Dear Western Queens, There is no greater honor than having business owners trust me with their tales of success, the growing pains of starting a new concept, and the joy of sharing a longtime dream with the world. This month, we focus on several businesses that have truly found success. A few local restaurants are expanding into Manhattan (Il Bambino and The Queens Kickshaw), and a few hits from Manhattan are now finding a new home this side of the East River (Artichoke Basille’s and Doughnut Plant). One of New York’s leading chefs, Rocco Sacramone, expands into Long Island City in the highly anticipated Maiella. I even had the honor of sitting with Bareburger’s CEO to discuss his company’s awe inspiring growth, as well as his newest concept launching later this summer. The landscape in Queens is always changing—and part of what makes this neighborhood so rich is the harmony between the new and the old. We aren’t discovering anything at all—we just get the honor and responsibility of documenting the hard work of the people of our community making it happen. And with the opening of the LIC Flea on April 11th, who knows what vendors we will meet who may one day grow to become another neighborhood cornerstone? On Tuesday, by March 17th, Long tos Pho & Island City became the y r o St newest home of the wickedly delicious purveyors of pastry pockets known as the Doughnut Plant. The retail space is now open to the public—with a pristine doughnut counter, a glass showcase featuring the entire selection of twenty-four various doughnuts, vinyl bar stools shaped like doughnuts, and Doughnut Plant’s signature doughnut tiles arrange in a colorful mosaic along the periphery (which were all handcrafted by founder Mark Isreal’s father, Marvin Isreal). s awk y H dle a r B

The story of the Doughnut Plant traces back over a century, when in 1910 Mark Isreal’s grandfather, Herman Isreal, began working at the age of sixteen in a bakery in St. Paul, Minnesota. Fast forward through World War I and baking for the army, all the way to 1994 when Mark Isreal launched the Doughnut Plant from the basement of a Lower East Side tenement building— delivering his tasty morsels each day by bicycle. And well, now as they say, the rest is history. I sat down with Bryan Clopton, the shop manager of the LIC location, to discuss what makes it unique—and to taste some doughnuts, of course. “Queens is huge, and Long Island City is poppin’,” laughs Clopton. “We have a lot of people coming through who have never heard of Doughnut Plant.” I predict all of that is about to change. “We also have a Modbar,” explains Clopton as he points to the shiny metallic arm extending from the countertop. “It’s a new style of espresso machine actually built into the counter.” “Our most famous doughnut, I would have to say,” he continues, “is the Crème Brulee—it’s what turns Doughnut Plant into a target destination.” One glimpse at the signature doughseed (Doughnut Plant’s palm-sized, yeast, filled pastries) evokes serious cravings. It is a miniature yeast doughnut filled with decadent golden custard, then coated in a sugary crust that is flame-kissed by a brulee torch— resulting in that crème brulee crackle at each and every bite. “It’s a true crème brulee,” says Clopton, “but just in doughnut form.” Besides that oh-so-beautiful gateway doughnut, Clopton says patrons go nuts over the Tres Leches doughnut. “It’s three milks,” he explains, “based on a Mexican wedding cake, and it’s filled with a condensed milk, and then you get just a trace of saltiness with the dough—plus it goes so good with coffee.”

When asked about what makes all the doughnuts so special, Clopton answers without hesitation. “What separates our doughnuts from almost any other doughnut in the world is that we don’t use eggs. We also use jam, not jelly.” They even sell their jams and peanut butter a la carte, which you may purchase at the counter. One glance at the showcase reveals square doughnuts made with vanilla beans and filled to each corner with blackberry jam, doughseeds stuffed with guava cream, carrot cake doughnuts and blueberry cake doughnuts with real berries mixed into the glaze. They even offer a rotating selection of daily flavors, like the matcha green tea doughnut. For washing down all those scrumptious doughnuts, Doughnut Plant sells a variety of house made milks and juices, as well as their coffee. “We make our own cashew milk, chocolate cashew milk, and pistachio milk,” says Clopton. “But my favorite is the mocha cold brew—which is our chocolate cashew milk and our cold brew sweetened with dates, and if you drink one of those, well, you’re just on Cloud Nine.” Their cold brew iced coffee is a fair trade single origin coffee from Ethiopia. “It never touches hot water,” says Clopton, “and is basically one of the cleanest coffees you can ever have.” Great coffee? Yup. Phenomenal doughnuts? Absolutely. Knowledgeable and friendly staff ? You bet. This is proving to be the kind of doughnut counter where I just might have to plant myself all summer long.

