AKE FOREST OPEN LANDS Association announced that the organization’s President and CEO, John Sentell, has decided to retire this May. Sentell has led the highly regarded conservation land trust for over 11 years and will remain with the organization in an advisory capacity and continue to serve on LFOLA’s Board of Governors. “We will miss John’s steady hand, contagious energy, and passionate vision leading our organization,” said Fred Wacker, board chair of LFOLA. “John’s dedication during his tenure has brought many successes of which we can all be proud and that will endure for decades.” Sentell’s passion for conservation runs deep. While president of LFOLA he also served as a past president of the statewide Prairie State Conservation Coalition (PSCC) along with other positions on nonprofit boards and leadership committees in the broader conservation field. ILLUSTRATOR PETER TRIMARCO RELEASES NEW CHILDREN’S BOOK “NOW WHAT?” by Tricia Despres
D
URING HIS TIME as a resident of Lake Forest, Peter Trimarco dreamed of a day in which he could spend his days using his creativity to better the lives of others. And day after day, that dream continues to come true. Having now established a career in which he spends his time creating stunning illustrations that will forever live alongside meaningful words, the noted publisher and talented illustrator recently released a playful new children’s book titled Now What?. The joyful book, which “celebrates friendship, whimsy, and the power of good old-fashioned, screen-free fun through the adventures of precocious, redhead Lizzy, her amusing animal sidekick, and Luna, a new neighbor from the Caribbean,” is a masterpiece for the imaginary mind. The latest in the acclaimed It’s Just So… children’s book series which Trimarco created alongside his wife and award-winning author Brenda Faat, Now What? serves up a meaningful message to early readers about the importance of celebrating the “gift of the present,” especially at a time when the stresses of the world are enough to overcome even the strongest of us all. Because while Now What? is written with young children ages 4 to 8 in mind, it’s lyrical rhyme, colorful illustrations, and worthy reminder that ‘the best of times are right now’ is certain to speak to young and old alike. Understandably, the book was recently praised by Kirkus Reviews, noting that Now What? is “a lively, innovative story of friendship that encourages readers to think creatively.” It’s this creative drive that has led Trimarco to a wide range of accomplishments since graduating from Lake Forest College in Peter Trimarco Co-illustrator 1982 with a degree in Literature
and a minor in Fine Art. Originally beginning his professional career as an editorial cartoonist, Trimarco went on to design packaging and commercial art for the film and music industries. Faatz From there, he moved to the Brenda Co-Creator and business side of music as an ex- author ecutive producer and creative director on over 40 productions, with two of those productions going on to garner coveted Grammy nominations. As an active member of the entertainment and publishing communities, Trimarco has been featured on NPR’s Fresh Air and interviewed by the London Financial Times on intellectual property rights. Now exclusively focusing on children’s book publishing, Trimarco devotes any extra time he might be able to carve out to serve on the Board of IBPA, along with serving as President of the CIPA Education and Literacy Foundation in Colorado. LIBERTYVILLE HOMELESS SHELTER SEEKS VOLUNTEERS FOR MEAL PROGRAM by Diana Newton
W
HEN ERIC PESCHKE and Susan Milanek grocery shop, they fill up their carts with food they will use to make meals for families they don’t even know. Both regularly volunteer with their families to prepare meals for the residents of Lake County Haven, a homeless services agency serving women and children. Lake County Haven is seeking volunteers to prepare meals for the women and children who reside in the agency’s two homeless shelters, Hope House and Renewal House, both located in Libertyville. The agency relies on volunteer donors to provide more than 2,100 meals annually for its two shelters. Signing up is as simple as choosing a meal—breakfast, lunch or dinner—and a date to drop the meal off at the shelter. Find more information at Lake County Haven’s website, lakecountyhaven.org. The agency also posts information about the meal program and other volunteer opportunities on Facebook. Donors can prepare a homemade meal or bring a pizza or restaurant meal that they ordered. The agency also is seeking volunteers to grocery shop for the shelters’ residents. “The residents think the food is wonderful, and there are so many heartwarming stories,” said Laura Sabino, executive director of Lake County Haven. “We have had people donate meals in honor of a loved one. They share special family recipes. Sometimes