STREET STYLE

BABY, IT’S COLD OUTSIDE BY MARIE TORIO

I

@PHOTOSBYMARIETORIO

t's that time of year when temperatures drop and everyone starts to bundle up in order to brave the cold. But the western Queens residents I spotted on the streets of Astoria this month didn’t just throw on a coat and call it a day; a lot of thought was put into some of the styles that captured my eye. Even though locals had to cover up their outfits with outerwear to step outside, they made sure to show their personalities through their cozy hats, boots, coats and accessories. I appreciated the details that Astorians focused on in their looks, including textures like velvety leggings and hints of color like a pumpkin-orange hat.

Samantha (@samsirignano), an Astoria resident and real estate agent, was about to grab some dinner after work when I spotted her. She described her style as “professional and classy.” Her tan coat, infinity scarf, hat and classy, chain-linked Tory Burch crossbody created a well puttogether look.

Amanda (@polli_amanda), who works for the ad creative department for National Geographic, was enjoying her day off with her friend. She said her style is “classic with an edge.” I totally love when people accurately describe their style. Amanda’s booties accented with a steellike toe, along with her crosshatched, crossbody bag complemented her classic look for sure.

Brian (@brianpinkston) is originally from D.C., but he’s now an Astoria resident. He works in investor relations and called his style “modern and basic.” Cozy jacket — check! Faded, rolled-up jeans — check! Laced-up booties — check! Well done, Brian.

6

Isabella (@bellarina26), a communications coordinator, was strolling around after eating brunch at Sugar Freak. She described her style as “cozy chic” — a spot-on description. Her orange beanie, cozy sweater and chic high boots made this look so unique … so street! I see you, girl!

JANUARY 2019

Karyn (@karynpg), senior sales manager for Parkland Hotel, was out and about with her friend when I bumped into her. She told me that she loves to keep her style casual and to accessorize. I loved her velvety leggings, blush pink booties, warm knitted hat and fur trim collar. She absolutely spruced up her look with textures and color.

Max (@maxinthebigcity) was on his way to get some Pho at District Saigon after work when I met him. He had an awesome sense of humor in addition to sporting a great look. He told me that while he was currently wearing work attire, he usually rocks khakis and flannel.

Sabrina (@_sa3rina_1) is a real estate assistant who was waiting for her client when I spotted her. Originally from Germany but currently living in LIC, she said her style is “street and casual. I liked how she threw a pretty floral scarf into the mix with her navy and brown outfit.

Let’s Get BY REBECCA PATTON @BECCAPATTONSAYS @BECCAPATTONSAYS

PHYSICAL

Come each January, the gyms become fit to bursting with people trying to get in shape. But it’s no wonder so many fall off the exercise wagon when they’re left to their own devices, randomly pumping iron and scrolling through Instagram on the elliptical. Even the most earnest New Year’s resolutions can fall by the wayside when things get busy, difficult or inconvenient. That’s where personal trainers come in. Think of them as your cheerleader, life coach and friend all rolled into one. The personal trainers featured below come from different countries, live in different western Queens neighborhoods, and have different day jobs, but all 11 of these professionals share one trait in common: They tailor their programs to their clients, helping them becoming fitter, healthier, happier versions of themselves. Get to know the personalities behind your neighborhood’s personal trainers.

1. BRITTA WHITTENBERG While her day job is working at Mark Fisher Fitness in the city, Whittenberg has a personal trainer side hustle. She hosts clients in her Astoria apartment, travels to them, and also rents space from a Midtown gym. As for the sessions themselves, she mainly teaches strength training and described her style as “very relaxed and goofy”— but perhaps her Instagram handle gave that away. “I’m very personable and very weird,” Whittenberg explained. “I have a very welcoming and open attitude to all clients, so they can feel comfortable to be themselves and not feel like they're going to be judged in any way.”

2. VARVARA KALININ Astoria resident Kalinin is a dancer, so it only seems natural that she would prioritize posture. She described her sessions as “cross-training grounded in Pilates, corrective exercise and post-rehab,” and the first time she meets her clients, she studies their gait, noticing any habitual movements and patterns. “The way I train is more of a body conditioning session to stabilize the body and make movement more efficient, versus just pure weight lifting,” she said. And her goal, ultimately, is to make her clients feel more at-ease in their bodies. “Exercise should make you feel better— and happier!” she said.

