vegetarian, vegan, and organic restaurants. Any cook can make a standard roux, but it takes special skills when the customer needs a gluten-free sauce. The median hourly wage for cooks in 2012 was just under $10.00, but minimum wage increases in several cities and states during 2014 and 2015 may change what cooks earn in the future.

The word “chef” is related to the word “chief”, and the chef is the chief cook of the kitchen. Some chefs work alone. Many supervise the work of several cooks that work under them, plan menus, track kitchen inventory, and are ultimately responsible for each dish that leaves the kitchen. While a conventional culinary training may serve most chefs well, with growing awareness of the calorie counts in restaurant meals, many chains and individual restaurants will need chefs who can cut fat, salt and sugar from their menus without sacrificing taste or appearance. Many chefs get their start as cooks under a chef, but with a degree, you may have a head start. The median hourly pay for chefs was $20.42 in 2012.

46

AUGUST 26, 2016

VOL. 21 ISSUE 1054

Food Service Managers: They fulfill the administrative functions of a chef in larger facilities, including schools and chain restaurants. They oversee cooks, evaluate the dining experience, track and order inventory. With The Healthy, Hunger-Free Kids Act , school districts across the country are looking for food service managers who can provide the nutrition-packed and kid-friendly meals the law pushes to make available to all children. The hourly median pay for food service managers was $23.06 in 2012. Food service managers often reach their positions through years of service in the kitchen, but a degree will give you skills that many cooks spend years trying to acquire in addition to mastering cooking skills.

Food consultants

often have experience as chefs or food service managers. They fulfill some of the functions of a food service manager, but in a temporary capacity. They may advise chefs, business owners, or food service managers about improving the menu, efficiency, or overall dining experience. As a food consultant, your skills will be in great demand as you will be able to advise a bakery trying to accommodate customers with food allergies, or a luxury hotel looking to create a diet-friendly menu in keeping with their five-star rating. As consultants are often self-employed, their pay rates vary widely. But food consultants with a degree and experience can command higher rates than those entering the field without a degree.

Food writers

have the most appetizing jobs in the newsroom. They write restaurant reviews, articles about new food trends, cookbooks, and culinary histories. Food writers are able to craft recipes that pack a powerful nutritional punch, advise on cooking substitutions, and create meal plans for those looking to lose weight or manage a chronic health condition. You’ll be able to write for publications devoted to those with allergies, diabetes, or other conditions that require a restricted diet, in addition to conventional lifestyle and food publications. Food writers often have professional experience in the kitchen, and may have a degree in English or in culinary studies. As many writers, including food writers, are self-employed, pay varies widely, but the hourly median wage for writers in 2012 was $26.89 per hour.

If you’ve been watching competitive cooking shows thinking, “I can do that,” the kitchen is a second home to many of the world’s great artists. Most chefs won’t become celebrities, but many spend decades inspiring the love of food in all who sit at their tables. Food writers can evoke the flavors of a summer in Tuscany or a brisk New England winter for their readers. What are you waiting for? Tie on an apron and cook up a new career!

HOW TO EARN

More Tips AS A WAITER OR WAITRESS

Getting great tips may feel like it comes down to the mood of the table, but in reality the amount of tips you earn is entirely up to you. Getting higher tips, on average, is all about having good customer service skills. If you can keep a smile on, learn the menu, and remember that “the customer always comes first,” you’ll quickly increase your tip income.

BEING THE BEST SERVER Assist guests before they even get to your tables. Opening the door and greeting a guest also gives you a chance to check them in with the hostess. Knowing and using a guest’s name is an important first step in creating a valuable repeat customer who may request your station when they return, and they usually tip much higher. This might not be possible on busy shifts. That said, you can still help your guests by having waters ready and at the table, for example, right before they sit down.[1] Checking in quickly to say “hello” or “welcome, as they sit down is a quick, small way to make a connection before the meal begins.[2] Anticipate your guest’s needs. If your table orders fries, you might be wise to bring ketchup (these are often called pre-sets VOL. 21 ISSUE 1054messy food, bring extra napor pre-drops). If your table orders

kins. Be a great waiter and anticipate their needs, don’t make them ask. Keep an eye on the table whenever you pass by, and make a mental note of any pressing needs -- empty water glasses, dropped forks, etc. -- and step in when needed. Do not pester your guests. Checking on them verbally every time you visit your section may backfire and become irritating. Your guest will let you know if they need anything when you are walking through. Providing refills, napkins, etc. will ensure that the only thing they should ask you for is the check. There is a fine line between anticipating needs and annoying your guests. To help, imagine that your guests are always in the middle of a very important conversation. They don’t want this conversation to be broken up or interrupted unless completely necessary. Refilling waters quietly, placing silverware, etc. are fine, but stopping them to ask “if they need anything?” every 5 minutes will quickly grow old. Make yourself seem approachable when taking orders. People will have questions, want to make substitutions, and may even want recommendations. When taking orders, stand close to the table, and even consider crouching slightly so that you’re nearer to eye-level. In some studies the closer a waiter gets to the table, the higher their tips became. Ask kids and women for their orders first. This26,is2016 basic,51but AUGUST