Euripides Pelekanos is one of the most gentle, fun-loving, and charismatic guys you will ever meet. As he casually leans back on the brown leather couch in the back of his office on Vernon Boulevard, you would have no idea you are talking to the CEO of a corporation that has opened nearly two dozen restaurants within half a decade, and is now set to open its first location in Japan and launch its second restaurant concept just one avenue north of the store where it all began. Maintaining the magic of that very first location in each and every new restaurant that opens is one of the most nerve-racking challenges Pelekanos faces. “Our current expansion is pretty intense,” he laughs—with sixteen soon-to-be-opened locations presently in different stages of development and construction. “I was just [at the restaurant in Toronto] last week, and to walk into one of our restaurants 400 miles away in another country and it felt and it tasted like our restaurants in New York—I think that’s huge. Those are the moments when I think about Astoria—and I use to work in that kitchen—and sit back and think about all the nights that I couldn’t sleep—that’s how I know we are doing something right.” When asked about the businesses who have tried to compete even within a few blocks of their original location—Eco Table and Burger Bistro have both since closed—Pelekanos explains, “In one respect, on the business side I think I can’t believe someone is copying our menu and ideas, but on the other hand I think, but I want people to serve food and open up restaurants in this manner. But there is a lot more that goes into running this company than just putting a burger in front of somebody.” 10 | BOROMAG.COM | APRIL 2015

Chris Crouch, co-owner of the new Long Island City location, recalls the two days they interviewed the bulk of their applicants. “The people on that first day were so incredible, and I believe it is because they came not just because they wanted a job—they were already fans of the company.” He shared that he hired a surplus amount of individuals anticipating a few might eventually be sifted out, “but it just didn’t happen—they were all great.” Perhaps the greatest ingredient in their recipe of success is the culture they foster—and the confidence that trickles down from the top. “We are getting ready to launch our second concept, and [one guy] asked me if I was sure I wanted it to be associated with Bareburger—what if it failed? And I said, that’s f**king impossible—it’s not going to fail. The people who are behind it are just too good.” The new concept will open this summer in the space previously occupied by Athens Café. While the team is still tight-lipped, Pelekanos offered, “it will be Southern Hospitality, but local, fresh, fun, hip, farm-to-table, with a local flavor to it. I grew up in this neighborhood, so to have the opportunity to take over that lease— that was an iconic space in Astoria.” Pelekanos seems to be an expert on iconic spaces, and exhibits faith this new venture will be no exception. “That was the best place to hang out,” he fondly remembers. Now a whole new generation will be able to say the same thing about the new restaurant, because if history repeats itself, a new success story is about to be born.

Redken Saloon Salon is a well-known spot on Astoria’s Grand Avenue--otherwise known as 30th Ave. Named a saloon because of the prolific wall of technicolored bottles, its staff specializes in extensions, as well as coloring—from highlights to lowlights to every color of hair imaginable. The result is a sleek salon with exposed brick walls, polished concrete floors, and a versatile staff devoted to perpetual training and education via on-site training from Redken. Women and men arrive—and more importantly, leave—with smiles as wide as the Mississippi River. On one visit, a stylist walked around the salon humming to a child whose mother was getting her tendrils wrapped in foil. Another time, a customer hugged her stylist after her final glance at the mirror. It is a salon full of skillful and talented stylists who miraculously maintain a welcoming atmosphere where all feel welcome. That sort of a culture and engagement from the community doesn’t merely fall from thin air. It demands a very special type of leadership, drive, ambition, and charisma. Owner Frank Arcabascio got his first barber’s chair in 1976 from his cousin, Joseph Giannola. “Astoria was a nice neighborhood then,” he recalls, ”not as built up, with a lot of empty storefronts on Astoria Boulevard.” His cousins started buying buildings around the barbershop, when the prices were very reasonable. “And now there is Basil Brick Oven Pizza, BZ Grill—there’s

