Did you know that both cities have the Tree City USA designation from the Arbor Day Foundation? This year marks Lake Forest’s 40th as a Tree City, making it the ideal year to celebrate Arbor Day (April 30) by planting a tree in honor of our community’s commitment to reforestation. I had the pleasure of speaking with Corey Wierema, Forestry Supervisor for the city of Lake Forest and passionate tree advocate, while writing this month’s In the Garden. He shares the city’s creative Arbor Day plans and what residents can plant to help our community’s tree population thrive— important information considering the tremendous loss of ash trees we have suffered over the last decade. Though many of our tree’s leaves are still in bud form, the daffodils have emerged in time to greet us for Easter celebrations, brightening both our lawns and our tables. For another visual treat this holiday, be sure to include The Dish’s buttery, braided egg braid dotted with speckled quail eggs—a delicious and unexpected delight. Our April features highlight individuals on vastly IN THE GARDEN different paths that have one common thread—following their passions. Wildlife, Fearless Life shares the untamed adventures of animal and reptile-loving Peter Crawford, a Lake Forest High School graduate and Eckerd College senior. With his infectious enthusiasm for nature and fearless disposition, I expect to see this former Eagle Scout starring in an adventure series someday soon. Mothers of Invention details the trailblazing, entrepreneurial path of Lake Forest’s Addie Gundry and her business partner Brittany Hizer, who shook up convention with the THE LIFESTYLE LIST invention and launch of Pluie—the world’s first selfcleaning changing table. Gundry and Hizer installed

the first Pluie at Angel Harvey Family Health Center of the Infant Welfare of Chicago (an organization near and dear to Gundry) last month, but you will soon find them in ballparks, restaurants, and public institutions throughout the country. Marli Jones, our cover subject, has been passionate about design since early childhood. Inspired by her surroundings growing up in Lake Forest, Jones’s career has skyrocketed, taking her from top firms in San Francisco and Chicago to founding her company, Rebel House Design. Her interiors—both residential and commercial—are livable works of art. Our final feature highlights the work of Lake Forest native Tommy Quinn, an artist, graphic designer, and letterer. When CROYA wanted a local mural painted to commemorate their 40th year, the beloved organization knew Quinn—a former CROYA kid— was the one to do it. I hope this month finds you celebrating our beautiful, life-enhancing trees. INDIVIDUALIZED INSTRUCTION At Lake Forest Country Day School, education is not confined to classroom time. It is about the whole child. words by George Lincoln photography by Robin Subar
“T
HE APPROACH here is unique,” says Ben Haight, a social studies teacher and member of the Upper School faculty at Lake Forest Country Day School (LFCDS). Haight knows this as well as anyone—the school runs in his family. His parents both taught at LFCDS, his wife is on faculty, and both of his children attend. “We will know and love each child as a student and as a person,” Haight says. “That spirit has lived at the heart of the LFCDS identity since the school’s founding.” The school’s history dates back to the 1800s, with the establishment of the Bell School, located at what is now a house on Westminster Avenue in Lake Forest. In the mid20th century, the Lake Forest Day School was founded and eventually merged with the Bell School to form Lake Forest Country Day. “At first, the idea was to provide a smaller, rigorous, traditional education,” Haight says. “That evolved into a progressive approach designed to offer a broader and more diverse set of learning experiences.” Being a 130-year-old institution steeped in tradition, but one that has always embraced forward-thinking philosophies and pedagogies, allows the school to achieve equilibrium between a student’s intellectual and social-emotional development. A key feature in maintaining this nuanced student-centric approach is the size of the school. LFCDS enrolls 400 students from age 2 through grade 8. The average pre-pandemic classroom had 15 students but the student to faculty ratio across the school hovers at 7 to 1. This year’s classrooms have around 12 students per section. That level of closeness facilitates a depth to learning completely individualized to each student. “When students come to school,” Haight says, “they will be challenged appropriately to where they are, whether it is steering them to more difficult material or changing course