waiters and waitresses miss it. When you hurt either.[3] follow this basic cultural rule you will be amazed how the tips just seem to roll in. This also shows lets them feel like they are being paid attention to, and assures them that they will be taken care. Never let their drinks run out. This is so basic, but when not done well it can really hurt you financially. If you know they suck those things down, you might consider bringing them two at once. Don’t feel the need to ask them for refills: if it gets low, bring another. When the whole table orders water, bringing extra doesn’t

Look good and smell nice. Take some time to get presentable before arriving to work. A dirty waiter or waitress is unpleasant to look at and reflects poorly on you and the restaurant. Wash your apron and uniform, and make an effort to wear nice clothes when at work. You cannot earn your tips alone, and a chef with a grudge could always wait a little longer to cook your food if you’ve been rude to them. As a result, your table will be left to wait, and they’ll likely pay you less in tips as a result. This is not just for restaurants where the entire staff splits tips. You should always be kind, courteous, and helpful with your staff -- as neither of you would have jobs without the other.

MAKING A CONNECTION WITH CUSTOMERS

52

Fall in love with your job. When you truly love being a server, it shows. You will become infectious with your good attitude and earn larger tips. People are proven to tip higher when they feel a social connection with their server, as if they could be friends. The best way to cultivate this attitude is to enjoy your work and interactions with others. AUGUST 26, 2016

A big, open-lipped smile can increase tips up to 140%.[4]

Introduce yourself. In order to build connections with customers, and thus increase your tips, be sure to let the table know your name. When you arrive, say hello and let them know your name before launching into the specials. Waitstaff who introduced themselves earned roughly $2 more per bill.[7] If the table offers you their names, be sure to remember them and use them. The best way to do this is when you get the check. When returning a credit or debit card, be sure to thank the name on the card when handing over the check -- it’s been shown to increase tips.[8] Give the customers a little something extra, like a mint or simple drawing. When people feel treated or gifted upon, they generally try to “pay back” the person being generous to them. Even writing a simple “Thank You” on the back of a check was shown to increase tips, and simple smiley faces and pictures help as well.[9] Being kind and generous during the meal can create the same effect. If someone spills something, or an order doesn’t come out perfectly, you should offer to rectify the situation for them as best you can. VOL. 21 ISSUE 1054

Tips:

• Having a positive attitude is everything, so always keep a smile when on the job. • Look your customers in the eyes when they are speaking and focus on what is being said as well as how they are saying it. • Add a little flair to your personality to make sure the guests remember you • Be friendly. When you come out and introduce yourself, always smile and be nice. • If there are kids there, tell them jokes and interact with them. If your restaurant gives away things like balloons or other merchandise, make sure that they get one! • If there are more than three or more, serve from left to right. If there are only two, serve the lady or child first. • Make lots of suggestions, and reinforce their meal decisions. Learn to turn tables over. This is especially crucial when it is busy or the restaurant is filling up. While you should always be kind and courteous, you want people to eat, pay, and move on so that you can get a new table, and thus a new tip. To do this, come collect the dishes once everyone has finished eating, and ask about further courses (like dessert) instead of waiting for them to ask you.[10]

food. They can offer you great little bits of information, such as drink pairings and where ingredients come from, that will make you seem all the more knowledgeable.

example, it might cost extra to get cheese on a hamburger -- but you don’t need to explain that. When someone orders a burger, simply ask, “and you’d like cheese on that?”

Sell more food. When you have higher check totals you get bigger tips. Offer appetizers, drinks and deserts by name. Use enticing and descriptive words like rich, creamy, smooth, spicy, etc. Offer your guest an after dinner espresso or capENCOURAGING puccino. This may be less productive for you during busy shifts. Adding $5 to a bill results in a small bump in tips, but getting a whole new group to sit down and spend $55 on dinner will result in higher tips overall.[13] Manicure the table as people eat. When the beverage napkins get soggy, replace them. When they are finished with dishes, take them away. If they make a mess, politely help them clean it. People feel better in a clean, tidy environment, and are more likely to get more food if they don’t see the scraps from their last course. If a dish is empty, politely ask if you can take it for them. Do not, however, take plates from anyone if someone is still eating. This makes the people still eating feel rushed. Get rid of small things quietly and efficiently. Try and sweep by and avoid distracting the group from their discussion as much as possible.
