AN IDEOLOGY OF PRADA A fascination with and reflection of humanity is a fundamental principle of Prada. The Fall/Winter 2022 collection by Miuccia Prada and Raf Simons is a commemoration of life and living - of the occasion of the everyday, affording importance to each moment. Glimpses of tradition reflect histories of people, memories of lives, valued. Tradition passes culture between generations - a conduit from the past to now. Mnemonics, recollections and quotations evoke fragments of personal narratives, comprising a history, a history of women. Pragmatic pieces are given new emphasis and significance, tailoring combined with the language of evening clothes. Combinations of the quotidian and precious disturb the aesthetic vernacular of each. They simultaneously confer significance and emphasize reality, a fusion. Colliding traditions in unexpected manners, an inversion

and

challenge

of

materials,

of

embroideries, and of garments, agitate and disturb. Conventionally masculine pieces are transformed, interrupted with the feminine: coats are carved out at the neck or back. The architecture of clothes affect their rapport with the body. Tailoring construction applied to soft dresses to give new forms. History is universal. Within, inevitably, there is an archeology

To a restaurant owner, that formula for “success” looks more like a linear algebra equation on a chalkboard at Harvard. That is to say, the amount of variables that must be taken into consideration to become a lasting, respected, venerated eatery adored by diners, neighbors, families, businesses, and friends for generations to come can be dizzying. From linens, to uniforms, to pops of colors, to subtle touches of art on the walls, to the quality of the ingredients, produce and proteins, to the combined personality of an entire front and back-of-house staff, launching a successful culinary enterprise becomes a truly mind-bending experiment in multitasking and management. We both wanted to create a restaurant that didn’t look like any other, one that oozed class and appeared timeless,” says Gough. “The restaurant is visually stunning and we carefully procure all other elements, such as plateware, uniforms, and linen to complement that design. At the end of the day, you can dine at the most beautiful restaurant—but if your food takes forever, what’s the point?” To say Ciaran, Todd, and Juan Carlos have raised the bar when it comes to creating a dining event that caters to both the self-proclaimed foodie as well as the armchair architect would be an understatement. But, there’s another deep-rooted undertone driving the Goldfinch culture—a simple concept that still remains elusive for many. That concept? “Be nice.” “You can’t force restaurant culture so you need to create one,” says Gough. “Our one guiding principle is ‘be nice’—both to our guests and to each other. This exists whether in the front-of-house or in the kitchen as we see no divide. If we can take a step back, understand that our goal is to generate a memorable and positive environment not only for guests but also for our staff, then we’ve successfully created a positive culture—and that’s the true definition of ‘success.’” While The Goldfinch has yet to open its doors to the waiting throngs of diners eager to explore Ciaran, Todd, and Juan Carlos’ new brainchild, it’s still dialed in a few key menu items sure to be on the menu opening day including the furikake crusted sea bass served with shitake mushrooms, spinach, sweet potato vermicelli noodles in a dashi cream sauce with togarashi aioli, as well as the Hamachi crudo with lemon ponzu and Serrano peppers. Other items include a short rib braised for eight hours in a burgundy sauce with garlic thyme mashed potatoes, roasted carrots, and grilled asparagus; and a maple-glazed double pork chop with bourbon glaze, garlic thyme mashed potatoes, Brussels sprouts, and grilled onions.


