wo thousand and fifteen, begins with the energy of Growth and the pace we inherited from 2014, one of the best years in the history of Karisma, when we set our expertise to the test, and prepared ourselves for the consolidation of our position in the international stage. Looking back, in 2014 we achieved the opening of Allure Chocolat and Allure BonBon in Colombia; we started operations in Generations Riviera Maya; Azul Sensatori Jamaica opened its doors; Allure Nougat and Allure Caramel in Serbia were integrated in our portfolio; we opened our offices in Colombia, and inaugurated the second stage of Azul Fives. 2015 looks to experience further growth of our accommodations portfolio: the renovations of Kalamota Island Resort; the opening of Sensimar Makarska Resort and Adriatic Beach Resort in Croatia; the expansion of El Dorado Seaside Suites by 200 rooms; the construction of the Palafitos at El Dorado Maroma and our Alliance with Nickelodeon™, which is already boosting our Azul Hotels Brand. Furthermore, this year we will sow with a vision towards 2016, when we will experience a great expansion: Azul Beach and Sensatori in the Dominican Republic; the extension by 98 rooms of Azul Sensatori Jamaica, and the construction in Azul Beach Jamaica of 51 more rooms. This year Karisma celebrates its 15th anniversary. Jorge Herrán General Manager at Azul Sensatori México, by Karisma On January 15 of 2015, he joined the Karisma family as General Manager of the Azul Sensatori Mexico, by Karisma hotel. Jorge Herrán holds a B.A. on Business Administration & Tourism by the Anahuac University. He has more than 15 years experience in the accommodations industry, having begun his career in 2007 at Le Meridien as Hotel Manager. From 2010 to 2011 he was Operations Director for The Ritz Carlton. After 2011 he went to work for Costa Baja The Grand Heritage Hotels & Resorts as General Manager at La Paz, Baja California. From 2012 to date, he was Regional Director for Villa Group Hotels at Los Cabos, Baja California

Rolando A. Miravete General Manager at Azul Sensatori Jamaica, by Karisma He joined our team on January 5 of 2015 as General Manager of Azul Sensatori Jamaica, by Karisma. Rolando Miravete is a graduate from the Colegio Nacional en Educación Profesional Técnica, holding a Technical Degree in Hotels Management. He complemented his studies with a certification in the Hotels Management and Leadership Program at the Tec de Monterrey, and an Accounting and Finances for NonFinancial Managers course at Cornell University. He has more than 24 years experience in the industry. He has worked at the following hotels: Hyatt Regency Cancun; Premier Hotels and Resorts of the Casa de Campo Hotel in the Dominican Republic; Caribbean Resort, Westin Regina of Cancun; Caribbean Village Decameron Club & Casino of Allegro Resorts in the Dominican Republic; the Curacao Caribbean Hotel and Casino; and Pirámides Cancun Beach. He worked as General Manager for Wyndham Hotels in Grand Bay Isla Navidad in Manzanillo; Grand Velas Riviera Nayarit; and Hilton Puerto Vallarta Resort. In 2014 he was hired by the Tourism Trust Fund of Puerto Vallarta as General Director, where he achieved an increase of 9% in the number of visitors in relation to the previous year.

Raúl Fernández Herrero Corporate Human Resources Director | Karisma Resorts de México He joined the Karisma Corporate Team on February 1 of 2015. He holds a B.A. in Law, with a Masters degree in the Direction of Human Resources. Even though he started his professional career in Madrid, as an Attorney at the Legal Department of AT&T Spain, he has 20 years experience in the Accommodations industry. In the Caribbean, he acted as Corporate Director of Human Resources, first for Occidental Hotels from 1998 to 2002, with responsibility in Mexico, the Dominican Republic, and Costa Rica, and years later for Grupo Hotetur 2008-2009 with responsibilities in Mexico, the Dominican Republic and Cuba. In Spain, he was Human Resources Director for several companies: Grupo Foxá in Madrid, La Cala Resort and the Grupo Evemarina in Málaga, and finally, in Lanzarote (Canary Islands) at Epel Cact, a position he held for the last five years before joining our family.