families bring flowers, too.” Peschke, his wife, Mary and stepdaughter, Avery, 12, all of Wauconda, prepare big buttery, cheesy trays of mac and cheese, using a family recipe handed down by Reschke’s mother. “She always made it for us when we were kids as a special treat,” Peschke said. “The funny thing is that when I was in college, I never ate a boxed mac and cheese. I’ve made it so many times, I don’t have to measure out the flour, milk and cheese.” Milanek and her daughter, Lauren, 17, of Lake Forest, have been preparing lunches or grocery shopping for shelter residents twice a month for four years. “It’s fun for us to get together and decide what we are going to make,” Milanek said. “We try to make different, fancy kinds of sandwiches. We have picked up lunch from Chick-fil-A, and the residents were always like ‘Chick-fil-A!!! Lauren likes to make big salads.” “This is something we all can do,” Peschke said. “It’s simple to sign up and not too time consuming.” Peschke purposefully sought out a charity his family could support in a hands-on way. His family loves supporting Lake County Haven. “You want to get involved with a good organization that is well run, and it supports mothers and children. You don’t realize how lucky you are. We feel fortunate and want to give back.” Milanek tells a similar story. She already had been supporting Lake
County Haven through a family foundation, and her church also supports the mission. However, Milanek was looking for a different way to give back and to do something with her daughter. Milanek said it’s a simple and convenient way for high school students to do community service, which helps on college applications, because they can pick their own date and prepare the meal at home. The volunteer opportunity also opens students’ eyes that not everyone has the same good fortune. Both the meal donors and the shelter residents and staff love the heartwarming feeling this volunteer opportunity produces. “One couple brings in meals for family members’ birthdays (either ones that have passed or their children who are living in other states),” said Brooke Projansky, counselor/case manager at Lake County Haven. “They bring in a candle for the women to light and to sing ‘Happy Birthday,’ and it’s so sweet. The residents really enjoy that.” Projansky said it’s a volunteer opportunity that organizations can do together, such as civic or social groups, or Boy Scout or Girl Scout troops. High school clubs like National Honor Society also could volunteer to do it as a group, Milanek said. Sabino said some extended families like to do it together, each donating one part of the meal. Local businesses and corporations also have donated meals, including Horizon Therapeutics, BCU, AbbVie, Sysmex, Kianzie Real Estate Services and Hollister Incorporated. “We recently opened a second shelter, Renewal House, and we need meal donors more than ever,” Sabino said. “With our new shelter, our meal needs have doubled.” For questions about the meal donation and grocery shopping program, email volunteer@lakecountyhaven.org.

AST DECEMBER I tested positive for Christmas Covid along with seemingly most of the country. To make quarantine bearable, my boys brought up an old TV from the basement. They could hardly contain their joy as they bolted out of my room, knowing I’d be out of their hair for a week. I napped and watched HGTV like my life depended on it; I now know the going rate for every beachfront property in the entire world. After I binged property shows, I turned to ‘feel good programming’; feeling good sounded extremely desirable. One afternoon, I watched what I assumed would be a sleepy documentary about people’s favorite articles of clothing. Imagine my shock when the show featured a retired Wisconsin dairy farmer-turned-nudist. The farmer and his wife were interviewed sitting comfortably on their living room couch. There was nothing but a tight tuck and mug of coffee between the viewer and the dairy farmer’s ummm … private cheese stick. The naked dairy farmer and his naked wife are just like you and me, except he used to be a Carhartt coat/wellie wearing dairy farmer, they currently live in Florida, they play naked tennis with naked neighbors, and they putter in their woodworking shed using clamps, bandsaws, table saws, lathes, jointers, drill presses, sanders, mortisers, and grinders wearing nothing but well-worn Crocs. Months later, these images live rent-free in my head. I can hardly sleep at night because I have become increasingly more concerned about the condition of this couple’s soft furnishings. I don’t need to remind you how swampy hot it gets in Florida, do I? That poor couch. Febreeze will not help. I am deeply disturbed. All this got me thinking if the weathered dairy farmer and his bride can ditch their clothes, line dance naked in their community rec room, weed, and wave to passersby without a shred of self-consciousness, how well do we really know our neighbors? I mean, we have no idea what quirks our neighbors