“There’s a certain poetry to not being a chain. We spent endless hours eating at and observing local establishments,” says Gough. “Some of our guiding principles are simple—create a restaurant that you would want to frequent. It takes a certain kind of determination to become an elite agent. What drew you into real estate and how have you evolved over your career? I was initially drawn into real estate by my own personal experiences in the industry prior to becoming a realtor. I’ve been through the home buying process twice as a homeowner and twice as a rental property owner in Cleveland, where I’m from. I’ve evolved over my career by participating in fluctuating markets and managing challenging transactions that have sharpened my professionalism and skillset. The networking connections I’ve made along the way have created amazing opportunities for me professionally. You’re known for your above-and-beyond white-glove service. What do you love best about helping your clients achieve their real estate goals? My favorite part about working with clients is knowing they’re leaning on me for guidance and sound advice. I also value the learning opportunities that come along with working with each and every client! It’s a hot seller’s market in SoCal and it’s showing no signs of slowing down. What can homeowners do to not only take advantage of the market but also enhance the value of their home? I think the current market allows for homeowners to start thinking outside the box and get creative. If you can get top dollar and walk away with a ton of equity, then consider downsizing into a smaller home so you can put a substantial amount down on it and invest your remaining earnings in rental investment property. “Cuisine shouldn’t be labeled,” remarks Elshani. “If you labeled our spinach artichoke dip as vegan, certain people may never experience how delicious that dip is. It’s all about the flavor—not the label.” And that’s what makes d’Alba so unique—its ability to cater to everyone without everyone knowing they’re being catered to. By focusing on flavor—not trends or restrictions—d’Alba offers diners an outlaw version of what a menu can do. “I get excited about all our dishes and not very many restaurateurs can say that,” says Elshani. “There’s a fine balance between business and menu—but we don’t make sacrifices. So, what was on the menu, yesterday? How about seared skate with escargot, fingerling potatoes, and Pernod. Tuna crudo with melon, nuoc cham, crispy eggplant, and purple basil. Beef tartare with pickled beets, whipped lardo, quail egg, and Russian spices. Ricotta pierogi, braised lamb neck, caramelized onion, and rosemary. No matter when you visit, there’s always something new and unique to experience born from Chef Andrew’s deep astral cognizance each time you step through the door at Stanbury—which is why coming back time and time again is so easy. that give the establishment life. What is it about Raleigh and your team that makes Stanbury so rewarding to diners? I think everyone at Stanbury is passionate about what they do and that trickles down from the owners as well—so we definitely look for that passion when we hire. Our system has never been too hierarchical and there’s never been too many rules. We treat everyone with respect and there’s a cohesion born through all of this. The setting is almost anarchistic, but it works. Everyone pulls their own weight, but if they can’t, someone has their back. As many industry people know, there’s a family vibe working in a restaurant, and I think our love for each other is palpable to the guests. We get a fire going outside for folks to hang out around each night. We like to go all out, whether it’s covering the place with hundreds of mini Santas and nutcrackers around the holidays, or trashingup the place with thousands of beads shipped from New Orleans for Mardi Gras and covering a seven-foot alligator—not real. We’re always different and always changing—and we’re truly concerned that people enjoy themselves and are comfortable. Sometimes it feels like running a restaurant is constantly checking the thermostat. For many chefs, the menu isn’t just about the flavors—it’s about a cultural or emotional connectivity to the ingredients. Where do you source your inspiration from when it comes to creating your dishes? Inspiration comes from everywhere. I studied anthropology and traveled a lot through Mexico and Central America, so that obviously sparked a love for Hispanic foods. But when it comes to understanding people’s relationship with food and their ingredients— that’s rooted in a deep curiosity of other cultures. I always dreamt of traveling as a kid, and I guess cooking is a form of travel. I love the idea that there’s a finite amount of ingredients—but the ways of putting them together is infinite. What I’m doing is constantly looking for highlights out there in the world—new experiences, new dopamine bombs. I try to figure out the foundations of the food and dishes and then distill that into something I can share with our guests, ultimately paying homage to all the awesome foods out there. You source all of your proteins and produce locally to create one of the most eccentric revolving menus in the region. When looking at the ingredients you have available, how do you connect the dots to create harmonious dishes? Seasonality, more or less, sets the foundation for our menu. Ingredients change throughout the year, so it definitely dictates the playing field. What changes is the way we put ingredients together and that’s constantly in flux based on what we’re stoked about and the background each cook brings with them. Recently I’ve been craving cheesy things and have been wanting to put something on the menu but couldn’t think of anything. Then, I ate at a Venezuelan

food truck and had cachapas for the first time, and now I’m on a mission to figure out how to make them. I’m sure they’ll be on the menu soon. Covid happened and I was cooking at home more and I had time to experiment—so I decided to delve into Indian dishes. I was always intimidated by the cuisine because it’s so complex and uses ingredients I’m not super familiar with. Plus the techniques are different than the French ones I learned. But after a couple years of messing around, I now feel pretty good about putting dal makhani with striped bass on the menu. I guess ingredients and techniques are similar to a painter’s palette—the more you learn, the more color you have to paint with. The Stanbury aesthetic is truly unique. location, Stanbury sets itself apart the minute you arrive. How do you create an atmosphere that combines an upmarket culinary experience with an artful and inviting environment? The cool thing about Stanbury is how organic its conception and evolution has been. We didn’t go into it with a vision, other than throwing the best party in town. I think because we were never tied to anything, from food to decor, we’ve been able to experiment as much as we want—no rules, no obstacles. I’ve been cooking awhile, but my partners have zero experience in restaurants. I think that’s ultimately beneficial because we can approach everything with a fresh perspective. Let’s talk wine and cocktails. What goes into curating your selection and what are some of your favorite staples on the lists? Our wine list comes from small producers who have a story and they tend to focus on natural and biodynamic wines. I’ve always loved Italian reds because of their balance of acid and tannins. We have lots of French whites. Austria and Germany get a good amount of play. We definitely emphasize old world wines with a focus on being delicious with food. What was your favorite meal to eat and/or cook growing up? I was cooking eggs at age 3 and breakfast in bed for my mom at 5— pretty wild—there’s pictures to prove it! I was always fascinated with cooking—it seemed as if I had my very own chemistry lab at home in the kitchen, with the added benefit of eating the food and making people happy with the experiments.