El Dorado Maroma and El Dorado Seaside Suites Anniversaries

ANNIVERSARY OF THE CROWN JEWEL

O

n November 18, collaborators, owners, and guests attended a Celebration Mass for the 7th Anniversary of El Dorado Maroma, a Beachfront Resort, by Karisma. After the religious celebration, the attendants were invited to share a meal at the Arrecifes restaurant, where Mrs. Dolores López Lira and Mr. José Luis Martínez offered a few words of appreciation for the effort and enthusiasm of everyone who makes of the professional team of this hotel. After a few bars of Mariachi music, special guests, corporate leaders and collaborators raised their glasses to toast the years that this resort has represented a source of income for so many families.

22nd Anniversary of El Dorado Seaside Suites

O

n January 6, we attended the 22nd anniversary of the El Dorado Seaside Suites, by Karisma hotel. The dock was the meeting point for a Celebration Mass in gratitude for the success sown throughout these years. After Mass, Mr. José Luis Martínez and Mrs. Dolores López Lira gathered every collaborator and their families for a group photograph outside the new “Palapa”. Mr. Alfonso López, General Manager of the hotel, thanked all collaborators for the great work and effort of all these years, and announced the upcoming construction of a new support housing complex. Mrs. Dolores reminisced on the beginnings of the hotel with only three Premium Suites and how, little by little, the number of rooms and villas has grown, generating jobs for many more people. Mr. Martínez congratulated this team that has succeeded in making this hotel one of the best positioned at TripAdvisor. He announced the construction of 200 new rooms for the hotel, all with an Infinity Swim-up pool, that is projected to be opened by the end of 2015.

his is a very special informative space held on a monthly basis, which enables us to learn the news of the company and its hotels. At these meetings, we also dedicate some time to acknowledge our outstanding co-workers of the month, as The Best of the Best; we also hold the “Recycling Makes Sense� program, and most importantly, we get to spend time with our coworkers from other areas. Each meeting displays the creativity of the department in charge of organizing it. Some of the themes chosen for these months were the Mexican Revolution, Talents Show, Acrodance, the Day of the Dead and Halloween, The Red Carpet and Christmas.

A

s a strategic step towards the growth of our company into South America, on November 2014 we finalized the opening of our Bogota, Colombia offices, at the Teleport Business Park business center. Destimundo Viajes is the name of the Karisma representative office in Colombia, headed by Mr. CĂŠsar Alfonso, who is the leader of a team of experts that is responsible for taking our expertise and knowledge of the field of hospitality into the Colombian market. Karisma decided to bet on Colombia due to the recent economic growth of that country, and the success experiences that we have enjoyed managing the Allure Chocolat Hotel, by Karisma and Allure Bonbon Hotel, by Karisma, in Cartagena de Indias.

VISUAL HEALTH WEEK This week, eye-sight examinations were held, offering great discounts to collaborators who needed to purchase prescription glasses.

AIDS PREVENTION An AIDS Prevention Campaign was held where the staff was told about the risks of contracting this disease caused by the HIV (Human Immunodeficiency Virus), also talking about the importance of paying special attention to the most common ways in which this virus is spread, in order to avoid risk situations.

BIRTHDAY CELEBRATIONS Of course we celebrated our co-workers whose birthday was in these months.

HOUSEKEEPER DAY At each of our hotels, our Housekeepers were pampered with especially designed activities, meals, and games.

ANT OPERATIONS We joined the international cleaning program, no only on our coast and beaches, but also at our hotels.

ALTARS ON THE DAY OF THE DEAD In order to preserve our traditions, and promote our culture, we held the traditional contest and creation of altars in remembrance of our dearly departed, honoring them with the things they most enjoyed in life

CHRISTMAS BASKETS In keeping with our annual tradition, Christmas baskets were distributed with great affection to all our collaborators.