3. CHELSEA GROEN she said. Groen hosts clients in her Astoria apartment but can also travel to them. She even offers remote plans, providing customized workout PDFs and demo videos.

“My personal style is to be kind and encouraging while also kicking your ass,” Groen said, describing her workouts as high-intensity interval training that combines cardio and strength training. The benefit of personal training, she said, is the motivation. “You're going to work harder with a personal trainer even more than in a group setting because it's one-on-one, and you don't have anybody to hide behind,”

4. ETHAN BAUM Baum and his colleagues Stephen Ferguson and Joel Febus form a training group called Training Boost Project powered by CrossFit Queens in Astoria. Although the three men are CrossFit certified, their personal training goes beyond that method: “It’s about moving better, moving more efficiently, and pain-free,” Baum said. Every time the personal trainer

sees new clients, he starts with a free assessment, where he inquires after health concerns and fitness goals before facilitating a mini workout. “When I sit with someone for the first time, I literally tell them, ‘This is me. This is what you're going to get!’” Baum explained. “I'm not going to flip personalities on you once we get out on that gym floor.”

5. BROOKE TAYLOR Astoria resident Taylor moved to New York about 14 years ago to pursue dance but became certified as a personal trainer— “honestly so I could have a free membership,” she said, laughing. She ended up training at New York Sports Club for 10 years before starting her business, Taylored Fitness, while she was heavily pregnant with her firstborn. “I birthed two ‘babies’ at the same time,” she said. It’s been six years since its launch, and Taylor now has a team of personal trainers who coach people in-home and at gyms in Manhattan and Queens. Taylor also has an online program called Ignite, which she’s currently turning into an app. “It’s not really a job to me,” she said. “I’m dreaming about it; I wake up thinking about it.”

6. DORIAN CERVANTES

Photos by Martina Milova

Cervantes is a dancer by trade, so it only makes sense that she would incorporate dance into her day job. Not only does she lead group classes like Cardio Dance Your A** Off and Shredd at the Park (hosted in Astoria Park), but for her one-on-one classes, Cervantes trains clients in-home, at their personal gyms, and out of Iconoclast in Manhattan. And although personal training can sound like a dirty word for some people, Cervantes wanted to change people’s outlook, comparing it to visiting a spa. “We are here to make you healthy, to make you happy, to make you feel good— not to intimidate you,” the Long Island City resident said.

7. GABRIEL JIMENEZ

Photos by Danny Suarez

Jimenez has been at Sage Fitness Astoria in his home neighborhood for the past two years, where he trains clients based in the Functional Patterns methodology. He described Functional Patterns as “optimizing our body and our movements as intended by nature.” Like Kalinin, he’s big on gait analysis, explaining that he can tell how damaging someone’s sedentary lifestyle is just by watching them walk. But the good news is that this can often be course-corrected: “By fixing the most basic movement, we can greatly enhance agility, mobility and explosiveness as it relates to sports performance,” he said.

8. MARIYA MOVA Photos courtesy of Mariya Mova

Mova’s first order of business with new clients is asking what exercise they hate, because she doesn’t want to torture them with something they’re miserable doing. “This is not a football team!” she said. “I want them to enjoy the workout and to be looking forward to it.” Mova, now an Astoria resident, has lived everywhere from Australia to Dubai. She still has clients contact her from the far reaches of the world, which is a testament to her personal training abilities. “I don't stick to a workout that I've been doing 20 years ago,” she said. “I like to learn new things myself, and then I like to share those things with my clients and always make their workouts new, innovative, fun and [challenging].”

9. DANIEL MCKENNA Although McKenna was born in the Bronx, his parents moved back to their native Ireland when he was four. The personal trainer relocated to New York two years ago— ironically to the very Irish Sunnyside. In addition to training clients out of the Independent Training Spot in Manhattan, he plans to start at New York Sports Club Lab in January. “I’m hoping to bring my own Irish stamp onto some classes,” he said.

What’s more, McKenna emphasized that he tries to make his sessions fun— while also giving clients a great workout. “It definitely wouldn’t be a boring gym session,” he pointed out.