to offer support.” Haight says that when he was a student at LFCDS, students primarily came from Lake Forest, but over the years that has changed. There are 37 zip codes represented at LFCDS and the community has become increasingly reflective of greater Chicagoland. LFCDS families live in the city, in the western suburbs, north of the Wisconsin border, and all points between. Pulling families from such a wide area allows the 33-acre campus to serve as a diverse demographic intersection. The school’s intentional efforts to cultivate a sense of inclusion and belonging facilitates an environment where students and families are learning from, and with, each other. LFCDS has seen significant interest from prospective families, in part because the school has been open for oncampus learning from the start of the academic year. After seamlessly transitioning to remote learning last spring, LFCDS turned its efforts toward returning students and faculty to campus for instruction in the fall. This implemented plan has allowed for synchronous and continuous learning, even for students who have needed to remain home. Community-wide partnership on mitigation efforts has allowed LFCDS to maintain a healthy and safe campus that has been free of virus transmission. Yet, it is much more than merely being on-campus that has families drawn to LFCDS. It’s a familiar feeling for Haight. “You walk the halls, and you can feel the connections between teachers and students,” Haight says. M
y current mantra is “Life isn’t perfect, personal or permanent,” courtesy of author Ruth King. If I keep that in mind, most moments in life seem to be a little more easeful. My nightstand reflects where I am today in my life, which is on a health and wellness journey. After two serious medical situations where my body was giving all kinds of warning signals that I chose to ignore, I had to make changes. The second incident set off a twisting and turning journey of discovery on taking care of myself physically, emotionally, and spiritually. The journey brought me to completing a two-year teacher certification in Mindfulness and Meditation taught by Jack Kornfield and Tara Brach—with 1,400 students from 75 countries. Kornfield and Brach both hold PhDs in clinical psychology and teach meditation internationally, where they offer a great balanced approach to life. I learned how to teach and came out with a deeper, stronger, and consistent meditation practice, a clearer sense of self, a greater sense of humor, and a greater sense of curiosity. Most of the books in my overflowing stack come from the recommended and required school reading that I am still working my way through—keenly aware that there is nothing light, clever, or whimsical in it. But I am OK with that … my pile is just what I need for this journey to becoming the best instructor and individual I can. A tiny buddha and two tarot card decks also live on my nightstand, the latter for daily readings and journaling. A few of the books currently on my nightstand: The Wedge by Scott Carney. This book talks cold therapy, evolution, fear, and why it’s good for us to be uncomfortable and how to make it work for our health. I am now rethinking how I view things I dislike or find uncomfortable. Believe it or not, this exploration is enjoyable. Breath by James Nestor. “No matter what you eat, how much you exercise, how skinny or young or strong you are, none of it matters if you’re not breathing properly.” The more I read about breathing, the more I want to know.
Food Fix by Dr Mark Hyman. “Our most powerful tool to reverse the global epidemic of chronic disease, heal the environment, reform politics, and revive economies is food.” I’m fascinated about our food systems and how they simultaneously impact an individual’s health and the world at large. When I heard Dr. Hyman speak about having our health span equal our life span, it became a personal aspiration. The Game of Life and How to Play It by Florence Scovel Shinn. This book was selfpublished in 1923 because Shinn could not find anyone who would publish it. Since then, this small but powerful work—which shares that life is not meant to be engaged with as a battle but more like a game—has never been out of print. It is a great lesson for someone who can take life too seriously. Any way to shift and create balance helps. Everything is Spiritual by Rob Bell. This came to my nightstand by way of The Community Church and a book club discussion. I loved the combination of science, spirituality, and God in one place. Not everyone liked the book, but I believe all found value in the questions Bell asked and also found the reflections worth their time. We all know our beginning, but we do not know our middle or our end, so why not make sure—despite all the things we need to do (most of which are heavy and boring)—we are balancing them with the little things that give us joy? Everyone is his or her own best teacher and no one can tell us what light us up. For me, it is immersing myself in nature, a smile from a friend or stranger, laughter, friends, and family (most of the time). When I pay attention to these things it impacts my days, my mindset, and my journey. I wish you well on yours. The Dark ’n Stormy makes one • 2 ounces dark rum • scratch ginger beer (see recipe below) or a highquality ginger beer (we suggest Fever Tree brand) • ½ ounce fresh lime juice • Fresh lime wheel for garnish

