eginning in June 2022, we began experiencing a shift in our real estate environment. As noted by Jeff Tucker, a senior economist from Zillow, nationally there is a slowdown in the housing market. Depending on the area, the inflection point has already begun to drop or is about to for others. As for the Barrington area, the Real Estate market is back to a typical slower time of year, such as we experienced pre pandemic. The reason has to do with the rising interest rates and inventory. Interest rates are estimated by policymakers to reach 3.4% by the end of 2022. However, don’t let this shock you as we have previously encountered high rates. Looking back in 2000, a 30-year fixed rate reached 8.08% for a mortgage. On matters of inventory, Fannie Mae reported that homebuilding is slowing down. The short supply of new homes enables a seller’s home to hold more value. This value is contingent on the upkeep of the home. The decline has begun due to interest rates being high resulting to bring about a smaller pool of buyers. Compounded with a low supply of new homes, leaving homes on the market at the desired value contingent upon good upkeep. At the cusp of this inflection point let’s remember even though it is not a hot market someone is always looking for a home whatever the case may be urging the move.

What does that mean for you?

T

he Luxury buyer – The current market is more of a buyer-oriented market. Although there are higher

other factor in the cooling market is the rise of interest rates, which means that the seller must reevaluate on upsale pricing. All other houses on the market above and below your price point are your competitors, and you are trying to make your home stand out from the others with a limited pool of buyers. Any adjustments/renovations to the home give you an edge among competitors for buyers eager to buy. However, be wary to not overinvest because the return is risky. There is good news for the seller in that – new construction is slow because of product and labor shortages. Low inventory makes you as a seller a hotter commodity, but comes with a caveat that buyers will not want to do a lot of work to your home for these same reasons. With a low supply of new homes, you are at an advantage; however, your house is not the only house on the market. interest rates, this means there will be a more limited buyer pool, often diluting out the first-time buyers daunted by the current interest rates. This limited pool allows for negotiation with the seller and room to make a deal.

he Luxury seller – For the luxury seller much has changed from a previously hot market to what is now a market that has cooled. The market was previously hot in part from covid-driven decisions. As well as due to social unrest in Chicago spurring city dwellers to the suburbs. With covid brought needs for a bigger home with office space, yard, and other local amenities. The rush for these needs has slowed with the pandemic subsiding. The

his shift in the market is an inflection point heading towards a cooling stage in the market. Let me remind you this is a shift, not a collapse. As with every door that closes another one opens. Warm regards, Connie

s there anything better than the month of August? Time seems to move slower as the heat warms everything up and the sun seems to linger on the horizon late into the evening hours. The sounds, the smells of flowers, the laughter as children run through our yards—all make me so thankful for our beautiful community. And as our hearts break for our neighbors in nearby Highland Park after the July 4th tragedy, like many, I find it difficult to express the correct sentiment in words. The outpouring of support for Highland Park Strong demonstrates the goodness of the world amongst the darkness that occurred. Country has always been a place to share inspiring stories of the individuals in Barrington, and to celebrate those in our community making an impact, which we continue to do so in this issue. Looking forward, in this issue, we celebrate so many of the amazing facets and people of Barrington. Harkening close to the British countryside is the little-known riding trail system that weaves its way through Barrington. The Riding Club takes us on a tour of the trails, maintained and preserved by their amazing members. Joanna Zelaya is not only CEO of Chicago Precision—a manufacturing company— she is also fulfilling her dream of sustainability by building a hobby farm on her Barrington Hills property. Barrington native Alex Lyon Singer is a force to be reckoned with. Gracious, thoughtful, and whip-smart, she is putting her talents to great use with the launch of Lyon’s Way which seeks to improve lives for disadvantaged youth afflicted with cancer. Lyon’s Way has partnered with the University of Chicago Medicine Comer Children’s Hospital on the South Side of Chicago and is off to an amazing start in making an impact on many lives. CEZANNE IN THE CITY The Art Institute of Chicago unveils an exhibition showcasing the works of French artist Paul Cezanne. WORDS BY LAURA LAYFER TREITMAN PHOTOGRAPHY COURTESY OF THE ART INSTITUTE OF CHICAGO Summer in Chicago is often lauded for the few months of the year when its residents can revel in the warmth and sun of the outdoors. This season, however, it is what is featured inside the Art Institute of Chicago that is the talk of the town with crowds enjoying the scenery of the exhibition Cezanne running through September 5. The retrospective, the first in nearly a quarter-century, focuses on the French artist’s enduring modernity in style and spirit. The oeuvre of Paul Cezanne (1839-1906) is examined through various perspectives, from his technique and subject matter to his interactions with contemporaries, and subsequent influence on future followers. How he portrayed people, depicted still-lifes, and captured landscapes is examined for its continuing relevance today through the scholarship of Gloria Groom, Chair and David and Mary Winton Green Curator of European Painting and Sculpture, and Caitlin Haskell, Gary C. and Frances Comer Curator of Modern and Contemporary Art. The pair also worked closely with the London’s Tate Modern where the show will later travel. John D. and Alexandra C. Nichols provided lead support of the exhibition. THE ARNIANO PAINTING SCHOOL NEAR SIENA, ITALY “A building site on a barren hill was not what my parents had in mind when they decided to raise a family in Tuscany,” writes author Amber Guinness in the introduction to her recently released first book, A House Party in Tuscany. “Arniano—the derelict farmhouse they bought in 1989, in the then unfashionable southern region of Montalcino—had a roof and windows but not much else … this was where I would spend the first thirteen years of my life.”