ceviche. I worked on a yacht for awhile down in Belize and San Blas, Panama. It was probably the best I felt in my entire life. I wore nothing but a bathing suit for 3 months and got drenched with sun all day long. We more-or-less sustained ourselves with the fish we caught. There was always a Tupperware bowl of ceviche in the fridge and it had to be eaten standing over the sink with a spoon in hand. There’s something about the acid and crunch and chill and chew of the fish. Man, for whatever reason, every time I ate it I knew there was never anything else I should’ve been eating. Maybe there’s a metaphysical connection, surrounded by ocean and marine life—but I think there’s some harmony and connection in eating like that forever. I always asked for pot roast as a kid for my birthday dinner—I’m from Findlay, Ohio, so I guess you can’t take the Midwest out of me. I was stoked on chicken cordon bleu for awhile. Beef Wellington. I think because I was constantly looking for new things, my tastes were constantly changing. Being a vegetarian from 13 to 20 years old forced me to try new things, which I’m glad for, because I love beans, and mushrooms, and tomatoes now. My best friend’s mother was an awesome cook. I learned a lot from her and remember watching Julia Child and other great chefs with her on PBS. She made something called Johnny Marzetti that I was always mad stoked about—essentially spaghetti with bolognese and a shit-ton of Kraft Parmesan in it! My mom went through a Chinese phase for awhile. We’d fry egg rolls, make sweet and sour chicken and lo mein. I thought this was magic. You’re stranded on a desert island and can only eat one meal everyday for the rest of your life. What is it and/or where is it from? I feel like it’d be easy and maybe cheating to say something like “sandwiches or tacos,” two things I adore. They’re both awesome and incredibly versatile. Noodles would be on the top of the list too. If I’m actually on an island surrounded by the ocean, I think I’d have to pick

Due to the nature of Zoom video conferencing and what feels like the ongoing stress of the pandemic, most patients are spending a LOT more time looking at their faces. This causes them to fixate on things that may not have bothered them as much in the past. I frequently get the complaint of “I feel like I look tired all the time.” We have a lot of different treatments to combat the tired look. Whether it’s rejuvenating the face with filler, softening the crows feet around the eyes with Botox, or using a serum that helps “de-puff” the eye, doing just a few tweaks here and there can make all the difference for the “tired” look. There’s a ton of misinformation out there regarding a healthy skincare regimen because, let’s face it, skincare products are big business. From a clinical standpoint, what are a few things we can do each day to keep our skin healthy from head to toe? Always do your research. Make sure to consult with a licensed and trained professional and not the spokesperson or influencer selling to you. Always invest in medical grade skincare—it will pay off in the long run. A few things to do to keep your skin healthy include cleansing your face morning and night—I use ZO Skin Health Exfoliating Cleanser—as well as combating the oil on your face with a good toner that has ingredients such as salicylic and glycolic acid like ZO Skin Health Complexion Renewal Pads, exfoliating the dead skin with ZO Skin Health Exfoliating Polish, and using an appropriate skin stimulator such as a Tretinoin or retinol. Unfortunately, the puffy eye is a little more involved than one might think. I end up referring a lot of patients to my plastic surgeons, Dr. Kosins and Dr. Mowlds. So please don’t be offended if your nurse refers you to surgery—be thankful. In the long run I’m saving you a lot of unnecessary and ineffective treatments and money. As our society spends more and more time staring at screens, blue light is having a greater negative impact on our skin. What are some tips to keep the effects of blue light at bay while we continue to navigate the “Zoom meetings that could have been emails” reality? I educate patients on the importance of wearing sunscreen daily even if they’re spending their day indoors. I always encourage my patients to wear broad spectrum sunscreen due to the UVA rays that penetrate glass as well as the blue light from a computer. Using ZO Skin Health Sunscreen Triple Spectrum Protection shields the skin from harmful UVA and UVB rays, HEV light, IR-A rays, and pollution. All of these rays contribute to aging your skin so use your sunblock every day and make sure to reapply every two hours when outside. Botox is always my first line of defense. The eyes are the window to your soul— they’re the first thing people look at when they see your face and they’re also one of the first things to show your age. It’s really hard to only pick one because each product plays a big role in overall skin health. The three most important skincare products for me are Tretinoin, broad spectrum sunscreen, and a cleanser. Everyone should be cleansing their face properly, and preferably using a cleanser with alpha hydroxy acid. Cleansing your face sounds basic but it’s one of the most important components to overall skin health. You’re traveling to Jamaica for a two week vacay in the middle of July. That means epic sun, epic heat, epic waves, and epic rain. What’s in your toiletry bag? When I’m traveling, I switch to a moderate skincare routine focused more on antioxidants such as ZO daily power defense and ZO 10% Vitamin C. Adding more antioxidants to my routine gives me added protection while I’m in sunny tropical environments. Aidan Butler and the team at 1/ST RACING are reimagining horseracing for a new generation.

