Dear Western Queens, I love to embrace the beginning of the New Year. Facebook updates are loaded with positive intentions, and twitter measures resolutions in 140 characters or less. The holidays, though joy-filled, have passed—and we depart our kitchens and dining rooms and head to the gym. This January, we reflect on what was another unbelievable year of growth. Queens was named the #1 destination for travel. We gained many new restaurants, and lost a few favorites. In this issue, we check out juicing at Ginger Juice Bar and Brazilian and Continental Cuisine at Malagueta. Astorian Ronnie Nelson shares his stunning photography with us, and Liz Nieves sits down to get the scoop behind another local talent, Mackenzie Greer. Every year during the month of January, gym memberships spike along with with resolutions to get in shape. The first three weeks is an aggravating overflow of the suddenly health-intended person who will then go on to forget about their membership for the rest of the year. What if—for one year—we did things differently and actually changed how we ate? Juicing has become more than a trend in the past few years—it has become a lifestyle. Juicing is technically described as the process of extracting juice from plant tissues such as fruit or vegetables. I find it a way to reset any unhealthy eating habits that I may have acquired. For anyone who has tried a juice fast or cleanse, they will let you know 6 | BOROMAG.COM | JANUARY 2015

that a green juice is everything. Boost your immune system? Check. Healthier glowing skin? Check. More energy without crashing? Check. And it’s even a bad ass hangover cure! Six months ago, Ginger opened up, bringing a high quality organic juice bar to Astoria. Johnny Solo—you may recognize him from the Ed Burns film Newlyweds and Man on a Ledge—also one of the owners of Grand Café and Ginger Organic—sat down with Boro to give some tips on juicing. “Ginger has been open for 6 months,” explains Solo. “Ginger is a source of 100% organic cold press juicing. We cold press every night and bottle it. We do all organic regular that we call old school juicing. We are

starting to extend our vegetarian and vegan menu. We are starting to see that people are in need for it in the neighborhood.” Ginger also carries smoothies—organic, all natural, and fresh. If you have never cleansed before, Solo recommends a good starter cleanse, such as the FUN - Damental Cleanse. It’s 6 bottles a day, which includes flavors such as the Almond Dream, Super Greens, Citrus Greens, Spring Fling, Early Riser, and CocoCashew. “It’s your first time cleansing; eat something light, like nuts or a little salad, soup, or Gluten free bread.” After a three day cleanse, Solo says it’s best to try a 70-80% greens balance in your meals.


For an experienced cleanser, he recommends the Well Being Cleanse—Super Greens, Green Supreme, Almond Dream, Protector, Red Storm, and Coco Cashew. “A level three cleanse for three days is a great cleanse.” He admits, “Juicing becomes an acquired taste. I tell anyone it becomes as addicting as anything else. Do it for two to three weeks and you will love that taste—you will start needing that taste.” Like many others, Solo believes that this is where society is heading. “It’s an evolved acquired taste. The future is juicing. Starbucks did a great thing with coffee; why not build a similar, healthier alternative?“

“I think our chef is one of the most talented in Astoria—so I also think you should trust him. If you ask for modifications and are displeased with the result, please remember it wasn’t the chef ’s suggestion.”

For the first issue of 2015, BORO took a survey of some of the neighborhood service staff to collect their thoughts, anecdotes, and perspectives on tipping. New York’s minimum wage is at $8.75 beginning the first of the year--$7.25 is the federal minimum wage— and for food service workers in New York, that minimum wage is only $5 per hour. For a server working forty hours a week, the restaurant only has to pay her/him $200 a week—before taxes. And we all know New York City demands rent and living expenses that by far exceed the national norm. So is tipping really an option? Here’s what several servers and bartenders had to say.

“I love a nice note. And sure, it’s flattering when a guy leaves me his number. But unless it’s a note asking my landlord to charge me less, make sure you leave a cash tip as well.”

“If a guest chooses not to tip me, it is the same as charging me an actual fee to have served them. The IRS expects my tips to fall somewhere around 11% of my total sales. That means every table needs to leave at least that much in a tip. So anyone who leaves less is asking me to pay on my own to make my wages meet the government’s requirements. Not only did they not pay me, but I end up paying to have served them.”

