Relaxing Lakeside Retreat Cool reflections, gentle breezes, and fanciful daydreams. These are just a few of the images that come to mind when we contemplate spending time at the lake. The allure of water is natural. Our attraction to it makes sense. Water composes a large part of our bodies as well as our planet, and it is important to our survival. Some people even ascribe mystical healing properties to it. But the ability of water to calm and rejuvenate may simply come from the way it looks, the way it sounds, and the way it feels. We can certainly attest to the pleasing effect it has on the mind and body. It’s no wonder that people gravitate toward bodies of water, such as beautiful lakes, and dream about making their homes there. People may have different reasons for wanting to live by the lake. This stunning home, situated on a pristine lot on Beaver Lake in Arkansas, reflects the beauty and magic of lakeside living. Completely remodeled and refined by the talented efforts of Design Studio Ltd. and Kitchen & Bath Gallery, the result is a warm and welcoming home imbued with the serene and relaxing allure of the lake. The newly created open space significantly enhanced the visual impact of the lake. The great room, furnished with a fluid blend of comfortable and contemporary dÊcor, offers ample seating that welcomes everyone to sit down, relax, and enjoy the view. Where the wall once existed now stands a peninsula that not only promotes openness but also features abundant storage, a bar for meals, and a place to set out a buffet when entertaining friends and family. The ceiling beams and the retained existing woodwork were originally golden oak. They were distressed and given a dark finish to blend in with the new custom-stained knotty alder cabinetry and woodwork throughout the house. 2] Lake-inspired prints at the far end of the main dining area convey the ambience of a lakeside resort. Wicker chairs with custom cushions upholstered in lake-friendly, indoor-outdoor fabric flank an expansive dining table topped with food-safe galvanized tin. 3] The original fireplace consists of a splendid design that utilizes the ubiquitous rock native to Arkansas. The beautiful floors throughout the home are 4-inch select white oak with a custom stain. Original antiques and Asian-inspired pieces perfectly complement the home’s sophisticated, rustic ambience. Pet Outreach Volunteers take an active and productive role in ensuring pet welfare.
S
ummer is a busy time for the Wichita Animal Action League (WAAL). High temperatures pose a big problem for animals that are left outside to cope with extreme heat. “When the hot weather gets here, we get a lot of calls to do welfare checks,” says Sarah Coffman, the WAAL’s founder and executive director.
The furnishings, art and accessories for this lakeside home were selected to create a soothing, comfortable, casual yet timeless retreat for the homeowners.

Henry has been in the WAAL’s care since November. “When we took him in, he was very sick and nearly died,” Coffman says. “His foster mom stayed up all night nursing him back to health.” Today, Henry is healthier, happier, and anxiously waiting for someone to give him a permanent home. Beautiful photos like this one, taken by Allie Burns, help foster pets like Henry get noticed and adopted.
When Coffman and her volunteers learn about animal neglect, they mobilize and go knocking on the pet owner’s front door. Sometimes what they encounter is hard to deal with. But their philosophy is to set aside personal feelings for the sake of improving the animal’s condition. And it has worked. According to Coffman, approaching pet owners Continued on page 4

3] The most significant change to the main level came about by removing a wall that separated the kitchen and dining areas from the living room. Guthridge Nighswonger remodel scores a perfect hole in one

It was the absence of this kind of community pet outreach that motivated Coffman to start the WAAL about a year and a half ago. She sees the WAAL as an intermediary between pet owners and animal control—an important piece to the often troubling puzzle of animal welfare that had been missing until now. Romeo started out as a stray. The WAAL found him a permanent home with the family of a Wichita fire fighter. For the first 15 or 20 years after the Declaration was written, people didn’t celebrate it much on any date. It was too new and too much else was happening in the young nation. By the 1790s, a time of bitter partisan conflicts, the Declaration had become controversial. One party, the Democratic-Republicans, admired Jefferson and the Declaration. But the other party, the Federalists, thought the Declaration was too French and too anti-British, which went against their current policies. By 