Set on a hillside not far from Siena, Italy, Arniano is a magical 18th-century farmhouse restored by Guinness’s parents and surrounded by staggering beauty as far as the eye can see. Over years of welcoming family and friends, Arniano became synonymous with delicious food and sparkling company. As Guinness notes, “The stories are endless, the guests innumerable, the house parties legendary, and the sense of home paramount.” At her childhood home, Guinness found a passion for cooking, and in 2014, with friend and painter William Roper-Curzon, she established The Arniano Painting School. lzheimer’s disease has touched the lives of so many. Researchers have not been able to clearly define a cause and effect for it. Despite the billions that have been spent on research, thousands of people are diagnosed with the disease each year and are given little hope for a cure. A recent study has given researchers new hope in getting to bottom of this complex disease. Bacteria that cause gum disease have been isolated in the area of the brain that is believed to be causing the symptoms of Alzheimer’s. A complex plaque of bacteria builds up in the brain in this

region and the “gum disease” bacteria are among the findings. It is thought that the bacteria act to destroy that area of the brain in the way they destroy gums and bone around teeth. We have known for years that gum disease increases your risk of cardio vascular disease. The same “gum disease” bacteria flow through the blood stream and attach themselves to the arteries and valves in and around your heart. With time, the plaque builds and closes off the arteries and gives rise to the threat of cardio-vascular disease. Past research has shown a link of cardiovascular disease and Alzheimer’s. Researchers knew that the two were correlated but did not have answers as to why. With the new information being brought to light, the studies are following the possibility of gum disease being the causative factor for both. In other words, the cardio vascular disease does not cause Alzheimer’s but rather gum disease is the contributing factor to both cardio-vascular disease and Alzheimer’s. There is a lot left to do in this area of research. If future findings can show causation instead of correlation of gum disease and Alzheimer’s, then research will begin on methods to help stop or cure this horrible disease. In the meantime, you can help protect yourself by flossing every day and having your gums checked for gum disease by your dentist. ivorce is extremely expensive. The “expense” extends well beyond the cost of attorney fees. It is expensive emotionally, robs the parties of time and energy, and usually affects each member of the family. Approaching a divorce with the intention of resolving it amicably is best for everyone involved. Some lawyers claim that by fighting, the client will receive a better result. It is just not the case. The outcome of a hugely contested divorce versus a divorce resolved by agreement rarely deviates more than 5 percent. The biggest difference is the amount of fees. A medium-size divorce resolved by agreement costs 10 times less than a medium-sized divorce that goes to trial. In addition, an amicable divorce takes substantially less time, creates less stress, and allows the parties to move forward with less bitterness and resentment. This is always good but especially important when children are involved. Given these facts, the question remains: why doesn’t everyone choose an amicable divorce? Some people are so angry that they don’t make good choices. Other people have attorneys suggesting that litigation will provide them with a much better outcome. The client may have someone advising him/her who elevates the drama, distrust, and chaos rather than reducing it. Still, others want