“The other night, a couple was upset I had been slammed the whole time. A server had called out of her shift, and I was left covering the whole floor. I worked my butt off. When the couple left, they left a note on the table saying service was poor, and then I watched them tip the busboy instead. I don’t think people realize I have to tip the busboy, also—and the bartender, bar back, and the expeditor. That dollar you gave me might come home as fifty cents.”

“I get taxed on tips and wages. The tips may come home with me, but they are entered in each night. When I get taxed on the total, my paycheck is almost always zero. Tips are the only payment I receive.”

“People gripe about tipping, but could you imagine if everyone got paid in their paychecks for service, and they were guaranteed it automatically? Where would the incentive be to go above and beyond?”

“A lot of guests use the tip as a bribe, and it pisses me off. ‘Make the drink strong, and you’ll get a good tip’ or ‘don’t charge me for the extra fries, and I will take care of you.’ First of all, you are asking me to break a policy someone else has put in place, and then you are telling me my income depends on it.”

“I don’t really care if they do it this way where you live. If you don’t follow this cultural standard, my kid won’t be able to eat.” “Don’t just count cash to see if you have enough to eat. At a restaurant, you are paying for the service, the atmosphere, everything. So make sure you enough to leave a proper tip.”

“Please don’t tip with a handful of coins. I am carrying the cash from every table I have served tonight, and I can get laundry money when I’m not working.”

“If you can see your server is trying their best, then give them a great tip. If they are lackluster and just standing around, give them a great tip. You don’t know what kind of day they have had, the table that yelled at them right before you came in, or the text message the received moments before. We expect 15 to 20% for service. If you think I am worth less than that, then ask for a manager. That low tip reflects more on you than me. Otherwise, I’ll just think you are being cheap.”

“I think a lot of people forget that time really is money. As a server, I have a set section. If you want to sit and sip coffee for two hours, I am going to take care of you. But just realize that is one of my tables that has been out of commission, and throw a little extra in the tip to say thank you.”

“You have to love the power of the bill. A whole table may have laughed harder, been better fed, served more graciously than ever before. But that final gawking at the tab you knew was coming, that final buck you leave—that’s all that will be remembered if it’s less than what is deserved.”

RÉST-Â “In my family, we all cooked,” smiles Tina Stipanovic. “We had a home-cooked meal on the table every night.”

Her ebony hair is tied above her head, and her chocolate eyes shine brightly from below her schoolgirl bangs as she reflects longingly on her childhood. She feels like an instant friend, someone you can trust, and someone you’d love to sit back and relax with over a glass of wine. She was born in Croatia, and moved here in 1992. “My dad was here, and my mother, sister, and I came over and joined him.”

Tina earned her Masters Degree in Sculpture, and put herself through school with her ability to cook. She laughs, “I guess I realized as a sculptor I would never be able to eat unless I opened my own restaurant!” But the artwork always remained close to her heart. “Food was a really big part of my childhood,” she recalls, “and I had a great connection to it. I love growing it, harvesting it, thinking about what to make, making it—I

T-ÂÜ-RÀNT loved everything about it.” So it came as no surprise when she finally opened Rést-âü-Rànt in November of 2007.

“Me and my sister thought resting and ranting would be a great atmosphere, so we called it rest-au-rant,” she explains of the clever moniker. “But now everyone just calls it RarBar. My Inspiration comes from things I want to eat and crave, which are very much inspired by the neighborhood. Living in such a diverse area, you are exposed to so much more than what you grew up with, so naturally, my menu reflects that.” “The biggest thing is all of our sharable plates. It keeps it casual, and allows people to taste little bites of everything. For me, it’s a more enjoyable way to eat.” The menu reflects that philosophy through cheese and charcuterie plates, and even a selection of several fondues. “We like to dip everything in cheese,” admits Stepanovic. Recent changes to the menu have seen the addition of mussels with a ginger tomato sauce. “We make our huevos rancheros on polenta cakes. The chicken and waffles just look so sexy, and we make a mean Cuban with pork belly, mortadella, swiss cheese, and pickle relish.”