COCKTAIL’S ingredients often tell a lot about the environment where they first came together. Many classic cocktails were born in a dark city bar or speakeasy by a meticulous and brooding bartender looking to create complex, boozy elixirs. Some cocktails are born by mistake, stumbled upon like Alexander Fleming discovering penicillin (champagne is rumored to have been a mistake). In contrast, this month’s contribution is a cocktail of practicality. The Dark ’n Stormy has strong seafaring ties. Pragmatic in its composition, the elements come from a fortuitous meeting of the two main ingredients—ginger beer and dark rum—in time and space. Dark Rum is distilled from fermented sugar cane molasses, which was the main crop in the Lesser Antilles region of the Caribbean Sea; and ginger beer was a time-tested remedy for sea sickness and nausea employed on the European vessels trolling those waters for trade and conquest. Mix the two, add a squeeze of lime, and you have the Dark ’n Stormy—reportedly named by a weathered sailor comparing the drink’s dark hue to the color of storm clouds. Last month, I collaborated with Live Oak Beverage Director and Head Bartender, Will Witherow, to share his take on Irish Coffee in celebration of St. Patrick’s Day. In anticipation of April showers, we thought a Dark ’n Stormy would fit the bill for this month’s celebratory cocktail. The secret to Witherow’s Dark ’n Stormy is his scratch ginger beer. Admittedly, the recipe yields a larger batch of ginger beer—he pours a lot of them at his bar—but it can be scaled up or down to meet your needs if the proportions are held constant. Also, a batch of ginger beer can be used to make a variety of mules (a family of cocktails that mixes spirit and ginger beer, most notably the Moscow Mule) or consumed on its own, remembering that the wine does give it some proof. For this recipe, you will need a soda siphon to carbonate the ginger beer if making the scratch version. If you prefer to skip this step, a high-quality store-bought ginger beer like Fever Tree works well. With respect to rum, the classic version uses Goslings Black Seal, but I have found Cruzan black strap rum, Kraken, and Zaya all work well. Without further ado, the Dark and Stormy with scratch ginger beer.
Fill a highball glass with ice. Pour in rum and fill remainder of glass with ginger beer. Add fresh lime juice and garnish with a lime wheel. Scratch Ginger Beer makes approx. 1.5 liters, filling an average soda siphon with some excess • • • • • • • •
1 liter ginger juice (see below) 5-6 ounces water 3 ½ cups simple syrup 2 teaspoons ground cardamom 2 teaspoons ground coriander Zest of 1 lime Zest of 1 lemon Pinch of dried ginger flake
Combine all ingredients in a pot and slowly bring to a boil. Turn off heat and allow to steep to taste, then strain and place in a container or soda siphon. Refrigerate until ready to use. Fresh Ginger Juice • 1 ½ pounds fresh ginger, peeled and roughly chopped • 1 bottle dry white wine Place ginger in a Vitamix or another strong blender. Pour in enough white wine to cover the ginger. HEN I WAS writing for a national newspaper’s food section, Suzana B. reached out in search of a sweet Portuguese bread her husband used to enjoy. After a little testing, I sent her this version. With ginger, mashed potatoes, and some of the water used to boil the potatoes in the mix, the bread bakes up into nicely textured loaves with deep-orange hued crusts. I like to braid and curl the dough into rounds topped with little quail eggs for an Easter-y spring celebratory brunch. The scent as they bake is divine! Try the bread toasted, spread with butter and perhaps a drizzle of honey.

Instructions 1. In a sauce pot over medium heat, simmer potatoes in 2 cups water until tender. Save the potato water by draining potatoes in a colander placed over a bowl. Mash potatoes to make 1 cup mashed. 2. In a large bowl, add ½ cup of the water you used to boil the potatoes. Stir in yeast and 3 tablespoons sugar until dissolved. Add mashed potato and ginger, stirring until smooth. Cover bowl with plastic wrap and place in a warm place to rise until doubled in bulk. 3. In a microwave at 50 percent power, heat milk until lukewarm. Melt butter. Combine milk with salt and butter. Set aside to reach room temperature. 4. Beat eggs until light. Gradually beat in 1½ cups sugar. Combine egg/sugar mixture with yeast/potato mixture, blending well. Sift in 2 cups of the flour and mix to combine. Add the melted butter/ milk mixture. Add two more cups of flour, beating for five minutes. Gradually add in two more cups of flour, beating until dough gathers up. On a clean work surface, sprinkle the remaining cup of flour and knead the dough for 10 minutes. 5. Turn dough into a well-oiled large bowl, turning once to coat. Cover loosely with plastic wrap and Portuguese Egg Bread let rise until doubled in bulk. Punch down. Place dough on floured board and divide into four parts. I A father and son plant a native tree in celebration of Arbor Day.
