I
hold to the age-old wisdom that you have to taste a culture to understand it. In the pursuit of taste, I sought out to deconstruct the iconic food culture of Okinawa by focusing on locally sourced ingredients. The geography of this island is peppered with acres and acres of farm plots, some teetering on impossible pitches tamed by the roots of banana trees and other curious crops. The biodiversity and the subtropical climate paired with the skilled labor of local farmers produce a colorful bounty of seasonal offerings to a grateful consumer. Over the past week, I toured several farmer’s markets within 10 kilometers of Kadena Air Base. My discovery was a true farm-to-table concept that feels more driven by a commitment to share the abundant spoils of the island than by a desire to turn a profit.
I started at the JA (Japan Agricultural Co-operative) market about two miles outside of Gate 3. One of many JA markets located all over this island. I will lovingly refer to this market as the “flower market” because upon entry, an entire quadrant of the market floor is dedicated to cut flowers, stalks, potted plants, and succulents. Even through an N95 mask, the aroma will stop you in your tracks. You will not leave this market without flowers. As fall blooms, the blossoms on display highlight the colors of the season. Even the “Birds of Paradise” display a deeper, more pumpkin coloring than they did last month. Already carrying a full basket of flowers, I still have 75% of this market left to explore and nothing to eat, save the blue “edible” flowers at the top of my pile. It’s fall now, and even here on this subtropical island, gourds of all varieties take center stage. With the help of my Google Translate app, I learn that the tiny pumpkins on display are actually a Japanese variety of a wax gourd sourced from just a kilometer away in Chibana. As I shuffled through the winter melon and the more recognizable Okinawan purple sweet potato known as “beni imo,” I notice a delightful trend. The entire gourd selection is sourced right here from Chibana farms. Not only that, they were delivered to the market that morning. I screenshot the Google Lenses translation for an “Easy Bake Beni” recipe on display. Tonight, we will eat like locals, with a properly prepared sweet potato dish that was still a part of the earth less than 24 hours ago. The fruit selection at this particular market is smaller than others, but the fruits on display are all gorgeous. The Nashi pears looked particularly golden and delicious and found their way into my basket. The “proper” way to enjoy this cute, round pear is skinless, neatly sliced, and presented in a bowl. Full disclosure, I plan to shamelessly have at this thing, skin and all, on my drive home. Despite its firmer texture, if compared to an American Bartlett Pear, these pears are succulent, juicy and crisp. A perfect nod to the change in season. I weave my way through fresh herbs, a small selection of locally sourced meats, and an extensive rice mill section toward the back. The Japanese rice for sale is short grain, milled to a pearled finish. Less starch produces a less sticky texture, a more deliberate chew, and the familiar back bone of most Japanese meals. I notice that most every patron in this crowded market has at least one small bag of this rice in their basket, so naturally, I follow suit.
The JA farmers markets around the island take credit card and yen, but don’t forget your responsible, reusable bag. Otherwise, you will have to buy your plastic bags in singles, and you will be the absolute only patron to do that. From the Chibana JA, I took a short drive north to shop the fabled “Banana Stand.” This tiny market does a lot with a small footprint. Massive bunches of bananas hang on stretched clotheslines just outside the entry. For a quick top-up, I recommend this stop. I found their fruit selection exceeded the offerings of the JA, and their prices were highly affordable. I grabbed a “Keet’s Mango,” also known as the “gift of the South Island” because it was the size of my head and smelled incredible. I have seen these mangos sold in decorative pairs inside a white box at other local supermarkets, with a price point between 4,000 - 5,000 yen. I basked in my good fortune when the fruit rang up at only 680 yen! I gave my kids half and saved the other for a fall-inspired Mango Daiquiri with an autumn spice blend rim. Like the JA, bring your tote, and they accept yen or credit card. My final stop brings me to Onna Station Market in Onna Village. This market could be an article all by itself. Stretched alongside scenic Route 58 and Highway 6, this market boasts all of the mainstays of Okinawan food culture along with a subtle nod to ancient artistry with a selection of blown glass and Okinawan pottery. Before entering, the outside arc greets you with street vendors selling the full gauntlet: Soba, curry, poke bowls, taco rice, etc. All affordable, beautifully presented, and ready to devour in readily available outdoor seating. Once inside, I explored the aisles of Awamori and craft beers made with purified water from the limestone of Okinawa coral. Nearly everything under this roof is grown, fermented, brewed, and shaped here. I spend 45 minutes touching and reading labels, again discovering that nearly all of the fruit and vegetables are sourced and farmed from Onna Village itself. Like the Chibana market, none of these items have traveled more than five kilometers from harvest to the consumer. These humble markets reveal a cultural gratitude to the earth beneath our feet; a delicious and colorful cornucopia that lovingly shines a mirror back on beautiful Okinawa.

We have an incredible team of instructors that specialize in working with every demographic including families and junior divers that want to experience the wonders of the underwater world. We even offer Bubblemakers and Seal Team classes for those too young for the open water courses. If you are looking to add some specialty skills to your repertoire, the Marina instructors offer night, deep, boat, and (soon) full-face mask certifications! A number of our teachers specialize in working one-on-one with students who might have anxiety about SCUBA diving. We have a variety of times and dates available to suit any schedule. CULTURE CRAFTING FOR THE SHURI The Shuri Castle Festival is a traditional festival in Shuri that conveys the culture of Shuri. The festival includes traditional performing arts, like the Kumidori dance and the Ryukyu Dynasty Parade. The Ryukyu Dynasty Parade, the main event of the festival, represents when the envoys of the Chinese emperor visited Shuri during the Ryukyu Kingdom period. A king, queen, and envoy of the Chinese emperor are chosen from submissions from the public and are dressed in elaborate time period costumes. There is a procession around the Castle that recreates the traditional annual visit to the shrine. This is a big event during the fall season where you can experience the culture of Shuri when it was the capital of the Ryukyu Kingdom.