an amicable divorce but their soon-to-be ex-spouse refuses to be cordial. It’s important to find an attorney who can help you choose the right path. Select someone who will give you good counsel and keep things in perspective instead of heightening the conflict. Some attorneys handle only uncontested divorces. Other attorneys are aggressive, skilled trial attorneys. It is rare to find an attorney who will proceed amicably but has the necessary litigation skills in case it goes to trial. The search is worth it: proceeding amicably is much easier when the other side knows that if required, your attorney will go to court and achieve a fair outcome. A powerful attorney actually assists in an agreeable divorce by knowing the law, knowing what a reasonable outcome would be if they had to go to trial, and being able to negotiate a similar outcome without the expense of litigation. Divorce doesn’t have to be adversarial; you can make decisions to help avoid unnecessary drama, acrimony, and attorney fees. When interviewing a potential attorney, it’s important to ask questions that help you to determine if the attorney is both a skilled litigator and is willing to help you achieve an amicable resolution. T

here is a special place amidst all the gorgeous countryside of Barrington where riding enthusiast Sally Robinson often heads with her horse when she needs a dose of solitude and contentment within this crazy and unpredictable world. “You come up at the top of the hill and you just look out across the entirety of the forest preserve and its wetlands … and it’s just gorgeous,” gushes Robinson. “And all you can hear in the summer is the sound of the birds

singing.” It’s a delightful description of life on horseback on Barrington’s amazing equestrian trail system, which recalls the peacefulness of the British countryside. And for Robinson, who has been riding horses since she was just 5 years old, it was a quest for this lifestyle that led her to move to Barrington from the United Kingdom many years ago, dreaming of the day in which she could live a life with her beloved horses by her side. “The land was just so expensive in the U.K, and you just really can’t have your own horse there on your property,” Robinson

remembers. “It would always have to be at a managed barn. When my husband got a job here and we moved here, I found out about the riding community, and it was a dream come true.” Indeed, countless men and women have flocked to the Barrington area for the same reason throughout the years, in search of not only the ability to have horses on their land but also to have camaraderie with other horse lovers. Many have found that camaraderie within the Riding Club of Barrington Hills—run by their Board, which consists of volunteers from the community, many who have horses. The Riding Club also welcomes nonriders, purely social members who participate in the Club’s long list of fellowship opportunities. “It’s just very easy to get along with anyone because you have the horses in common,” says Robinson. “While not everybody rides, most people in the Riding Club have a core passion for the outdoors and such. And there is such a sense of community within the Club. That’s what I truly love the most.” Today, the Riding Club has never been more committed to strengthening its place in the community for several reasons. “Ultimately, we want to do anything we can to make sure we remain a rural community,” says Robinson of the ultimate purpose of the all-volunteer nonprofit riding organization formed in 1937. “All around us, there’s just more buildings and housing going up. So, it’s important to maintain this system that we have and encourage people to join us so we can continue to have that.” She draws in a deep breath. “It’s a unique opportunity we have here,” says the openspace advocate. “It’s historic and it’s so very beautiful. We’ve really got to work hard to keep these open spaces because they don’t just happen.” Of course, the continued success of the Riding Club of Barrington hangs on the participation of its youngest members and the recruitment of future members eager to keep the

group intact and thriving. A young rider herself, Robinson’s daughter Amelie, who will be a junior in high school this upcoming year shares, “I’m very grateful to be able to come home from a hectic day at school and ride on the beautiful trails.” “We are currently looking into partnering with the local pony club more moving forward,” remarks Robinson. “We certainly want to attract everyone from the young children who have just moved to the area who might want to get into horses to the people who grew up in the Pony Club.” Besides events targeting the younger horse lover, the Riding Club also routinely hold events that essentially help them thank the owners of the private trails the Club has long used in the area. “They give us access to the trails, and we are allowed to ride on their properties,” says Robinson. “We’re very in debt to them. They do it simply from the goodness of their hearts. They want to see the trails stay open and they want people to be able to ride to other people’s houses. So yes, we are very grateful to them.” And then, there are the elder statesmen who continue to call Barrington home, who can provide the Riding Club with countless stories of the way things used to be. “It’s really lovely to hear the history of the Village and how the trails have changed and how the Grace Quinn, a director of the Riding Club, and trees used to be this her family on the trails in high when they used Barrington. to ride,” Robinson says with a slight chuckle. These are stories she hopes to share someday too. “When I was younger, I was fearless,” she concludes. “I wanted to jump and go really fast, and it was all very exhilarating. But now, as I have gotten older, I much more prefer a relaxing ride and a chat with friends. Lyon’s Way Lyon Family Foundation’s newest initiative supporting The University of Chicago Medicine Comer Children’s Hospital WORDS BY JANIS MVK / PHOTOGRAPHY BY EMILIA JANE