T IS ESTIMATED that Lake Forest has lost almost 100,000 trees over the last decade. Their absence—most notably in our ash trees—is painfully obvious each autumn, their glimmering, golden beauty erased from our parkways by the emerald ash borer. But the role of our trees extends far beyond the beautification of public and private landscapes. Trees assist in the management of rainwater, reducing flooding and absorbing run-off between properties and in the parkways. They clean the air we breathe, filtering and removing pollution and mitigating its harmful effects. Trees also play a tremendous role in combating climate change by storing carbon and through the process of evapotranspiration, which cools our air. The city of Lake Forest’s Forestry Department has worked tirelessly at their task of reforestation, often working in conjunction with Lake Forest Open Lands Association (LFOLA) to promote trees and planting. This April will mark Lake Forest’s 40th year and Lake Bluff ’s 24th year as Tree City USA Communities (an Arbor Day Foundation program) which requires four core standards of a healthy community forestry program, including the observance of Arbor Day. Corey Wierema, Forestry Supervisor for the city of Lake Forest, explains that on Arbor Day’s past, they provided seedlings to send home with school children but recently shifted gears. “Last year we changed our plan due to COVID precautions. We already had the seedlings on hand and really wanted to promote Arbor Day, so we came up with the
idea of making it more available to the community.” Makeshift kiosks were set up throughout town where residents could pick up a tree seedling, which was shared through the city’s website and social media. “We had a terrific response, so we plan to do it again this year, partnering with Lake Forest Open Lands,” says Wierema. The first Arbor Day celebration occurred in Nebraska April 10, 1872, where prizes were given to counties and individuals for the largest number of trees planted. Records estimate that over 1 million went into the ground that day. In 1885, Arbor Day was named a legal state holiday in Nebraska, and now it is observed in all 50 states. Planting a native tree is one of the best ways to celebrate National Arbor Day, which lands on April 30 this year. “Planting native trees, shrubs, and plants is just a great habit to get into. They are already well adapted to our climate, you’re not bringing in outside stuff, and our native birds, insects, and animals rely on them to survive,” says Wierema. Bald Cypress, Yellow Birch, Bitternut Hickory, and Buckeye are just a few of the unexpected suggested native trees listed on the City of Lake Forest’s website, which can be found in the Forestry Department’s document section. Native trees are adapted to thrive locally, requiring less water, fertilizer, and pesticides. As a result, planting them aids in the protection of our environment, ground water, and Lake Michigan. Whether planting a native seedling from one of the city’s Arbor Day kiosks or a native tree from the local nursery, or simply taking a hike through one of our extraordinary LFOLA nature preserves, National Arbor Day is the ideal time to support and celebrate our community’s commitment to nature. A
N ASSIGNMENT in the second grade was an easy one for Valerie Gonzalez decades ago. Too easy. The task: take home a piece a paper and draw what you want to be when you grow up. Gonzalez wanted to be a professional dancer. She had been an avid student of the artistic form since the age of 4, having followed in older sister Veronica’s pointe shoe steps. The then-7-year-old Valerie had used her family’s basement in Hammond, Indiana, as her personal studio when
she wasn’t wearing out the couch cushions upstairs to perfect her handstand. “I was riddled with anxiety,” Gonzalez, now 45 and in her fifth year as Lake Forest Dance Academy (LFDA) director at the Lake Forest Recreation Center, says of starting that assignment. “I’d feared I would make a mistake while drawing myself in a tutu. That’s all I had, that one piece of paper. Erasing something risked tearing the paper.” It all worked out—the assignment, the professional goal realized—in the end for Gonzalez. What she’s drawing these days?

