Dear Western Queens, Spring always brings a sense of renewal and hope. Trees flower with pink and white blossoms, and on the pavement, cumbersome leather boots are traded in for the light patter of sandals and flip-flops. New Yorkers are always so eager to swap their winter garb for shorts and sunglasses, bringing fresh life into the parks and along streets and sidewalk cafes throughout the city. The music of birds is crisp in the air, and this month we also celebrate the music of our local artists. APAC launches a brilliant production of a Sondheim classic, and the Astoria Choir premieres a piece by a Pulitzer Prize-nominated composer. Like the cherry blossoms, new businesses are also blooming. We stop by Tea and Milk to meet with the owners, and we swing back to our beloved LIC Flea to visit gift ideas for Mother’s Day. We even fly kites in Socrates Sculpture Park, and stop to smell the roses at two exceptional local flower shops. ‘MERRILY WE ROLL ALONG’

How did I get here? It’s a question we have all asked ourselves in a moment of reflection. But in real life, there is no rewind button to trace the moments back through the people, places and experiences that all come together to bring us to this very moment. In musical theater, however, that is precisely what Stephen Sondheim did in “Merrily We Roll Along,” which opened on April 30 at the Astoria Performing Arts Center (APAC). According to APAC’s website, “With an exciting score, humor, idealism and insight, ‘Merrily We Roll Along’ starts at the end and ends at the beginning. We see snapshots of 20 years in the lives of Franklin Shepard and his close friends and ponder the show’s central question: ‘How did you get to be here?’” With music and lyrics by Stephen Sondheim and a book by George Furth, based on the original play by George S. Kaufman and Moss Hart, the musical is directed by Dev Bondarin, APAC’s artistic director. “I am thrilled to bring the work of Stephen Sondheim to APAC for the first time with ‘Merrily We Roll Along.’ In college, I worked backstage on a production of ‘Merrily,’ which was one of my most formative theater experiences, and the beginning of some lifelong friendships,” reflects Bondarin. “Returning to this show as my first musical as artistic director at APAC is fitting. The show, which spans 20 years and examines the longevity of friendships and hope for the future, feels like coming home to an old friend.” The vibrant cast features standout performances by each of the lead roles, with the superior support of a nimble and versatile ensemble. Nicholas Park, who plays the role of Charley with such a tender vulnerability, proves he is a master of physical comedy with an electric performance of “Franklin Shepard, Inc.” Ally Bonino, in the role of Mary, wins the compassion of the audience early on in the

show (late in the character’s life) when she finally finds the courage, albeit liquid courage, to illuminate her realizations about her tragic lifelong crush. Bonino’s sarcasm and wit are subtle and exquisite. Jack Mosbacher’s take on Franklin Shepard is refreshingly accessible and often sweet, allowing us to easily see how fame and fortune can taint what begins as a noble talent. The entire show is a beautiful example of how Sondheim cleverly mixes lyrics and leitmotivs to evoke empathy, laughter, even frustration at times—and ultimately the sometimes alarming realization that no matter how we reflect on the past, that is precisely where it will always remain—in our past. The production features scenic design by Andrea Nice, costume design by Jennifer Jacob, and lighting design by Jesse Sheldon. Arielle Edwards is the sound designer, Katie White is the prop designer, and Kat Meister is the production stage manager.

The intimate teashop is bustling on a spring afternoon. Tea and Milk just opened about a month ago over Easter weekend, and they already have a substantial and loyal following. At first glance, you notice a pristine space with an intimate kitchen, a display case loaded with cupcakes, cookies and pastries, and a smiling staff poised to answer any question thrown their way. The spicy scent of chai drifts through the air like potpourri as one employee brews a batch. Another employee is busy on a puree of fresh taro root.

But the true star of the show, of course, is the broad array of specialty teas they offer. Procured from a variety of sources, flavors range from classic oolong to sweet peach, and green tea infused with green apple. Their pour-over coffee is from New Orleans-based Café Du Monde—the world famous purveyor of beignets.

Everything appears as a well-oiled machine. But the journey from concept to brick and mortar is one that took quite a while to brew.

And then to these various teas, customers can add a variety of ingredients, like natural grass jelly, hydrated chia seeds, a special recipe of sweet cream, or even glistening onyx pearls of tapioca.