1817, John Adams complained in a letter that America seemed uninterested in its past. But that would soon change. After the War of 1812, the Federalist party began to come apart and the new parties of the 1820s and 1830s all considered themselves inheritors of Jefferson and the Democratic-Republicans. Printed copies of the Declaration began to circulate again, all with the date July 4, 1776, listed at the top. The deaths of Thomas Jefferson and John Adams on July 4, 1826, may even have helped to promote the idea of July 4 as an important date to be celebrated. Celebrations of the Fourth of July became more common as the years went on and in 1870, almost a hundred years after the Declaration was written, Congress first declared July 4 to be a national holiday as part of a bill to officially recognize several holidays, including Christmas. Everything about this home invites you to fully experience the idyllic atmosphere of the lake. The screened-in porch just off the kitchen provides a protected place to enjoy the outdoors in the evening. The rug in the dining room was created from carpeting that Design Studio Ltd. selected and had made into an area rug. Its soft stripes lend a casual air to the home’s décor. Kitchen & Bath Gallery built a beautiful china cabinet to specifically fit the dining room space. The style and finish match those of the kitchen cabinets. With a nod to the lakeside environment, Design Studio Ltd. installed lake-inspired art throughout the home. A wall separating the dining room from the living room was removed, and now a peninsula with bar stools offers a place to sit and gaze upon the lake while enjoying a snack. The view from the dining room shows how open and dramatic the newly remodeled upper level is.
away from it all and enjoy quiet solitude. They can also be the setting for social gatherings with family and friends. The common thread in both cases is that lakeside living provides immediate access to an environment that encourages us to relax and recreate. Just outside of Eureka Springs, Arkansas, the fresh and relatively calm waters of Beaver Lake offer a true playground for all kinds of activities: swimming, boating, kayaking, waterskiing, fishing, biking and hiking along the shoreline, and so much more. Because the bottom of the lake is made mostly of rock instead of sand or dirt, the water is clean and clear—ideal for snorkeling and scuba diving. The attraction of lakeside living so enticed one Wichita family that it decided to purchase a vacation home on Beaver Lake. Although there was a lot to like about the house, which was originally built in 1995, its new owners realized that it needed extensive remodeling and updated interior design to truly become a dream home. To that end, they turned to the two Wichita businesses that they knew had the expertise and talent to take on a project of this scale: Design Studio Ltd. and Kitchen & Bath Gallery. Lizanne Guthrie, owner of Design Studio Ltd., and Mark Combs, co-owner of Kitchen & Bath Gallery, have a great rapport after collaborating on a number of major remodeling projects. It meant a lot to both that the homeowners chose them for the job, especially since the project site was located out of state. The homeowners had previously enjoyed working with them on their home in Wichita. They felt confident that they could trust Guthrie and Combs to bring to life their dream of lakeside living. In fact, they left pretty much everything in the more-than-capable hands of the two professionals, meeting with them primarily in Wichita to go over decisions. It proved to be fairly smooth sailing from start to finish. The remodeling process began on the upper level of the house. One of the biggest changes came about by opening up the main living space. Originally, a wall with a small doorway obstructed the spectacular views of the lake and prevented much of the natural outdoor light from reaching the kitchen. Kitchen & Bath Gallery removed the wall and, working with Design Studio Ltd., installed a peninsula that works as a functional and unobtrusive divider between the main living space and the kitchen/dining area. The peninsula’s cabinets, like those in the remodeled kitchen, were crafted from knotty alder, given a custom stain, topped with an “Absolute Black” granite with a brushed finish, and accented with twig-style pulls. The peninsula provides extra storage, a large buffet for entertaining, and, with the addition of barstools, another place to take in the view with a meal. The kitchen and main dining room were totally reconfigured and updated to accompany the new open living space. The makeover included the construction of a generous island, the addition of a new pantry, and the installation of brand new appliances. Continued on page 12.