SANTA’S SMALL DETAILS At the Azul Beach Hotel, by Karisma, Santa Claus left some presents for the children of our collaborators.

CHILDREN PROGRAMS Every year, at Azul Beach Hotel, by Karisma, the children of outstanding collaborators are invited to spend one day at the hotel, with special activities that allow them to become familiar with what their parents do at work.

ith great joy, on December 6 of 2014, we celebrated the inauguration of the Second Stage of the Azul Fives Hotel, by Karisma. The guests had an opportunity to visit the new facilities, enjoy representative bites from the new Koh Thai (Thai food) and Oka Sushi (an exquisite sushi bar) restaurants, as well as taste the best Mexican beverages at the Nineteen Ten cantina. While, fantastic characters as from the movie El Laberinto del Fauno kept us all in suspense as they executed various acrobatic feats. That was the beginning of a magic evening in the company of friends, Karisma executives, celebrities and our special guests for the night: GIVC travel agents, specialized in the promotion of our hotels, who, with this celebration closed their participation at the 7th Marketing and Sales Forum on Karisma Gourmet Inclusive® Vacation Consultant. Mr. Sasa Milojevic, Vice President of Operations of Karisma Hotels & Resorts, offered a very enthusiastic address on the

growth of this property, and thanked Mr. Joaquín Serna and the Grupo Inmobiliario TM for their confidence in Karisma, which has enabled the Azul Fives Hotel, by Karisma to be added to the list of the best 5 Star Hotels in the Mayan Riviera, thus creating new and better jobs in our community. Mr. Joaquín Serna acknowledged the strategic value that Karisma has contributed to the projects of Grupo Inmobiliario TM in their 8 years in Mexico. He thanked the nearly two thousand people involved in the project, making a special mention of the dedication and collaboration of Mr. Alejandro Zarfino, Representative of Grupo Inmobiliario TM in this project, and of Mr. Mario Mathieu, General Manager of the Hotel, for having established the foundations for the success of these efforts. He also announced an extension of the beach front in order to increase the comfort of our guests in this corner of paradise. After the speeches, the Serna family cut the ribbon accompanied by Mr. Sasa Milojevic, Mr. Alejandro Zarfino, Mr. Jorge Feliz and Mr. Mario Mathieu.

NEW KARISMA APP By: Juan Carlos Tolentino

D

uring December 2014, at the App Store and Google Play online stores, an exclusive application was published for guests and clients of our hotels in Mexico. The development of this App meant a very important, interesting, innovating, and demanding challenge for the team that was in charge of its creation, up to the completion of the first and most important phase of the project: Concierge Mobile. The App is available for download by the general public. It is a very nice, intuitive, user-friendly application.

T

he D’Italia Villas restaurant, at El Dorado Royale, a Spa Resort, by Karisma, was the launch site of the innovative training program Academy of the Wine, which the Vice Presidency of Food and Beverages has designed, together with Jackson Family Wines, with the firm conviction of carrying out an instruction program on wines and the sale of wines, for all staff in contact with guests at all properties operated by Karisma Hotels & Resorts, which will enable them to promote the various wines of the JFW family and increase their sales. Last January, the students or the Academy of the Wine arrived to receive their schedule, rules for the course, certification criteria, validation, and study materials that they will use throughout the 10 months of the course, during which time, on every Wednesday, the Jackson Family Wines Culinary Series (JFWCS) experts will share with them the secrets that have turned them into famous masters of the world of enology. “The seminars will be taught by the best and most renown people in the field. Let’s remember that with our commercial partnership developed 3 years ago with Jackson Family Wines, we have been honored to receive world class celebrities of enology, and I’m happy to say that these will be the same people who will lecture in this program,” said Mr. Jeroen Hanlo, Vice President of Food and Beverages for Karisma Hotels & Resorts. “For the Vice Presidency of F&B, it is extremely important that all collaborators will have strong tools that will help them grow and set new goals for themselves”. The 20 sessions that the course will consist of will be recorded in order to produce audio visual materials that in the future will allow the remote training of even more collaborators.