may have, do we? I can no longer queue up at the deli counter without wondering if the man next to me is biding his time until he can have what I can only assume is an awkward conversation with his adult children informing them to phone first because ma and pop are permanently working on their junktan. I suppose this is why the world such a colorful place to live: so many people, so many personalities, so many idiosyncrasies. A world full of people who think and act just like we do would be dreadfully dull. It wouldn’t be as exciting in our bubble if we didn’t have drivers who attempt to parallel park in front of the UPS store during rush hour. We need all the personalities to make living here thrilling: the lunatics who don’t vote like us, the Instagram influencers, the eternal optimists, the Eeyores, the sidewalk shovelers, the non-sidewalk shovelers, the type A’s, and the free spirits. We need bankers, bartenders, and artists. We need the people who wave us in at the school drop-off. We need the ones who don’t. We are all quirky, even if we dress well and have reasonable table manners. Sure, most of us can pass for ‘normal’ but you are a weirdo and I am a weirdo. I might think you’re crazy for alphabetizing your pantry. You might think I’m crazy for ironing my sheets. It takes all kinds to give this community character. Except, the polar plunge people. Their unbridled enthusiasm and zest for life threatens our status quo. They are dangerous free-thinkers and should be stopped.

NE OF MY favorite cocktails is The Last Word, a classic preprohibition cocktail first served at the Detroit Athletic Club in the early 1900s. Complex and perfectly balanced with sour, sweet, bitter, and herbal notes, The Last Word is made with equal parts gin, green Chartreuse, maraschino liqueur, and freshly squeezed lime juice. Green Chartreuse is a delightfully herbaceous, naturally green liqueur made by French monks from a secret, 400-year-old recipe. The process is shrouded in mystery as well, though it is known that Chartreuse is made with 130 botanicals aged for years in oak casks and placed in the world’s longest liquor cellar until mature. I often mix up this cocktail with Sipsmith’s Lemon Drizzle Gin. Don’t let the words “Lemon Drizzle” scare you—this is a fabulous London Dry gin infused with lemon peel and citrus botanicals. The Luxardo maraschino cherry garnish is optional, but I wouldn’t skip it. Luxardo cherries are nothing like the cloyingly sweet, waxy maraschinos found in the Shirley Temples of your youth, though they do bring nostalgic satisfaction when you slide one into your mouth from a swizzle stick.
THE LAST WORD serves 2 Ingredients • 1 1/2 ounces gin • 1 1/2 ounces green Chartreuse • 1 1/2 ounces maraschino liqueur (I recommend Luxardo) • 1 1/2 ounces freshly squeezed lime juice • Luxardo cherries, for garnish (optional) Instructions 1. Pour all ingredients into a cocktail shaker filled with ice, then shake until well chilled. 2. Strain into two chilled cocktail glasses. 3. Garnish with Luxardo cherries threaded onto cocktail picks, if desired.

A
MERICANS LOVE THEIR apple pie, but in Britain, pork pies rule the pastry roost. Brits spend more than £165 million on pork pies every year, according to statistics from the Kantar Worldpanel--more than they shell out for any other pie variety there. And among pork pies, the Melton Mowbray variety is king. Melton Mowbray, a town in rural Leicestershire, England calls itself Britain’s “Rural Capital of Food” for the pork pies, and, Stilton cheese, both having been granted protected designation of origin (PDO) status by the European Commission. That distinction means anyone outside the 10-mile radius surrounding the town, and anyone using cured meat in the recipe, can’t officially call their pork pie a Melton Mowbray. With that in mind, our Melton Mowbray-style pie
uses hand-minced, uncured pork like the original, mixed with salt, pepper, sage, and a squirt of anchovy paste. Tucked into a traditional hot water crust with rich stock poured in through the vent hole to seal the meat, it’s a filling, portable feast. That portability made the pie a favorite bring-along on foxhunts as far back as the late 1700s. But the flavor of the pie took it nationwide. To make it here, I adapted the recipe from Linda Collister’s wonderful, “The Great British Book of Baking,” with American measurements in mind (i.e. a “rasher” of bacon is what we know as a “slice.”) My boys, who love anything that looks like it came out of a Wind in The Willows picnic hamper, give the result a big thumbs up. While traditionally eaten cold or room temperature, we like the pie warmed a bit with a pile of cornichons and strong mustard on the side. Note: You will want to make the jellied stock the day before you bake the pies.