“We always met up at a bubble tea shop in Manhattan to talk about life,” explains Mathew Wong of his two business partners. “We were busy interning during college, and we realized we wanted to work for ourselves… We actually had two other businesses before this one. One was even a bakery, but we didn’t have the time to maintain it. So one day at the bubble tea shop, it just hit us. Why not try to make our own bubble teas, but really focus on the ingredients and the techniques?”

“Technically, we aren’t a bubble tea shop,” explains Wong, acknowledging the negative connotations often associated with the sugary bubble teas offered at most places. “We are more of a concept tea and coffee house, focusing on natural, healthier ingredients. But if you perhaps want to add something to your tea, as well, it’s an option.”

Right about that time, Wong noticed an advertisement for the LIC Flea, which would be launching later that year. So he and his crew put their heads together and began working out recipes, trying various teas and creating their own brews. Soon, they were hosting a tasting panel for the LIC Flea. And now—a few seasons later—well, the rest is history.

Another friend runs a street cart on Wall Street, and he shared his recipe for an exceptional banh mi. The Vietnamese classic is built on a wondrous French baguette—one of the most critical components of this popular sandwich. The bread is then stacked with pork, head cheese, paté, slivers of carrots, daikon and peppery cilantro, and then drizzled with fiery red sriracha.

As they say, it takes a village. Wong confesses that the entire team behind Tea and Milk is much larger than the trio of partners. One friend works for City Cakes, and so she provides many of the baked treats. The rotating selection features quarter-pound cookies in red velvet stuffed with sweet cream cheese, decadently moist cookies full of molten chocolate morsels, as well as a variety of designer cupcakes.

An interview with the entrepreneurs behind NO FORK Nicole DiFrancesco and Beth Wrubleski have secured a significant spot at the LIC Flea by delivering several seasons of moist, decadent cake truffles and sweet and salty dipped pretzels, providing patrons with tasty treats to satisfy any sweet tooth. But handmaking the hundreds of sweets for sale, running a booth at the flea and appearing at other venues—all while working full-time jobs—can prove to be no simple task. So we checked in with these two benevolent baking beauties to uncover the secrets to their hard-earned success. Story and Images

BORO: How did you conceive the idea for no fork? No Fork: After meeting and becoming friends in college, we began trading ideas and recipes for some of our favorite desserts and dishes that we loved to make and eat growing up. In turn, we started spending most of our free time baking cakes for our friends and ourselves. After perfecting our cake recipes, we really wanted to create something different than the cupcake—a major craze at the time. We found ourselves in truffle territory, and the rest is history. Since we share a love of both baking and cooking, we had a lot of fun coming up with playful takes on sweet and savory items. We both personally love snacks and easily accessible food—meals that you don’t need to sit at a table and use utensils to enjoy. No Fork really encompasses all of these ideas, and gives us the freedom to constantly evolve our menu and offerings. 22 | BOROMAG.COM | MAY 2015

BORO: What are some of the most important lessons you’ve learned so far? No Fork: There’s really not a day that goes by that we don’t learn something new. We joke about it constantly. We’ll turn to each other and go, “How did we not think of this already!” But most importantly, we’ve learned that sometimes, if not most of the time, you just have to roll with the punches. Something that works for someone else might not work for you. You might drop a cake, but life will go on. There are always going to be hiccups along the way, but patience is key. BORO: What can fans look forward to in the future? No Fork: The concept of No Fork really applies to all types of food (not just sweets), and we’ve got an entire savory side of our menu that we’ve yet to unleash on the public. We’ve been testing savory dishes since the start of our business and hope to incorporate some of those items into our menu within the