T

he Lyon Family Foundation has been a dedicated steward of philanthropic efforts in Chicago for more than 20 years. The foundation established by the late Robert H. Lyon, who was diagnosed with leukemia before his passing, was created to make a meaningful impact in the community while providing his family the opportunity to carry on his philanthropic vision after his time. Continuing his mission of generosity and ingenuity, his daughter and Executive Director of the foundation, Alexandra Lyon Singer passionately drives the organization forward, and just last year, conceived and launched Lyon’s Way, a new undertaking to improve the lives of adolescents and young adults afflicted with cancer. “As we fulfilled a one-million-dollar pledge commitment with the Leukemia and Lymphoma Society in 2020, there was an opportunity to pivot and pick another organization as an anchor for fundraising,” Singer says. At the time the foundation was thinking about their next steps, her family was unfortunately affected by leukemia again, but this time in the pediatric space. This got the family thinking. “With my family, we were having conversations about the struggle the family unit faces as a cancer diagnosis comes in and what we can do to really push the needle forward,” she says. “We love funding research because there are so many positive benefits,” Singer says, “but we were really missing the interpersonal connection of funding something smaller that could make a strong

individual impact on families one-on-one.” After connecting with doctors at the University of Chicago, Singer told them her thoughts and ideas about assisting children and families affected by cancer, however, their pediatrics space already had a robust program. The doctors and researchers at the hospital redirected her vision into another age bracket in the young adult space, ages 15-39. “The university really believes there is a huge mental health gap happening within this age group, and they had been wanting to add a fulltime psychologist for that patient population for years,” Singer says. “They thought this was a great opportunity for us to help them fulfill their bigger vision of being able to treat the whole patient—the social, emotional, and the physical.” Enter Lyon’s Way. Now officially partnered with the University of Chicago Medicine Comer Children’s Hospital Adolescent & Young Adult (AYA) Oncology program, Lyon’s Way, through fundraising and grants, facilitates a full-time psychologist for patients and their families aiming to help address the profound short-and-long-term mental-health challenges patients face when up against cancer treatment, recovery, and remission. “We wanted to arm families with an amazing liaison— someone who would be able to get to know them and help them on a much broader scale through the cancer journey,” Singer explains. This includes understanding if the families or patients need any sort of resources or support that they may not be receiving from other

nonprofits, or helping to address any issues that are creating barriers to treatment, such as difficulty getting to-and-from treatments. “All the stars aligned because their patient population on a yearly basis is about seventy patients and that’s a pretty tangible number for us and, again, fulfilling our family’s desire to really go deep with the smaller subset of people.” Singer says. “From there, the initiative started to take shape and build momentum.” “Lyon’s Way is designed to be multi-tiered, and we have plans to build out different initiatives to further meet the needs of the patient population,” Singer explains. For example, the Lyon’s Way Auxiliary Fund was established to remove financial hurdles for patients while they are undergoing treatment. It will take care of unexpected or extraordinary expenses, such as medical procedures that are not covered by insurance, transit to the hospital, and other expenses that impact daily life, like a utility bill or car repair. “The goal is to help eliminate the barriers that stand in the way of survivorship,” Singer says. Lyon’s Way was officially launched in June 2021 at an intimate affair referred to as The Peony Party, with the aim of bringing together a strong, like-minded group of women to be part of the initiative as it grows. The event, and the Lyon’s Way mission, were so well-received that Singer re-conceived The Peony Party to be a fundraising event, which in June 2022 more than tripled in size, gathering over 150 women from Barrington, Chicago, the North Shore, Hinsdale, and south suburbs. Important to Singer is connecting a diverse group of women who might not meet otherwise, over the shared vision of supporting Lyon’s Way, and the mission it serves. “In many ways, this event is about women supporting women, as well as lifting others up,” Singer says. Guests of the event shared personal experiences with cancer during the Peony Panel, and many, entrepreneurs in their own right, had products featured in this year’s luxury gift bag for sponsors, including custom Deseda silk scarves, Romer skincare, and designer pajamas from Petite Plume. Thanks to the incredible support from the generous women attending this year’s event, The Peony Party raised over $175,000 this year for the Lyon’s Way Auxiliary Fund, which will remove financial stressors for patients in the University of Chicago Medicine Adolescent and Young Adult (AYA) Oncology Program so that they can focus on survivorship. oanna Zelaya always envisioned a life such as this. She would live out her days on acres of land alongside her family and a slew of animals, land that would sustain her mentally and nourish her physically via the crops she would plant, land she could someday hand down to her children so they too could live out their own dreams upon it. These dreams are beginning to come true. “It’s always been our dream to be self-sufficient,” Zelaya says from the Barrington Hills home she purchased with her husband back in 2017. “It’s been my parent’s dream, and it’s become my family’s dream.” Of course, life at home is just a small piece of the impressive life of Zelaya, who spends her days working as the CEO of Chicago Precision, a much-respected family business located in Elk Grove Village that works to provide custom machined parts to multiple industries such as aerospace, defense, and medical. In fact, Zelaya’s role as one of the few female CEOs in the manufacturing space and her interest in expanding into additive machining recently afforded her the chance to meet President Biden in May during his recent visit to Ohio to launch the “Additive Manufacturing Forward Initiative.” “It was so surreal,” she says. “I will never, ever forget it.” It’s yet another impressive milestone on a professional journey that began when Zelaya was just a little girl growing up in Chicago under the watchful eyes of her parents, who came to the states from Poland in the mid-seventies to escape communism. After graduating from Loyola University Chicago and joining the Peace Corps, Zelaya found herself desperately trying to find her footing, both personally and professionally. “I was feeling a little lost,” Zelaya remembers. “Luckily, my dad is

