As we prepare to welcome the start of a new cycle of 366 days—don’t forget there’s a Feb. 29 this year—we have plenty to look forward to. With the New Year comes new resolutions—and it is always essential to find exciting ways to maintain that fervor we harbor at the start of the year. So, with being healthy comes a story of Sexy Batch cookies, as well as a 24-hour organic market. New restaurants continue to open, so this month we make stops at a beer hall in Long Island City and a tremendous new Indian restaurant featuring a seasonal menu. Old favorites surprise us with some new tricks, like the transcendent organic roasted half chicken at The Thirsty Koala. Cocktails are elevated to new heights at a comedy club on Vernon, and some of Astoria’s most gifted bartenders compete in an exciting face off at The Bonnie. wner Nieves of Sexy Batch Baking Company has made it his business to become a staple in western Queens. He sells his cookies, made from the highest-quality ingredients, at the local businesses that he himself frequents: Astoria gaming store The Geekery HQ, rock climbing facility The Cliffs at LIC, and Queens gyms. freshly baked cookies with him wherever he went. Now, he’s known for spending time at the businesses that carry his cookies so that he can truly get to know the community. And since he has embraced the western Queens community, the community has embraced him, too. Here, Nieves shares with BORO the secrets to Sexy Batch’s growing success.
HAYLEY: Tell us about the origins of Sexy Batch. NIEVES: I’ve been on my own since the age of 14 and lived in a house that had rooms for rent. I had to learn at a young age to cook for myself. Once I found the joy that food brings, I quickly became a natural host.I’d host barbecues, birthdays, dinner parties, game days, and bake for friends and loved ones. I grew up on welfare, and sometimes had to eat at friends’ houses. This was very embarrassing as kid. As an adult I never want anyone to feel the way I did. So if you are with me, you have what I have. A lot of friends put the seed in my mind that I should do this for a living. I didn’t think I was able to pursue a career in food because I have no formal training. About five years ago I got my first job in the film industry [in] craft services. From there, I started Sexy Batch (two years ago in October). I had been trying to find my path in life and how to make my mark on this world. I incorporated and made business cards. That November I handed out my cards just to show my friends my new project. The week before Thanksgiving I had emails and texts asking where to place orders. I quickly set up an email and got going.Christmas arrived, and with it increasing orders. Without realizing it, I had been building my brand for 20 years. People who know me and have had my food know that it’s quality and made with love. Since then it has been full steam ahead. H: What is your primary client base? N: Someone who enjoys good qual-
ity food/baked goods. My spectrum of clients is pretty vast. Everyone enjoys cookies. People can find me on Facebook, Instagram and Twitter @ sbbakingcompany. They can also order on my website, www.sexybatch.nyc. H: How did your connection to the Queens fitness community come about? N: I’ve always been very social.Even before I started Sexy Batch I would bring homemade goodies to wherever I was going. I was training at a box in the city and found myself helping people with food and cooking questions. I quickly became the resident chef and catered their events. About a year ago I found CrossFit Bell. [Crossfit Bell coaches] Dom and Anthony were very inviting and quickly welcomed me into their community, where once again I became the resident chef. I also rock climb at The Cliffs LIC, where I sell Sexy Batch cookies. H: Describe a typical day in the life of your business. N: Wake at 6 a.m., put the oven on, start iTunes and find music to match my mood. Shower, get dressed, read and reply to emails. I check the orders, start making the day’s dough, and get to baking. Post on social media. Bake, bake, bake, then out the door to make deliveries. After that I like to head to stores that carry Sexy Batch cookies and spend time there to get to know the community.Hopefully,I get all this done before my Strongman class starts at City Strongman. Then home to shower and slow my day down by reading articles
about cooking/baking for inspiration. In between all that I try to remember to eat and make sure to stay hydrated. Clean up my work area, then it is off to bed. Wake at 6 a.m. and do it all over again. H: Do you feel like western Queens plays a definitive part in your business? N: I believe so because now that I own a small business, I have appreciation for small businesses and the [phrase] ‘support local.’ I enjoy going to places in Queens and want to support them more. I’m very social and have given cookies to a lot of the businesses I frequent, which in turn has lead to some business opportunities for Sexy Batch. I believe that the best way to strengthen a community is to keep the money flowing in the community. My cookies are at The Geekery HQ where I play Magic and D&D. There have been times where I pick up a check and then I spend my money there on a game or book instead of going online. I like to ‘vote’ with my money. If I like a product or a service I buy in support of it. H: Do you feel that the business fills a need in western Queens? N: Sexy Batch is so young. It is my hope that it will. Especially with jobs, community service and leadership. I want to be in the community and be a leader in it. I believe that Queens has embraced Sexy Batch because I’m social and giving. I share my passion with everyone I come across. And that has a tangible effect on people. H: How do you envision the business growing? N: Well, the first thing is getting a commercial kitchen so I can really start to build the brand. n Monday, January 4th, The Bonnie hosted the inaugural evening of The Queens Cup—a competition designed to showcase some of the most delicious cocktails created by some of Astoria’s most gifted mixologists. Bartenders and fans gathered in the back room of The Bonnie, where the drink wizardry was underscored by Spotify playlists chosen by each featured bar. Participants were asked to use Bulleit Bourbon as a spirit base, to be mixed with a maximum of five ingredients. The panel of judges scored each cocktail on originality, appearance, aroma, taste, and creativity, while the audience also voted for a People’s Choice recipient. The Queens Cup was awarded to Sweet Afton, where the botanical genius of Mike Di Tota blended ‘The Holy Pilgrimage’, which employed sumac-infused Bulleit, rose petals, garam masala, and lemon. His spicy floral libation won Sweet Afton not only The Queens Cup, but $250 to be donated to a charity of choice. The People’s Choice Award went to The Pomeroy, which served ‘Romance Under Hells Gate’—a blend of Bulleit, chileinfused crème de cacao, Cointreau, and a garnish of shaved chocolate. In addition to the winners, strong showings were offered by Mar’s, The Ditty, Sekund Sun, Sanford’s, Pachanga Patterson, Diamond Dogs, Sparrow Tavern, William Hallet, and The Bonnie. From bruleed marshmallows to cornhusks and star anise, creativity was the common theme. 10 I BOROMAG.COM I january 2016