Rave reviews from her LFDA students, including Lake Forest High School junior Ellen Cha, an academy regular since taking a tap/ballet class at the age of 3. “Miss Val is such a hard worker as a teacher who’s a classically trained dancer, and she cares so much about dance and her students,” Cha says of the Kenosha, Wisconsin, resident and newlywed wife of Lake Forest Recreation Center Athletics Manager Anthony Anaszewicz. “You’d have a hard time meeting someone with more passion for dancing than she has. She’s big on technique, always making sure we look good while dance correctly and safely. “I consider Miss Val, Lake Forest Dance Academy teachers, and academy dancers my second family. It’s a special bond.” Gonzalez earned her BA in dance at Western Michigan University and landed prestigious gigs—locally, nationally, and internationally—before whirling and leaping her way to an MFA in dance performance and choreography at New York University’s Tisch School of the Arts in 2006. Her first paying job in her chosen field was a role in the Chicago Symphony Orchestra’s annual holiday show. She was in her early 20s when she nailed an audition—for only four dancers and four singers—to perform in a six-week, USO-type Mediterranean Tour. “I had no idea what I was going for when I auditioned for that tour in Turkey, Italy, and Spain,” admits Gonzalez, who is a certified Progressing Ballet Technique teacher and has performed with such notable companies as Gus Giordano Jazz Dance Chicago II (two stints) and Joel Hall Dancers. “Back then I was told, ‘Audition for everything that comes up, because you never know what you’ll get to do or where you’ll get to perform.’ That was a great experience, entertaining our country’s military personnel in Europe. We knew they had appreciated it because we had brought them a piece of their home.” Shy and quiet as a first-day tumbling/tap student at an academy in Hammond, Gonzalez got hooked immediately and eventually found herself in front of smiling dance audiences at malls, nursing homes, and ladies’ luncheons. A young Valerie often executed dance moves for her mother, Noelia, in the kitchen at home, and nobody could miss the most excited audience member—Valerie’s father, Raymond—at any of her shows. “I remember, at an early age, feeling joy and excitement each time I left the stage after a performance,” Gonzalez says. “Hav-
ing energy you can’t contain, that’s the best. You should have seen me at home; I couldn’t stop flipping. I had feared, before discovering how much I loved to dance, that I wouldn’t find my place in the world. Training and taking weekly dance classes gave me structure, made me feel that I belonged. I needed that feeling.” Young dancers yearn for that today, too, Gonzalez acknowledges. Especially now, when homes away from home are scarce destinations in the era of the pandemic. “Our class sizes (in February, at the time of this interview) at Lake Forest Dance Academy have been limited,” says Gonzalez, who is in her 18th year at LFDA, the last nine as director and choreographer of its Prelude Dance Theatre, and specializes in jazz and contemporary. “We’ve pivoted and made adjustments. What hasn’t changed is the impact dancing, moving your body, can have on a person. We look at ‘pandemic’ teaching as an opportunity for students to focus on dancing as an outlet or a release. “We consider a dance class a safe place to explore and learn about yourself. A dance teacher’s dream is a student majoring in dance in college. But the larger dream for us is watching dance students grow up and navigate the world, make decisions for themselves, and thrive no matter what they’re doing with their lives.” Cha was performing with her LFDA troupe mates on a stage, during a competition, when a joyous person appeared in her peripheral vision. It was Valerie Gonzalez. The director’s smile? Stuck, on high beam. “We had worked incredibly hard in studio to prepare, and what I’d found so rewarding was noticing how happy Miss Val was for all of us, how proud she was,” recalls Cha, who is thinking of pursuing dance in college. “That’s when I realized, yes, all that hard work paid off.” For more information, visit lfparksandrec.com. A
SIM AND Qasim Khan, founders of Milwaukee-based beverage business ZYN, immigrated with their family from Pakistan to the Chicago suburb of Itasca when they were 8 and 9 years old, respectively. They went on to attend Marquette University in Milwaukee and both forged careers in finance afterward, landing them on opposite coasts—Asim in New York and Qasim in San Francisco, with stretches for both in Chicago. Their wives brought them to back to Milwaukee, but it was a return trip to Pakistan in 2016 that brought the brothers together in business. The long flight was difficult for their father, Salahuddin,
bringing on severe diabetic nerve pain in his foot, leaving him unable to walk. His sister, Amna, with whom they were staying, made a paste with turmeric powder and olive oil and applied it to his afflicted foot. After an hour, Salahuddin’s pain had disappeared entirely, and the brothers had their a-ha moment. “The ancient wisdom of mother nature really inspired us, and turmeric brings us back to our roots—literally and figuratively,” says Asim with a smile in his voice. Throughout the brothers’ lives, natural healing and ayurvedic medicine had been utilized for everything from colds, to indigestion, to reducing inflammation. These real-life experiences of nature as medicine, paired with their father’s recovery from pain on that fateful family trip in

ROWING UP in Lake Forest, Marli Jones had a mind for design, even as a young girl. “I’ve been very passionate about design since I was a little kid and I credit Lake Forest for that. It’s an historically significant place. You grow up there being exposed to incredible design and architecture on an intimate level because you’re inside significant homes and you get to see who they’ve hired to design. I just ate it up—I was a very focused child. I knew this was what I was going to do.” Fast forward to today: Jones and her husband, Michael Kreuser, now run Rebel House Interior Design, an award-winning design firm. Jones ran the business on her own for several years, then Kreuser joined her two and one-half years ago; Jones heads up the design team, Kreuser the management and operations side of the business. They recently opened a three-storefront office in Hubbard Woods, where they specialize in virtually every area of design, from full-service residential to boutique hospitality. As Jones describes it, the windows sit right on Green Bay Road. “The first window is the living room and kitchen area, which we’ve designed like a show house with a rotation of furnishings currently featuring makers and dealers from around Chicago. The middle window is an office, so you can see us working, which is kind of fun.” The last window will become