Folks come for the diverse wine selection and wide variety of sharing plates, but the often stay for the live music or comedy. The arts have become such a definitive element of RarBar, in fact, that Stepanovic acquired a space nearby to devote solely to the arts.” “It’s gonna be huge,” she smiles, and her eyes sparkle with excitement. “This will be the restaurant, and the RarBar Art Room is where we will hold events, live music, comedy, exhibits, installations, and performances we weren’t able to do here. What was happening in the background here will take center stage there.” “Now I don’t have to say ‘no’ anymore. The people I have met along the way are coming together. I love that we are right on the heels of the Kaufman Arts district. grew up in New Jersey, just over the rivers. Came into the city all the time as a little girl and always felt a magnet reaction toward it. Once I moved to Astoria I never wanted to leave. I feel like it totally fulfills me here. I love it. I have lived here for three years now.

On writing... I had a journal in my hand since I could write. My mom always loaded me up with art and paint and music. Art has always been everything. Since the beginning there was nothing that could do it like art. My passion… is in creating. I went to FIT for photography but minored in creative writing. Art school totally stifled me artistically when it should be doing the opposite. Teaching you to embrace your art and channel it correctly. It’s been so freeing to get out of that and put myself out there the way that I want to. My day job... I work in video now. I work for Fox News, Al Jazeera, Arise, and SNY. I do video, color correcting, robotic cameras, engineering, and all sorts of things. On spoken word... I have always been a writer, and I only just brought it to the stage a couple of years ago when Waltz Astoria was open. Speaking with your fullest voice to a quiet room about your deepest feelings is the most frightening thing. I found it enlightening and enriching, and it opened me up as a writer too. On photography... I started shooting when I was 13. I lived in upstate New York at the time and I would run around and take pictures. I loved editing, and it just took off from there. It just became my passion. I do a lot of conceptual portraiture. I fell for true moments. Something sincere, something interesting. Instagram has gone the route with marketing myself. It’s my way of reaching out to the world. I love the simplicity of the app.

Influences... I don’t ever really look at other people’s work that much. I am inspired more by everything around me. Light and color are just all that matter to me. I just draw on my mood. Everything comes back to emotion for me. Generally is based on a vibe.

Ideally I would... read palms all day. I attend a School of Oracles with Ellen Goldberg. I go once a week with a small group of strange women. It’s fun—I am the youngest there. It’s been incredible— it’s been self-enlightening. In a few years I see myself... still in Astoria—I can’t see myself leaving yet. I think I’ll be a lot better at my craft. I think I’ll be talented. I think I will focus my art. So hopefully I can learn to grow up a bit and really learn to get down to it.

I was raised to believe that I should always be working toward a goal. That making plans to meet this goal would provide structure and excitement in my life, and that the accomplishment would bring me energy and inspiration for the next. And though there is no feeling quite like a personal victory, I will admit that I get crazy affected by watching others achieve their goals. Inspiration keeps me buzzing—it is my drug. In honor of the New Year, I would like to share a conversation that I hope provides you with some inspiration to take a chance on something new and test your limits. You never know what you are capable of, until you take that first step. I was introduced to Jamlen Frondoso through an online athlete’s group that connects people for motivational support, accountability, and active outings. A mutual friend thought that two driven, petite Queens girls into mixed martial arts (MMA) and lifting should meet, and he wasn’t wrong. We hit it off right away. HAYLEY: First, tell us a bit about how your training became an integral part of your life. JAMLEN: In late 2012, I lost my brother in an accident and was going through a breakup. While working full time and continuing my graduate studies, I thought I would lose it—and probably did at some level. The gym was my main escape. It made me feel better and allowed me to put one foot in front of the other. I would come in a mess, and my trainer would say, “No tears here. Put on your gloves. It’s game time”. MMA/Kickboxing training with him allowed me an entire hour where my focus and energy was on something else. My late brother was my inspiration for fitness. He ran two NYC marathons, obtained his personal trainer certification, and kept an overall active lifestyle. He was the one in the family who really used physical activity to involve everyone—from kids to hesitant adults. I wanted to carry on his fitness torch when he passed. I wanted to make him proud. So, I kept pushing myself. Always thinking and knowing he is right beside me through each challenge. Not exactly sure what, when, or how, but all I know is that I hope to inspire others in the journey and eventually reach my purpose. HAYLEY: A figure competition is quite a departure from powerlifting and MMA. How did this come about? JAMLEN: I reached a plateau in my fitness results, and I wanted to break it. What better way than having a competition to prep for? The training and diet was a complete shift. My coach, Diana Becker—of Anchored Fitness—is very sweet and supportive, and tailored all of my workouts and a meal plan for me.