10. LUIS NOVAS “A lot of times we get caught in routines in life, so this translates heavily into the way that we do our exercises,” Novas said. “[W]e're just so repetitive with the training that it becomes monotonous, and the body acts accordingly.” The Astoria resident is currently a personal trainer at the Blink Fitness on Steinway and will also begin teaching classes at The Row in February. The benefit of a personal trainer, he said, is to have an outside perspective— someone who can find the flaws in your routine and shake things up. Novas is obviously passionate about what he does, and he emphasized building a rapport with his client and getting them to loosen up. “We always have fun,” he said. “We’re always joking.”

11. DAN GONON Gonon emphasized the importance of educating clients, describing the Sanctuary Method as “an Ivy League education for wellness and health, as opposed to just typical workouts that make you sweat. We're trying to train you to be good at the sport of life, and that requires a lot of education.”

$100-$150/HOUR, IN PERSON DAN@SANCTUARYMETHOD.COM @SANCTUARY_METHOD SANCTUARYMETHOD.COM

You’d be forgiven if you’d never heard of the Sanctuary Method before, which Gonon utilizes in sessions. His friend, JJ Caruncho, founded the method, which Gonon described as “a new wellness art that fuses and combines the best of all worlds.” These “worlds” include gymnastics, calisthenics, yoga, performance psychology, nutrition and even meditation. He lives in Long Island City, so he trains clients in-person and also does remote personal training.

FOOD + DRINK

Astoria’s

ARCADIA

JANUARY 2019

BY DANIEL GROGAN

Eight years ago, George Hatzopoulos sat in the bar previously located at 12-21 Astoria Blvd. and had a drink with his cousin. “My first week back from Greece, my cousin was like, ‘Hey I know this cool spot,’’’ Hatzopoulos said. “This place used to be called Hell Gate Social. Right here was where I had my first-ever drink on American soil. I can’t even make that up. Six dollars got you a shot and a beer.” Now the bar is called Arcadia Bar and Kitchen, and Hatzopoulos runs it with his longtime friend George Alatsas. Both Georges were born in Astoria; Hatzopoulos was raised in Greece, while Alatsas was raised right here in Queens. Shortly after Alatsas moved back to the States, the two began collaborating. “He worked at a restaurant on 30th Avenue called Ovelia, and I used to frequent the bar there,” Alatsas said. “And I was working at Central, a club on Steinway and 20th Avenue.

Photos by Marina Hatzopoulou I was looking for someone to work as an assistant manager; I was a general manager. I saw his work ethic and the way he dealt with customers and the way he dealt with people and I approached him about the job.” It was not long before the two began scouting locations for a bar of their own. “I know the neighborhood and I know the potential that it has for business, especially this kind of business,” Alatsas said. “We looked at a few different locations, but we knew this was the one. We loved the space.” “Plus, Astoria was a place that we had all worked in,” Hatzopoulos added. “It was the people we knew the most and the area we knew the most. We feel more comfortable in Astoria.” And their clear affection for the area hasn’t just led them to set up shop here; they have also made sure that the space provides a creative outlet for community members. The wonderful murals on the walls of the bar were painted by local artists who had previously worked on the Welling Court Mural Project.

28

JANUARY 2019

“We had some local artists come and do some paintings for us,” Alatsas said. “When we were still under construction a few artists approached us and told us they’d like to do some work in our place so we hired them.” The artwork was unveiled on March 15, 2018, when Arcadia Bar and Kitchen opened. The location’s sizable square footage, which includes a large courtyard area, serves as a performance space for local musicians on Thursday nights, as well as aspiring performers on the first Friday of every month. “We do live music every Thursday,” Alatsas explained. “The open mic we did for the first

time last Friday and we plan on doing it the first Friday of every month. It went very well … a lot of local talent. There were some poets, some musicians.” “It’s mostly an open platform for anyone who wants to perform,” Hatzopoulos said. From comedians to trumpeters, anyone with confidence can show off their chops at Arcadia Bar and Kitchen. And speaking of the kitchen, chef Fred Zullo, Alatsas’ childhood friend, whips up dishes that are both Instagram-worthy and delicious. The menu was created in one think-tank-like session between the Georges and Zullo. Regarding the wide array of op-