Rarely has one roof held such diverse talent in the world of cocktails. It was a breath of fresh air to see familiar faces from so many favorite bars coming together to support one another. “I felt like we won just being a part of the event,” said Mike Elezovic, of Diamond Dogs. “Brooklyn and Manhattan get all the love, so it’s great to see all the Astoria bars becoming ever so tight knit. We have something special going. And just being a part of it is the only award we need.”

hen someone mentions a comedy club, “fine craft cocktail” is probably not the first word association that jumps to mind. But just as the art of great humor is a complicated blend of anecdote, wit, storytelling, timing and physicality, the elements behind a truly great comedy space demand far more than merely a revolving crowd of funny men and women to elicit guffaws from the masses. Long Island City has gradually been gaining clout as a hub of clever, nuanced and delicious cocktails in the New York City drinkscape. But The Standing Room, somewhat hidden smack-dab in the middle of the busiest section of Vernon Boulevard, is rapidly becoming a lounge that wondrously stands out from the crowd. Blink and you might walk past it. But once you find your way in, it is an experience you will not soon forget. Developed by a team that has represented some of the city’s most hilarious men and women—and regularly brings them to the stage in LIC—The Standing Room recognized a need for more than just laughter. n a borough that boasts the city’s most popular beer gardens, Long Island City had seemed to be missing out on the draft scene—at least when it comes to spaces devoted solely to the art of the tap. Bierocracy opened this past November as LIC’s fresh take on a Central European-style beer hall, featuring 200 seats, as well as a 48-seat bar. The 4,000-square-foot venue features a lovingly edited list of draft and bottled beers. One of the main draws, however, is the selection of beer-friendly foods. As Bierocracy recently extended its hours and menu to include brunch, BORO decided to drop by and check it out. We grabbed a seat at a communal table, ordered a few cocktails, and then dove into the menu. As most plates are enjoyed family style, be aware that individual orders will be delivered as they are ready. A meal at any beer hall must commence with a basket of warm Bavarian pretzels and spicy beer mustard. A homemade biscuit topped with brisket and crowned with a poached egg arrives in a savory pool of redeye gravy. Smoked salmon is added to a BLT, and French toast stuffed with mascarpone is accompanied with bourbonkissed syrup. A luscious piece of quiche came studded with pork belly and golden cheddar. But the lobster Benedict was the dish that stole the show, perched on a toasted English muffin and blanketed