amazing, and he knows how to help people find their direction. So, he asked me to come work at his company.” His company was and is ERA Industries, a well-known manufacturing company that at the time was having trouble getting its quality systems certified. Even with relatively no experience, Zelaya took the issue on and soon had the company on the right track while, at the same time, attending Kellogg School of Management. And once again, Zelaya’s father helped her find her path, this time by encouraging his daughter to open her own business. “He knows me so well,” she chuckles. “I’ve always been very indeJWC | COUNTRY 57

pendent. I never liked working for anyone. I felt like I always had to have control. If I didn’t have control, I wasn’t going to get passionate about it.” Zelaya’s passion soon overflowed into Chicago Precision, which opened in 2003. “I see it as a benefit to be a female in this industry,” she explains. “If I’m the only woman in the room, they’re going to remember me. And a lot of times that’s the first step to forming partnerships thru which Chicago Precision can be the best company it can be.” But when life in the office becomes too much, it’s her Barrington Hills home where she finds her greatest respite. “We bought 30 acres of land in 2018 and then just this past March, we bought another adjoining 19 acres,” gushes Zelaya, who already serves as mama to a total of 22 chickens. “We’re still in the very early stages of building a barn for animals and then we’re building an auxiliary building that is going to have living quarters upstairs where my parents will live and a big garage where we’ll have all of our equipment. You know, maybe we will start making

honey,” she says with a laugh. Truly, the sky’s the limit…both for Zelaya and her dad. “He has worked so hard,” she reflects. “He came to the states with nothing. He was working two jobs. He didn’t speak English. He had to go to English classes at night. It’s a perfect example of the American dream. If you work really hard and are passionate about what you do, you can make all of your dreams come true.” And there is much more work to be done. “Hopefully by next year, we’ll be able to start buying animals,” she says with excitement. “We want goats and more chickens and maybe a cow and I really want to get some horses. I used to ride as a child, so I would love to teach my kids. Everyone in Barrington Hills loves horses.” She draws in a deep breath. “As much as I love working in an office environment, I too love coming home and doing the farm chores. I get so much energy from being outside. My stress level immediately goes down. You’re able to clear your head. It’s just magnificent here.”

Red Plum Galette

For a lovely summer dessert, create this rustic plum galette with a flaky, buttery crust folded over juicy plums. WORDS, RECIPE AND PHOTOS BY MONICA KASS ROGERS

O

f the many juicy fruits that come with summer’s bounty, red plums are among my favorites. A simple galette is an easy way to highlight them. The word galette—French for “flat cake”—originated in the 14th century, and over the centuries the term has been applied to a wide array of sweet and savory

treats, all baked on a flat, round crust. This red plum galette is a free-form pie with some almond flour added to the dough for a pleasantly flavored crunch. A light glaze of apricot preserves adds to the golden glow of the fruit. You can make this with other plum varieties or even fresh peaches. This versatile dessert tastes delightful when served warm with a dollop of vanilla ice cream or when served chilled and topped with crème fraiche.