“Chief Operating Officer.” The title alone generates a distinct image and definition within us. You know who that person is. You know the way they speak, you know what their motivating factors are. You know how they dress, where they eat—where they vacation. Aidan Butler is not that COO. In fact, calling Aidan Butler COO of 1/ST RACING—part of horseracing’s most innovative and progressive group of companies—is almost an insult. You don’t see too many COO’s at the racetrack before dawn lovingly tending to his seven horses. You don’t see many COO’s coming home covered in horse chips after a long day of racetrack operations. You don’t see many COO’s who come from a long line of bookmakers in Birmingham, England shaking up the U.S. horseracing world from Miami to L.A. And you certainly don’t see many COO’s with the passion Aidan holds for one of the world’s most exciting and beautiful sports. Since its inception, 1/ST has had a singular vision—to bring the majesty, excitement, luxury, entertainment, and wagering of horseracing to the modern audience with an emphasis on elevating the customer experience. But in order to do that, Chairman, CEO, and President Belinda Stronach and her team at 1/ST had to change the industry from the inside out. That meant new safety protocols for horses and jockeys, a new commitment to the stakeholders in the industry, a new understanding between track and personnel, and a new relationship between track and customer. So, when Aidan arrived at 1/ST RACING to usher in the new look, feel, and experience of modern horseracing in America, he took the reins, dug his heels into the mud, and created a new breed of the sport destined to capture the hearts of all who have the privilege of experiencing a curated 1/ST RACING event whether at Laurel or Pimlico in Maryland, Gulfstream in Florida, or Santa Anita in the heart of Southern California. Needless to say, all that’s not easy to do in a sport notoriously tied to its historic roots, customs, and ideology. Elevated had a chance to catch-up with Aidan—which is difficult for a man who splits all of his time running five legendary racetracks located on opposite ends of the country—to learn about the vision behind horseracing’s most creative company, as well as to dive-in to the reshaping of a sport that’s taking exhilaration, entertainment, and culture to a whole new level and whole new audience. You come from a long line of bookmakers. What is it about horseracing that invigorates you? I think the sheer spectacle of one-thousand-plus-pound animals running as fast as they do and the energy it creates generates a distinct emotional and physical response that is unlike any other on planet earth. Horse fans are besotted with the animal and horseracing fans love the wagering aspect—but the truth is you can be the biggest curmudgeon in the world and when you see that animal in flight, you recognize the beauty of the sport and in turn, it’s hard not to fall in love. To say you wear many hats would be an understatement. From overseeing health and safety on the track, to managing racing programs and content, to continuously expanding 1/ST RACING culture, you’ve


got your hand in everything. But there’s much more to it. In your own words, how would you explain what you do? Let me say it’s not a good idea to do what I do! Very little sleep, covered in mud, an endless line of early mornings. It’s not glamorous by any means. But all joking aside, it’s all about selecting a team of likeminded forward-thinking people who come together to build and nurture the culture of horseracing. Horseracing is an old-fashioned sport and sports that are set in their antiquated operations and ideas are not easy to adjust. In order to do that, I have to surround myself with some of the best and most creative people in the world. And one of those people is Belinda Stronach—everything we do is under her guidance and direction and her vision has helped shape what the future of horseracing looks like. From a strictly job perspective, as COO I oversee all racing operations at five tracks, two in California, two in Maryland, and one in Florida as well as two large training centers all of which include 8000 thoroughbreds and thousands of people and staff. Then there’s the actual business of horseracing, aka, how horseracing makes money. And almost all of the money generated from horseracing comes from wagering—and that’s my wheelhouse as a third generation bookmaker. So, in order to successfully expand the culture of horseracing, I need to apply the safest and highest caliber practices to the sport, and then program races that people are certain to enjoy and bet on. For me, it’s always about putting forth the best of the best and finding races that