THE DISH Makes six, 3 ½-inch pies INGREDIENTS For the jellied stock • 2 lbs. meaty uncured pork bones • 1 large onion • 1 large carrot • 2 bay leaves • 5 peppercorns • 8 cups water (or enough to cover the bones and veg) • Salt to taste • 3 large eggs (you will use the whites for clarifying the stock; save and refrigerate the yolks for the pastry wash) For the filling • 2 ¼ pounds boneless pork shoulder, finely minced to make 4 cups packed • 3 slices of uncured bacon, finely chopped to make 1 cup • 2 Tbsp. dried sage leaves, finely crumbled • 1 tsp. anchovy paste • ½ a nutmeg, finely grated • 2 tsp salt • 2 tsp freshly cracked pepper For the hot-water pastry crust • 4 ½ cups flour, sifted • 1 ½ tsp salt • 6 Tbsp. solid white rendered bacon fat • 4 Tbsp. unsalted butter • 6 ounces milk • 4 ½ ounces water • 3 egg yolks (saved from clarifying the stock) to brush on the pastry Make the jellied stock Place all ingredients in a heavy-bottomed stock pot over medium heat. Heat to boiling; reduce heat to a simmer. Skim off and discard foam. Partially cover pot and simmer for five hours. Remove from heat and strain stock through a colander into a fresh pot, discarding solids from the colander. Cool stock. Skim off and discard any fat that has collected on the surface. To clarify, separate three eggs, saving the yolks to brush on the pastry crust. (Cover and refrigerate yolks.) Whip egg whites until soft peaks form. Stir egg whites into the pot of cooled stock. Heat over medium heat until stock begins to boil. The whites will float to the top of the stock, pulling soup impurities with them; stop stirring and boil the stock until has reduced to about 3 cups of liquid. Remove and discard the eggwhite raft. Pour stock through fine mesh strainer. Season finished stock with salt. Refrigerate.
Make the filling On a clean work surface using a very sharp knife, mince pork shoulder into tiny pieces. Finely mince uncured bacon. In a large bowl, mix meat with crumbled sage leaves, anchovy paste, salt and pepper. Cover lightly with a towel and let rest while you make the crust. Make the hot-water pastry In a large cooking pot over medium-low heat, add butter, solid rendered bacon fat, milk and water. Heat gently until the fat has melted, without allowing the mixture to boil. Place sifted flour mixed with salt in a large bowl and create a well in the middle. Using a wooden spoon, stir the warm liquid into the flour until the mass comes together into a soft dough ball, knead slightly. Cut dough in half and roll half of the dough out to about 1/8to ¼-inch thickness. Coat the insides of six, 8-ounce straight-sided baking crocks with vegetable shortening. Cut parchment paper strips and circles and press into the sides and bottoms of the ramekins. Cut 3 circles of the dough about two inches larger than the ramekins; ease and fit dough into the first three ramekins, pressing firmly to mould the dough to the sides of each ramekin, leaving no air pockets. Leave about ½ inch of dough sticking up above the edges of the ramekins. Repeat with the second half of the dough and remaining three ramekins. Preheat oven to 400F. Fill each pastry-lined crock with the meat mixture. Press together and then roll out remaining dough. Cut pastry “lids” for each crock, making each circle about 1 inch larger than the circumference of the crock. Cut a ½ inch circle in the center of the top of each pastry. Place each pastry lid over each crock. Tuck and fold the edge of each pastry lid over the bottom pastry extensions, pinching and tucking to seal. Decoratively flute the edge of each pastry, pressing with thumb and forefingers. Cut six, 6 x 2-inch strips of aluminum foil. Wrap strips around your forefinger to create little metal tubes. Poke each tube into the hole in the top of each pastry to create a vent. Place filled crocks on a baking sheet. Beat egg yolks and coat the top of each pie with egg yolk. Bake at 400 for 15 minutes. Reduce heat to 350 and continue baking for 45 to 50 minutes until liquid is bubbling through the vents and crusts are a deep golden brown. Remove from oven. Cool. When pies are cooled, the meat filling will have pulled away from the inside of the crusts. To fill this gap, slightly warm 1 cup of the reserved jellied stock, just until it is pourable. Pour a small amount of stock into each pie through the metal vent. Remove and discard vents. Refrigerate pies for several hours to solidify the jellied stock. Serve pies cold, or at room temperature. Or, place a pie on a plate and warm slightly (the jellied stock will spill out when you cut warmed pies.)