INGREDIENTS FOR THE GALETTE CRUST

• 1 1/2 cups all-purpose flour • 1/2 cup almond flour • 1 3/4 sticks cold unsalted butter, cut into small cubes • 1/4 teaspoon salt • 1 teaspoon sugar • 2 to 3 tablespoons ice water

FOR THE RED PLUM FILLING

• 1/2 cup sugar, plus 1 teaspoon for sprinkling on assembled galette crust • 1/4 cup almond flour • 3 tablespoons all-purpose flour • 6 or 7 ripe red plums, halved, pitted, and cut into slim wedges • 1/4 stick unsalted butter, cut into tiny pieces • 1 egg mixed with 1 teaspoon water for egg wash • 3 tablespoons smooth apricot preserves

METHOD FOR GALETTE CRUST

Sift almond flour, all-purpose flour, sugar, and salt into a wide shallow bowl. Cut in the unsalted butter until mixture resembles wet sand with some bits of butter still visible throughout. With a fork, stir in just enough ice water for mixture to start clumping together. Spread work surface with two overlapping pieces of plastic wrap. Tip crust mixture onto plastic. Gather up plastic around the mass and knead through the plastic to form a ball of dough. Spread plastic back onto work surface. Flatten dough into a round disk. Cover with two more overlapping sheets of plastic. Roll out into an 18inch circle. Transfer crust with plastic sheets still intact, to a flat baking sheet or large, flat, and round pizza pan. Refrigerate for 15 minutes.

FOR FILLING

Preheat oven to 400 degrees with oven rack set to center position. Combine 1/4 cup of the sugar with the almond flour and all-purpose flour to make “crust dust.” Remove galette crust from refrigerator. Remove plastic wrap from the top of the crust. Line a large sheet pan or pizza pan with parchment paper. Invert crust onto parchment. Remove remaining plastic wrap from crust. Sprinkle “crust dust” evenly over the dough, leaving the two inches nearest the edge bare. Place the plum wedges in a bowl; stir remaining 1/4 cup sugar into the plums. Pile the sugared plum wedges onto the prepared crust; dot with the butter pieces. Fold the edge of the dough up and over the plums nearest the edge to create a 2-inch border, pleating crust as needed. Brush edges of crust with egg wash. Sprinkle with remaining teaspoon of sugar. Bake the galette for 50 minutes to 1 hour, until the fruit is very soft, and the crust is nicely browned. Remove from oven; brush fruit with apricot preserves. Cool galette to room temperature. Slide galette onto serving platter, removing parchment. Slice and serve galette on its own, warm with vanilla ice cream, or chilled with crème fraiche. JWC | COUNTRY 63

Summer 75 A riff on the classic French 75, elevated with Aronia Berry liqueur

obert Haynes is a Chicago-based drinks and spirits guru. As a part of the opening team at Chicago’s James Beard award winning cocktail lounge, the Violet Hour, Haynes has consulted on numerous bar programs both in the states and abroad. In 2013, he switched gears to the producer side, helping first to craft Letherbee distillery’s infamous Besk liqueurs and then launching a line of all natural liqueurs under the Apologue brand in 2017. There are few cocktails better suited for summer than the French 75. Affectionately referred to as “a Tom Collins in a tuxedo” the original French 75 is a brisk and refreshing blend of gin, lemon juice, and simple syrup

whose origins can be traced back to Here’s How by Judge Jr. published in 1927. In the almost 100 years since its creation, it has inspired countless variations and there are many ways to get creative with this one. This month we give this classic cocktail a modern twist, substituting a locally made Aronia Berry liqueur for the simple syrup and serving it ‘long’ over ice. Fruity, floral, and delightful, the Summer 75 can be topped with Champagne, Prosecco, or Cava and whatever you do, don’t forget the garnish! A great cocktail should engage all of the senses and the fresh lemon zest helps take this one over the top. Here he shares the recipe of Summer 75.

• 1 oz Gin • .50 oz Apologue Aronia Berry Liqueur • .50 oz Lemon Juice • .50 oz Simple Syrup Combine all ingredients in a shaker tin. Add ice and shake briefly. Strain into a Collins glass over ice. Top with sparkling wine. Garnish with a lemon peel.