are equally good where equally healthy horses can compete. Our team is amazing at what they do, including Craig Fravel, CEO of 1/ ST RACING, Dr. Dionne Benson, Chief Veterinary Officer, 1/ST RACING, Jimmy Vargas, CEO of 1/ST EXPERIENCE, Paul Williams CEO of 1/ST TECHNOLOGY, and Gregg Colvin, CEO of 1/ST CONTENT. All of us come together to build a culture that improves, modernizes, and makes the beautiful spectacle of horseracing as good as it can be. With the advent of new technology and 24/7 connectivity, the world of horseracing has evolved immensely, especially in the past two years. As COO of 1/ST RACING you’re expected to guide the future of the sport. So what does the future look like? I will say the future looks great. We’re utilizing all of the modern touch points for the consumer, creating a world-class customer experience, and using all forms of modern connectivity to engage. Aside from that, the advent of legal sports wagering has helped lift us up to where we are. Before, the only legal wagering you could do in certain states was horseracing. Now its everywhere and all of the evolving tie-ins allow us to use more modern technologies and innovations like our 1/ST BET app. Now is the perfect opportunity to get in front of lots of new eyeballs that normally wouldn’t’ have had the access or the wherewithal to access, watch, or experience horseracing. 1/ST is the torchbearer when it comes to reimagining the sport and culture of horseracing. What do you see as the main factors contributing to the allure of horseracing for a new generation?


1/ST is the moniker of a large group of different businesses. We’re a major racetrack operator, the largest tote operator, and we’ve created one of largest gambling apps. So, historically, we’ve been vertically integrated from the beginning. But still, the challenge is and always will be how to engage and embrace a younger audience. When Belinda took charge, we made improvements to the sport. But we still needed to find a way to get the younger audience excited and get in front of those with zero visibility. In order to do that, we built a team, from an experience standpoint, from the outside world. We pulled in some of the best from media, entertainment, and technology and let the modern outside world in on an “older” historical sport. The result has been a streamlined customer experience that checks all the boxes from an entertainment and sporting perspective. Who would have thought there was a way to tie-in Post Malone to a horseracing event? We did that. When you arrived on the scene at 1/ST RACING, you made it a point to create new health and safety protocols for both horses and jockeys. How were you able to bridge the gap between owners, venues, riders, and trainers to create a harmonious balance that serves everyone better? Today, people are concerned about the planet and animal welfare. With horseracing, we must embrace that ideology for the new generation. When horseracing is done right, it’s the most beautiful spectacle in the world.

In order to deliver that product, you have to truly understand the ecosystem of horseracing, from the track, to the valets, to the grooms, and trainers—the stakeholders. When we first arrived on the scene, we had a great level of support because Belinda was dedicated to doing everything the right way. Dr. Dionne Benson, our Chief Veterinary Officer, came up with novel ways to keep horses and riders safe. Being a trainer is tough—no sleep, constantly inundated with issues. From a managerial standpoint, we needed to align with stakeholders to come up with an inclusive and transparent system that works for everyone. Tracks can’t do it all. That means we have to be far more hands-on than our predecessors. We have to be there early in the morning each day to see firsthand the interworking of the system. It takes more than slick ideas—it takes a village. Major horseracing events have forever been a chance for people to come together to celebrate fashion, cocktails, cuisine…and wagering. And now with the Pegasus World Cup, all that’s been taken up a notch. Tell us about the vision behind one of the sports’ newest, yet most recognizable and lucrative events. The Pegasus World Cup is really special because it’s the new brainchild of Belinda. Basically, we take all that is the best we can be and do in horseracing and marry it with every aspect of worldclass entertainment. Each event we host could be a standalone event in the ordinary world. The quality of the customer experience, the entertainment, the food—all of it is five-star, the best that it can be. It’s a day that’s centric to racing. Plus, the fact that it takes place between


Miami and Ft. Lauderdale makes it the perfect location for hosting. It’s truly a celebration that everyone who has any interest in horseracing, culture, and entertainment should experience, and this year we had a great lineup including DJ Cassidy, Ja Rule, Lil’ Kim, Mase, El DeBarge and Lil’ Cease. There’s a huge difference between the East Coast and the West Coast culturally. What separates a day at Gulfstream in Miami versus a day at Santa Anita? Well they’re similar in a couple ways in that both venues provide high quality racing and are aesthetically spectacular. The difference is we run less in California—California is a long way from the rest of country. One is a modern building with a distinct Miami vibe, and the other is one of the finest art-deco buildings in Southern California. One holds 70,000 people, the other 20,000—so there’s a different feel. There’s a distinct Cali vibe to Santa Anita while Gulfstream is uniquely Floridian. Either way, you’re guaranteed a suntan.

