Our Philosophy Wabi Sabi is a Japanese way of living that we comply with at Karma Sushi. The cracks in the ceramics and the rustic appearance in the presentation of our menu gives the unique distinctiveness that we admire. Our Garniture Our sushi and sashimi comes with a garniture of poached ginger, wasabi and pickled carrot. Homemade of course. Our ginger is slightly coarse. No additives or ripening agents are added, it is always cut fresh and ripens naturally. The combination of sourness and the pungent taste of wasabi are in perfect harmony with the rich flavour of our fish.

The Lobster Lobster is a well known shellfish with its two large claws – one to grab the prey and the other to crush it. It is considered a delicacy with its juicy, white meat. Our lobster is MSC certified which ensures the sustainability of the fishery. The Norway lobster is a smaller cousin that is dependent on a unique environment. Thus, the Norway lobster only travels a few hundred miles throughout its entire lifetime. Just like the larger cousin, the Norway lobster is considered a delicacy and can be enjoyed in many ways. Our Norway lobsters are caught in the North Sea around Denmark and Læsø.

Our Soy Soy belongs to the papilionaceous plant family, from East Asia. Since ancient times, soy has been an important source of nutrition – both as a bean and processed into sauce. Several elements are essential in the quality of the soy sauce; colour, texture, aroma, taste and importantly tradition. To ensure the best quality, we have made our own soy sauce, based on the traditions of one of the world’s oldest soy breweries in Yuasa, Japan – the birthplace of soy. Our Selected Caviar The black gold of the gastronomy: caviar. Caviar is the roe of the sturgeon fish of which 24 species can be found. Primarily it takes 7-35 years for the female to mature and produce roe. The taste is very mild when the roe is removed. Salt is then added for conservation, it’s then that the magic and difference in taste and quality occur. At Karma Sushi we serve our own caviar, so the taste is specifically adjusted to our menu.