tions Alatsas said, “My father is also a chef and he told me one thing I’ll never forget. He said when you’re designing your menu, if the food is good enough for you to really enjoy it, then it can be on your menu. Don’t overthink it.” This philosophy applies to most aspects of their operation, Hatzopoulos explained: “We don’t overthink it because we know what we’re doing. Most of the time we’re on the same page, and that comes to the food, drinks, running the place, anything.” If one thing is certain, both Georges are committed to making Arcadia a go-to neighborhood institution. They consistently work with the Old Astoria Neighborhood Association to make sure they do whatever they can to support the community, and they emphasize the use of products sourced from the five boroughs. Their signature cocktail, aptly called George’s Old Fashioned, blends aged bourbon with Barrow’s Intense Ginger Liqueur, made right down in Brooklyn. And of course, above all, they want to serve the community on an individual level. They both bartend every night, in the hopes that they can better get to know their customers. “We talk to them. We get to know them, and they get to know us,” Alatsas said. If you find yourself in the Old Astoria area, stop by for a drink and a bite to eat; you’ll be a regular in no time.

MEGA FIT The New Year workout that combines every class you need in 50 minutes BY CLAIRE LEADEN @CLAIRELEADEN @CLAIRELEADEN

“So is this your first workout on a Megaformer machine?” “Uh, yes?” I said. It took me two more times asking what the word was to actually remember it. A Megaformer. When I first entered the Lagree NY studio on 23rd Avenue in Astoria (off the Ditmars subway stop), I was a bit intimated by all of the machines and my fit classmates. I’ve done my fair share of exercise classes in New York — my old job used to give out free SoulCycle passes; I did ClassPass for six months, trying workouts from pilates to

32

JANUARY 2019

trampolining to Krav Maga; and I did personal training sessions at my local gym. But as I got used to my new freelance writing lifestyle (and budget) a few months ago, I canceled my gym membership and have recently just been taking long walks or jogging for exercise. All that is to say, I didn’t go in with a super fit background — and no, I hadn’t encountered a Megaformer before. My lovely instructor, and senior trainer Andrea Dusel-Foil, gave me a rundown of the machine (the infamous “Megaformer”) before class. It was lot to take in — there are two platforms on each end, a “carriage” that slides back and forth in the middle, long springs you adjust as per the instructor’s directions, multiple bars, numbers that indicate where you place your hands for certain moves, and more. It was a bit “in one ear out

T

the other,” but you catch on fairly quickly after the first few moves, and all it takes is a glance at the person next to you or some attention from the instructor to get yourself into the right place. Lagree is a high-intensity, low-impact workout created by former bodybuilder Sebastien Lagree. In his youth, Lagree spent 40 hours a week exercising using a variety of different workouts, from weightlifting to aerobics to swimming. And, besides just ruining his back and not getting enough nutrients, he spent basically all his time in the gym. That’s when he invented the Megaformer, a “springbased resistance trainer,” and the Lagree Method. The Lagree Method uses the Megaformer to “effectively combine resistance, endurance, core and cardio training to safely stimulate strength, flexibility and balance.” Squats, lunges, planks and pushups get a whole new life on the Megaformer and impact your muscles in different ways, allowing you to get the same workout as five different classes (or more) in one. Laurie Benenati brought this method to Astoria when she opened her licensed Lagree fitness studio, Lagree NY, in the neighborhood in October 2017. Benenati had been an active person her whole life, but formally worked in accounting after graduating from college. After a life-changing trip to Bali when she realized she just “couldn’t do it anymore,” she pursued her true passion of fitness full time. She took Lagree classes with her friend in California, and saw the true difference it made in her body — improving her core,

JANUARY 2019 I BOROMAG.COM

33

MIND + BODY flexibility, strength training and more. Benenati also loved that it wasn’t high-impact, so she could get in a good workout even with knee issues. Dusel-Foil and Eileen Kielty, head of training and development at Lagree NY, both live in the neighborhood, and have seen first-hand how much the workout has impacted themselves and their clients. “What I love about the Megaformer, especially with alignment and cross-training, is that you can still get your cardiovascular element in on the machine because you’re using your slow-twitch muscle fibers, which are your endurance muscle fibers,” Kielty explained. “So the slower you go, the higher your heart rate is. The slower you go, the more muscle fibers you recruit, and the more muscle fibers you recruit, the more calories you burn, and the more calories you burn, the faster the results.”