next year or so. And with flea season you can always expect some of our specialty flavors to pop up, like our super popular maple bacon truffle, and a few other new flavors that we’ve got up our sleeve. BORO: How many treats do you prepare weekly for the LIC Flea? No Fork: Our preparation for the LIC Flea is a two-day process, mainly because of how we make our cakes. At completion, we produce hundreds upon hundreds of cake truffles and pretzels each week. Keep in mind, we personally roll, stuff and dip each and every single item. It’s like an assembly line, but with just the two of us. Or maybe more like that famous “I Love Lucy” episode at the chocolate factory. Except we definitely have our sh*t together. BORO: How on earth do you keep those truffle bites SO moist? No Fork: If we tell you we’d have to kill you. What we can say is that our cakes are a multi-step process crafted to ensure moistness. No one likes a dry cake! BORO: What is your earliest memory of baking? Beth: Personally, the earliest memory I have of baking is with my mom. It was something we loved to do together and she was a great teacher—everything I know about baking I learned from her. Plus, she would always come up with the coolest ideas. No recipes, just these crazy combinations that we’d throw together. We would plan holidays months in advance, testing and trying. There’s not one year that I can remember where we didn’t make fudge for Christmas. So it’s really special to me that we have fudge on our menu. I feel like it’s such an homage to her. Nicole: I grew up with a real passion for cooking. Coming from an Italian American family, as a kid I used to watch my grandmother bake her Italian cookies and stuff her homemade manicotti in her kitchen. I knew how to make all the standard Italian dishes and desserts at a young age, and from there my love for cooking grew into experimenting with my take on the different foods I like to eat. I’ve always been a decent baker, but when Beth and I became friends, her love of baking and my love of cooking came together to create the perfect match. One of the reasons why No Fork works is because we’re able to really vibe off of each other’s ideas to bring the best product possible to the people.

I also do a bit of freelance work that includes social media management and online advertising. BORO: Let’s dream... in five years, No Fork will ____________. No Fork: In five years No Fork will… conquer the world! And the universe! All jokes aside, we really just love bringing our treats to the public, and if we could do that all day, every day, there isn’t anything that would make us happier. It’s been so unreal to see how much we’ve grown in a little over a year, that the idea of five years from now makes everything seem possible. We started No Fork with a lot of courage, a lot of determination and a lot of hope, and we constantly remind each other to never give up on our ultimate goals. As we keep pushing we can see that bakery space, we can see that café seating, we can see ourselves doing what we love to do in a space that is our own. That’s the dream, and that’s totally what we’re after. BORO: Do you have any advice for someone with dreams of starting up a booth at the LIC Flea? No Fork: Jump in with both feet, and don’t second guess yourself. Everything is a learning curve when you start something new. It can sometimes be frustrating and a bit overwhelming, but if you’re passionate about something don’t give up. You’ll never know if you don’t try! BORO: You two are always smiling and refreshingly warm. What is the secret to your happiness? No Fork: Our smiles are a reflection of how we feel about what we’re doing. No Fork was started because we enjoyed spending our free time baking and creating, so being able to share that with our Queens community is such an amazing experience. We love this neighborhood dearly and being able to meet and talk with the people who live, work or visit here is just the best ever.

Exposed brick walls, a mix of candlelight and the warm amber glow from the filaments of enormous, cartoon-sized lightbulbs on the ceiling, and an über-attractive staff styled in denim and plaid, like tequila-wielding Gap models, make MexiBBQ feel like a hip, sexy, urban cowboy saloon. Overhead, a refreshingly diverse and enjoyable playlist croons tunes ranging from Regina Spektor to the Eagles that harmonizes pleasantly with the low hum of laughter and banter throughout the room. In a corner, a large group shares assorted guacamole dips jazzed up with chicken cracklins and spicy crab at a Mexican picnic table. The table sits under an abstract, luminescent, wagon-wheel chandelier by a flat-screen television mounted behind a waterfall that runs from ceiling to floor. Just beyond a row of intimate, dark-planked booths with steel-plated tabletops, singles mingle at the main

bar, taking full advantage of the proximity to the dozens of taps featuring craft beers, flat-screens broadcasting sports, and the temperature-controlled tequila dispenser. Besides the craft beer selection, a colorful cocktail list boasts BBQ inventive concoctions with Brisket a myriad of tequilas and Benedict bourbon. But perhaps some of the most exciting bites and drinks come at brunch. MexiBBQ was one of the trailblazers on the brunch scene in Astoria, and its patio has been a beacon for the popular weekend midday meal for the past five years. BORO last sat down with tattoo artist Andreana Verona almost four years ago when her studio, Supernova, was in its debut location on Ditmars Boulevard. Since that time, not only did the location change, but so did her partner in crime. Now on 23rd Avenue a little further off the beaten path, Verona has paired with Andre Juliani. The two would appear to be opposites in many obvious ways.

When asked what she feels makes her studio so unique, Verona explains, “I hear many times complaining about attitudes. We try to listen to people and not give attitudes. I guess we are just nice.”

Visually, Juliani is covered in tattoos from neck to foot, with several designs layering one upon another. In contrast, Verona harbors merely one tattoo—a simple crane, inconspicuously housed on one of her ankles. “I’ve never been able to decide exactly what I want,” explains Verona. “Depending on my mood, one day I like egrets and another day I like dragons.”