“W
ith our seasonal menu, we are focusing on a climate zone that is very similar to New York,” says Sonny Solomon, owner of Kurry Qulture on 30th Avenue. “In India, the houses are not heated, so the only way they keep themselves warm is with spices like cinnamon, clove, black pepper—and the gravies and sauces they use this time of year are rich and have a kick to them to keep the body warm.” Dishes on the menu that embrace the heartier fare include rogan josh (lambshank prepared with kashmiri chili, ginger and garlic) and shalgam goat curry (a savory root vegetable stew).

“When you eat those dishes, it really warms you up,” Solomon says, smiling. “But we also want to focus on what is available in the New York market, so we have dishes like a turkey keema.” “Hemant Mathur has graciously helped us design the winter menu,” explains Sonny’s wife, Vanessa Solomon. “Hemant and Sonny are like peanut butter and jelly. They’ve been working together for years, and are the best of friends.” The duo helped earn Michelin stars for both Devi and Tulsi in Manhattan. Now, they have brought their talents to Astoria, which the Solomon family has called home for more than a decade.

Presently, Kurry Qulture offers a $33 prix-fixe menu, which includes soup, two entrees, rice, naan and dessert. The menu is beautifully executed by Chef Ravi Bisht. A cloud of homemade puri arrives with a peppery mound of minced pumpkin, while salmon and crab croquettes are served with a pickled green Chef Ravi Bisht chili aioli. One of the most exceptional dishes I tasted this past year was the Manchurian cauliflower at Kurry Qulture. Crispy coated florets are tossed in a chili tomato glaze, then sprinkled with chives. Portions are more than adequate to share with the table, but trust me, this is one you won’t want to split with anyone. Chicken kebobs are delicately seasoned with fennel, cardamom, coriander seeds and a sweet apricot chutney. sauces to ever dress a lamb shank. The cocktail menu comes from the whimsical mastery of Bo Dhale and reads like an ode to Astoria. Drinks range from the Thirstiest Avenue to Astoria of My Life. The day we stopped by, Dhale was mixing a homemade chili pineapple syrup that he adds to Mexcal in the Hex-Mex. Kurry Qulture is housed in a stunning setting with contemporary Indian photography and furniture designed by Solomon. A back patio features a
traditional Indian wishing tree, where colorful strings of wishes are knotted to the branches. The 24-hour organic market on Broadway became so popular, in fact, that they recently opened a satellite location across the street, called Greenbay Essentials. The new location sells organic vitamins, all-natural vitamins and supplements, and organic toothpastes, shampoos, soaps and oils. “We will soon be offering our own custom line of shampoo people can infuse with personalized Organic ingredients,” Ozbek avocados says. They even offer kombucha on tap. “I come after my serving shift ends around 2 a.m.,” one regular customer said. “It’s nice because it isn’t crowded and you can take your time.” Beyond the sushi counter and hot buffet, the butcher is one of the store’s most popular de-

