JOURNAL THE NORTH CORNWALL FUND Since 2003, the Cornwall Community Foundation has been a source of funding for community self-help within Cornwall and the Isles of Scilly. In 2017 and 2018, they awarded more grants to projects in North Cornwall than elsewhere, reflecting the higher level of need in the area.

We talk to Daniel Sproull to find out exactly why he and the team at Sproull Solicitors know Port Isaac so well

What is your connection with Port Isaac?

My grandfather first came to Port Isaac just before the Second World War. The house that my parents now live in was the surgery and “Doctor”, as he was called, was a fixture in the community back in the days when doctors used to go and visit patients on a regular basis. My father tells me that he often used to come back with eggs, cream and other produce as a result! I went to Port Isaac County Primary School which moved in 1978 from ‘The Old School’ on the eastern cliff, to the ‘New School’ where it is now.

Why do you think visitors love Port

Isaac so much?

It is hard to define what makes Port Isaac so special. The village has the “classic quaint fishing village” appeal, but the draw of Doc Martin and his Sunday night exploits undoubtedly draws many visitors these days. I can only say that anyone who had the privilege to grow up here will know!

Have you always worked as a solicitor?

I have worked as a solicitor since I qualified in 1991 and came home to join the family firm in 1993, which my father previously joined in 1964. My wife and I both had jobs in Bristol, and we had the opportunity to go back to those jobs if the move home

Port Isaac has more than its fair share of niggles including flying freeholds, alleyways that nobody owns, access tracks with no proper rights of way over them and houses which, on a plan, may look like they are level with each other but, in reality, one may be 50 feet above the other going up the side of a hill.

There are lots of houses, including those on Church Hill, which have rights to use or ownership of “drying grounds” up on the hillside, which

they think they own but sometimes don’t.

We offer sellers a ‘Pre-Sale Health Check’ to identify and put right any issues, at the outset, which a buyer is likely to pick up on. We find the longer a sale takes, the less likely it is to complete, so the fewer problems there are the better. I don’t think anybody else offers this service and, unlike most things that lawyers do, it is completely free and carries no obligation.

What would you say your point of difference is?

Helping people with the legal aspects of buying and selling property is something which can be done from a desk but having knowledge of the properties you are dealing with is enormously helpful.

We have a large team helping people buy and sell property in North Cornwall and far beyond. All have been with the firm for some years so it’s rare for us to deal with a property in Port Isaac where one of us does not know the house, the people who live in it (or lived in it), or has hidden in the back garden playing “spotlight” as a child.

Tell us about your second job in the village hauling lobster pots?

My father had his first boat in Port Isaac harbour at the age of 8 and I had my first boat at the age of 11 – that boat can still be seen in the harbour on a daily basis and in fact, features in the title sequence to Doc Martin.

Like my father, my interest in fishing came from being down at the beach talking to the fishermen and wanting to do what they did. I started off with a few pots in my yellow punt when I was 11 and have been fishing on my own and with my father ever since.

We now operate the fast fishing catamaran Razorbill from the harbour between April and November every year. This provides a great antidote to being in the office, although the curse of the mobile phone means that we’re never far away from the day job.

What do you do in your spare time?

My office is fairly close to Port Isaac harbour and I can see on the John Bray webcam when the tide is right and the weather is good to go out in the boat. Apart from hauling our lobster pots, I also find spare time for surfing, water skiing and helping to run local community radio station

NCB Radio.

I’m a big music fan and see as many live shows as a I can, including Glastonbury 2019 which I am very much looking forward to. I also do quite a lot of running and if you come across somebody in inappropriately tight attire and a high vis jacket on the roads anywhere around St Kew, it is probably me. Please slow down.

Any recommendations for visitors to Port Isaac?

I’m a fan of both of Nathan Outlaw’s restaurants, the flagship restaurant at the top of the village and the Fish Kitchen at the bottom.