Lake Forest’s Dominique Ittner channels a casual pastime into a lucrative business where she leaves each of her clients naturally sunkissed. words by Ann Marie Scheidler photography by Robin Subar

OMETIMES good ideas can shine right in front of your eyes. This was precisely the situation with the bubbly Dominque Ittner, who grew up in Lake Forest and returned to her hometown when she and her husband looked for a great place to raise their young boys,
“I try not to take myself too seriously, but I’m pretty serious about making this business the best it can be.”
flexibility that having a stay-athome business allows her. “My top priority is my family,” she says. “I want to be home with them and be with them when they’re at home with me. I can work when they’re in school or schedule time after their night routines are over by having my own business. I always block off between 4:30 – 6 p.m. to make dinner and then eat with them. It’s the best part of my days. But it’s pretty funny that ‘spray tan’ is part of their vocabulary. It gets me every time when they ask me about my ‘spray tan girls.’” Ittner has worked hard to make SUNKISSED x DOM more than a service she offers—her goal is to make it an experience. “Earlier this year, I built my own website so that clients can easily book their appointments when it’s convenient for them,” she says. “Customer service is so important to me, as is the ‘vibe’ when they come to my home studio. I want it to feel professional, but also fun and like they’re at a spa—even if it’s only for a few minutes.” Ittner’s training as a competitive gymnast when she was a student, and her education as a teacher prepared her well for working with the many high school students who frequent SUNKISSED x DOM. “I feel like I’m an older sister,” she says of connecting with her younger clients. “I always tell them what they say in the tanning tent, stays in the tanning tent. I love how happy and carefree my clients are. I really draw from their energy.” As an inspiring young entrepreneur, Ittner encourages anyone with a business idea to just go for it. “You know, I wasn’t sure if spray tanning would work as a business,” she says. “But I didn’t want to waste another minute wondering if it could when I could just give it a try. I really believe you can do anything if you’re true to yourself, authentic, and confident. It’s so important to be confident. I try not to take myself too seriously, but I’m pretty serious about making this business the best it can be.”