even a Starbucks, and now Sussex Bank. I really think that area between the train station and the park is the next spot to be.” But Arcabascio left that territory to his cousins. In 1982, he opened his own salon on Steinway, upstairs from what is now the Mini Star Diner. Over a decade later, in 1993 he finally ended up in his present location on 30th Avenue. Due to his passion for the community, he naturally soon became the President of the 30th Avenue Business Association—a torch he recently passed to Chris Giannakas, the co-owner of Ovelia. “Everything I learned about meetings,” explains Arcabascio, “and why I took it on, was from being a member of the Kiwanis,” which is a global volunteer organization. “I tried to bring an element of that in, developing scholarships for local schools and awarding plaques and certificates to local businesses.” “I think the coolest thing we did was start a restaurant week,” he recalls of his time in charge of the association, which represents three hundred fifty stores along the avenue. It was originally created, however, to fund the Christmas lights along the avenue between Steinway and Crescent. Though he no longer heads up the business association, he remains committed to serving the neighborhood. “Right now, we are doing a fundraiser for Lupus, collecting donations for a walk in the beginning of May,” admits explains Arcabascio, “and that idea came from my staff.” With a staff of twenty-two stylists, colorists, and cutters he finds a pool of an endless wealth of terrific ideas. A salon where you can get your hair cut or extended, colored, washed, and even contribute to a local charity? I took that photograph of the toasted Cheddar & Mozzarella at The Queens Kickshaw on March 27, 2011 just a day after they had opened. I had just started freelancing for BORO Magazine, and owners Ben Sandler and Jennifer Lim both warmly greeted me at the table. Any food that transports me to childhood will always be a winner in my books, because few things can lift you from the chaos of the moment quite like good ol’ fashioned nostalgia. Because I always start with the basics, I knew the Cheddar & Mozzarella would be the perfect place to begin. If they could properly execute a classic, then their other sandwiches might also be worthy of a try. I kept dipping my sandwich into the tomato soup and grinning. Within seconds, the first half of my grilled cheese was nothing but a memory. My friend had ordered the Gouda, and I remember chuckling when I tried a bite—it was a sandwich that actually made me smile. The sweet guava jam, smooth black bean hummus, tangy and crunchy pickled jalapenos, and buttery brioche all sang to me in perfect harmony.

Over the next four years, as chefs changed, so did the menu. Sandwiches came and went, as did various desserts. I tried their Jewish-Chinese dinners, came for tastings of specialty beers and ciders, and learned about a classic blend of infused vinegar and soda called a shrub. But those first bites I initially savored have always remained on the menu, and hopefully always will. March marked the fourth anniversary of The Queens Kickshaw, but also the opening of Ben and Jen’s second restaurant—this time in Manhattan. One of the things I love most about living here is watching our businesses expand into new locations, and observing businesses that were built elsewhere moving into my neighborhood. Taverna Kyclades, Vesta Trattoria, Bareburger, MP Taverna, Il Bambino, Tacuba, and Sweet Afton, Blend, and Petey’s immediately come to mind as some pretty special success stories. So, as we celebrate the anniversary of one restaurant that has brought a lot of attention to Astoria for its outstanding coffee program, delicious menu, and exceptional service, I thought it would be a great opportunity to introduce you to their newest concept—Wassail—New York City’s first cider bar appropriately located on Orchard Street. Ben and Jen have teamed with Sabine Hrechdakian to create a place where patrons can both learn about and enjoy nearly every type of cider imaginable, as well as devour elegant plates from Chef Joseph Buenconsejo, and sophisticated desserts from Pastry Chef Rebecca Eichenbaum.

Harvesting The Power of Plants: A Heart to Heart with Josh Lee of Astoria’s Green Top Farms Interview by

My first Spring feature of 2015 is a perfect combination of things I adore—nutritious food, local business, genuine concern for the big picture, and an interview full of passion that inspires and energizes. Take note—these guys have a huge future (plus, their Instagram is addicting!) Josh Lee fell in love with farming when he was ten, following an afternoon working in a tobacco field with his Granddad. After several summers working on the farm, Josh attended the University of North Carolina at Chapel Hill, where he was a Morehead Scholar and 4-year Varsity Wrestler. After college, Josh worked as an independent insurance agent, and was a founding board member of Nourish International, a non-profit company that fights poverty

through student action. In 2010, Josh moved to New York City to become a Special Education teacher in the South Bronx. As a teacher, he launched his school’s first wrestling team. Seeing kids from all over the world work together inspired him to co-found Lucha Vida, a wrestling based non-profit organization focused on youth development. After seeing kids come to school hungry on a regular basis, Josh decided it was time to return to his roots. He founded Green Top Farms on the firm belief that in a world of abundance, everyone should at least have access to real food. BORO: Tell us about the origins of Green Top Farms. Josh Lee: Both sides of my family have been farming for as many generations as anyone can remember. I grew up working on my family’s tobacco farm in rural [North Carolina], and always planned to get back into farming, although I thought it would be after I