You cannot beat walking around the cliff between Port Isaac and Port Gaverne, or for a longer walk taking the road up Roscarrock Hill and around Lobber Point to Pine Hawn and back over the fields.

If you fancy something more adventurous, you could always take a fishing trip to catch mackerel and see crabs and lobsters with a certain local solicitor who also runs fishing trips in his remaining spare time! www.sproullllp.co.uk

CAROLINE CLEAVE Artist Caroline Cleave works from her studio in the heart of the historic village of Port Isaac where she has lived with husband Jon, from the Fishermen’s Friends, for over 30 years

F

rom large to small scale, her colourful and realistic work of fish, crabs, lobsters and wild foliage celebrate the beauty of the coast and countryside. Using both acrylic, ink and watercolour, her captivating works instil a sense of joy and an understanding of the fragility of coastal life whilst also alluding to themes of sustainability and the changing face of life along the northern edge of Cornwall.

Many are linked to the “catch” brought in by the small inshore fishing boats which have sustained the village for generations. Two large canvases celebrating this history and the huge herring shoals on the north coast now adorn the walls of Nathan Outlaws Michelin starred restaurant. A kindred spirit, Nathan Outlaw is also passionate about the journey of the fish to the plate from the sea.

Her designs can be seen at Boathouse, the family business in Port Isaac and her paintings are regularly exhibited at Whitewater Gallery in Polzeath and her designs are distributed internationally through www.emmaball.co.uk.

Remarkable then that Caroline actually grew up in the West Midlands, as far from the sea as possible. Her home life was very happy and creative largely because her father was multilingual, incredibly imaginative and loved the outdoors. Brilliant at painting, sculpting and drawing he inspired Caroline and her two sisters to express themselves artistically at an early age. Having completed their degrees all three girls went into education, Caroline specializing as an Art teacher in Bristol.

She has happy childhood memories of a kitchen full of life-sized sculptures, and now inspired by her father, she too creates enormous sculptures made from willow and tissue, working on the famous Cornish City of Lights festival for several years. Recently she has brought about the same inclusive annual tradition of a Christmas lights parade to Port Isaac which is a much-loved community event enabling young and old to participate.

and has competed in for over 25 years. After a peaceful day in the studio she, with 6 of her favourite women friends can be seen rowing out of Port Isaac harbour. Pods of dolphins, soaring sea birds and dramatic cliffs, and lots of laughter serve to refresh her perspective on this inspiring stretch of coastline.

Caroline can’t remember a time when she wasn’t painting or creating. “It’s something that is innately in me and what I was always encouraged to do, it’s who I am.” After surviving breast cancer several years ago, she made a conscious decision to pursue her art full time. Since then all the opportunities she had always wanted to have come her way and with new strength, courage and confidence she has embraced them all. Most recently, she had the opportunity to work with renowned print maker John Howard in his open studio in Penryn. The prints she created have added to and expanded the breadth of her work and were an exciting addition and well received at her latest exhibition.

Now long established in her village, her home a beautiful old Captains house nestled in the valley, Caroline is surrounded by everything she loves and rarely lacks inspiration. With her sketch book always in hand, she is constantly sketching “I used to be embarrassed about doing this in public, but I’ve learnt from a lobster that if you back yourself into a corner no one can look over your shoulder!”, laughs Caroline.

Someone once described her studio, set across the stream from their garden as “seeing inside her head”. Everything is on show for her to reference yet there is still a sense of peace and calm. Her beloved Jack Russell, Fig, is her constant, patient companion watching as her ideas come to life, along with their Muscovy ducks and ducklings who wander in if the door is open for too long.

hether you came to Rock as a child and idled the days away splashing in the waters of the North Cornish coast, or are an occasional visitor to the area, the ever-present silhouette of the Cornish Shrimper with its traditional tan sails bobbing around on the moorings, or gliding majestically through the waters that surround the Camel Estuary is a truly iconic image.