The surrounding woods inspired much of the design carried throughout both levels. The mirrors in each of the three lower level bedrooms have frames made from branches. The pièce de résistance was a backsplash made of a blend of four-color river pebble. An elegant built-in china cabinet was custom designed for the dining room. The other end of the main level also underwent significant transformation. Existing rooms were stripped down to the walls and completely remodeled. The powder room received a new look with knotty alder cabinets topped with “Toffee” granite. The master suite was given a facelift, and the master bath was finished with new porcelain tiles, a new tub and shower, and new fixtures to complete the look. Once the upstairs remodeling was complete, the homeowners decided to move ahead with the lower level. To begin, Design Studio Ltd. and Kitchen & Bath Gallery removed an immense honey oak bar that overwhelmed the main family room. They replaced it with a custom-designed bar that mirrored the clean lines of the main level. This completely changed the character of the family room and set the tone for the entire lower level. The knotty alder cabinets with twig pulls were continued from the main level into the bar area and hall. Two bedrooms, a bunkroom, and two bathrooms were also completely renovated and decorated. Just like on the main level, all the lower level rooms have a view of the lake. An overhead balcony running the entire length of the house provides each room with a shaded walkout patio. With all the changes that have been made, the owners hardly remember the way their home used to look. The clean lines and open floor plan have transformed the interior space completely. And the impressive craftsmanship, furnishings, accessories, and touch of lakeside décor have given them a warm and welcoming place to unwind and enjoy time with loved ones. Every space was carefully designed. Every room was flawlessly finished. Now the home as a whole can embrace the outdoor beauty and serenity of lakeside living— from the early morning mists that float across the water and give way to sun-filled afternoons, to the glorious sunsets and magical hours of twilight that follow. Noteworthy Garden of Gratitude, Healing A peace garden memorializes deceased veterans while helping those still living.
J
ust north of the Behavior Health Building, or Building 5, at the Robert J. Dole VA Medical Center sits a botanical labor of love dedicated to both living and deceased veterans of war. The idea of the Memorial Peace Garden originated with Laura Nutter, whose father was an Air Force veteran and a patient at the VA. He committed suicide in 2011. Nutter long suspected that her dad had suffered from post traumatic stress disorder. He had never talked about it though. What he did often talk about was his love for the VA. “He had been in two or three other hospitals and felt most at home at the VA,” Nutter says. He also loved gardening, especially growing vegetables in raised garden beds. The Memorial Peace Garden also has raised garden beds overflowing with leafy greens. Nutter says that “dieticians are excited because they want to start using the produce to teach veterans how to prepare healthy food” in order to control weight and other health benefits. She hopes that veterans will find solace tending the garden like her father did. She says experimental research indicates that gardens help heal unsettled minds and injured bodies outside of hospital walls. “There are studies that show gardening chemically affects the brain,” Nutter says. “Working in the dirt raises the levels of hormones that make people happier.” The VA had already been thinking about horticultural therapy when Nutter approached them with her garden proposal almost two years ago. She volunteered to do all of the legwork by getting donated building materials, tools, and labor. “It was a big project but a very fulfilling process. I was amazed at the number of people that had feelings for veterans and wanted to be a part of it,” she says. Now that it’s finished, veterans have been expressing an interest in gardening. The garden will be the centerpiece of a new peer support group program in which pairs of

veterans will tend the garden together while working through their issues. Others are taking advantage of the pleasing aromas and colors. There is a stone marker memorializing fallen heroes and brick pavers that people may have inscribed with the names of veterans. One of the most touching aspects of the garden are rocks painted by school children. On one, a child has drawn the American flag. Soy Delicious! It’s easy to make foods that are super tasty and summer safe, when your main ingredients are soy or plant-based.