In regards to the new space, “I wanted something bigger,” she says. And so she moved her studio to the larger space shared by Astoria Soundworks, among several other businesses. “It’s funny. We are busier here than on Ditmars.”

Juliani is extremely charismatic and articulate, and he shares his opinions freely. Verona is more soft-spoken, shy and notably more timid. The result is a harmony that seems to work well. Perhaps because the one thing they both have in common is a profound sense of humility. “I do not like to call myself an artist,” explains Juliani. “Everybody is an artist. Delivery guys, doctors, bakers… everybody.” Verona interjects, “But you are an artist, in your way. You are a DJ, you are a drummer…” 36 | BOROMAG.COM | MAY 2015

The journey has been a long one for Verona. “I started studying graphic design just after high school,” she says. “When I was 18, I went to my first tattoo shop, and like a lightning bolt it struck me that it was I wanted it to do.”

The new location also improved the caliber of the designs being commissioned. “Sometimes street shops do very common and commercial things,” says Juliani. Browse through the designs this studio has worked on over the course of the past decade, and the words “common” and “commercial” are the last descriptions that come to mind. Though Socrates Sculpture Park is open to the public 365 days a year, the month of May kicks off a host of exciting free annual outdoor programs in the park. I am a huge advocate of outdoor fitness classes and art workshops, and Socrates provides a gorgeous and serene environment to experience such endeavors in the open air, amidst nature, beautiful waterfront views, and inspiring artistic installations. To celebrate the opening of the outdoor program season, come visit Socrates on May 9 for morning yoga or a stroll around the space, and observe the creation of the upcoming installations. Stay for the annual Kite Flight, a community kite-flying day following the first of the Children’s Sculpture Workshop series.

SATURDAY SCULPTURE WORKSHOPS Available to children between the ages of 5 and 13 and their families, themed sculpture-making workshops will be offered from noon to 3 p.m. every Saturday from May 9 through September 26. The workshops are free and will take place in the education area of the park near the entrance. They are offered on a first-come, first-served basis. Each workshop will be taught by a different artist, and will expose the children to various materials and subjects. Below are the first workshops available in May. YOGA SATURDAYS AND SUNDAYS Kripalu yoga is a gentle form of Hatha yoga, combining meditation, physical healing, self-awareness and reflection. Classes are comprised of breathing exercises, stretches, a series of individual poses and an ending relaxation. I have participated in these classes in previous years, and they are enjoyable for all ability levels. Located on the grassy knoll under the trees and adjacent to the waterfront, classes begin May 9 and run through September 27. Classes are taught by popular Kripalu instructors Monique Schubert and Yojaida Estrella and are complimentary to the public. Participants should wear comfortable clothing and bring a yoga mat or towel. Weather permitting, Saturday Yoga Sessions run from 9:30 a.m. to 10:30 a.m. and 11 a.m. to noon. TAI CHI SUNDAYS Often described as moving meditation, tai chi is a mind and body practice of flowing movements that can reduce stress and improve the functioning of the body’s circulatory, muscular and skeletal systems. The NYC branch of the Taoist Tai Chi Society of the USA will be offering its annual outdoor beginner practice sessions from 11 a.m. until noon starting May 10 and running through September 27. The shop is part museum, part fairytale, part secret garden and part imagination. It’s very much a workshop for the design of hope, gratitude, appreciation and, most of all, love. Dried flowers dangle from a tin rocket wired to the ceiling. The walls are adorned with multicolored bottles of every shape, color, thickness and size. The flowers all take slightly familiar shapes, though it’s as if they have been dredged through some mystic filter of daydreams and reverie. Juan Carlo Bermudez is lovingly placing deep violet and white anemones in a vase amidst cream-colored roses. He grins at me as if he knew I was coming, and pulls a rose from the vase. “Here, you have to smell this,” he says. Though I momentarily seize up in a horrifying flashback of the last time my brother spoke those words, I instantly know that anything coming from this place must be beautiful and pure—and so I inhale what is quite possibly the most delicious bouquet of flowers I have ever smelled. Carlo, as his niece calls him, waits for me to return from my dreamy state, and then he gestures toward the door. “Let us go grab a coffee and sit and talk,” he says. We stroll a few blocks in the crisp spring air, and find ourselves on the patio of Café Henri, where he orders me a latte and a crepe doused in Grand Marnier. We relax as he shares with me the story of his flower business. The third generation of florists in his family, Bermudez remains grounded in the history of his Colombian grandfather who grew orchids. When he decided to begin his own flower business, he flew to France and rented a car, visiting flower shops throughout the country for the better part of a month. “I collected ideas, colors, and thousands of little things that came together in a beautiful way,” says Bermudez. “It is unique, because it’s full of tiny distractions from everywhere.”