A PAINTER IN

POLZEATH art

As she opens her new gallery of original work, we talk to artist Suki Wapshott about her life, her loves and inspirations

Suki, tell us a bit about yourself.

I was born in Oxford and had a happy childhood, part of which I spent in Libya, and the rest on our family farm in a beautiful house built by my great, great grandfather. When I grew up, I married, had a wonderful daughter, but then became a single parent at 23, so there was no time for pursuing art or anything else! At 34 I married my wonderful husband Nick and returned to education, and in 2000 I graduated from Oxford University with a degree in English.

How did you start painting?

After I graduated my head was full of images from the poetry I had studied and so I started to paint those images. A while later my beautiful daughter died, which was the greatest heartbreak imaginable, and afterwards Nick and I decided to move away - to Cornwall, a place which has become my greatest inspiration.

What materials do you use for your art?

I paint mainly in oil on stretched linen canvas, and I paint with brushes, with my hands, with palette knives or whatever works for the piece.

How would you describe your artistic style?

I make anything from realist, to abstract, to figurative or impressionistic work, and I enjoy that creative freedom. Whatever the style, I hope my work will intrigue and give pleasure to viewers.

Which paintings are you most proud of?

I’d say all of them, because I only show work that I am proud of - but very special to me is a work called Mothering Sunday, which hangs in our home in Polzeath.

What are you currently working on?

Right now, I have three works in progress - a huge wave study, a dazzling abstraction of Pentire Point, and a gentle Polzeath seascape.

What was the first painting you sold?

It was called Three Witches. Years later that first feeling of selling a piece of work has not changed. I am thrilled people want to have it on their walls

and see it every day.

Where do you draw your inspiration from?

Cornwall is my inspiration, its glorious coast and moorland. Polzeath is my home and much of my work is of here. Port Quinn and along to Constantine is my favourite stretch of coastline to paint.

Where do you work from?

I am essentially a studio painter. In my studio I work from my sketches, photographs and sensory resonances from moments spent watching the sky and sea.

What is your studio like?

My main studio is a big, bright space with a view over the fields, and it is warm and smells of oil paint, thinners and seasoned wood. Occasionally my dogs will spend the day with me there - so I’m thankful for a big space for my enormous dogs!

How has your style of working changed over the years?

As with many artists, my style is flexible, but mainly I have become freer in my painting style as my career has progressed.

What do you like about living and working in North Cornwall?

Polzeath has an essence of grandeur and simplicity, set against ever changing skies and sea. I feel so lucky to live and work in an area of such unique beauty.

When you are not painting what do you do in your spare time?

I take time to chat with Nick, to read, walk Freddie the Deerhound and Daisy the lurcher, and drink red wine at home and at the Waterfront - where I tell myself I can ‘work’ by simply staring out to sea and taking it all in!

Launching with an inaugural exhibition of works in corten steel by Cheshire sculptor Jill Clarke, the exhibition will be officially opened by BBC presenter and keen gardener Jo Whiley, who has two of Jill’s sculptures in her Northamptonshire garden.

Jethro first met Jill whilst she was on holiday with her family in Rock. Always keen to seek out local artists, Jill visited Porthilly Gallery and instantly fell in love with Jethro’s

evocative paintings of the surrounding beaches.

A friendship developed and it soon occurred to Jethro that the pair should collaborate to realise an ambitious plan for the outside space at Porthilly Gallery.

Working with RHS gold medal winning garden designer Tom Simpson, they set about developing an intimate, peaceful and creative garden to showcase Jill’s sculptural works. Thanks to some clever designs and Tom’s passion for the natural landscape, visitors can now experience exceptional contemporary art just a stone’s throw from the stunning beaches and landscapes that inspire both artists.

Renowned for her organic metalwork sculptures for outdoor spaces including made-to-order items such as planters, fire pits and screens, Jill runs a bespoke design service with her family. She uses metal to create works that tell stories, especially human ones, such as overcoming adversity or being true to oneself through mindfulness.