their material library. This creative and visually engaging layout makes Rebel House Interior Design a welcome addition to the popular retail, restaurant, and window-shopping corridor. When Jones and her team first meet with a new client, they begin by doing a lot of listening. “We talk about their expectations. I like to hear what they’re looking for. Everyone has a Pinterest or Instagram account or cut up magazine clippings of things they love. And we take that in, in a really unobstructed way,” Jones says. “From there, we start with translating their imagery into mood boards, budgets, and floor plan options. After our first design meeting together, we walk away with a very focused understanding of what we’re accomplishing and what the budget will be to accomplish it.” “We run a tight ship,” Jones says. “I’m very aware that it is an overwhelming process for homeowners, and we’ve tried to find a way to break it down so that the decisions are managable and we are handling our time effectively. As a client, you know how we manage everything from beginning to end.” Rebel House recently completed a full renovation project for Larry Baumann and Dana Brehm. A
DDIE GUNDRY has lived her life thinking outside of the box. One day, she was having lunch with her husband Alex and their 1-year-old son Cooper. Before they left the restaurant, Cooper needed a diaper change. As is all too common, there was no changing station in the men’s room and the task was left to Gundry. As she changed Cooper, she noticed how cumbersome the space was: there was no place to hang her diaper bag, the changing table was incredibly dirty, and its surface was cold, hard, and uncomfortable for the baby. As she walked out of the restroom to meet her husband, she knew there had to be a better way for changing babies in a public space. Before she fell asleep that night, she had an idea. What if there was a more modern and user-friendly changing table that cleaned itself ? Problem-solving isn’t something new for Gundry—she has made a career of it. After earning her culinary degree, she spent years in culinary design developing food products for some of the world’s largest brands. Her successes landed her in multiple television appearances on The Food Network. “It’s kind of crazy thinking backing to 2019,” she says. “I’d be working in a test kitchen all day, and then I’d come home and work on these ideas I had for a changing table at night. I was obsessed with every detail for this product I called ‘Pluie,’ which means rain in French.” It was not long before she filed for a patent for her dream idea.
In the meantime, Gundry became pregnant with her second child Claire. “The hardest part of designing this product was essentially working alone without the experience needed for such a complicated, highly engineered product,” Gundry says. “I was used to working with a team of people who would take my ideas and run with them. Now it was just my husband and me trying to figure this out.” While on her 10-week maternity leave with Claire, Gundry spent the baby’s nap times raising venture capital, no small feat with a new baby in tow. But she did it. Once she secured funding, Gundry knew the first step was finding a partner who was just as eager to bring Pluie to life and launch nationwide. “One day I was dropping Cooper and Claire off at day care and a friend who knew I was working on this product launch suggested I meet Brittany Hizer,” Gundry says. “They said she was this amazing person who was itching to start her own business after leaving the corporate world—she was just looking for the right thing.” So in January 2020, Gundry and Hizer met for coffee. What should have been a one-hour “get-to-know-you” meeting turned into a five-hour lunch. Hizer’s 15 years in product develop-

ment was just what Gundry needed. “I knew she was my perfect partner and new cofounder,” says Gundry. “It takes a special person who is willing to take the same amount of risk you are— and that was Brittany.” And Gundry’s enthusiasm and confidence in Pluie was contagious. “I fell in love with the idea behind Pluie and solving a decades-old problem, especially as a mom myself,” says Hizer. “I also couldn’t get over Addie’s passion and her amazing sense of drive. She knew at her core that Pluie could be anywhere, so I decided to dive in head first—why not? Addie needed help bringing Pluie to life and that’s where my experience came in.” Before they parted from that first coffee, the duo took a bathroom selfie next to a grungy changing table, not knowing it would be months before they would be together in person again. Pluie continued to evolve over endless text chats and Zoom calls as Gundry and Hizer navigated a new business during the pandemic. The result: the world’s first self-sanitizing and most advanced public diaper changing table with a UV-C light system (placed behind a protection panel) that sanitizes the changing space when closed and not in use. UV-C light is known to kill 99.9% of germs, bacteria, and viruses through a photochemical reaction that damages their DNA. Pluie’s signature table, proudly made in the USA, also includes first-to-market features such as a plush, leak-proof cushion, a retractable security strap, and multipurpose durable handles—all of the things Gundry wished for that day she struggled to change Cooper and came up with the idea for Pluie. Pluie received its patent earlier this year, and is now being installed in bathrooms across the country, the first of which was at the Angel Harvey Family Health Center of the Infant Welfare of Chicago—an organization near and dear to Gundry.
