itchens the world over have always been the hearth—and heart—of the home, but perhaps nowhere save in America has the kitchen undergone such a steady, heady revolution that in one important way has brought it full circle in the twenty-first century. In Colonial times, the kitchen was not only the center of the home, it was the home, the single room in which the family lived, slept, and ate. Over time, the kitchen-as-concept was accorded a small room of its own, but one discreetly partitioned off so that the nuts and bolts of cookery’s unending labor were hidden from view, with only the redolent results making triumphant entry into the dining room. Her cheerful blue-and-green potpourri kitchen symbolized unbridled adventures in cooking and showcased the scores of gadgets that were Child’s unabashed passion. Measuring 14 feet by 20 feet, the kitchen from her Massachusetts home is now located in the Smithsonian’s National Museum of American History. It appears exactly as it did in November 2001, when she donated it. 3] This beautiful kitchen is a dream come true for the owners, who describe their home as a “happy, cheerful, and inviting” place. With black and white granite, a custom-woven stainless tiled backsplash, and custom-built frameless painted maple cabinets with wide stiles and rails, it’s no wonder that the kitchen has become the center of activity in their home. A Peaceable Kingdom
The King of Migration On fragile wings, monarch butterflies travel far to preserve their kind.
W
ith wings like orange and yellow stained glass, the monarch butterfly completes a four-part transformation from egg to caterpillar, then from chrysalis to beauty. Even more remarkable is its travel range. Every fall, this tiny creature migrates up to three thousand miles. The story of the monarch butterfly is told through generations. From spring through summer, the first three generations follow the milkweed bloom throughout the United States. These butterflies live as you would imagine—fluttering about, feeding on flowers, and laying their eggs on leaves. Fourth generation monarchs live much longer and move greater distances. In September, they begin migrating south, traveling eighty miles a day.

The Monarch Butterfly Biosphere Reserve in Michoacán, Mexico, offers them warm temperatures and protected forests during the winter. Every year, tree limbs fill up with black and orange foliage as millions of monarch butterflies roost together. Sometimes the branches bend and break from the weight. When they come out of hibernation, the butterflies mate, and the story begins anew with each generation carrying the species northward and, hopefully, farther into the future. Over the last twenty years, the monarch population has plummeted 90 percent. Land development has encroached into this species’ natural environment, eradicating one of its most important food sources— milkweed. Inclement weather has also played a part. In March, a freak ice storm rolled through Michoacán and killed a significant percentage of the fifty million butterflies that roost there. Monarch Watch, a research program based at the University of Kansas, studies the fall migration of monarch butterflies. Learning about where they take off and land gives conservation groups scientific leverage to steer development away from natural habitats. Although the monarch population is a mere shadow of what it was, there are plenty of butterflies left to track. The organization enlists the help of volunteers to catch and tag them. Tagging a monarch involves applying a tiny adhesive to its wing. Each sticker has a unique alphanumeric code and weighs only 2 percent of the insect’s weight— light enough that it won’t impede flight. French doors from the kitchen open to the now covered patio space permitting a free flow of family and friends, complete with an 84”overhead Big Ass® fan, to keep air moving when it’s hot; skylights that have automatic blinds to control the sunlight (permitting plenty to keep plants growing inside the main kitchen window, and toning it down when needed); a wide screen television to enjoy sporting events, overhead heaters that keep it toasty for events later in the year—last Thanksgiving numbered 46, and there wasn’t a bad seat inside, or outside, the house! But the pièce de résistance is the new recessed Alfresco cooking center. Framed with brick, including a herringbone pattern in the recessed backsplash for additional pattern and texture, it features a vented 42” grill with hood, contains a built-in refrigerator, trash cans, and is topped with an impressive double stacked 6cm
black granite countertop with a chisled edge. Kitchen & Bath Gallery knew they didn’t want to attach the roof lines to the side, but they also wanted to make sure the addition flowed with the rest of the home, so the beams were built to mimic those on the front of the house, as well as those in the adjacent sunroom. Adding glass to the transoms maintains the open-air effect, while still providing protection from the elements. Habitat for Humanity’s programs value communities and the environment.
H
abitat for Humanity has provided low-income families with affordable homes since 1986. But in recent years, the organization realized its potential to tackle more systemic problems—urban blight and wasted resources. “We use existing infrastructure to create new homes in vacant spaces rather than contribute to urban sprawl,” says Ann Fox, executive director of Habitat for Humanity in Wichita. The program is called Rock the Block, and the practice is known as infilling. Whereas market-rate builders shy away from blighted areas because they can’t cover their costs, Habitat for Humanity recycles the land with the help of volunteers and cash contributions. Rock the Block homes may be small and practical, but they beautify the community and benefit the environment. They are all-electric, highly insulated, and therefore more affordable, more efficient, greener, and safer than standard homes.