Wells and Winn. “This might sound kind of silly, but I’m a fair-skinned girl who has always loved a good spray tan,” Ittner says. “I just feel better when I have a little glow.” Lucky for Ittner, a friend from Lake Forest launched her own luxury custom tanning business in Dallas and was able to share some of her tricks of the trade. “I started to think that if I had the equipment and the right product, I could probably have my husband spray tan me,” she says with a laugh. “I would do it myself, but you just can’t.” Once Ittner had the tanning solution she liked and the right tools under her roof, she decided to offer spray tanning to her friends. “I realized there was an opportunity for someone like me in the luxury spray tan marketplace, so I began to tell people that I offer spray tans just to see what might happen.” Ittner hung her shingle using a natural, odorless premium tanning solution that reacts with the amino acids in the skin to produce a rich, completely natural tan. In less than 20 minutes, the product is airbrushed on and dried by hand to ensure a flawless, lasting, and customizable glow. Ittner named her business “SUNKISSED x DOM.” It wasn’t long before her friends were regular customers. And then their friends from all along the North Shore brought their friends, and soon their daughters were coming, too. “The whole thing kind of happily snowballed,” Ittner says of her soft launch of SUNKISSED x DOM in November 2020. “In a normal week, I’ll have 20 clients, which feels like the perfect amount as I juggle appointments around my boys’ school schedules and activities. But when we’re near the holidays, or if the high school is having an event like homecoming or prom, that number will jump to 60. Joanie Bayhack brings BeMoved, a dance class that nourishes the mind, body, and soul to Lake Forest. words by Kelli Doremus photography by Monica Kass Rogers

eMoved, a dance-fitness program designed for people of all ages and abilities, is now in the North Shore— thanks to Joanie Bayhack. “It’s a fullbody workout, with easy-to-follow choreography, and makes you feel beautiful,” she says. “BeMoved was created by the revered Chicago dancer/choreographer Sherry Zunker, who developed a dance program that builds core strength, improves balance, and increases flexibility,” Bayhack explains. “Each class begins with a gentle warm-up followed by a cardio-charged genre, and concludes with a gentle cool down—all to great music. With 19 unique dance genres—from back-up singer moves and disco to Bollywood and country—BeMoved inspires people to embrace dance as a lifelong path to health, joy, and fulfillment.” After certifying as an instructor, Bayhack began teaching at the Wilmette Park District-Mallinckrodt and recently auditioned for the Lake Forest Health and Fitness Center. “They embraced the program with open arms and my class is growing every week,” she says with excitement. “The facility is exceptional and the studio space is amazing. My dream is to expand BeMoved to Highland Park and beyond—not only because it’s a safe, healthy exercise experience, but it creates a beautiful sense of connection and community.” You can take Bayhacks’ BeMoved class on Mondays at 11:30 a.m. at the Lake Forest Health and Fitness Center.
“My dream is to engage more people and build awareness of this heart and soul-nurturing experience” “Although the class is very choreographed, it’s a judgement-free zone,” she emphasizes. “I say to my class, ‘Dance out loud! Dance like no one’s watching (because they’re not)—and just keep moving.” Bayhack has always been passionate about dance. “I’ve been dancing since the sixth grade,” she shares. “I was never a proficient ballerina—the combinations were too complexed. I could never do the splits and I copied whoever was in front of me, regardless of how bad they were. My Ruth Page instructor would say, ‘Joanie, the swans went that way…’ But I never gave up, even through my three pregnancies. As we get older, we need to learn how to respect the changes in our bodies. BeMoved is designed to be safe, yet challenging. It nourishes the mind, body, and soul.” After a 38-year career in media and raising three daughters, Bayhack asked herself: “What do I love? What would I really like to accomplish in this chapter of my life? This is my turn.” “I discovered BeMoved at Chicago’s Ruth Page School of Dance, where I had studied ballet for three decades,” Bayhack recalls. “I loved the music, I could follow the combinations, and I really connected with my fellow dancers. At a workshop, I shyly approached the founder Sherry Zunker and asked if she thought FO REST & BLUFF 65

I could teach BeMoved. She responded with an agonizing pause: ‘I’ll be honest, teaching BeMoved is really hard. But if you’re committed and really love it, you can do it.’ I left feeling exhilarated, excited, and terrified!” Bayhack also volunteers for the Braille Institute, teaching the blind dance-fitness. She teaches it virtually from her Highland Park apartment. “I’m amazed by the courage of my blind dancers,” she says. “Together we learn to explain movements in pictures. I often describe a porte bras as a rainbow. Recently, one of my dancers, who was blind at birth, asked, ‘Joanie, what does a rainbow look like?’ I was silenced with emotion. She added, ‘I’m an opera singer and my teacher told me that high notes are hot pink…is pink in a rainbow?’” Bayhack relishes the unique connections she has with her dancers—whether it’s with Deko, who comes to class in a chiffon evening gown and rhinestone heels, or Larry, 82, who comes dressed in the outfit he wore when he was a salesman at an upscale men’s store in New York City. “The biggest challenge is my dancers love to talk,” she notes. “Now I add a bumper at the beginning and end of each class so we can catch up on everyone’s lives.” “My dream is to engage more people and build awareness of this heart and soul-nurturing experience,”
adds Bayhack. “I would also like to teach more blind dancers, as there are few moments more rewarding than seeing our class dance in unison after working so hard to learn the choreography.” Bayhack says teaching BeMoved has enriched her life. “Covid is also making us feel so lonely and in need of connection, but you can’t be sad in a BeMoved class, unless Celine Dion and Andrea Bocelli’s ‘The Prayer’ comes on—that song makes me cry every time,” she jokes. As a part of this new chapter, Bayhack is currently going back to school for a degree in criminal justice. “Going back to college is both exhilarating and humbling,” she says. “I wish I had studied this hard in journalism school—decades ago. I really care about my grades now that I’m paying my own tuition!” Do yourself a favor and take Bayhack’s class. If you walk away feeling even half as inspired as I did after talking to her on the phone, then that’s a “win.” “I love to see my class evolve from week one to week four,” she adds. “They start out tentative and deliberate and end up totally rocking out to Earth, Wind and Fire’s ‘September’ or A Taste of Honey’s ‘Boogie, Oogie, Oogie.’ It just doesn’t get better than that.”