34

JANUARY 2019

Kielty and Dusel-Foil are both dancers, but said the workout benefits everyone — from CrossFitters to yogis to runners to nine-to-fivers. They have one client who was able to shave 11 seconds off her run time, because the machine helped make her hamstrings and glutes tighter. They also said that although you use muscles every day for regular tasks such as walking, sitting down and getting up, the average person sitting at a desk doesn’t engage their stabilizer muscles, which are the most important because they help hold your skeletal frame up — but the Megaformer uses all of them. Though the workout undoubtedly pushed my body to its limits, I didn’t find myself constantly checking the clock counting down the minutes. I think it helps that each moment is slow and steady, so you’re not scrambling to keep up with the movements,

as has happened with me in other classes. Plus, you only spend one to two minutes per move, depending on which body part you are working. Having to constantly refocus my movements helped me avoid getting stuck in my head as much. One of the other biggest issues I’ve had in other exercise classes is wondering if I’m in the right form or positioning, and sometimes with bigger classes you miss that one-on-one attention. Dusel-Foil was so helpful in making sure she came over and adjusted me, gave me modifications since I was newer (yes, I had my knees down on most planks) and kept cheering me on. It helps that there are only 10 machines, so the classes will never be overcrowded. Also, everyone was super welcoming and down-to-earth. Everyone in the class was grinding it out and would let out grunts and “ughs” when we were doing really hard

Photos by Anne Hugus Photography

moves — even the fellow instructors who were taking the class! Since you’re working out new muscle groups and “pushing them to failure,” as the instructors say, “because that’s where your body changes,” it can be pretty uncomfortable. My body parts were literally shaking uncontrollably as I held certain positions. But the instructors know how to support clients through this discomfort. “We want everyone to feel safe, because the first class can be alarming,” Dusel-Foil said. “Even if you’re like, ‘Oh my God, my muscles feel crazy,’ you know we’re watching you and you’re safe.” “We know this feels crazy,” Kielty agreed. “I tell our instructors to explain the discomfort … it’s not pain, but it feels so intense. That’s why we all take class from each other too — first to support, but also because you can’t teach what you don’t know how to feel in your own body.” That sense of support is important for Benati and the Lagree NY group to cultivate in multiple aspects — within their team of trainers, their clients, and the Astoria community at large. They often run cross-promotions with business like QWNS Cafe, Lockwood Style, Oak Point Health and Raising Astoria — whose clients they offer a 10 percent discount to, and also have a drop off ($10 per child) for their noon class on Fridays. Intro packages start at $32 for two classes, and from then on it is $32 per class, six classes for $180 or 10 classes for $295. They also offer memberships like eight classes per month for $220 or 12 classes per month for $320. Unlimited for the month is $340. Visit lagreeny.com for more info.

COZY &

COMPACT

BY ESTELLE PYPER @ESTIEPYPER @ESTIE_PYPER

Ilana Silver Mullen and Kristen Mullen tied the knot last September. Their apartment, aside from being incredibly cozy, is memory-packed time capsule of their journey as a couple.

F

or having moved into their brand-new Long Island City complex not even a year ago, the Mullens have efficiently filled the compact one-bedroom. “We downsized when we moved here,” Kris said. “So that was a big redecorating thing. We went from a two-bedroom small house to a onebedroom, which is great, but we had to be smarter about the space.” They came to LIC from Astoria, where Ilana lived when she met Kris, who was living in New Jersey at the time. The couple eventually moved in together in Astoria, then made the move to LIC after continuous bad luck with landlords.

38

JANUARY 2019

“We just have to live with a management company for our sanity right now,” Ilana said. “Because of our previous situation we wanted a place that no one’s lived in before,” Kris added. “We wanted to start fresh and find the best deal.” “And then we came across this place and were like, ‘Oh my God,’” Ilana remembered. That’s exactly what I said when I walked into the brand-new building on 39th Avenue. It’s impeccably clean and well-decorated. There is a courtyard in the center, a rooftop, game room, and study space – what more could a New Yorker want?