HAYLEY: How did it feel to step on stage? JAMLEN: My legs and face were shaking! At first, I told myself, “just have fun with it”. Then I walked center to face those bright lights and judges. I didn’t even know my smile could shake from the nerves. Hearing and seeing my support system in the crowd kept me going. When judges were calling my number during the line-up, I had to be instructed to move by someone else on stage. I was so dazed that I wasn’t hearing well. I got off stage, and my coach said I made first call outs—which meant I was in the top 5 or 6. It was during Finals that I found out I placed 3rd. It was quite the experience for my first show. HAYLEY: Any more shows in your future? JAMLEN: During the hardest moments of prep, I said, “heck no”. I’m guessing that was due to hunger or lack of dark chocolate? I want to see how I do in my off-season, discuss a little more with my coach, and do more thinking before I commit to another competition. There’s always room for improvement, and my body will always amaze me with what it can do with proper diet and training. HAYLEY: How did achieving this goal affect you? JAMLEN: I am much happier and more content with where I am in my life. Sometimes, even in my 30s, I feel like I don’t know what I want to be when I grow up. I gave my best for this more-mentalthan-physical challenge, and I conquered it. I believe I truly can do whatever I set my mind to. Although I don’t know what the future has in store for me, I will take it one day at a time, and once I find my calling—or a different challenge—I will kill it!

HAYLEY: Describe how approach, motivation, and support played a part in this process. JAMLEN: My approach was to take it literally one day at a time. I told myself, “get through today’s plan.” For example, five minutes into my cardio or food prep, I started thinking about what I had to do the next day, and immediately got flustered and thought about stopping. I had to focus only on what I needed to do in the present moment. I do not have control of what will happen in the future, so worrying about it in the present won’t make it better or worse. Motivation comes from the family/friends/acquaintances who are proud of my journey, and look to me as an inspiration for their own goals. I don’t want to let them down. I don’t want to let myself down. I want to show them that I won’t quit, so they shouldn’t either. My support system is what ultimately got me through this—my boyfriend, my coach, my friends and family. I am truly humbled by their encouragement and guidance.

It’s a quiet, modest dining room tucked into a sleepy row of apartments and bodegas on 36th Avenue—not typically what one might associate with Brazil—but this is a different taste than what you might have come to expect. Those same ingredients blend with a cream of dried shrimp and fish, which is spooned in dollops atop fritters of mashed black-eyed peas. A trio of pastel de carnes arrives with a ramekin of peppers and onions that liven the meat-filled pastries. Pasta pillows of chicken and fresh mozzarella arrive in a blanket of Creole cream sauce.

Herbert Gomez, the chef and owner, is as soft-spoken as his deliciously-nuanced Brazilian cuisine. Throughout the course of dinner service, he peaks his head frequently into the dining room, which is full of friends, family, and guests. Red and white carnations decorate the tables with an old-fashioned charm. Service is attentive—even exceptional, at times. For a quiet respite from the hustle and bustle of the city, it is well worth a visit. If you can snag a seat, Saturdays are particularly great. It’s the one day you can order the Brazilian National Dish—Feijoada Completa—a black bean stew made with dried meat, pork, ribs, sausage, and bacon, all served with rice, farofa (yucca flour), and sautéed collard greens.

Your caipirinha can be blended with lime or passion fruit, and sangria is available by the pitcher. Be sure to ask to see a dessert menu, where the passion fruit mousse and coconut flan frequently sell out.