partments. “We offer healthier meat that can be tough to find,” Ozbek says. With names like D’Artagnan and Murray’s, customers can rest assured their products are local and antibiotic- and hormone-free. Rather than take our word, you should probably peruse the store yourself. We love the organic cereals, precut assortments of mushrooms and asparagus, as well as the truffle butter, honey crisp apples and steamed shumai. hough it seems like only yesterday we were anticipating the opening of the first Aussie eatery in Astoria, the reality is that The Thirsty Koala just celebrated its third anniversary. Katherine Fuchs (former FDNY chief turned executive chef), Alex Styponias (Astoria-born mixologist, raised in Greece) and Christine Chellos (Aussie native and financial adviser) invited BORO to try some of the new dishes intended to denote the restaurant’s third birthday. The charismatic and all-around beautiful trio of devoted owners have been at it again, Cranberry goat and this time they cheese flatbread have turned out some particularly inspired changes to the menu. First and foremost—go and order the roasted half chicken. Generously rubbed with oregano and lemon, the bird is served on a pedestal of quinoa. In a single dish, Chef Fuchs has divined the most juicy, flavorful, tender, mouthwatering bird to hit a dinner table. With a skin that is golden and crisp, a prodding with the fork will release savory juices that drip like melted butter onto the platter. It was addictive, and I have dreamt of it nearly every day for two weeks. Just go. Order it. Other exciting additions included a daily rotating flatbread, one version of which features tart cranberries on velvety goat cheese with a slathering of pesto and a tangy arugula sprigs. available—and highly recommended—in a bowl of its own, where it is prepared with earthy pumpkin, bright mint and sweet orange. Australian rib-eye is served with a Tasmanian pepper berry sauce over a buttery mound of mashed potatoes, accompanied with a hearty bundle of haricots verts. A generous filet of salmon is seasoned with a blend of herbs and citrus, then baked en papillote—wrapped in parchment. The resulting aroma as you unwrap the package will instantly sweep you away to the reefs of Australia. Prepare to indulge in one of the most delicious renditions of eggplant Parmigiana, where tender layers of golden-crusted aubergines are stacked with a blend of soft, melted cheeses and piquant tomatoes. Australian favorites remain

ne of the most wonderful rewards of being a writer is when you get to use your words to inspire others—and not simply to indulge in a new restaurant, experience a new play, or peruse a new store. I am talking about those particularly meaningful opportunities you get to inspire, encourage, motivate, and even awaken. When Dena Wolk and Jorge Betanzos—of the Bronx Early College Academy X324—reached out to BORO Magazine to participate in a weeklong intensive exploration of the culinary scene in New York City, I jumped at the chance. I was invited to speak to their students for

three hours about my career as a food writer, editor and photographer. And while we enjoyed a day of mini lessons about descriptive writing, employing the use of meaningful adjectives, along with anecdotes about bizarre foods and unique encounters, the culminating experience came when the students were invited to try their own skills at a restaurant right here in Astoria—The Queens Kickshaw. Owners Ben Sandler and Jennifer Lim reserved the back room, where they discussed the intricacies of running a restaurant with 30 middle- and high-school students. Chef Kenji Hurlburt then shared some of the joys and challenges of running a kitchen. Students were served portions of the kale salad, classic grilled cheese, and macaroni and cheese. The following is a sample of what the young adults had to say.
Ruth M. If you like slightly eccentric coffee shops with mouthwatering meatless menus, then you’ve surely heard of Queens Kickshaw. This restaurant, located in an inconspicuous corner on Broadway, opened in 2011 and was founded by Ben Sandler and Jennifer Lim. The couple decided to open a restaurant together after their successful wedding, which ended in them marching down a vacant street in Downtown Manhattan. A very distinctive wedding, may I say. But what’s even more distinctive is this establishment’s cuisine.
Although you cannot indulge yourself in a delectable serving of a juicy steak coated with barbeque sauce and a side of mashed potatoes here at the Kickshaw, you surely can indulge yourself in some delicious foods. If you haven’t figured it out, Queens Kickshaw is a vegetarian restaurant. That’s right—they manage to serve scrumptious foods without having to include meat. The grilled cheese, for instance, will leave you yearning for more of that crunchy toasted bread and the tangy melted cheese. It’s an explosion of incredible flavors right in your mouth. The mac and cheese served here surely puts Kraft to shame. You’ll certainly disagree that Kraft is the cheesiest after you try the macaroni and cheese at the Kickshaw. Just by looking at it, you know this is a dish that will rock your taste buds. Although slightly bland, it consists of some squishy macaroni and an overload of elastic melted cheese. It even contains green beans in the inside, which will be a nice addition for you protein lovers out there. You could tell this workplace is enjoyable by the way the staff treats you. The minute you sit down, a waiter comes and tries to tend to every need you have, and in a friendly manner, too. It’s already great that the outside of the restaurant is extremely alluring, giving customers a glimpse into the warm, pleasant atmosphere. What’s even better is that all your pre-conceived thoughts are proven true once inside. Dim lighting and a homey feeling are pretty much the best phrases to describe the rustic setting of Queens Kickshaw. And let’s not forget the music: ‘80s and ‘90s songs seem to be the preferred playlist, but who’s complaining? Jaylene C. Stepping into the restaurant, one can imagine seeing people on their computers, drinking their coffee. Once one hears the music, it was like being home away from home. The environment that this establishment seems to be a part of is a casual setting. Once the restaurant dimmed the lights in our section, the establishment had a rather bohemian feel to the place. The smell that was recognizable is grilled cheese and coffee. Queens Kickshaw reminded me of an ABBA music video. When the food finally arrived it looked like the food would exceed my expectations of vegetarian food. Usually, whenever one eats a grilled cheese it looks like it’s been cooked with butter. This particular Kickshaw grilled cheese didn’t look like it was made with butter. But the aesthetics were really appealing to my eye. It felt like heaven. It was so golden. Imagine seeing 30 grilled cheeses; it was like seeing the gates of heaven. One might say that the kale salad was one of the best entrees because of the combination of fruit and veggies—also the pecans. The kale salad was très fantastic.