Bermudez is also deeply invested in the education of his niece. He even offered his services at the New York Flower Academy in exchange for her education and training. The two now collaborate and work together daily. During coffee, we are perpetually interrupted by the unbelievable amount of people who know Carlo, simply swinging by to say hello. Even the man delivering his avocados to the restaurant knows Carlo by name and stops by to chat. Only an independent florist for five years, Bermudez has been hired to arrange flowers for some of the most prominent museums in the world, including the Metropolitan Museum of Art. Something about Bermudez is magnetic and inviting, beyond what is considered average charisma. He lives and breathes a gratitude for life, and displays the willingness and ability to find beauty in unconventional places. That marriage of dark and light is evident in his arrangements, which is why his customers can see a bit of themselves in his work. And that is a gift that is breathtakingly unique.

“So, I’ve effectively killed two of the most durable plants on the planet,” I begin explaining to Alex Avdoulos, one of the owners of Petals & Roots on 31st Street, next to the Astoria Bookshop. With the sweetest expression she can possibly muster, she gazes at me in disbelief. “You even killed the money tree?” “Yes…” “The succulents?” “Mmmm hmmm…” I sink my head in embarrassment. “Yup, even them. Can you recommend anything that can survive what is apparently a black thumb?” “Silk,” she says, bursting into a laugh. “I guess I’d recommend silk flowers!” After I explain how I killed the beautiful money tree, my miniature succulents, several cactuses, and every hearty plant she has ever recommended, I plea my refusal to give up hope. I know I can learn to take care of a living plant, and I swear I will get better at actually keeping one alive. We walk around the store, and I point at different things I like. Her eyes light up as I gesture to a cluster of leaves that look like a bow of long, purplish ribbons. “Well, that’s an air plant,” she explains. “And it might be good for you. Even if you kill it, it will always look like that, and even maintain its color.” Possibly. My eyes are always drawn to the terrariums in the store. I love the variety of plants they hold, and the fact they look like little aquariums full of greenery. “What about a terrarium?” I ask. She smiles. “Would you maybe let my husband, Peter, arrange one just for you that will be beautiful, resilient and tough to kill?” We agree on a price, and I head home smiling.

Two days later, I return for my custom-made ecosystem. Peter has created what is possibly one of the most astonishing arrangements I have ever seen. Tiny peach puffs look like pieces of live coral, and small bits of bark are scattered among some of the coolest plants I’ve ever seen: lavender air plants, spikes of little white striped plants, moss and tiny succulents. “You see how the moisture is gathered in the bottom of the terrarium?” asks Alex. “Well, just take a small spray bottle, and mist the whole thing once a week. As long as the moisture looks like this, it will be fine.” I give Alex a hug, lift the arrangement by the rustic rope handle, and head off to my apartment to begin nurturing this hypnotizing new cluster of exotic plants. I smile as I walk down the street toting my terrarium like a pet. I think this time, I just might get it right. REFLECTING ON Viterale curing meat in the Catskills

“To see something different, you have to go off the road,” smiles Giuseppe Viterale, proprietor of Ornella Trattoria Italiana. It’s not only his philosophy on life, but also his approach to selecting unique dishes for his menu that prominently stand out from anything you might taste elsewhere. Giuseppe himself greets each customer as he or she enters his trattoria. As he pulled out a chair for me and poured a generous glass of pinot noir, I had absolutely no idea that I was about to indulge in a culinary experience that would exponentially surpass even my most favorite Italian meals. It is hard to believe that first meal was five years ago this month. From your initial step through the entryway to Ornella, you are instantly transported to an authentic glimpse of Italy, the walls hand-painted to represent a typical street with signs of various 46 | BOROMAG.COM | MAY 2015

piazzas named after each of the Viterale children. The intimate dining room feels simultaneously special and welcoming. The windows are even painted to reflect a countryside village. When his guests walk in, Giuseppe explains, he wants them to feel like they are in his family dining room, far away from the chaos outside. His Italian accent is every bit as rich as you’d hope it to be, but because he speaks with such passion and enthusiasm, his communication flows with ease past any language barrier, like a soothing baritone aria. Giuseppe and his wife, Ornella (the restaurant's namesake) have woven together a menu that combines favorite recipes from generations of family members and friends from all over Italy. When asked what kind of Italian they serve, Giuseppe just laughs. You cannot merely label food either northern or southern