retired. Before moving to NYC, I saw a Colbert Report on vertical farming and how it would change the world. I was fascinated and set a Google alert to follow urban farming. I began to see more and more articles on my feed, and that in turn led to more research. After working in the classroom for four years and seeing kids come to school hungry every day, I figured out my calling. I had to get back into farming. BORO: Why microgreens? JL: My buddy Ben Greene introduced me to microgreens early last year. We were initially thinking we’d start by growing mushrooms or beehives on rooftops, but microgreens made the most sense. They’re incredibly nutritious, which fits with our focus on healthy eating. They have a short grow cycle (7-10 days), which meant we could experiment with many harvests without having to wait a year. Since last July, we’ve had over 30 harvests. Full-grown veggies might have taken 10-15 years, given the typical time to harvest. We plan to grow salad greens (baby spinach, baby kale, arugula, watercress, etc.), but we had to start with something fast and easy to execute as a bootstrapping startup, so we chose microgreens. BORO: How large is your staff? JL: Currently there are 3 people on our staff, including myself. Tommy Thekkekandam is my business partner and the first person to jump on board when I proposed the crazy notion we start farming in NYC. Tommy, also from NC, was my wrestling teammate and fellow Morehead Scholar at UNC Chapel Hill. He also earned full rides to Duke Law & Business Schools, where he completed his JD/ MBA before becoming a consultant for McKinsey & Co. He is now working on Green Top Farms, as well as Tom and Jenny’s, a candy company that makes caramels that are good for your teeth. Kyle Goldstein, like myself, worked as a Special Education teacher as part of the NYC Teaching Fellows Program. Kyle spent part of his childhood on a farm in upstate New York. I don’t think I’ve ever met anyone more passionate about food—healthy food in particular. Kyle came on board right after we began experimenting, and has been invaluable to our growth. The salads he makes can only be described as Art. You want to eat them as soon as you see them. They also happen to be delicious. BORO: Describe a typical day at Green Top Farms. JL: There is no such thing as a typical day on a farm. I guess we’re always up early, and we work until the job is done. Some days I’m working with Kyle on harvesting and planting; others I’m making supply runs or dropping off deliveries. We’re still small enough where everyone works on whatever needs doing. As we expand, we’ll have more division of labor, although I think it’s beneficial if everyone on the farm at least has some idea how to do each job. It’s important to have a versatile team where each person can do multiple jobs. BORO: What are some of your biggest sellers? How can customers purchase from you? JL: Our microgreen mixes have been our biggest sellers to date. Currently we’re only selling to local Astoria residents as we’re still in the beta stage. We haven’t yet done enough experimentation with

selling in green markets, although we are certainly open to the idea. BORO: How do you decide on what is being grown? JL: Taste, nutritional value, and consistency of growth over multiple grow cycles. We use a lot of experimentation. We primarily grow pea shoots, sunflower shoots, micro radish, micro kale, and micro broccoli. These plants are extremely nutritious, taste great, and provide the necessary crunch when you’re eating them, [which is] a marker of freshness. BORO: Do you feel like Astoria plays a definitive part in your business? Have you felt embraced by the community? JL: Yes. There’s something going on in Astoria. There are now, at minimum, 4 commercial urban farms in this incredibly diverse neighborhood. I don’t know if it’s the excellent food from all corners of the Earth, or just the friendly people, but Astoria is definitely leading the charge for urban farming in NYC. The response from the community has been overwhelming. I’ve had hundreds of conversations with local community members about what we’re doing. 100% of them were positive, and almost always end with the person asking how they can get involved, or where they can get these salads. We have to add folks to a waiting list until we find a bigger growing space. BORO: Is there anything that you would like to convey to the public about Green Top Farms? JL: We’re serious about rebuilding our food system. We believe that starts with the source of our food—farms. This isn’t just a local lifestyle business. We are aiming to create a model that can be replicated across the world to address the complex network of challenges facing our food system today, from poor distribution to low nutritional content of factory-farmed produce, to the environmental damage being done by large-scale deforestation. But all of that begins with individual choices to eat healthier and seek out more sustainable sources for food. We recommend a Green Top salad to get you started. BORO: How do you envision the business growing from where it is currently? JL: Though we’re quickly gaining lots of traction, we know we’ve just started to scratch the surface. Right now, we’re of the mindset that everything is an experiment, and our mission is to quickly and costeffectively discover what Tommy, our business guru, calls productmarket fit. We’re still refining our product, go-to-market strategy, and operational model. Three to six months from now, I expect we will have gotten the formula right and will be in execution phase, really growing the business. My Grandpa Peterman used to work at the Wonder bread factory in Indianapolis, and as my mom’s entire side of the family will wholeheartedly attest, not much in the world tastes better than a warm loaf of classic white bread fresh from the oven. I still smile and think of grandpa every time I toss one of those red, yellow, and blue polka dotted bags into my grocery basket, despite what I know to be the perils of white bread. Sometimes, nostalgia just wins. Each Thanksgiving, Grandma Peterman slaved relentlessly over roasted turkey and honey-glazed ham, jell-o parfaits, chicken with hand-cut noodles, meatloaf, cinnamon rolls, buttery mashed potatoes with homemade chicken gravy, pecan pies, and angel food cake with strawberries from the garden. The real star of Thanksgiving, however, actually came after the main feast, when one-by-one the cousins would wake from our tryptophaninduced post-meal naps. Careful not to awaken the adults who could strong arm us out of our snack, we’d sneak into the kitchen to grab fresh slices of Wonder bread, leftover turkey carvings, yellow mustard, with a bit of cheddar cheese to zap in the microwave for the yummiest sandwich on Earth. One of the simplest meals to execute, sandwiches are the culinary star of so many childhood memories. Don’t you recall some of the finicky preferences of you or your friends? Perhaps