“This was an important install for many reasons,” Gundry explains of the center that remained open during the pandemic’s shutdown. “It communicates to Angel Harvey’s families that this center is a safe place to bring your baby, that it doesn’t discriminate, that all families are welcome.” Additionally, for every Pluie table Gundry and Hizer sell, they are donating diapers to Angel Harvey. It supports their company’s message that everyone deserves a clean place to be changed and a clean bottom, too. Success will have many definitions to Gundry and Hizer as Pluie tables continue to be installed in public restrooms around the world. But to Gundry, there is one point of measurement she hopes for more than most. “Success to me is making my kids proud,” she says, “that they will one day look at a Pluie table and think, ‘wow, Mom built that.’ What Brittany and I are doing is incredibly hard. I can’t wait for my kids to one day understand this and be proud of what we did.”

ETER CRAWFORD unleashes another infectious laugh in St. Petersburg, Florida, where the 2017 Lake Forest High School graduate is a senior at Eckerd College. A journalist calling from Illinois has just asked Crawford to discuss some of his hobbies. “I’m on my bed, propped against a pillow,” Crawford, 22, begins. “The pillowcase is a raccoon pelt. I made the pillowcase. That’s one of my hobbies—making something useful out of roadkill. Want to know what’s hanging out on my balcony right now?” Another Crawford laugh escapes. “A river otter pelt is out there, drying out,” reveals the owner of a ball python named Buddy, the snake he received on his 11th birthday and a pet that could slither and hiss for another 25 years. Welcome to Peter Crawford’s world, where life without animals might as well be life without oxygen. The very first word he uttered, even before “mama” or “papa”? It was “dog.” And he barked it three times while pointing a finger at a canine in Georgia. “I’ve always loved animals, especially reptiles and amphib-
ians,” Crawford, a biology major and environmental studies minor, says. “I can’t remember a time when I didn’t. When I was little I was into dinosaurs; loved them. Snakes interest me a lot now because there are so many different types, with a variety of color patterns.” Born in Atlanta, the son of Bob and Anneliese Crawford moved to Lake Forest with his family when he was 7. Instant fascination gripped him when he entered the Wildlife Discovery Center—a living museum and biological station at historic Elawa Farm in Lake Forest—for the first time. There to greet him was the center’s curator, Rob Carmichael.

That is essentially akin to a young technophile encountering Bill Gates. “Peter is half Tarzan, half Steve Irwin (the late Australian zookeeper, television personality, and wildlife expert),” Carmichael says. “Peter has an insatiable curiosity about animals and nature. He would spend hours looking at an ant mound to study ants. Around snakes, any kind of snake, he’s comfortable; he even has a calming influence on them. I see Peter and I see a passionate person connected to wildlife and the environment. “Peter,” Carmichael adds, “doesn’t need technology in his life.” But Peter used a camera phone to send a memorable video to his mother one day. The footage featured him swimming with … alligators. Anneliese’s initial gasp, unofficially, startled folks living in most of the contiguous United States.