1/ST SATURDAY on March 5th is a huge day of racing. We’ve got the Fountain of Youth prep for the Kentucky Derby at Gulfstream and Big ‘Cap Day at Santa Anita. Coast-to-coast live events is something that’s never been done before, so it might well be one of the biggest days in horseracing we’ve ever seen with 15 stakes races. No company has ever done that. If you could pick one day at the track that you’d put front and center in your memoir, which would it be and why? That’s tough because I’ve been going to racetracks constantly since I was ten—thirty-five years is a lot of racing. But of late, one day that sticks out occurred in Del Mar. I own a racehorse, Thirty Four Coupe, at Santa Anita, and we went down to Del Mar to compete in a race that was way too good for him and placed 2nd! You would have thought we’d won the Kentucky Derby! Outside of that, most days of the week I’m in charge of five tracks running simultaneously so if everyone is safe and everyone is happy— if that’s all I ever get, that’s all I’ll ever want. The Heart of Texas

How Camille Carson and Husband Jess Carson of Country Band Midland Give New Life and New Love to Their Horses at Driftwood Horse Rescue Ranch


Orange dawn arrives in Driftwood, Texas. The scent of dewy sweet grass fills the air, meandering across the rolling hills. The twang of a guitar string, a lyric sung in a lilting “A.” It’s a new day at the Driftwood Horse Rescue Ranch, 50 pristine acres of wide open land laced with green live oaks, verdant trails, emerald meadows, rippling creeks, and of course, beautiful, majestic horses. Jess Parker Carson of country music band Midland and his wife Camille Carson take a step outside onto their ranch and greet the morning with a big deep Texas-sized inhale. This is life. This is life with a purpose. But that precious moment of internal peace, relaxation, and environmental connection is soon obliterated by the wild cacophony of three energetic young children bouncing through the house, the first-of-the-morning chimes of music biz emails and bandmate texts, new lyrics and guitar licks floating around in the mind—as well as the responsibility of caring for, nurturing, and rehabilitating 35 rescue foals, colts, brood mares, stallions—you name it, the Carsons are saving them. To say there’s a rather large assemblage of moving parts on a daily basis at the 501(c)(3) non-profit Driftwood Horse Rescue Ranch and Sanctuary would be entirely accurate. Juggling family life, band life, road life, and a functioning horse ranch is enough to drive anyone berserk. But standing here on this beautiful stretch of land on the Edward’s Plateau in Hays County, it becomes apparent that there’s nothing in the world that can stop the Carsons from their mission— saving horses from a tragic, undeserved end and giving them a second chance at a beautiful life. In order to understand what Driftwood Horse Rescue is up against, it’s best to start with some facts, statements, and stats culled from my first visit with the Carsons. • 92% of horses that are sent to slaughter are actually young and in good health. • Horsemeat is completely unregulated—yet the U.S. exports horses to Canada and Mexico to be slaughtered for human consumption in Europe and Asia. • There’s something called a “kill buyer.” That’s a person who shows up at horse auctions whose only motive is to outbid other buyers to export horses for slaughter at a massive profit. • Some horse owners actually breed excess horses specifically for slaughter because they can make more money by selling them to kill buyers. • When horses are exported for slaughter, they’re stacked in vehicles without space and ventilation—which goes against all of their natural instincts—and are typically starved and beaten until their eventual demise. • Horses are culturally considered companion animals in the U.S., like dogs and cats. But the government classifies them as livestock. Changing the classification of horses at the federal level would grant them more protections that are legally awarded to companion animals.

If you’re anything like me, then learning about the horsemeat and horse slaughter industry will most likely keep you up at night. But Jess and Camille don’t want us to focus so much on the negative aspects of what surrounds the horse slaughter industry. Instead they want us to focus on the beauty of the horses themselves—the joy they bring children, the companionship they provide their owners, the thrill they offer the rider, and the relationship they establish with nature. It’s the elements of love that horses bring to our culture and our nation that should be the focus—and that’s how you truly save lives, both human and equine. Anyone who’s ever touched a horse, fed a horse, or ridden a horse knows there’s something intangibly magical about their demeanor, their feeling, their smell, sweat, muscles, backbone—their entire being. They’re graceful in motion. They’re protective of their herd. They’re protective of their humans. They’re intelligent. And they have the capacity to love. “The horse slaughter industry is heartbreaking—there’s no doubt about that. But Driftwood’s vision is to give horses a second chance and a better life,” says Jess Carson. “Our goal is to stop slaughter for profit and that takes a lot of public awareness so we’re trying to get the word out as much as we can.” In the modern world and in modern media, we’re constantly inundated with the atrocities and negative elements of the world that surrounds us—not the people working to turn those elements into something positive and life-giving—which is much better news, at least in my opinion. So when you witness firsthand a little non-profit with a heart as big as Texas working hard day-in and day-out to do something truly remarkable for neglected horses, it’s important to let the world know. “One person can make a big difference,” says Camille Carson. “We’re steadily expanding the ranch—but we still need the help of our horseloving community to increase our rescue capacity and continue giving our horses a good life.” My words don’t quite do Driftwood justice. Perhaps it’s better to hear directly from Jess and Camille about what’s at stake, what’s happening in their world, and what you can do to help Driftwood Horse Rescue carry out its one true mission—to love their horses endlessly and infinitely as long as they live. You both have a long history with horses—tell us about how it all started. Jess: My mother started me on horses when I was around eight years old. I can’t remember her steering me toward any sport or activity other than that. I took lessons on a horse named Rolo at a barn in Sheridan, Oregon where we lived at the time. My dad had never been out to watch me ride and on the day he did, I broke my arm when