E
verywhere you look today, there are delicious plant-based or soy options cropping up on the menu. While you may not be familiar with some of the ingredients, they are readily available, surprisingly easy to use, and unbelievably delicious. Most everything in this casual meal can be prepped or even fully prepared the day before, making it nearly effortless to enjoy. Each summer comes with warnings about the danger of leaving egg-based mayonnaise salads out, or meats that either didn’t reach the right temperature on the grill, or have cooled down for too long. By using a soy-based dressing, such as Vegenaise, tofu, and tempeh, you eliminate those concerns, the saturated fat, and all the other questionable chemicals and hormones associated with dairy, eggs, and meat. It’s also the single most powerful choice you can make for the environment, making more of an impact than taking the bus, taking short, cold showers, or recycling for more than a year. A vegetable salad is always a light and refreshing break from the heavy, mayonnaise-laden potato or macaroni salads of summer. Keep the ingredients to a minimum and as simple as you like. For this pretty presentation, we spiral cut the carrots, fanned the avocado slices on each plate, and topped with a simple dressing of Seasoned Brown Rice Vinegar. This must-have condiment will change the way you think about vinegar dressings. Lightly seasoned with salt and sugar, there’s nothing else you’ll need to top your favorite greens or fresh-from-the-garden vegetables. Stories about where the Reuben sandwich originated are as varied as the abundant number of recipes you can find. This particular recipe became a favorite of ours over thirty years ago, when tempeh was basically unknown, and difficult to find outside of major cities. Today, even the Food Network offers recipes using this often overlooked soy food as the main ingredient. If you’ve never heard of it before, don’t feel alone, but definitely consider giving it a try. Less processed than its cousin, tofu, tempeh is merely slightly fermented soybeans that are cooked and pressed into patties. It has more texture than tofu and a mild, nutty flavor. It’s a standard ingredient in many Indonesian dishes, and because it has more protein that tofu, and is less processed, it is considered the healthier soy option. Available in most grocery stores, or natural food stores, it comes as plain soy, five-grain, and in several marinated flavors. And, as this amazingly delicious Tempeh Reuben proves, you don’t have to be a vegetarian to enjoy tempeh. When it comes to soy, the most well known form, albeit still a bit underestimated, is tofu. Although the times are changing and it appears more frequently in stir-fries or smoothies, it still remains a bit of a mystery. As it turns out, tofu can also be a great substitute in many recipes that call for eggs. Our cheesecake recipe uses a blend of soft tofu, and Tofutti® a creamy spread made with tofu that mimics cream cheese. The only thing missing is the extra fat and calories, which leaves plenty of room for a divine topping made from sweet, dark cherries. This is one tofu recipe that is sure to surprise, and delight, you and your guests.
Avocado Carrot Salad For the dressing: 1/2 cup Seasoned Brown Rice Vinegar 2 tablespoons avocado oil, or a very light olive oil 2 tablespoons finely minced parsley
For the salad 6 carrots, spiral cut, or grated 1 avocado, cut into 1/4 inch slices fresh juice from 1/2 lemon 1 tablespoon toasted sesame seeds 4 plates
Prepare the dressing first; whisk the oil in slowly. Set the dressing aside and prepare the salad. Wait to add the minced parsley just before using the dressing. If you are preparing this earlier in the day, or even the day before, you can grate the carrots and place them in a bowl covered with cold water and a teaspoon of lemon juice, and keep refrigerated. When ready to serve, slice the avocado and fan into a circle on a plate. Drain the carrots and place a healthy portion on each plate of avocados. Using a fork, whisk the parsley into the dressing and drizzle over the salads. Sprinkle with the toasted sesame seeds. By Kathy Heaton Photography by Patrick Wherritt
Tempeh Reuben According to one of the manufacturers of tempeh, “There are two ways to prepare a Tempeh Reuben. The super easy way is to use marinated tempeh strips. The second, if you do not have the pre-marinated tempeh strips, is to make your own.” We opted to use an adaptation of their original Tempeh Reuben recipe we started using years ago. They’re simple to make and taste scrumptious.
Marinated Tempeh 1 8-ounce package Tofurky Organic Five Grain Tempeh 1/3 cup low sodium soy sauce 1/4 cup water 1 clove garlic, minced 1/2 teaspoon red pepper flakes 2 tablespoons organic pickling spice 1 bay leaf, broken into pieces
Cut the tempeh into 1/4-inch slices. Place in a glass casserole dish, or a tray, so the slices lay flat. In a small bowl stir together the water, soy sauce, garlic, red pepper flakes and pickling spice. Pour the marinade over the tempeh and cover. This can be prepared a day ahead and refrigerated, or earlier in the day you plan to serve. It is best if the tempeh can marinate for a couple of hours.