my favorite sandwich of all time was a peanut butter and jelly sandwich, provided the correct ratio of Smuckers to Jif—there must be at least twice as much raspberry jelly as peanut butter (creamy, not crunchy). Furthermore, the pieces must be cut at the diagonal, and the crust removed. As my parents refused to pay a premium price for popcorn every time we went to the movie theater, more often than not mom would open her purse as the lights dimmed, and pass down Ziploc baggies of those delicious PB&Js. Of course we were exposed to more sophisticated versions of the sandwich. For the Indy 500, we’d tote ham sandwiches on pumpernickel with pepper jack and alfalfa sprouts. New Year’s Day absolutely demanded corned beef and sauerkraut with Russian dressing and lorraine swiss (with those tiny holes) on marble rye. The signature Hawks household hot sandwich was a sausage, mozzarella, and marinara stromboli on Italian bread, wrapped in aluminum and baked in the oven. Mom even had a coding system worked out in Sharpie shorthand on the foil to indicate which sandwiches had bell peppers or not. When I moved to New York City twelve year ago—to the land of bagels and pastrami at world famous Jewish delicatessens—I knew I’d find new loaves of love, but remained skeptical that anything could outshine those childhood gems.

And then I stumbled upon Il Bambino in Astoria. I probably should not admit this, but I found my feet carrying me back there again and again. I actually ended up eating there three times in just four days. That was nearly five years ago. Since then, it has become a staple, and friends from Manhattan even request their favorite paninis and salads now when I travel into town. Keep your eyes peeled, Manhattanites, because the Il Bambino team is already at work in Greenwich Village preparing the second Il Bambino, which is expected to open early this summer. Rumor has it that fanatics make pit stops at Il Bambino when traveling between LaGuardia airport and Manhattan. I don’t doubt the obsession even the slightest. This delightfully cozy restaurant boasts a phenomenal fusion of Spanish tapas and classic Italian sandwiches, as well as a generous selection of wine and beer—all served by one of the friendliest wait staffs in all of NYC. With tapas and ‘nini’s all reasonably priced, you can enjoy an unbelievably satisfying meal without breaking the bank. The bread is baked fresh daily specifically for their panini and crostini just up the street at a local bakery. If you are unsure of the names for the various cuts of meats, just glance at the diagram of a pink cartoon pig in the entryway labeled for that specific purpose. If you still don’t know what to try, just close your eyes and point. I’d guess it’s safe to assume everything at Il Bambino is equally fantastic. Crostini arrive Noah’s ark style—two to an order—unless you go for the gold and order a PuPu platter to share with the table. The egg salad crostini with truffle oil and shaved speck is a personal favorite.

Panini are more substantial fare, and the porchetta with spicy pickle slaw and the meatloaf with onion jam and provolone are the kind of sandwiches of which legends are made. For just $1, you can add a house made sauce on the side. Their herb pesto lusciously compliments almost everything. Or try one of their house made soups when in season, as they are accompanied with a slice of pesto bread perfect for dunking. Someone at your table simply has to order the potato salad. Fingerlings are diced into coins, tossed in truffle aioli, sprinkled with fried shallots, before being drizzled with chive oil and blanketed beneath a snowfall of shave pecorino. The back dining patio is perfect for outdoor brunch in the soon coming gorgeous spring weather. Brunch panini are offered Friday through Sunday from 10:30 to 3:30, featuring cleverly named panini such as the Cheese Us Christo, Sir Oink-a-lot, Lard Have Mercy, and Weekend at Bearnaise. Always save room for a sweet ending, as their brownies and panna cotta are reason alone enough to return. Whether you enjoy an outdoor brunch, a quick crostini and Limonata, or an evening cheese flight and glass of wine, the bottom line is this—treat yourself. If you have ever strolled down 30th Avenue, you have probably noticed Gabriele Perici perched at an easel, painting fantastical men and women with sparkling eyes on oversized heads, wearing dizzying patterns set upon surreal cityscapes or inside homes seemingly plucked from some untold fairytale.

my uncle was a very famous actor in Italy. But my brother is an engineer.” Though he undeniably spent instrumental years in Europe, he still relates with America in the ways that matter most. “American people aren’t like our politicians. American people are the most generous and beautiful people.”