Sissi S. The restaurant was opened in 2010 by a newly married couple that moved to Astoria. They began with barely any experience of managing a restaurant, but they learned with time. The co-owner Ben was a waiter and barista in multiple restaurants, in which he developed skills to run a restaurant. His wife Jennifer, on the other hand, had no experience with managing a restaurant of her own, but was an expert in business, which helped with finances. As you walk into The Queens Kickshaw, a smell of onions hits you, not in an unfavorable way, but I must warn you if you’re a bit sensitive to scents, your eyes might water a bit. The restaurant was illuminated by the translucent window, and the restaurant had miniature lights hanged from the ceiling, which shined a golden type of color and gave the atmosphere a toasty, comfy feeling. The tables had a coffee bean color, matching the brick walls. The tables had hooks in the bottom, which was a bit unexpected but was handy. The mac and cheese had a stringy, satisfying texture, which made the
dish fun to eat. As I ate more there was an unexpected surprise I found. The green beans in a modest quantity gave the dish a curveball in taste. [With the kale salad], never have I ever tasted such a savory salad, and I mean that in the best way possible. For the first time I didn’t just taste leaves—the nuts in the salad and the caramelized apples had such a sweet taste that balanced the salad’s overall salty taste, which made the salad delightful to eat. The Queens Kickshaw isn’t only a restaurant but also a bar and coffee shop. The owners made sure it had a vibe that appeals to all customers. It had coffee tables, and couches in the front for the people who wanted to relax in a dim lit place. It had a bar with stools for those who came for a quick drink with friends, and larger tables for those who came in groups to eat lunch. aul Zepeda has employed the harmony of vibrant color, bold texture and symbolism to create more than 200 successful exhibitions. His works have been seen in institutions such as the Guggenheim Museum here in New York and the Museo Maya del Mundo in Merida, Mexico. His abilities have been cited in The New York Times and Forbes, as well as broadcast on CNN and BBC World News.
Beginning this past December, his work has been displayed in Long Island City’s farm-to-table eatery, Crescent. His show there, entitled “Fresh Off the Easel,” was met with such acclaim that it was recently extended for two more months, with a closing reception scheduled for Feb. 25, 2016. The exceptionally gifted and wondr ously prolific artist recently shared some of the pieces from his current show at Crescent with BORO Magazine.