Aronia Berry A superfruit indigenous to the Midwest Native to the Midwest, Aronia (also referred to as a chokeberry) is an indigenous bush berry with a dark-purple color that has been rising in popularity due to its high antioxidant properties. The super fruit is prized for its bright tart taste that plays particularly well in cocktails.

esperate to escape the Midwest winter, we searched for an easily accessible beach destination and found just the place at the all-inclusive Grand Velas Riviera Nayarit. Boarding the plane at O’Hare early in the morning, we arrived at the resort just in time for a late beachside lunch. The Vela brothers, who believe in the art and passion of hospitality, own and operate the Velas Resorts. In 2002, the brothers opened the portfolio’s second property—a retreat located on Banderas Bay and a quick drive from Puerto Vallarta’s airport. Reinventing the all-inclusive concept, the “Velas Vacation Expe-

rience” embodies exceptional dining, expansive suites, and luxury service. The brother’s vision has been well received as the Grand Velas Riviera Nayarit is the only all-inclusive resort in the Mexican Pacific to be awarded Five Diamonds by AAA. Upon arrival, we entered a palatial lobby where beautifully attired staff delivered cool beverages, warm towels, and a head and neck massage. I have visited places all over the world, but I have never experienced a welcome massage—something every weary traveler craves. This trio of pleasures is the perfect antidote for jet lag. Walking to our room, we found a large carved wooden door that

opened to reveal an expansive suite with an ocean view. Waiting for us on the desk was a fun Grand Velas touch—a Mezcal Kit. The elaborate display included Velas’ own Olvídame Si Puedes mezcal, a drink recipe, glasses rimmed in Tajin (chili salt), orange slices, and an array of dark chocolates. A welcome note encouraged us to sip the mezcal during our stay or take the bottle home as a memento. A woman we met at an early morning yoga class was traveling with her family and stayed in the two-bedroom family suites. The accommodations provided the perfect balance for her—allowing the family to stay together while providing ample room for privacy for her and her husband. The spacious accommodations, over 2,000 square feet, featured one king bedroom connecting to a suite with two queen beds, a private terrace with ocean views, and 24hour Suite Service. Her children adored the additional amenities including stuffed animals resembling the resort’s mascot “Pancho,” bathrobes and slippers in special mini sizes, and a kids’ welcome beach package. Although I traveled with my friend and not my family, we both marveled at the resort’s family-friendly ambiance. We couldn’t get over the “cuteness” of the adorable mini beach cabanas for wee travelers or the pint-sized hooded towels featuring the resort’s beloved mascot. We wondered why the resorts of our children’s youth didn’t offer something similar to the Baby Concierge, state-of-the-art Kids’ or Teens’ Clubs. The Baby Concierge coordinates everything from a crib, toys, and bottle sterilizer to bouncers, strollers, and highchairs. The Kids’ Club (for ages 4 to 12) and Teens’ Club (for ages 13 to 16) offer a plethora of entertaining activities, including arts and crafts, outdoor games, video gaming booths with big JWC | COUNTRY 67

side tales of Mexican culture and reflect the resort’s desire to keep things exciting for its well-traveled and culinary-driven guests. Ready for a little food in our stomachs, we headed to Frida, named in honor of famed Mexican artist, Frida Kahlo, for modern Mexican fare in an elegant setting with beautiful ocean views. We started with a fig salad – caramelized figs with green tomatoes on a bed of spinach bathed in a bittersweet tamarind-mint vinaigrette with toasted pistachios and a touch of parsley. My main course presented a large plate full of giant spicy shrimp in a garlic, blackened green sauce with sweet potato puree in smoked chili, and sautéed vegetables. I just had to try the churros with chocolate sauce and vanilla ice cream—the dessert was worth every single calorie. That night we slept like kings. On our final evening, we ventured to Piaf for its classic French menu. The cheese plate was plentiful and delicious. We followed this with a French onion soup topped with Gruyere cheese. For our main course, we had a mahi-mahi filet over mussels, shrimp, and a chorizo ragout, with bisque and saffron emulsion. The entire meal was très bon! Our post-dinner libations were often enjoyed at the resort’s nightclub, KOI where the juxtaposition of sleek modern décor and ‘80s music videos was intoxicating and transportive. Breakfasts were enjoyed oceanside where we chose from an endless array of delicacies at the bright and airy Azul restaurant.