“I call it post-adult college,” Kris said, “because it really is a community. They have events, and we’ve met so many people who are in the same boat.” Kris is an executive assistant at a financial company in Manhattan. Ilana is in copyright infringement and just started a job which she can work remotely, so it’s a space that complements all aspects of their life, as a place to both work and unwind. The living room is exactly where you want to be all winter. There’s a very realistic-looking fake fireplace set up on one wall that acts as a heater (fake flames and all). When I visited in December, a mini Christmas tree sat next to the floor-toceiling windows, adorned with a Star of David for Ilana. And stockings (courtesy of Amazon) were hung by the fake fireplace with care. Framing the fireplace are two tall open shelves from Wayfair. “We went with open shelves because it’s a little space,” Ilana said. “So if it’s open and flowy it won’t feel so congested.”

They’ve used other small-space hacks like a beautiful wooden coffee table that slides open for storage. There’s a small desk, up against the wall adjacent to the fireplace, with open shelves extending to the ceiling above it – again stacked with knick-knacks and photos of the newlyweds. “We just had a lot of pictures we wanted to display,” Kris said. “And we keep acquiring more after the wedding.” The Mullens got engaged, got married and moved in together over the course

40

JANUARY 2019

of the same year, so they haven’t had much downtime to rearrange and add their wedding photos to the mix – something they’re hoping to do this New Year. Amongst the framed selfies and engagement photos are souvenirs from their travels. “We’ve got a little taste of everything. [Ilana] is a big traveler, so there’s something from everywhere, like those pieces are from Colombia,” Kris said, pointing out two colorful framed pieces near the bedroom.

“Everything is sentimental. If we’re in a new place, we like to take something to remember,” Ilana said. “Like, this beer candle with a cat on it. Obviously, we had to buy this.” The candle is from the Fat Orange Cat Brew Co. in Connecticut. Because their home has such a mix of travel memorabilia and personal touches, it’s hard for them to articulate what their design “style” is. “I love the bohemian, eclectic look, but it’s not entirely that,” Ilana said, “because, these shelves are more like restoration-y

looking, so it’s like if Anthropology and Restoration Hardware got together and had a family, this would be the product of it.” “And their cousin was Target,” Kris added. “I’d call it cozy.” The kitchen table does look straight out of an Anthropology ad. The dark wood table itself is from Ikea, but it’s set with patterned placemats in bright pink, blue and green, topped with stacked dishes: one black, one patterned. Even their two cats, Tilley and Taylor, dine from Anthropology bowls. To give the table a unique look, they swapped the generic Ikea chairs for rustic ones from Wayfair for one side and placed a bench on the other. There’s a centerpiece of fake pink flowers and a stack of paper napkins of a kitten hold-

42

ing the Swiss flag (which they stole from a café in Switzerland). The apartment is a modest size but an open layout, with the kitchen counter spaces and appliances lining only one side and melding into the living room. The only separation is their bedroom and the bathroom. “It’s literally a ‘bedroom,’” Ilana joked. “It’s a bed in a room.” They decided to stick with their kingsized bed which seems like it was tailormade for the space, fitting perfectly with only a couple feet on either side. Like their cozy-rustic living room, their bedroom has a similar feel with cool colors, fairy lights above the bed, and photographs and more personal trinkets from their relationship throughout.

Lining the top of their dresser are little handcrafted drawings made of watercolor and Sharpie with doodles of stick figures along with a cute message like, “Your Koala-ties are awesome,” and, “I love the internet for bringing us together.” “If it’s like a birthday or an anniversary or something, Kris will get me a couple of these to add to the collection,” Ilana said. “They’re like weird and quirky and we’re weird and quirky. I love it.” Next to those are her dried-out wedding flowers that she just doesn’t have the heart to get rid of yet. But when she does, I have no doubt that they’ll fill the space with another meaningful memory. As Kris likes to say, “Happy wife, happy life, I know. But as I said in my vows, it works both ways, too!”

FOOD + DRINK

Meal Prep

MAVEN BY ALLISON KRIDLE

Living in one of the most diverse cities in the world makes it hard to resist the temptation of takeout. All the dining options feel overwhelming, and ordering Seamless is pricey — not to mention takeout food doesn’t seem to ever make you feel good. You could cook, but that takes time out of the night when you don’t wish to lift another finger after work and the decision itself sets you back.