Italian based on the color of the sauces, he will tell you. Italy is a complex blend of so many regions, each with its own specialty. During frequent visits home, he ventures off the beaten path in search of new stories to tell through his recipes. Virtually every dish has its own unique tale that he will be more than happy to share if you inquire. The freshly baked peasant loaf was heavenly and warm; and while the focaccia would have been a delectable sponge for any leftover sauces later to come in the meal, barely a crumb was left before even the first course arrived. Because Giuseppe's father ran a flour mill in Rofrano (a city with a population of just over 2,000 in the Salerno province of Italy just south of the Amalfi Coast), he was raised with an early affinity for unique flours and the resulting textures and flavors they produce. Thankfully, he exercises this expertise far beyond the bread basket, and allows it to beautifully infiltrate each of his unique homemade pasta dishes. "The pasta may take a minute," he explains, much to my relief, while my stomach laughs with the bread and wine happily settling in. "We make all of our pasta fresh to order, so the cooks are back there cutting it for you right now." The first dish to arrive featured pasta made from the flour of ground chestnuts. The rich, buttery nuttiness is harmonized gloriously with a kaleidoscope of gently blanched arugula, cherry tomatoes, generous pieces of sautéed shrimp, and a simple broth of oil and fresh garlic (to maximize flavor, his wife insists on the use of whole cloves simply crushed with the flat side of a knife just before adding to the sauté). As I savor each bite with goosebumps running the length of my arm, he shares the story of this dish with roots in Castagna. "See, you don't need a big sauce when you have flavors like this, no?" He's absolutely correct. Any cream or tomato sauce would only mask this exquisite bouquet. I am instantly in heaven, and it's only the first course.

When I compliment the particularly delicious pieces of shrimp, Giuseppe asks if I am a fan of fish. As soon as I affirm, he retrieves a small package of what he explains to be bottarga (tuna caviar that has been massaged by hand to remove any air pockets, then dried and cured in sea salt for a few weeks, and finally sealed in beeswax). "Put a little bit of your pasta on this small plate," he cautions, "just in case you don't like it." He returns from the kitchen with a cheese grater, and then shaves some of the bottarga onto my pasta. The saltiness somehow explodes all of the flavors even more, and perfectly complements the shrimp, as he suggested. "We don't offer this on the menu, but if you want it and we have it, just ask for some. It's good even with just bread." Giuseppe credits his twin sister for the recipe to this next dish. “I want you to try this, because I know it’s something you would not order if you just read the ingredients on a menu in the window. But will you please try it?" I am slowly realizing that I have sat down to dinner with a genuine Epicurean, who exudes a contagious passion for Italian food, the confidence of a culinary Olympic gold medalist, but not even the slightest hint of arrogance you might expect from someone of his stature and life experience. In just a few bites, he has completely earned my full trust, and I can’t wait to dive into this family recipe. I've never tasted anything like this before. Giuseppe is again correct. I most likely would not have chosen buckwheat pasta with cabbage and potatoes, for fear that it might taste like noodles and sauerkraut. Would I have ever missed out! These dark ribbons of pasta have a firm, yet yielding texture unlike any other pasta (nothing like their Japanese cousin, the soba noodle). The potatoes bring out the earthiness of the buckwheat, yet absorb all of the flavors of the oil and garlic. The cabbage is sliced so thin, and sautéed so delicately that you can barely tell the difference between it and the shreds of fontina cheese. This has opened up a whole new world to me, and I can finally share with my mom that pasta and potatoes are not too much starch together, but actually couple perfectly. (continued on page 48)