The Teens’ Club was so cool that I am not sure even the beauty of the Pacific Ocean could entice the occupants away (however, as we all know a happy teen is a happy family). If traveling with a family, there is no reason to leave the property as there is something to delight any age or interest. My friend and I never felt the need to leave either—with the six restaurants, spa, beach, pools, and activities (our favorites were beachside yoga and lounging in the beach cabanas), we felt every desire fulfilled. DINE & IMBIBE The Grand Velas’ modernly appointed restaurants include four gourmet options that take you on a mouth-watering journey through Mexico, Europe, and Asia and two open-air beachfront eateries. On our first night, we celebrated by taking a mixology class. Our mixologist introduced us to the magnificent creation dubbed “Golden Ranch Water.” Twenty-four-karat edible gold flakes danced in a tequila bottle as the master mixologist poured “liquid gold” into a glass, adding fresh lime, jalapeno, Topo Chico sparkling mineral water, and Tajin—we sipped the sparkling, spicy concoction beneath the sun and couldn’t imagine a more perfect introduction to the evening. We also learned about a Hibiscus Mezcaltini—an incredibly delicious combination of mezcal, hibiscus, and cinnamon. These mixology classes serve beverages along-

SPA Saving the best for last, we visited Se Spa by Grand Velas. Forbes Travel Guide has awarded the spa Five Stars—one of only nine spas in Mexico to receive the distinction. The 16,500 square-foot Se Spa is the resort’s crown jewel. The spa’s design includes a palapa-style entrance, furniture from Bali, and a large marbled wall with cascading water. The seven-step Water Journey guided by a personal spa valet entailed an hour-long relaxation/purification ritual built around the use of seven specially designed water-based facilities. After this delightful experience, I was guided past 20 treatment rooms to my destination for a Grand Cora massage. This highly energetic massage stimulates sensorial perception through a sound ritual using natural instruments—think enchanting drums and vibrating bells. With the application of warm ginger oil, all tension drained away restoring my emotional and spiritual wellness. Even after 90 minutes, I was reluctant to rise from the table. CASA VELAS If you are looking for an adults-only alternative in Puerto Vallarta, try the Casa Velas resort just a short drive away. The resort is an all-inclusive boutique hotel featuring 80 suites nestled on the grounds of the Marina Vallarta Golf Club. Giant iguanas stroll the golf course occasionally encountering a toothy companion as gators like to sun on the course’s rolling hills. J

ennifer Burns loved working for a small marketing consulting firm in Evanston nearly 20 years ago. The Fortini-Campbell Company’s clients were large corporations, Hewlett-Packard among them, and Burns—with a master’s degree in integrated marketing communications from Northwestern University—thoroughly enjoyed helping clients understand their consumers’ needs. But another love, her first child, Ryan, made Burns walk away from her cherished senior consultant position. “I had a heart-to-heart conversation with my husband (David) when Ryan was 4,” Burns, now 50 and a Kildeer resident, recalls. “I wanted to be home with Ryan. He was my No. 1 priority.” She would later homeschool Ryan and the couple’s other two children, Bradley and Nicholas, who was adopted 10 years ago. Burns put her marketing acumen to good use again in 2004, when she launched H.E.A.R.T. (Homeschool Enrichment Achieved Respectively Together), a nine-month, weekly enrichment program for students that employs passionate, Christian instructors in the areas of art, science, Spanish, physical education, music, and more. Based in the Village Church of Barrington, H.E.A.R.T. provides students with all the “extras” that round out the education parents provide at home. “The homeschool community in Barrington was tiny at the time,” Burns says. “But I felt there was a need for a product that would meet the needs of such a community. So I developed one.” In early 2005 Burns’ had a vision for something bigger for homeschoolers (kindergarten through 12th grade), and in 2006 Classical Consortium Academy (CCA) opened its doors at the Village

Church of Barrington, introducing students to creative learning through classical methods and subjects. CCA is a classical, Christian hybrid school that combines the expertise and accountability of a rigorous classical school and the flexibility and nurturing of homeschooling. “The overall philosophy of Classical Consortium Academy is that kids are capable, so much more capable, than what the world thinks they can achieve,” Burns says. “Our kids are certainly doing some heavy lifting, intellectually. They have the downtime needed to thoroughly read Dante’s Inferno and The Federalist Papers. Our seventh-graders are reading college-level textbooks, and our juniors in high school are presenting 30-page theses before panels. That level of work, time and time again, produces really good kids. If it sounds as if Burns has found her purpose in life, it’s because she has. Two Bible verses (Galatians 6: 9-10), she says, encapsulate her calling: “And let us not grow weary while doing good, for in due season we shall reap if we do not lose heart. Therefore, as we have opportunity, let us do good to all, especially to those who are of the household of faith.” “We’re happy to provide Christian families with an education they want, and we’re more than pleased to have established a place that has a good reputation,” Burns says. “We’re cultivating a love of wisdom and learning in our students.” Classical Consortium Academy is located at Village Church of Barrington, 1600 East Main Street.