Rolo spooked and threw me off. I can remember the horse running and things going past in a blur. Then I hit the ground and when I sat up, I had dirt in my mouth. After that, my father said no more lessons. Over the years, I did some guided trail rides but never got serious about horses until I met Camille. She kept her horse at a barn in Estacada, Oregon—ironically where my father worked on a Christmas tree farm around the time that I was riding Rolo. In the years since falling off Rolo, I moved around a lot so it felt like a full circle when I returned to riding. Camille: My aunt bred and trained dressage horses. She had me sitting on the backs of her horses from a few months old on. When I was two, I was showing ponies, and I had my first horse of my very own—an Arabian gelding named Detaunt—by the time I was 11. I can’t remember a time in my life I wasn’t riding. To me, it actually feels more natural than walking with my own two feet. What inspired you to start Driftwood Horse Rescue and Sanctuary and how did you make it a reality? Camille: I love the psychology behind horse training—how their minds work and how they communicate with each other. I seem to understand horses more than humans a lot of the time. My passion has always been working with “problem” horses and starting untrained horses under saddle. When my main horse died suddenly last year, I was completely lost for a time. I wasn’t sure which direction to take my work in, but I knew I wanted to help

horses who really needed it as much as I could. We started looking into rescues and the more you learn about horses in need and the entire slaughter industry, the more you can’t turn away because it’s such a big need and there’s so much wrongness happening. So we decided to become an official 501(c)(3) in order to help as many horses as we can. Jess: There’s an entire horse slaughter industry hiding in plain sight in America. A lot of time it’s a sleight of hand—kill buyers show up to horse auctions posing as legitimate buyers, purchasing as many horses as they can that sell within their profit margin. It doesn’t matter what kind of horse it is: with papers, without papers, young horses, pregnant mares. Then they load them onto a large stock trailer and take them to either Mexico or Canada to be slaughtered. It’s kind of like looking under a rug. As I read about it, I was amazed that this was happening every day in America. When people think of the term “horse rescue,” they envision a place reserved for older, injured, or retired horses to live out their life in a pastoral setting—but that’s not the reality. Tell us about the dangers that horses of all ages face and why it’s important to help. Camille: 92.3% of horses sent to slaughter are young, healthy, productive horses who still have their whole lives ahead of them. It’s a misconception that the horses going to slaughter are old, injured, or unable to fit into human society. Our horses are rescued from owner neglect and abandonment, from low-end auctions,


and from feedlots and kill pens. Any of these places can mean imminent death even for a young, healthy horse. Horses who end up at auctions usually get snapped up by kill buyers who don’t care if the horse gets on an overcrowded semi and endures a torturous trip down to Mexico for an equally torturous death, or if a private buyer takes them home and makes them a pet, so long as they get their cash from the deal. Needless to say, this attitude makes feedlots and kill pens deadly places for horses to be at, even if they don’t ship to slaughter in the end.

him out, he didn’t want to leave the dirt because that was all he’d known. He was always off by himself because he’d always been kept in solitary confinement and didn’t know that he could have horse friends. Now, he’s nice and plump with a good grass belly and is an integral member of the herd. It’s incredible to see them transform.

Deadly viruses and diseases run rampant through those pens and horses are all crammed in together on trucks and in the holding pens without regard for safety. Horses have a natural instinct to establish a herd hierarchy which protects them in herds in the wild, but causes relentless brutality and death in overcrowded slaughter shipping trucks and holding pens. Even just a day or two in those places can be fatal for many horses.

Camille: In the morning we feed and clean stalls. Then we start working with horses. They all need different things and are at different stages in their learning. Some are just learning to trust touch and halters so we will halter them and rub them all over and turn them out again. Some are learning to pick up their feet for the farrier, so we work on that. Others are working on saddle training or even riding. We usually work with horses until about 3 or 4 p.m. and then feed dinner at 5 and everyone gets the evening to relax.”