(continued from page 47) Since I can't seem to stop interjecting about how delicious the bottarga was, Giuseppe suggests that I will really enjoy the herbs and natural salts of his next selection. This pasta is made from the flour of crushed chickpeas, a specialty of a Tuscan village that showcases chickpeas in nearly all of its dishes. With the freshly crushed garlic, artichoke hearts, capers and olives, this Mediterranean dish almost reminds me of a creamy hummus in the form of pasta. By now I am literally laughing at the table, overtaken by glee and an utter disbelief that such simple ingredients can be interwoven in such a unique way, to create flavors and textures I've never tried, but am certain to now crave. At this point, my kind, gentle, and brilliant host inquires if I want to try one of the entrees, or continue with the pastas that are driving me into bliss. Reflecting on his explanation that each region in Italy takes one style and perfects it, rather than being mediocre at many different styles, he decides I should learn everything I can about the pasta this evening. I know for certain that I will return, so there will be ample opportunity to try the other facets of the menu. One of Ornella's most popular dishes is the imbustata, literally an "envelope" of pasta filled with roasted veal, chicken, wild mushrooms, fresh mozzarella, spinach and mascarpone cheese, all blanketed with a light, yet flavorsome tomato sauce. Though I wholeheartedly believe each diner should experiment with some of Ornella's unique pastas, the imbustata was undeniably my favorite stuffed pasta ever to cross my lips. A genius, hearty blend of robust flavors I will certainly order again. As it was now apparent that I could fit little else into my mouth, Giuseppe insisted that I try just a few more things. Though I was nearly stuffed beyond maximum capacity, how on earth could I resist an invitation to try a few more plates of what had proven to be the most delicious pasta outside of Italy itself? If you even remotely hope to enjoy gnocchi elsewhere, then I recommend avoiding Ornella's version. Ornella's fluffy pasta pillows come tossed in a decadently rich gorgonzola cream sauce that works perfectly with the feathery density of the gnocchi. After two hours of indulgent, delicious divinity, our server brought out a tasting of some of Ornella's specialty desserts. "Bradley, you must at least take a bite of each." Half willing, and halfway already succumbing to food-induced sleepiness, I could not help but smile at this beautiful ending to a magical evening.

Giuseppe imparted one last piece of wisdom. If anything is plated too perfectly or cut too cleanly, you should question the cook's focus on quality flavors. "If I want you to taste tomato and asparagus together, I don't make statues of them on opposite ends of the plate connected with a balsamic drizzle," he explains. He doesn't believe you have to be insulted into seeing the components and building them yourself. "I believe in amalgamating the flavors in the kitchen, and getting them to the guest as quickly as possible." Take for instance his desserts—an espresso-soaked tiramisu, moist lemon cake with actual slivers of candied lemon in the frosting, an incredibly smooth and creamy secret-recipe ricotta and mascarpone cheesecake (my favorite, and a must-try, no matter how full you think you are), and a rich, chocolate-glazed, layered mousse torte. "Look at the pieces, Bradley ... they aren't pretty, but wait until you taste them. You'll be glad we didn't waste time plating them or slicing them perfectly in advance ... it would only compromise their flavor and moisture." As I have come to believe he always is, Giuseppe was again correct. While there were no edible flowers or perfect swirls of coulis on my plate, the flavors were absolutely exquisite. If you have ever claimed to love Italian food, then you would be negligent not to add Ornella Trattoria to your bucket list of musttry restaurants. And if you spot Giuseppe, ask him to tell you about the specialty pastas himself. The history, blended with his passion and culinary expertise, delivered with his genuine sincerity is all the appetizer you could ever need. ASTORIA CHOIR TO PREMIERE WORK BY PULITZER PRIZE NOMINEE

Now in its fifth year, the Astoria Choir has grown to over 75 members, with voices from all over the city (but mostly from Astoria). Their spring concert, “Sacred Songs,” will take place on May 16 at 8 p.m. at Trinity Lutheran Church in Astoria. In addition to pieces by Vaughan Williams, Britten, Holst and Brahms, they will be singing two original pieces by contemporary NYC composers. For the first time, the choir put out a call for scores and ended up with an abundance of high-quality entries. Two very talented composers and their beautiful pieces were selected. They have rehearsed their pieces with the choir and will attend the concert. Reflecting on the choir’s first five years, founder and Artistic Director Adam Eggleston explains, “We’ve had some beautiful performance experiences from collaborating with orchestras (Poulenc’s “Gloria” from last winter comes to mind), to our themed choral concerts, like our “Shakespeare in Song” program a few years ago. We’ve run the genre gamut from Renaissance and Baroque pieces, to classical and modern, as well as a few premieres of new pieces. The most pleasant highlight for me, however, has been the community of the choir. Many members have become very close. This fall I’ll be even be leading a marriage ceremony for a couple who met in the choir.” When asked about the upcoming concert, Eggleston replied, “There is some stunningly gorgeous music on this program. The rich delicacy of Vaughan Williams’ “Five Mystical Songs” for baritone soloist, choir and orchestra will be paired with lively works by Holst and Britten, as well as the sublime choral music of Brahms. I would argue that one of the Brahms pieces on the program, “Geistliches Lied,” is one of the most beautiful pieces of choral music ever written. Most of the works will be performed with a professional string ensemble and pianist.”