Russian Dressing Sauce 1 cup Vegenaise, or other vegan mayo 1/4 cup organic ketchup 4–5 teaspoons Bubbies prepared horseradish 3 tablespoons Bubbies Dill Pickle Relish, drained
(you may substitute sweet relish or capers)
Mix all the ingredients together in a small bowl. May also be prepared the day before and kept covered in the refrigerator.
To Assemble 2 tablespoons coconut oil marinated tempeh, drained 2 cups Bubbies Sauerkraut, drained 8 slices dairy-free Swiss style cheese slices 8 slices seeded rye bread, toasted
Put the coconut oil in a cast iron pan over a medium heat. Add the marinated tempeh. You can save the drained marinade in the refrigerator for at least a week to reuse. The tempeh will brown quickly, approximately 1-1/2 to 2 minutes per side. Remove the tempeh and set aside. Place the sauerkraut into the pan to warm while beginning to assemble the sandwiches. Spread a generous serving of dressing on each slice of toasted rye bread, add the cooked tempeh strips, the cheese, then top with the warmed sauerkraut. If you’d like, you can make it a double decker. Simply add another layer of tempeh, cheese, and sauerkraut. It will be a bit messy to eat, but that’s half the fun! Soy Delicious Cheesecake with Sweet Cherry Sauce There are plenty of non-dairy cheesecake recipes, but we’ve found this to be the one that’s certain to change your mind about using tofu. Feel free to try a slice plain, but as Bill Murray’s character says in Groundhog Day, “We still have to put some cherry syrup on it, and then we can eat it.” Either way, it’ll have you exclaiming, “It’s soy delicious!”
Graham Cracker Crust 12 whole organic graham crackers, we prefer Erewhon Honey Cinnamon Grahams 3 tablespoons coconut oil 8 1/2 inch spring form pan
Preheat the oven to 350 degrees. Crush the graham crackers. The easiest way is in a food processor, but you can also place them into a heavy plastic bag and use a rolling pin. Mix in the coconut oil, until the ground crackers begin to stick together. If using a processor, simply pulse a few times to get the oil and crumbs together. Put the mixture into the spring form pan and gently shake the pan to evenly distribute the crumbs. Then working from the center, firmly
press into place across the entire pan and approximately 1 inch up the side. Place the crust in preheated oven for approximately 8 to 10 minutes. You don’t want it to get browned, but baked a little so the filling doesn’t make the bottom soggy. Cool the crust completely before filling.
Cheesecake Filling 1 1/2 tablespoon Ener-G Egg Replacer, mixed with 3 tablespoons water ( this is optional, but it does help give the cheesecake a little lighter texture) 1/2 package: 14 ounce silken tofu, drained

Whisk the egg replacer and water together and set aside, if using. Cut the 14-ounce silken tofu cube in half, place the unused tofu in a container, cover with water, and refrigerate. Will last at least a week, if you change the water daily. To drain the tofu that you are using, wrap with a dishtowel, and gently twist the towel, squeezing the water into the towel. Unwrap the towel, break tofu into large pieces and put in a food processor. Add the remaining ingredients, except the egg replacer. Process just until it becomes a smooth batter, add the whisked egg replacer, pulse a couple of times, and pout into the prebaked graham cracker crust. Bake the cheesecake in the pre-heated 350 degree oven for approximately 45 minutes. The filling will be firm, but not completely set up. Remove and bring to room temperature. Once cooled, smooth plastic wrap across the top of the filling only, and refrigerate. Although you can eat the cheesecake at room temperature, we find that it sets up best if allowed to cool for several hours. You can make it a day ahead of serving, which makes it that much easier to enjoy.
Sweet Cherry Sauce 1 10 ounce package of frozen organic dark sweet cherries 1/3 cup water 1 teaspoon fresh lemon juice 1 tablespoon cornstarch, mixed with 2 tablespoons water
Bring the cherries and water to a simmer over a medium heat. Mix the tablespoon of cornstarch with the 2 tablespoons of water. Add the cornstarch mixture to the cherries and stir. The mixture will begin to thicken within a minute. Stir in the lemon juice, and remove from the heat. Bring the mixture to room temperature, then refrigerate until ready to serve the cheesecake.