MAKING TIES Lake Forest’s Sarah Somers leverages her luxe silk scarf business to create a dynamic community of innovative artists. words by Ann Marie Scheidler photography by Robin Subar
S
ARAH SOMERS’ luxury scarf brand, Deseda, will be celebrating its third anniversary later this year. When Somers first launched her company in 2019, the story was about a female entrepreneur bringing a sophisticated fashion product to the market. But in 2022, Deseda’s story is so much more. “I can finally talk about we’ve been building since the beginning,” explains Somers. “While Deseda offers a beautiful product in and of itself, the brand has always been about developing an artist platform we call DearCo (Deseda Artist Collective). This is our way of creating a gateway gallery where we commission work by artists from around the world that becomes the foundation for our scarf designs. We then can shine a spotlight on these artists, their creativity, their technique, and what makes them special. In doing so, our goal is to connect them to a new audience and a new support base for their work.” In just a few short years, Somers and her small team have worked with 21 artists from nine countries to create her Deseda collection of scarves. “I’m so proud of the diversity of DearCo,” she says. “These artists are diverse in their personal backgrounds, diverse in the languages they speak, and diverse in the chosen mediums they use for their designs. Some of our pieces have started as paintings or mixed media collages or even photography. It’s a real blend of technique, medium and artistic style.”
Somers’ role at the helm of Deseda was a professional rebranding of sorts for this financially trained entrepreneur. After more than 15 years in a numbers-driven industry, she longed for something more creative. “I always loved wearing scarves,” Somers says. “Even before they were a staple in my wardrobe when I was in finance, I loved them as a young girl—in my hair or as a belt.” Harkening back to when she lived in Madrid and London, Somers brought a European sensibility to scarf wearing when she launched Deseda. “Scarves are just more traditionally integrated into your everyday wardrobe in Europe,” she says. “With scarves, wardrobes organically become more sophisticated and cosmopolitan regardless of your age. You can be a 20-year-old wearing them and look super chic, or an 80-year-old and do just the same. They are timeless.” Somers describes having a psychographic, rather than a demographic for her ideal customer. “She’s an enthusiast of life and all it has to offer,” she says. “Our clients are naturally curious, well-traveled, and have a real appreciation for craftsmanship and unique things. And she’s already established that she likes to play with her style. One of my favorite things has been seeing how these women take our scarves and make them their own.” In creating Deseda and securing its future success, Somers knows that she needs to connect with her customers in multiple ways.