Jill’s trade stand at RHS Hampton Court Flower Show 2018 received the prestigious Royal Horticultural Society’s ‘5 Star award’ and featured her corten sculptures ‘Resilience’, ‘Flow’ and ‘Balance’ amidst planting from Hortus Loci. It was used as a background for a Gardeners’ World segment by radio personality Jo Whiley, which is where the duo met and formed a friendship.

Porthilly Shellfish We catch up with father and son Tim and Luke Marshall to find out more about the Camel Estuary’s world-famous export

he Marshall family have been living and farming in Porthilly on the North Cornwall coast since 1913. When brothers Jerry and Tim Marshall inherited the dairy farm from their father, they soon realised that it would struggle to support both their families. A life-long fascination with fishing and living by the Camel river led Tim to explore what the estuary could offer. From an experimental batch of 100,000 oysters and a great deal of trial and error, he founded Porthilly Shellfish almost 40 years ago.

Initially selling in bulk, it’s hard to believe that sometimes he couldn’t sell them. “I’d be left sitting on 10 tons of oysters and they don’t make good pets you know”, jokes Tim. He has developed a unique way of farming his Pacific oysters, tending to them daily to achieve a premium grade product that has become renowned for its taste and meatiness.

Nowadays, Jerry runs the dairy side with his sons Chris and Matt, while Tim runs Porthilly Shellfish with Luke and their five grandchildren are set to become the 5th generation to inherit the family business. “I have always been here and love being out on the river every day, whether it’s raining or sunshine!” explains Luke.

It was this passion that led him to diversify and spearhead the mussel business, growing them on the river bed due to the tidal nature of the estuary. It took him a few goes to

get the technique right; “The first seed mussels I bought were too small and the crabs ate them all”, laughs Luke.

They now produce and purify 100 tonnes of mussels each year alongside 800,000 oysters, selling direct to restaurants and food outlets all over the world from Dubai to China.

Closer to home, chefs Paul Ainsworth, Rick Stein and Nathan Outlaw are amongst their clients. “Porthilly Oysters have always been an important part of the menu and having a restaurant next to the sea means you have to take advantage of the amazing produce on your doorstep”, explains Paul Ainsworth. If you’re in the area you can also purchase them from the fishmongers on the Rock Road.

The pair have worked hard to maintain and improve the standard of their award-winning shellfish and with the help of the incredibly fertile Camel river and a very supportive Padstow Harbour Commissioners, they are lucky to have the ideal conditions for their business.

Keen to maintain a harmonious relationship with other water users and preserve the estuary for future generations, they are focused on perfecting product quality with minimal impact on the environment. “The river sustains our three families, as well as the ski school, the sailing club and everyone else. People will be skiing at high tide and the oysters grow happily underneath, so it works well”, finishes Luke. www.rockshellfish.co.uk

Crispy Porthilly Oysters Serves 4

P

orthilly shellfish is not only some of the best shellfish in the UK, its world class in terms of quality and the local oysters are an unmissable part of Padstow. We serve our Porthilly oysters in a light crisp Panko breadcrumb as a welcome dish to everyone who dines at Paul Ainsworth at No.6 to give them the opportunity to try oysters at their very best and showcase a true taste of Cornwall.

INGREDIENTS 12 large Porthilly oysters 12 slices of Cornish Seaweed and Cider Salami, cut 1/2mm thin 2 egg whites, mixed with a small splash of water 200g Panko bread crumbs Apple and fennel salad 1 head of fennel 2 Granny Smith apples 2 limes 20g caster sugar

METHOD 1. OYSTERS Shuck the oysters and gently wash in cold water. Pass the oyster juices through a fine sieve to remove any fine grit. Pop the oysters into a small bowl, cover with cling film and keep in the fridge until required. Wash and full clean the oyster shells, set aside.