We do have some older horses here, like Dani, who’s 20, and Legolas, who’s 13—but many of our rescues are babies and pregnant mothers, like Galadriel who’s 4 and 10 months pregnant, Luthien who is 10 months old, as well as two weanlings and a nursing fourmonth-old filly. Another horse you see in the slaughter pipeline a lot is the brood mare–the horse’s equivalent of the Handmaid’s Tale. Mares, who are often unfairly thought of as “too opinionated” by many traditional trainers and ranches, are often not trained or handled and instead are turned out to be feral and run with a stallion and churn out babies every year. Then, after a lifetime of babies are produced, the mare is disposed of in the slaughter pipeline to bring some extra bucks in since no one else wants to buy a horse they can’t touch. Driftwood consists of 50 sprawling, gorgeous acres outside of Austin, Texas. What do you love most about the environment you provide for your rescues? Jess: We’re in Texas Hill Country—gently rolling hills with live oaks that stay green year around. It’s grassy and a lot of people in the area keep horses or run cattle. Trail riding in this landscape is a joy—through trees, meadows, and creeks, and up onto hills where you can see for miles. The most moving thing I’ve witnessed with the horses here is the sense of peace they get as they assimilate. They show up wild-eyed with no way of knowing if this place will mean abuse, neglect, starvation, or death. But as the days go by, a trust and sense of security forms. The change in them is profound and they can sometimes very quickly absorb the energy of the place. They see and internalize a lot—they get loved on, they get good food, and nothing here is going to harm them. When you see the change in their eyes and body language soften from fear into calm, it’s a beautiful thing. Camille: We have a stallion that was kept alone in a small pen his whole life. He didn’t even know what grass was. When we first turned

What does a day in the life at Driftwood Horse Rescue and Sanctuary look like?

Jess—as a member of one of country music’s biggest bands, you know how to bend the ears of an audience. And Camille, as a competitive rider, you have the unique ability to bond with horses on a deeper emotional level. How do the two of you use your talents to expand the Driftwood cause? Jess: I see a lot of musicians in Texas who have some involvement with horses, especially if you’re talking about traditional country music. With music or horses, it’s about developing a feel. Playing country music takes a light and nuanced touch and so does natural horsemanship. I love the history of the “singing cowboys” like Roy Rogers and Gene Autry—the image of a cowboy playing guitar on horseback or sitting by a campfire. More recently you have people like Chris LeDoux who won a Professional Rodeo Cowboys Association world championship in 1976 and then went on to become a platinum selling recording artist. Midland had the opportunity to open for Garth Brooks in Pittsburgh, Pennsylvania and he told me that he modeled his show and stage persona after Chris LeDoux. It’s like Willie Nelson says, my heroes have always been cowboys. Camille: For me, the bonding on a deeper emotional level is everything. Because they’re herd animals and also prey animals, horses have a very intense level of communication and perception— they have to—because when the horse next to you goes from relaxed to alert in a split second with no outward sign, that could be all the warning you get before the mountain lion pounces. Being so attuned to energy feel and body language literally means life or death in the wild. That’s why horses are so sensitive to feelings, emotions, energy, and body language–it’s the intricate language they use to communicate with others in very dynamic and deep relationships within the herd. The rescue horses, having literally just come from trauma and life or death situations, are even more sensitive to it than most horses, and need to be able to work with humans who understand that about them.


When you ride horses long enough, you’re bound to have a few adventures that stick out. Tell us about some particularly amazing experiences you’ve enjoyed while riding. Camille: My very favorite thing to do is go for long trail rides, just me and the horse and nature all around us. No rules or time limits or audience—just adventure. When I was little, living in Oregon, I used to pack sandwiches in my saddlebag and ride my little Arabian up into the mountains all day. We’d eat wild blackberries and discover hidden creeks together. Nowadays it translates into endurance riding for me–long distance rides through incredibly beautiful country. To me, being out in nature with just my horse brings me back to what’s really important in life and creates a bond of trust and companionship between me and my horse. To me, there’s nothing more amazing or beautiful than experiencing the beauty of nature with your equine best friend. If you could fast-forward five years, what would Driftwood Horse Rescue look like? Camille: We would continue to grow into a place where people know to contact us with horses who are in trouble and we would have the donation and sponsorship support to be able to take them in. We would have some older or injured horses who would live here

permanently in the sanctuary and maybe enjoy a sponsorship or two from human friends. We would be well known for having quality horses and a place people could adopt a perfectly matched horse for them. We would also have a training program, a lesson program, and an equine therapy program. What’s the best way to get there? Camille: This is a good start.