Art historians, museum curators, ceramicists, and devotees have written more than a few books on both replete with breathtaking color plates that fuel any fan’s desire. But the good news is that the ordinary collector can still occasionally find pieces worthy of attention and acquisition, despite their lack of centuries-old cachet. Beyond delighting in their beauty and relative scarcity, collectors of Italian ceramics enjoy the sense of history implicit in each piece. The patterns and motifs found on virtually any piece of older or newer majolica, for example, have been traced back to its development over the centuries. Although most of the early Italian ceramic studios were located in small towns and thus were isolated from the larger world, Renaissance printmaking made the works of famous painters of the day accessible to ceramic artists, and it was considered homage rather than plagiarism to translate those works in whole or in part to the medium of earthenware. Today, many renowned Italian ceramics houses carry on that venerable tradition, and consumers can purchase via the internet an abundance of Italian ceramics displaying the extraordinary patterns of centuries past from stores across America. Collectors also prize the human touch manifested in Italian majolica and capodimonte. Better pieces are bottom-marked “Handpainted in Italy,” and that designation means just what it says: in the Italian tradition, an artisan was either a potter or a painter, and painters spent a lot of time decorating stock pieces more quickly turned out by potters. The best Italian pieces are profusely and intricately painted, and the unmistakable signs of hand painting—discernible brush strokes, a thumb-print on the edge of a petal, or the build-up of paint at the end of a finger-applied line —form a powerful bond between artist and collector, a bond as potent as the ineluctable alchemy that sets these enthralling ceramics apart from all others.

And along the way, the kitchen had to come out of its closet; today’s spacious open-plan homes require that the kitchen be an integral part of the plan. Once again, this indispensable room reigns as the center of the home. That being the case, the kitchen often ends up as the center of action for a convivial crowd as well as the venue of choice for a family weekend breakfast. Retro Chic When these homeowners decided to remodel their kitchen and bath, they were looking for the conveniences of the twenty-first century, but wanted to maintain the character of this “modern” home built in 1952. The creative talent and expertise of the Guthridge/Nighswonger team were able to succeed in every way. One of the most unique factors of kitchens in homes built in the 1950s was the color that often accentuated them. This retro redo was spot on with its attention-grabbing turquoise formica countertop and shiny period metal banding. The 1950s were also time of innovations in the home, and this remodeling has more than its share of that. A rarely-used double wall oven was exchanged for a cook-friendly pot cabinet. “The shelves that slide out,” the wife says, “make it so much easier to bring heavy pots to the stove.” Guthridge/Nighswonger also removed a wall and pocket door that once divided the kitchen from the living area, and replaced it with a “just right sized” breakfast bar. Defining and creating space for a collection of brightly colored ’50s pitchers and once tucked away cookbooks was a welcome design. The homeowners especially love how the old and new came together. Combining formica and granite countertops, and wood-grained tiles with glass accents for the backsplash, gave their kitchen just the look they were wanting. veryone has a favorite meal, which is traditionally enjoyed during a particular season of the year. Summer is a time for ubiquitous potato salads and tangy barbecue sauces, while autumn’s feasts are considered incomplete unless tables are laden with the mandatory array of foods prepared in familiar fashion. But between the feasts are many cool evenings when you might still be able to enjoy a festive get together outside. It’s then that you’ll want to indulge in the warming comfort of simple, tried-and-true foods. A bowl of spicy chile is a sure-fire way to heat up on a cool autumn evening. The sheer number of chile contests held each year attests to its enduring popularity, but just in case a particular recipe has yet to find its way into your repertoire, try making Pat’s Beer Chile—it is a real winner. Like most savory soups and stews, it tastes even better when served the day after its preparation, which also makes it a great main dish to serve at hectic holiday gatherings. Getting the major cooking accomplished the day before an event leaves plenty of time to relax and enjoy family and friends. While crackers are a traditional accompaniment to chile, serving Kathy’s Skillet Cornbread instead makes an evening supper—or any occasion—special, and the addition of sweet red pepper takes it just a little bit beyond the ordinary. The key to Pat’s Beer Chile making a moist cornbread, one that does not crumble and fall apart, is to use at least 2 cups red kidney beans, cooked until not quite soft one-half corn flour instead of corn meal alone. Buttermilk and a tasty filling of cheese 2 cups pinto beans, cooked until not quite soft also help to keep the cornbread moist and give it a delicious flavor. 