I

f you are familiar with these struggles, we may have found a solution: food prepping. As the founder of the meal prepping blog and Instagram called Workweek Lunch, Astorian Talia Koren faced the same dilemmas once upon a time until she started cooking and established her own business. “I started [Workweek Lunch] because I was bringing my food to work every day and my coworkers made fun of me, but then they were like ‘How do you do that?’” Koren said. “I was known as the healthy girl in the office. I just didn't want to spend money on takeout. It was never a health thing for me; it was always a money thing for me.” Similar to many New Yorkers, Koren knew that she shouldn’t (and couldn’t) afford to spend money on food every day

44

JANUARY 2019

while remaining independent and paying rent and bills. She quickly took to the craft of cooking and developed recipes. She became skilled enough to start a blog and an Instagram and gained over 170,000 followers in less than two years. “I intentionally started my blog to create a business, but I didn’t know it would turn into my full-time business. [I’m] happy recipe developing in my tiny kitchen and Instagramming for myself,” Koren said. The Workweek Lunch Instagram overflows with pictures of vibrant meals and tips on how to make them. Koren concocts and presents recipes such as tomato, sausage and orzo skillet; kale, quinoa and butternut squash salad; and tofu Thai bowls with snap peas, carrots, cabbage and homemade peanut sauce. Koren also includes preferred packaged snacks (Kikkerland trail mix and Breakstone’s cottage cheese) as well as homemade snacks like granola and cookies. She never hesitates to throw in a juicy apple or ripe banana either. “Now that I offer meal prep programs, I always have to think about what’s next; what do I have to make next week or the week after? So it’s like, what have I not done already? I think about the core elements: carbs, protein, vegetables. Those three elements are always in my meals, unless it’s breakfast, [when] I do fruit,” Koren said.

When curating her recipes, Koren often draws inspiration from different cuisines or meals she’s eaten at restaurants. Sometimes she’s influenced by what her boyfriend is in the mood for, or better yet, what her audience asks for. “I take any meal and try to figure out how to make it taste good as a leftover,” she said. “[I make] recipes that are meant to be kept for a couple of days, because not all recipes are.” One of the most surprising aspects of Koren’s meal programs and recipes is the lack of a calorie counter, weight loss regimen and restrictions like most fad diets promote. For Koren and her followers, it’s all about intuitive eating. According to Koren’s blog, intuitive eating is a nutrition philosophy based on the idea that one can be healthy when they let their bodies run the show, instead of tracking foods to attain JANUARY 2019 I BOROMAG.COM

and maintain a level of health or a specific physique that one’s body can never sustain. “Intuitive eating [is another way] to reduce stress,” Koren said. “You’re not tracking calories. You’re not eating to change the way you look, like your body composition. You are eating for the basic function of fueling your body while also taking pleasure in eating the food, and that’s it.” Koren is not a vegan or vegetarian, but creates dishes that are vegan-friendly because she enjoys meat alternatives like tofu, especially with veggies. However, she won’t deny her body chicken or fish if that is what she craves. Of course, Koren receives questions all the time such as, “So if I want 10 brownies I can just eat them all?” or “How does someone like myself who loves [carbs] and sugar stop those cravings?” On Instagram Koren replied, “This sounds counterintuitive, but to stop the cravings you have to stop restricting and give yourself full permission to eat those foods.” A large part of intuitive eating is how you perceive the foods you eat or want to eat, and how you can consume them in a way that will not make you feel guilty. Although Koren’s recipes and instructions tempt all kinds of eaters and cookers, she hopes to one day enhance their accessibility and be more hands-on. Instead of reading on how to prepare Koren’s delicious hummus, you could one day cook it along with her. “One of my goals is to make an online cooking course. I would love to provide an affordable cooking service so [my followers] don’t have to go to a class or search YouTube,” Koren said. “The sky is the limit.” In the meantime, whether you follow the Workweek Lunch Instagram or subscribe to Koren’s meal prep plans, she will be there to inspire you and encourage you to feel good about consuming tasty food, and she’ll be fueling right along with you.