2. A PPLE AND FENNEL SALAD To make the salad, cut the root from the bottom of the fennel, peel each fennel segment from the bulb and then finely slice each one to roughly 3 cm long strips. Without peeling the apple, cut away the base, cut in half and remove the core. Thinly slice to half moons and then to 3cm long strips and place in a bowl with the fennel. The fennel and apple should appear similar in size and appearance.

Take the zest from one lime and squeeze the juice from both limes into a small bowl. Place into a small pan adding the sugar and bring to

the boil, fully dissolving the sugar.

Leave the mixture to cool slightly and pour over the fennel and apple. Mix the salad really well and leave to one side to macerate.

3. OYSTERS Dip the oysters in the egg white mixture, then coat with the panko breadcrumbs. Deep fry at 190C until golden and crisp, while being careful not to overcook. The oyster should be just cooked in the center. When cooked, place the oyster plump side up on top of the salad, then sprinkle with a little Cornish sea salt.

4. TO SERVE To finish, take the oyster shell and arrange the apple and fennel salad in a neat mound in the deepest part of the shell and add the freshly chopped chervil.

Position the crispy oyster on top of the salad and carefully place a slice of Cornish Seaweed and Cider salami over each oyster at the last second and serve.

ysters are wonderful to cook with. Yes, I love to eat them raw, but having them farmed at Porthilly all year round gives us the luxury to explore their versatility as an ingredient. This oyster sauce will accompany just about any delicate white fish.

However, if you see John Dory at your fishmongers, buy it. A true gem of the ocean with a delicious sweet flavour, and an elegant dance partner for oyster.

INGREDIENTS

METHOD

1 x 600-800g John Dory, filleted

1. First make the oyster mayonnaise.

2 x Porthilly oysters For the oyster mayonnaise sauce: 4 x Porthilly oysters, shucked (juices retained) 2 egg yolks Juice of half a lemon 300ml light rapeseed or olive oil Juice of 2 cucumbers 50g plain flour for coating 1 egg, beaten 100g breadcrumbs Fresh dill to serve

Put the egg yolks, lemon juice and 4 oysters into a food processor and blend for 30 seconds. With the motor running, slowly add the oil until it’s incorporated, and you have a thick mayonnaise. Add the reserved oyster juices, followed by the cucumber juice, until you have a sauce the consistency of single cream. Season to taste, cover and refrigerate until serving.

2. Coat the 2 remaining oysters in the flour, followed by the egg wash then breadcrumbs.

3. Cook the John Dory, after it has been out of the fridge for at

least 30 minutes to come up to temperature. Oil the fillets and season with salt before grilling under a pre-heated grill at a medium to high heat, skin side up for 5-7 minutes. Whilst the fish is cooking, gently heat the oyster sauce over a low heat, stirring continuously until warm (do not boil the sauce). Deep fry the 2 bread coated oysters until golden brown, drain on kitchen paper and season with salt.

4. To serve, finish the warm oyster sauce with some fresh dill, and pour into shallow bowls. Place the grilled John Dory on top, followed by the crispy oyster.

METHOD 1. Put the saffron into a small bowl

Good pinch saffron strands 1.75kg mussels, cleaned 120ml dry white wine 25g butter 1 small onion, finely chopped 2 garlic cloves, finely chopped 1/2 teaspoon good-quality medium curry powder 2 tablespoons Cognac 2 teaspoons plain flour 200ml crème fraîche 3 tablespoons chopped parsley

and moisten it with 1 tablespoon of warm water.

2. Place the mussels and wine in a large pan, cover and cook over a high heat for 3–4 minutes, shaking the pan now and then, until the mussels have opened. Tip them into a colander set over a bowl to catch all the cooking liquor.

Transfer the mussels to a large serving bowl and keep warm.

3. Melt the butter in a pan, add the onion, garlic and curry powder and cook gently without browning

for 2–3 minutes. Add the Cognac and cook until it has almost all evaporated, then stir in the flour and cook for 1 minute. Gradually stir in the saffron liquid and all except the last tablespoon or two of the mussel cooking liquor (which might contain some grit).

