Stillwell: The Beer Bar BY KATIE CONKLIN and snacks on a daily basis. When a keg runs out a different one is put on tap immediately within a similar beer category. “We try and put on as much new stuff as possible. We want to maintain a balanced tap list drinkable for every mood, however to achieve that some beers have been on more than others,” says Reynolds.
Stillwell is a family run beer-bar specializing in local craft brews and brands located right here in Halifax. The small but mighty bar employs just under 10 staff consisting of four co-owners, a chef and cook, two bartenders and has been open for 2 months. The idea originally came to Co-Owner Laura MacDonald and boyfriend Andrew Connell while working at a craft beer bar in London, England. After moving back to Toronto they brought Laura’s brother Chris Reynolds and her step-father Richard Fewell into the mix because of their experiences. At the time, Laura, Andrew and Chris were all living in Toronto when Richard suggested opening Stillwell here in the city where he was living. “We hadn’t thought about it, but once we talked in greater detail it seemed like a no-brainer. Toronto has a lot of craft beer bars and it was getting quite crowded whereas Halifax had fewer,” explained Reynolds.
Stillwell focuses the craft beers they offer on local Nova Scotia brands. They do, however, offer some Maritime brands form New Brunswick and Prince Edward Island. “Beyond that we do bring in some Quebec beers because, well, they are great! Our mission is to offer the best local stuff alongside the best beer we can get a hold of for our customers. We will definitely be expending our reach as we grow,” says Reynolds. Stillwell also offers cider on tap and carries a selection of spirits and wine. The bar offers a small snack menu prepared by local chef Graeme Ruppel that compliments the beers on tap. The price range varies from affordably priced food and pints to more high-end beers. “We never planned to target one group or wallet size, our food is quite inexpensive and we can accommodate anybody’s taste in beer, hopefully” says Reynolds. Ready to go for a beer? Stillwell is located on 1672 Barrington St in Halifax, open from 4pm – 2am Monday to Friday and opens at 12pm on weekends.
Currently, Stillwell is the only Halifax based beer bar that features, celebrates, provides exclusivity and plans special events around craft beers. Stillwell’s business concept is all about rotation, rotating the beers