He is there most days of the week, painting away meticulously, as if lost in a trance. But if you stop and ask him if you can speak, he will momentarily pause, as if carefully withdrawing himself from the world of his painting. That is when you will inevitably be pierced by his eyes, from which glimmer a thousand different hues of blue, like the sky and the ocean being flashed at you from some inner beacon. In that moment you will also know that you are in the presence of a magically talented artist—because eyes do not twinkle the way his do unless they are concealing a spirit of frenzy, whim, bold imagination, and unprecedented creativity.

In response to previous artists who provide inspiration, he says, “I like Max Ernst, and I love the Germans from the 1950s. I like Modigliani. The Roman Renaissance, too. There are so many. But my biggest influence? I would say Otto Dix. I love Otto Dix.”

Perici was born in New York, but raised in Italy since the age of eleven. He then studied in France, and returned to New York in his twenties. His work can be viewed at Astoria Art & Custom Framing, where he paints regularly, working on both commissioned and personal pieces. When asked of any familial history in the arts, Perici replies, “My mother was a musician, and so was my grandfather—and

Perici primarily works with heavy-duty acrylic, providing his work with incredible depth and texture. Because of the amount of commissions he receives, along with the quantities of pieces he produces, the fast-drying acrylic allows him more time than he would have working with oils. “I cannot wait twenty to thirty days for one color to set,” laughs the artist. “Each painting would take eight or nine months.” Born in 1965, Perici now estimates he has completed between four and five thousand paintings. “My first show was when I was fourteen,” he explains. When asked when he first knew he was gifted with something special, he shrugs, and his cheeks turn pink. Modestly, he replies, “Oh, uh, no—I just paint.”

Fighter planes soar overhead, while beneath them train cars are stacked upon semi-trucks, taxi cabs, and trolley cars. St. Basil’s Cathedral stands proudly by the front door, a 3-D puzzle, of course. “That came from a customer who bought the puzzle,” recalls Marvin Cochran, “but once it was finished, he had nowhere to put it—so he brought it back to me.” Cochran and his wife own the Hobby Shop, which has been selling models, train sets, puzzles, records, books, paints, kites, games, religious memorabilia, and a whole array of creative fodder since the late 1980s. The store inventory reads like the palate of a child’s imagination. Passing through the doors is like stepping back in time. The shop first popped up on 30th Avenue in 1939, owned by Mr. Cochran’s father-in-law, Rudy Oest. Rather than a Hobby Shop, it was then known as Rudy’s Confectionery, an old fashioned icecream parlor with marble countertops and a classic soda fountain. As the ice cream business began to fade and replacement parts for the equipment became harder to find, the store gradually started selling trains and transitioning into its present incarnation. One of the only signs of the original shop is the antique cash register that was bought secondhand during World War II. “I was a [toy train] collector,” Cochran recalls, “and I would buy whole sets, take one piece out I wanted, and then sell the rest. There was another hobby shop in the area, but she wouldn’t do trains— even if you prepaid her.” Soon thereafter, the demand for trains

precipitated a demand for buildings, and then signs, and trees, and eventually a new business was born. “There was an art framing store on Steinway that was closing, and when I went to buy their showcase, the guy said to me, ‘if you’re taking my showcase, you’ve got to take in my paints, because it’s matching what you’re doing,’ and that’s how I got into the art supplies.” Now Cochran sells acrylic paints, canvases, and brushes. In response to why the model business is fading away, Cochran hypothesizes, “Now people don’t have the space. You used to have a basement and maybe a spare room. One family homes now have three families living in them. Even garages are made into apartments.” That, and the increased presence of electronics. “[Kids] are all into the iPads and Mario Brothers,” he reflects. “You don’t even see kids hanging out together and shooting hoops or batting a ball anymore.” The Hobby Shop harbors a crowd of loyal patrons. It is even featured in the guide, 111 Shops in New York That You Must Not Miss: Unique Finds and Local Treasures. Its place in the book is certainly justified, and you should swing by to peruse the shelves on a leisurely afternoon. Who knows what new hobby you might find waiting? The LIC Flea will open its gates to the public for the first time this year beginning on Saturday, April 11th, and will be open each Saturday and Sunday from 10 a.m. to 6 p.m. at its original waterfront space located at the corner of 5th Street and 46th Avenue in Long Island City until October.