It will enable the Karisma hotels in Mexico to continue offering innovating products and services to clients and guests, who may, first-hand and at any given moment, consult the general information about the hotels, make orders and/or requests, such as: room housekeeping, wake-up calls, Room Service, laundry, report anomalies in the rooms, make purchases of SPA services and products, along with wines, dinner, and special amenities; they may also upgrade to a higher category room, and much more, right from their smartphone. The App means a very power marketing tool which will enable us to be in touch with guests by means of communication channels, such as: App notifications, SMS messages, and electronic mail, for receiving information, sales, promotions, and much more.

But it is not only the sand, the sun, or the sea that makes this island so appealing. The warmth of the people at Azul Sensatori Jamaica, by Karisma, along with a unique mixture of service and style create that “Wow” moment in every pleasure vacation experience. At Negril, there is nothing like the sand of the “Seven Mile Beach”, our home. Speaking of our extraordinary team and its magnificent service, Executive Chef Kevin Anthony Brown, made a wonderful presentation last January 8 of 2015, at the morning show of local TV “Smile Jamaica… It’s Morning Time”, watched by an audience of thousands. Once again bringing the Azul Sensatori Jamaica, by Karisma brand to the forefront, not only for the local TV audience, but before the whole world. Chef Brown exquisitely and meticulously explained the Gourmet Inclusive® concept, by demonstrating one of the author dishes offered to our guests: “Ackee & Bacalao with Bammy & Special Sauce on top” served as a unique dish. Chef Brown was also praised in the editorial column of a travel editorialist named Dave Rodney, in the local newspaper “The Gleaner”.

A sled on the sand! We celebrated last Christmas season with style. Our guests enjoyed a peculiar recreation of the North Pole: Santa Claus’ sled on the sand, created by our maintenance team, with gifts for our guests. Days later we enjoyed a wonderful Year End’s celebration, in which Management and the Azul Sensatori Jamaica, by Karisma, team captivated guests with delicious dishes along the Amber Deck, under a star-filled night sky. The Year End’s celebration was closed with a fireworks show in the sky of Negril! This was an amazing way of closing 2014 and starting the construction of a new year of pleasant and pleasurable experiences for our collaborators and guests.

To show our collaborators that we appreciate their hard work throughout the year, on Friday December 19 of 2014, we held a fantastic Year End’s dinner with the theme “¡Masquerade… A night to remember!” at the notorious night club Jungle, in Negril. It was a smash, filled with gifts and surprises. There was a speech by Mr. Enrico Lindenhahn, Corporate Director of New Projects from Karisma Resorts de México, which gave way to a talent show and a night-long dancing party. A member of the maintenance team, Devon Rubie, lovingly known as “Johny”, impressed us all with his

attire. Johny represents the passion of Karisma, being one of our hardest-working collaborators, and it is not difficult for him to give his best when guaranteeing the full satisfaction of our guests. At Azul Sensatori Jamaica, by Karisma we look forward to another wonderful and gratifying year. For 2015, our goal is to break our performance record and improve the results we obtained in the Guest Satisfaction indicators. We are certain that we can succeed with the effort of our team and the direction of our General Manager, Mr. Rolando Miravete. Until the next time, and as we always say here in Jamaica… “¡Walk Good!” (a colloquial expression of Jamaica, used to wish good fortune and a safe trip).

The wholly new Azul Beach Jamaica, by Karisma This will be a 5 Star, luxurious hotel located at the famous “7 Mile Beach” in Negril, on the east coast of the island. T

hanks to the program “Recycling Makes Sense”, an eye-sight operation for one of our collaborators from the Azul Sensatori México hotel, William Heriberto Dzul Baas, was possible. We now share with you a little about his story.