Regarding the original pieces being featured, he says, “One of the works, “Glistening Lily,” is a setting of a text by Hildegard von Bingen who was a sort of 12th-century religious mystic and composer. Composer Deanna Witkowski has taken Hildegard’s words and set them in a way that is both ethereal and even jazzy at times in the best possible ways.” The piece was named as a semifinalist for the American Prize in Composition—Choral Division. As a composer, Witkowski creates masterly works setting sacred texts to music and was selected for one of five coveted spots in 2015’s Composer-Librettist Studio at New Dramatists, a New York institution that supports playwrights in creating new works for the stage. “The second new work is by Pulitzer Prize nominee Roger Ames,” continues Eggleston, “who set a standard Latin text of religious praise in a boisterous tribute to the late great Leonard Bernstein. Although it wasn’t written for us, we’re very honored to be premiering this piece.” One of the stipulations in the call for pieces was that the composers had to live in or around New York City. “I would love to feature specifically Astorian composers as we go forward,” says Eggleston. “I’m certain that will happen at some point.” Those interested in joining the choir can send an email to info@ astoriachoir.org. IMPACT ASTORIA: ASTORIA PARK ALLIANCE

Astoria Park is the heart and soul of our community. From the welcome sign at the corner of Ditmars and 19th Street to the track under the RFK Triborough Bridge, Astoria Park is open to all to enjoy. I’ve always noticed how beautiful the park is, and the care and attention that is paid to it. With the warm weather upon us we can thank Astoria Park Alliance for its commitment to keeping this jewel of the borough gleaming so bright. The mission of Astoria Park Alliance (APA) is to ensure the conservation and sustainability of Astoria Park for all New Yorkers. Created in 2007 and co-chaired by Jordan Dyniewski and Martha Lopez-Gilpin, the APA raises awareness of the park and builds public, private and community partnerships to advance the resources and opportunities in the space. APA’s programs and services range from bimonthly beautification and cleanup days, to health and wellness classes on the terrace by Astoria Pool, as well as the popular Shore Fest—a three-day festival featuring activities, music, food and art. “[Astoria Park Alliance] promotes the growth and stewardship of green space,” says Lopez-Gilpin. “[Having the] shared experience of Astoria Park creates respect [for all those who visit it].” Astoria Park was developed in 1913. Following the Civil War, city officials feared that without enforcing eminent domain that the urban population would not have access to nature and the waterfront. Astoria Park is 59.96 square acres of parkland and is historically landmarked. APA is committed to raising awareness and support to make sure the parkland is preserved and revered well into its second century. “[We want] to create more transparency and participation,” says Dyniewski. “We believe in a bottom-up rather than top-down approach to create a sustainable organization,” adds Lopez-Gilpin. And they are doing that more than ever.

APA, which is currently registered as an initiative of the New York City Department of Parks, is in the beginning stages of becoming its own private nonprofit organization. It boasts a robust community of volunteers, each of whom take on different roles and responsibilities to ensure the goals of APA are accomplished. “Applying structure allows your volunteers to do so much more,” says Dyniewski. “When people see good things happening, they are attracted to it and want to make an impact. It makes them feel like they own a part of the community.” With this new structure in place, APA has great optimism for the future of the park. “Building a community starts in the park,” says Dyniewski. “As the neighborhood changes, we hope that Astoria Park will continue to provide a center of commonality [for all who use it].”

HERE ARE THREE SIMPLE WAYS YOU CAN WORK WITH ASTORIA PARK ALLIANCE AND MAKE THE PARK GREENER FOR ALL: 1 Volunteer in the park: Join members for a bimonthly cleanup day to make sure its pathways and green spaces are clean for all to enjoy. 2 Attend community meetings: These take place the first Tuesday of each month at the Bohemian Hall & Beer Garden. This is the first step if people want to be more involved by serving on a committee. 3 Donate: Select the APA as a designated City Parks Foundation program to provide resources for its slew of programming and capital projects.