“Mom worries about my interest in dangerous animals,” says Crawford, who, as a volunteer and employee at the Wildlife Discover Center, made time to compete for Lake Forest High’s swimming and diving program (he swam and dove, a rare double) in the winters and the school’s track and field program (pole vault and triple jump events) in the springs. “But she and my dad have always been supportive. I got my dad to pet a snake for the first time in his life in Alabama. And we had the greatest time backpacking together in Montana last September.” Crawford’s trip to Australia in September 2019 was Discovery Channel-worthy. He and his friends were driving one day when they spotted a five-foot-plus coastal taipan, a venomous snake. “We were in the middle of nowhere,” recalls Crawford, a Lake Forest Troop 46 Boy Scout, who built a heated alligator FO REST & BLUFF 79

shelter at the Wildlife Discovery Center for his Eagle Scout project. “I was barefoot. The snake, it was riled up—coastal taipans are known for that. My friend grabbed the snake. Coastal taipans are also known for mock-charging at you. This one did that, and it got my blood pumping.” Crawford was sleeping outside in Australia one night when he heard something approach him. Awakened, he noticed an animal trampling through bushes off to the side. A kangaroo, he surmised, had hurdled Crawford’s head. Earlier in the trip—or maybe it was later—armies of ants traversed most of Crawford’s body in the middle of another slumber. Who needs a wake-up call when thousands of tiny legs are available? Freediving, a form of underwater diving without scuba tanks? Count Crawford as a big fan of the activity, which requires the usage of unusually long fins. Crawford can hold his breath for three minutes, something that comes in handy when you are exploring underwater caves. “I’ve gone on some crazy trips and made so many good friends in college,” Crawford says. “Eckerd has been an awesome experience. I’d like to work as a field technician after I graduate, getting projects like collecting data or setting traps, and then reporting back to scientists. Maybe graduate school.” What is certain: Crawford’s appreciation for both the Wildlife Discovery Center and the incomparable guidance from Carmichael. “Those were formative experiences, all of them, at the Wildlife Discovery Center,” Crawford, an animal keeper at the center, says. “I have been able to take care of animals, take classes, learn all about alligators and snakes and birds of prey, give tours, and work at summer camps. “Rob Carmichael, he’s a total field guy and a big believer in hands-on learning,” Crawford adds. “I have learned so much by doing at the center. He’s knowledgeable, passionate, funny. Teaching the public about animals has always been important to Rob.” Carmichael, meanwhile, cannot think of a better fit than Peter Crawford-as-nature-center-director. “I also see him starring in a TV show someday,” Carmichael says. “He is such a likable, down-to-earth guy, with absolutely no ego. I like everything about his unique personality and angle on life.”

inety percent of women have cellulite. No amount of diet or exercise can prevent it. In the past, there have been multiple procedures and treatments used to improve the appearance of cellulite. We are about to introduce the first and only FDA-approved injectable for moderate to severe cellulite in the buttocks of adult women. QWO targets a primary structural cause of cellulite—the fibrous septae. These fibrous septae tether the skin, drawing it downward and leading to a mattress-like appearance, commonly referred to as “dimpling.” When injected into the treatment area, QWO is thought to release the fibrous septae enzymatically by specifically targeting Types 1 and 3 collagen, which may result in smoothing the skin and improving the appearance of cellulite. Initial results appear to be long-lasting. Side effects of QWO included injection site bruising, pain, areas of hardness, and itching in the treatment area. This is only temporary. Treatment consists of 2 to 3 treatments or injections into the dimpled area and spaced three weeks apart. QWO stands for collagenase clostridium histolyticum-aaes. This is a naturally occurring collagenase enzyme. When QWO is injected, the fibrous bans are broken and the dimple is released and is smoothed out. Once QWO is injected it only expands to the size of a quarter and is not absorbed into the blood system. Contraindications are any patient with a history of collagenase allergies or any patients on blood thinners or with bleeding abnormalities.

HANGE IS INEVITABLE, but style never goes out of fashion. The world has seen incredible changes over the past year, and some things may never return to the way they were. Over the past decade, the world of business attire had already moved to be more casual, and COVID-19 pushed that into our daily lives. Though suits are now worn less in the corporate and social worlds, they have not gone completely out of fashion. Now, men are simply more selective about when and where they wear a suit and tie, and they are also more selective on what they buy. Customers tend to buy fewer suits a year, opting to invest more money on the clothes they do buy, and they expect them to fit perfectly. This has driven Smith’s made-to-measure clothing business. When we re-opened Smith’s in November 2019, we made the decision to only stock ready-to-wear blazers and exclusively offer custom, made-to-measure suits. While we stock
some blazers and jackets, many gentlemen are opting to have custom jackets made, so they can select their fabric, cut, and personalized details. This has given us the opportunity to work closely with our customers and understand their needs. In addition, keeping their measurements on file to expedite the process for future orders makes the suit buying experience even easier.