You may already know Sage General Store as the home of the three-course bacon brunch that begins with a cheddar biscuit with bacon marmalade and ends with a double chocolate and bacon brownie capped with Jack Daniels whipped cream. But if you think you know the menu like the back of your hand, get ready for a pleasant surprise. The décor, cutlery, china, and even the napkin folding is now changing for dinner service with the arrival of Long Island City’s newest dinner pop-up—mrnilsson. The flare is Nordic, and the menu is focused around four and seven course tastings, as well as a meticulously crafted a la carte selection of small and large bites. “It’s a big change for the neighborhood,” explains owner Leslie Nilsson, “which thinks of us as comfort food—but I just wanted to do something different at night. It’s such a cozy, romantic place. And the people [who] have come for the tasting menus—man, you can feel the joy. They’re having such

a refined, excellent experience right here in Long Island City.” She envisions Court Square to become a food destination, with such neighbors as M. Wells Steakhouse and LIC Market. “The original restaurant, Sage American Kitchen, was across the street on Jackson,” Nilsson recalls, “and just had three seats in the window.” They offered high end takeout with a catering kitchen in the back. In 2008, she opened Sage General Store at its present location. Shortly thereafter the recession hit hard— which, luckily, is when they appeared on Diners, Drive-Ins, and Dives. But after six successful years, Ms. Nilsson was itching for something to change. In terms of the bacon brunch, she smiles, “That’s not broken, so let’s not fix it.” Customers can still enjoy the charm of the General Store menu six days a week for breakfast and lunch. But when lunch service draws to a close, the paper plates are put

away and the fine china comes out. Wooden pastry crates are removed, and votives are lit next to pink and purple bouquets of wildflowers. But what exactly is behind the name change? “We like to say, ‘Mr. Nilsson is at the Sage General Store,’” says Ms. Nilsson, whose Scandinavian ancestry serves as partial explanation of the name. “Mr. Nilsson is also Pippi Longstocking’s monkey,” she laughs. “As a kid, I always thought it was funny he shared my name.” Several chef resumes sent to her were addressed to Mr. Nilsson, which also played a factor. But the real reason is her adoration of Brooklyn-born singer-songwriter Harry Nilsson, whose record, Nilsson Schmilsson, was here all-time favorite album. “[The chefs] are rock ‘n roll guys,” she explains. “It’s not all just delicate and beautiful. There’s some real meat and power behind what they are doing. Greg [Proechel] came from Blanca and Eleven Madison Park, which just got their four star review again. Michael [Kollarik] has cooked at the Dutch and for Momofuku.” And yes, the food is beyond special. (continued on page 48)

“Because of Diners, Drive-Ins, and Dives, we became famous for our rotisserie chicken and macaroni and cheese. So the guys have put together this genius chicken dish. They debone the rotisserie chicken, and then they sous vide it so it gets super deliciously tender, and then they bake it in a hot oven to get it super crispy. Then they puree the macaroni and cheese—it’s the same recipe with the five cheeses—and then they foam it onto the plate with crispy kale chips. My daughter is fourteen, and she says, ‘Mom, I could eat that every night.’” After just one bite, I think I would gladly devour it daily, as well. When asked if there is anything on the tasting menu that cannot be ordered a la carte, she replies, “We would open it up. We don’t want to be dictators. People think, because it’s a tasting menu, that it’s highfalutin—but it’s not. The food is really accessible, and the guys serve it to you and explain it themselves. from—we’re here to have fun—we’re not here to bore you.” Mrnilsson is a New American restaurant with a Nordic flare, which has a lot to do with the artistry of the plating. “It’s also about foraging, pickling, and the integrity of the ingredients,” explains Nilsson, “—and treating the vegetables with great respect.” “Walk-ins are definitely available. We want it to be a neighborhood spot for those nights when you don’t want a burger. I’m so proud of being in Long Island City for 18 years. I feel like LIC Market and M. Wells have upped the game, so I decided I needed to up the game here, as well.” She has certainly upped the game with a superior team of fresh talent, creating artistic dishes worthy of multiple accolades. Pizza is something the neighborhood has on almost every few blocks, so how do you distinguish good pizza from great pizza? How do you know precisely where to get the perfect slice or pie? One test is longevity. If a pizzeria has stood the test of time, it’s probably a pretty safe bet. Another marker of success is if the pizza quality is worthy of expansion into new neighborhoods and locations. 22-56 31st Street has been home to a pizzeria for 50 years, so when longtime tenant Frankie’s Pizza folded up shop, it only seemed appropriate another pizza maker take over the address. There was certainly a fair amount of celebration when it was announced the next occupant would be the maker of one of Manhattan’s most celebrated pies—Artichoke Basille’s—which opened its first pizza spot on 14th Street in 2008. All signs point to a pizzeria poised for success. Astoria marks the company’s second location in Queens, with the first at LaGuardia Airport. Tucked just behind the stairway to the elevated train at the Ditmars Station, the renovated space is home to Artichoke Basille’s most popular pies and slices, as well as a selection of salads and ‘Not Pizza’ items, as well as a variety of beer and wine. Whole pizzas run around $30, with slices priced around $4.50, but the thickness and crunch of the crust, size of the pie, and abundance of premium quality toppings stand in defense of the higher prices.