W

illiam was born in Sotuta, Yucatán, and has worked at the hotel for approximately four years, as refrigeration technician. Since he was 12, he started having problems with his eyes, as they were gradually covered by a white spot. After several tests and medical examinations, he was diagnosed a flesh growth in his eyes. Little by little he lost his eye-sight, which caused him a lot of worry, because of his work security. When he heard of the “Recycling Makes Sense” program, he did not believe that projects can become a reality, until one day, at one of the collaborators meeting, he saw some of his co-workers, such as Juvenalia and Ángeles, receive their support funds, and that was when he found some hope. William tells us… One day a co-worker came to the maintenance briefing to tell us about, and invite us to


Passion For Sustainability participate in the program, and that was when my friends encouraged me and advised me to participate, especially Anita, the maintenance assistant. When I heard that I had been chosen to receive the support, I couldn’t believe it. I had this feeling of gratitude. Throughout my participation in the program, I received support from my maintenance co-workers and other departments who made a contribution by bringing in pet bottles and aluminium containers from their homes. Today, after the surgery, my vision has improved. I feel more confident when doing my job and I feel very grateful to Karisma Hotels & Resorts and the Azul Sensatori hotel. I want to, especially, express my gratitude to this small team of collaborators who, from their particular space, they promote and develop programs for the wellbeing of collaborators and the environment.

A Day In… The Laundry Department

A DAY IN…

THE LAUNDRY DEPARTMENT Amidst noisy steam machines, hundreds of pieces of clothing and heat, we entered one of the departments that play a highly important role in every hotel, Laundry.

A

Back of the House department belonging to Rooms Division, in charge of the laundering, drying, ironing, and seaming processes, both for guest clothes, and of our own tablecloths, rugs, and linen, among other hotel supplies. El Dorado Royale, a Spa Resort, by Karisma; El Dorado Casitas Royale, by Karisma; and Generations Riviera Maya, by Karisma have the largest laundry department in the group. On this occasion, we spoke with Gregorio Dzul, Chief of the Laundry Department at these hotels, and with Genoveva, an Ironing Machine Operator, who told us that their objective is to be one of the leading departments and a role model

based on their focus, team work, good communication, and organization that are required for everything to be ready and on time, with the appropriate quality standards. This department washes approximately 8 to 9 tons of clothes per day in the high season, and between 4 to 6 tons in the low season. It operates in three shifts, 23 hours per day, with just one hour rest to keep machines from overheating. There is no fixed schedule when to launder certain garments: they are processed as they arrive, adapting to the needs of each hotel, but at 7 in the morning, everything must be clean, to start transporting everything to Housekeeping, from where Housekeepers will take clothes to the guests´ rooms. A laundry and rinse cycle may require up to 750 liters of water. The laundry department has washing machines with a capacity of 7, 50, 80 and 200 kilos. The pieces that are laundered on a daily basis are sheets (about 2,000 pieces) and towels (2,500 pieces). To dry these garments, there are three types of dryers: those that operate on gas, others that

operate on steam, and those that operate on a thermal oil. The difference is that the gas drying process is more economic, but if clothes aren’t very clean, the fabric can be stained, while the production of the thermal oil process is very costly, but the risk of wear or staining is lower. The linen, napkins, pillowcases, and sheets ironing process is carried out using a machine called Mangler. In this process, pieces are folded and inspected to make sure that they meet the standards; then they are separated and re-processed. All garments or pieces are sorted for a different laundering process. For instance, sheets, pillowcases, and shower towels are sorted as light dirt; the mat towel, hand towels, and face towels are sorted as medium dirt; and tablecloths and napkins are sorted as heavy dirt, and they go through a strong and aggressive process and formula. The Valet area is the most complicated and meticulous one. That is where guests clothes are laundered, fixed and ironed; they receive all kinds of fabrics. As time goes by, the laundering process for each is learned, since they must be laundered with care and patience. Genoveva, who has been working at this department for eleven years, tells us that, “To work in the Laundry you must want to learn new things, because you need to check fabric percentages on a daily basis, and whether they are thin or thick, because that is what the clothes

drying temperature depends on, as well as the type of detergent to use and the laundering process to follow. You must be someone who can easily adapt, and have good communication and integration to the team”. At the end of the visit, we asked Gregorio about what sets the Karisma Laundries apart, and he said that what makes them special, apart from the high quality standards they follow, is their people.