1/2 stick butter, or Earth Balance Vegan Buttery Stick Cooler weather is also a time for baking specialty desserts. The period of December 1 medium onion, chopped finely through February is filled with numerous occasions to celebrate with something sweet. 2 tablespoons red New Mexican chile powder Although the month of February has the fewest number of days, in our family it holds 1 tablespoon powdered cumin the greatest number of birthdays, and while each member has a favorite cake, there is 1 medium carrot, diced one in particular that everyone loves: Maude’s Boiled Birthday Cake—so named due to 1 zucchini, diced the preparation of the batter, which starts with boiling a mixture of water, sugar, butter, 2 jalapeños, chopped finely 1 green pepper, chopped raisins, ground cloves, and cinnamon. It is a deliciously moist spice cake which we 2 tablespoons brown sugar usually enjoy topped with a smooth vanilla buttercream frosting. 1 small can tomato paste As my mother told the story, she first had this cake on her fifth birthday. This was 2 cups chopped tomatoes also the first time that she recalled ever having a birthday cake, and upon seeing it she 1/2 cup millet became quite excited, clapping her hands together and exclaiming, “Goody, goody, it’s 1 bay leaf all mine.” Sharing was a lesson, she explained, she had yet to learn. Seven children of 1-2 teaspoons salt; pepper to taste her own later, several grandchildren, and a few great-grandchildren, sharing became 6 to 8 ounces beer a way of her life. In fact, she continued to share her cake with us each year, and was 2 ounces Sharffen Berger semi-sweet chocolate chunks delighted to reveal the recipe=along with the following caveat: ”For best results, the 1/2 cup freshly grated Parmesan, or GoVeggie Vegan Parmesan Style Topping cake should be enjoyed with others on February 20th.” She certainly always did, and, in 1/2 cup Greek black olives, pitted and coarsely chopped order that the child within everyone can enjoy every last bite as “all mine,” we suggest Cheddar, grated for garnish, or non-dairy Daiya preparing it as smaller, individual cakes, as shown here. Melt the butter in a large pot, add the onion, and sauté it until it begins to get transparent. Autumn is a wonderful season to enjoy the comfort of simple, warming foods. Add a little more water if necessary, cover, and simmer the chile for approximately thirty minutes. Add the beer and stir well; add the chocolate and stir well. Continue simmering the chile for an additional thirty minutes, or until the beans are done. At this time, the chile can be removed from the heat and, after being brought close to room temperature, put in the refrigerator to finish the following day or later that evening. Reheat the chile by slowly bringing it to a low simmer; cook for perhaps thirty minutes. Before serving, stir in the Parmesan and olives, reserving a few chopped olives for garnish. Let the chile sit for a few minutes before ladling it into large bowls and garnish each with the grated Cheddar and the reserved chopped olives.
Maude’s Boiled Cake with Vanilla Buttercream Frosting
Kathy’s Skillet Cornbread 1/2 cup unbleached white flour 2 teaspoons baking powder 1 teaspoon baking soda 1/2 teaspoon salt 1 cup corn flour 1/2 cup corn meal 1 tablespoon brown sugar 1 large egg, lightly beaten, or egg replacer prepared per package instructions 1 cup buttermilk, or one cup non-dairy milk with 1 tablespoon plain vinegar or lemon juice added, and allowed to sit for a few minutes to curdle. 2 tablespoons finely chopped sweet red pepper 1/2 cup grated Asiago cheese, or non-dairy Daiya.
Preheat the oven to 350 degrees. Lightly oil a ten-inch cast-iron skillet and set aside. Mix the dry ingredients in a large mixing bowl. In a separate bowl, blend well the egg and buttermilk (or egg replacer and non-dairy buttermilk mixture). Make a well in the center of the dry mixture and pour in the buttermilk mixture. Stir all lightly with a wooden spoon to mix, taking care to not over-stir. Add the sweet red pepper and stir lightly again. Pour one-half of the batter into the prepared skillet. Sprinkle the grated cheese over and top with the remaining cornbread batter. Bake for thirty to thirty-five minutes, or until the cornbread is golden brown on top and tests done with a toothpick. Remove the skillet from the oven, place it on a rack, and let it cool until just warm. Slice the cornbread and serve with the chile. Any cornbread left over should be removed from the skillet and covered in plastic wrap; it will keep for two days.

Preheat the oven to 350 degrees. Lightly grease a nineinch baking pan, a bundt pan, or individual springform pans. Pour the water into a saucepan and add the butter, raisins, sugar, clove, cinnamon, and salt, and bring all to a boil. Stir and continue boiling until the butter is fully melted. Set the mixture aside to cool to room temperature. Add the vanilla and 1 1/2 cups of the flour to the batter. Mix the baking soda into the remaining 1/2 cup of flour, add it to the batter, and stir well. Pour the batter into the greased baking pan and bake at 350 degrees for twenty-five minutes or until cake springs back to a gentle touch. For the frosting 1/2 pound powdered sugar 1/8 teaspoon salt 1/8 cup milk, or non-dairy milk 1/2 teaspoon vanilla 4 tablespoons butter, or non-dairy, softened
Beat all together until it is smooth and creamy, frost the cake. Or if you made smaller, individual cakes, you may want to frost a couple, and because the cake is quite sweet on its own, simply lightly sprinkle powdered sugar over a couple.