Bring the sauce to a simmer and cook for 2–3 minutes. Add the crème fraîche and simmer for a further 3 minutes, until slightly reduced. Season to taste, stir in the parsley and pour the sauce over the mussels.

4. Serve with plenty of French bread.

ichard’s parents moved into the area from nearby Withiel in the 1930’s when his father took work as a farm labourer for Fred Buse who rented land on the cliffs along the Camel Estuary. “He wanted to give it up, so he asked if father wanted to take it on”, reminisces Richard. “Father said yes and that was about 1950”. It wasn’t until 1954 that Richard’s parents purchased and moved the family to what is now Rest Harrow Farm.

that Rest Harrow can count Michelin star chef Nathan Outlaw as one of their most loyal customers. Along with Nathan, the farm has also been supplying many local chefs in the area for years.

Richard was just 15 when his father passed away, so he continued to run the farm alongside his mother. Over the years, they began to diversify from mixed farming into vegetables, starting with just a few cauliflowers and leeks which they sold to a local wholesaler in Bodmin. This was just the start of their success and they have been selling a wide variety of vegetables to locals and tourists ever since.

An unassuming community hub, the farm shop also serves a delicious Cornish cream tea on the front lawn.

The farm has remained a family run business with four generations working together at one point. Today, Richard runs the farm with his wife Katherine, helped by son Hartley with regular visits from grandson Talan, eager for any opportunity to jump back on the tractor. Daughter Tracey manages the holiday cottage business.

“When I first sampled a few of Richard’s vegetables, I was amazed at the flavour and quality,” says Nathan. “It was such a great find for me. Over the years, Richard and I have collaborated at length about growing and cooking produce. I’m always happy to listen to the advice of a man with such a huge depth of knowledge.”

Rest Harrow also has one of the oldest camp sites in Trebetherick, established in 1958, it offers a convenient spot to camp close to the beaches and coast. A few years ago, they started using the picturesque cliff field overlooking the Camel Estuary and mouth of the famous Doom Bar as a wedding location, and now host six weddings a year at this very special spot.

As time has gone on, the farm has refocused its efforts, but continues to thrive. “We are lucky we have the right soil and great drainage. We can try most things and they seem to grow!” laughs Richard, a youthful 73-year-old who puts his vigour down to hard work in the fields and the years of living traditional farm life.

Despite dramatic changes in the area some things remain timeless; “When I wake up in the morning and look out my bedroom window, I look across to Daymer Bay, Brea Hill and Tregirls on the other side of the river. That to me is still the same and always will be,” ends Richard fondly.

With an impressive variety of produce to choose from, Richard states proudly, “Our vegetables have still got the morning dew on them when people come in to buy them.

Most of it is less than 24 hours old, a lot of it less than that.”

Pebble Design Originally a homes’ journalist for national magazines and newspapers including House Beautiful, Homes & Garden and The Sunday Telegraph, Claire Alderson set up Pebble Design in 2007 after designing and building her own home on the south coast (featured in Channel 4’s “Homes by the Sea”). She has since been involved in several residential design projects around Cornwall, as well as commercial projects across the country.

“I work on quick fix makeovers for clients who want to spruce up their existing homes as well as long-term projects liaising with developers, architects and new homeowners,” says Claire. “My background means I often get involved in staging show homes and styling photography for houses that are about to go up for sale.”

Our one-off houses in the Polzeath area have been fabulous projects to create. They really are dream homes, which involve large teams and significant organisational efforts to pull off.

The standard of design and level of specification in the new build properties has become particularly high. Architects are producing wonderful designs and clients are in a position to bring these properties to life with fantastic internal features, bespoke furnishings and luxury fittings. Delivering these complex high end projects is increasingly challenging, which is where project management comes in.

Coupling these ambitious designs with ever more complex and demanding Building Regulations, environmental requirements and the legal responsibilities of clients, it’s more important than ever to have skilled professional help.