Their success probably lies in the positive mental attitude of the person carrying out these ceremonies. That is why we share these ritual bath recipes that will help you attract some positive energy, love and prosperity. Remember that, above all, the most important thing is to have the conviction that this will be a great year filled with projects and personal growth experiences. I wish you lots of love, abundant health, and all the prosperity in the world for this year.

PREPARATION: Softly take the petals from the seven red roses one at a time. Then, extract their juice by squeezing them with your hand. Afterwards, remove the solid residue and keep only the rose water. Then, pour this water into a container and add the other ingredients. After bathing with soap, rinse the previously prepared water.

Prosperity bath Ingredients: •1 coconut milk cup  •1 coconut pulp cup  •1 red apple  •3 grains of black pepper  •1 quart of water  •Rosemary leaves •Sandal soap PREPARATION: Add the coconut milk and chopped pulp into boiling water; add the apple cut in a cross pattern, the pepper grains, and the rosemary. Let the mixture boil for 15 minutes, then liquefy, strain, and pour into a jar which will be used for the ritual bath. After bathing with the sandal soap, let the water fall slowly, from the neck down, over your body. As you bathe, repeat your prayers for prosperity. After rinsing with water, dress without drying off, in order to take advantage of the purifying power of water.

At El Dorado Royale, a Spa Resort, by Karisma, the Pilgrimage went through El Dorado Casitas Royale, by Karisma; the Chapel of Peace, Generations Riviera Maya, by Karisma, and the Chapel of Miracles, finishing at the church of Puerto Morelos. At El Dorado Maroma, a Beachfront Resort, by Karisma, a mass was said at the hotel’s chapel. El Dorado Seaside Suites, by Karisma, hotel, organized a walk to the church of Our Lady Santa Teresita de Jesús, in Puerto Aventuras. “My name is Erika. Three years ago I graduated from college with dreams and a wish to eat the whole world, regardless of the risks I had to take to achieve that. I soon realized that life was not as easy as I had thought, and getting the job I had dreamed of throughout my studies would be like slowly climbing a mountain day after day. I got a job a few days after graduation day; it wasn’t that one I’d expected. Nevertheless, I knew that in order to earn a place in the hotel industry, I had to become familiar with each of a hotel’s areas without any prejudice. Months later I received a call from Azul Sensatori México, by Karisma offering me a position as Hostess. In the beginning I was scared because I had no experience in guest services (being behind a telephone was not the same as facing a foreigner). For several months, I worked at restaurants, mornings and nights, learning about the great world of the Food and Beverages department. I attended courses on wines and service, I learned how to offer a great service, how to be in control of a restaurant’s operations, how to support a work team made up of waiters, a head waiter, and kitchen staff, and how to work together at the same pace and on the same page. When I had been working for the restaurants for a year, I realized that, Ah, how time went by! I was a little more confident and learned a little more day after day. I decided to take the big step, to ask for an internship

with Weddings (my dream job). First I asked the Human Resources department if it was possible to become an intern at that area, which was granted to me, but my supervisor totally refused, which disappointed me a bit. Finally, there was a vacancy and I tried again. After several tests, both at the Human Resources department and with the Weddings Management, I was given an opportunity, and not just to practice, but to wok as Weddings Concierge! This led me to think that everything in life happens for a reason, and that opportunities arrive in your life when least expected. Here I’ve learned how to work under pressure, with great illusion and Passion, yes, indeed! Even if it sounds like a cliché, at this department you realize that every day is important, and that you must give the best of yourself every day, because the chance to make a bride’s dream a reality is in your hands; and she has planned for this her whole life. So it is up to us to make that longed for day the best day of her life. And they will always, always remember you”.