Their namesake pizza is piled with plump, tender artichoke hearts, spinach, lumps of mozzarella, a velvety cream sauce, and pecorino romano cheese. The result is like eating a slice of crisp garlic toast topped with a decadent spinach artichoke dip, all crusted with bubbling mozzarella. Another popular pie is slathered with a rosé crab sauce, fresh mozzarella, and panko breaded surimi crab meat (which is just a fancy way of saying artificial crab meat). With the exception of the Anchovy Pie, each version is available as a whole pizza or by the slice. Be warned that they certainly aren’t jittery about sodium or calories, as the pizza can lean on the salty side, and boasts a remarkably high calorie count. Delivery also leaves a little to be desired. On three separate occasions, the pizza arrived with the toppings slid into one corner and the crust folded onto itself. That having been said, we still kept ordering it for delivery. The dine-in experience was much more pleasant, with friendly counter service and ample seating space. I imagine for those in a rush headed to the subway, and those craving a quick bite on the way home from work, this location will do a pretty good business. And I will certainly attempt ordering delivery again, once they have been open awhile and settled into a comfortable rhythm. Spanish tiles line the floors and climb the walls of the twentytwo seat bar-in-the-round at Long Island City’s newest Italian restaurant, Maiella. Pastas will be made fresh in house, and dough will be mixed in a candy apple red Hobart Mixer located in the North end of the dining room visible to guests—carrying on the premium quality tradition patrons have come to know and cherish at Sacramone’s heralded Astoria restaurant, Trattoria L’Incontro. Charcuterie hangs from the ceiling above a display case that houses the restaurant’s cheeses, olive oils, and pasta. Private dining

areas will be reserved for special occasions and tasting menus. Patio seating offers guests al fresco dining with unobstructed views of Manhattan. “I have owned other restaurants, but this is the one I have always dreamed about,” says co-owner Tommy Demaras. The cocktail program has been designed by renowned mixologist Padraig O’Brien of Hatchet Proof (www.hatchetproof.com). A carefully edited list of sophisticated cocktails will include a negroni utilizing house made bitters, as well as the restaurant’s namesake cocktail featuring vodka, strawberry-infused liqueur, and alkaline sparkling water. With a menu from one of New York City’s most celebrated chefs and a dining room with wall-to-wall views to match, Maiella is poised to be a tremendous addition to the ever-growing LIC waterfront. Impact Astoria: Councilman Costa Constantinides

Walk down any street in Astoria with City Councilman Costa Constantinides and you will find there is a memory attached to it. From adolescent days of playing basketball at the Steinway Playground to quality time with his father in Astoria Park, Councilman Constantinides’s lifetime connection with the community is what drives his passion and commitment to keep Astoria the diverse, vibrant, and unique community it is. Costa Constantinides represents the New York City Council’s 22nd District, which includes his native Astoria, along with parts of Woodside, East Elmhurst, and Jackson Heights. As Councilman, his mission is to ensure that every one of his constituents has a voice in government. “[My goal] is to advocate effectively for the community,” says Constantinides, “and leave our neighborhood better than the way we found it.” In his time as Councilman, Constantinides has done just that. Under his three ideological pillars—sustainability, engagement, and inclusiveness—the 22nd district has taken on exciting projects that will bring continued growth and opportunity for the community. His commitment to sustainability has been carried out through the Astoria Cove Project, a 1,723 unit project on Hallets Peninsula. Astoria Cove will redevelop the waterfront, including the creation of an Eco-Dock, and bring a ferry from Astoria to Manhattan for the first time in 80 years. Constantinides fought to ensure that the development will include affordable housing. “27% of [Astoria Cove] will have affordable units. Affordable housing is what keeps and makes Astoria special, and we must make sure that there is responsible development.” Constantinides wants each of his constituents to feel engaged and included in the process of government. “It is important to me that people are engaged with their government and community, and talk about how we can do better,” he says. “It is my job to facilitate the process.” His most recent initiative in facilitating community involvement is through the Participatory Budgeting Process. From April 13 – April 19, residents will have the opportunity

to vote on the use of $1 million in capital budgeting for projects in the community. “This is the first time this is being done,” Constantinides explains. “This will be driven by the people and we will work with city agencies [to make them happen].” It is initiatives like the Participatory Budgeting Process that allow Constantinides to work with his constituents to address challenges head on. “[Astoria] is a wonderfully diverse community. Every one of the 160 languages you can find in Queens is spoken in our district,” he says. “[Our community] is filled with arts, culture, and a great neighborhood feel. We have to ensure we can do everything we can for long term sustainability.”