“I have met so many lovely people in our community through working at the store— and I’m so grateful that it has all worked out that way.” “At the most basic level, our scarves are fashion accessories,” Somers adds. “People are buying them because they love the colors, or how they look and feel, or how they accentuate their look by bringing personality and vibrance to classics they already have in their closets. We need to check these boxes first.” Next, Somers aspires to clients connecting with the stories behind the scarves. “This is another reason our artists are so important to our business,” Somers says. “We had a customer who came into our store and bought a scarf designed by Kasia Niemczynska, a Polish artist. She loved it so much that she came back and asked if we might have another one she could gift to her Polish grandmother. She knew how much this would mean to her. This is the power of connection.” Just this year, Somers started a new marketing initiative called “Make Ties Tuesdays,” where she hosts a weekly Instagram Live to connect with the DESEDA community on a variety of fashion and design topics— including the artists behind Deseda’s scarves. It’s a time for Somers to talk with the artists about the creative process, how the collaboration works, as well as other work in the artist’s portfolio. “We really had so much momentum going into the
holidays last year,” she says. “Now it’s my job to keep it up! For example, we have a fantastic wholesale relationship with the museum shops at the Art Institute of Chicago. This is such a perfect partnership that continues to grow. And we’re expanding into other small boutiques to see how Deseda can be a fit for their clients as well. That’s why I see adding to my team in 2022. We have sparks of a fire burning and now we need to get the gasoline. Where can we get some gasoline?” Somers adds with a laugh. The Deseda storefront in downtown Lake Forest’s Market Square was an unexpected blessing in Somers’ first year of business. “Ben, Lydia, and I had only moved to Lake Forest in 2017,” she says of her family who relocated to Lake Forest from Chicago. “It was always part of my long-term business plan to have store, just not so early on. But a short-term pop-up turned into a longer-term stay, and it’s truly been the most wonderful place to base the Deseda headquarters. EARLY CHILDHOOD EXCELLENCE Lake Forest Country Day School provides a unique, high-quality learning experience for Pre-K students that prepares them for upper grades and beyond. by Mitch Hurst
O
ver the last two decades, studies have shown that kids who receive a Pre-K education have a leg up when they move along in their education experience. The programs also show a benefit to society, as kids aren’t just learning but becoming socialized and understanding how to interact in the larger world. Since 1888, Lake Forest Country Day School (LFCDS) has been providing educational opportunities for children in an Idyllic setting on the North Shore, including a robust Early Childhood Center where children ages 2 to 5 get an early start. A diverse, experienced staff takes children under their wings and works closely in partnership with parents to give them the best childhood learning experience. “Marlo (LaCorte) and I have been teaching here a while, I’m on my 23rd year. I have two children that have gone through our school,” says Jennifer Farrell, a Junior Kindergarten Teacher at LFCDS, whose children are now in high school and college. “I have to say that every day when we would come to school, I felt very fortunate I could go to work, and all be under the same roof.” The thing that struck Farrell while her kids were at the school was the sense of community that was at its foundation, and the relationship with parents and with other faculty that made a positive impact on students. This community aspect continues to this day. “My kids feel the same way, that they graduated from the Day School as a place that knows who they are and knows them by name,” Farrell says. “That was a big deal, especially when they transferred over to the high school, and they were one of many. But to come from the Day School, that helped them with life-skills they needed to succeed.”
Farrell says when her son was in high school, he was assigned to write an essay and described LFCDS as a second home. The idea runs counter to the stereotype of parents having to be pry kids out of bed to convince them to go to school. “That’s where the idea of the family school comes from,” says LaCorte, also a Junior Kindergarten Teacher at LFCDS. “It really does feel like a family school in that we are so partnered with the families of the children that we teach.” LaCorte says it has been more difficult the past few years to connect with families because of restriction due to the pandemic, but partnerships remain strong. She started at LFCDS when her children were a little older, so they did not attend the Early Childhood program at LFCDS, which gives her a unique perspective on what the school offers. “This is my eleventh year, and my kids were already enmeshed in their schools. They went to public school and, don’t get me wrong, they had a great education, but there was not that same sense of community and partnership,” she says. “Once they hit middle school, even more so in high school, I barely knew their teachers.” Farrell says that while LFCDS does go up to eighth grade, there’s a commitment to knowing each child and to keeping class sizes small. “We all really do care about each other, and I know it sounds cliché, but it really is the truth,” Farrell says. “This faculty is secondto-none; inspired teachers who are also compassionate human beings.” Lake Forest Country Day School is located at 145 South Green Bay Road in Lake Forest, 847-234-2350, lfcds.org.