El Dorado Seaside Suites, by Karisma Josué came onboard El Dorado Seaside Suites, by Karisma two years ago. “We wanted to do something different, something that showed creativity and the essence of Seaside,” says Josué, a representative, and winner of the 2014 Karisma Olympics in the category of Alcohol Cocktails, who, with his pleasant and smiling personality, is always willing to help his co-workers. Ingredients: • ½ ounce of lime • 1 ½ ounce of mezcal • 1 ounce of agave nectar • 1 ounce of Triple Sec • 4 ounces of orange juice • 4 slices of bell pepper

Preparation: Crush the bell pepper with ½ an ounce of lime juice, which makes the pepper release its taste. Place all ingredients in a cocktail mixer, shake very well, and serve in a hurricane glass with ice. Decorate with a top made with a slice of bell pepper.

Mr. TERRY MIGUEL ÁNGEL VENTURA DE LA CRUZ Azul Fives Hotel, by Karisma Miguel is 35 years old. He is a bartender and loves to work for Azul Fives Hotels, by Karisma since this allows him to express his creativity when serving our guests. The name of the beverage is Mr. Terry in honor of a repeat guest who asked him to create a beverage and with whom he began a genuine friendship. Ingredients: • 1 ounce of watermelon liquor • 4 ounces of pineapple juice • 1 ounce of apple liquor • ½ an ounce of Curacao Azul  • 1 ounce of Vodka • 1 hurricane glass • 1 Carambola garnish shaped as a star

Preparation: Drop some ice in a hurricane glass, pour the watermelon liquor, the pineapple juice, the apple liquor, the vodka, and finally, the Curacao Azul. Decorate with a Carambola garnish shaped as a star, and a straw as a shaker.

WE ARE MÉXICO From September to December last year, the Program We are Mexico brought the best of the states of Aguascalientes, Durango, Chihuahua and Colima. Our collaborators actively participate in the program for all the staff to enjoy the typical dishes from those states. AGUASCALIENTES Located in the Northern – Central region of the country. Its capital is the city of Aguascalientes. The most important celebration is the San Marcos Fair, as it incorporates different artistic, expressions and traditions, cattle exhibition, rides, cock fight and the bullfighting festival, that is the most expected event in the Fair. The typical dish is San Marcos chicken style, prepared with fruits of the region. Crafts are mainly embroidered fabrics.

COLIMA Located in the Western-Central part of Mexico, has one of the main ports of shipment in the country, in the Bay of Manzanillo. Colima has the most important iron reservoir in Peña Colorada. There are other iron reservoirs located in Minatitlan. Some of the most representative places in the state of Colima are the Colima Volcanoe, the archeological areas of El Chanal and La Campana and the San Gabriel Grotto in Ixtlahuacan. In Colima, mariachis with harps are typical, as well as reed weavings. Their typical dishes are corn tamales, prepared with different ingredients, the Colima style ceviche and beverages such as tejuino and bate.

It is located in the Northern part of Mexico and it is the largest state in our country. Its capital is the city of Chihuahua. The most representative places are the Canyon of Santa Elena, Polvorillas, The National Park and the Basaseachi Cascade, as well as the Archeological Area of Paquime, the Copper Canyon (Barranca del Cobre) and the Samalayuca Dunes. Some of their typical dishes are red chili with dried meat, Mexican style machaca, “heavy chili” (meat, onion, dark chili, chicken broth), flour tortillas, burritos. The popular art for the Tarahumara People is very important for the state.

DURANGO The official name of its capital is “Victoria de Durango”, as it was the place where the firs president of Mexico was born, who was Guadalupe Victoria. The most representative handcrafts of the state are products made with “ixtle” (a fiber obtained from a plant), pottery and leather products. In the Huichol are they manufacture hats, bows and arrows and musical instruments made with clay. Their typical dishes are prepared with meat, sausages, cheese, pinol, quince cheese, and other desserts made with apples and Mexican hawthorn. Their tourist attractions are the Ojuela Bridge in Mapimi, the Salto del Agua Llovida (Rain Water Jump) Cascade, lakes such as the Puentecillas lake and their enormous dessert where the Silence Area is located.
